I loved reading your thoughts on rest days on this mornings post. It sounds like there’s a a wide spectrum of loving/hating rest days and how often each person can go without one. Today helped me realize that a) 3 weeks is just too long for me and b) if this is how hungry I am when I “rest”, just put a whole grocery store in my pantry because I’m going to need it. As for the Munch Bar, from what I can tell they’re only available at Walgreens. But they’re really good for an “all-natural candy bar”! They’re probably better nutritionally than most of the bars in Whole Foods.

I don’t think my dorm room would have passed state health inspection this morning; something about this didn’t seem right. Don’t worry! I did practice good hand-washing and did my best to keep things sanitary. After doing this a few times, I’ve definitely got it down to an art and know the insides and outs. 85/15 grass-fed beef makes the best burgers with a good dimple in the middle for when it puffs up. I was, however, almost late to class because I put off cooking one too long. Whoops. That’d be a weird excuse to have to make.

I think I deserve to steal the title “Burger King”, don’t you? This meal was ridiculously good, with ketchup and some white onions for the burger. For a side, I roasted a whole sweet potato, peeled it, and diced it. When the burger was finished cooking, I let the potato cook in the fat drippings for a hash; it’s simple, flavorful, and cleans the pan! What could be better? This meal held me over ridiculously well, which is good since I have 3 hours of class Tuesday afternoons.

Getting back to my dorm I unwound with some coffee and vanilla powder catching up on emails and google reader. Did you know that some companies sell a vanilla powder that’s literally just the ground up whole vanilla bean? It’s crazy expensive, but something I need to try some day. After tallying up the homework I have to finish for Wednesday and Thursday I’ve realized it’s going to be a rough couple of days! I might need more rest time if only because reading on the treadmill is tough to do. Bare with me if at any point I get brief.

Chocolate Avocado Pudding With Raspberry Coconut Spread

I made this to slowly enjoy before supper but ended up scarfing it down–it was that good! Just the standard chocolate avocado pudding made with almond milk and vanilla stevia. But for a new-and-nifty “topper” I mixed half Tropical Tradition‘s coconut oil with some Crofter’s Organic raspberry conserve. Raspberry is by far my favorite jam, but this just revolutionized the whole thing. And I’d love to try a “raw” version of this with agave nectar when raspberries are in season!

While I was putting off homework, I gave some thought to a guy I saw walking in to my Greek history class. He was easily 7 feet tall and carrying a milk carton filled with yellow Gatorade, which, on him, looked like a pint sized water bottle. Beyond the thought of all the nasty stuff that must be in yellow Gatorade and what the hell kind of genes he had to make him a giant, it made me think: He’s an athlete. Well, duh, but what I meant was that he really eats and breathes whatever he does. In my hand, am I more likely to carry a treadmill or a camera? Definitely the latter(and not just for the obvious reasons). I’m a foodie. I run, and I like to run, but I looove to cook and eat. My gut reaction to this post from Kelly was “You mean people don’t cook every meal?!” like it was a shock to my system. At that self-realization, I stuck some veggies in the oven and waited for dinner.

Have I gotten over my deep despise for plain tempeh? Nope. Have I worked my way through the whole block I bought? Not quite yet. But I can at least get myself to eat it cooked in a little coconut oil and topped with shredded coconut. Last time I made this [completely vegan] meal, I just steamed the broccoli; normally, for Asian flavors, I’d say that’s the way to go, but I think roasting it instead here helps with the nuttiness of the tempeh and coconut. That and roasted vegetables always taste better 🙂

Burgers And The Emmy’s

Good morning. How awesome were the Emmy’s last night? I’m such a TV junkee, an award show on TV about TV is my yearlong fantasy. Wait, I’m getting ahead of myself. So yesterday I did my 10.10 miler, had my frozen yogurt(which was delicious by the way) and blogged it up. For some more-fuel-more-fun food  made a favorite english muffin combo of mine:

Amazing. I got the White Chocolate Wonderful/Apricot combo idea from the Peanut Butter & Company cookbook. It also suggest adding sliced almonds, which are never a bad thing I suppose, but I’m not sure how the flavor would fit. Cream cheese and white chocolate peanut butter were just meant to go together in my opinion; it’s got a sweet and savory thing going for it like nothing else(and definitely works best with White Chocolate Wonderful). I had a bit of a “special request” for my lunch at home so we hopped in the car to go to Roche Bros. On the way out of the store I tried this out after seeing such praise for them on the blog world:

It definitely lived up to the name: It was sweet and very firm. However, I still prefer my Red Deliciouses. They just seem sweeter and firmer. And I like how they’re the quintessential teacher’s desk apple. It makes me feel like such a suck up but it’s true. Well, what was my special request?

