I had a major craving for the real deal root beer, so I gave Virgil’s Root Beer a try because it was among the cheaper varieties and I remembered Mama Pea toting Papa Pea’s love for it here. ‘Twas alright; I don’t think I picked up all the subtle flavors listed as ingredients but it was a fun change of pace.

Back home I made a quickie-early dinner with a stick of Next Generation Dairy Raw Probiotic Mozarella and part of a can of chickpeas, all over spinach dressed in Foods Alive‘s Sweet & Sassy. Yum! for a sweet dessert, there was an Artisana Almond Butter sample eaten with a spoon. I swear it tasted like marzipan, it was that good.

What do you buy in bulk? Working with a 3-foot fridge and a tiny room, it was hard to buy anything in bulk all year long. Since coming home, I’ve started buying 5 pound bags of organic potatoes. And now I’ve done the math and discovered that if you buy the gourmet baking chocolate by the pound from Whole Foods, it’s cheaper than buying chocolate bars, so I’m sure I’ll be taking advantage of that from now one.

Before hitting the hay I made a bowl of oatmeal with Naturally Nutty‘s butter toffee peanut butter and some local raw honey on the side for dippage. Yum! The honey is definitely a new addiction; I snuck down stairs afterwards for another scoop. Did it help me fall asleep? Probably not, but it was good.

Speaking of sleep, I woke up with my alarm, hopped in the bathroom, and then started getting all my clothes ready, and still felt really really tired. After I put in my contacts, I saw that I set my alarm for 6:20 instead of 7:20. Whoops. I couldn’t fall back asleep, so I just made an extra special breakfast.

This one was much better than the other ones I’ve made(all 2 of them); I think the earth balance added a much needed butter flavor but from a vegan source. The scrambled tofu was so much simpler than I would have thought: just tofu and nutritional yeast cooked in whatever fat the potatoes didn’t take up. And it was all super tasty and filling.

Maybe it’s just because I’ve been stuck home the past week, but Boston seemed so alive today. Several schools, including my dad’s college, were having graduations, so joyful families were everywhere. I started my day at Whole Foods to get some coffee(the same one where Gisele Bundchen shops), and then meandered to the graduation I was attending.

But rather than stick around I was really excited to go to my favorite Boston restaurant and keep the raw vegan theme rolling. Yes, it’s true, unfortunately. The owner explains the reasons on her blog here. In the larger picture, I’m very sad to see the very thing that introduced me to raw veganism disappear like that. I felt like it was a Boston institution. On a much more limited scale. What was I to do for lunch? I was starving by this point and in a part of Boston I almost never go. Would I find somewhere good? Would I ever eat raw again?

What Would You Do?

My newest Friday night television obsession is the ABC show What Would You Do? The whole show is based on what used to be a 20/20 segment where they put real people in morally compromising situations with hidden cameras to tap their reaction. Since I’ve been watching 20/20 and this segment for 5-6 years, I was excited for this(You can go ahead and do the math; you’ll just find out I turned into a grandpa at a really young age). As much as I wanted to recommend this show, I didn’t have much to say about it. That was until I had a What Would You Do? moment in my own life.

At the gym, someone clearly left their Debit card and hadn’t noticed since they weren’t around the entire while I was there. I’ve seen lost personal property at the gym before and left it, but since this clearly had the person’s name on it I decided to take it and find them. When I tried to find a school email, they weren’t in the system; at this point, I thought I’d made a huge mistake and wanted to go throw it back on the gym floor and forget about it. Instead, I used one of my most prominent skills: Facebook stalking. I was able to track them down and message the person, who actually cancelled the card right away and said thank you but that I could tear it up. What would you have done in my situation? In their’s? I think we both did the best thing; I definitely would have been hesitant to take anything from the gym if I didn’t think finding the owner would be reasonably easy, so if it were a real gym I’d probably have turned it in to the front desk and went on my way(there’s no staff there; it’s just a single room of machines).

I ran 12 miles on the treadmill. In hindsight, I have to question how sane it is to run on an electric machine when there’s a huge thunderstorm outside. I cooked! OK, it wasn’t anything more than maple baked tofu with roasted broccoli and sweet potatoes. But it felt soooo good to get back in the kitchen and turn on the oven after more meals than I can count from the dining hall or Whole Foods or made of oatmeal. Don’t get me wrong–I love a good meal made for me here and there. But there’s nothing more grounding than making something yourself.

