8.5/10: Feta and spinach have made a great duo in Mediterranean chicken dishes for generation. These are a far cry from the Mediterranean, but delicious nonetheless. The feta is not identifiable, par say. Rather, it creates a cravable saltiness to contrast with the slightly bitter greens. This sausage wasn’t as exotic in flavor as it might first entice; but it was deliciously briny and a great starter sausage.
