Banana Goodness Bread
Ingredients:
- 1 1/2 cups whole wheat flour
- 1/3 cup oatbran
- 1 teaspoon baking soda
- 2 tablespoons ground flaxmeal
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1/4 cup chocolate chips
- 2 tablespoons canola oil
- 1/2 cup white sugar
- 2 eggs
- 1 5.3oz vanilla oikos(or 1/2 cup plain yogurt)
- 10 ounces banana, mashed
- 1 teaspoon vanilla extract
- 1 tablespoon brown sugar
- 1/2 teaspoon cinnamon
Preheat the oven to 350 degrees. In a large bowl, mix together flour, oat bran, baking soda, flaxmeal, cinnamon, salt, and chocolate chips. In a seperate bowl, whisk together the sugar and oil, beating in the eggs 1 at a time. Mix in the yogurt and vanilla extract. Mash the bananas and incorporate into the wet. Pour the wet into the dry and mix until just incorporated. Pour the batter into a loaf pan. In a small cup, mix together the brown sugar and cinnamon. Sprinkle over the top of the loaf. Bake the bread for 55 minutes or until a cake tester comes out clean. Turn off the oven and open the door, letting the bread sit there for 5 minutes or so. Remove from the oven and transfer onto a plate until cooled completely.
I don’t know how much of my excitement is coming through the computer screen, but believe me when I say I was jumping for joy at this point. Banana bread had always been the black sheep of my baking repertoire–that one thing I’d kind of ignore if anyone brought it up. But no more. With this recipe in hand I will make many monkey’s jealous.
