Yesterday morning, I was still a little “sugar shocked” from my birthday eats, so I decided to avoid added sugar and sweetness for as long as I could. For breakfast, it really wasn’t that hard; I just swapped out yogurt for scrambled eggs and used plain old 365 peanut butter with sunflower seeds on my oats. That peanut butter is probably my favorite plain, and it’s only $1 with the new Whole Deal coupon! That’s insane!

Lunch was kept real simple and real fresh I a can of 365 tuna with 2oz plain Chobani and salt; that’s the ingredients for the perfect tuna salad, in my mind. That went atop some simply steamed broccoli with soy sauce and then was sprinkled with roasted sunflower seeds; those are the best seeds to add for flavor, crunch, and protein in my book.

Around 3, I came to the realization that my life is not complete without chocolate; I just can’t fathom otherwise. And I’m OK with that since I always celebrate my chocolate tooth with good quality products. Baking this banana goodness bread with hemp seeds instead of flax was such a good idea it makes it a little nuttier and sweeter. I was worried the sugar crust was gone the day after but with some time in the toaster, this was just as crust and nice. Is it just me, or is nothing better on rainy days than sweet breads and coffee? Except this was without the coffee. Boo.

This week was so sporadic; I’d planned to be home for the half-marathon, and my birthday, and then I had no clue what I was doing. I thought I might drop by campus to pick up books and stay home all week. But after 2 days of being trapped home and not having a great time, I realized I was in a funk, and being back in Providence might help me defunk(or at least I’d have work to keep me busy). At that, we packed up yesterday afternoon and drove down to RI.

Dinner was eaten at Whole Foods; do you know of a better chef? I kind of wish they had gluten-free pizza so I could have partaken in the pizza eating(everyone else had pizza), but I was also happy with what I got. The parmesan cauliflower was insanely good; I wanted so much more! Except it cost an arm and a leg from the salad bar. I think it’s a winner for Easter lunch, though. The Chickpea salad didn’t taste any exotic, but I could eat chickpeas morning, noon, and night on their own.

Breakfast was pretty standard fare between oatmeal with chocolate chip cookie dough peanut butter(I got a new jar in my time at home) and chobani sweetened with agave and topped with milk chocolate peanuts. I was watching on The Doctors yesterday(first off, big mistake there) about how peanut particles are easy to get lodged in the lungs and trachea, which is why infants should never eat it. It also can account for a rough cough in adults, which I always have and now I can guess why. Anyone else out there with this? I’m going to be coughing after this meal, that’s for sure. It’s also made me scared to death to feed babies anything other than mushed veggies. I don’t think I was fed peanut butter, but I’ve heard admissions of coffee being slipped into the baby bottle. Any other baby feeding admissions people want to get out there? 😉

Most of this was scarfed down in between essay sentences during my History midterm. I’m happy to say that went well overall! We knew all the essay questions beforehand, but the main concern was just getting all the thoughts down on paper in time, which I think I managed. After that was a Latin midterm. Again, I think it went as good as I could have asked for! There wasn’t much of a way to study for this, so I more-or-less went by the seat of my pants and lucked out that I paid attention in class enough all along to remember the passages. When I got back to my dorm, it was time for some mental refueling.

I took 2 more squares of my favorite dark chocolate and shaved them in to the last of my So Delicious vanilla bean coconut milk ice cream. Do you see the obsession I have with that chocolate? This was creamy and delicious and hit the spot. I don’t know that I’d rush out to buy that flavor again(even though this was the 2nd pint I got of it) because I’m sure there’s a better vanilla out there somewhere; this one’s a little too coconutty for my taste.

For dinner, I made simple roasted broccoli and sweet potato rounds with some baked maple tofu. Weirdly, this combination of food fills me up not at all, despite the fact that I love it and eat it so much. I swear, the kombucha and dark chocolate is more filling. But it’s my comfort dish and I can throw it in the oven and be done with it! I also probably turned to this because it has been the dreariest day in a while in New England; sun, won’t you come out for my half-marathon and birthday?  Before I get in to my mental health tip, I want to mention this giveaway for some bootay! I could not imagine leaving my room with an unmade bed. Hell, I couldn’t imagine being around with an unmade bed, dirty dishes, unorganized pile of papers–you name it. My point is not to make your bed, however; I don’t even do this at home when I spend almost no time in my room. My point is to declutter the area you spend the most time focusing. It’s a fact that if you only look at mess, you’ll only feel like a mess and stress out. Keeping a work area neat and tidy is the most important thing not just for organization but also mental health. Where do you do the most of your work? And is it spick and span, or should we grab you a sponge? Now I get to write the fastest 3-4 page paper of my life and be done with my take-home midterm. Let’s Try This Again

I’m officially back, blogging from a dorm room! The lighting is awful; I can hear into every room from mine; and I’ll be running back and forth to the bathroom for everything from water to plate cleaning. Welcome back to me 😀

This morning was hectic with packing and organizing. I really tried remembering what I never used 1st semester and what I wish I had, trying to bring the perfect amount of things. The food processor did not make the cut; it would have been too bulky for my little room, and I’m sooo overprotective of it I’d need 10 feet of bubblewrap to move it. Banana whips will have to wait for the weekends I’m home. Since the weather was soooo nice, we grilled for lunch!

I had really odd cravings for my final meal. We grilled a frozen bison burger that I made out of ground bison back in September. When I took my first bite, I realized it was seriously undercooked(which says a lot coming from me), so I committed the cardinal sin of meat by microwaving it to cook it.  At least it was became edible. On the side I had broccoli(duh) with soy sauce, ketchup, and peanut butter! I just really needed to fit peanut butter in there somehow. The earthiness of it went great with bison.

After the car was packed and we left, wed ended up taking 2 hours just to get to campus. We needed to stop to pick up last-minute food items, but it seemed like all the stores were reorganizing or out of things! Only after Market Basket and Whole Foods did we find canned pumpkin at Stop & Shop. Ugh. I think the shortage is starting to take effect. When we were almost here, I started getting hungry and reached what was in the closest box behind me.

