Happy Lenten Friday, everybody! OK, that has an awful and fake sound to it. The Church needs to come up with something catchy. But while they do, I’ll catch you up on what we decided. Last Friday I posed the question yay or nay on fish if I consider them a “meat” in terms of vegetarianism. A lot of you raised compelling arguments and the clear answer was that fish was cheap at the time of Aquinus which is why Catholics can still eat fish during Lent, but it’s “in the spirit” to have only the lesser-quality fish(aka no sashimi :-(). Of course, I also consulted my mom who’s the real my-word-goes-if-you-know-what’s-good-for-you and she agreed that fish was OK. Why am I saying this when fish wasn’t even on the menu for lunch?

Asian Tofu And Egg Stir-Fry With Honey Ginger Veggies And Hemp Flax Crackers

In my way overworked pan, I browned the last of a block of tofu(1.5 servings maybe) in soy sauce. Then I added these honey ginger vegetables I picked up at the dining hall until they were heated. Lastly, I cracked in an egg and cooked through–delicious! I’m not sure what was on the veggies; I don’t want to know. But this tasted perfectly greasy like real Chinese food. Over the top, I sprinkled some Omega-3’s ala seed crackers:

Foods Alive Hemp Flax Crackers to be exact. These were so deliciously herby! Rosemary is towards the bottom of the ingredient list but the flavor was LOUD and proud, and good, too! I actually opened this thinking it was “herb” instead of “hemp”; perhaps it should have been.

Apple With Coconut Oil Agave Dipping Spread

While watching America completely own Finland, I had an ingenous and delicious snack. I sliced up a red delicious apple and spread on it Tropical Tradition‘s coconut oil mixed with Xagave–sweet fats, this was good! I could have just eaten the coconut oil with a spoon; OK, I might have done that a little, too 😉 Anything to distract me from work! But then I got hungry again, which meant early dessert apparently:

I was on such a good vegan streak until the egg, and then milk chocolate. Oh well, if my milk and meat teeth want to return, fine by me. While majorly enjoying this, I stuck a sweet potato in the oven, but it didn’t cook in time for dinner 😦 I had all the time in the world; I should have put it in early. I’ve since stuck it in the fridge for another meal. Here’s where the fish comes in:

Ain’t she a beauty? Straight from a can. It kind of made me think I was eating cat food(like, a lot). I guess that’s the spirit of Lent! 🙂 To flavor it, I added some maple syrup and maple butter. And because my sweet potato didn’t turn out, I had a very different form of potatoes…

Is it wrong that I probably liked the Sour Cream & Onion popchips more than I’d have liked the sweet potato? Yeah, no shame. The salmon was pretty decent for being from a can; they didn’t keep much fat in it, though, which is where all the Omega-3’s would be 😦 Good enough, I suppose? I’d actually been thinking about finding a good DHA supplement this year, but my final verdict is the same: I don’t really believe in supplements(fortified foods I’m a bit more tolerant of). I’m much more apt to want to get the nutrients from the foods themselves. And it’s especially hard for me to justify that I would need fish oil when there are so many healthy vegans and vegetarians. So no supplements for me! And I probably saved some good money with that decision, too 😉

Looking back over this week, I learned 1 block of tofu is not enough for this soy lover, and 4 soy yogurts barely got me through. Add those to the shopping list! And looking ahead, I’d really love to go home and bake a cake for no reason, but I don’t see that happening 😦 Visions of sugar cakes baking in my sleep? I’m guessing…

I hate to barrage you with contests but there are a lot out there right now and since I recently won I figure I’d keep the luck going and maybe get some scratch tickets later, too! TGIT!

I can’t decide if that 2nd T should stand for “Thursday” or just “Today” becuase today has been so much better than any average Thursday! I know wordpress has been down a lot, so if you missed this morning’s post you can read it In A Jiffy 🙂 No worries–it’s really quick because I was really in a rush. My breakfast ended up looking more like this:

2% Yogurt With Pumpkin Flax Granola Bar, Soy Yogurt With Milk Chocolate Peanut Sunspires

I realized after posting that it might give the impression I was eating all those sunspire candies. Nope! Haha, I took a reasonable amount for my yogurt; that’s just my whole stash 😉 I realized in class what these granola bars taste like: Apple Jacks! I can’t say why, but they’re dead on.