Ground bison. Since being at college, I’ve moved more towards eating meat only for pleasure and never for protein because I feel like I have to. Bison is definitely pleasure. Not only is bison healthy with only 4g saturated fat in a 4oz serving and lower cholesterol than beef, it’s actually really affordable despite sounding “exotic”. 1lb ground was 5.50, which made 4 quarter pounders. I didn’t add any seasonings to these–just bison.

How am I supposed to go back to cafeteria food after a meal like this? The bison was sooo good. I cooked mine a little too long, but it was still delicious(by the way, “a little too long” with me means barely cooked enough so that any harmful bacteria won’t kill me). I had to try my corn muffin Vitatop while I had a grill handy so threw that on, too. This flavor left me really confused in the end. I liked it, but it wasn’t what I was expecting from a corn muffin. Most of the corn muffins I’ve had were quite savory, whereas this one was pretty sweet. It tasted more like something for breakfast, but I wasn’t sure how to fit a corn muffin into any of my breakfasts. I liked the flavor, and maybe as a brunch food along with quiche this would be great, but I just wasn’t sure what to do with it. Personally, it could do without the sugar alcohol which would make it less sweet and more understandable nutritionally, but maybe that’s just me and my muffilosophy.

After lunch we ran out to Best Buy, where I basically went to look at things I knew I wouldn’t purchase or, if I do, I’ll get it for cheaper online. Why do we do this? Oh yeah, ’cause it’s fun and kills time. We got back home and I watched my Tivoed Flipping Out. That show gets crazier each week. Love it. Before we head off Brownward I grabbed some of this from the freezer:

All natural pumpkin frozen yogurt? Yes please. We bought this when we bought the bison. It had the words “limited edition” on it and–well let’s just say the deal was set then. I enjoyed this a lot, because it tasted just like a pumpkin pie, and was very similar to the Stonyfield’s Pumpkin Pie Non-Frozen Yogurt I had. I don’t, however, think I’d buy it again, simply because a) I make a damn amazing crustless pumpkin pie and b) whenever I want a pumpkin fix I usually keep a can of Libby’s on hand. Still, it was good and definitely a unique way to enjoy the flavor.

On the way back to Brown we stopped at Target where amazingly I didn’t purchase a single thing. Shocker, right? My dad was bitten by the Target bug, though, and got some lawn bags. No one is protected. When I got back to my dorm, I was happy to unpack my laundry/food, but something was a bit… err, off? My bed had clearly been remade, there was a wine cork next to it, and my floor was sticky. Oh joy. Also, I noticed my jar-o-trail mix was slightly more depleted(yes, I’m a freak who can recognize things like this) than I left it. Hmmm, waiting for an explanation on all of that. I was also getting hungry for something that was peanut butter and whole grains but that I didn’t have to clean up for and wasn’t toast. Odd craving, but this hit the spot:

Perfect fit for the mood. I also had a peach that had been in my fridge for so long I don’t even think it was organic anymore. Well this was like 40 minutes before dinner so I really didn’t do anything other than play video games and just met some people at the Ratty.

Considering I didn’t even want to eat in the dining hall because I didn’t think there’d be anything that appealed to me, this was pretty good. The soup thankfully didn’t have that much rice; I just don’t do grains in my soup, don’t ask me why. I’m not sure what a “ragout” is, but the beans were an edible protein source. The “savory spinach” was just spinach–good with that. And the glazed carrots weren’t too too sweet. It was fun to catch up and learn that nothing really happens over the weekend of the sort that I would participate in or feel like I’m missing out on. And no Emma Watson sightings either, so I’m not falling even more behind.

This was the point in my night where my mind toward the Emmy’s and never looked back. I just love the Emmy’s. And Neil Patrick Harris is so hilarious in general, you just knew it would be a great show. I started of with this for some monologue snackage:

Cookie overload! Oh wait, that’s not possible 😉 I think I’ve gone through 1/3 of that jar which, when you consider I have over 30, really says something about it. speaking of 30, domination much by 30 Rock? That’s OK with me though; I love that show and think it’s hysterical. I was surprised Grey’s Anatomy wasn’t nominated more, and thought all the drama categories were a bit off on their nominations and winners. Somewhere around the nominations for reality TV(Yeah, Survivor!), I had the most ingenious moment:

I have pumpkin butter. I have cream cheese. Why have they not met yet, and on something cinnamony? This was sooo good. The pumpkin butter, Trader Joe’s of course, is very well seasoned and sweet and melted into the savory cream cheese. All you pumpkin fans(and I know there’s a lot) spread the word on this one.

