Raw Foods And Fried Foods

If you asked me what I loved to eat, I’d probably answer fried foods and raw foods. At least the one balances out the other, right? The easiest ways I find to get raw foods in is a fresh salad:

Let’s call this the “garbage can” salad because I threw whatever I wanted to get rid of on it. And it worked! The base was spinach tossed with maple syrup and walnut oil. In the mix was 1/2 an avocado, a Next Generation Dairy cheddar cheese stick, and leftover maple tofu, topped with Tierra Farm‘s maple glazed nuts. I made this to-go to eat in class like always on Tuesdays but it didn’t make it that far 8-| I just couldn’t resist; and it was so tasty! I went with my hunger and ate it and went off to class.

Mid-afternoon I snacked on an almond protein plus Boomi Bar. I’ve always wanted to make my own bar like this: throw it all together and hope it works. I like that this was 3 simple ingredients: almonds, honey, and whey protein isolate. I didn’t care much for protein isolate, though(I rarely do). And the flavor wasn’t quite as good as Perfect Foods Bars(reviewed here).

I had an apple after taking another Greek language test. If you remember, I made a small fortune off of taking them earlier in the semester, and I’m hoping the same for this one. Although since I’m competing against juniors and seniors who know much more than me, I’m wary.

I also found time to “bake” raw brownies this afternoon, except I used a different recipe with a few new, secret ingredients. I’m not sure how they’ll be once they set. And the added ingredients definitely added a ton of fat. The batter was tasty, at least.

My favorite thing about vegan desserts is that you can always eat the batter. I think I had a little too much of this. Blech. But it was good! Can’t wait to see how these come out.

For dinner I gave my first attempt at frying! I filled my pan with a good coating of sesame oil and laid down some tofu strip. I let them brown for about 3 minutes on each side.

And then for my Asian-inspired dinner. I probably could have let the tofu go for longer; it certainly didn’t taste like Whole Foods. But I was really proud of this! I feel like a whole new culinary style has opened up to me, and I can start to use a Paula Dean cookbook 😉 Is a deep fryer in store for me over the Summer? Probably not. I’ll let Whole Foods handle that.

Do you/Did you ever walk around the neighborhood a lot? Usually, after dinner(especially a good, big one), we would walk around the neighborhood for fun and for health. I feel like when the weather’s nice everyone’s out around where I live. I can’t wait for that during the Summer again! And I definitely feel like I could use a walk now. It might not be as good without the neighborhood, but I’ll find somewhere.

The Banana Soft Serve Diet

I loved learning from this post that American Chop Suey is primarily a New England meal; I never knew that! It sounds like you either grew up eating this 3 times a week(guilty and proud of it ;-)) or have never tried it. Really, it’s just pasta(usually elbow macaroni) with ground beef, green pepper, onions, tomato sauce, and some seasonings, but it’s one of those dishes that is 10 times better than the sum of its parts; you would not believe the flavor it can have.

Another thing I cannot believe the flavor of? Fried Rice. I admit I’ve had this from a restaurant maybe once in my life, but that didn’t stop me from wanting to make it with my leftover organic brown rice. Of course, I had no idea what I was doing, but that’s never stopped me before 😉 I heated maybe a tablespoon of earth balance in a pan, then added the rice and tamari until it was mostly absorbed. Then I added steamed broccoli florets. I couldn’t figure out if eggs were traditionally added as a necessary ingredient, or a protein source(still unclear on this), so I threw in 1 egg white and cooked until that was well set.

1 egg white was not my protein source so I had the rest of my Lightlife buffalo wings, too. I realize the flavors don’t work here at all; I could have thrown in some tofu. But damn if those wings ain’t delicious. Now if only they weren’t an arm and a leg 😦 The fried rice came out delicious! I mean, anything with added fat and sodium is never bad, is it? I think next time I’ll add a full egg or two for some yolk-flavor(Oh, and there will be a next time). Along with lunch I was watching television and guzzling down a new-to-me beverage.

