I think I’ve found my new hobby

Yesterday, I spent a good portion of my afternoon working on this masterpiece. It was supposed to be vegan white chocolate ice cream, but the white chocolate flavor never really came through :-/ Then again, I don’t think I’ve had any vegan white chocolate ever, so I’m not sure what I was working with to begin with. Anyway, what came out was a delicious Coconut Cocoa Butter flavor.

Today started out very relaxingly with yogurt and raw local honey and some lightly-sweetened peanut butter over oats. Even though the weather was gorgeous, after 9 days of running I was happy to take a rest day because that’s what my body wanted.

Rest day or not, I refuse to give up some morning chocolate 😉 Followed by a good walk. When I got back, I fired up the grill and cooked for everyone.

I think I’ve taken my onion love to new, stink-breath heights. All it took to make these was tossing them in some EVOO and putting them in an aluminum foil pack cooking 5 minutes on each side. Delicious! They went perfectly with a southern style Wildwood burger and some roasted broccoli.

And right afterward, I went back to my new favorite hobby. I made a mix of 3 cups organic half and half, 3/4 cup Bob’s gluten free cake mix, 5 tablespoons Madhava light agave, and some guar gum and poured that into the ice cream maker. Like I learned from this experience, you really need to make the ice cream a good 3-4+ hours before expecting to eat it.

Why not some matching cupcakes? Made with Tropical Tradition‘s coconut oil and a flax egg. Getting that flax chicken to lay an egg on command is tough work! But she clucks one up eventually.

And then, since none of that would be ready for a few hours, I’ve been snacking on a bowl of oatmeal with Justin’s chocolate almond butter and coconut milk for richness–delicious! I think dessert for tonight is pretty much set with my new hobby, wouldn’t you? 😉

Annnd now I’m snacking on one of the cupcakes. Flax, egg–I’ve still got it no matter what I’m cooking with.

What’s your favorite kitchen appliance? I’d say my food processor has some competition now…

Disgusting

Warning: I’m not going for the pretty post today.

You could ask, when do I ever go for the pretty post? Well played, well played. But everything today was just pretty gross and disgusting, no matter how good it got.

The thought of eating 2 sticks of earth balance, or any fat really, grosses me out. So why do they taste so damn good in this recipe? Note to self: Don’t ever cook that rich again if you’re going to have leftovers for the next 3 days.

Running 14 miles is disgusting, especially when New England decides to warm up. Was I proud? Damn straight. But it was hot. There was cow manure involved. Every part of me got sunburned. And you get really dirty running without a shirt on. In the end, I looked like this:

Disgusting, no? I’m practicing to compete with some of Holly’s self-portraits. I’ve got a long way to go on growing out the hair and getting that kind of frizz.

The entire soda industry is–let’s face it–disgusting. There’s high fructose corn syrup, artificial colors and flavors and preservatives. And all those plastic rings kill sea-life. Not cool, Coke, not cool. Instead, I made a much cleaner version of “Sprite” for recovery: 1/2 cup lemon seltzer, 1/2 cup organic limeade, fresh lime, and some light agave nectar. Sweetness.

The raw olive “cheese” from Grezzo’s looks like a pile of poo; I’m aware. But it tastes deliciously rich in olives. And was perfect on a salad with some organic balsamic vinegar. Oh, and this is the best 2.50 you will ever spend:

Don’t look at the nutritional information; it’s not pretty. “Golden” means fried, but it’s fried by Whole Foods, so it’s magical and delicious. I love keeping one of these around for times I really just don’t feel like cooking, even if I’m taking in my daily limit of way too many things.

Sweet potatoes? Love them! But after they’ve been roasted, grilled, and sitting in the refrigerator for 3 days… There’s a reason that’s not in any recipe book.

…I don’t have any more words to defend myself. Even as a food blogger, sometimes you gotta eat a little disgustingly.

That is 6 squares of my favorite dark chocolate by Endangered Species and a pomegranate Chobani with Justin’s chocolate almond butter. The only disgusting thing here is how much chocolate I can eat in a day. If anybody ever hears of an organic chocolate eating contest, send it my way. We can split the prize money.

What’s the last thing that’s made you think “Gross!”? For me, it was the fish at the beginning of the post. It’s an Asian carp, and it’s making a move to be the next, big, sustainable seafood. Not on my plate, it isn’t.

A Different Kind Of Raw Ice Cream

I think I’ve been pushing the envelope in my latest insanity.

On Sunday, I made up this raw ice cream, which was absolutely delicious.