I made the decision to go to Whole Foods in between classes to get some Asian style chicken for dinner; I was having a craving and knew I couldn’t eat meat tomorrow even though I’d had more time so I thought I’d go today. I called ahead to make sure they had it, and then walked the 1.2 miles. Obviously, I spent a good amount of time perusing the aisles while I was there.

It occurred to me around the hot foods area all the things that fall under my Lenten giveup, like these! At first I thought giving up prepared soy was kind of a cop out and wouldn’t affect me much. but since I’ve almost slipped twice in 2-days, I’m thinking this was a good one. I also looked on non-soy veggie burgers while I was there but nothing impressed me.

I needed a snack for the 1.2 miles back. I would have totally hit up the tri-colored raw peppers from the prepared foods bar if they wouldn’t have set me back so much money. I also almost bought a chocolate bar but decided I should not be paying for chocolate when I have so much in my closet. 😦 A rough decision but it’s good to self-edit in the checkout line. Ironically, the person behind me picked up the bar I put down and bought it! Maybe it was destiny…

Groceries

What did I get? In short: sensible things. 2 Chobani, 2 So Delicious Plain Soy Yogurts, a Kombucha(for review), a ripe avocado, cocoa powder(I normally prefer Lake Champlain but this was what they had and cheapest), and General Tso’s chicken. Well, this did not leave me much time before my next class, so I hopped to making lunch!

1/4 Pounder Grass-Fed Burger, Sweet Potato Hash, Orange Steaz

I planned to cook this burger yesterday on Ash Wednesday–yikes! Thankfully, it was just as good today, though a bit browned. I cooked it alone in a pan and it could not have came out more perfect! While it was resting, I cut up leftover sweet potatoes and cooked them in the fat drippings. Holy yum. My thought today: You couldn’t eat meat yesterday, you can’t eat it tomorrow, so get your fill now!

I ate this entirely in Greek History. I almost fell asleep in class. Maybe the walking tuckered me out? If not for one of my best friends, Alex, to make fun of the stupid things this professor was saying(like trying to reference gameboys for a joke), I definitely would have conked out. After that, another class and then I was free! When I got out at 4, I officially began a 5-day weekend! let the celebration begin!

Xagave Chocolate Frosty

I’ve had this Xagave recipe bookmarked for a long time. I didn’t have an open can of coconut cream(is this even the same as coconut milk? I’ve never heard of it before) so I just used 1/2 a cup coconut milk kefir instead. I also cut the recipe into 1/4th, and even scaled back the Xagave to 1 tablespoon.

This gave me cause to break out the guar gum I was sent by Bob’s Red Mill to sample and review; I won’t review it quite now because this feels like something I’ll need to use a few times to get used to. There was more excitement in store for today, too:

I won a bag of Emmy’s Organic Mint Chip Macaroons. And in a poetry contest, no less! You can read my poem here. After lots of work and blending, things looked like this:

Wow. Where to start? As for the milkshake: It was really good! But I didn’t blend it enough I don’t think 😦 I’m always afraid to overblend things until they get hot and liquidy(TWSS), but I guess I shouldn’t be so long as I have the guar gum? Also, this was very sweet and had a strong agave nectar flavor. And that was after I cut down the amount in the recipe.

As for the mint chip macaroon: Holy Moly! I give a lot of things into consideration when I review a product, including price, availability, nutrition, taste, sustainability, etc. I had to give this a 10/10, even if it’s not completely available nation wide in stores; they were just that good. When I’m out, I’m going to cry for about 10 minutes and then order myself a batch. They’re amazing! They completely out shined the dinner I had planned all day:

That being said, this was pretty damn good too 🙂 I had a major craving for Chinese chicken last night. And I knew I wouldn’t be eating it tomorrow. It’s glaringly not the healthiest option, but once in a while why the hell not? And because it was from Whole Foods, it was completely natural chicken. On the side, for good health, I had a citrus Kombucha drink. It’s not my favorite flavor, since I could hardly taste the sour through the vinegar of the kombucha. But it was still pretty good; and, as always, stellar nutrition! You can always eat the bad if it’s with some good 🙂

Popcorn Flavored Cod

I’m very stubborn. I insist to eat oatmeal when I know I won’t have time to finish it all. Boy am I a crazy person 😉 Jk, but I was still working on my bowl yesterday morning when my parents arrived around noon. They didn’t mind sitting around while I finished, and look what they brought me!

