I think I’ve been pushing the envelope in my latest insanity.

On Sunday, I made up this raw ice cream, which was absolutely delicious.

But last night, in the fury of studying, things got a little… wacky?

I had a really bad craving for vanilla ice cream. Not coconut milk. Not anything other than dairy. Of course, this was the 1 thing we didn’t have. To appease that craving, in the ice cream maker I threw

  • 3 cups raw whole milk
  • 1/4 cup vanilla infused sugar
  • 1/4 raw honey
  • 1/2 teaspoon guar gum

Considering I didn’t have half the ingredients for real ice cream and made this with no patience, it was actually pretty good. It tasted nice and sweet and hit the exact spot I needed it to. It might not have been thick and creamy, but actually it came out much like a Wendy’s frosty.Ā Yum!

For breakfast(eaten in the car), I just cooked oatmeal and topped it with Naturally Nutty‘s chocolate cherry peanut butter and had a plain Oikos with cherry butter and Whole Foods’ trail mix. I love getting the plan yogurts because they’re so versatile! Except I had to sweeten the cherry butter because it’s a bit tart on its own. All together it was delicious.

During the test, which took 2+ hours, I sipped on a gingerade kombucha. Let’s just say I am very glad to be done with that one. It was just an awful scenario. Part of the test was answering essay questions, and the questions we had to write on were chosen by the roll of the dice. And it was not lucky snake eyes. Whatever. It’s done and I’m free!

For dinner, I bought something else but ended up craving a burger and fries. This would have gone great with my raw milk frosty. Anywho, these were some of the best fries ever. And all they were were potato coated in EVOO and baked for about an hour! But seriously amazing. I timed this well, too, because as I was grilling the showers came in.

Summer rain: love or hate? I would hate to have to run in them. But in general, summer showers, a little lightening, and a Little People, Big World marathon would make for the perfect night.

Unplanned Is Better Than Not As Planned

I live off to-do lists and plans(you should see my to-do list for today. Yikes!). It should then be understandable that I’m no happy camper when things don’t come out 110% like I planned.

The “new recipe” I alluded to was vegan tiger fudge: a layer of vegan chocolate fudge with a layer of peanut butter fudge on top. After a few hours, the top never set, so while this was tasty, it wasn’t wholly “fudge”. Boo šŸ˜¦ It’s back to the drawing board for that recipe. On the bright side, my vegan chocolate fudge tastes as good as ever.

As opposed to not-according-to-planned, things that are unplanned have seemed to have great success recently. Betty White never planned that she would actually get on SNL, and she was hysterical. Amy Adams in Leap Year didn’t plan to fall in love with the Irishman she hired to take her to Dublin(even though it was the most predictableĀ plot-lineĀ ever), and that worked out for her. And this dinner, while completely made on the fly, was fantastic:

How could something so simple be so good? This was just sweet potato chunks roasted and then seared in a little olive oil with the chickpeas added at the end to finish them off in the oil, and heaped on spinach. It was 5 ingredients with the salt(gotta have the salt), and that was all this needed. Best of all, it combined two of my favorites: sweet potatoes and chickpeas. Love it! Anyone else want to boast a kitchen success story out there?

It was certainly unplanned that I turn in to the carb king between dinner and breakfast this morning(add in the tiger fudge from before and you’ve got yourself a few meals there). And I’ll admit: It had me feeling a little down. Until I realized what those unplanned carbs could do for me.

As a sort of “Last Hurrah”, I ran on the treadmill watching The Today Show and my other morning television for a strong and unplanned 12.1 miles. Hurrah! My entire gym set up is a luxury of convenience I will sorrowfully miss over the Summer.

After all that, I’m happy to be sitting and having a well-balanced,Ā moderately-sweetened breakfast with Mighty Maple and a pineapple Chobani. And, yes, that would be a Gingerade Kombucha at breakfast no less. It’s the only thing keeping me sane today between my to-do list and walking up and down 3 flights of stairs to cook and do laundry.

