I think I’ve found my new hobby

Yesterday, I spent a good portion of my afternoon working on this masterpiece. It was supposed to be vegan white chocolate ice cream, but the white chocolate flavor never really came through :-/ Then again, I don’t think I’ve had any vegan white chocolate ever, so I’m not sure what I was working with to begin with. Anyway, what came out was a delicious Coconut Cocoa Butter flavor.

Today started out very relaxingly with yogurt and raw local honey and some lightly-sweetened peanut butter over oats. Even though the weather was gorgeous, after 9 days of running I was happy to take a rest day because that’s what my body wanted.

Rest day or not, I refuse to give up some morning chocolate 😉 Followed by a good walk. When I got back, I fired up the grill and cooked for everyone.

I think I’ve taken my onion love to new, stink-breath heights. All it took to make these was tossing them in some EVOO and putting them in an aluminum foil pack cooking 5 minutes on each side. Delicious! They went perfectly with a southern style Wildwood burger and some roasted broccoli.

And right afterward, I went back to my new favorite hobby. I made a mix of 3 cups organic half and half, 3/4 cup Bob’s gluten free cake mix, 5 tablespoons Madhava light agave, and some guar gum and poured that into the ice cream maker. Like I learned from this experience, you really need to make the ice cream a good 3-4+ hours before expecting to eat it.

Why not some matching cupcakes? Made with Tropical Tradition‘s coconut oil and a flax egg. Getting that flax chicken to lay an egg on command is tough work! But she clucks one up eventually.

And then, since none of that would be ready for a few hours, I’ve been snacking on a bowl of oatmeal with Justin’s chocolate almond butter and coconut milk for richness–delicious! I think dessert for tonight is pretty much set with my new hobby, wouldn’t you? 😉

Annnd now I’m snacking on one of the cupcakes. Flax, egg–I’ve still got it no matter what I’m cooking with.

I’ve Never Felt So Guilty

Oh, dear. Oh, dear. How am I going to say this? Growing up Roman Catholic, guilt’s been built in to me from day 1. Seriously, you want to talk about Jewish guilt? Find a Roman Catholic guy, mention his mother, and watch him crumble. I guess the best way to get it out there is just to blurt it out:

I’ve never felt so guilty about using a boxed mix than since becoming a food blogger. Let me try to excuse myself by saying I was really craving chocolate pudding and chocolate avocado pudding was not about to do. Actually, I was craving peanut butter pie; watching Man Vs. Food can really screw you up. But let’s not get in to that. True to my “foodie” nature, I kept some things unique:

Raw milk chocolate pudding, anyone? I know I couldn’t get weirder; I embrace that fact.

Topped with whipped cream and peanut butter fudge topping(peanut butter, whipped cream, and powdered sugar mixed together in a little dish–super simple, super delicious).

There! I feel better getting it off my chest. I did it! It was me! And I’d do it again! And again! And again! He had it coming to him! Lock me up and throw away the key!–Whoops, wrong confession.

Now, make me feel better and tell me what you last felt guilty about?

Maybe you had a bit too many? No worries–this was simply organic limeade in a cup with some salt. Love that saltiness 😉

Maybe too much fried food on a Friday night? Let me tell you: Fried herbs on seared meat is a little bit like heaven, just a little(OK, a lot).

Did you have too much chocolate? If that day ever comes, I’ll let you know; don’t hold your breath. And who ever decided peanut butter and honey? PB & Agave is the way to go.

Did you spend your Friday night watching Man Vs. Food and rocking out to Sugarland and Adam Lambert? Me neither…

Did you raid the fridge for a midnight snack for cold chickpeas? I agree. That would be ridiculous(I heated them up).

When The Weather’s This Perfect

I’m so happy for the enthusiasm for my blogiversary. It was definitely fun looking over old posts and old photos; nothing makes you feel better than seeing a picture and thinking “I look so young and fresh here” until you realize it’s 3 1/2 years old 😉

After yesterday hit 91 degrees, and the night was riddled with thunderstorms and showers, the weather today was just perfect. There’s so much can do on a day like today!

I love it when it’s not too hot that chocolate melts. This was mint-flavored carob, but I’d assume it’d melt if it were too hot, too. There is nothing worse than opening up a chocolate bar only to find melted poo.

When it’s this nice out, part of me feels like I could keep going and going. The other part of me(aka, my knees) remembers all too well the 14 miles from yesterday, so there wasn’t much enthusiasm to go any further. Still, this was a dreamy run.

