It took about half an hour after finishing this dinner and post for me to be starving; don’t you hate it when the best tasting meals aren’t the most filling?

This bowl with mighty maple certainly did the trick, especially after not having any grains since breakfast. I love the way a little real brown sugar tastes granulated on top, but pumpkin oatmeal just wouldn’t be right without copious amounts of salt to me. The duo was superb. And this bowl held me through plenty of work into the night, until I decided to make a snack in the name of carboloading.

Maybe my snacks veer more towards fatloading–that works, too! I had 1/2 of my bowl with raw avocado pudding made with xagave and 1/2 with coconut milk vanilla yogurt. Yep, I’m definitely finding a new food obsession in the coconut milk yogurt. What on earth prompted me only to get 2? I also caught the last half of Jamie Oliver’s food revolution, which I don’t think we needed to realize America needs reform, but was a helpful reminder. The USDA requires 2 breads be served at every lunch?! Why not 2 fruits or 2 vegetables–baffling.

And I finished the night with 1/2 a Fruit & Nut Bar from Perfect Foods. My appetite wanted a whole one; I wasn’t at all hungry–1/2 seemed like a good compromise.

That left the other 1/2 for devouring when I woke up at 6:40. I’m really starting to prefer eating nothing before my run or waiting to have a full breakfast and run mid-morning. But unfortunately today I needed to run early for timing and my runs are always better with a little snack so snack it was.

There was no halfassing today. It felt great to be reunited with the treadmill and the today show, and that motivation pushed me through 12 miles, which felt easier than you would know. Even if I may not like a small snack before hand, it sure has results. After that I was a sweaty mess and ready fro a full breakfast.

Vanilla Greek Yogurt With Lucuma Powder

On my yogurt, I added 1/2 a tablespoon a hell of a lot of lucuma powder, which, I’ll have you know, will be my newest food obsession even though this was my first time trying it and I’ll eat enough to turn into a lucuma fruit in 10 days. It’s an alternative sweetener that’s low sugar and made just from the powdered fruit and tastes absolutely amazing–sort of like dates!Ā Apparently, it’s even a popular flavor in Europe? How come I never found lucuma gelato before…

And my plans that had me running early have fallen through and beenĀ rescheduled. Fun. At least now I have the day free, and while I could use all that time to work for midterms, something’s telling me to grab more coconut milk yogurt while it’s on sale. Happy Monday! If such a thing exists.

Starting Off On The Right Foot

Good morning and happy Wednesday! It’s Wednesday, March 17th, so you know what that means–new Whole Foods sales St. Patricks day! Did you remember to wear green to work? I have on a green shirt right now, and it even says Ireland Rugby League! For the record, I’m a big, fat 0% Irish and haven’t played rugby in my life šŸ˜‰

There are 3 kinds of bars that come to my mind. There’s the kind too many people will be spending too much time in celebrating tonight, if you know what I mean. There’s the blogger’s “bar” as in health food, often granola or date based bars that we all pack 5 or 6 of at any given time just so we’ll have something to suit our flavor cravings. And then there’s the biggest flirt of them all–the candy bar.

Don’t these Jokerz look just like a Snickers? I can’t get over them! Sure, they’re not at all “healthy” and completely ironic to eat while watching The Biggest Loser. But if my biggest vice is 1 of these a week, I think I’ll manage quite well šŸ˜‰ This was the perfect way to start off my short-lived night(reaaally not a night person as if you haven’t noticed). Go Max Go Foods makes 4 different all-natural candy bars; I’d be curious to try the other 3. It’s great to have 1 company that suits this sort of diet but a little competition wouldn’t hurt.

As quick as the night had started, I did some work and called it good enough. Wouldn’t want to overexert now would we? I made a bowl of pumpkin oatmeal topped with my new obsession–Love Raw FoodsRaw Cashew Butter. How sad that it’s almost gone, too šŸ˜¦ I’ll have to whip out the food processor and try something raw myself. For some added richness, I mixed shredded coconut with agave nectar and added it on top; this is nice and sweet, but without any weirdĀ preservativesĀ like in Baker’s coconut; it’s a small detail but if you’re a coconut it’s something to look in to doing.

Jolly Beans

This morning, I started my day off on the right foot by grabbing a handful of jelly beans for some prerun energy. What am I going to do when these aren’t on the bulk bins anymore? I’ve actually managed to track down the company and product page here! Now I just need to locate them in person out of season.

