When The Weather’s This Perfect

I’m so happy for the enthusiasm for my blogiversary. It was definitely fun looking over old posts and old photos; nothing makes you feel better than seeing a picture and thinking “I look so young and fresh here” until you realize it’s 3 1/2 years old 😉

After yesterday hit 91 degrees, and the night was riddled with thunderstorms and showers, the weather today was just perfect. There’s so much can do on a day like today!

I love it when it’s not too hot that chocolate melts. This was mint-flavored carob, but I’d assume it’d melt if it were too hot, too. There is nothing worse than opening up a chocolate bar only to find melted poo.

When it’s this nice out, part of me feels like I could keep going and going. The other part of me(aka, my knees) remembers all too well the 14 miles from yesterday, so there wasn’t much enthusiasm to go any further. Still, this was a dreamy run.

When the weather’s this perfect, grilling is the obvious option, but there are some things that just taste better in a seasoned pan.

I was craving Spanish potatoes and ground beef. This was so simple, too; just potatoes and onion cooked in olive oil with sea salt, paprika, and black pepper, and then grass-fed ground beef cooked through. A little basil just brightens up everything; it’s my favorite herb to add in the Summer.

I couldn’t wait for Sundae Friday this week; I just had to have fun in the kitchen. I used up the last of the vegan blondies and mixed them with snickerdoodle soy ice cream. It was missing something, though…

Rice whip, anyone?! All vegan; all delicious.

When the weather’s this perfect, I think my diet soda addiction kicks back in. Like I said here, even though I went 96 hours without stevia, I still adore it in moderation.Since the weather was so nice, I took a walk around the neighborhood, and made a delicious snack plate upon my return.

A random plate of raw onion, raw broccoli, and 2 slices vegan Hawaiian pizza. I was curious if leftover gluten-free, vegan pizza had that same magical quality as regular leftover pizza. It does.

For dinner, my mom went out with her girlfriends for the night. That used to mean “breakfast for dinner” for the boys, where the breakfast was poptarts. Thankfully, we’ve all grown up a little since then and can make real food.

When the weather’s this perfect, a Summer Salad is the way to go. This was just dressed spinach with homemade chickpeas, raisins, and Daiya. I think I’ve reached my fake-cheese limit for the day.

Do you take your leftover pizza hot or cold? I like to heat it back up and get it to the gooey cheese state.

What do you feel like doing in perfect weather? I’m 90% sure ice cream will be made tonight. I’m just debating between a very classy chocolate chip or a vegan white chocolate flavor…

How To Break A Bottomless Pit Day With 1 Move

The only thing I hate more than having a bottomless pit day is realizing that I’m having one and obsessing over it. I see the same in a lot of healthy living blogs I read. To be fair, I can’t sympathize on how much it sucks to take pictures of snack after snack and post them for people who like to show all they eat(I do about 98% but every now and again I’ll grab an undocumented handful of baby carrots or something). But I haven’t had one in a long time, and I don’t think I will again, because I’ve got the one trick that breaks the bottomless pit feeling: Eat a meal.

If you’re hungry enough for a meal, even if it’s right after one or it’s not really a normal meal time, put down the apple you think might help your hunger and make something solid. Right after this post, I threw together a kitchen sink salad.

After this, I felt much better, and like I had beaten my bottomless pit day. A simple mix of onion, sweet potato, and white potato in some olive oil and salt came out perfect. And between my vegan baking and the general lack of egg love, we have a ton(read: 2 dozen) of old eggs to use, so I did my part and ate a couple scrambled in all that oniony love. I guess it’s no surprise we have so many eggs when neither the ice cream nor the brownies I make call for them…

Oh my goodness, was this delicious. I’m pretty sure this was the fattiest cut of beef possible, but–hell–I took it and it did perfect. And considering a pound of the steak cost $7 while an entree at Tomasso’s of local beef is $24, I see big savings here.

What have you been craving of late? For me, it was the beef. Of course, now that I’ve discovered my love for onions cooked down in any and every fat, any excuse to eat more of those is also welcomed. Just beware of my breath.

I wasn’t “feeling” greek yogurt this morning for protein, so why not chicken just to get it out of the fridge before it goes bad? I’m curious how this is going to play out on a run…

So what’s been bitter? Over the past 72 hours, I tried going without stevia. I don’t use any artificial sweeteners, but have often used natural stevia in tea and coffee and a few other things. I’ve never gotten a bitter taste to it; it’s always been sweetness. And I think it’s perfectly fine in moderation and all. But, trying to go without it, I noticed my sweet tooth in general grew smaller and I discovered so many other pleasantly-bitter flavors.