What do you do when a recipe’s a flop? My gut response: Call the neighbors over. If it’s something bready, I can usually crumble it over yogurt and call it granola. But with anything chocolate and sweet, just hand me a spoon and let the pity party commence.

DIY: Fancy Nut Butters

If there’s one thing I love, it’s a good, flavorful nut butter. And I will happily fork up the cash for it(don’t assume I haven’t paid $10+ for a single jar). But that’s not always the most wallet friendly way to eat, even if the cost per serving is relatively low. And sometimes the flavors you want just aren’t out there. Or maybe they haven’t arrived at a store near you(Justin, I’m looking at you here). That’s when you need to know to make your own. With that, I’m happy to announce the newest additions to my recipe page: nut butters.

Chocolate Nut Butter

Ingredients:

  • 1 tablespoon nut butter
  • 1/2 teaspoon coconut oil
  • 1 teaspoon cocoa powder
  • 1 1/2 teaspoon sweetener
  • Vanilla flavoring

In a small dish, combine all ingredients and stir.

Cinnamon Raisin Almond Butter

Ingredients:

  • 1 tablespoon almond butter
  • 1 tablespoon raisins
  • 1/2 teaspoon cinnamon
  • 1 teaspoon liquid sweetener
  • 1/2 teaspoon brown sugar

In a small dish, combine all ingredients and stir.

Cookie Dough Cashew Butter

Ingredients:

  • 1 and 1/3 tablespoons cashew butter
  • 1 teaspoon agave
  • 1/2 tablespoon chocolate chips
  • Vanilla flavoring

In a small dish, combine all ingredients and stir.

Vanilla Peanut Butter

Ingredients:

  • 1 and 1/3 tablespoon peanut butter
  • 2 teaspoons liquid sweetener
  • Vanilla flavoring

In a small dish, combine all ingredients and stir.

The benefit of all these recipes is that they use pantry-friendly ingredients and require no food processor. Of course, I also have recipes for nut butters that start from scratch. I’ll be sure to add those over the Summer(when my food processor isn’t stashed underneath my bed).

If you haven’t tried siggi’s, well I can only tell you what you’re missing then. It is so smooth and creamy in texture, and the speckles of vanilla bean = pure love. But none of their flavors are sweet enough for me on their own šŸ˜¦ Which might be OK if they had a little added fat to make them richer but they don’t. Fruit jam to the rescue(and a little almond butter snuck in their as well).

I hope you whip up some nut butter for your Cookie Friday. I’m sure a shmear of cinnamon raisin almond butter on this cookie would be perfect. Now I really must start my day! Lot’s of paper writing to do I’m actually looking forward to. What, what?

For The Sake Of Sanity

At the end of this post, you might question whether I have an ounce of sanity left in me. I might say I’ve never felt more sane. Finals period started today for me 2 hours ago and go on for 2 weeks from today. It’s going to be a loooong 2 weeks.

2 long weeks full of chocolate, like a new Rare Heirloom bar from Lulu’s. Oh my. Oh my, oh my, oh my was this good. It was unusually sturdy for a raw bar, with chunky coconut sugar. Even though it was 85% cacao, it wasn’t too bitter. It just tasted like pulling cocoa off a cacao tree and chowing down. Thank you for my sanity.

Not too exciting, except for the random raisin cravings. I think my body needs iron! I figured after a mostly vegan day that might be the case. As always, sleep was not easy on a Saturday night on campus; I woke up to loud music around 1am. Fortunately, I was tired enough to sleep through most of it and got 7 hours or so, waking up promptly at 6:30.

My pre-race “breakfast” was an Amazing Grass chocolate peanut butter protein bar. I chose this because it’s nutritionally dense and covers all the macro’s and micro’s well. It had agave nectar for slow burning energy peanut power forĀ satiety.