10 Miles in 89:05

I did have skepticism about hitting the gym today when it’s supposed to be 60 degrees at some point, but I think this was the right choice in the end. I managed to knock out 10 miles; I honestly wanted to be able to do more but the same GI issues that made me think the gym would be a better bet cut me short and led me straight to the restroom. If it’s worth anything, I think I’ve finally gotten over the troublesome gluten from that great cookie I grabbed at Garden Grille; if so, now that would be starting the day off on the right foot. And I can’t really complain about 10 miles, either.

Of course, since it’s St. Patricks Day I needed to start my day off with something green. Chocolate avocado pudding anyone? Well, not quite. I made it the fully raw way with just avocado, raw cacao, and raw xagave as termed by Averie a “mousse“. It’s a little thicker and a lot of sweeter šŸ˜€

Celebrate good times, c’mon! This felt a little bit like a feast; it’s a holiday at least? I made some pumpkin oatmeal and topped it with Mighty Maple to satisfy that mighty craving. And since you all seem to love your oatgurt(of which I am not a fan), I thought I’d try out avocadgurt! Doesn’t that sound delightful šŸ˜‰ 1/2 of the bowl was chocolate avocado pudding mousse and the other half Voskos honey vanilla bean greek yogurt. Oh my stars–this was amazing. It was so sweet, and the combo of raw cacao with real vanilla beans was like magic. I’m still not even 1/3 the way through and very happy I have that much more to savour.

Fun Fact: My Confirmation name is Patrick! I chose this name for several reasons at the time. Always on my mind was Patrick Star; how could he not be? St. Patrick is also the saint who drove all the snakes out of Ireland and consequently became known as the protector of snakes. Snakes are my number 1 phobia, so he seemed perfect for me. Obviously, I feel very obligated to celebrate it up today with green foods! What about you? How will you be celebrating today? Now, if you’ll excuse me, because I have so very many important things to do, I’m about to spend the rest of my morning figuring out what the flavors of each Jolly Bean are even if it kills me.

Like 26 Little Kisses

Happy Monday! It’s cold and raining and the sun hasn’t came out in 4 days, but I’m still very excited because it’s a holiday! The Ides of March–something only a Classics major could get excited for šŸ™‚ Just think that 2054 years ago today, Julius Caesar was stabbed to death. Isn’t that pleasant? Thankfully, our Senate is a little more subdued nowadays. But be sure to celebrate somehow!

1/2 Vegan Chocolate Chip Hemp Seed Cookie

Last night I couldn’t help but to break in to the second 1/2 of my cookie from Garden Grille Cafe; you’ve just got to eat it while it’s fresh, ya know? šŸ˜‰ This was so soft and chewy, I have to imagine they used loads of Earth Balance and sugar–no complaints here! I finished this off and fast while also trying to wrap up a paper for one of my classes. That alone calls for a cookie.

A little later on I went for a BIG bowl of completely raw chocolate avocado pudding(made mousse style ala Averie): 16g raw cacao powder, 5oz organic avocado, 27ish grams raw agave nectar. If that doesn’t fill you up and make you feel good, I don’t know what will! But of course, I needed to top that with 6 milk chocolate peanut sunspires(working from memory, I wasn’t actually counting these).

Because with these lil’ buggers a few is never enough, I added a handful(which apparently is 9 in my hands) before hitting the sack. Is it wrong to love a candy? Not when it’s organic! I also tried watching Celebrity Apprentice and Brothers & Sisters, but I must have been tired because I don’t even remember the end of the latter.

12 Miles In 1:47:48

All that fueling made me feel great for a long run this morning! Seriously–had I not felt 120% I probably would have grabbed anything as an excuse to stay in bed and play video games today. But that was not in the cards and I went to the gym for a 10 mile run that turned into 12 because I had the time to spare and energy to burn. There were also some really good segments on The Today Show today, including one showing Al Roker’s morning routine. Could you imagine getting up for work at 3?! I though 6:15 to run was bad; I guess being such an “early bird” in college is the least I can do if I want to steal Matt Lauer’s seat on the couch(and I do).