I had a really bad craving for vanilla ice cream. Not coconut milk. Not anything other than dairy. Of course, this was the 1 thing we didn’t have. To appease that craving, in the ice cream maker I threw

  • 3 cups raw whole milk
  • 1/4 cup vanilla infused sugar
  • 1/4 raw honey
  • 1/2 teaspoon guar gum

Considering I didn’t have half the ingredients for real ice cream and made this with no patience, it was actually pretty good. It tasted nice and sweet and hit the exact spot I needed it to. It might not have been thick and creamy, but actually it came out much like a Wendy’s frosty. Yum!

For breakfast(eaten in the car), I just cooked oatmeal and topped it with Naturally Nutty‘s chocolate cherry peanut butter and had a plain Oikos with cherry butter and Whole Foods’ trail mix. I love getting the plan yogurts because they’re so versatile! Except I had to sweeten the cherry butter because it’s a bit tart on its own. All together it was delicious.

During the test, which took 2+ hours, I sipped on a gingerade kombucha. Let’s just say I am very glad to be done with that one. It was just an awful scenario. Part of the test was answering essay questions, and the questions we had to write on were chosen by the roll of the dice. And it was not lucky snake eyes. Whatever. It’s done and I’m free!

And all they were were potato coated in EVOO and baked for about an hour! But seriously amazing. I timed this well, too, because as I was grilling the showers came in.

Summer rain: love or hate? I would hate to have to run in them. But in general, summer showers, a little lightening, and a Little People, Big World marathon would make for the perfect night.

Out With The Olds, In With The News

Good morning and Happy Mothers day to all that applies to! I feel like so much has happened/got done over the past 12 hours. In true Food Makes Fun Fuel fashion I’ll try to make a gimmicky post with bits of information in there. But I’m loving the responses to my What Would You Do? post. I’m glad no one so far has suggested using the credit card to order a fancy dehydrator 😀 It sounds like a lot of you would have turned it in to the staff, which I would have done, too, except this “gym” is just a bunch of machines in a room and there is no staff–save the management people who clean it during the work week. Anyway, all’s well that end’s well. Onto the eats!

I’m sorry if this post is spazzier than a disco ball but there’s so much I have to say, I can’t think of any way to connect it all so I’m just going to blurt it out.

My official half-marathon time on this race was 1:37:51. Wow. What? I wasn’t even sure I could break 1:40 the day before even though that was my goal, and that’s far beyond what I trained at. I’m just so relieved, and glad to have no new goals(not until next year, at least…).

I tried to keep the ingredients pretty well, but if I didn’t have at least 6 squares of this chocolate, nothing would have filled me up. I’m a big fan of eating what you crave because, if you don’t, it won’t matter what you eat–you just won’t be satisfied. Let there be chocolate!

I’m very proud of this post and I hope it gets picked up by healthbuzz. I didn’t think anything in my life was interesting(besides fudge) at that point, so I threw that post together. I loved your responses to “the perfect pantry”. It seems a lot of you agreed with me and would add

I didn’t really “know” that I felt like running today; I told myself “just go to the gym and do what you feel. If that means walking right back, do that”. Well, I actually ran 9.5 miles and enjoyed it. The best way to be healthy is just put yourself in a healthy situation. The real good news, though, came when I got back from running. I split 2nd prize in another translation test and got a great cash reward. For knowing 2 dead languages, these are really starting to pay off, and I’m totally planning all the technology upgrades in my life these can be used for.

I finished off the last of my jar of The Heat Is On by tossing steamed broccoli in it and making a veggie burger salad. This was my first time trying Wildwood Shitake veggie burgers, which actually tasted just like the original. And, yes, there were no black beans or salsa today; I felt no obligation to eat Mexican food today so I didn’t. I felt like everyone was eating Mexican today, and even Rachael Ray made some amazing fish tacos. But unless she was going to cook them for me and deliver them, I wasn’t getting them. So no festive eating done here 🙂

Can I Petition A Petition?

Happy Saturday! I for one am more than happy to be closer to Summer and living at home with a full kitchen and refrigerator. Have you all seen this petition yet? Basically, it’s a petition for Obama and his family to become vegans for their influence. Uhhh, what?! I fully support those who are vegans, or vegetarians. But how on earth could anyone want to dictate how another person eats? Especially when some of those are just little girls?

If I posted this when I first heard about it, I’d have some not-so-choice words, but I think by now my minds mulled it over to speak better of it. If anything, we should be preaching tolerance–tolerance of those who have a different way of thinking or path in life. This petition shows no more tolerance than the intolerance you could find against vegetarianism in a Southern cattle farm community. More importantly, you can eat ethically and aware without being a vegan, which is part of what Michelle Obama has already done through her time in the White House. What do you think of this petition? Besides that it’s going nowhere, I think it’s a little rude. And–as always–I’m on a mission to show you can eat well and ethically without devoting yourself to any label.