Standing at the starting gate could not have felt more “real”. Looking around, seeing all the other runners and marathoners was definitely inspiring. Even though I promised myself not to feel any pressure to sign up for another race in the near future, this definitely got me on a high that had me thinking. And then the gun went off!

Miles 1-2: Its here! Its here! It’s really here! I was very excited to be running. And I had no clue how fast I was going because my Garmin kept bouncing between 8 and 6; I was just hoping the people I was with were running a reasonable pace.

Miles 3-4: Ugh. Providence is hilly! And the hills set in early. At least by this point I was on the part of the course that I used to run daily, so I knew the terrain like the back of my hand.

Miles 5-6: At the 5 mile marker, I was not on pace for meeting my goal. I really stepped it up and took the downhills like a madmen. Unfortunately, they changed the layout of the course so I was a bit confused where we were going; but I was going and going strong.

Miles 7-9: Do not underestimate the power of people cheering from the sidelines. I never felt more loved than at this stretch with all the spectators. At a time when my head was saying “You’re only half way there”, everyone else was cheering “Half-way, half-way!”

Miles 10-11: I always try to run strong, be composed, and keep a level-head. At this point, I told myself it was OK to fight, struggle, and swear, so long as I won in the end.

Miles 12-13.1: The last mile is always the easiest. There were signs and people everywhere, and at this point I knew I had my time even if I slowed down considerably. I crossed the line with an official time of 1:37:51 and grabbed the medal at the end with enthusiasm.

Overall: I could not hold my water today! I think I peed 5 times before the race, and had to again the entire time through. At the end, I was probably dehydrated because I didn’t drink a lick, but it all worked for me. That just goes to show how nervous I was. But I did it! I beat my goal. And I feel no pressure to run off and sign up for another one šŸ™‚

My parents were at the finish line. I really had no plans for after the race but I decided to come home for the day(I really didn’t have the energy to do my own laundry, haha). I made a little breakfast for the car ride.

I have no clue what was in this trail mix, but it was delicious; I might have to go back and buy the whole bin. All I know is that the giant chocolate swirls were superb. And with the sweet cherry from the fage, it was definitely a magical pairing. I might have to get this again later on when I go back to RI to have for a dessert šŸ™‚

I’m plenty happy being on my couch, reuniting with Tivoed shows(hello, Little People, Big World), and am about to fix that iron problem with something off the grill! Yum šŸ™‚

Excess

I’m so glad you liked my first Picture It post; I feel like I’ve had so many food memories already and will undoubtedly have more so I can’t wait to share more of them.

Yesterday, it seemed that everything was in excess. Luckily, I’m in a mindset where I’d sooner laugh it off than actually fret. Every day is a new day and the bigger picture is always more important and dwarfs those little “outrages”. And you always have the power to change.

I don’t even know how many cups of decaf coffee with stevia I had yesterday; today, I’m all about the moderate amounts of teeccino(non-acidic, herbal coffee). In fact, now I’m just drinking unsweetened herbal tea because I really just want water but it’s so cold I need something hot.

Add on what was left of a really old Endangered Species mint dark chocolate bar and maybe my love of dark chocolate is a little excessive. I had had this one lying around since Summer because–blech–it just isn’t very minty(for the record, Alter Eco‘s Dark Chocolate Mint is much better).

I imagine I look a little guilty with these in my trash right now, but I sure as hell don’t feel guilty. At least dark chocolate is low on sugar, dairy-free, and high with flavenoids? I love excuses. I eat chocolate like it’s my job(moreso than just being a chocolate reviewer), so if anyone could hook me up and make that really the case, I’d be mucho appreciative. And, yes, this is me excessively pleading to get a Summer job in the chocolate industry.

Yesterday was filled with an excessive amount of work; I anticipate being much more lazy today.

Last night, I clicked on iTunes to start downloading my Doctor Who way too much to no avail; it finally did so this morning.

And Bear Grylls giving himself anĀ enemaĀ for the sake of rating was all too excessive. And I would not care to say more.

