8.5/10: Coconut butter–different from coconut oil–is the thick butter resulting from grinding the dehydrated meat. While it should be just as nutty as any other part, I found the flavor here a little dull and lacking; perhaps it’s too fibrous as a spread and needs more of the oil from the fruit? It was impressive hearing how Artisana goes about making this. And the solidity of this at room temperature leaves all sorts of uses for the mind beyond what coconut oil can do. But as a spread this was downright dull and skipable.