This time 11 topped my vanilla agave sweetened Chobani for a good dash of protein post-workout, making for 26 little milk chocolate peanut kisses throughout. And I had a big bowl of pumpkin oatmeal with Justin’s chocolate peanut butter. Now if you’ll excuse me, I think I need to lay off the kisses while I do my laundry and have a tweeting war with Justin’s about when their chocolate will hitĀ my Whole Foods.

Later last night ended up being full of contradictions and out-of-balance experiences.Ā I think the jury is pretty much out on the contradiction of drinking decaf English breakfast tea when you can’t sleep on a Saturday night šŸ˜¦ TheĀ Emmy’s Organic Mint Chip Macaroon? A perfect ļ»æbalance of mint and chocolate, and all deliciously raw šŸ™‚ Oh, and me and college living and anything besides a nursing home are 100% out of balance. Call me a grandpa if you will but I do not want to hear “Tonight’s gonna be a good night” at 12:30. I want it to have been a good night and have gone to bed by 11. The fact that I was having insomnia on the 1 night a year we lose an hour’s time: What was up with that?

Waking up after a mish-moshy 6 hours of sleep, part of my body felt like running, and the other part wanted to laugh. Really? Guess which part one. I did reach a goodĀ balance between training and rest by taking a rest day yesterday, if you didn’t notice. Apparently, all it takes to keep me from running is 50mph winds, a museum tour, and more work than I know what to do with. That left my legs well rested for 11 miles in 1:36:46.

To balance out the boredom, I listened to a monster long playlist while watching a Tom & Jerry 90 minute movie on Cartoon Network(yes, they have one of those). This is a pair who really balances each other out, don’t you think? I couldn’t help but notice the contradiction in describing sounds in the closed captioning(presumably mostly for deaf viewers) with other sounds; if I were deaf, how would I have known that Tom & Jerry bouncing around sound like a pinball machine?

Breakfast is always my most mentallyĀ balancing meal of the day. What goes better together than honey and peanut butter in theĀ Peanut Butter flavor of the Perfect Foods Bar? Or the flavors of cocoa butter and peanut butter inĀ White Chocolate Wonderful, which truly is, as my European hopping hip blogger would say, wundebar! Or just the flavors of peanut butter and more peanut butter? I know PB&Co. would agree with me on that one.

Exhausting Friday

Hello! How was your Friday? In a word, mine was exhausting. Funny when you have no class on that day. I guess I just forgot how rough 13.1 miles make the rest of your time! After this post this morning, I had a meeting to catch at Au Bon Pain. When that was done I was wiped out and wanted to fall back on my bed. I was also staahhhving, so “lunch” was a quick andĀ voluminousĀ bowl of oats.

Pumpkin Oatmeal With Butter Toffee Peanut Butter And Sunflower Seeds

I don’t even normally like oats for meals other than breakfast, but this was so necessary at the time. A filling bowl that’s healthy and not something I needed to cook? Yes, please. I got to open a new bowl of pumpkin, mixed 1/2 a cup with 40g cooked grains, and added a big spoonful ofĀ Butter Toffee Peanut Butter fromĀ Naturally Nutty and a sprinkling of sunflower seeds. The sweet and savory seeds definitely made this meal–yum! After lunch I got to “work”.

Making Raw Cacao Coconut Butter

I only wish I were talking about real work; instead I made up a recipe that’s been on my mind for a while. I tried making my own raw cacao coconut butter, using products fromĀ Tropical Traditions like their coconut creme concentrate and Coconut Oil, and raw cacao powder and butter I bought fromĀ Navitas Naturals all sweetened with agave nectar. If it works out, I’ll be happy to share the recipe when I talk more about the coconut creme concentrate(the main ingredient).

While I waited for that to sit and harden(hopefully), I snacked on an apple–never filling. Ideally, the butter would be the consistancy of peanut butter or cacao bliss. The grinding process warms the oil and shreds the cacao butter so that it’s a smooth sauce right after grinding. Since I obviously have no attention span, I started using it while it was still soft.

This was one of those “Oh no I didn’t” “Oh yes I did” kind of snacks. I made chocolate avocado pudding and topped it with the sauce, which immediately cooled and hardened when it touched the cold pudding; magic shell sauce anyone? It was all very tasty and gone far too fast. I only hope it hardens at room temp, and if not it will make some good refrigerated chocolate. 18 Rabbits Nibble A Sultana

Right after that, I broke in to my bar stash and grabbed anĀ 18 Rabbits Nibble A Sultana granola bar. I love how this had only 9g of sugar! But the flavor was a bit flat–fruity but flat. The pumpkin seeds at least were nice and savory. I definitely need a good meal in the afternoon to get me through to dinner.Ā After that I had to step out to meander Thayer Street. When I was finished, I realized it was almost dinner and I did not feel like cooking after all this exhaustion. I grabbed something for dinner(and something for dessert) and rushed home hoping to use up what’s left of the day.