Archer Farm's Vanilla Cranberry Peanut Butter

A new peanut butter? A new Target product? A food present I didn’t have to physically pick off the shelf? This was like everything I like all in one ❤ Big thanks to Naomi at One Fit Foodie for giving me the heads up on this one. After putting that and some other groceries they brought, my parents, grandmother and I headed of to Foxwoods! We’ve been going there every few months or so since I was 2 or 3. Don’t judge my family because we bond over institutions of gambling; there are sooooo many other reasons to judge us. Anyway, I can’t gamble until I’m 21, and the arcade room has lost its luster to me, so when we go my dad and I usually eat at one of their great restaurants. This time it was Junior’s.

Junior’s started in Brooklyn, and is much more well-known for their cheesecake. Bobby Flay even threw down(and beat) them! They also built a restaurant at the MGM part of Foxwoods. When you arrive, they give you pickles, beets, and relish.

I thought that was really cute. And it was all so vinegary! It was perfect. For entrees, Juniors has a lot of heavy items; would you really expect anything less from a place whose main appeal is cheesecake? I was in a white-fish mood, so I went with the broiled cod.

The dish came with florentince rice, but I asked to substitute that with the vegetable of the day, which was apparently broccoli. I also didn’t realize that at 2pm I’d be getting the dinner portion. It was very delicious, but I wasn’t expecting the pool of butter it came in. In fact, when I first tasted it I though “Why does my cod taste like popcorn?” That’s how divorced I am from butter; I only know the flavor through popcorn. I’m not even sure what the sauce on the side was but it tasted like mayo and was pretty bland so I didn’t bother with it. One thing that was great about Junior’s was their mustard.

They make their own, and my dad(who got a steak burger) and I both agreed it was incredible. Luckily, they also sold it, and mustard was on my shopping list, so I got one for 4 dollars. I love buying sauces and jams from places I visit because I think the flavor of their product says a lot about the institution and bring back good memories. We didn’t get any cheesecake, but I snapped a picture on the way out for you to drool at 😉

Can I move one now? 🙂 We walked around a bit more while my mom and grandmother had fun gambling. I had a huge coffee to flush out the butter from my system. Foxwoods has some fun stores that sell Stonewall Kitchen and other jams. Some of them had me drooling, but I wasn’t in the business of buying new and expensive jams. Once people had had their full(and lost their money), we made the long trip back to Providence. I say long because we stopped at 3 places. For energy I snacked on a new bar.

It had an interesting flavor. It was definitely sweet, though I’m not sure it was “carrot cake”. Then again, what is carrot cake, anyway? It’s one of my favorites ever, so I’ve had a ton, and I know no two have ever tasted the same because people change up the ingredients so often. Anyway, the first stop was probably the one I was most excited for.

Rhode Island Trader Joe's

Trader Joe’s is always exciting; add in the facts that 1) I haven’t been to one in over a month 2) this was a new one to me and 3) this is their only location in Rhode Island and you’ve got a happy foodie. It felt like reuniting with an old friend. At the same time, so much has changed! They have great looking new profucts like chocolate covered peppermint Joe-Joe’s. And have they always had those vanilla fudge cranberry dunkers? If so, why did I never buy them?

Well, it was dark when we got out of their. After that we went to Stop And Shop for Libby’s pumpkin and Vitatops, but as luck would have it Cascadian Farm’s granola bars were $3 a box and I had coupons! Score. Lastly was Whole Foods, where I restocked on a lot of jam that my yogurt-loving ways have taken, and picked up a dinner. I even slipped my dad $10 my grandmother had slipped me earlier because I felt the groceries had gotten a little out of hand. Here’s the proof:

Like I said, quite a bit. On the bright side, only 3 of the groceries were neither on sale, a coupon item, or store brand. And there was at least $6 saved with sales and coupons, so that counts for something. I rushed to put these away because time had completely gotten by me and was more than ready for dinner.

