For the past two days, my most viewed page(besides the Home page) hasn’t been my In Defence Of Saturated Fats, my rant on Nutella, or even My Superfoods. Nope. I’m not even sure you’re reading this; the way things have been, you might just be looking at my Chocolate Avocado Pudding recipe. Is anybody out there? Helloooo. Aww, hell. I’ll just give you what you want to see.

There? Happy? Because I definitely was eating this. I think the fact that I can make this in my dorm room goes to show just how easy it is. For some reason, though, I could not get this to be sweet enough. I practically saturated it with stevia; I think my sweet tooth is officially retiring and moved to Boca Riton. He’s lived a rough life. He had to listen to some God awful auditioners on American Idol like there were last night. He didn’t have to eat half the things Bear Grylls did on Man Vs. Wild, which I watched while the president spoke. Did anybody know that Bear is a vegetarian? Well, when he’s not eating a fish eyeball for water, that is. But apparently so–go figure.

Pumpkin Oatmeal With SB PB And Nutritional Yeast

Yum! I don’t think I could ever get over this combination; the pumpkin, nutritional yeast, and sea salt make for a sort of sharp cheddar–it’s divine. Why did I never know about this stuff before learning more about veganism? Nutritional yeast is something that should be in every household, meat-eaters or not. It’s so versatile! Speaking of veganism, I realized after yesterday that I “accidentally” ate vegan all day except for a milk chocolate peanut butter cup with breakfast; how random is that?

This morning, I set my alarm for 6:15. Besides the fact that the volume was WAY too loud, I just kind of stood there wondering “why?”. Well, I knew why: I wanted to run before class, but this year it’s going to be a little more difficult. I considered going back to bed and trying to squeeze a run in sometime later(even though this isn’t really practical either), but in the end I just went with my first thought and hit the gym.

Once again: This was hard! How was I running like I was before break? I didn’t realize walking stairs and running would be so different but apparently so. I probably need to figure out how to cut it back/do cross training to “fill time” I would otherwise be running, but I just don’t know; this half-marathon is feeling a lot harder now :-/ I didn’t have much time to shower/make breakfast/prepare for class, but I squeezed it all in.

Pumpkin Oatmeal With Pistachio Butter

All nice and portable to-go. I bought a pomegranate Chobani yesterday knowing I’d need somethign I could grab. The pistachio butter made with Tierra Farm‘s pistachios goes so well with pumpkin: It’s orange, green, salty, smooth, delicious, and–best of all–alliterated! I tried thinking bout how the dark chocolate chips would fit in a p, but no luck. Oh well. They perfectly hit the spot.  I ate most of this in my 9am Greek class. It looks like a non-intimidating work-load. And the grad student teaching it is very nice. He has a severe stutter and talks a little(OK, a lot) like Steven Hawkins to eliminate it but he seems like the nicest and most supportive teacher anyone could hope for. When I got back to my dorm, I brewed something up to get typing.

Now that I’m lowering the meal plan, it makes much more economical sense just to brew my own coffee. Cheaper, fresher, tastier–works for me 🙂 Two more classes for today! I don’t expect it to add up to much “excitement”. Anything fun on your end? Tune in to Oprah at 4 to see Jay speak on NBC!

Have you looked into any training plans for your half? I always get frustrated when I try to jump back into big mileage right away after taking time off!

I’ve been nervous about trying nutritional yeast, but I might have to check it out….

i’m sure youll bounce back. it’ll be hard — i mean it was a 5-6 week lay off – but you can do it. and are you doing the race i think youre doing? because i’m 100% sure it’s a 20 miler and not a half…but we’ll rock it anyway 🙂

Impressive stats on the treadmill!! No need to give yourself such a hard time Evan…everything takes time. 🙂 The pudding looks good, but i’m afraid of avocado in my desserts….hmmm i definitely wanna try it.

I haven’t gotten nutrtional yeast yet, but I’ve heard you can even sprinkle it on popcorn and it tastes kind of cheesy?

Also, have you tried Chia Seeds yet? That’s also a great super food. You can buy them in bulk at Whole Foods, so you can just pay a few dollars at a time. You can add it to oatmeal, tea, baking, and you can also add water to it, put it in a container in your fridge and it kind of gels up. 1 tablespoon can be used in place of eggs in baking recipes.

Home-popped popcorn made with a little olive oil, nutritional yeast, and sea salt is a great snack. And I haven’t tried chia seeds yet but I’ve spotted them at the local healthfood store and they’re definitely on the list of new foods to try

First of all, i’ve been a lurker for a bit, but figured i’d just out myself today and say that I love your blog! I recently went vegetarian and am trying all sorts of new stuff. I’ll have to add nutritional yeast and PISTACHIO BUTTER (Sorry, I had to “yell it” because I am so excited at the prospect of eating such goodness, it just came out that way)!

The Boca Raton thing cracked me up- reminded me of “The Nanny,” when Fran would always talk about the glorious day when Sylvia and Morty would move to Boca. Hmmm…I hope you have some idea what i’m talking about.

Pistachio butter is so great. If you have a food processor, all you have to do is buy roasted, salted pistachios deshelled, throw them in, and voila. It’s so much cheaper than any pistachio butter I’ve found online. And you quite possibly hit upon one of my favorite shows by mentioning The Nanny 😉 I’m very excited when I’m at home and find it on Nick @ Nite now

LOL! That made me laugh out loud re: The Nanny. One of my faves- surpassed only by Friends and Golden Girls. 😉 I do a killer Sylvia Fine Impression.

Sometimes I have accidental vegan days, too. And, you’ve really got me hankering for that avacado pudding, now. 😉

What is the difference between that smart balance and the other ones? I don’t think I have ever seen an agave sweetened one. I really want to try it because SB PB is AWESOME. I buy the “rich roasted” one which is apparently new.

It’s not on their website, which is odd. They have a creamy and a chunky now that are made with agave syrup in place of molasses. The taste is similar but a little sweeter and a little cheesier, almost like Reese’s PB in my opinion

Have you ever seen the show Man vs. Food? For some reason it kind of reminds me of you! haha…not that you would cram your face full of crap food but you seem like the type that would be up for trying anything …very adventurous when it comes to food!

My sweet tooth is so troubled that I can take my desserts, or coffee, sweeter than anyone I know and I kinda like it that way 🙂

And I can see you as a Classical Languages major…but I can also see you as a science or biz major…you need the biz side so that when you open your own restaurant, cooking supply store, or start your own food company, you have that side, too 🙂 I see big.things.in.your.future. No doubt!

I actually did read your rant on Nutella and found it very informative. While I enjoy the shear gluteny of indulging, I will keep my eye out for the healthier option. Thanks for all your reviews and information. It helps us all be more informed consumers.
