9/10: If you were to tell me there was anything different about this other than being a good ol’ macaroon, I wouldn’t believe you. These were simple and delicious. I was a little skeptical of how raw coconut would taste here but truly none of the sweetness is lost. I’m still a little unsure of how the cashews play a role in the composition but they must be that final touch that makes these so good. And I love love love the specks of vanilla bean in here for a pure, raw flavor. If there’s a raw foodie in your life, I highly suggest these for a delicious treat.
