A “Basic” Brownie Recipe

I come from the line of thinking that you should never make things from a box: Either make it yourself, or buy it from someone who made it themselves. Things just taste better that way, don’t they?

Last night, I had a brownie attack. Don’t we all get those? I used to swear by a recipe like this one by Rachael Ray.I love the tag: “We can’t believe people are still using boxed mixes!” However, since then my “basic” has become anything but. Of course, there’s the gluten thing; I’ve also steered away from using eggs in baked goods for personal reasons. And, while I’m at it, I usually figure why not take out the dairy and make them vegan just in case? In case of what? I have no clue either. But that’s my line of thinking. And so I made brownies as “basic” as I could. And you know what? They turned out darn good. And because they were vegan, I got to lick the pan šŸ˜‰

Basic Allergen-Friendly Brownies

Ingredients:

  • 1 cup GF flour mix
  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 3/4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 cup non-hydrogenated margarine
  • 1 tablespoon olive oil
  • 1 tablespoon white vinegar
  • 1/4 cup non-dairy milk(water in a pinch)
  • 1 flax egg(1 tablespoon flaxmeal gelled in 3 tablespoons water)
  • 1 teaspoon vanilla extract
  • 3 oz chopped dark chocolate, or 6 tablespoons vegan chocolate chips

Preheat your oven to 350 degrees. In a big bowl, sift together the first five ingredients. Melt the non-hydrogenated margarine and add in the olive oil, non-dairy milk, vinegar, flax egg, and extract. Pour into the dry mixture and mix until incorporated. Fold in the dark chocolate and pour into an 8×8 baking pan. Bake for 30 minutes or until a toothpick comes out clean.

When you’re living with allergens, life isn’t simple. Good thing these brownies are. And tasty!

I’m ashamed to say this was store bought vanilla bean coconut milk ice cream. When you get used to the home-churned stuff, it just feels naughty coming from a carton. Regardless, this was soooo good. Isn’t this how every weekend should be? 3-days long and full of brownie sundaes? I think so.

You could use 3 ounces of fancy chocolate for the recipe. Or you could use vegan baking chips and save the good stuff for yourself to eat straight. I think you can guessed what I chose.

And a big ol’ bowl of oatmeal with peanut butter and sea salt tasted good after all that chocolate. Sometimes, you just need to detox.

After all that baking/microwaving, I did not feel like much for breakfast this morning. I really wanted a big cake donut and to call it a day but that wasn’t happening. Thankfully, I found this chocolate chip muffin fromĀ Gluten Free Life to eat with some earth balance. Just like my brownies, you’d never guess this was gluten-free! And so many chocolate chips. Yum šŸ™‚

Anything exciting on tap for Memorial Day? I had a pool party in store but apparently it’s been rain checked since the pool won’t heat up šŸ˜¦ Alas, we have a grill, we have neighbors, I’m sure we’ll find some way to spice up Memorial day.

That Food Network Show I Hate

I’m not very picky when it comes to television, especially since moving back home and getting more channels with a DVR. I men, you have to be a TV whore to record something called Sex In The Ancient World airing at 3:01am, right? To be fair, I had a history class period this past semester devoted to that, a whole awkward class period. But there’s one Food Network show that I both watch and loathe.

What’s right about this show? I’m sure the contestants are great hometown chefs, but they never pop. They just aren’t Food Network chefs and it shines through. The producers are constantly trying to build the pressure when there just isn’t any. And presentation is always overemphasized. If you can mix sugar cookie dough and miso and make a dessert, you can dress it up all you want but I just want to know how it tastes. There was no emphasis on pressentation last night. No funky ingredients. And no Chopped.

What do you buy in bulk? Working with a 3-foot fridge and a tiny room, it was hard to buy anything in bulk all year long. Since coming home, I’ve started buying 5 pound bags of organic potatoes. And now I’ve done the math and discovered that if you buy the gourmet baking chocolate by the pound from Whole Foods, it’s cheaper than buying chocolate bars, so I’m sure I’ll be taking advantage of that from now one.

What 2 Semesters Have Taught Me

To be honest, I wasn’t sure about doing a post like this. Would I be flaming any fires? Would I or anyone be amused? If ever pen was going to be put to paper(or fingers to keyboard), it was going to be when the memories are fresh. So I dove right in…

What I learned…as a blogger

  • I kicked off the year buying my own domain and haven’t looked back.
  • I’ve learned that you might get anonymousĀ commenterĀ telling you you eat too much broccoli, but that really you couldn’t possibly eat too much broccoli
  • You might alsoĀ commentersĀ telling you your nights are lackluster and plugging their own blogs. But if you enjoy your time, and someone is sitting at a computer screen reading things they don’t even like, who’s really losing out?
  • I had my first blogger meet-up.