There were more eats and some reading of the night but I won’t bore you with that and instead will do so with running. As much as I would have been entertained by Emmy recap on the Today show, I decided not to treadmill it and instead enjoy the warmish weather. I ended up doing 6.25 in decent time on the nice side of Providence. When I got back, though, was when the Emmy drama began. I did my stretches/push ups in the common room and thought to look in the freezer to check on my babies(read: Elan frozen yogurt). Well, my friends, my decaf cappuccino, which still had a good 4/5ths left for me to eat, was gone. Some people clearly downed it over the weekend or something. Obviously, this upset me. It’s not so much the 4.50 the frozen yogurt costs as the fact that now I wonder if I can keep anything in that freezer and feel safe. What’s the point in spending my money on things I’ll on only eat once before they disappear? Well that was a bit of a Debbie Downer moment before breakfast, which was nonetheless great:

Vanilla, strawberry, and almond were definitely all meant to be. The fluff was unnecessarily yet perfect, just as fluff always is. The yogurt was a perfection of the recipe, which you can find here. It comes out so thick and creamy like plain greek yogurt but with a sweet and more delicate, autumn flavor. Surprisingly, or perhaps not, it also is packed with protein thanks to the yogurt and peanut flour and fiber due to the pumpkin and flax. Delicious, I wonder if I could get away with making a super batch for Thanksgiving? Haha.

I can’t wait to see all the follow-up shows to the Emmy’s today. I also want to start exploring central Providence more and the mall, but I’m not sure if today’s the day. Should I even bother going down too Eastside Market and getting more frozen yogurt? That’ll be weighing on my mind.

Weekend Recap

Happy Monday! I always feel really refreshed on Mondays for some reason 🙂 Sorry if you’re a Monday hater because it means the work week starts back up. don’t worry, I’m pretty down on Fridays; even though it’s the last day of the work week, it’s also 50% of the work week for me. It was such a nice weekend in New England. I would start with Saturday but I have one little thing from Friday night. These babies:

Homemade pistachio, chocolate, hazlenut biscotti from Bina’s. what a great way to unwind from the work week day: with a cup of decaf and some biscotti. I ate 2 and shared the rest.

Saturday morning I kicked my butt out of bed at the crack of dawn(ps. 7am is the crack of dawn for me) and pumped out a good 5.6. I don’t think I would’ve been sane the rest of the day without getting a run in so that was welcomed. After a blueberry breakfast, we drove up to Maine. I read some more the Beak Of The Finch(bleh) and watched some Baby Blues(lolerific) on my ipod. I forgot how much I liked that show. We arrived just at lunch time, and the menu was burgers and hot dogs. Like I’ve mentioned, I’m not big on the back yard bbq food unless I pick it out and cook it, so I decided to be special and get some salmon burgers from Hannaford. They were pretty good and my 7 year old cousin even almost tried one, but alas lost the courage when it was put in front of him.

A momentary serious aside. I definitely had a serious breakthrough over this weekend. I eat the food I do because I love it. I’m never depriving myself and choosing an alternative because I’m restricting myself; I’m making the alternate choices because their what I actually want. And, yes, what I choose is usually for a “health” reason, but that is such a relative term. Anything can be healthy or not healthy, and there’s certainly a difference between healthy for the heart, healthy for the mind, and healthy for the soul. So sometimes I might choose a salmon burger for the healthy omega-3’s, and other times I might choose a soul-healthy slice of pound cake loaded with whip cream because that’s what I want. The only thing that really gets to me is when people think I’m depriving myself; that’s when I start to eat what others want me to eat, not what I want to eat. And that is the unhealthiest of anything in my opinion. So my newest goal is to always stay assertive and comfortable with my food choices, for health of mind, body, and soul.