I’m sure you don’t need 2 guesses to know what I wanted at breakfast this morning. I completely removed that from being an option, and you’d have thought I’d shot myself in the foot. What to do, oh, what to do? I topped oatmeal with Mighty Maple and maple butter(which I wrote about last weekend), and topped 1/2 an Honest Foods bar on a pomegranate Chobani.

Oh, yum. I just loved the apple ginger bar. This could easily be my favorite non-chocolate bar out there. It tastes kind of like an apple cinnamon oatmeal Quaker Oats square. But it’s also bursting with an welcomedĀ excess ofĀ dried fruit and nut, and the nutrition of it is amazing. Even though almond butter is the fat used to cook it, it’s not a strong flavor, which I love. What a great way to start my day of moderation.

Today Was A Fairytale

I’ve had that Taylor Swift song stuc in my head for the longest time now. At least today it was pretty applicable! I was in such a bad mood this morning, but once the day got going things turned for the better. I even got to visit 3 of my favorite places šŸ˜€ Any guesses where those might be?

This mornings breakfast was not enough to make me happy; I followed up a big bowl of oatmeal with peanut btuter with a slightly smaller bowl of oats with peanut butter. At least I know what I like? The nut butter was 365 creamy mixed with Madhava’s vanilla agave; I swear this made it taste like Reese’s PB! Sooooo good.

As if the morning weren’t off enough, I decided to drink a root beer Zevia at 11am before running. Who am I?! I didn’t feel like running; but I didn’t feel like not running. At that, I went to the gym where I could take it easy on the treadmill watching Mr. Deeds.

I did 8 miles, and they didn’t go slow or fast; they just sort of “went” and I was tuned out, listening to my iPod. At some point, I had a grand idea on how to change the day around. After I finished running 8 miles in 69:54, I ran another 3.27 miles outside in around 27 minutes and ended at one of my favorite places.

I also love how flexible they let me be ordering. My favorite thing by far of theirs is the home fries, which comes as a side to every dish. And while–to their credit–all their dishes sound really good, I’m a man of simple tastes; I’m plenty happy with just their home fries, so I ordered a side of them and a side of their homemade tofu bacon and asked for a little dish of peanut butter.

After that amazing lunch, we decided to do something a little more fun for the day. I’ve had a hankering for a J.P. Licks ice cream all week! J.P. Licks is a local ice creamery that prides itself in wholesome, quality ingredients and fun flavors. The closest one to Brown is in Dedham(not close at all), so I was happy for the ride.

This was so well worth the wait. I ordered a medium mint chip frozen yogurt with fresh whipped cream. I can pass up the canned stuff no problem, but if you tell me your cream is homespun, I need to take a taste šŸ˜€ The ice cream was so delicious! I love how J.P. Licks keeps the crap ingredients out: no fake green dye here. And lucky for us, in that same strip mall is New England’s largest Whole Foods! That’s my third favorite place from today.

Can I tell you I was a little in heaven at this Whole Foods? They didn’t just have the 85/15 grass-fed beef I was looking for, they had 85/15 local beef(from Maine) and 85/15 bison! I’ve never had so many choices when getting ethical meat before. I stuck with the grass-fed, but the local meat was duly noted for the Summer grilling season.

When we stopped at Eastside Marketplace on the way back to get some cheaper groceries, I snacked on a KIND bar. The ice cream was delicious but that low-fat yogurt is like a drink so some nuts were a good change of pace.

This dinner was the perfect ending for today. The fresh meat made for an amazingly juicy, delicious burger. Instead of sweet potato fries, I wanted to get some greens in me for today. I made a salad with cut strawberries, avocado, and coconut milk. The flavor pairing was unreal here and it tasted just like I hoped it would. I just love the soft, rich avocado on salad.

Where’s one favorite place you wish you could be right now? I could definitely go for an after dinner dessert at J.P. Licks šŸ˜‰ Or I’d love to watch Date Night at a little 3-screen movie theater in my hometown they tore down around 7 years ago.