Whole Foods Chicken Dumplings And Tuna And Salmon Brown Rice Sushi

Did I mention my parents also bought me a dinner? 😀 This was sooooo good. I haven’t had sushi or Chinese dumplings in what feels like ages; I know of some great sushi places but honestly I’m content with Whole Foods. I like brown rice and most real Japanese places don’t offer that. I’d definitely get it more if it weren’t expensive(though, to be fair, it’s a way better deal than loading up on veggies from the salad bar).

This dinner made me very happy for the ridiculous amount of email responding/blog reading/internet bemusement I had to do. The rest of the night felt like hectic catching up but I’d much rather have a fun day and a stressful night than anything else. For a bit I ran around putting things away, cleaning plates, jumping into PJ’s, and making a snack.

Pumpkin Spice Yogurt With Harvest Spcie Granola

 

I was still hungry immediately after dinner, which I think was either from my low snackage of that the sushi had enough protein. Regardless, pumpkin pie greek yogurt was by far the best answer. I added 1/4 cup pumpkin, cinnamon, nutmeg, and vanilla stevia, and used 1 Harvest Spice bar as granola. This tasted just like pumpkin pie. It definitely hit the spot. I don’t know that I’d like that bar on its own, but as an on-the-go granola I could see it being handy. Amazing Race and Family Guy were decent, but nothing to gush about. This snack was though:

Peanut Butter Chip Granola Bar, Chocolate Vitatop With Butter Toffee Peanut Butter

 

Why people pay an arm and a leg for supplements when they could buy tasty, fortified food I will never understand; I swear I always feel better the day after I have a vitatop for dessert. Even if it’s all in my mind, it’s damn tasty 🙂 The granola bar was good, too. Nothing fortified or particularly nutritious, but definitely delicious. I think this one would make good on-the-go granola, too.

Nerd rant: The Aeneid is just awful to read in translation. At least when you read it in Latin you feel like you’re testing out your knowledge and can enjoy the poetry side of it. As a book, though, it pretty much sucks. In fact, the author, Virgil, wanted it burned after he died because he never finished it and didn’t like it himself. Some people are very glad those orders were not carried out. I, on the other hand, am not.

Soy Yogurt With Smart Balance, Newman's Own Organic Milk Chocolate Peanut Butter Cup, And Vanilla Sugar

Speaking of fortified, this was fortified with goodness. I actually used to worry about not getting enough calcium, but with 3 cups of yogurt or milk a day and green vegetables that’s not really a concern. And I think a sprinkling of vanilla sugar is totally justified when you buy plain and unsweetened yogurt 🙂

I’m finding the better I stay hydrated, the more often I need to get up and go in the middle of the night. A bit unfortunate, but if that’s the price for proper health I’ll pay. I grabbed a fruity bar and hit the gym.

Clif Fruit And Nut Mojo Dipped

This one’s not my favorite, but it had me at “and nut”. I think Monday’s are the best for long runs because usually I lower mileage over the weekend, and I’m excited to see The Today Show gang and 7am cartoons. Today pretty much fit that bill. I decided on 12 miles and finished in 99 minutes flat. None of my gym friends were there this morning 😦 But I know where they work so I can give them hell for being lazy and make sure they kick their own butts tomorrow 😉 Breakfast was decided long before it got made.

Yum! I love getting new “toys” to play with. The vanilla cranberry butter was surprisingly thin, and the cranberries weren’t whole but rather finely ground. Still, it had GREAT flavor. I think it’d be good in some yogurt. And the white chocolate chips were perfect. I think you can tell they’re made with cocoa butter. I don’t know why, but I was craving a little sticky fluff, so I threw that on the yogurt. Perfect 🙂

Clafon’t You Want Some?

Good morning, all. Last night I was such a bottomless pit. It’s a good thing I had such good eats on hand to keep me entertained and happy. My morning was a decent paced 6.7(6 times around the neighborhood). I definitely felt like I could’ve gone another time around, but then I realized just because I could doesn’t always mean I should. I imagine a lot of us have problems pacing and limiting ourselves; maybe the runner’s flu is going around! lol. My day is pretty empty as of now. I’m sure my jars of Cinnamon Raisin, Mighty Maple, and White Chocolate Wonderful are all going to be finished off during the week, SO I could be a plan-aheader and get those today. Also, there’s a reunion at Bertucci’s with a few people I haven’t seen since 5th or 6th grade; I could go to that, but not quite sure how it’ll be. Anyone else ever hesitant to reunite with people after so long?