What I learned…as a student

  • I learned some really really dirty words in Latin between Catullus and Petronius.
  • I’m a much better essayist than I give myself credit for.
  • Acing a class you take without a grade might be a kicker, but the more important part is taking a class stress-free and for fun.
  • Sometimes, you need to devote a whole week to mental health.

What I learned…as a runner

  • The treadmill is not the dreadmill to me; to me, it’s a friend
  • You meet good people at the gym, some of whom you might inspire.
  • You can always achieve your goal with enough effort(and fuel).

What I learned…as a foodie

  • Grezzo’s first inspired me to eat more raw, and then it closed.
  • I can now cook a mean hash.
  • With an oven, eating healthy doesn’t have to be hard; it just takes time.
  • Garden Grille and Nick’s On Broadway will both be getting my business next year.
  • The Whole Foods salad bar makes the best… everything.

What I learned…as a person

  • It’s OK to walk through a room of people playing beer pong in your PJ’s to get ice cream.
  • Emma Watson can be pretty elusive.
  • The Today Show has become my number #1 and only source of news.
  • If you want to go to bed at 9:30, who the hell is stopping you?
  • I fell in love. Not with anyone, but with Rhode Island. The smallest state has taken a big place in my heart, much like it has for Heather and Sabrina. I don’t know what to say; I didn’t expect for this to happen. I’ve lived in the same house 17 years and this was the first time I could see myself living anywhere else and being happy.

Regrets?

Well, here are my regrets from the last 12 hours.

But, in general, no regrets. How could anyone live a certain way for the better part of a year and regret it? That’d be a nightmare. I don’t regret that my greatest intake of alcohol over the year has been from vanilla extract.Ā I don’t regret not joining some god awful chorus group that meets past when I want to be in bed.Ā I don’t regret the amount of time and effort I put into things. I just don’t live with regrets, and that keeps me happy. My first day of freedom is cold, and rainy, but I’m pretty sure that makes it perfect for movies, popcorn, and staring at the piles of things to put away thinking “Well that’s just not happening today.” What’s the weather like where you are?

Despite being in Providence almost a year, I haven’t been able to get myself to Nick’s On Broadway until today. It was highly recommended by Heather and Sabrina and was voted in the top 59 breakfast places in America! Even though the wait was an hour, I had a feeling it would be well worth it for Mother’s day brunch.

That would be my grandmother with both a sangria and a bloody mary in front of her. She actually ended up with neither and drinking a decaf coffee instead, but I thought the photo was funny šŸ˜‰ I sipped the bloody mary and even though I have nothing to compare it to I have to say it was really really good, and that’s from someone who hates horseradish. My one complaint was that the decaf coffee, which I did have, wasn’t terribly hot at all. I was so excited for my meal.

I ordered a local cut of beef with a side of homefries. Between Providence and the Garden Grill Cafe, I’ve grown a love for homefries and had to try Nick’s; they were deliciously and not overly oily at all while still being crisp and delicious.

The beef was perfectly cooked and seasoned, with a nice herby crust and a rare center. I love the emphasis on local, which is something I’ve found a lot of in Providence. It’s easy to want to eat from within your own state when it’s the smallest in the country šŸ˜‰ On the way out the head chef, Derek, wished us well and a happy Mother’s day, which I thought was a great, personal touch. Overall I had a fantastic time at Nick’s and can’t wait to go back again.

What do you order at brunch? I don’t usually crave eggs. And as much as I love the smell of toast I cant tolerate the gluten. But one thing my brunch has to have is homefries. I’m awful at making them myself and, when they’re done right, I could eat them as my main course!

DIY: Fancy Nut Butters

If there’s one thing I love, it’s a good, flavorful nut butter. And I will happily fork up the cash for it(don’t assume I haven’t paid $10+ for a single jar). But that’s not always the most wallet friendly way to eat, even if the cost per serving is relatively low. And sometimes the flavors you want just aren’t out there. Or maybe they haven’t arrived at a store near you(Justin, I’m looking at you here). That’s when you need to know to make your own. With that, I’m happy to announce the newest additions to my recipe page: nut butters.

Chocolate Nut Butter

Ingredients:

  • 1 tablespoon nut butter
  • 1/2 teaspoon coconut oil
  • 1 teaspoon cocoa powder
  • 1 1/2 teaspoon sweetener
  • Vanilla flavoring

In a small dish, combine all ingredients and stir.

Ingredients:

  • 1 tablespoon almond butter
  • 1 tablespoon raisins
  • 1/2 teaspoon cinnamon
  • 1 teaspoon liquid sweetener
  • 1/2 teaspoon brown sugar

In a small dish, combine all ingredients and stir.

The benefit of all these recipes is that they use pantry-friendly ingredients and require no food processor. Of course, I also have recipes for nut butters that start from scratch. I’ll be sure to add those over the Summer(when my food processor isn’t stashed underneath my bed).