Yikes, sorry to get so serious, lol. I’ll stick with tantalizing pictures and quick summaries for the rest of the post. Back to the salmon burger, it was pretty good, but no WF tuna burger, which we’re also out of so add that to the grocery list, please. The plan was to go to Funtown that night with the cousins, my aunt and uncle, and grandparents. Is it just me or does a place called Funtown sound more not-fun than if it had a different name? Well as with little kids, they can never get their butts out of the door to go any place. While they were having fun in the pool I dropped a not-so-subtle hint that I wanted ice cream. My gramps told us abotu a place that makes their own and that was all I needed to head out the door. Normally, I always get soft serve or frozen yogurt, but this place had a horrible selection of those. Once I decided I would get real ice cream, I had a tough time deciding on a flavor, but this one definitely hit the spot:

Blueberry peach cobbler with amaretto jam. Umm, that’s like all of my favorites bundled into one so I knew I needed to get it(ok, I’ve never had straight amaretto, but I’ve had it in desserts and those little sugar cookies). The cousins were still in the pool, supposedly getting ready for Funtown. I hated to be the party crasher, but I was not feeling the Funtown. After I decided this was my vacation too, I suggested to my parents that we not go with them, and instead eat out sicne we haven’t been to a restaraunt in over a month. Of course, they were down with that and that became the plan for the night.

Did I mention my cousins are Spoiled with a capital S? This weekend was to celebrate my grandparent’s 50th anniversary, and my uncle and dad’s birthday. There was a chocolate cake for my 3 year old cousin, and a vanilla for my 7 year old, which basically were taken in and out of the fridge at any point for their desire. And every time we had to light candles and sing happy birthday to god-knows-who. Here’s a pic of the cakes. I never actually had a slice of either because my mom also made a buttermilk cake which was 10 times more delicious than any store cake could have been so I just munched on that one for the weekend(but somehow forgot to take a pic)

Like I mentioned, we hadn’t been out to eat in over a month. Wtf? Between my mom’s operation and me trying to make sure I was eating enough to support 30 mile weeks AND gain weight, eating out took a back seat. My tastebuds were feeling asian and there was a new resteraunt with chinese, japanese, and thai so of course we needed to check that out. The menus had literally hundreds of choices AND there was a buffet. I was thinking I wanted sushi but nothing had brown rice. Then I noticed this entree called the Seafood Wor Bar on the chinese menu and my mind was set. Lobster, crab meat, scallops, shrimp, and veggies on a sizzling hot plate. Umm, yes please? Plus, I knew my mom would go for the sushi(she got the salmon platter) so I knew I’d be eating off of her plate and stealing her miso soup.

That was all certainly delicious. Everyone was home waiting for us when we finished–turns out they couldn’t get their butts out the door to go to Funtown or the movies. We enjoyed a nice night at home where I introduced people to Apples To Apples while Harry Potter 5 played in the background.

The next day I was up and wide awake for a run at 7. Isn’t it fun to run somewhere you don’t know, for some length you don’t know? I went down Mile Road, ran along the beack street, up some random neighborhood where I thought I was getting lost but ended up along the main road right near the ice cream place and asian resteraunt. It ended up being a fairly fast 4.6 miler–definitely a mood booster for the day but I wish I had gone longer along the water’s edge.

My mom picked up a baker’s dozen of doughnuts from this homemade doughnut bakery for everyone, and a special cup of hazlenut coffee for me because she probably knew I wouldn’t be eating a doughnut–nice and thoguhtful 🙂 Lard’s just not my idea of a post-run meal. But do not fear, my breakfast was just what I wanted: So Delicious Cinnamon Bun yogurt, Lemon Vanilla Cashew Nectar Bar, TJ whole wheat cinnamon raisin english muffin with blueberry peach cobbler with amaretto jam.

At first I made myself a cinnamon cardamom roll from the bread store nearby; I didn’t realize cardamom is a savory spice or something, because the flavor was just off and definitely not breakfasty. And this is definitely one of my most favorite yogurts, but they’re so expensive at Whole Foods. I figured that vacation is for splurging though so I picked this guy up at Hannafords when we got salmon burgers. A good yogurt is the best way to start the day 🙂 After breakfast their was some active time for my little cousins followed by a trip to the beach.

Then afterwards it was time for lunch. I had my 2nd lobster of my lifetime. I also was somewhat of a hero for bringing a packet of TJ instant mac n’ cheese because that happened to be a favorite amongst my cousins(and my grandfather lol).

Oops, I should’ve put out a naked cousin alert. The 3 year old(Avery)’s at a point where clothes aren’t so appealing as M&Ms and cookies. Again, we planned on going to Funtown but never actually went. What did end up happening was several temper tantrums over lighting candles and singing happy birthday, followed by melting cake. Again, I skipped on the cake and went for this which I picked up at Hannafords. I love it because it’s a Maine brand, and I really felt like I was seizing the moment; turns out they opened up a store where they sell all their flavors right here in my town–go figure. It was still super yummy.

Can you tell I’m getting tired of typing? I’ll wrap it up quickly. We said our sad goodbyes and my 7 year old cousin already wants to have a “playdate” in Boston where we go on the duck tours. As we were driving out of town, we were all pretty full but spotted this sign and had to stop.