When the weather’s this perfect, grilling is the obvious option, but there are some things that just taste better in a seasoned pan.

I was craving Spanish potatoes and ground beef. This was so simple, too; just potatoes and onion cooked in olive oil with sea salt, paprika, and black pepper, and then grass-fed ground beef cooked through. A little basil just brightens up everything; it’s my favorite herb to add in the Summer.

I couldn’t wait for Sundae Friday this week; I just had to have fun in the kitchen. I used up the last of the vegan blondies and mixed them with snickerdoodle soy ice cream. It was missing something, though…

Rice whip, anyone?! All vegan; all delicious.

When the weather’s this perfect, I think my diet soda addiction kicks back in. Like I said here, even though I went 96 hours without stevia, I still adore it in moderation.Since the weather was so nice, I took a walk around the neighborhood, and made a delicious snack plate upon my return.

A random plate of raw onion, raw broccoli, and 2 slices vegan Hawaiian pizza. I was curious if leftover gluten-free, vegan pizza had that same magical quality as regular leftover pizza. It does.

For dinner, my mom went out with her girlfriends for the night. That used to mean “breakfast for dinner” for the boys, where the breakfast was poptarts. Thankfully, we’ve all grown up a little since then and can make real food.

When the weather’s this perfect, a Summer Salad is the way to go. This was just dressed spinach with homemade chickpeas, raisins, and Daiya. I think I’ve reached my fake-cheese limit for the day.

Do you take your leftover pizza hot or cold? I like to heat it back up and get it to the gooey cheese state.

What do you feel like doing in perfect weather? I’m 90% sure ice cream will be made tonight. I’m just debating between a very classy chocolate chip or a vegan white chocolate flavor…

The Fastest My Heart Has Ever Beat

I’m pretty much the textbook runner in a medical sense: low weight, low resting heart rate, low blood pressure, etc. Even when I “run”(more like jog), I’m not pushing it too hard to strain myself. But last night–well, first there was oatmeal.

And I was SO relieved at the end when they didn’t kill off anyone worth it. In the 2nd half, I’d say I needed this dark chocolate to pull through some of the scary moments.

That would be 10 squares Dark Chocolate Mint by Alter Eco, which is amazing, and 8 squares of Trader Joe’s knock-off chocolate which is “meh”. Dear Trader Joe, please stop making borderline infringing products that aren’t even as good. Like your milk chocolate peanut butter eggs that had hardly any peanut butter? Yeah, don’t do that again.

Well I made it through Grey’s, and got to bed eventually(which wasn’t easy). For the record, as ridiculous as I’m sure I appeared to everyone else around here, my dad walked into the room at 9:30, saw one shooting, and said he couldn’t handle it. So at least I watched it.

Before my run I ate a piece of microwave vegan chocolate fudge and that powered me through 9 laps of the neighborhood. I definitely did not feel fast today but after 3 days of outdoor running on hills I guess that’s to be expected.

I snacked on an apple a little later on in the afternoon after I cleaned up all my messes(a food processor is not the same as a blender when it comes to liquids). Eventually, my cashew mixture had chilled…

Raw Chocolate Chip Ice Cream

Ingredients:

  • 1 3/4 cup cashews
  • 1 3/4 cup water
  • 1/2 cup amber agave
  • 1/4 cup vanilla bean infused sugar
  • 1/2 cup cacao nibs

In a blender, puree the first 4 ingredients until they are fully mixed. Store this liquid in a container in the refrigerator for a few hours to chill. Once ready, pour into ice cream maker and work to manufacturer’s directions. Add the cacao nibs 5 minutes before being done. Eat immediately or keep in a tight container in the freezer.

This was so fun to make! I can’t wait to make quarts and quarts of ice cream this Summer. I let this sit in the freezer for a bit but I think the texture was actually better right after being churned. It definitely had a cashew flavor, but not in a bad way. This would be better with an actual vanilla bean but my way costs considerably less. Did I mention it was delicious? Let’s just pretend the cashews have no calories.

My dinner was boring compared to that. I really wanted to keep eating raw: raw salmon, that is. But as much as I love rural America for its honey, I do not love it for its lack of Whole Foods and cheap sushi bars. I told myself if I wasn’t going to feel ethical eating that fish, I should just be happy eating beans. And I am. Seriously, buy 365 baked beans. They will change your opinion on canned goods.