Well after breakfast and blogs yesterday we planned on having a burgerlicious lunch. I was really craving something asian, though, and couldn’t quite figure out how to orientize my burger, so I just didn’t try.

It’s always good to just go with your cravings. Maybe my body was low on sodium, and it knows when it wants sodium just ask for Chinese and it will get more than its share.

After that we headed to the mall for my mom to exchange some clothes; aka nothing too exciting. I was thirsty though and craving something a little lemony so I picked up this:

I remembered buying this during the school year and not being impressed, but I thought I’d give it a second chance. And I’m so glad I did. This was nice and sweet, and tart; just like lemonade should be. I like that it’s natural and uses Truvia as part of the sweetness. I used to think the flavor was bland, but I think cutting out excessively sugary foods has allowed me to appreciate subtle flavors like lemon more.

After that we went to Trader Joe’s and Whole Foods. You know how it is: You go for a loaf of bread and you come out 50 dollars poorer. Oh well. At Trader Joe’s there was a woman who had clearly never been there before and was getting really excited about sunflower seeds, goji berries, and sour yogurt. All I could think was “Is this woman a blogger? Should I know her?” lol. I think she thought I was giving her weird looks, because she kept whispering to her friend and nervously giggling. While we were in Whole Foods hunger struck my like a ton of bricks. I tried getting away with a cheap bar, but I really wanted something grainy with granola, so I dug deep into my pocket and bought a 6-pack of this for *cringe* 4.79

This was a bar I had been eyeing at stores for quite some time now, and let me tell you, it was entirely worth the money. This is absolutely one of those bars people talk about when they say they’re “disguised as healthy”; basically it has more sugar than whole grains, and very little protein or fiber. But the redeeming quality for this bar is the amazing flavor. Unlike the other not-so-healthy granola bars, which still taste like granola, this seriously tasted like raw cookie dough. Vanilla is such an underused flavor and this bar is bursting with it. Go out and buy a pack NOW, and enjoy it for dessert or a quick sugar pick-me-up.

Dinner was rainbow trout, which I thought was OK but not flavorful enough on its own/ i was surprised to learn trout is more of a fatty fish like salmon. I would’ve thought by that it’d have more flavor, but lemon really brightened it up.

Well the night called for a great dessert after my distance PR. We had fresh picked blueberries still on hand and cherries that were on sale so I threw together a Cherries N’ Berries Amaretto Clafouti

Ingredients:

5oz cherries, pitted

140 grams blueberries

1/2 cup whole wheat flour

60 grams sugar(about 5 tablespoons)

1/4 teaspoon salt

3 eggs

1 cup almond milk

1-2 tablespoons amaretto

1 teaspoon vanilla extract

Preheat your oven to 350 degrees. In a deep, 9×9 baking dish, spread out the cherries and blueberries. In a bowl, sift together the flour, sugar, and salt. Whisk in the eggs one ate a time. Pour in the almond milk, amaretto, and vanilla extract and mix. Pour over the fruit evenly in the baking dish. Bake for about 45 minutes, or until golden and a toothpick comes out clean. Remove from oven and let set for at least 5 minutes before cutting into.

This recipe was incredibly simple and delicious. It’s definitely something to make when you’re having company over because it’s so easy and yet seems so decadent. And it really is best within the few hours out of the oven. You can sift powdered sugar over the top for serving. The almond flavor was a little subtle, so if you’re someone who likes louder flavor increase the sugar in the batter. The best thing about this recipe is that it can easily be adapted to fit certain dietary needs. Try swapping out the flour for almond meal, and using flaxseed meal as a thickener to replace the eggs.

If you can believe it, the entire pan has only around 860 calories. I did not feel bad at all eating half of it myself. Here was my first slice along with some hazelnut coffee.

Another GREAT find yesterday was Chocolate Hazelnut Biscotti Granola from Target. This was another product I’d been eyeing for quite a while and finally caved in and let other people pay for it for me, lol. It went really well with some chocolate avocado pudding.

At least that big box for 5 dollars will last a while; I mainly just use granola for going over yogurt and pudding, so I’ll get quite a few parfaits out of that.

Wow. What am I going to do today that’ll come close to all that deliciousness? I’m completely daunted by the thought. I suppose I’ll come up with something!