Do you feel like you need to cook or bake from time to time? Clearly, I do. Do you think it’s “hard to get fat” on a vegan diet like Sid the Sloth says? That’s how I used to think–that vegans were sticks who ate grass–, but after learning more and reading so many wonderful vegan blogs I know they can cook with the best of them and it’s still everything in moderation that’s key. We define “serving sizes” all the time. Don’t tell me to eat 10 pieces of ginger Vivani chocolate when they’re made 4 blocks to a row. I know math and that just doesn’t work out unless I’m willing to put a little effort into it. Likewise, there’s no such thing as a tablespoon of Justin’s chocolate hazelnut butter or Madhava’s hazelnut agave. There’s a scoop and a squirt and how much that is is how much that is. And ice cream? A serving’s what I left in the pint after the last time I at some. I don’t need a measuring cup, and I don’t even need a cup–just hand me the spoon.

But what if I told you to get to that snickerdoodle So Delicious soy ice cream I had to walk through a room of people drinking and playing beer pong in front of the fridge? And that I was in my pajamas? And that I really didn’t want to be doing that? Fact. Fact. And you bet your booty. It was one hell of an awkward minute I felt like a fish out of water. But what would have been the argument against getting the ice cream? There wasn’t really one, so in the end I knew what was “right”. Besides, the joke should be on them: It was Cinco de Mayo and I saw no margaritas. Really, guys, really?

I know I was hungry way before class today and ate my breakfast of Mighty Maple oatmeal and a pineapple Chobani with cashews early. I know I’ll watch Bear Grylls in just about anything and everything he wants to do in his career(see Worst Case Scenario). And I know that I should throw away fears and do what I really want to do more often, because at the end of the tunnel there just might be a pint of ice cream. Now, if I may quote different strokes

For The Sake Of Sanity

2 long weeks full of chocolate, like a new Rare Heirloom bar from Lulu’s. Oh my. Oh my, oh my, oh my was this good. It was unusually sturdy for a raw bar, with chunky coconut sugar. Even though it was 85% cacao, it wasn’t too bitter. It just tasted like pulling cocoa off a cacao tree and chowing down. Thank you for my sanity.

I’m sane, and this trail mix from Whole Foods is crazy good; I just had to go back and get more. It has in it–from what I can tell–massive chocolate spirals, dark chocolate chips, peanut butter chips, raisins, sweetened cherries, peanuts, almonds, chocolate coated raisins, and peanut butter coated yogurt raisins. Deeeelicious.

What’s the most embarrassing thing on your ipod? I ran listening to music in the gym this morning, and put my whole ipod on shuffle. It was fun coming across a lot of songs I forgot I had or wouldn’t have listened to otherwise, and then came this song. Oh brother, how tastes change.

Who Doesn’t Love Fudge?

Do you love fudge? I thought I liked fudge, until I had that goat’s milk fudge a few days ago, and now I’m realizing I love fudge. I can’t get it out of my head! It’s my newest obsession. And just when I think I’ve figured out how to make a killer vegan fudge, I go off to school where I have none of the supplies or ingredients. Boo 😦 Well, I can’t do a killer vegan fudge for you today. But how about a killer raw vegan fudge?

Raw Vegan Chocolate Fudge

Ingredients:

  • 1 1/4 cup nuts or half the amount nut butter*
  • 1/2 cup(80g) dates
  • 1/4 cup cocoa powder
  • 1/4 cup coconut oil
  • 2 tablespoons agave nectar

In a food processor, process the dates until a smooth paste. Remove and process the nuts until a coarse and crumbly texture. Finally, add all the ingredients back into the food processor and blend until incorporated. Once the mixture is emulsified, pour into a container and remix by hand if the coconut oil separates(it should be liquid by this point). Freeze and cut. Makes about 6-10 servings.

*You can mix it up and use your own blend to alter the flavor. Cashews have a nice, neutral flavor whereas others add their own touch. I like 3/4 cup cashews with 1/4 cup hemp seeds and walnuts

I bought a ginger Green & Black bar way back when they were on sale, and held on to it for so long thinking I wouldn’t like it. I think the fact that I had 12 squares and went back for 6 more proves me wrong. I loved the sweetness and “warmth” as they called it the ginger added to dark chocolate!

Recipe Test: Midnight Chocolate Cupcakes

As I’ve mentioned several times, Book Pub Co. sent me the vegan dessert cookbook Sweet Utopia to read and review. I talked about my first impression here, but this weekend I got to test my first recipe. What a fun task that was! I immediately eyed the midnight chocolate cupcakes for my cousin’s 3rd birthday party today. I confess to making the following substitutions to the recipe:

  • All-purpose gluten-free flour and xanthan gum for the flour
  • Teeccino in place of the the coffee
  • Almond milk for the soy milk

Two cupcakes suffered an, err, unfortunate oven accident, but their crumbs were still good for eating, so I made a cake and ice cream sundae with So Delicious vanilla bean ice cream. I am such a cake and ice cream person at heart. I can’t wait for the Summer since the grocery store near my home sells these ice creams for a dollar less than the Whole Foods near my school 🙂

The cupcake was impressively moist and “cakey”; I wouldn’t have thought that would be easy to recreate without eggs. The moisture must come from the fat ingredients, which seemed to work well. Overall, I think this recipe relies on a lot of sugar to be good(there are at least 4 sources of it), when in fact this makes an impressive cake all its own and doesn’t need to distract with sweetness. I would definitely give this one a thumbs up.

