How To Be A Smart And Healthy Shopper

Posted on April 30, 2010. Filed under: Health | Tags: , , , , , |

Today I went grocery shopping. I did a lot right, but also some things wrong. I hope this post to be a reminder to both you and me for the ways of healthy shopping. *And if you never read my post on how to save at Whole Foods, here it is.

Do: How far is the store? I walked to my Whole Foods today, which is 1.2 miles away. If a store is nice and close, you can and should enjoy the walk for activity. Even if it’s not close, you might be able to get there through an alternative method like public transportation, especially if you live in a city. All this can be better for you and the environment.

Groceries

Groceries

Groceries

Groceries

Do: Have a mental list. I knew exactly what groceries I wanted.

Do: Shop where the healthy groceries are. Is trail mix and cereals your weakness? Don’t go to that section of the store. Keep yourself surrounded by fresh vegetables and that’s all you’ll have the chance to put in to your cart.

Don’t: Shop while you’re hungry. Not only can it lead to impulse buys, but those often won’t be the healthiest choices. If you do find yourself in this situation, do buy some fresh fruit and eat it as a snack while shopping.

Don’t: Go to the cashier without having your coupons ready. I did this and ended up not using any because I felt so disorganized. I still got all the benefits of store sales, but I could have saved at least an extra dollar or two if I had coupons ready.

Reusable Shopping Bag

Reusable Shopping Bag

Do: Bring reusable shopping bags. They both save waste from the environment and many stores these days will offer discounts to shoppers who use them.

Don’t: Forget to give your grocery bag to the bagger.

Daiya Mozzarella Style Shreds

Daiya Mozzarella Style Shreds

Don’t: Buy things without having a plan for them. I’ve been dying to try daiya soy-free, dairy-free vegan cheese. But I honestly have no clue how or when I’ll use it. I have no GF pizza crust, not tomato sauce, nothing my Italian side would know what to do with. I’m determined to eat it now that I have it, but I wish I had planned better.

Rice Whip

Rice Whip

Do: Look for the least processed items that fit your lifestyle. Ideally, I would love to buy local cream and whip it myself; that’s just not happening in a dorm room. The two options the store had was Non-fat, sugar-free 365 brand whipped cream or Rice Whip(they were out of regular whipped cream). The ingredient list of the Rice Whip was simpler and more recognizable, so I chose that.

Do: Pick your proteins right. I always make a point to buy hormone and nitrate-free poultry, as well as grass-fed beef. It’s slightly more expensive but it has less saturated fat and more omega-3’s, which to me is worth the extra money.

Are you a smart and healthy shopper? What are your tips and tricks? Share in the comments! And here’s a teaser from my eats today; happy Friday Sundae to me!

Can Carob Compete?

Posted on April 30, 2010. Filed under: Daily Update, Health | Tags: , , , , , , , , , , , , |

Before last night, I had never tried carob.

Mint Carob Bar

Mint Carob Bar

I had known about it for months now, and even have had this bar since November. Still, I hadn’t really tried carob, not because of what it is, but because of what it isn’t: chocolate. Carob has been marketed as “the new, healthy chocolate”. Hold the phone; what was wrong with our old chocolate? Chocolate-specifically cocoa powder which is found in higher concentrations in dark chocolate–can be packed with antioxidants. Dark chocolate only has fat from cocoa butter and relatively low added sugar. Carob, on the other hand, has no antioxidants and inherently more sugar than cocoa. The only advantage might come in its lack of caffeine, or for anyone allergic to chocolate(if you are, I am so so sorry you have to sit through 90% of what I eat). But how did it taste?

Mint Carob Bar

Mint Carob Bar

This certainly was sweeter than dark chocolate, and it’s hard to tell if that’s from a disproportionate amount of carob/cocoa powder or because carob naturally has higher sugar content. The texture was what threw me; this was rather chalky, and not at all smooth like my favorite dark chocolate. As for the benefits of carob, it’s easier to obtain in its raw state than cacao. It also boasts more calcium(or, in its case, calci-yum). I did like it, but I’m certainly not running out to buy carob powder or recommending it to anyone not allergic to chocolate(again, sorry!).