Red Bean Chili And Soy Tofu Over Broccoli

From the dining hall, I grabbed precooked broccoli(as in, yes, I usually cook my own but why bother tonight?) and some vegetarian chili, and supplemented more protein with tofu tossed in soy sauce and microwaved for 5 minutes. Since the chili is vegetarian I don’t have to worry about ethical meat, and since there’s no soy I don’t have to think about my Lenten give-up. I couldn’t imagine them using any artificial ingredient. And, if there’s gluten–well–I haven’t been too good on that one as of late anyway, so I’m assuming it was fine–not the tastiest but I’m not energized enough to be picky.

Like I mentioned, I did pick up a little dessert while I was out, so that’s definitely pushing me through. I should probably deal with everything I threw on the bed though first, huh? I guess this prompts the question, how do you feel about the mainstream adoption of stevia sweetened foods? Honestly, I love it. When I gave up artificial sweeteners, I thought I’d go nuts without Diet Mountain Dew or Coke Zero; Zevoa has made the transition so much simpler. Obviously, I don’t think the stuff should be knocked back like bottles of water. But if we’re talking swapping stevia for sucralose or aspartame in the American diet, sign me up. Since I’m an open and honest blogger, I’ll mention my intake of stevia today has been in my coffee at 6:50am, chocolate avocado pudding at 3:30pm, Ā and a decafĀ EnglishĀ breakfast tea at 4:30pm.

Oopsies, Daisies, And Half Marathons

I was going to right a post about added sugars(which were not my crowning glory the past 14 hours), but then IĀ accidentallyĀ ran a half marathon. Oops. I’m hoping that’s more interesting, as I look at the other “oopses” that led to that happy accident.

Peanut Butter Q.Bel Wafer Roll, Coconut Oil Chocolate

As you must know, I’m addicted to Survivor; I’ve watched every season! Last night, I was so enthused to see a reward for–what else–chocolate. Apparently, I must think I’m a contestant this season, because I went ahead and made a chocolate plate of my own to rival the prize. Oops. It was certainly tasty, though. The coconut oil chocolate got a little soft at room temp, but was fine with a spoon to finish it off.

I forgot how much I loved these peanut butter wafer rolls from Q.bel;; I should read my own reviews more often, haha. They taste so much more peanut buttery than you’d think, and it’s all natural! I only wish they’d be gluten-free, which I forgot they weren’t. Oops. As you can(and will) see, I’m awful about eating how I should.

Oatgurt With Vanilla Chobani And Nuttzo

I’ve never been one for oatgurt, but I thought I’d give it a shot since I was craving oatmeal and greek yogurt. Pouring salt over all of this was a BIG oops and made the yogurt taste nasty. After I scooped that off, it wasn’t half-bad, but still wasn’t half good. At least the Nuttzo didn’t have any added sugar thankfully? I’ll take a win in the nutrition department where I can get it. Perhaps this wasn’t such a big flop since it really nutrient-loaded me for the morning.

Fudge Mint Back To Nature Cookies

I set my alarm purposefully 10 minutes earlier, knowing if I wanted to get a long run in(still unsure how long), this would be easier than extending it 10 minutes later. While sipping some coffee and changing, I snacked on 3 Fudge Mint Back To Nature cookies. What can I say? When a cookie is a 10/10, you’ve just gotta munch on it šŸ™‚ Plus, I was sure those added sugars would help me just a little bit(Note: These are also not a gluten free food, proving moreso my awfulness in that respect. Oops).

13.1 Miles In 1:57:39

I think it helped me to run 13.1 miles that there was always somebody else on the treadmills around me; that kind of atmosphere is so much more encouraging. I had planned for 12, but when I got there and it wasn’t even 9 o’clock, I figured why not go for it?My record(also on the treadmill) is 1:46:28. For my race(in 16 days), I’d hope to run it in 1:40, though won’t beĀ disappointedĀ by anything. It’ll also be my furthest distance ran outside!

