Vegan Pumpkin Molasses Cookies

Vegan Pumpkin Molasses Cookies(slightly adapted from The Healthy Everythingtarian)

Ingredients:

  • 2 cups whole wheat flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1 tablespoon ginger
  • 1/2 tablespoon nutmeg
  • 1/4 cup flaxmeal
  • 1/2 cup canned pumpkin
  • 1/4 cup canola oil
  • 1/4 cup molasses
  • 1/2 cup turbinado sugar
  • 3 tablespoons – 1/4 cup water
  • 1/4 cup turbinado sugar
  • 1/2 tablespoon ginger

Preheat your oven to 350 degrees. In a bowl, sift together the first 7 ingredients and mix well. In a small bowl, mix together pumpkin, canola oil, and molasses until well incorporated. Add in the turbinado sugar and mix. Combine the wet into the dry and add appropriate amount of water until batter holds shape but does not stick. Form into 24 balls. In a small bowl, mix 1/4 cup turbinado sugar with ginger and roll each dough ball in this. Place on a lined cookie sheet and press down with a fork laterally and horizontally. Cook for about 12 minutes or until mostly firm to the touch. Remove and let cool on a wire rack.