Vivani Dark Chocolate With 85% Cocoa

Lucky for me, that turned out to be dark chocolate 🙂 I liked this flavor of Vivani, but it felt a little bland all by itself. It would have been really great in yogurt, with peanut butter, or just about any application other than plain because the sweetness and bitterness were both so dim. 3 simple, organic ingredients(cocoa mass, cocoa butter, and sugar) though make me a happy man 🙂

We had a happy system going when we finally got here: I stayed in my room putting things away while my dad brought them from the car, up the stairs, and into the room. I really liked that deal 😀 I think it all looked like so much more in the car than it does in the room, that or I did a good job organizing it all. When I was halfway through, I had a made time for a quick snack.

Yum! I love the chocolate and fig combo, even though it doesn’t sound like a match made in heaven. The goat milk ice cream is Laloo’s brand, which I bought a few weeks ago and brought on campus to keep in the basement. I hope I can eat it before someone steals it, because it cost a good deal(and this was with my money, not the parents’). This snack made my line of thought go from “How am I ever going to eat all this?!” to “I bet this’ll be gone before I know it.” I forgot how big my appetite can get when I’m on campus and running again! Let me give you a quick tour:

Books And Appliances

On my desk, I have my alarm, coffee maker, some movies I’m sure I won’t get around to watching all semester, and books(mostly pleasure reads I won’t get the pleasure of actually reading). On top, I keep all my electronics on the left and spices/seasonings on the right–gotta have those at quick hand as a foodie.

Closet Space

My closet has just about everything but… clothes. OK, there are some shirts in there. There’s also my coffee, chocolate, shopping bags, pots, pans, storage containers, towels, utensils, and plates. I’m glad it has shelves because that’s the majority of my storage space(I couldn’t fit myself in there and close the door so at least I don’t have to worry about getting locked in).

And, as any college student knows, bed raisers are a saint. No, really, I don’t know what I’d do without my under-bed storage. This has all of my food that doesn’t need to be refrigerated, a LOT of bars, more nut butters than you would believe, natural sodas, and, at the end, dirty laundry(as in, literal dirty laundry).  Well that’s my space! I hope you like it. So, I’m sure you’re all sitting on the edge of your seats wondering how my first real “meal” back went, right? 😉

3oz All-Natural Dark Meat Turkey, Asparagus Cuts, Lemon Tahini Cauliflower

Pretty darn good if you ask me. From the dining hall, I was able to scrap up asparagus tips and cauliflower in a lemon-tahini sauce, which was actually quite delicious! One of the great things about my dining hall is that the ingredients for all of their dishes are readily available so I’m able to know if the food fits my current food philosophy(and these obviously made the cut). The main protein was leftover turkey from Sunday lunch, which I chose to eat tempeh instead of then. I took every shred of dark meat I could because I like it better; yes, it has more fats, but it also has more flavor. And since I just occasionally eat moderate amounts of meat for enjoyment anyway, it’d be silly to opt for the leaner but flavorless cuts–that’s just my 2 cents.

It’s almost time for Biggest Loser and American Idol! I love how something are very much changing, like location and what’s on my plate, while other things are more constant, like good friends and good television shows(and by “good”, I mean trashy, addicting reality TV :-D).

Meals And Moving

Woo, I am beat. So much for a somple Sunday. Can I fall asleep now? Maybe a post(and dessert) first. For lunch we ewre roasting half of an all-natural turkey, which raised a little dilemma in my head. I knew I didn’t want meat, but I hated the idea of not eating good meat when it was cooked. In the end, I decided I knew what I knew and I should make my own meat-free lunch if that’s the way it should be.

I did some research and found the generic ingredients for something bacon-like in flavor. After toying around I came up with this combo:

  • 1/4 cup soy sauce
  • 2 tablespoons maple syrup
  • 1 tablespoon white vinegar
  • 1 tablespoon liquid smoke
  • 1 teaspoon minced garlic

This was much more marinade than I needed for 1 serving of tempeh, but the flavor came out great–very bacon-like! I’ll make an actual recipe page for this soon enough. I ended up skewering and grilling the tempeh, which also really helped out the flavor.

Like I said, the tempeh came out delicious. My grandmother made me give her a piece even though she had no clue what it was, and approved of it highly. Well that should be all the convincing you need 😉 Apparently the “sweet yam” was marketed as different from a sweet potato. It got really caramelized from roasting for an hour and definitely tasted sweeter than normal.

After lunch, I kind of knew what had to be done even though I didn’t want to admit it: We had to start moving things back into my dorm. A pain? Majorly. But if we didn’t do this today, we’d either need to make an even bigger trip down Tuesday or 2 trips. Yeah, there was no winning here, so we went with plan A. We loaded up the car, drove down, and got to Providence quick. I made us stop at Whole Foods because I was hungry.

The perfect snack. I had to get this to celebrate National Peanut Butter Day. It was also 50% off so it was only 1.50, eats like a complete meal, and has a great(though tasteless) green body to it. We also found nutritional yeast at the bulk bins!! This was excellent, since I was thinking we’d need to go to Dedham again to get more. When we got to my room, it looked so sad 😦

The athletes who had lived there left a little present: some champagne stoppers on the floor. Joy. Besides that, it was all pretty well clean, and the closet hadn’t been broken in to. We de-iced the fridge/freezer, set up the TV and microwave, made the bed, put away some food, clothes, and books, and 75 minutes later it looked more lively.

Half Moved In

Ignore the sketchy pillow on the floor; I just didn’t want it touching my bed since it’s the random pillow the school provides and had hair all over it. Now, I don’t really believe in New Years Resolutions mainly because I’m constantly changing my mindset/prerogative. I like this, though, because it lets me make many “mini” resolutions throughout the year. One of these resolutions will be to make better use of my dorm’s kitchen.

It may be small. It may be ugly. And it may definitely smells like too many bottles of Bud Light have spilled on the floor. But it’s a hell of a lot more functionable than my little microwave, and I do want to get away from the dining hall as much as possible this new semester for several reasons. So hopefully I’ll be able to make friends with these burners. Hopefully.

On the way home, we just stopped at a local grocery store quickly because, once again, I was hungry.

I don’t understand how I eat the most out of my family; they need to start shoveling it in to compete! This Cortland wasn’t organic, or even washed because I just needed to get it in me. That being said, I’d still argue it was a better decision than 90% of things in any standard grocery store–just saying. This didn’t have to last me long, anyway, because it was about dinner time.