This Steaz was a lot better than the other two I’ve tried. Instead of just tasting like flavored green tea, this actually tasted like raspberry. I don’t think I’d buy it over Zevia again, though, except for that we got 2 4-packs for $2.66; that was such a good sale at Whole Foods I think I’ll be dreaming about it.

Did I mention it was still snowing after Days? In fact, it snowed all day, even though it wasn’t supposed to at all. Weird. It was a nice snowfall to watch, though–very light and fluffy. For whatever reason my grandmother dropped by and proceeded to try to convince me it was “warm” out. Warm? Really? From what I’ve learned, it doesn’t snow when it’s “warm”. Then again, I wasn’t about to argue with an 81 year old(now, if she were 82, that would have been a different story).

The one thing I did not like about lunch was that it did nothing for my hunger. It really is true what they say about Chinese food: You’re just hungry an hour later. I could have eaten my arm off, but instead I decided to have an early afternoon snack.

So much to say–where to start? Number #1: Anything put in a food processor with cocoa powder comes out good. It’s a fact. This was 6oz banana, 2 tablespoons cocoa powder, and some vanilla stevia, and it came out amazing. I was thinking of adding Xanthan Gum but was sooo happy I didn’t. Look how thick it was all its own! #2: As good as this was, it wasn’t a Frosty from Wendy’s, which I was craving. This would be more like a frosty if it had less chocolate, and some milk, and some ice, and came from Wendy’s. Yep. That’d make it more like a frosty. #3: Whereas my meal of fried rice and buffalo wings didn’t hold me over for an hour, this held me over 3 hours until dinner. Does that mean there’s some truth to the banana diet? I’m totally up for it, so long as that banana comes in soft serve form.

Among the things I did in the afternoon was play with my food processor, while it was out.

Among the package Tierra Farm sent me was these pistachio meats. Because I’m 99% more likely to eat seeds and nuts in their butter form, and didn’t have a pistachio butter, I set 1/2 an ounce aside for dinner and shoved the rest into the processor.

Nut and sed butters are, unfortunately, not the sexiest one at the party, but this was pretty bangin’. It was so easy to grind these, probably because Tierra Farm knows what they’re doing in roasting them unlike this nut. I can’t wait to put this over oatmeal. Pistachio and pumpkin? Sounds good to me. Speaking of being a nut…

Buffalo Chicken

I ate those buffalo chicken wings at lunch fully knowing I was making the real thing for dinner. Obsessed? Just a little. These were really simple. I cooked the chicken breasts fully. While those were working, I melted 2 tablespoons earth balance and franks red hot sauce in a pan until melted. When the breasts were done, I let them sit in the butter mixture for 5 minutes or so.

The chicken came out good and flavorful, but I don’t think the sauce was thick enough or took to it well; maybe add a tablespoon of flower next time? Still, it was an upgrade from what would have been all-white meat. It’s good to have some sort of fat on or with meat, and since I used earth balance it was trans-fat and cholesterol free 😀 I smeared goat cheese on my brussels, to change them up, and had 1/2 an ounce Tierra Farm organic salted pistachio meat to review. Umm, yum! Maybe I just forgot how good pistachios were, or maybe these were just that good, but I loved them! Nice and salty 🙂 I can’t wait to try my seed butter now!

I have to tell you: Tomorrow morning will not be pretty. Our big coffee pot died this morning 😦 It’s not so much a problem for me because I have my Keurig single cup brewer. The key words there are “my” and “single” 😉 And now I’m flipping between American Idol and The Biggest Loser right now. Why do we have to choose things like this? It’s not fair.

Excuse me if I have a little too much fun this post. I’ll start off with this ridiculousness:

Montana At The Computer

That would be Montana, at the house computer. Should I tell him I’m taking my chair back when I go back to school or would that just break his heart? Anyway, it’s a really good thing I’m not on weight watchers, because I don’t wan’t to know how many points this would be:

Chocolate Avocado Pudding With vanilla Almond Butter

Chocolate AND vanilla AND almond–too perfect. I think I just wanted an excuse to eat a big spoonful of this almond butter. Since there’s been a couple questions about this recipe, I’ll clear them up all at once and I’ve also updated the page with tips and nutrition info.