Favorite raw vegetable? I don’t like many vegetables raw but baby carrots I don’t mind. Here’s a note: raw turnip does not taste all that good. Keep that in mind.

My Summer In Recipes

All throughout the year, I’ve had a tiny list of a few recipes I’d like to try. Well, when I realized I was home and had the whole Summer before me, that list kind of… exploded. Thanks to all of your suggestions and more, here is what I hope to make and bake over the next few months.

Vegan Peanut Butter Fudge

Microwave Vegan Peanut Butter Fudge

Ingredients:

  • 1/2 cup no-stir peanut butter*(smart balance recommended)
  • 3/4 cup natural vegan butter substitute(earth balance recommended)
  • 1/4 cup non-dairy milk
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla powder OR 1/2 teaspoon vanilla extract**

In a bowl, microwave the vegan butter until melted. Add in the peanut butter and stir until fully incorporated. The mixture should be a thick liquid at this point. Whisk in the sugar and vanilla while slowly adding the milk as needed. Once all the ingredients have been mixed together, pour into a shallow square pan. Keep in the fridge loosely covered for at least 12-24 hours before cutting into.

*If the peanut butter is not solid at room temperature, the recipe will not set properly

**The powder is recommended because the alcohol in the vanilla extract will hinder the setting process somewhat

I hoped to run 14 miles today, but honestly I did not know that I would. I put myself out on the road, and after the first few miles things just felt good. At 6.5 miles, when I could have cut it short, I knew I had it in me to keep going and going and made it all in under 2 hours. Wahoo! I was excited, and ready to eat a good meal for lunch.

Ah, nothing feels more refreshing than a Summer salad. I dressed spinach in this dressing and then mixed together chickpeas, golden raisins, raw cheddar, and a little maple syrup. I think I’ve got you matched here, Whole Foods. This was pretty fantastic. Sure, it wasn’t fried. But the flavor was nice and spicy. For the rice, we just cooked it normally and then drizzled with coconut milk and lime zest at the end. Magnifique! So simple and yet rich and flavorful.

I’m really happy that so many of you seem to love your fancy nut butters! Sounds like there’s going to be a lot of experimenting in the kitchen this weekend done(and a happy Friday to you, too!) And if you think you’ve seen a post like this recently, maybe it’s because me and Christy are on the same wavelength when it comes to being ravenous.

I kicked off my weekend the best way possible: Going to Whole Foods. Nothing is more relaxing than being at a grocery store even before the lunch crowd sets in. And I was tempted to buy anything and everything new I could find(like a new gelato Lauren introduced me to!). But in the spirit of Project Cleanout, I kept it nice and reserved.

The best thing about going to Whole Foods was getting a lunch so that I could just work on my final papers without thinking about lunch. Not only did I not run today, but I finished two rough drafts of papers I have to write(hold your applause). Since chocolate and ice cream and candy bars weren’t working(Gosh, I couldn’t imagine why), I decided to go down the protein route and have a can of tuna before dinner. Proof that I am not a smart cookie: It took me about 3 minutes of shopping to realize this was the same tuna I’ve been eating all year, they’ve just changed the packaging of it. You like? I’m not a fan(because it confused me). Anyway, this actually worked to keep me full until dinner.

I covered roasted yukon gold potatoes from the dining hall with the remnants of a can of 365 vegetarian chili. On the side was broccoli and seasoned tofu(both also from the dining hall) and a can of Zevia because I realized that’s going to be easier to move out of the dorm if it’s empty…

Poll: Would you hurt a fly? I’m talking literally here. I try to be very conscious of animals at all times. I’m appreciative when I eat meat, and even fish like canned tuna fish(I don’t really buy the pescitarian thought that they’re any less conscious than cows). Somedays, I’ll eat like a carnivore; two days later, I might make it a point to eat raw foods. Tomorrow I will change and today won’t mean a thing. I snacked on an Apricot Goji Pranabar in my first class around 10am before my workout, and drank a Citrus Kombucha after lunch as a sort of “dessert”. Not that lunch was very raw.

Have I mentioned I’m a member of PETA? Or, at least,  I get their newsletter because I entered into a contest of theirs. I actually don’t care for PETA for reasons brought up on Caitlin’s blog here. But I do love animals. I do love cows. And I do love this; grass-fed beef has now been expanded to all Whole Food locations. Yeehaw! Just when you think you’ve got me figured out, the seasons already changing. Oh, and before lunch I ran.