Soft serve around here is chocolate, vanilla, or a twist, so 24 flavors was mouth-watering. I got the cheesecake, which wasn’t bad but also not very bold. It tasted very vanilla. But here’s a little secret: vanilla is actually one of my favorite flavors but I hate ordering it out at places because I feel boring and not taking advantage of all the other options. So this was actually pretty perfect for me 🙂 My dad’s irish cream was also damn good. Hopefully we’ll be going back to that place soon so I can try the other 22 flavors.

Eat This, And That

First of all, 2 days after my PR of 8 miles running, I ran 7.5 miles, my official 2nd longest run! I really didn’t mean to run that far; I just decided to run somewhere. That’s very not like me. I didn’t even bring my phone if I needed to stop and get picked up, so I don’t know what I was thinking. I didn’t look at my Garmin since I might have gotten tempted to turn around at any point. By the time I got home, I looked down and saw the 7.46 and 1:00:19! Ok, I was slightly dissapointed, because I probably could’ve gone further for another PR, but I’ll take what the road will give.

Right now I’ve got a good oat bloat going from some fluffernutter oats and a chocolate cherry parfait. Isn’t that attractive? I don’t even want to start thinking about making myself lunch; hopefully someone else around here will offer to cook, and I’ll settle for anything so long as I don’t have to make it. And afterwards we’re heading to Wells Beach in Maine. Hopefully the sun will be out and the beach sand warm 🙂 and I’ll give lobster a try for once! I’m really hoping it won’t dissapoint me because the only other thing I imagine there’ll be is burgers and I’m not a huge red meat fan these days. And can you say Carrot Cake Cookies for dessert? Ok, I need to stop typing about food because I’m actually really full now and ready to puke.

Nothing Of Substance

Normally I would at least try to give a good post or a cool picture but here’s why I’m just not in the mood today: Things are slightly hectic around here since my mom’s home from an operation and can’t do much other than take care of herself(such as drive which will make groceries an interesting problem). The next thing that put me in a bad mood was I ate an apple and that filled me up. I know, I’m one of the few people who would complain about this. But when you want to gain weight and have trouble eating enough as is, having “real food” can be an issue because it makes you “real full”.

Anyway, flash foward about an hour and a half and I’m trying to convince myself to make a real lunch(still full). I know I should eat something of substance and protein, but my cravings are as follows: peanut butter, pretzels, cheese, bananas. After deciding on a mahi mahi burger I discover the freezer was open. All night. It was at 35 degrees, a lot of burgers needed to be thrown out, and the ice cream is all soft(which is a huge pet peeve of mine). Screw protein. Time to feed some cravings: Annies whole wheat bunnies, steel cut oats with cashew butter, vanilla chobani + Stonyfield banilla. It wouldn’t be so bad if it wasn’t almost identical to my breakfast.

So after I’m able to shove this all in(still full) I’ll still be behind on calories for today(just by 100, for now). I’m going to need to go for a walk for my sanity, and catch up on a couple Conan’s. Doubt I’ll be eating any ice cream today since it will take so long to refreeze :-(. But tonight I plan on splurging on some white chocolate and cinnamon raisin PB&Co peanut butter so hopefully that will put me in a good mood. But there’s no way I’m doing PB and oats again for dinner so those will have to wait for breakfast.

What are you wearing right now? Black BUA sweatpants and a grey ringer T that says Get Your Greek On(I think it’s a fraternity reference but I’m too much a classicist to see that).

What’s the last thing you read/are currently reading? Food Network Magazine. Next issue’s not until July 😦 At least this one has some great burger ideas for summer.

Do you nap a lot? Believe it or not, I never nap. I just can’t stand it.

Maybe my grandmother back at graduation?

What’s your current obsession/addiction? Probably forums or else I wouldn’t be on here. Or maybe burgers, I’ve been eating soo many recently and am having Chile & Lime chicken burgers tonight!

What was the last thing you bought? Greek yogurt, peanut butter filled pretzels, and MorningStar veggie buffalo wings at Trader Joe’s

What are you listening to right now? The TV, which is on Food Network, but now that I’m conscious of that I’m channel surfing.

If you could have a superpower what would it be? Teleportation.

What time do you usually wake up? 7:45 every day

Name one thing you can’t live without? My parents, which makes me so disappointed that I lash out at them at times.

What time is bed time? 11:00 every day

If there was one place you could be right now where would it be? I love my room and would much sooner wish other people/things here than myself somewhere else.