  • Yes, what you see me make and eat is 3oz like the recipe calls. It bulks up to 5oz thanks to the liquid, and even afterwards is very airy and volumnous.
  • You can use basically whatever liquid you’d like. I prefer So Delicious coconut milk kefir but here I just used unsweetened vanilla almond breeze.
  • Vanilla powder is not a necessity, either. Vanilla is traditionally put in chocolate desserts but can be omitted.
  • You don’t need a food processor. In fact, I hardly ever make this with a food processor. Cleaning that out at 9:30 at night is just not my idea of a good evening. I just use an oversized bowl and a fork, and then scoop it into this bowl.

Now you all have no excuse not to make this 😀

As if The Biggest Loser and American Idol competing didn’t suck, now we’re back to NBC vs. Grey’s Anatomy. Why can’t all the shows just get along? And we have Tivo, but becuse of the cable box it can only record or watch 1 thing at a time. Boo. I went with ABC and Grey’s because NBC is less of a pain to watch online. Because of the crossover event, I got suckered into watching Private Practice, too. If there’s one thing that’s universal about Grey’s and Private Practice it’s that they have great music soundtracks. Remember when The Fray broke out onto the scene? All Grey’s. Afterwards I got a killer craving for some killer cornbread:

BUT I’m one big ol’ creature of habit, and I like my oatmeal before bed. What’s a boy to do? Make a recipe, of course!

  • 15g oatbran
  • 15g whole grain cornmeal
  • 1 egg white
  • 1/2 a cup of water
  • pinch of salt
  • 1 teaspoon agave nectar

This was a-w-e-s-o-m-e. So great for a quick cornbread fix. At the same time, I realized it was missing something afterward: milk! If I made this again, I’d definitely swap out 1/2 or all the water for milk. Besides that, you must try this for a change from oatmeal.

This morning I lied in bed for 10 minutes awake not doing a damn thing–glorious. Then I got to work. For the 3rd day in a row, I did my core followed by 200 flights. I’ll repost the core today:

  • 40 push-ups
  • 70 side crunches, both sides
  • 100 crunches
  • 70 crunch pose-hold
  • 240 arm rotaries
  • 5 sets of 7 chair swings
  • 40 squats
  • 70 standing marches
  • 70 rower arms
  • 40 second rower’s pose hold
  • 100 sit-ups
  • 70 tricep dips
  • 100 air bike kicks

Followed by 200 flights of stairs, during which time I listened to my recently added playlist twice. On it right now are these songs

Jay Robb sent me some samples to try and review and this morning I decided to make HEAB’s protein ice cream. Eat this and look like that? Sure, I’ll do it!

I cannot express how big that bowl is or how much this made. It’s insane. I couldn’t eat more than half of it and shared with my dad; it’s just that voluminous. I don’t have time to make up a page for review right this moment, but I will say I liked this protein powder for several reasons and would pass it up for others and am giving it a 9/10. I LOVE that it uses stevia, which really makes it abotu the protein and not the sugar content. And it smells really vanilla-y. But the flavor is only so-so and there’s a strong whey aftertaste which I’ve never been a fan of in protein powders. Along side of this, I had my bowl of oatmeal.

Which looked completely ugly but tasted divine. Just bananas, cinnamon, and topped with NuttZo. No added sugar at all here and yet it was so sweet–perfect to start off the day. And now I’m wondering if I should grab something else before we leave for the doctors’ office, because really all that ice cream was mostly water and if I go pee while we’re waiting I’ll empty out the majority of my stomach, if that makes any sense whatsoever. And now I’m wishing I just went with greek yogurt like normal :-/ Boo. Oh well, maybe now I’ll start looking like Jay Robb? Here’s hoping.