And then there was refueling. As silly as it may sound, I didn’t have oats this morning in part because I didn’t want to have to look at one of those green plastic bowls again šŸ˜¦ I can’t wait to buy a real one. Who needs oats, anyway, when you have flavors like these? I topped a vanilla chobani with my last Bob’s Red Mill gluten free vanilla cupcake–I think that deserves a moment of silence right there–and some butter toffee peanut butter ala Naturally Nutty. I made my standard chocolate avocado pudding with Xagave in place of stevia. After 13.1 miles of rough labor, I’d rather give my body a caloric sweetener rather than risk confusing it. Now if only I had measured or used a littleĀ digressionĀ on adding that sugar :-/

So there you have it: Fueling for an accidental half marathon. I think this goes along with the emphasis in this post that if you’re a regular exercisor, you really need not worry about overdoing it. Of course, there are exceptions to be said about any statement. But extra energy sure will show out in your workout. How Do You Feel NOW?

Love Raw Foods Cashew Butter

Last night I broke out this new cashew butter I was sent to sample and review from Blue Mountain Organics. It’s raw so the nuts have only been soaked, low-temp dried, and slow ground. I was interested to see if it would still taste as “nutty”.

Chocolate Avocado Pudding With Raw Caramel Sauce

I was really craving something caramel, but wanted to keep it vegan while I could. I read on a website that an equal mixture of agave, maple syrup, and cashew butter makes for a raw caramel sauce and gave it a try. The result wasn’t incredible but it was pretty tasty no less; with a little sea salt it definitely tasted more caramel-like. But I think for something really raw and caramel you’ll want to try lucuma powder(not like I ever have but it’s what I’ve heard). Anyway, it went well over chocolate avocado pudding made with stevia and almond milk.

For a better taste of the butta’, I went with a bowl of banana oats with 1/2 a banana and the grains for a small bowl, along with a HUGE dollop of cashew butter and some maple syrup. I loved how sweet it tasted, even without the syrup. And theĀ consistencyĀ was nice and airy. I definitely wouldn’t have known there was anything “different” about it because it was raw; it tasted like cashews should. And I equally loved watching Modern Family while eating this; how hilarious was the turtle plot line?

Oatmeal With White Chocolate Wonderful

One thing to know about me is I like to go to bed FULL; not hungry, or even satisfied, but feeling really well fueled. On days with long runs in the morning, I can go 14 miles and 3 hours without having time to eat, so I definitely need that night time energy. When I asked myself “How do you feel now?” after that first bowl, I knew I wasn’t there yet and made another with white chocolate wonderful. That hit the spot.

As it turned out, when I woke up, I felt more or less like I’d been hit by a bus; clearly, it was not a runner’s high or anything. Still, I wanted to get to the gym. 3 times I started and stopped walking. My excuses to keep going were always something like “I mightĀ feel like going later and would have more time now” or “the weekend would be so much better for a rest day”. Both of those thoughts were true, but then it hit me: I don’t feel like running now and that’s when matters. Maybe I will feel like going to the gym later, and if so I’ll have to find the time to squeeze in. But instead, I spent my morning doing something more practical: Making raw coconut oil chocolate šŸ˜€ This was a triple batch I made into 3 bars for refrigeration.

Chocolate Avocado Pudding With Raw Chocolate, Soy Yogurt With Hemp Seeds

Breakfast ended up being another expression of feelings. I felt hungry earlier than usual, so I ate earlier. I felt like eating vegan and not oatmeal, so I avoided oats and dairy products. And I had a definite sweet tooth, so I might have gone a little chocolate/stevia happy. Isn’t listening to your feelings great? I had a So Delicious soy yogurt with Bob’s Red Mill hulled hemp seeds for protein, and along side that more chocolate avocado pudding(stevia sweetened) with 1/2 a batch of coconut oil chocolate on top. For the pudding, I cracked open a container of my secret ingredient…

So Delicious Coconut Milk Kefir

You can really use whatever milky liquid you like in the recipe–it’s only 3 tablespoons anyway. Usually I use almond milk since I always seem to have an open container, and occasionally I’ll use coconut milk but that’s a little much to use all the time. A good option is this coconut milk kefir, which is almost as thick as full fat coconut milk, much lighter, and has probiotics to boot! It’s a bit on the pricey side, but I let myself grab some whenever it’s on sale(which it is in the New England area at Whole Foods right now fyi).