If you haven’t tried siggi’s, well I can only tell you what you’re missing then. It is so smooth and creamy in texture, and the speckles of vanilla bean = pure love. But none of their flavors are sweet enough for me on their own šŸ˜¦ Which might be OK if they had a little added fat to make them richer but they don’t. Fruit jam to the rescue(and a little almond butter snuck in their as well).

I hope you whip up some nut butter for your Cookie Friday. I’m sure a shmear of cinnamon raisin almond butter on this cookie would be perfect. Now I really must start my day! Lot’s of paper writing to do I’m actually looking forward to. What, what?

At the end of this post, you might question whether I have an ounce of sanity left in me. I might say I’ve never felt more sane. Finals period started today for me 2 hours ago and go on for 2 weeks from today. It’s going to be a loooong 2 weeks.

2 long weeks full of chocolate, like a new Rare Heirloom bar from Lulu’s. Oh my. Oh my, oh my, oh my was this good. It was unusually sturdy for a raw bar, with chunky coconut sugar. Even though it was 85% cacao, it wasn’t too bitter. It just tasted like pulling cocoa off a cacao tree and chowing down. Thank you for my sanity.

I’m sane, and this trail mix from Whole Foods is crazy good; I just had to go back and get more. It has in it–from what I can tell–massive chocolate spirals, dark chocolate chips, peanut butter chips, raisins, sweetened cherries, peanuts, almonds, chocolate coated raisins, and peanut butter coated yogurt raisins. Deeeelicious.

What’s the mostĀ embarrassingĀ thing on your ipod? I ran listening to music in the gym this morning, and put my whole ipod on shuffle. It was fun coming across a lot of songs I forgot I had or wouldn’t have listened to otherwise, and then came this song. Oh brother, how tastes change.

Can I Petition A Petition?

Happy Saturday! I for one am more than happy to be closer to Summer and living at home with a full kitchen and refrigerator. Have you all seen this petition yet? Basically, it’s a petition for Obama and his family to become vegans for their influence. Uhhh, what?! I fully support those who are vegans, or vegetarians. But how on earth could anyone want to dictate how another person eats? Especially when some of those are just little girls?

If I posted this when I first heard about it, I’d have some not-so-choice words, but I think by now my minds mulled it over to speak better of it. If anything, we should be preaching tolerance–tolerance of those who have a different way of thinking or path in life. This petition shows no more tolerance than the intolerance you could find against vegetarianism in a Southern cattle farm community. More importantly, you can eat ethically and aware without being a vegan, which is part of what Michelle Obama has already done through her time in the White House. What do you think of this petition? Besides that it’s going nowhere, I think it’s a little rude. And–as always–I’m on a mission to show you can eat well and ethically without devoting yourself to any label.

I mixed mine with maple syrup and walnut oil for something packed with even more essential fats and tasty! On my way back from my grocery trip, I picked up a trilogy kombucha at a cafe because I felt a little down about the whole trip :-/ A lot of it was on the store’s sale, which was good. But I probably could have saved more in coupons if I was better organized. At least I didn’t blow the project cleanout challenge too much. And you can’t say I don’t eat what I buy:

Isn’t it dreamy? My whole point in going was to get some whipped cream to make a sundae. They didn’t even have regular–just non-fat sugar-free or Rice Whip, which is dairy and soy-free. The latter seemed less processed, so I went with that and made a sundae with So Delicious chocolate coconut milk ice cream. The fudge sauce was simply cocoa powder and agave nectar mixed together. Voila! OK–the Rice Whip tasted REALLY fake; if you’ve ever had rice milk, just imagine that in an airier form. Besides that, this Friday sundae was delicious and a perfect before-dinner treat šŸ™‚

If Obama wants to eat his beef and have his vegan cheese, too, I fully support that! I made a 1/3 a pounder hamburger but undercooked it far too much šŸ˜¦ I really wanted to try the daiya so instead of eating it straight from the bag I made some sort of vegan cheese fries–YUM. This was better than mozarella cheese; it was crack. I’d be lying if I said I’m not planning on having it again today(maybe twice).

I love Fage, especially their cherry flavor. Unfortunately, it’s about expensive as they come around here. At least it’s on sale at Whole Foods this week. The cherry here tastes just like the cherry dips at Dairy Queen! Yum! Next time I’m trying full fat. The peanut butter–again, since I’ve figured out how to make cookie dough nut butter, I’m less enthused about paying someone to do it for me. Besides, this one seems really fake since half of it melts over oats and the other half is still solid :-/ Until it’s gone, though, I’ll live it up and enjoy it.

What are your thoughts on mint? I made my gluten free chocolate brownies with a lot ofĀ mint extract once and was told it was like mouthwash; hell, I thought they were great! The more mint, the better in my opinion. Even though it’s often paired with chocolate, I wouldn’t mind a dessert exclusively with mint as the flavor.