I told myself after I ran my half-marathon I would cut back on the running, and so far I’ve ran 8, 10, 9.5, and now 12 miles. Whoops. I enjoyed it, though, and that’s what matters. And inspired by this fit blogger, I thought up what my fitness goals would be. I came up with 2 that almost directly compete. Clearly, I don’t even know where my life is headed, except definitely to the freezer.

It was a long afternoon of classes. I won’t go into it, but just know that afterwards I really needed ice cream. I do not feel ashamed. And seriously, So Delicious Chocolate Peanut Butter Swirl Coconut Milk Ice Cream should be patented(it probably is). This has got to be my favorite ice cream now. I don’t think there’s a bowl big enough–look at that. Yum.

It might be nice if I could follow my own advice to buy ingredients, not food but instead I cracked open a can of organic vegetarian chili and poured 1/2 over a baked potato from the dining hall with added tofu. I would like to play the “dorm room” and the “project cleanout” cards here.

So that’s me, in all my contradictory glory. You know you wouldn’t want it any other way. Now fess up; how are you a contradiction?

I’m sorry if this post is spazzier than a disco ball but there’s so much I have to say, I can’t think of any way to connect it all so I’m just going to blurt it out.

My official half-marathon time on this race was 1:37:51. Wow. What? I wasn’t even sure I could break 1:40 the day before even though that was my goal, and that’s far beyond what I trained at. I’m just so relieved, and glad to have no new goals(not until next year, at least…).

I might have a fudge problem, and I’m not complaining. What has led me to this conclusion? Oh, I don’t know, the mostly gone pans of microwave vegan fudge and raw vegan fudge in my fridge were a clue. And the recipe in my head for vegan peanut butter fudge isn’t helping until I can actually make it. Otherwise, this was a perfectly healthy Biggest Loser snack.

I slept in instead of running right away and ate breakfast first. I tried to keep the ingredients pretty well, but if I didn’t have at least 6 squares of this chocolate, nothing would have filled me up. I’m a big fan of eating what you crave because, if you don’t, it won’t matter what you eat–you just won’t be satisfied. Let there be chocolate!

I’m very proud of this post and I hope it gets picked up by healthbuzz. I didn’t think anything in my life was interesting(besides fudge) at that point, so I threw that post together. I loved your responses to “the perfect pantry”. It seems a lot of you agreed with me and would add

  • Kombucha
  • Tempeh

I love that Kelly would call Kombucha a staple; that’s my kind of girl. Coffee, too–how could I forget that?

I didn’t really “know” that I felt like running today; I told myself “just go to the gym and do what you feel. If that means walking right back, do that”. Well, I actually ran 9.5 miles and enjoyed it. The best way to be healthy is just put yourself in a healthy situation. The real good news, though, came when I got back from running. I split 2nd prize in another translation test and got a great cash reward. For knowing 2 dead languages, these are really starting to pay off, and I’m totally planning all the technology upgrades in my life these can be used for.

Lunch was thrown together on the fly to make a moved class time, but it ended up being really good. Tuna salad with mustard, chickpeas with Tierra Farm‘s raw walnuts and craisins, and raw broccoli all over spinach. Besides the fact that I adore chickpeas anytime, anyway, with some dried fruit they’re just amazing.

Flashforward 3 hours after a class and studying for a final in office hours. I was starving by the time I got out  and loaded up this delicious ice cream dish. I was so hungry, anything would have done, but I am more than pleased to have made this combination of So Delicious Vanilla Bean coconut milk ice cream and Earth & Vine banana pineapple rum jam. It was like Pina Colada ice cream. Yum!

There was also an organic apple involved when the ice cream was demolished since I wasn’t quite full. But you know what this brings me to? I have to pee all the time and it’s annoying. Call it the “side-effect” of a healthy-living blogger. Whatever it is, it’s getting on my nerve. If only I could put down the salt shaker, back away from the water bottle, and throw my hands in the air. But I needed those hands to make dinner(while guzzling water).

I finished off the last of my jar of The Heat Is On by tossing steamed broccoli in it and making a veggie burger salad. This was my first time trying Wildwood Shitake veggie burgers, which actually tasted just like the original. And, yes, there were no black beans or salsa today; I felt no obligation to eat Mexican food today so I didn’t. I felt like everyone was eating Mexican today, and even Rachael Ray made some amazing fish tacos. But unless she was going to cook them for me and deliver them, I wasn’t getting them. So no festive eating done here 🙂