Another reason I let myself get a little “desserty” with breakfast was because I got really good news right before making it. I’ve been a little secretive with all the extra things I have going on this week; some of that is for other’s privacy, some of that is because they’re boring things I wouldn’t trouble you with. One of those “boring things” was an optional Greek exam put on by the Classics department here for freshmen. As it turns out, I came in 1st along with a classmate of mine and we both got $875 in prize! Maybe now I can afford a new bowl that’s not plastic, made for a 5 year old, and bright “apple green”? šŸ˜‰Ā Of course, that doesn’t excuse me from actually going to Greek class, which I need to do now šŸ™‚

Oh Really?

Some things recently have made me question the sanity of certain humans(myself included). I stumbled on a Mythbusters marathon last night and watched it for 3 hours. I love that show, but I have to wonder who’s funding The Study For How Much Popcorn It Takes To Blow Out A Window. Oh really?

Chocolate Avocado Pudding With Coconut + Vanilla Macaroon

I took my mind off those things by making some chocolate avocado pudding made with almond milk andĀ NuNaturals‘ vanilla stevia. I don’t know why, but this particularly batch tasted amazing On top I broke up my lastĀ Emmy’s Organics Coconut + Vanilla macaroon. These had SUCH a good vanilla flavor to them; if you can find them, I’m jealous and would highly recommend grabbing them if only to flaunt in my face.

While I was doing that, I was of course playing around on the internet.Ā I haven’t even been away fromĀ Facebook for very long, and already I wonder things every time I log in. Like since when can you become a fan of any random object such asĀ brownies? And for the love of God if I get one more invitation to be a farmer, or a vampire, or a vampire farmer…

Better Than Roasted Sprouted Almond Butter

I wasn’t cute sure whether to have oatmeal or more pudding after that. I debated this for 10 minutes like it was a matter of life or death. Oh really? Do I have nothing better to do? Apparently not. And then after decided I wanted pudding, I realized I was out of avocadoes. Oatmeal it was!

Oatmeal With Sprouted Almond Butter And Sweetened Chocolate Coconut

Call me coconut-crazy if you want; I mixed some organic unsweetened shredded coconut with raw cocoa powder and raw vanilla agave. Oh really? Did I just discover how to make quick and sloppy macaroon shreds? Because that tasted a little too good to be true… Concerning theĀ sprouted almond butter byĀ Better Than Roasted, it took me a good 5 minutes to decide what it tasted like: raw almonds. I know–aren’t I a genious? But after chocolate almond butter, roasted almond butter, and white chocolate cherry almond butter, this was definitely unique and delicious in its own right. I’m sure you’re asking yourself, “Oh really? He got in to Brown?”

Maple Butter

I woke up at 4 and couldn’t get back to bed. I knew I was hungry, but was hoping I could shake it off and fall back to sleep. Eventually, I told myself, “Evan, you’re an A——. That’s right, you’re an athlete. If you’re hungry now at 4:30, for God sake’s stop being lazy and eat something.” Clearly, I also thought that maple butter, which is pure sugar, would be another good choice for falling back to sleep. Oh really?

French Toast Oatmeal

I went downstairs to the basement to make french toast oatmeal. And you know what? This was actually perfectly cooked; apparently the secret is to do it at a ridiculous hour, half in the dark, and not involved–go figure. And the secret to a “keeper” of a photo? Moving the red Solo cups out of the way.

Morning Apple

I can say that, after that, I fell asleep nicely. And for the first time in longer than I can remember,Ā I overslept. I got up, looked at the clock, and realized it was 9:30! OK, can you oversleep when you really don’t have any “plans”? Probably not. But that’s later than I prefer. I decided the weather looked perfect for another outdoor run, gobbled down this apple, and hit the outdoors.

Before I get into the run, I’d like to point out that’s 3 1/2 minutes faster than yesterday, meaning I shaved off 20 seconds per mile. Wow! Where did that come from? When I looked at this, my first thought was Oh really? Apparently! It was just so gorgeous out again how could I not get into it? I also had motivational support via a country playlist with Taylor Swift telling me “These things will change” and Brooks & Dunn that cowgirls(and cowboys?) don’t cry.