Baby Carrots And Broccoli

Baby Carrots And Broccoli

I also had healthy snacks like baby carrots and tiny broccoli florets. Actually, I ate this right after my dinner post. I love roasted broccoli, but it’s about 1/2 as filling as steamed broccoli, and 1/10 as filling as raw. Don’t get me wrong, though: The flavor is a thousand times better. Can you tell I’m good with numbers, particularly food math?

70% Dark Chocolate With Vanilla Peanut Butter

70% Dark Chocolate With Vanilla Peanut Butter

Like I said, chocolate is irreplaceable. The texture is smoother; the flavor is richer; and think of all those antioxidants! I enjoyed Endangered Species Organic Smooth Dark Chocolate with a shmear of 365 peanut butter sweetened by Madhava vanilla agave. The chocolate bar looks damaged because it was in my pocket all last Friday and got melted along the way, but it tasted delicious. And I was so happy Grey’s Anatomy was back new last night! That show has had me addicted since Season 1.

Oatmeal With Vanilla Peanut Butter

This morning I actually forced myself to sleep in until 8; otherwise I just wouldn’t have known what to do with myself. I muddled around/read blogs until I was hungry for breakfast. It was more of my non-chocolate addiction:365 peanut butter sweetened by Madhava vanilla agave. I have yet to see this agave in a store, but if I do I’m buying them out. And I’m sure the overall price is better than buying a fancy nut butter, since 365 only cost me $1(Get those Whole Deal coupons before they go!).

Plain Yogurt With Raspberry Conserves And Vanilla Almond Butter

Plain Yogurt With Raspberry Conserves And Vanilla Almond Butter

Of course, fancy nut butter will always be a part of my life, like vanilla almond butter from Naturally Nutty. I prefer things like nuts or trail mix on my yogurt so much more than granola; and I never have to think if it’s gluten-free or not!

Have you tried carob? Like it or not? It was fine, really; but it will never be a part of my life like chocolate is.

Well, it might not be clear through all the chocolate I eat…

Divine Mint Dark Chocolate

…But believe it or not I do fall under the “health food blogger category”. And now I’m excited to say I’ll be a featured publisher for that, too! Foodbuzz is releasing a special section devoted to healthy living and I’ve been accepted as a publisher! First of all, you can friend me and buzz my profile here. Of course, I’ll still be having the same fun and friendly blog. I’ll just be sure to emphasize on occasion a new healthy recipe(like banana goodness bread) or deeper info on a health-related topic(like how gluten affects me). And if you have a Foodbuzz account, please friend and buzz me! Of course, I’ll always be a chocolate reviewer at heart…

I think I’m on a ginger dark chocolate kick. After trying Green & Black’s last night, I had to see what Vivani had to offer. I liked their bar, but not quite as much. The ginger was perfect; I just wish there was a tad more of it. But the combination of ginger and dark chocolate is a new favorite in my book! It also seems that, in the time since Vivani sent me several of their bars to review, they’ve completely renewed their line; I’d be interested to see if they become more widely available now.

This morning, I had the pleasure not to have a 9am class. I slept in(just a bit) and decided still to run first thing. I snacked on a Peanut Choco’ Nature’s Path Chewy Granola Bar while sipping some coffee before making my way down. An empty gym is definitely food for the soul, too, when it comes to relaxation

105 minutes later, I had gone 12 miles. The run wasn’t much more exciting than what was on TV, which was the Today Show. Have you heard of Sandra Bullock’s baby adoption and how they’re willing to work together through divorce to both be parents of Louis? That’s such a sweet and at the same time heartbreaking story; I still have secret hopes she’ll reconcile with Jesse James.

