Vegan Meatloaf

Vegan Meatloaf

Ingredients:

  • 3/4 cup dry lentils
  • 1/2 cup dry brown rice
  • 1/2 cup walnuts
  • 1/4 cup flaxseed meal
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons your favorite seasoning
  • 1 carrot
  • 1 large onion
  • ½ cup tomato sauce
  • 3 tablespoons wheat-free soy sauce
  • 2 tablespoons vinegar
  • ¼ cup ketchup
  • 2 tablespoons mustard

On the stove, cook completely your brown rice and lentils. While those are simmering, dice the onion and shave the carrot. In a food processor or mini chopper, finely crush the walnuts into crumbs. Combine all of those in a dish with the flaxseed meal, salt, and seasoning. When the brown rice is ready, toss it in that bowl. In a separate bowl, mush the cooked lentils with a potato masher until a thick puree. Add to the rice mixture the ketchup, mustard, soy sauce, vinegar, and tomato sauce and mix. Lastly, add the lentil puree and fold until fully incorporated. Transfer this into a loaf pan. For best results, let the laof sit in the refrigerator for 2-5 hours before baking if time allows. When ready to cook, bake in an oven preheated to 325 degrees for 60 minutes, and let cool on counter covered for another 10 minutes before cutting into.

RSS Feed for Food Makes Fun Fuel Comments RSS Feed

I’ve had this recipe bookmarked, and I’m committed to making it this weekend! It looks remarkably similar to a fabulous “lentil loaf” I had at a vegan restaurant a few months ago. Somehow calling it “vegan meatloaf” makes it sound a little more mainstream 🙂 It looks delicious!

Now I love this recipe, but I think to get hubs to eat it I would have to call it something else….maybe to him I would say it’s a Bean casserole…seriously if I said lentil he would just look at me like what?

Looks and sounds delicious! But why call it a meatloaf? How about a VeVe Loaf for Vegan Vegetarian?

I can’t wait to try this recipe! What’s awesome about it is that it uses ingredients omnis are likely to have in their pantries. My parents would think I was ridiculous if I started asking for things like nutritional yeast. Though it seems like I SHOULD try it soon!!

haha, I just realized most omnis probably don’t have flaxseed meal in their pantries…but most omni health bloggers and blog readers do!!

If you don’t have flaxseed meal, bread crumbs are a fine substitute. That’s how the original recipe was but I made that swap so that this would be gluten-free(if you use wheat free soy sauce, that is)

Looks amazing. I will DEFINITELY try it once I get some flaxseed meal. Or I might just toast up some WW bread and use breadcrumbs. And what kind of seasonings did you use?

BTW, You have such good recipes! I’m going to try the avocado chocolate pudding soon too.

PS. Where do you go to enter in your nutritional values? I would like to do this for some of my recipes instead of having to find the nutritional value for each ingredient and then add them all up.

WW breadcrumbs will work just fine; that’s what I had in the original recipe but then swapped them out to make it gluten free. I didn’t use any further seasonings but salt. And you can enter recipes at nutritiondata.com