Can I also mention my favorite part was running in to Whole Foods, grabbing the new Whole Deal flyer, and running out? I think I got odd looks, but it was worth it. There are fantastic coupons in here, including $1 off their 365 peanut butter! With only peanuts and salts forĀ ingredients, it’s delicious, and that’s a steal. When I first heard about that sale, I had to thing “Oh really? Have they lost their mind?”

And then I made breakfast, right at 11:50. I’m glad to have slipped under the wire; I’d have hated to have missed this and then feel like I should eat “lunch”; breakfast is better anyway. I sweetened the plain 2% yogurt with cherry butter and vanilla agave in an effort to keep stevia out of my breakfast. For the oatmeal, some chocolate cherry peanut butter and coconut milk was perfect! Coconut milk keeps forever if you put it in a thick plastic container sealed off in the fridge. And it makes fats more readily available as a fuel source! Perfect for fueling.

I have to sound like “Much to do, gotta run” but… much to do, and gotta run(not literally)! There’s a Vitamix presentation at the Whole Foods nearby today I might get to see(along with some friendly faces), and my grocery list is turning in to aĀ catalog. But first, I need to ask, breakfast, lunch, or dinner? Clearly, breakfast foods are my favorite!

Surprise Guest

I mentioned I was in a rush this morning, but I never really made clear why on a day I had no class.

Truth was I had company to attend to! My friend, Eury, decided to take the train down from Boston for the day before she goes to England for a month(lucky duck!). I’ve known Eury litrally since day 1 of high school; for freshmen and sophomore year we had all the same classes and were in the same circle of friends. More recently, I met her in Boston to eat at Grezzo‘s here. While I was finishing up eating breakfast, Eury was understandably hungry from the train and walking. I whipped up something I know pretty well:

Who doesn’t love tofu, broccoli, and soy sauce? It was fun to catch up and have my mind off work while we chatted. One thing we had “planned” to do was bake cookies, which was a lot easier to manage in high school with visits at home than to dorms. Still, we had all the ingredients on hand for a certain recipe.

Eury brought 3/4 cup Florida sun crystals sugar, which was the perfect amount for 5-ingredient peanut butter cookies. I don’t keep much for baking around, but peanut butter and an egg I could certainly manage. I love this recipe because it’s so simple; it was gluten-free before I knew I needed that!

Even though we were dealing with a finicky oven, they came out great for the most part. For the peanut butter, we used 365 brand creamy. Not only is it so delicious, but there’s a coupon in the new Whole Deal flyer letting you get a jar for just $1! For peanut butter that’s just peanuts and salt, that’s a bargain. After a bit more time, Eury needed to catch one of the trains heading out of Providence so we said our goodbyes. I gave her a coconut oil chocolate; I’m still waiting for the review šŸ˜‰

After she left, I was definitely hungry for lunch. What I really wanted was a nice, juicy burger. Since it’s a Friday during Lent, that was not an option. And–to be honest–I was actually feeling resentful. I could tell that wasn’t right, but rather than sulk and force myself to eat something “real” while resenting it, I decided to go for an out-of-the-norm lunch that would just keep me happy. Last weekend, I picked up this raw cacao at the natural food store and decided to make really raw pudding.

I’ve had a lot of chocolate avocado pudding, but would you believe I’ve never had it 100% raw before? Well, now I have. In the bowl went avocado, coconut milk, raw cacao, and raw agave. To balance out the chocolate, I had one of our peanut butter cookies. The pudding didn’t taste ground breakingly different, but it did have a bit more of a bitter taste and was a unique experience. And, sure, I’d make it like that again. When this didn’t quite fill me up, I went for dessert.

It couldn’t have been wrong to go for another; the first one was part of lunch and this was a wholly different snack šŸ˜‰ And who can turn down the smell of fresh cookies? With enough peanut butter and sugar in my system, I was able to get to the computer for the first time and get to work. Somewhere along the line, I had the nerve to try something I’d been thinking about for a few days now. It’s no secret I love my fakin’ tempeh bacon, but that’s off limit for Lent, too, so why not make my own?

Tempeh Bacon

Ingredients:

  • 1/2 a block of tempeh

  • 1/4 cup soy sauce
  • 2 tablespoons maple syrup
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon liquid smoke
  • 1 teaspoon ground garlic or onion(optional)

Cut the block of tempeh vertically into thin strips with a sharp knife. Lay these out carefully in a deep dish with a flat bottom or in a sealed plastic bag. In a small cup, mix together the wet ingredients and spices if using. Pour the marinade over the tempeh bacon, and toss and turn until well coated. Let this sit for at least 30 minutes. Before preparing, pat dry with a paper towel. Cook either heated in a pan with a teaspoon of oil or in the microwave on a paper towel.