And now I’m full, tired, and lounging on my couch at home. This meatloaf never fails to get better with age; if you go to the recipe page you’ll see I included the full nutritional info for a slice! It’s quite a balanced portion of protein, fat, and fiber for something began. It might change with the rice you use(I use a brown rice medley from Trader Joe’s with some seeds in it), but it should come out similar enough. Since dinner, we’ve been arguing about my meal plan, how much I ate first semester off of it, and what to do with the new year. Is it possible that I used over $450 in flex points in 3 months? I don’t really think so, but they do charge 2.69 for 1 freakin‘ Chobani, so who knows. If that’s the case, I’m screwed. Let’s hope that’s not the case.

Dinner Standing Up

I’m home and as you might imagine it is hectic! There’s so much stuff to move around it’s mind bogging. I’ve decided to quit for tonight and try again tomorrow.

Anyway, yesterday today(it’s been that long) I made a quick lunch before my final.

Sweet Apple Al Fresco Sausage, Sweet Potato, Broccoli With Caramel Mustard

I really love this flavor sausage, especially with a little extra maple syrup! I studied a bit more and then it was time for the test at 2. The first annoyance was how people kept making jokes for the first 10 minutes; the professor isn’t strict and the class if filled with seniors who at this point just want to graduate so it wasn’t distracting for anyone else and I just let it slide. I basically just wrote and wrote and after 90 minutes I felt I did enough. It felt so good to get out! And even though I understudied for this one, I still feel like I rocked it–go figure. I needed a snack after that work out.

Yum! See all those peanut butter chips? Yeah, but we can still say it’s “healthy” because it’s called a granola bar. I decided to go check my mailbox one last time. Honestly, I had no expectations, so imagine my surprise when I found some lovin’!

My extremely awesome secret santa got me these goodies! I noticed Kristie was a new commentor a few weeks ago, through which I found and followed her awesome blog. She really nailed me with these presents! A cashew butter they don’t sell anywhere in MA and a milk chocolate bar I’ve never had. Thank you sooo much. I can’t wait to try both of these!(I love that I got a vegan to buy me milk chocolate, too. That just seems so ironic and funny :-)) I grabbed a celabratory drink for finishing finals.

No, not that kind of drink. Tea! I wasn’t sure how this would be but I believe the cashier girl said “Chamomile is really yummy”. How could I say no to that? Afterwards my dad was at my dorm and we started packing up everything(read: I packed and he moved it to the car). I should have snapped a photo of when he lifted my box of nut butters–priceless. When we were finished, the room looked like how I got it.

Isn’t that depressing? What’s more depressing is knowing I have to refill it in 5 weeks… let’s not think about it. All that moving made me starving! I realized it was 5:30 and all I’d had since lunch was a not-so-healthy bar. I needed food. So we stopped at Whole Foods.

At first I just grabbed the chicken. Then I thought “I should have some healthy vegetables”. Apparently the roasted broccoli would have been too healthy because the tso one was just right. This tasted just how I was hoping it would: guilty. Sometimes there isn’t anything better than fatty vegetarian fed chicken. Although, in all seriousness, I would like to get more fat and protein into my snacks, except I don’t know how to do that without reaching for “meal food” like chicken. Ideas? We stopped at Market Basket to stock up on veggies and fruits, and then started unpacking as soon as we got home at 7. Needless to say, there wasn’t much motivation to make vegetables for a “dinner” while we were running around putting things away, so I kept it simple.

Ok, there wasn’t much “simple” in the making of this muffin, but oh my god was it good! It tasted so nice and fresh with whole slices of diced apple. And the cinnamon in this was perfect. Even the top had a crispy coating to it–heaven! And I love how Gluten Free Life uses whole grain sorghum flour so it was a healthy dinner, too. Of course, even healthy muffins don’t have protein so I had a little greek yogurt to boot.

Like I said, soooo done putting things away for tonight. I don’t anticipate running tomorrow, so that can be my workout. My google reader is insane and it’s getting past my bed time. Yikes! TGIF

So much for getting back into the swing of things! I couldn’t have been more off my game yesterday if I’d crashed my car into a tree and then drew attention to myself by releasing a sketchy statement about it. I completely forgot the first rule of morning time management: The days you want extra time are exactly the days you won’t get it. Regardless, I skipped doing the dishes and ran out the door at 10:45 to grab coffee before class. For the first time, I forgot my camera. What if yesterday was the day I ran into Emma Watson and explained to her about my blog and she offered to pose for a photo with me?… I like to dream big so that whatever happens in the day isn’t a disappointment. Well that wasn’t the case, but I did get my coffee, sit through an rough hour of “welcome back, now work” class, and hustle on back to my dorm to pick up where I left off. After cleaning, emailing, and blog reading, I made another meal of leftovers.

Cheesy Broccoli, Tofurkey Slice, Acorn Squash With Caramel Mustard

I think from now on I’ll just cook everything on the weekend and only eat “leftovers” all week long because they’re always the best. The broccoli was simply steamed and mixed with a slice of cheese from Trader Joe’s. The acorn squash was delicious with the caramel mustard, which I definitely had a heavy hand with(how could I not?). And the Tofurkey roast was still mighty fine, though I made sure not to overdo it again because apparently too much Tofurkey is rough on the stomach! Cost for calorie, these aren’t so bad to buy on sale after the holidays eat throughout the week. Here’s hoping to more in the future!(besides what I still have as leftovers :-P)

I don’t know where my head was because I almost left my room and went to class without any of the books I needed. In history we got back our 3 midterm essays, all of which I did really well on and lifted my spirits. Then we got our final paper topic–yikes! That’ll be 12-15 pages of get-me-out-of-here. After class I “had” to dash back to my dorm to pick up stevia packets for a coffee before epic poetry(going to class without a coffee would be dangerous). Unfortunately, as New Englanders know, the weather was awful in the afternoon and my plans to grab something at Whole Foods were no more. I headed back to my dorm, at which point I was struck with a Jimmy Neutron brain blast.

Pumpkin Oatmeal With Butter Toffee Peanut Butter And Shortcut Cream Cheese Frosting

I loved this recipe so much, I had to post it immediately. That is seriously going to change the way I eat anything carby(probably not for the better but oh well). Oprah had some awesome guests on, including Sugarland, all singing Christmas songs! It was pretty awesome–I wish I’d known to tivo it. Afterwards I had to get out even if it was raining. Naturally I chose the bookstore.

I realized I forgot all my cold-weather clothes at home, as well as an umbrella and q-tips. Again, where was my head? After perusing I couldn’t find any good coats, and the umbrellas were a bit much(and I completely forgot about the q-tips :-() so I left empty handed. I was still feeling a bit snackish, though, so I dug up this bar back at the dorm.