What “healthy” subjects would you like to see touched upon more? I’m all ears! And tonight I can’t wait to announce a blogging milestone. Until then, just click around a bit, read a few recipes to get us there quicker 😀

Waiting On Chickpeas And What The Internet Knows…

Posted on April 28, 2010. Filed under: Daily Update, Recipe | Tags: , , , , , , , , , , , , , , , , , , , , |

I’m glad you all seem to love fudge almost as much as I do

Could I resist having a piece this morning after photographing it? Not a chance. That does not bode well for how long this will last in my freezer. At least it’s raw, and the coconut oil gave me good energy for a run.

10 Miles In 90:16

10 Miles In 90:16

Maybe that’s a lie, too. This run was a little slower than I’ve been able to do recently. My left foot hurt and I suspect it’s because there’s so little arch support. These shoes seriously have 2000-3000 miles on them, and I really need a new pair 😦 Perhaps after the half-marathon this Sunday. Besides that, I was entertained by the new Dr. Who and pushed past that.

Blueberry Chobani With Sprouted Almond Butter

Blueberry Chobani With Sprouted Almond Butter

Instead of regular class, I had an earlier museum tour today. I didn’t have enough time between running and that for a proper lunch, but it’s always important to fuel, so I threw some Better Than Roasted Sprouted Almond Butter and sea salt on a blueberry Chobani; I love the blueberry/almond flavor combo.

Ancient Egyptian Mummy

Ancient Egyptian Mummy

The museum tour was pretty interesting; the RISD art museum is famous and somewhere I’d really like to spend more time if I get the chance. As is, we just had 40 minutes to go through a few rooms and get lectured on ancient artifacts.

Tumeric Spiced Carrot Cake Chickpea Salad With Toasted Walnuts

Tumeric Spiced Carrot Cake Chickpea Salad With Toasted Walnuts

I was so excited for this salad when I got back. I’ve been toying around with the thought of carrot cake chickpeas in my mind for a while now, and this was a spicy twist on that. In the mix was

  • 1 cup chickpeas
  • 2 tablespoon chickpea water
  • 1 tablespoon maple syrup
  • shredded carrots
  • organic hunza raisins
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon tumeric
  • sea salt

I took the extra 5 minutes to go down stairs and toast some walnuts in a pan, too. If you have the time, you really should toast your nuts. The flavors here were all incredible and I loved it! This’ll definitely be a new salad recipe to keep in mind for the future. On the side and in my next class I sipped on a Gingerade Kombucha.

Even though the weather is crappy and cold, I can still crave ice cream; I can always crave ice cream. In accordance with project cleanout, I knocked down both of these pints, neither of which had a real serving left. I think the combination of a coconut/vanilla flavor with white chocolate was bliss. Could someone make a vegan white chocolate ice cream next, maybe? I’d buy. That was all in prep for dinner.

Grass-Fed Burger And Sweet Potato Chunks

Grass-Fed Burger And Sweet Potato Chunks

It wouldn’t be a Wednesday night in this house dorm without sweet potatoes and a burger. How long has it been since I’ve had sweet potatoes? 4 days? That’s too long. This meat also tasted nice and fresh since we just got it Monday and I hadn’t unsealed the pack yet–yum!

I always find it funny seeing what website my internet thinks I want to go to just when I type in the first letter. Some of them are dead on; others I can’t fathom what it’s thinking. I thought I’d post them all here for a laugh and encourage any other bloggers to do the same.

Who Doesn’t Love Fudge?

Posted on April 28, 2010. Filed under: Daily Update, Product Review, Recipe | Tags: , , , , , , , , , , , |

Do you love fudge? I thought I liked fudge, until I had that goat’s milk fudge a few days ago, and now I’m realizing I love fudge. I can’t get it out of my head! It’s my newest obsession. And just when I think I’ve figured out how to make a killer vegan fudge, I go off to school where I have none of the supplies or ingredients. Boo 😦 Well, I can’t do a killer vegan fudge for you today. But how about a killer raw vegan fudge?