This was the first flavor I tried, but I’m 98% sure I’m buying a big bag of those from the classy Targe when I’ve had them all.

I intended to make my vegan maple-apple morning cookies. Then I decided I didn’t want oats or apples in them. Then the flaxseed and wheat germ came out and an egg went in. Whoops. Then they magically poured themselves into lined cupcake tins and cooked for 16-18 minutes. Funny how that happens, isn’t it? I was drooling thinking about the maple cream cheese frosting or vegan maple buttercream frosting I could whip up(literally) for them, but after giving it thought I’m thinking these are going to hit the freezer and that would not work out.

The fries never really crisped up unfortunately. And the killer cornbread? Still killer.

But I like to eat 3oz of meat and be satisfied with that. But when I was still hungry and there was no fries, the chicken was way more appealing than leftover cornbread, and I figured a little extra of really good meat that I cooked myself wasn’t going to kill. Still had to have an apple after that, and now it’s sitting in me like a brick. Joy.

Whippin’ It

Alternate titles: A Fruity Morning, Freezing My Potassium Off, and I Said I Wouldn’t. All very descriptive, the last one as in “I said I wouldn’t go back for more vegan meatloaf last night.”

I had to. It was just too good. And, no, this wasn’t like I didn’t eat enough at dinner and needed a little more. I filled up on this at dinner(trust me), and this was me wanting this for dessert 2 hours later. I even thought about all the chocolate I could have instead. Nope. I wanted meat(sort of). This was probably a good choice to watch The Biggest Loser with. Did you watch it? I did, but honestly I don’t feel any connections with contestants when there are still so many. After that, I noticed a recipe on Facebook that was calling my name!

The link was to a NuttZo blog post about banana whip ice cream! It looked so good, I had to break out the food processor. I blended 4oz banana(about 1 big one) with 1/4 cup really pure vanilla frozen yogurt, and then topped it with some Goji Gourmet almond oat cookies and a spoonful of NuttZo. This was so good! The banana ice cream had such great flavor and texture, and the cookies and NuttZo really hit the spot. And the healthy sugar here didn’t even keep me up at all so that I was sleeping pretty 30 minutes later.

By the way, did anybody else catch the Jay Leno Show? It was perfect. First Kim Kardashian deep fried Oreos with Guy Fieri, then Jillian Michaels came out and traded insults with Jay. She admitted her fat food of choice was Cheetos as a child. i could not picture her ever eating a Cheeto. Anyway, this morning I woke up in time to say goodbye to everyone heading off to work. I decided I needed something that felt like dessert for breakfast, so banana whip it was!

This time I whipped the same amount of banana with 1/2 a container of plain Chobani and some NuNatruals vanilla stevia. The texture came out more like a smoothie so I added xanthan gum and refroze it. I feel like a mad scientist playing with that stuff 🙂 For oatmeal, we’re running low on pumpkin. W’ere not out, but dangerously close so that I want to save it for an oats emergency. Instead of break the little glass box that holds the last can of pumpkin, I made some plain oats and gave it a fruity frosting with my MojaMix granola that has dried persimmons and strawberries. Yum! It went great with the clean but earthy vanilla almond butter.

So far today, I’ve been very lazy(still in my PJ’s :-)). Morning TV has been eventful, though. First, Goji Gourmet was featured as Rachael Ray’s snack of the day! And it was the almond oat flavor I had last night–too funny. After that, on Regis and Kelly, a guest explained how you can use alternative natural sweeteners to cut sugar out of the American diet. Perfect! Except he said Fage yogurt was good for you “because it has only one sugar cube per serving”. Correction: Fage yogurt, and other plain yogurts, have no sugar cubes per serving. They have sugar, but it’s lactose which is completely natural in milk. Attacking that would be like attacking the sugar in apples. OK, I just had to get that out there.

Vets, Bacon, And Hazelnuts

I am in serious need of lazy-time after today. What I told you this morning was that we were bringing Montana to the vet. What I left out was that before then I was madly rushing to get some whole wheat pumpkin cinnamon roll dough rising.

