I can’t believe I didn’t take a picture of all the food; there was a lot! But this was my plate: potato fries(I made these for myself because there were only sweet potatoes otherwise and I wanted white), roasted brussels, and chipotle marinated Amish chicken. The chicken was remarkably good, and that’s coming from someone who usually thinks poultry is too “bland”. I suppose we would have expected no less from something grabbed from Whole Food.

I wasn’t “feeling” greek yogurt this morning for protein, so why not chicken just to get it out of the fridge before it goes bad? I’m curious how this is going to play out on a run…

So what’s been bitter? Over the past 72 hours, I tried going without stevia. I don’t use any artificial sweeteners, but have often used natural stevia in tea and coffee and a few other things. I’ve never gotten a bitter taste to it; it’s always been sweetness. And I think it’s perfectly fine in moderation and all. But, trying to go without it, I noticed my sweet tooth in general grew smaller and I discovered so many other pleasantly-bitter flavors.

I’ve been drinking black coffee, unsweetened iced tea, and dry seltzer, all of whose flavor I’ve been enjoying more and more without added sweetness. It took just a little getting used to, but I don’t really miss anything.

I did get one craving for a sweet drink, so I just had one sweetened with cane juice. This wasn’t my favorite beverage, but that was because of the flavoring and not the sweetening. I’m totally open to trying more, too.

Plain yogurt has become less repulsive in all its tart-glory. It helped to find Fage on sale, which is creamier and dreamier than any other brand in my opinion, but the same holds true for Oikos and Chobani plain.

I do enjoy it and think there’s nothing wrong with using it. But even now that the 72 hours are up I’m not rushing to throw some in my drinks.

I’m really happy that so many of you seem to love your fancy nut butters! Sounds like there’s going to be a lot of experimenting in the kitchen this weekend done(and a happy Friday to you, too!) And if you think you’ve seen a post like this recently, maybe it’s because me and Christy are on the same wavelength when it comes to being ravenous.

I kicked off my weekend the best way possible: Going to Whole Foods. Nothing is more relaxing than being at a grocery store even before the lunch crowd sets in. And I was tempted to buy anything and everything new I could find(like a new gelato Lauren introduced me to!). But in the spirit of Project Cleanout, I kept it nice and reserved.

The best thing about going to Whole Foods was getting a lunch so that I could just work on my final papers without thinking about lunch. Since chocolate and ice cream and candy bars weren’t working(Gosh, I couldn’t imagine why), I decided to go down the protein route and have a can of tuna before dinner. Proof that I am not a smart cookie: It took me about 3 minutes of shopping to realize this was the same tuna I’ve been eating all year, they’ve just changed the packaging of it. You like? I’m not a fan(because it confused me). Anyway, this actually worked to keep me full until dinner.

Poll: Would you hurt a fly? I’m talking literally here. I try to be very conscious of animals at all times. I had such a coconut milk craving last night, you wouldn’t have believed it. We went to Big Fresh Cafe. After explaining why wheat noodles wouldn’t work for me in this dish, and that I’m just not a fan for rice, my plate was a big bowl of veggies, tofu, and coconut curry sauce. I’d rather get a big bowl of “special” ordered food I love than not eat 1/2 of it. And I loved this; I could have drank the sauce, but I didn’t. Come to think of it, that may not have been vegan if they used eggs or anchovy in the sauce. Regardless, I need to make curry more.

I bought this chocolate bar while at Whole Foods and started digging in with some mocha teeccino. It may be a project cleanout fail but it wouldn’t be much longer I could get a decent mint chocolate bar for $2.

And I finished up with the emotional roller coaster that is Brothers & Sisters and a bowl of oatmeal with almond butter, which photos my camera is withholding :-/ It’s probably just as well since I didn’t bother to photograph the 2 fingerfulls of almond butter and handful of almonds I had afterwards. I think I was on an almond kick, especially after baking these.

Look away if you’re squeemish; everything in this post is rather gross. Yes, there is an ugly side to being a blogger(which we so often choose to show over the pretty or boring). The best piece of advice I got today was from miss Carrie Underwood while I was running; she told me that sometimes that mountain we’ve been climbing is just a grain of sand. In my ears, that was just what I needed to hear. Or what I really needed to hear is another day, another shower.