Lemon Ginger Gnu Bar

Wowza! I think this bar had the most flavor out of any of their bars, and I really really liked it. The lemon and ginger were both loud and it made a fun study snack. While doing some work before dinner, I realized I hadn’t heard from my friend if we were doing dinner. That’s because I forgot to turn my phone on in the morning and it’d been off all day… wtf. After getting some texts and finding out I was too behind for the rest of the world, I ended up grabbing something and eating in.

Vegan Roasted Vegetables, Sweet Potato, Wildwood Teryaki Tofu

Do you see the sun? It needed to come out at some point. Before I dug into this, I realized, I took my only fork home before break and forgot to bring it back. What’s wrong with me? Chopsticks and my baby spoon it was. Unfortunately, the flavors were not nearly as sunny; this was one of those meals that just felt like a waste after eating it(except the sweet potato, which would take a lot to feel like a waste). I wish this tofu had half the flavors on the ingredient list but in the end it tasted much like their savory flavor and wasn’t teryaki at all. As for the veggies, I tried to ignore the massive amounts of olive oil, but I had to stop 3/4ths the way through and throw out the rest. I don’t mind healthy fats, but I’m not a big fan of olive oil :-/ Nuts, peanut butter, avocado–all good. But this was too much to an absurd amount.

The night just went downhill from there. Heroes was OK but nothing to draw my attention, and my stomach just felt off, which I’m going to go ahead and blame on the vegetables. I did some light reading but realized I was tired. Could I go to bed at 9 and be asleep at 10? Was that allowed? Why the hell not, so I shut down my computer early, and figured out what to have right before sleeping.

 

2% Greek Yogurt With Strawberry Jam And Strawberry White Chocolate

Well the night wasn’t a complete bust; I removed 1oz plain and replaced it with 1oz full fat yogurt to give the base a 2% taste. Then I swirled in strawberry jam(technically “conserve”) and topped with a shaved Divine bar and some more jam. Just what I need before going to be–sugar. Midway through this I realized I forgot to brush my teeth, and so went to the bathroom to do that. In the 3 minutes I was in there, my roommate must have came home and grabbed something, locking the door and leaving. I was locked out in my pajamas, glasses, barefoot with a toothbrush–glorious. I freaked out for a minute and tried running outside to find him but no luck. Thankfully, one of the RC’s on the other side of the dorm was home and called campus services on my behalf. She also lent me slippers to wear while I waited outside(in 40 degree weather) for the campus security to show up. By the time I got in my room, i completely missed Big Bang Theory and was quite livid. The only thing I could do from wanting to tell someone off was eat this.

I’m not sure how well that worked, but heating it a little extra and just holding it in my hands for warmth made me happy. I totally didn’t get to bed early like I had planned, and the entire night felt like a waste. I maybe got 20-30 minutes more of sleep than normal–maybe. When I woke up I just needed to run it out, so I grabbed this and just left:

 

Amazing Grass Berry Energy Bar

I swear I always run farther than planned when I have an Amazing Grass bar. Stock up while they’re still on sale! I was first thinking 8, then pushed it to 10, then settled at 12. 3 days in a row? I think that’s a new favorite distance. My time was a little slower(1:41:11) but not bad. I was very pleased that my room wasn’t locked when I came back this time, and I was able to get in and make a quickie breakfast.

 

Pumpkin Oatmeal With Smart Balance And Maple Syrup, Plain Chobani With Blueberry Jam And A Double Chocolate Pillow

Is there anything better than opening up a new jar of PB? I bought this Sart Balance with agave to replace the one I had with molasses–it’s just better! And perfect on some salty oats with maple syrup. And the yogurt–yum! I love the combination of chocolate and blueberry but it’s so hard to find in foods unless I make it myself. The pillow cookie made a perfect, rich cocoa topping.

How about a question of the day, shall we? Tell me either your worst story of being locked out(fortunately this hasn’t happened too me more than 2 or 3 times in my life) or your most annoying roommate story(I realize my roommate could have been a lot worse so now I want to hear about those who were). The Swing Of Things

Good morning! In case you were travelling over the weekend, there was a new recipe dreamed up on Black Friday, a review of Clif bars, a day that had me blushing beet red, and a 2nd, meatless Thanksgiving.

After that awesome lunch, I needed time to digest on the couch with Montana, and then got to work on my next project.

Christmas Tree

The Christmas tree. After chopping it down yesterday and leaving it in the cold overnight, we finally brought it in. Traditionally, I do the lights and the cranberries while my mom does the ornaments afterwards; since I was moving back to my dorm I needed to do this snappily. I was happy at the end 🙂 I love the lights on a Christmas tree. I think the ornaments are always nice and personal but it’s just not a tree to me if it doesn’t light up.

Afterwards we got to packing up. I dreaded this. It always feels like I have more going back than coming home, and this time I knew I did because of all the leftovers and extra clothes. Ugh. Thankfully with enough helping hands in the house this wasn’t too bad and shaped up pretty quick.

I think it was a backpack, 3 bags of food, 2 of laundry, 2 of random machinery, and a stevia plant. Because, really, how could I live without all of that? We swung by my grandmother’s apartment to pick her up because she likes to come “just for the ride”. Wouldn’t it be nice to have time to go for a ride just because you have nothing else to do? 60 more years and I’ll be there.

Of course before hitting the highway we wento McDonald’s for some decaf and I broke out one of these cookies. I think it’s always the case that things grow on me after a few days, because 4 days later and I’m now becoming obsessed with them. Seriously, just smelling the cocoa–bliss. On the way down we stopped at Target looking for a movie. Alas, no luck 😦 But underwear was on sale and that’s close enough to grab, right?

Moving back in was actually quite quick and painless with enough helping hands(again). The rug looks awesome since my mom brought down her vacuum to clean it up(thanks!). I definitely lost track of time in all of this and realized I was hungry. A little cookie is not a substantial afternoon snack, but you know what is?

Ice cream. I’m surprised this has survived the common freezer for so long, but yesterday I decided it was time to polish it off(only about 1 serving left anyway). I love the tang of the balsamic vinegar in this. Something tells me adding balsamic vinegar, even an organic one, to strawberry chobani wouldn’t work the same. When all the groceries were away I enjoyed staring at a full fridge.