Raw Vegan Chocolate Fudge

Ingredients:

  • 1 1/4 cup nuts or half the amount nut butter*
  • 1/2 cup(80g) dates
  • 1/4 cup cocoa powder
  • 1/4 cup coconut oil
  • 2 tablespoons agave nectar

In a food processor, process the dates until a smooth paste. Remove and process the nuts until a coarse and crumbly texture. Finally, add all the ingredients back into the food processor and blend until incorporated. Once the mixture is emulsified, pour into a container and remix by hand if the coconut oil separates(it should be liquid by this point). Freeze and cut. Makes about 6-10 servings.

*You can mix it up and use your own blend to alter the flavor. Cashews have a nice, neutral flavor whereas others add their own touch. I like 3/4 cup cashews with 1/4 cup hemp seeds and walnuts

Green & Black's Ginger Dark Chocolate

I bought a ginger Green & Black bar way back when they were on sale, and held on to it for so long thinking I wouldn’t like it. I think the fact that I had 12 squares and went back for 6 more proves me wrong. I loved the sweetness and “warmth” as they called it the ginger added to dark chocolate!

Raw Vegan Chocolate Fudge And Chocolate Yumnuts

Raw Vegan Chocolate Fudge And Chocolate Yumnuts

At the end of the night I broke in to my pan of raw vegan fudge along side some chocolate Yumnuts. I love the name. And yum! These were super. I didn’t like them at first, until they started to remind me of chocolate-coated M&M’s–not even the peanut find, just the chocolate M&M’s themselves. Anything this healthy and natural that could do that is a rockstar in my book.

Pomegranate Chobani, Oatmeal With Chocolate Almond Butter And Coconut Milk

Pomegranate Chobani, Oatmeal With Chocolate Almond Butter And Coconut Milk

I woke up and could have worked out first thing. It would have made timing for the rest of my day a lot better. But I realized I wanted to be fueled by a big bowl of oatmeal and not fudge, so I stayed in and ate breakfast.

Oatmeal With Chocolate Almond Butter And Coconut Milk

Oatmeal With Chocolate Almond Butter And Coconut Milk

Still no Justin’s chocolate almond butter to be found here, so I’ve gotten to making my own. And I’m pretty good at it! I think there’s a secret ingredient; I’ll save that for another day. And what would be hot oatmeal without coconut milk? I’m just loving my coconut milk as of late.

Do you like fudge? Now that I’ve given you a no-bake recipe to make some, I expect no excuses.

Raw Foods And Fried Foods

Posted on April 27, 2010. Filed under: Daily Update, Product Review | Tags: , , , , , , , , , , , , , , , |

If you asked me what I loved to eat, I’d probably answer fried foods and raw foods. At least the one balances out the other, right? The easiest ways I find to get raw foods in is a fresh salad:

Maple Spinach Salad With Raw Cheddar, Avocado, Maple Tofu, And Maple Walnuts

Maple Spinach Salad With Raw Cheddar, Avocado, Maple Tofu, And Maple Walnuts

Let’s call this the “garbage can” salad because I threw whatever I wanted to get rid of on it. And it worked! The base was spinach tossed with maple syrup and walnut oil. In the mix was 1/2 an avocado, a Next Generation Dairy cheddar cheese stick, and leftover maple tofu, topped with Tierra Farm‘s maple glazed nuts. I made this to-go to eat in class like always on Tuesdays but it didn’t make it that far 8-| I just couldn’t resist; and it was so tasty! I went with my hunger and ate it and went off to class.

Almond Protein Plus Boomi Bar

Almond Protein Plus Boomi Bar

Mid-afternoon I snacked on an almond protein plus Boomi Bar. I’ve always wanted to make my own bar like this: throw it all together and hope it works. I like that this was 3 simple ingredients: almonds, honey, and whey protein isolate. I didn’t care much for protein isolate, though(I rarely do). And the flavor wasn’t quite as good as Perfect Foods Bars(reviewed here).

Organic Red Delicious Apple

Organic Red Delicious Apple

I had an apple after taking another Greek language test. If you remember, I made a small fortune off of taking them earlier in the semester, and I’m hoping the same for this one. Although since I’m competing against juniors and seniors who know much more than me, I’m wary.