I just love Indian food, but can we all admit it tends to look like a gross pile of poo? It just does. At Whole Foods, I took grilled chicken and put it in a container with one of the Indian prepared foods’ sauces. I added that to some spinach I had and made a salad with extra chickpeas but ended up not touching those; I grossly underestimated how much chicken I had. Because nothing says “back on track to healthy” quite like kombucha, I sipped on a trilogy for dessert.

I just had to include a picture of my feet in this post; I think of them as the epitome of gross and they’re about the 1 thing I’m a little self-conscious of. The left one has a few blisters which won’t go away(because I won’t stop running), and the 2nd toenail on my right foot died and is now on top of a new one that grew in its place. Gross, right? Something tells me Ryan Hall isn’t about to win America’s Next Top Foot Model anytime soon, either.

You won’t find me saying that there was anything gross about this meal. Unlike the last 2 grass-fed burgers I’ve had, the meat was fresh and cooked through. And I cooked the sweet potatoes in a moderate amount of grass-fed cow butter. I’m sure I could just eat a plate of grass but all this is so much tastier 🙂

I don’t even want to ask about all your grossest habits; haven’t we been through enough? I do want to know how do you take your potatoes? I’m sure this is going to sound incredibly snobbish, but I thought about it today and I refuse to microwave a potato if I’m short on time for a meal. I’d rather just not eat it. I can’t explain it, but I suppose it’s like how I prefer steamed broccoli 100 more times than raw. Blech. Anyone else like this, either with potatoes or a similar food?

Definitely did not plan to go so far! What can I say? I got in the spirit of things. It was fun imagining how full Providence will be on that day, all the other racers running near me, and the adrenaline. I ran 9 miles on the course and then looped around a bit to extend the mileage and end up at Whole Foods(I even saw one of my teachers whose paper I’ve been putting off writing, haha, but that’s another story and he didn’t see me ;-)). Unfortunately, I didn’t account for the 1+ mile walk back from Whole Foods, so I was pretty pooped by the time I got to sit down and eat lunch.

Holy dietary fats, batman! I was craving some dark chicken which is why I went to Whole Foods in the first place and got General Gao’s. That balanced really well with a creamy, soft avocado half with lemon juice and sea salt. I also grabbed from the prepped food bar a block of yogurt cheese; it wasn’t anything special and just sort of tasted like a basic mozzarella :-/ I still ate it all.

It’s not the best white chocolate I’ve had, but it’s pretty darn good 😉 And those vanilla bean specks get me every time.

I wasn’t too hungry for dinner; I think that lunch was still holding me over, and I’d care not to know how much exactly was in that plate. I made a nice, light Summer salad starting with a bed of torn hamburg lettuce and adding a pack of chopped Lightlife Buffalo Wings. Some people prefer neither real meat or fake meat; lucky for me, I eat both happily so long as they’re ethical and natural 😀 I added a few more slices of avocado(love) and some steamed broccoli for light fiber. Maybe my hunger will strike for dessert? I’m well stocked if that’s the case.

Those Extra Miles I Didn’t Know I Had

I don’t know what it was, but after this morning’s post I had no motivation for running :-/ I could feel the energy from the maple sugar leaf(drool), but something wasn’t clicking. I even sipped on half a can of Zevia Twist–no clue why! Finally I just threw myself out the door and hoped something would happen. At the very least, I had 3 new songs on my ipod to listen to. And I’ll say that the first miles were tough. Nothing was achey physically but mentaly something still hadn’t clicked. Trucking along I got more and more into it; before I knew it, I threw myself onto the long route I did Saturday without my Garmin.

And it was long! This is definitely my furthest distance running. And even though I was mildly tired by the end, mentally I was ready to go further. Do you ever feel like you need to get going before you really get going? I don’t even know how to process being able to do runs this long. And enjoy them! If only they didn’t drain time from the day. After that, lunch was canned.