Really? Is there anything more blissful? I’m surprised I managed to cram it all in there; it looked like it might not make it and I’m glad I left some tofu at home for another weekend. I also found this which I snuck into my bag:

The Killer Angels

I don’t really “pleasure read”, and if I had time to, I’d probably choose a book I haven’t read, so I’m not sure why I brought this. But I do love and recommend this book for anyone wanting to read a psuedo-historic novel. I did a huge paper on it and the battle of Gettysburg in 11th grade. As you might know, I’m a Classics major, but besides that American history 1640-1865 is my other area of interest. There’s a movie, Gettysburg, based on this book I have yet to see but I can’t wait to find it some day.

Dinner started off a little disgusting; I went to get one of my sweet potatoes and found it covered in mold–yuck! That’s actually never happened with the food I keep under my bed but I guess there’s a first for everything. Instead, I had to improvise.

Broccoli, Turkey Breast, Cinnamon Raisin English Muffin With Lightlife Breakfast Sausages And Maple Syrup

You know how sometimes your eyes are bigger than your stomach? Yeah, story of my life day. First there was being stuffed from a stuffed tofurkey and acorn squash, and then there was this. The turkey wasn’t anything special, I just wanted to eat it up before it got moldy like a sweet potato. The english muffin with sausage was the real money maker here. Does anybody else remember McGriddles from McDonalds? That’s EXACTLY What this was like, except with infinitesimally less trans fat. Oh my God, so good. Rest assured it will be made again. Unfortunately, there was one casualty during dinner.

 

Broken Amazing Grass Bottle

 

My Amazing Grass bottle 😦 I dropped it on the floor while it was full and water went pretty much everywhere–fun. After cleaning it up I went to the bathroom and tried refilling it, wondering why it kept being empty. Smart one, Evan. I think they carry these at Whole Foods? That’s what I’m hoping at least. After getting ahead(ahead! not catching up!) on work I made a snack and settled in for A Dog Named Christmas.

 

Peanut Butter Soy Yogurt With Fig Jam And Peanut Butter Chips

 

I don’t expect much from cheesy, holiday, made-for-TV movies, but this one was even below expectations. I expect them to suck, but to also be cutesy, and the child acting in this was not cutesy. This snack also did not disappoint even though I was iffy on the flavor combo. I think I forgot to sweeten the base but thankfully I bought a Vanilla flavor. I completely forgot I even had fig preserves but they were still just as good. And the pb cheeps were nice and sweet, nothing at all like real peanut butter and yet just as magical 🙂

After I’d put up with bad child acting for an hour, it was time for a new Brothers & Sisters. Last weeks episode was not on because Adam Lambert needed to whore it up at the AMA’s, but this week there were supposed to be great plot twists and secret revealings–it did not disappoint. Midway, I snacked on this:

 

English Muffin With Pumpkin Cream Cheese And Honey Maple Peanut Butter Topped With Me And Goji Granola

2 english muffins in one day? I was on a roll. I liked the crunch from the granola. And the gojis I’m sure were some decent brain food. I also love “rediscovering” peanut butters I forget about. Brothers & Sisters I thought was awesome–can’t wait until the wedding(or will there even be one?) next week.

I was exhausted so I knew I wanted shut eye but for some reason, as tired as I was, I wasn’t getting to sleep. I don’t know how much I slept overall or how many times I woke up/had weird dreams. This was one harsh “welcome back” to the swing of things. When I woke up, though, I was ready to meet my old friend–the gym. I made a quickie snack.

Kashi Strawberry Flax Waffle With Banana Peanut Butter

Normally I like bars that I can take on the treadmill but for some reason this was what appealed to me best. When I got there, it was packed for 6:50am(read: 3 other people). But then it quited down and the regulars started showing up. I didn’t concern myself too much with pace or anything; I was plenty happy to be back and watching the Today Show(does anybody care about Tiger Woods’ car crash at this point? really?). In the end I did 12 miles in 1:38:59. That’s almost exactly like yesterday, which is good because I tend to be slower inside than out. When I got back, I relearned how to make a dormroom breakfast.

Pumpkin Oatmeal With Pepita Butter And Maple Frosting, Eggnog Yogurt

This microwave just ain’t the same as the one back home. For the oats I used Caitlin’s pancake frosting recipe with a little vanilla stevia. I think my cooking skills were on vacation and are just getting back, too, because everything was underseasoned/sweetened. Afterwards, I added more stevia and cinnamon to the yogurt and some vanilla sugar and salt atop the oats and that perked things up.

And so, clearly I’m relearning dorm life after a week of bliss. I suppose with finals and papers coming up I won’t even notice the time between now and Christmas vacation, right? Now if you’ll excuse me, it’s cyber Monday, and as dirty as that sounds I have some deals to catch.

Fried Food Makes You Feel Better

I’m pretty sure that title is the last thing people who eat around me would expect me saying but–let’s face it–it’s true; and there ain’t nothing wrong with food fried in good oils in moderation 😉 Wait, where was I? Oh yes, yesterday morning was filled by a light-hearted class in which 3 people ditched for Thanksgiving were mysteriously sick. 3 might not sound like a lot for a college class, but you notice it in the Classics. I was so relieved when I got out I wanted to jump for joy’ instead, I kicked it into gear to get back to my dorm so I could pack and go. I basically combed the room, thinking of everything I could possibly need for 5 days and throwing it somewhere else. Around 1 I realized I was hungry. I wanted a repeat of yesterday’s amazing spicy oats, but I needed something faster and portable so I racked my brain for a veggie dish.

Ok, this was still basically my breakfast, just with oats metamorphosed into broccoli. I just could not get enough of The Heat Is On! The stewed tomatoes were dining hall fare and I wish I could have thought of something more intricate to do with them but I did not have the chance. It game me an opportunity, though, to sample and review the One Lucky Duck Rosemary Quackers. They were not exactly what I was expecting/hoping for, but it was fun to try something raw. I think I’ll be sticking with baked chips from now on, though(and, yes, the occasional fried :-)) Well this is what things looked like when my dad showed up:

Packed And Ready To Go

That’s 2 bags of food, an extra bag of clothes/toiletries, a backpack, laundry, a coffee maker, and a stevia plant. I suppose 5 days is a while and deserves all this, right?(Back me up here). We swung by the mail room to pick up some last minute arrivals, and hit the open road. I got a package from Gnu Foods and I couldn’t wait to dig in, so I didn’t.