Raw Brownies

Raw Brownies

I also found time to “bake” raw brownies this afternoon, except I used a different recipe with a few new, secret ingredients. I’m not sure how they’ll be once they set. And the added ingredients definitely added a ton of fat. The batter was tasty, at least.

Food Processor

Food Processor

My favorite thing about vegan desserts is that you can always eat the batter. I think I had a little too much of this. Blech. But it was good! Can’t wait to see how these come out.

Preparing Dinner

Preparing Dinner

For dinner I gave my first attempt at frying! I filled my pan with a good coating of sesame oil and laid down some tofu strip. I let them brown for about 3 minutes on each side.

Sesame Tofu, Broccoli And Snap Peas With Soy Sauce And Sesame Oil

Sesame Tofu, Broccoli And Snap Peas With Soy Sauce And Sesame Oil

Golden Sesame Tofu

Golden Sesame Tofu

And then for my Asian-inspired dinner. I probably could have let the tofu go for longer; it certainly didn’t taste like Whole Foods. But I was really proud of this! I feel like a whole new culinary style has opened up to me, and I can start to use a Paula Dean cookbook 😉 Is a deep fryer in store for me over the Summer? Probably not. I’ll let Whole Foods handle that.

Do you/Did you ever walk around the neighborhood a lot? Usually, after dinner(especially a good, big one), we would walk around the neighborhood for fun and for health. I feel like when the weather’s nice everyone’s out around where I live. I can’t wait for that during the Summer again! And I definitely feel like I could use a walk now. It might not be as good without the neighborhood, but I’ll find somewhere.

Ice Cream For A Cause

Posted on April 27, 2010. Filed under: Daily Update, Product Review | Tags: , , , , , , , , , , , , , , , , , , , , , |

Hello, hello! I feel like this weekend totally flew past me between the auction Friday night to Avery’s birthday party to now being back in my dorm room and attending classes again with little to no transition in between. When the flow goes, go with it!

Avocado Rubbed Kale, Sweet Chili Tofu And Peppers

Avocado Rubbed Kale, Sweet Chili Tofu And Peppers

We packed up the car last night and made it to the Whole Foods in Providence in record time. Of course, we hit up the salad bar while grabbing groceries. My plate had some avocado-rubbed kale, sweet chili tofu, and pepper strips. The tofu was to die for. I can’t begin to explain how crispy on the outside and juicy on the inside it was. And the sweet and heat balanced perfectly. I would have had more, except that wasn’t really my dinner…

Ice Cream Social

Ice Cream Social

As any Rhode Islander knows, there were massive floodings earlier in the month from a huge rainstorm that hit us. Businesses and houses were destroyed, and Whole Foods was holding an ice cream social to help raise money for those families. I can definitely get into ice cream for dinner for charity.

Vanilla Ice Cream Sundae With Chocolate Syrup, Whip Cream, And A Cherry

Vanilla Ice Cream Sundae With Chocolate Syrup, Whip Cream, And A Cherry

I was hoping they’d break out the fun and funky pints for this, but they just had 365 vanilla and chocolate :-/ I got vanilla ice cream with organic chocolate sauce, 365 whipped cream, and a natural maraschino cherry. Sundaes always taste better when someone else makes them for you with a heavy hand. The 365 vanilla is OK, but I’ve definitely branched out from dairy-based ice cream and have had better. Other fun finds(but not purchases) at Whole Foods were the new So Delicious flavors in stock and Daiya vegan cheese!

Red Delicious Apple

Red Delicious Apple

Endangered Species Dark Chocolate With Deep Forest Mint

Endangered Species Dark Chocolate With Deep Forest Mint

While working on some homework not-so-hard, I had the snack of champions: an apple, mint dark chocolate, and decaf coffee. Could I have had a little more sugar last night? It was all for a good cause–let’s keep that in mind. Last Summer I managed to switch from caffeine to decaf coffee; this year it’s been about weening off the stuff completely from the acidity, but I do have about a cup a day, which is probably an ideal balance of antioxidants and acidity. I don’t think I could/would give it up completely.

