Fig And Almond Blondies

Fig And Almond Blondies(adapted from an adaptation from veggie girl)


  • 1 cup plain yogurt
  • 2 tablespoons canola oil
  • 6 tablespoons(about 1/3 cup) honey
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 1 1/4 white whole wheat flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 5 ounces fresh figs, diced
  • 2 ounces slivered almonds, toasted

Preheat your oven to 350. In a large bowl, mix together the first 5 ingredients. Sift in the flout, baking soda, and salt. Add in the dates and almonds and mix until well incorporated. Pour into an 8 x 8 baking pan and bake until golden, about 35-38 minutes.