After this plop of Mighty Maple, I had easily eaten 1/4 cup nut butter through my day so far. Fantastic. Besides that, it was pretty delicious; the tempeh bacon didn’t taste quite as good as Lightlife’s, but it’ll get me through the Lenten season. I love the maple/smoky/salty flavor to it all. This filled me up a lot, too, and was probably more protein than I had gotten all day, haha. After that, though, I had no real appetite for hunger. I wasn’t craving much beyond veggies and tofu, so that’s what I whipped up.

You definitely can’t say I feed my guests things I wouldn’t eat; I just heated up tofu in a pan with some soy sauce, steamed broccoli in the microwave and then finished that off in the pan, too. I threw in some sour cream & onion popchips to round it out, even though I wasn’t particularly in the mood for them; the dish just felt empty otherwise. My mind keeps going back to last Friday night, when I felt so overwhelmed and needed the promise of ice cream and a trip home the next day to push through. I’m definitely far from there tonight, but I’ll take the ice cream šŸ˜‰

A Wonderful Night

Last night felt a little “special”, mostly because when does the weekend not? To celebrate this time, I broke out the good red stuff.

POM Wonderful 100% Pomegranate Juice

Nope, not wine.Ā 100% pomegranate juice! To be honest, this stuff has been sitting in my fridge untouched for a while since POM sent it; I’m just not a big juice drinker since it’s something I rarely crave and is so full of sugars. I couldn’t do anything about the latter, but for once I really was craving this and thought I’d give it a shot. I liked how the flavor was tart like grape juice but then mellowed out with a sweetness–sort of like apple–at the end. It was still awfully sugary, but also full of potassium and antioxidants. While it’s not something I’d have every day probably, it’s definitely a treat I won’t be denying myself on the events I do crave it.

After all those carbs, I was happy for a lot of fats. Confession: I pretty much grew up having a few bowls of this ice cream daily at my grandparent’s house. Isn’t that what grandparents are for? Well, I haven’t bought it in a long time; I’m not even sure if the ingredients would fit my diet these days, and I know there are “cleaner” brands out there that’d be better. Even better, I knew I could fix this up in pudding form.

Chocolate Avocado Pudding With Peanut Butter Swirl

Chocolate avocado pudding, that is. I made a regular batch with coconut milk and vanilla stevia, and added a compote of 365 brand and brown sugar on top for the salt-sweetness. Was it just like the flavor? Not really. But then again what is :-/ While I ate this, I watched the new The Office. It was a ball of laughs and the best choice on TV. My favorite line wasĀ “What could be more important?” “I have an ice cream cake in the car” “Oh my God, what’s wrong with you? Are you insane? Go! Go! Go!” That describes my family all too well.

Oatmeal With Chocolate Peanut Butter

After that I didn’t feel too hungry; maybe the sugars in the POM weren’t as empty as I thought. Still, a 6:50 wake-up call for a run warented some nighttime oatmeals, so I heated up a bowl with Justin’s chocolate peanut butter. I love how adding the peanut butter and then continuing to microwave it makes it so the oats surround the pb and keep it in a warm blanket. I am going to run out of this flavor so soon; I hope they really do appear in stores on the East in mid-March like they projected! Also: who wakes up at 6:50 on a day with no class to run? Apparently me. But this time I had reason in the morning to push things a little earlier.

You can just call me Speedy Peterson(Olympics, anyone?) šŸ˜‰ Not really, but this was the fastest I’ve run since rehitting the treadmill in January, and makes me think I’m improving towards how I was in 2009. The last 2 miles felt like a bit of a drag; maybe because I didn’t have my magic apple beforehand? That and maybe the fact that time didn’t feel on my side, so my mind was elsewhere. I’m grateful for the quick run, no less.

Maybe some of my pomegranate loving slipped from last night to this morning, because I was so ready for some pomegranate Chobani. A dollop of coconut oil chocolate on top made it so good; I love the tart/sweetness combo. For the oatmeal, I had banana oats with Barney Butter; this combo always makes me think of Tina. So good! And now let the Friday time crunch begin.