Oatmeal With An Egg And The Heat Is On PB

Oatmeal With An Egg And The Heat Is On PB

I couldn’t deal with more sugar before bed so I went the spicy route with The Heat Is On peanut butter and a savory Omega-3 egg. It might be hard to believe it through my sweet tooth and all, but I definitely could not go a day without a good deal of savoriness. Sometimes, my garlic tooth is just as big.

Pomegranate Chobani With Quinoa Dark Chocolate

Pomegranate Chobani With Quinoa Dark Chocolate

Back to classes and rain meant back to runs first thing, so I woke up at 6:30 to squeeze an 8-miler in before class. Normally, dairy and protein wouldn’t work for me before a run. But it was all I was craving. And since I was going to run anyway, I thought why not have the damn pomegranate Chobani with Alter Eco dark chocolate quinoa.

10 Miles In 86:16

10 Miles In 86:16

Something must have worked, because I extended my run to 10 miles and ran at a 7mph pace. The best part was finding out through the news that the forecast for Sunday’s half-marathon is sunny and warm! Crossing my fingers…

Cranberry Greek Yogurt With Craisins, Oatmeal With An Egg And PB

Cranberry Greek Yogurt With Craisins, Oatmeal With An Egg And PB

Finally, for breakfast I was craving craisins. I just wish there was a bar called that so I could have known what to eat so much easier. I mixed Crofter’s Organic Europe jam in a plain chobani and topped with Tierra Farm‘s organic dried cranberries–holy yum were these soft and squishy! On the side I had oatmeal with another egg and some Teddie’s pb sweetened up a tad. In class I got bored and calculated that I ate around 50g of protein and all before lunch! Sure, you could just take 2 scoops of a powder and call it at that. But I love getting so much nourishment from real food.

Do you have any cooking goals? 2 of the things this weekend inspired me to do are 1) use my food processor to make more complex and delicious raw foods and 2) learn to fry tofu. An ironic pairing, no? Well, if things go my way today, I’ll be incorporating one of those into dinner… Is there anything you want to learn to do in the kitchen?

To-Done

Posted on April 26, 2010. Filed under: Daily Update, Product Review | Tags: , , , , , , , , , , , , , , |

Some days call for a to-do list, and others call for a to-done list. What’s a to-done list? It’s simply writing down everything you’ve done and needed to do after you do it. I love them for days I feel overwhelmed and need reassurance that things are getting done even if it seems like there’s more to do. And really, who has time to make a list beforehand? Here’s my to-done list of the day

Goldenberry Goji Pranabar

Goldenberry Goji Pranabar

  • Eat this Pranabar I’ve been carrying around all weekend
  • Make a review page for the goldenberry goji flavor explaining how delicious the orange, goji berries, and goldenberries combine to be, and how amazing for energy agave(raw, unrefined sugar) and almond butter(slow-burning fat and fiber) are.
14 Miles In 1:58:20

14 Miles In 1:58:20

  • Run the same distance you said you would never run again and it was crazy ever to do once.
  • Find Eastleigh Farms where (hopefully) we’ll be getting our dairy from over the Summer on the run.
Oatmeal With Chocolate Almond Butter And Mocha Almond Fudge Coconut Milk Ice Cream

Oatmeal With Chocolate Almond Butter And Mocha Almond Fudge Coconut Milk Ice Cream

  • Try an Holly inspired oatmeal creation involving homemade chocolate almond butter and Mocha Almond Fudge coconut milk So Delicious ice cream. I know nowadays it seems like my blood is made of coconut milk ice cream, but this was actually the first flavor I ever tried after hearing Jenna rave about it.
  • Write an apology letter to Justin saying how much I love his chocolate almond butter but that they’re impossible to find and that I think I’ve discovered the “secret ingredient” to awesome chocolate nut butters.
  • Shower while drinking mocha teeccino–no time lost here.