A lot of you had good guesses as to what was in that jar on the last post; the answer was nut cheese! Cashew cheese, to be exact. I’m definitely no expert and won’t even bother posting a recipe or how-to as of yet, because I’m still learning. The texture was perfectly airy and delicious. The flavor was more meh; it tasted like cashews. I think it needed to culture more, though–again–I’m so separated from the science of all of this.

This afternoon was spent procrastinating/packing more/etc. Instead of randomly snacking, I sipped on a new flavor of Kombucha. Among the benefits of kombucha is “weight management”; I would take any and all claims of the “health”iness of this drink with a grain of salt. BUT I will say that sipping on this throughout the afternoon definitely eliminated any random snacking and was far more tasty(OK, this is a preference). have you tried kombucha yet? Why do you drink it, if so? For me, it’s all about the flavor and probiotic boost.

Normally, I like low-fat fro-yo, or rich, fatty vegan ice creams. I forgot about this gelato buried in our freezer. I don’t even like gelato normally but this local brand has won my heart. It’s a lot softer in texture than what I think of as gelato. The white chocolate flavor is incredible; it’s a little curious the ingredients are “whole milk, cranberries, white chocolate, emulsifier”, but the brand is local and food-conscious so I wouldn’t question them. It’s so hard to track this down, though!

And dinner was at one of the best restaurants in town: Whole Foods. OK, there are better restaurants, but this is fast, easy, and everyone can get what they’d like. I had some roasted veggies, of course; these always taste better when you don’t have to roast them. And then I got a strip of General Gao’s chicken and golden sesame(fried) tofu. I know I’ve asked a lot of questions, but here’s what I really want to know: What do you get at the salad bar, Whole Foods or not? The last few times I got pretty boring stuff; what I really like to get is nasty, greasy stuff like I did tonight. I love it because I know it’s just as unhealthy but I feel better eating it because it’s from Whole Foods; really, what Chinese restaurant do you know that guarantees naturally raised chicken?

OK, my bed looks like a disaster zone because I just threw everything that didn’t need refrigeration on it and started blogging. I need to work on that and hit the hay for 9am class!

The Birthday Day

First of all, thank you. For everything. I haven’t had time to say that enough between the half marathon and my birthday, so I wanted to get that out from the start. These past two days have been hectic but I panned them that way after all and so thank you for all your well wishes. For breakfast I had plain ol’ pumpkin oatmeal with butter toffee peanut butter, which we’re running out of here and at my dorm so clearly it’s time to reorder Naturally Nutty. I sweetened a plain Chobani with 1/2 a serving Bob’s Red Mill gluten-free vanilla cake mix for something really yummy. On top were also one of my favorites–milk chocolate peanuts–making this definitely one special birthday breakfast.

Since it was raining, I took the chance to do something I haven’t done in over 4 weeks: bake! Runners gotta run and bakers gotta bake. Since going low-gluten, I’ve discovered that one of the wheats I can tolerate is spelt. Spelt is an ancient, non-hybrid grain whose gluten is generally accepted better. Hearing that, I whipped up one of my favorite recipes, the banana goodness bread. A good bread has plenty of brown sugar on top to turn into a crust 🙂

The honey with some soyaki Trader Joe sauce was actually really good and made it taste a little “tropical”; it reminded me of the Wildwood tofu I reviewed a while ago. For a vegetable, there was asparagus. And because bread tastes freshest, I had a slice of banana goodness bread made with spelt, chocolate chips, and hemp seeds(!!). The hemp added a great subtle nuttiness to it that I preferred to the flax.

Did you know the same amount of So Delicious ice cream and yogurt has just about the same amount of sugar? In fact, a lot of flavored yogurts are just as sugary as some ice cream brands. Holy yum, a dinner I didn’t have to cook! At first, I was a little disappointed the prezzo fisso menu wasn’t that appealing nor were the specials; I ended up ordering(for the first time, too, probably) just off the everyday menu local Misty Knoll chicken, roasted potatoes, and broccoli rabe. Let me tell you, the chicken and potatoes were to die for. Seriously, I have a little for leftovers and can’t wait to have them. I don’t think I’ve eaten local chicken before, either! So it was special after all.