I’ve been drinking black coffee, unsweetened iced tea, and dry seltzer, all of whose flavor I’ve been enjoying more and more without added sweetness. It took just a little getting used to, but I don’t really miss anything.

Tonight, we’re having guests over. I wanted to recreate this recipe. The result was nothing more than “special”, extra “special”. It’s gluten-free and vegan. There are specks of vanilla bean in the batter. And it just tastes damn good. How could it not(with 2 sticks of earth balance)?

Extra Special Blondies

Ingredients:

  • 1/2 cup sugar
  • 2 sticks non-hydrogenated margarine
  • 1 cup all-purpose GF baking blend
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon xanthan gum(optional)
  • 2 tablespoons non-dairy milk
  • 2 teaspoons white vinegar
  • 2 teaspoons vanilla paste(or vanilla extract)
  • 3/4 cup dark chocolate chips

Recipe: Extra Special Blondies

Preheat your oven to 350 and let the margarine sit at room temperature for 30 minutes before working with it. Cream the margarine and the sugar in a large bowl. Sift in all ingredients from flour to xanthan gum(if using). Add the liquids and vanilla paste and mix thoroughly with a large spoon or rubber spatula. Add the chocolate chips and mix until evenly distributed. Press into an 8×8 baking pan and bake for35-40 minutes or until the center is set. Remove from the oven and let cool for 30 minutes before slicing. Makes 12 servings.

Now are those fattening, err… “special”, or what?

I act like a blogger when I read other blogs rather than study for my test in 30 minutes. Fortunately, I peeled myself away from the screen to make it to class in time. The test was a bit longer than any of us thought it’d be but I feel like exactly the passages I studied were the ones on the test and that I did really well. I guess the Greek shirt just has good luck in it?

I act like a blogger when I get obsessed with a food. Now it is tofu salad with The Heat Is On peanut butter. Every time there’s carrot at the salad bar, I’ve convinced myself I’m doing the right thing by eating this. That, and it’s just too good to turn down. I act like a blogger when I’m convinced Greek yogurt can be a “dessert”. All it needs is some vanilla, raisins, cinnamon, and voila. I was trying to recreate this amazing rum raisin gelato made by a Massachusetts company which is so light and smooth but I don’t have rum. I probably could find that in a dormitory pretty easy but I didn’t feel like “meeting the neighbors” with the line “Excuse me, do you have rum for my Chobani?”.

I act like a blogger when I spend 30 minutes making a granola for the Facebook  MojaMix contest I won. I went with a ginger base with dried strawberries, persimmons, chia seeds, chocolate sprouted sunflower seeds, and cacao nibs. How awesome does that sound? I can’t wait till it comes!

I act like a blogger when I ditch on the end of Days Of Our Lives and all of Rachael Ray to go get groceries.

I act like a blogger when I almost neglect an awkward “Hi” with a classmate because I’m fascinated by how the raisins soaked up the yogurt liquid and were now cinnamon infused. Seriously, that was awesome. I didn’t even plan it like that but viola. The raisins got so moist and well seasoned, it totally converted me to liking raisins again.

I act like a blogger when I whip out my camera in the middle of the dining hall to take a picture of dinner. That’s a fun way to meet people. I thought of you all when the main vegetarian dish was pumpkin ravioli in cream sauce 🙂 I, however, was still a little pumpkined out, and the cream sauce made it a little less appealing. Instead I had the vegan BBQ navy beans. These taste just like good baked beans should taste like and were amazing. They had a very deep molasses and tomato flavor to them. All I could think about eating them was how smelly my run would be this morning but how I didn’t care.

Banana Goodness Oatmeal

 

I act like a blogger when a good night is evaluated on the basis of the oatmeal. Last night I decided to try and recreate banana goodness bread in my microwave since I haven’t made a loaf in a few weeks. I used 2oz banana, vanilla powder, and vanilla stevia in the oatmeal, and topped with semi-sweet baking chips. It was a decent substitute but of course not the real thing. I also sprinkled salt over the top at the end and I think that really helped the flavor.

I act like a blogger when I stress over watching Grey’s Anatomy or The Office. Oh wait, I was doing that years ago. Nevermind.