  • Roast broccoli while you have the resources and time.
  • Use up the last of the beef that’s a week old(!!). It certainly wasn’t at its prime, but it was edible and I couldn’t stand the thought of wasting animal meat.
  • Grill!!
  • Try an amazing new combination of broccoli roasted in walnut oil and topped with soy sauce and toasted walnuts–heaven.

Special

Posted on April 26, 2010. Filed under: Daily Update | Tags: , , , , , , , , , , , , , , , |

You might think someone who’s willing to post such a large portion of their life on the world wide web would live for attention. I don’t. In fact, in life I really hate being “special” in any way or getting extra attention at all. But some days that’s hard to avoid. Some days, you just stand out whether you’d like to or not.

Organic Red Delicious

Organic Red Delicious

Like this apple. It was probably the biggest piece of organic fruit I had ever seen. It held me over 2 and 1/2 hours. I love it when organic fruit is humongous; it gives me hope for organic farming.

Avery's 4th Birthday

Avery's 4th Birthday

We drove to New Hampshire for my cousins birthday party. It was at a local raquet club where the kids could swim in a pool. I conveniently forgot my bathing suit and went out to pick up the pizza with my father and grandfather. Of course, I didn’t want to be “special” but I couldn’t eat the pizza because of the crust. On the way back, we stopped at a natural food store where I found a salad bar.

Stir-Fried Greens, Pineapple, Organic Chicken

Stir-Fried Greens, Pineapple, Organic Chicken

I was having a good vegan streak this weekend and wanted tofu, but chicken was what they had :-/ It was very tasty chicken, I must add. I also had some greens and pineapple, and ate off to the side trying not to seem “special”(though it was pretty obvious). I must add: pizza still smells really good even when you can’t/won’t eat it, and the one with pineapple and marinara sauce was tempting me.

Birthday Cake

Birthday Cake

Thank God for birthday cake, because I could have sworn he was turning 4! 8-| Obviously, I passed on this, but not on this…

Gluten-Free Vegan Midnight Chocolate Cupcake

Gluten-Free Vegan Midnight Chocolate Cupcake

The cupcakes I made were a hit, even though I really didn’t care for the frosting. Even my older cousin who doesn’t care for chocolate loved them. My aunt, in trying to describe them, gave them every “special” title in the book: vegan, gluten-free, dairy-free, organic. I was surprised she didn’t add Jesus made them. They weren’t 100% organic, but they were all-natural.

Organic Baby Carrots And Orange Zevia

Organic Baby Carrots And Orange Zevia

Coming home, I was really torn whether to try and go back to campus tonight or not. I was tired, not prepared, and overall a grouch, so that made the answer pretty simple after chewing on the last of some baby carrots and an orange Zevia. And since no one felt like cooking, it was out to dinner.

Coconut Curry Tofu And Veggies

Coconut Curry Tofu And Veggies

I had such a coconut milk craving last night, you wouldn’t have believed it. We went to Big Fresh Cafe. After explaining why wheat noodles wouldn’t work for me in this dish, and that I’m just not a fan for rice, my plate was a big bowl of veggies, tofu, and coconut curry sauce. I’d rather get a big bowl of “special” ordered food I love than not eat 1/2 of it. And I loved this; I could have drank the sauce, but I didn’t. Come to think of it, that may not have been vegan if they used eggs or anchovy in the sauce. Regardless, I need to make curry more.

Endangered Species Deep Forest Mint

Endangered Species Deep Forest Mint

I bought this chocolate bar while at Whole Foods and started digging in with some mocha teeccino. It may be a project cleanout fail but it wouldn’t be much longer I could get a decent mint chocolate bar for $2.

And I finished up with the emotional roller coaster that is Brothers & Sisters and a bowl of oatmeal with almond butter, which photos my camera is withholding :-/ It’s probably just as well since I didn’t bother to photograph the 2 fingerfulls of almond butter and handful of almonds I had afterwards. I think I was on an almond kick, especially after baking these.