When we got home I whipped, err, processed up dessert. I made a batch of raw vegan brownies using sunflower and hulled hemp seeds; I love that a raw recipe can be so no-fuss and still taste great and exotic! I made a quick and raw coconut milk frosting using about 2 parts coconut milk and agave to 1 part cocoa powder.

I snagged one last brownie, because, ya’ know, they’re best when they’re freshest out of the food processor. They’re also little sugar bombs, which is probably why I was up 2 hours later, but I got to sleep… eventually. All in all, it was a great great day, and that’s coming from someone who has a tendency to inflate the importance of things and create impossible expectations. I drank too many cups of decaf coffee to count, ate a lot of sugar, and couldn’t get out for a run because of the constant deluge here in New England, and I’m OK with all of that because that’s what special days are for.

I can’t believe all the Facebook notifications in my mailbox right now; did it have to send one everytime someone posted on my wall? Now I have the morning to deal with that. I’ve also decided I’m going to try to go low/no added sugar today and without sweetened beverages; after yesterday, my palate is just begging to taste something other than sweet. I managed to keep my breakfast “clean”, but I’ll save that for the next post. I had plans for lunch that fell through and got rescheduled to Friday, which left me with a free Monday morning–score! Rather than dive right in to midterm studying, I decided to take a nice walk before the rain came to Whole Foods to get groceries. I wanted more So Delicious vanilla coconut milk yogurt while the sale still ran and didn’t have anything planned for lunch, so prepared food sounded like a good surprise.

Talk about being a fussy diner, I took plain grilled chicken thighs from one part of the salad bar and used the honey garlic sauce from the chicken wings tray for some flavor. And flavor there was! The honey and the garlic added such a nice savory-sweetness. I could ave thought of this like a normal lunch and realized a) I payed too much for “just eating” and b) there must have been a hell of a lot of sugar on there. Instead, I decided to think of it like a good meal out, in which case a) I got a bargain on a chicken dish and b) who cares about nutrition? I’m eating out! It’s all in the perception.

That held me over… not nearly long enough. I figured 12 miles running + 2.5 walking would increase hunger a bit, so why fight it? I broke in to one of the So Delicious vanilla coconut milk yogurt I picked up at Whole Foods.

Holy creaminess, batman! This is why I’ve been loving coconut milk and its byproducts so much recently: You get something rich, creamy, and satisfying that’s an alternative to dairy. And it’s comforting to know if I ever went dairy and soy free, I could still get my probiotics(not like that’s happening any time soon!).

I’m not going to lie: The afternoon was very rough, and I did very little other than write and read and generally prep for the 2 papers and 3 in-class midterms I have over the next 4 days. In a lot of ways, my room felt like a prison. Perhaps the biggest obstacle was recognizing hunger verses boredom. I could eat all day if you let me, so I put particular emphasis on that while distracting myself with Betty White on Ellen. Around 4, I could tell that I was legitimately hungry again.

Kristie from Vegan In Dairy Land gave me this chocolate as part of blogger’s secret santa and I’ve been enjoying it nibble by nibble since then. It’s sooooo creamy! Think of the best milk chocolate Easter bunny you’ve ever had, then make it natural and gourmet. I think it’s because they use butterfat, and I love that. Where would I be in life without good chocolate?

I threw some stuff in the oven for dinner, but was ready to eat right then. It didn’t help I had no fresh fruit around 😦 I went out to the dining hall and grabbed a ton of fruit to last. No red delicious apple could have grown this perfect on its own, but it was definitely a better choice than eating highly processed chocolate candy(not like I’d ever bad mouth which one I was thinking of. I still love it 😀 It just… was not candy time). This held me over nicely through cooking dinner.

