Who Doesn’t Love Fudge?

Do you love fudge? I thought I liked fudge, until I had that goat’s milk fudge a few days ago, and now I’m realizing I love fudge. I can’t get it out of my head! It’s my newest obsession. And just when I think I’ve figured out how to make a killer vegan fudge, I go off to school where I have none of the supplies or ingredients. Boo 😦 Well, I can’t do a killer vegan fudge for you today. But how about a killer raw vegan fudge?

Raw Vegan Chocolate Fudge

Ingredients:

  • 1 1/4 cup nuts or half the amount nut butter*
  • 1/2 cup(80g) dates
  • 1/4 cup cocoa powder
  • 1/4 cup coconut oil
  • 2 tablespoons agave nectar

In a food processor, process the dates until a smooth paste. Remove and process the nuts until a coarse and crumbly texture. Finally, add all the ingredients back into the food processor and blend until incorporated. Once the mixture is emulsified, pour into a container and remix by hand if the coconut oil separates(it should be liquid by this point). Freeze and cut. Makes about 6-10 servings.

*You can mix it up and use your own blend to alter the flavor. Cashews have a nice, neutral flavor whereas others add their own touch. I like 3/4 cup cashews with 1/4 cup hemp seeds and walnuts

I bought a ginger Green & Black bar way back when they were on sale, and held on to it for so long thinking I wouldn’t like it. I think the fact that I had 12 squares and went back for 6 more proves me wrong. I loved the sweetness and “warmth” as they called it the ginger added to dark chocolate!

At the end of the night I broke in to my pan of raw vegan fudge along side some chocolate Yumnuts. I love the name. And yum! These were super. I didn’t like them at first, until they started to remind me of chocolate-coated M&M’s–not even the peanut find, just the chocolate M&M’s themselves. Anything this healthy and natural that could do that is a rockstar in my book.

I woke up and could have worked out first thing. It would have made timing for the rest of my day a lot better. But I realized I wanted to be fueled by a big bowl of oatmeal and not fudge, so I stayed in and ate breakfast.

Still no Justin’s chocolate almond butter to be found here, so I’ve gotten to making my own. And I’m pretty good at it! I think there’s a secret ingredient; I’ll save that for another day. And what would be hot oatmeal without coconut milk? I’m just loving my coconut milk as of late.

Do you like fudge? Now that I’ve given you a no-bake recipe to make some, I expect no excuses.

I wasn’t really a fan of fudge until my boyfriend made me pumpkin fudge for Christmas. After I plowed through all of it in 3 days, I realized, “hmmm… I seem to love fudge”

Yep, love fudge..when I was younger, I ate a pound of fudge…my whole family thought I would be sick but nope, this chocoholic can do some damage! Too bad I just used all my cocoa powder on my cookies the other day, I need to go out and get some for this vegan fudge!

Mmmmmm….I do love fudge! Given the choice of any desser, it wouldn’t be my first choice, but when I do have some, I always remember how much I like it!

I love fudge. And with this no bake recipe, it is very tempting! However, I try not to use too many coconut oil as it contains a lot of saturated fat. Of course, compared to regular fudge, this one is certainly WAY healthier! Thanks for the recipe!

Fudge is amazing! And no bake is even better. Lol! The only excuse that I have is I don’t have any nut butters! Gasp! I should work on that 😉

this is a much better recipe than the usual chocolate + lard. yummy healthy ingredients; I may suggest this to some friends!