Um, yum?! This hit my chocolate tooth. And the nutrition was astounding. I loved reading the company info they sent in the car(because I was doing that instead of work). They’ve created their own blend of grains and seeds to give each bar 12 grams of fiber! When I read that, I took it slow and drank a ton of water–smart move. I can’t wait to try the other flavors now, though somebody remind me NEVER to eat this pre-run(for obvious reasons).

Before we got home, we swung by Framingham to hit up Whole Foods and Trader Joe’s. It’s really fun when these are right next to each other. I tried to stick with just buying essentials/sales and coupon items/what we still needed for Thanksgiving, because I know we’re going to have a lot of leftovers pretty soon. In the end, I think I stuck to my mission mostly.

Groceries

The big unmarked bag is about 2lbs of steel cut oats, like I go through anything else that much. The lemon bars were a new Trader Joe’s product for Turkey Day as is the TruWhip(can’t wait to try this!). Of course, the one thing that made me ditch my entire plan of items was my vegan whole wheat cinnamon raisin rolls. But seriously, how often do you find these? I went with the grab and run method… The fiber bar held me over really well but by the time we got home and I completely unpacked it was 5 and I was famished. I went for a meal rather than a snack.

Amy's Shepherd's Pie With Colby Jack Cheese

An Amy’s meal, that is. I think I’d been wanting to try this for a few months; last weekend I bought it with a coupon on the cheap, and I broke it out yesterday. I was not going to wait 45 minutes for the oven, so instead I nuked it for 3 minutes and topped it with 1 ounce of colby jack cheese which I’m pretty sure would have had a “Don’t touch. For Thanksgiving” note on it were my mom more careful. The meal was okay, but I don’t think it ever would have held me over on its own as a dinner or anything. I supplemented this with another snack.

2 apples in 2 days? I think I’m setting a personal record. A very sad and low personal record. Thankfully, unlike the last one, this tasted juicy and fresh. Considering I picked it 3 weekends ago, I’m now wondering how old the apples from the dining hall must be… I caught up on Top Chef and The Next Iron Chef–you know, my chef shows. As a family, we all were slackers on dinner, so when the time came and passed and no one was doing anything it was a little frustrating. I felt hanger(hunger –> anger) coming on, so I went for something I knew would make me a happy boy again.

WildWood Original Veggie Burger, Broccoli With Soyaki Sauce

I’d never actually tried this veggie burger before, but I was 99% sure I’d like it because it’s fried. I learned in 11th grade bio that humans crave fat because of our ancient ancestors who got the opportunity to eat so little that nature is to pile it in and store it when we come across it. Why fight nature, especially when it’s healthy fat and portioned, right? Needless to say, it hit the spot, and I think I’m making a permanent place in my fridge for those little fried wonders.

I spent quite literally the rest of my night tying up loose ends and doing other work on the computer. It wasn’t the dream way to kick off vacation but C’est la vie. It gave me a great chance to watch The Biggest Loser and have some blogger faves as dessert:

 

Oikos In A Cherry Butter Jar With Dried Cherries, Cherry Dark Chocolate, And Vanilla Sugar

Can we fry this somehow? Paula? Scratch that. I think jam jars are so much easier to empty out than nut butters. Fortunately, both are good options. I just love the spoonfuls of whole jam towards the end, which are bites of tart heaven. I’m really enjoying all you new commentors who might have read this for a while but just got to saying something and getting to find new blogs that way. Keep it coming! Afterwards I just had to break into these.

 

Vegan Whole Wheat Cinnamon Raisin Roll

Food like this are what rededicate myself to an all-natural diet; I challenge any mass-bakery product to rival this. And it’s vegan to boot! It almost makes me think I could be vegan… and then I remember yogurt, cream cheese, flavored nut butter, fish, meat, etc. It wouldn’t work.  But is anything better than peeling back layers of yeasty dough? I think not. Maybe… Paula, can we fry this? I wish I were kidding here.

 

Peanut Butter Gnu Bar With Mighty Maple

I was a little worried eating this right before bed. 12g of fiber? That’s dangerous. But everything worked out fine, and this was a great peanut butter treat. This bar probably would have been a little bland on its own but with an extra dose of peanut butter it was the perfect piece of toast. I find it funny that most of America has trouble getting in enough fiber when I got 100% just between 2 bars both of which felt like “desserts”. I think Americans need to learn to love fiber more.

I did was not feeling the pressure to get up and run this morning with no warm gym and treadmill to entice me. I slept in almost until 9(that’s really late for me) and instead spent way too long deciding on how to make a bowl of oatmeal. I am very happy with the conclusion of that thinking.

 

Pumpkin Oatmeal With Smart Balance And Mocha Milk Chocolate Frosting

Holy yum. Let me walk you through this one. I did a standard pumpkin base with 1 1/2 tablespoons Smart Balance Agave Sweetened. I’ve decided I really like this version better than the molasses sweetened; I don’t know why but the flavor “works” better. For the frosting, I melted a Newman’s Own Organic Mocha Milk Chocolate square and then mixed that with 2oz sweetened Oikos. Ahhhhhmazing. The milk chocolate with the peanut butter comes out just like my childhood favorite candy.

I might head out for 6.7 miles in a bit. Or I might not run at all today. While I’d enjoy it, there’s plenty I have to do around here that would keep me occupied. I might just have to make an identical bowl of this oatmeal.

I Go Back

Normally, I hate leaving my room if it’s not perfect. Even if that just means one dish is unclean. What did it look like yesterday?

Messy Bed

Beautiful. But let me explain. I get out of class at 2:50 and my dad had planned to pick me up at 3. I was using the “throw it on the bed as you remember it so you can grab and go later” method. Surprisingly, I think it worked, because it’s been a day and I can’t think of anything I forgot. After my first hour of class I grabbed a bit of lunch and supplemented it with a bit more of what I was feeling.

Broccoli With Cream Cheese

I think the backlash of vegan Thursday was wanting dairy products wherever I could put them(i.e. on broccoli). By the way, that was delicious and something I’ll do more often. And the mushrooms from the dining hall were soooo good. I’m not even sure what they were roasted in but there was tons of rosemary. This really filled me up for my next two classes, and when I got out at 2:50 things when just as planned. We piled everything up in bags and hit the road. I grabbed a nutritious pick me up.