I decided to save the salmon from Whole Foods for a rushed meal I’ll inevitably have later on in the week and cook a grass-fed burger while I had the time. There was also some thinly sliced sweet potato fries with chipotle cayenne parma and 3 pickle spears(gotta have the pickles in there :-))Check out Gina’s post on the pro’s and con’s of grass-fed beef! Apparently I’m making a name for myself 😀 While a lot of you have thought “Wow, he cooks beef in a dorm!” I’ve often looked at it as “I only cook beef”. I’d love to see how my cholesterol is after all of this. I just don’t like dealing with raw chicken or having to cook it through, and raw fish is a nightmare to keep around, so beef it always is! I’ll be happy once Lent is over so I can start adding some fake chicken back into my diet. Even before then, I’d love to get some vegan ice cream or Vivapura goodies in by winning either of these giveaways.

Today’s tip:

Everyday, especially those at rough or difficult times, make sure you have an activity 20-60 minutes to spend on you. Treat yourself or just enjoy alone time. In the end, you’ll be grateful for those moments and you’ll realize that that’s not that much “time lost” in the grand scheme of things; in fact, it’s time gained. Today, that took form for me in the way of a walk to Whole Foods and back. OK, maybe that’s not the most exciting thing. But looking back I am happy to have had the time to not be productive. And it makes me look forward to ideas for activities later on in the week a little more photogenic and edible 😉 Tell me, what have YOU done for yourself lately?

Priorities And Directions

Good evening. I’ll just mention now that I’m bloggin’ from another state! But more on that in a bit. When I was wrapping up the post from this morning, I was thinking how much I really wanted to walk to Whole Foods, but didn’t have a lot of free time. Where are my priorities! I’m scarily good about doing what “should” be done, but not so good about always doing what I “want” to do. At that point, I let the dishes be dirty, the emails go unanswered, and stepped out the door. I know, I’m a rebel 😉

Groceries

I grabbed the typical stuff for next week: soy yogurt, beef, condiments, etc. The only thing they didn’t have was any soft tofu >:-( We got that a little later on in the day, though. And I say we because my dad met me at Whole Foods to pay for this and pick me up(double score). I just really felt like I needed a trip home this weekend after a lot of work and 3 weeks of not being in my own bed. So I packed up and was out of there!

Buffalo Chicken, Broccoli, Snikiddy Cheddar Cheese Fries

On the way back to good ol’ MA, we stopped a different Whole Foods to grab some lunch. I grabbed buffalo chicken off the food bar, a bag of new chips that were on sale, but broccoli out of the produce section(!!). This is the trick to eating at Whole Foods without breaking the bank: get the things that are cheaper raw and cook them in the microwave–it’s so simple and instead of $7 a pound broccoli was $1.50 a pound.

These were the chips that were on sale made by Snikiddy and oh my God were they brilliant! I had never tried any of their products, but if it’s on sale I’ll definitely give them a taste. Cheddar Cheese Fries says it all; these were like straight up Cheetos. Heavenly. Unfortunately, Whole Foods didn’t have one of the Bob’s Red Mill products I was looking for, so we went across the way(literally, right across the street) to Market Basket.

Check out that selection! And it’s all super cheap because nothing costs much at Market Basket(granted, most of the stuff they sell I wouldn’t want to touch with a 10-foot pole). I definitely need to keep this place in mind more often.

After I found what I wanted, I snacked on this apple until we got home safe and sound, where mom and Montana were waiting to say hello. Apparently, it’s been snowing in MA all week, or at least moreso than it has at all at school. Now, for the big unveiling…

What I wanted to pick up was Bob’s Red Mill‘s gluten-free vanilla cake mix! God, I really need to lay off the exclamation marks in this post. Normally, I wouldn’t use a mix, but since I know so little about gluten-free baking I felt like I needed to the first time. But Bob’s is a good one because it uses whole grain gluten-free flours(very important to me). I used 1/2 the bag to make 8 cupcakes. And, while it called for vegetable oil, I asked myself “WWFLBD?” or “what would fat-loving bloggers do?” and swapped that out for an equal amount of coconut oil. Is there anything coconut can’t do?