I act like a blogger when carbo loading couldn’t be easier. I defrosted one of Veggie Girl’s Fig And Almond blondies. After a few month of being frozen, they aren’t quite as good, but a little cream cheese fixed that. I also had an english muffin with mushed banana and chocolate chips(and salt, of course) and cinnamon vanilla sunflower butter. Perfect. Rachael Ray was on The Jay Leno Show and gave some hilarious answers to 10 at 10 in case anyone missed that.

I act like a blogger when I set my alarm at 6:15 to get up and do my long run. I had planned for another 13.1 miler today. I wasn’t particularly hungry but I figured food would be good so I grabbed a mojo.

Apparently, this bar isn’t just one of my favorites but a favorite of a lot of you guys, too! I just loved the saltiness. And the combo of pb chips and peanuts gave me good immediate and long lasting energy. I actually constantly forgot to be eating this, so it lasted me 13 miles. Speaking of which, I set a new PR record of 1:46:28! That’s the fastest I’ve ran a half marathon by a good 3 minutes

I act like a blogger when I choose running over course registration. As in, course registration opened at 8, and by the time I got back to my dorm it was 8:40. I didn’t think things would go so fast but 1 of the courses I really wanted to get into filled up fast and I got pretty upset with myself for letting me miss it. I’m hoping I can still wiggle my way into that class yet, but I’ll talk about that more once I know more.

I act like a blogger when I feel compelled to perfect an oatmeal recipe the next chance I get. This time I used 3oz banana and a lot more salt. I think it came out a tad bit better.

I act like a blogger when I decide a theme like “I act like a blogger” would be cutesy for a post and then by the end I want to go back and delete every time I wrote those annoying damn words! Haha. Don’t forget it’s Cookie Friday! I need to get my thinking cap going. And I’m going to work very hard to fix that class situation I mentioned, because I am a bit disappointed and I’m sure I can get in if I pull some strings. Anyway, have a good day!

I took a tip from Erik over at VeganFritz and tried my peanut butter with a peach. Why did I doubt this would work? It was like a double-dose of Georgia in my mouth. I think I might prefer bread overall, but it’s nice to have a few simple swaps in the toolbox. I also grabbed a mini-slice of bread and flew out the door to the bank where I cashed my last paycheck!

Don’t you love how you can make anything in the microwave these days? The veggieburger was Morningstar’s grillers vegan, which is pretty great but has a bit of a weird and long ingredient list. I have some Gardenburgers’ Grillers which is made by the same company but organic lying in the freezer, so hopefully those will be a good replacement. Afterward we hung around a bit while my dad did his errands. I thought I’d bake up some fig and almond blondies with our figs before they grew mold. Well, it was a little late for 2 of them, but the rest seemed fine so I plowed ahead(just don’t tell anyone).

I also resurrected on of this batches’ older brothers from the freezer while it was in the oven and enjoyed it aside some vanilla almond milk. I can’t believe I drink that stuff straight now. I first bought it to lighten up my coffee but couldn’t stand it plain. Now I drink my coffee black and my almond milk straight up, yo… sorry, I don’t know where that came from.

After that we did some Back2School shopping. Ugh, if you need proof that we feed our kids too much sugar, go to Walmart on back to school weekend. Them lil’ buggers be running up and down every aisl, ahootin’ and ahollerin’. I grabbed a stabler and was out of there. We also stopped at Market Basket for lots of loot including Carrot Juice and Whole Foods. I was pretty famished at Whole Foods, so I grabbed a Kind Almond & Cashew bar by instinct. Then I thought “Sure, this is pretty nutritious, definitely delicious, and all the ingredients are recognizably food, but could you do better?” At that point I put it down and hopped over to the salad bar for something special.

I’m the last to think I’d be getting chicken soup in August, but it was that kind of day in Massachusetts. This soup was packed on chicken, light on the rice, so I knew I was getting a heavy dose of protein. It was actually a little underseasoned; isn’t that rare to find in premade soups these days? This definitely gets a big “Food” stamp. When I got home I was proud of myself, but also a little munchy. I made up this parfait:

Vanilla and cinnamon were made for each other, just like Laverne and Shirley. If you recall, we were supposed to be seeing the Savannah Chef doing her thang over a stove tonight, so dinner wasn’t really planned, and definitely didn’t go over smoothly. I’ll spare you the drama and pathetic pic of “dinner”. What was much better was dessert(isn’t this always the case?). I had been looking for a good vanilla frozen yogurt and finally just went with elan’s at Market Basket, hoping it’d be suitable.