Let’s pretend this has nutrients even though it completely doesn’t and doesn’t even have caffeine. On the way home, I did something I haven’t done in forever: nap in the car. I tried working but napping one out. I usually can’t/don’t and am always afraid my contacts will disappear somewhere if I sleep with the but it felt so good I couldn’t care less. That also made the trip that much shorter. When I got home I realized we really didn’t have much of the food I’d like, so I grabbed a snack and we went off to Hannafords.

Blueberry Crisp Clif Bar

This was the last of the Clif bars I recieved to review and i’m very happy that it ended things on a good note. I was a little skeptical about how this flavor would be, but I think the blueberry flavor with the plethora of spices(which I take to be the “crisp” part) worked really well. A little bit heavy on the sugar but I probably needed that at that point. We just picked up some Greek yogurt and pumpkin(surprise surprise) because we really didn’t have tie to do more damage.

The reason I came home yesterday was because my elementary school principal was retiring and they were having a banquet. Not many people get to know their elementary school principal and facutly well but I went to a very small school for 7 years where it was easy to become like family with everyone. My graduating class in 6th grade was 4 kids including me, and my full class(6th plus 5th) was 7. Here’s the class photo that was on the wall last night:

I’m the little chubby one on the bottom left. I guess I’ve always liked food 🙂 But I like the better food now(i.e. not tacos from a box). It was a ton of fun to get to see all my teachers. Because it’s so small a school, most of the faculty’s the same; my kindergarten teacher from 13-14 years ago still teaches kindergarten and was as kind as ever. There were just a few speeches, the best given by the man himself.

Did I mention he’s retiring at 87?! We actually don’t know his age; it’s been debated that might be 89, but it’s pretty high up there. Amazingly, he also has most of his mind with him. Most of the night was fun and light-hearted but it was a little emotional when he mentioned how he missed my grandfather; in the time I was here they became good friends and he even surprisingly showed up to his funeral 4 years after I left the school. There was even someone from my old class there.

Andrew(the tallest one who dwarfs us all) was pretty much my best friend from kindergarten to 5th grade. We basically all sat and chatted about the scandelous moments from the past, like when so and so broke a window or someone knocked over the school’s sound system. I was hoping I could make a dinner out of the Whole Foods energy bar I packed and what there was but it really wasn’t the case; thankfully, Whole Foods is pretty close to the school so we took a short trip there.

Yum! I can’t believe Thanksgiving is less than a week away, at which time I’ll have about 10 times more that stuffing. It’s soooooooo good. And the soup was delicious, too. The ginger gave a strong kick. There was cake:

Which I avoided because I figured it was box mixed and the frosting was from a tub. There was apple crisp:

It wasn’t very good and probably because it had twice as much flour and butter as it should have but I figured it had a good chance at being all-natural none the less. This made me appreciate how amazing my vegan apple crisp is for something relatively healthy. It was a fun night and such a trip to go back and think “this is where I learned to read”. I hope that I retire long before 87. I even got approached by a 50-60 year old man who saw my sweatshirt and was an alumnus of Brown. Apparently, his kids went to my school in the 80’s. I honestly don’t think I’ve met an alumni of Brown who’s had anything bad to say about the school. I’m so happy to be part of that community. When I got home I was a bit famished from the lack of eats, so I made some comforting oatmeal.

I’ll pretend like this wasn’t almost exactly my breakfast except with chocolate butter toffee instead of butter toffee peanut butter. Nope. Not me 🙂 I was basically away from my computer since noon so there was tons of catching up to do but only so much that could happen before my self-imposed bed time(maybe I am 87 already?). After I logged off I was still hungry so had some random snacklings.

I warned you it would be random. I forgot how much I love those cookies until I heard Tina and Melissa mention they score a NuVal score of 41 when the average for a cookie is 3! I’ll eat to that 😉 The chocolate square was good, although I was looking for my favorite Mocha Milk Chocolate. Apparently this family likes their chocolate too much for it to stick around while I’m gone. And the vegetables were eaten in bed when I realized I was still pretty hungry. I forgot that I hated raw broccoli, so left half the bag untouched. Talk about going back, I found The Golden Girls on The Hallmark channel to fall asleep to. Things like that remind me of being sick when I went to elementary school and staying with my grandparents and watching their daytime tv. Such great memories 🙂

This morning I slept in until a little after 8. Glorious. After grinding some beans and making a pot, I mostly meandered around the house until I got hungry an hour later.

Pumpkin Oats With Maple Yogurt Frosting And Mighty Maple, Snickerdoodle Greek Yogurt

I couldn’t decide what I wanted so I went with the obligatory pumpkin oats. Still delicious 🙂 The snickerdoodle yogurt was just plain with cinnamon and vanilla stevia, and then topped with 5g of turbinado brown sugar. The fun thing about buying plain in my mind is you can do with it whatever you want, and 5g of raw sugar compared to the pre-flavored ones is a smart move.

This morning I’d love to get out and run 5-7 miles. It doesn’t even look that bad out. However, at the moment, I’m catching up on the TONS of tivoed shows, and I kind of haven’t started homework even though it’s a pretty light weekend. You can be assured that, since I’m home, there’ll be baking and recipes 🙂 We just need to hit Whole Foods and Price Chopper today to grab the ingredients and we’re good to go. Yikes, that’s making running seem less probable. Have a great weekend!

I’m afraid of what I’m going to do when this is out of season. I asked my mom to buy me this from Hannaford since it’s the only place I’ve seen it and it is so good. I don’t remember the last time I had “real eggnog” and I don’t care after this. It tastes just fine in all its vegan-self 🙂

Pumpkin Bread Hull With Chocolate Chips

I’m afraid of losing recipes, which is why I’m glad to have a blog to post them on.

Moist Moist Pumpkin Bread

Ingredients:

7.5oz canned pumpkin

2 eggs

1/2 cup cinnamon applesauce

1/3 cup water

1 cup brown or turbinado sugar

1 1/2 cups whole wheat flour

1 1/2 teaspoons baking soda

1 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon pumpkin pie spice

1/4 teaspoon ginger

Pumpkin Bread Loaf

Preheat your oven to 350 degrees and prepare a 9×5 loaf pan. In a large bowl, mix pumpkin puree, eggs, applesauce, water, and sugar. In another bowl, sift together the flour, baking soda, salt, and spices. When dry are evenly mixed, dump into the wet while stirring. Stir only until no more dry ingredients can be seen, but take care not to over mix. Pour batter into pans and put in oven until a knife in the center comes out barely wettened, or about 50 minutes. Let sit in pans for 10 minutes and then remove.