I couldn’t wait longer than 30 minutes for them to cool; these smelled too good. And they tasted too good, too! So perfectly light, airy, and sweet. The texture was a bit chewy, but I think that’s just the general way of gluten-free flours and eggs. For a frosting, I mixed powdered sugar, coconut oil, and vanilla extract–heavenly. But you know what they say about cupcakes…

1 is just not enough. At least I didn’t frost this one? It may have been a bit more sugars than I’m used to in an afternoon, especially an afternoon where all I did was find TV shows like Friends on channels I haven’t had in a while, but no regrets; when there’s cake around baked fresh, you better eat it up! To compensate, there at least was a vegan dinner.

I actually love green lentils. Too bad they aren’t more dorm-room friendly. For the mix, a little ketchup and mustard and a lot of steak sauce and voila! It’s so good! And I couldn’t imagine a more homey meal. On the side was asparagus grabbed from Whole Foods because, well, they really keep this house bare. And now it’s already almost 7:30; how did that happen? I need to get a move on things! I can’t wait to hear what people think of the cupcakes once they eat them for dessert(obviously, I hated them ;-)).

Working (And) Up An Appetite

If this post has a somewhat downer tone it’s probably because my dinner was a little bit of a Disaster with a capitol D, but more on that later :-/

Laundry

I still love Mondays, though! I managed to get laundry done, and read 160 pages for a class I need to read. It’s not as much homework as I’d like to have done but there’s still time after dinner, right? I’ll just keep hoping.

I wanted lunch to be low-key so I grabbed a new flavor of Al Fresco‘s chicken sausage to try and review. I love these because I just have to defrost in the microwave for 90 seconds and then cook them in there, too, for another minute!

Even though this was an early lunch, I felt like I needed volume. I guess those 10 miles this morning got my appetite going, too. The broccoli was jazzed up with a little of the hemp oil dressing from Foods Alive and then the beans by salsa. Yum. This sausage wasn’t nearly as flavorful as I was looking for :-/ It tasted… like chicken. AND I was still hungry. Dessert time!

Which obviously called for coffee, as well. I dug into my stash of Uli Mana raw desserts and tried their lemon fig pecan bar. It was super delicious! I just loved how bursting with lemon this was, like a lemon bar with powdered sugar but sooo much better for me. It was a nice sweet tone to end Lunch with and get working while watching TV.

3pm rolled around and I was starving AGAIN. Did you know Stedman isn’t a fan of chocolate? The things we learn watching Oprah… Anyway, that gave me a major chocolate chip craving, which led to some rawesome ice cream with chocolate chips.

Yum! I think I need to make a recipe page with all the possible alterations on banana soft serve, because the possibilities are endless! This batch was chocolate chip, and at the end I made it something of a banana de sel by sprinkling sea salt on top to bring out the sweetness. Can you say heavenly?

Trader Joe's Chocolate Chip

These are my preferred chocolate chips of choice for applications like this. They are gluten free and vegan. They taste deliciously sweet(hello, 8g of sugar per serving). I’ve had lengthy discussions with Avery just about how much these rock. My only complaint is that Trader Joe doesn’t make mini chocolate chips; mini makes everything more fun! Oh, I’d also complain they aren’t terribly filling.

Looks like a breakfast, but eats like a snack. And, yes, I eat oatmeal usually with a salt shaker at arm’s length for some flavoring. Pumpkin oatmeal with Justin’s chocolate peanut butter was just what I needed to power me through an otherwise painfully long afternoon.

Crap. CLEARLY I am not that good at making pancakes. I tried! I honestly did! I was flipping away in the dorm kitchen but everything turned to mush. This was one gluten-free recipe that was not meant to be. Not to mention it wasn’t very smart to keep licking the batter when there’s egg white in it(oops). In the end, it was really a meal that would have better off uneaten 8-| But I also am pretty strict about not wasting food, so I called it a “grits” and went ahead and had something like the planned meal.

I could let the nastiness of this get me down, but instead I’ll focus on the positive points. It was a meal full of fiber, healthy fats, and protein. Besides, with a hunger like mine, there are plenty of more meals to come and 1 bad one isn’t the end of the world. In fact, tomorrow night’s dinner will be a real hum-dinger I know I can pull off 😀 And so I can look forward to that. And maybe, just maybe, Katie will take pity on my and let my shameful attempt count as an entry? So let’s hear in the comments some of your worst dinner disaster stories.