I was a little worried, because this wasn’t vanilla bean, which is the only way to know you’re getting real quality vanilla. But oh my god, was this good. It definitely was not one of those this-has-no-flavor-so-let’s-label-it-vanilla flavors. No, this was like frothy milkshake from a burger joint vanilla. I just let it sit and licked it like a cone as it melted, which made the flavor even purer. And because it’s elan it’s all natural and has a readable ingredient list. +1000 on this purchase.

Flashfoward to Sunday morning. I was planning on just running around the neighborhood about 6 times, but I decided to take advantage of the fact that nobody’s on the road on Sundays, so I went out for 8.5 miles. I would call this my “long run” but Friday kinda trumped that. I was ready for refueling after that, so I made myself this:

I wanted to give pineapple Chobani a second chance after seeing it so much on the blog world. I didn’t like it so much the first time but I figured I must have missed something. I enjoyed it much more than I remember. This time I could taste the creaminess from the 2% base. And I thought that the pineapple wasn’t a distinct flavoring but rather more a sweetener which masked the natural tartness, which I also enjoyed about it. I gave the mocha peanut butter a second try after not getting a strong taste of it the first time. I don’t know if I’m down with coffee in my peanut butter, but there’s no denying the flavor is there and kicking. Of course Sunday morning meant coupon clipping time:

What a painful reminder I have 2 dead languages to relearn for next week after my brain rotted this Summer. Oh well, I’ve studied Latin so long I can probably pick up the Aeneid and start translating, but Greek is another story.

Sunday also meant having my grandmother over for dinner. I was not feeling turkey(what was being cooked) so I turned on the grill and fired up one of the bison burgers I made last week.

Clearly, I’m not becoming a vegetarian any time soon. But I would like to cut animal protein out of my diet a bit and the first thing that I feel good about giving up is bland poultry(not that my mom’s turkey is bland more than any other turkey). That being said, nothing’s bland about bison, am I right? I picked up a trick from UFood and put steak sauce underneath the burger. That way your tongue gets a dose of it before the meat, making for a flavorful combo. I was also a bit of a genius when it came to dessert.

I can not begin to describe how good this was. The vanilla with the cinnamon and cookie dough chunks made for some super-cookie-concoction with protein, fiber, and probiotics. It was also a delicious way to stretch an expensive ice cream(the snickerdoodle) with a cheaper one(the vanilla). Too bad I figured this out with the last of the snickerdoodle 😦 I got out the college check list…

Not the largest loot but not bad. I picked up that spoon, which was the only blue one in a sea of green and white, so it was obviously meant for me. And I couldn’t belief that coffee was on clearance. It’s the same stuff from McDonalds and is soooo good(not to mention organic). Newman’s Own Organic have made my Summer in more ways than one; can’t wait to bring them into my dorm! We also swung by Roche Bros. where I completely beat the system with the sales.

Check this out: Both of these were on sale for 2 dollars a piece, and I had a 1.50 off any 2 boxes of Kashi cereal, making this a 2.50 grab. At normal prices, this would be over 9 dollars. Isn’t that ridiculous? If they had Kashi Honey Sunshine, I could’ve grabbed a box of that for 50 cents with my coupon, but they were out so I’ll check another store this sales period. I haven’t tried either of these, but I was sold on the Vive when I heard it had probiotics and vanilla yogurt balls. And granola is just impossible to pass up ever. Hopefully they’ll both be good.

For dinner we grilled. I wasn’t sure what I wanted to I made up some lentils but figured salmon would also be good.

Consider operation eat-out-the-fridge-of-my-food officially on. I really can’t complain about that operation; it’s giving me an excuse to eat vitatops and ice cream for any and every meal 😉 I also tried catching up on some TV shows before all these new seasons start in September! Crazy!

This morning the run wasn’t so hot, just like the weather. I got in 6.7 but I don’t feel like I ever really got going. I think my time was 56:45. Maybe I spent too much time on my feet and not enough time in front of the tube, which I will make up for today. Breakfast was more let’s-finish-this-crap-so-we-can-make-some-space:

Ok, by “crap” I meant really yummy stuff. I’m definitely bringing my TJ’s Maple Agave syrup to Brown. It’s so good at sweetening up just about anything. And the raspberries are still from the bunch that we picked last weekend. A little bit less on the freshness and nutrition by this point, but still tangy and delicious. Today I’m debating buying myself a really nice chair for Brown because it’s 50% off. Besides that I’m going to see how many more Kashi coupons and loot we can score. Boy this was a long one, thanks for hanging in there!