Rough Night And Maple Talk

Ugh, I don’t know where to start. Aren’t Sunday mornings when you’re supposed to wake up feeling fresh andĀ rejuvenatedĀ and ready to tackle on another day? I definitely was not able to get enough sleep, and my throat’s soar so I’m drinking tea like there were a fire there and I could put it out :-/ On the bright side, my Saturday night started out promising.

I sat down with this Walnut Date Boomi Bar to watch Anchorman and get some serious work done. You’d think the two wouldn’t work together, but they did. Every time I see that movie, I like it more(I hated it to begin with so that doesn’t have to be saying much). The bar as also not a disappointment; I loved how it tasted simply of walnuts, dried fruit, and a touch of honey. I think there could have been the raisins left out and honey brushed up a bit, but overall this was fantastic. And hand rolled?! Did I read that right? Amazing.

I wasn’t hungry for much, so I just finished off the night with the rest of myĀ Alter Eco dark chocolate mint. I can’t believe 2 night-time snacks and this bar is already gone šŸ˜¦ I’ll have to get another; I love the bits of whole sugar in here! It’s definitely a textural and taste sensation.

I also managed to write and submitĀ a full rough draft of my before going to bed!! That was the one thing I’ve had looming over my head all weekend, and to be honest I thought it would take a lot longer and I might not get it down with all my other work. But now I feel like I won’t be chained to books until Tuesday night, and that’s a very good thing šŸ˜€

Around 2:45 was when the trouble began; I woke up to go to the bathroom and couldn’t get back to sleep šŸ˜¦ There was a loud party downstairs that kept me up probably until 4:20. I ate an apple around 3 and then another around 4. I get that people want to party, I do. I can’t really blame them. But last night was absurd. At one point, a girl got her feelings hurt apparently and took it upon herself to run around screaming and crying and banging. After some random person wrote on my door, I locked things up.

But the past is the past.I slept in a bit extra, woke up with a sore throat, and finally had an appetite for breakfast. Food tastes so much better when you really, truly want it. And all I wanted was a big bowl of oatmeal with peanut butter.

And a big bowl it was. I upped the amount of grains and made a special peanut butter out of Teddie’s, sea salt, brown sugar, and maple butter. I wanted to try and remake Garden Grille’s, but this wasn’t quite that good. On the side, I had a pineapple Chobani, hoping that the probiotics in there will help prevent anything I might be coming down with.

As if you can’t tell by the maple butter dousing my oatmeal, I’m a maple freak. But it occured to me that not everyone grew up in New England with lumberjack grandparents who feed a maple addiction, so I thought I’d give a little lesson on the different kinds of maple. I’d also like to take now to unveil my review pageĀ Justin’s Maple Almond Butter; I’ve had this in my pantry almost a year now and finally got around to writing about it.

Maple Syrup: The most common form of maple available, the sap from the tree is cooked down to a syrup, making for a pure, unrefined sweetener thinner than honey and involving no animal by-product.

Maple Taffy: This is the product of cooking down maple syrup a bit more. More moisture is taken out, leaving a rich, thick taffy. Unsuitable for pouring over breakfast goods, this is reserved mostly for use on ice cream or even snow.

Maple Sugar: The sugar is the maple with all of its moisture removed. It is solid at room temperature and has a brown, rich flavor to it that regular sugar doesn’t. It can be substituted in any recipe at a 1:1 ratio with regular sugar.

Maple Butter: With a slightly higher moisture content than maple sugar, maple butter has to be kept in the fridge lest it melt into a thick taffy. Maple butter is granulated and perfect for spreading on toast. Note: It involves no real butter and is 100% maple.

Clearly, we New Englanders have a religion around maple products. Don’t try to tell me the “maple flavored syrups” or “sugar free mapleĀ syrup” are any kind of real food; they aren’t.