I mixed mine with maple syrup and walnut oil for something packed with even more essential fats and tasty! Over the top was Tierra Farm‘s dried fruit and baby carrots, with salad dressed in Foods Alive hemp oil dressing.

On my way back from my grocery trip, I picked up a trilogy kombucha at a cafe because I felt a little down about the whole trip :-/ A lot of it was on the store’s sale, which was good. But I probably could have saved more in coupons if I was better organized. At least I didn’t blow the project cleanout challenge too much. And you can’t say I don’t eat what I buy:

Isn’t it dreamy? My whole point in going was to get some whipped cream to make a sundae. They didn’t even have regular–just non-fat sugar-free or Rice Whip, which is dairy and soy-free. The latter seemed less processed, so I went with that and made a sundae with So Delicious chocolate coconut milk ice cream. The fudge sauce was simply cocoa powder and agave nectar mixed together. Voila! OK–the Rice Whip tasted REALLY fake; if you’ve ever had rice milk, just imagine that in an airier form. Besides that, this Friday sundae was delicious and a perfect before-dinner treat 🙂

If Obama wants to eat his beef and have his vegan cheese, too, I fully support that! I made a 1/3 a pounder hamburger but undercooked it far too much 😦 I really wanted to try the daiya so instead of eating it straight from the bag I made some sort of vegan cheese fries–YUM. This was better than mozarella cheese; it was crack. I’d be lying if I said I’m not planning on having it again today(maybe twice).

I love Fage, especially their cherry flavor. Unfortunately, it’s about expensive as they come around here. At least it’s on sale at Whole Foods this week. The cherry here tastes just like the cherry dips at Dairy Queen! Yum! Next time I’m trying full fat. The peanut butter–again, since I’ve figured out how to make cookie dough nut butter, I’m less enthused about paying someone to do it for me. Besides, this one seems really fake since half of it melts over oats and the other half is still solid :-/ Until it’s gone, though, I’ll live it up and enjoy it.

What are your thoughts on mint? I made my gluten free chocolate brownies with a lot of mint extract once and was told it was like mouthwash; hell, I thought they were great! The more mint, the better in my opinion. Even though it’s often paired with chocolate, I wouldn’t mind a dessert exclusively with mint as the flavor. Who Doesn’t Love Fudge?

Do you love fudge? I thought I liked fudge, until I had that goat’s milk fudge a few days ago, and now I’m realizing I love fudge. I can’t get it out of my head! It’s my newest obsession. And just when I think I’ve figured out how to make a killer vegan fudge, I go off to school where I have none of the supplies or ingredients. Boo 😦 Well, I can’t do a killer vegan fudge for you today. But how about a killer raw vegan fudge?

Raw Vegan Chocolate Fudge

Ingredients:

  • 1 1/4 cup nuts or half the amount nut butter*
  • 1/2 cup(80g) dates
  • 1/4 cup cocoa powder
  • 1/4 cup coconut oil
  • 2 tablespoons agave nectar

In a food processor, process the dates until a smooth paste. Remove and process the nuts until a coarse and crumbly texture. Finally, add all the ingredients back into the food processor and blend until incorporated. Once the mixture is emulsified, pour into a container and remix by hand if the coconut oil separates(it should be liquid by this point). Freeze and cut. Makes about 6-10 servings.

*You can mix it up and use your own blend to alter the flavor. Cashews have a nice, neutral flavor whereas others add their own touch. I like 3/4 cup cashews with 1/4 cup hemp seeds and walnuts

At the end of the night I broke in to my pan of raw vegan fudge along side some chocolate Yumnuts. I love the name. And yum! These were super. I didn’t like them at first, until they started to remind me of chocolate-coated M&M’s–not even the peanut find, just the chocolate M&M’s themselves. Anything this healthy and natural that could do that is a rockstar in my book.

Still no Justin’s chocolate almond butter to be found here, so I’ve gotten to making my own. And I’m pretty good at it! I think there’s a secret ingredient; I’ll save that for another day. And what would be hot oatmeal without coconut milk? I’m just loving my coconut milk as of late.

Some days call for a to-do list, and others call for a to-done list. What’s a to-done list? It’s simply writing down everything you’ve done and needed to do after you do it. Homemade Raisinets

One of my favorite Michael Pollan’s Food Rules is “You can eat all the junk food you’d like, so long as you make it yourself”. I couldn’t agree with a thought like this more. Sometimes I wonder, “Is that hamburger and sweet potatoes meal I alway make all that different from a McDonald’s burger and fries?