Perhaps surprisingly, I wasn’t a fan of this frosting recipe. It came out so thick, it was like fudge! It just wasn’t very spreadable or much more than melted chocolate. It would make for a good ganache filling, but it certainly didn’t come out like a “frosting”. I have to say, it was super simple to make, though. Believe it or not, I didn’t eat a cupcake for breakfast.

That’s more nutritious. I topped oatmeal with some 365 brand peanut butter(see, I practice what I preach). I also tried my very first Siggi! I chose the orange ginger flavor, since it sounded so exotic, and topped it with the vegan chocolate chips(you would too if you’d been handling them for 2 days). It was good, but it was a tad undersweetened for me; maybe I just have a sweet tooth to rival Averie’s. But what a fun flavor. And it’s so thick! Love it.

Are you a cake, brownie, or cookie person? I’m all about the cake, which is why cupcakes seemed perfect for this birthday party. I just love the light and airiness to the dessert! If I want something dense and chewy, I’d rather just eat a chocolate bar.

Do wake up at 7 before the weather turns hot to enjoy a nice run around your home streets.

Don’t go out with the mindset “I’m going to find some horses!” not knowing where the nearest horses are and getting lost 7 miles away from your house.

Do call your sleeping parents in a frenzy saying “I’m lost, can you pick me up?” and then wave them off when they find you saying “Naw, I can make the last 3 miles”

Don’t run 14 miles unless you really want to. Personally, that’s a bit too much out on the roads.

Do eat about as much ice cream as you can get your hands on, including fun and funky new flavors like green tea coconut milk ala So Delicious. It tasted very coconutty, but I didn’t mind because it made me think of this as some fun Asian boba tea or something. The green tea was actually subtle flavor to the whole thing. Wouldn’t this have been perfect for St. Patrick’s Day?

Don’t take pictures of said ice cream on your new camera which photos you can’t upload onto your computer yet. Whoops! I enjoyed about 2 servings.

Ordering Garden Grille’s vegan, gluten-free macaroni and cheese, I forgot a few important things: I don’t like macaroni all that much, and a meal without a good amount of fat and protein just do nothing for me. Sure, this was kind of tasty with the vegan cheese. But really I just wanted to gnaw my arm of 5 minutes afterwards because it felt like eating air. Cheesy, vegan air.

To make a chocolate nut butter, really you just need cocoa powder, sweetener, and some form of vanilla flavor. I made this with Madhava’s vanilla agave. It was good, but Justin could do better. Since no morning’s complete without fruit and chocolate, I broke a chocolate bar filled with dried blueberries and cranberries over my pomegranate Chobani; it has fruit, so it’s healthy, right?

Tonight I am attending an auction at my old high school. While I’m excited, I am a little wary going into it as my first event where I’ll be avoiding gluten. I’m hoping I’ll be able to just enjoy the night, but I’ll also have a pocket full of larabars or something just in case. And in my absence, I have a post prepared on how to shop and save at *drumroll*… Whole Foods! Yes, I do believe it’s possible, and I’ll tell you how.

Cheesecake For Breakfast

I can’t offer you some recipe for oatmeal that will make you think, “Wow! This is so good, it’s almost like cheesecake for breakfast!” Instead I can say, if you want cheesecake for breakfast, have cheesecake at breakfast.

Let the jaws drop. I guess I still am feeling a little defeated from last night, because this morning, nothing was appealing. Oatmeal wouldn’t have done anything for me. And this cheesecake needed to be eaten sometime. All that was a big “Why not?” to me.

“Oh thank God. He’s got protein in there”. On the side was a pomegranate Chobani and a ball of cookie dough cashew butter. Gotta get those healthy fats in there, too, right 😉 To be honest, I don’t feel guilty in the least. There are times when you crave cheesecake for breakfast and times when you crave oatmeal for dessert. And I know my nutrition overall is good and that this is not a habit. For instance, I craved and ate oatmeal last night before bed.

Swap the two around and you have an indulgent night and a back-on-track breakfast. It was definitely one of those times when a big and warm bowl of carbs felt like just the right thing. I love Justin’s chocolate hazelnut butter, but not quite as much as the almond or peanut flavors; this one melts too much, I think because it has more palm oil maybe? 😦 And I had to  got to open a new can of coconut milk…

But I’m really not loving this brand. It was Thai Kitchen, organic, and on sale. I thought it would be better than store brand, especially when the water and milk separated and I was able to drain that off, but it actually becomes more watery on top of oatmeal :-/ Back to 365 brand, it is!
