Cherries N’ Berries Amaretto Clafouti


  • 5oz cherries, pitted
  • 140 grams blueberries
  • 1/2 cup whole wheat flour
  • 60 grams sugar(about 5 tablespoons)
  • 1/4 teaspoon salt
  • 3 eggs
  • 1 cup almond milk
  • 1-2 tablespoons amaretto
  • 1 teaspoon vanilla extract

Preheat your oven to 350 degrees. In a deep, 9×9 baking dish, spread out the cherries and blueberries. In a bowl, sift together the flour, sugar, and salt. Whisk in the eggs one ate a time. Pour in the almond milk, amaretto, and vanilla extract and mix. Pour over the fruit evenly in the baking dish. Bake for about 45 minutes, or until golden and a toothpick comes out clean. Remove from oven and let set for at least 5 minutes before cutting into.

This recipe was incredibly simple and delicious. It’s definitely something to make when you’re having company over because it’s so easy and yet seems so decadent. And it really is best within the few hours out of the oven. You can sift powdered sugar over the top for serving. The almond flavor was a little subtle, so if you’re someone who likes louder flavor increase the sugar in the batter. The best thing about this recipe is that it can easily be adapted to fit certain dietary needs. Try swapping out the flour for almond meal, and using flaxseed meal as a thickener to replace the eggs.