There are obvious differences: The lack of a refined-grain bun, no added oils or frying, naturally raised and grass-fed beef, etc. But even if my version topped the charts in calories, fat, you name it, I’d still feel 10 times better eating it knowing I made it myself. In fact, the last time I ordered a burger out has to have been August at Ufood Grill. I couldn’t agree more that–on the occasion–having food made for you couldn’t feel like a better treat. But if you’re making from scratch 90% of what you eat, it’s a great way to feel healthy and on top of your game.

Last night, I started craving milk chocolate covered raisins like nothing else. Chocolate’s not so weird for e, but dried fruit? Funky. Even though I didn’t have any, I had all the ingredients. Why not make some? I was sure they’d come out with a cleaner ingredient list than raisinets, anyway. I used raisins from the Whole Foods bulk bins and 3 chunks Trader Joe’s pound plus milk chocolate bar.

Voila! Don’t they look authentic? I still can’t believe I was craving dried fruit, but that’s another story. These tasted so much fresher than the raisinets I remember, too. Best of all was not thinking about “How many from a King sized box is a serving?” There was no serving. A serving was how much I made and I ate them all up, happily and healthfully.

Look where those bears wound up today! Trying to steal some of my chocolate. This was a new bar to me: Dark Chocolate Mint by Divine. It was good and definitely had some minty staying power. I wasn’t a fan of the crisps, though(never am). I’m still infatuated preferring Alter Eco’s dark chocolate mint on this one.

What was your last do it yourself project? Besides these raisinets, I haven’t had much of a chance to play around this semester between everything else :-/ A little birdy tells me, however, that there’ll be vegan and gluten-free chocolate cupcakes coming up this weekend…

I’ve Caught A Bug And I’m Burnt Out

If you haven’t yet got to read my post on food combining and the comments, it’s well worth it! There are good opinions weighed in by experts, and if anything I know I’ve mentioned I’m no expert. What’s there is what I’ve noticed and what works(or doesn’t) for me, but if you have a different experience, please share!

This week, I caught 2 bugs. There was the bug that made me so sick, I couldn’t so much as move out of my chair for 2 hours. That’s not gone, but it’s a lot better now, and I’m sure I’ll feel great again in a few days. When I went home, though, I caught a second bug: The Summer Bug. Since then, all I’ve been able to think about is time not at school. I can’t wait for the opportunity to make real recipes from scratch like when I made white bean and kale soup, or do Summertime activities like pick blackberries and raspberries(with better quality pictures, this year). It’s definitely burnt me out of school with just 1 month to go. I’m trying to stayed focus; I even did homework first thing when waking up this morning. But this bug could be too strong. Have you caught this bug yet? What’s the remedy? Or, let’s just embrace the bug. What are you looking forward to most about Summer?

As proof I’ve caught the bug: A shamefully large portion of my night was spent trying to find ice cream shops around Boston and Massachusetts that don’t use artificial ingredients. I’ve got the name of a store with organic gelato in my pocket. Meanwhile, this gelato tasted heavenly. I’m not even a huge fan on cranberries generally but put them(or anything) with white chocolate and you’ve got me. Since I only had a serving of yogurt at breakfast, this clocked me in right around my 3 daily servings of dairy.

Another new obsession on the warm front this time is mixing 365 peanut butter with Madhava vanilla agave: ah-mazing. I’ve found adding a little peanut oil makes it a bit runnier, too, but not super thin, so this bowl was perfect. The joy of the night was falling asleep to the sound of rain; I hate being out in the rain but I love listening to it, and the same with thunderstorms.

Like I mentioned, this morning I woke up with a goal: to focus. Fittingly, I gave Tazo’s new Focus tea a try. The cocoa peal and orange essence made this smell like orange dark chocolate–yum! The flavor was a lot more subdued, much like any black tea. I think the real therapy came in the aroma, but the flavor was nice with a hint of zest. I probably won’t be drinking it much just because I avoid caffeine generally but this was fun for a change of pace.

Hopefully the Summer will include finding a place that sells Justin’s chocolate butters because I’m almost out of the almond, too 😦 Meanwhile, have you jumped on the coconut milk train with me? I could drink the stuff if anything would fit after that. To turn some plain greek yogurt into something fruity, I added Crofter’s Organic raspberry conserve and Madhava raspberry agave; this agave I wasn’t so much a fan of as the vanilla. Do you see my multi-vitamins at breakfast? They’re hiding.

After much delay, I’ve finally given oatmeal a recipe page! I should seeing as how I eat it year round 😉 Check out my way on how to make oatmeal and enjoy the weekend! It’s all rain and gloom here. Perhaps that’s good to quash the Summer bug.