I’m afraid of how many miles we’re all piling on together. Guys(and gals), we’re rocking it. These numbers people are posting are incredible. I ended up for a 6.7 mile run around my neighborhood. One thing I don’t like about not running first thing is that my energy levels feel so much lower. I felt like I could’ve stopped at any point but I really wanted to finish what I set out to do.

I’m afraid of red meat, but not bison. At much lower cholesterol and saturated fat levels with all the same flavor, what’s not to love? I’m clearly never afraid to eat my meat slightly undercooked. And the sweet potato fries were all my mom’s idea! She knows what her lil’ blogger wants when he comes home 🙂

Giovanni's White Chocolate With Cranberry Gelato

I’m afraid that if I didn’t eat this while walking out the door to go back to my dorm, I might have had the whole pint. This stuff rocked. It tasted like straight up white chocolate. It’s made by a local company based in Newton, MA in small batches. This was pure decadence, and I love that the ingredients were just milk, cream, white chocolate, cranberries, and emulsifier.

I’m afraid that this semester has been a bit of a waste of money food-wise. I’m on the best food plan option which gives me more dining hall visits than I know what to do with, and honestly, I love buying and making my own food; it’s one of those things that makes me feel valuable and responsible. Despite that fear, we stopped at Whole Foods and Eastside Market on the way back.

Groceries

I’m afraid that I’m going to get arrested, because at the prices I got some of this stuff for it was practically a steal. With sales and store coupon, the Oikos normally 2.19 was .25 and the chocolate bar usually 3.00 was 1.25. And a jar of ginger preserves was only 2.69! We thought it was a misprint since that’s cheaper than most of the store brand fruit jams, but it was correct.

I’m afraid to ask what happened Saturday night when I wasn’t in my room. My roommate left a note saying he had people over and someone dropped something that went behind my bed so they had to move a few things to get to it and tidy up after themselves. That’s all well and good, but, uhh, why was my comforter made on my bed upside down? Do I want to know?

I’m afraid I’m a little confused what season it is between pumpkin bread and nog Greek yogurt. Is it Christmas yet? Or am I supposed to halt for Thanksgiving? And are we officially done with Halloween or can I bust a spooky s’mores out from time to time? Someone please clarify.

I’m afraid of losing the remarkable friends I made in high school. Thankfully, that doesn’t look like it’s happening anytime soon, because they were there for me when I needed to do some Facebook ranting about my next semester schedule which took a backwards turn after thing started looking too good to be true.

I’m afraid of spilling coffee grounds everywhere in my dorm room, so I went out for coffee. There was a heaping amount of cinnamon involved. I don’t actually get the change of flavor this supposedly has on coffee, but cinnamon’s supposedly good for us and it’s free so I went ahead and shaked liberally.

Flamegrilled Vegan Gardenburger With TJ Ketchup, Pumpkin Oats With Mighty Maple And Tempeh Bacon

And I’m afraid of sharing how random my dinner was last night, but I’m a food blogger and I’d be an awful one to deprive you of this laugh. I was feeling quite lethargic(vocab word!) and decided rather than forcing a “real” dinner on myself to just eat what I could convince myself into. Last night, that was pumpkin oatmeal(a vegetable and a grain) with a gardenburger, tempeh bacon, and mighty maple(3 delicious and vegan sources of protein). See? It was well rounded in the end.

I’m afraid the people on my floor must have thought “Who is that nut blaring and belting Sugarland?”

I’m afraid that I give off the impression that all I eat is yogurt and chocolate. Except that’s probably the truth. They just work so well together in my opinion, how could you not love it? This new bar, even though it supposedly had chai and ginger in it, didn’t taste very special. Maybe I need to have it again.

I’m afraid to admit how little productivity got accomplished yesterday.

I’m afraid that my eats were a bit stress affected last night, because they sure were off. First I decided that this Oikos was taking up too much space in the fridge, so it needed to be eaten with a milk chocolate Newman’s Own Organic peanut butter cup.

Sweet Vermont Toast With Cookie Dough Peanut Butter

 

I’m afraid of running out of hard to find peanut butters, but that doesn’t stop me from eating them. The only store I know that sells this is Roche Bros. for an arm and a leg but it’s so good I’ll have to buy another when it’s gone.

I’m afraid Brothers And Sisters is going to get screwed by the Emmy’s like the best shows usually do. But last night convinced me yet again it’s one of the best dramas on TV. Please tell me someone else saw the head shaving seen with Kitty; that was just so moving.

I’m afraid of falling asleep in class today because I had horrible insomnia last night. Despite trying to go to bed at 11, I don’t think I fell asleep until 1. Sugar was probably to blame. I had a few TJ mini peanut butter cups at the end of Brothers And Sisters as well, and no oatmeal last night(besides dinner) to slow down those quick carbs.

Clif Peanut Butter And Jelly Mojo Dipped

 

I’m afraid of having to go to the bathroom while running at the gym because I feel like getting off the treadmill makes everything less of an accomplishment. Thankfully, that didn’t happen today. In fact, I set a new distance PR of 14 miles in 1:55:22!! I truly felt I needed to have a kick-butt workout to sweat out anything negative even though I only had 5 hours of sleep. The Mojo above was eaten around mile 10.

I’m afraid people think I’m crazy for watching cartoon network at 7am. But I just could not care less about whatever’s on CNN, and I’m not going to slog on a treadmill for 2 hours watching something I have no interest in because it’s the adult thing to watch.

Kashi Strawberry Flax Waffles With Strawberry Jam And Vanilla Almond Butter, Pumpkin Peanut Maple Soy Yogurt With Chocolate Chips

 

I’m afraid I might have lost a pound or so after these past few weeks/month of higher mileage, so feel free to kick me in the butt if I’m slacking on my eats, k? You won’t find that this morning. The Kashi waffles had on it vanilla almond butter by Naturally Nutty and Wild Oats strawberry jam(great combo). I’m not a huge fan of this new brand soy yogurt I bought last week because it’s so thin and doesn’t have much of a funky flavor at all, but it thickened nicely with peanut flour and pumpkin, topped with maple syrup and chocolate chips.

I’m afraid of skipping classes, even though that’s supposedly “OK” in college. If I weren’t afraid, I’d probably stay in my dorm and work on my essays today, but I’ll probably wind up going to all 3.