If you remember, I tried this once before and it all wound up in the trash; I hate dealing with yeast dough but I loooove how it tastes. Overall I hate any batter that’s sticky or requires unprecise amounts such as “flour until just together”. Why did I decide to go for these anyway? Who knows. But once the dough was done we hopped in the car for Montana’s check-up. He was shaking like a leaf waiting in the room and my dad said his breath smelled bad so I thought it was only rational to give him this.

I like them and he does apparently, too. Not sure how his breath was after that but the vet wasn’t complaining. Things seemed exactly the same with him so we were out pretty quick and on to more errands. Because his vet is near a bigger, much larger Whole Foods. I thought I’d check if they had the chocolate bar I’ve been so desperately seeking since Christmas.

Success! It was 1 of 4 flavors they carried. Now I need to get creative of how to use it 🙂 After that it was my job to run into Market Basket to get vegetables. Like I’ve mentioned, we’re having company on New Years Eve and making them dinner, and Market Basket has the cheapest vegetables going. That store, however, is always full and a menace to work a shopping cart through. I think I bumped in to 2 people? Their fault. I ended up grabbing everything on the list and some fish for dinner. On the way home I was treated to a coffee.

I’ll take it 😉 When we got home it felt like I had 10 things suddenly on my plate: work more with the cinnamon rolls, make lunch, put away groceries. To make things more confusing, my grandmother had randomly drove over. 3 people in our kitchen is too much when 2 of them are just standing around. I started making up a meal, trying to feed a craving for fried chicken.

I heated up leftover cornish hen over the stove and then patted it with homemade pecan butter and whole foods whole wheat bread crumbs for some crunch. It really was nothing like fried chicken but it definitely fed a general “fat” craving. I also heated up the last of the leftover Thanksgiving stuffing and charred some broccoli on the stove. While I was munching on this, I squared the dough for the rolls and slathered it with apple butter and cinnamon. The recipe was supposed to make 12 but after cutting up half of the log into 6 I cut the other half into 4 because they looked a little dainty. Then they rose for 30 minutes and baked for 23.

I’m really impressed that I made it to the final product(let’s just say I was not as optimistic this morning when I started them). They felt a little tough. I think it’s either that they’re whole wheat, sat out for too long, or baked for too long. I’m definitely not complaining, though, and I’ll write-up my version of the recipe within a few days. They’re very low fat because of the apple butter replacing the usual brown sugar butter filling, which is perfect for me because I prefer to spread peanut butter or whatever it may be over the top.

French Toast Hazelnut Butter

After that baking project, I moved on to my 3rd(of 6). This one involved the “mystery” nuts you all correctly IDed as hazelnuts(I knew you guys would figure me out ;-)). What you didn’t guess was the flavor. Surprisingly, I wasn’t aiming for an all-natural Nutella; I already have Rapunzel’s organic version so I’m fine with that one for now. I decided to make “french toast hazelnut butter” by blending 8oz hazelnuts with 2 tablespoons maple butter, 1 1/3 tablespoons vanilla infused sugar, 1 teaspoon vanilla powder and 1 teaspoon cinnamon. This came out awesome from the little bit I nibbled on squeezing it into the jar. Hazelnuts, however, are not nearly as good blenders as peanuts to anyone looking to recreate this.

Really? The Millennium?

Really? All the radio stations here are doing a “look back at the millennium so far”. Do they realize it’s been 10 years and a millennium is 1000? Can’t we look back on the decade and be happy? Or even just the year because that’s all that’s ending? The media is never happy until it blows something entirely out of proportion(although, to be fair, they kind of called it on the Tiger Woods thing).

Soy Meat Stuffed Pepper With Cheese, Onion, Brussels

We had so many errands to run today, I literally took my meal “to-go”. The Lightlife sausage was yummy, as always. I don’t care if soy doesn’t agree with me; I’ll eat it till it kills. First we stopped at the bank to cash Christmas checks(chaching). I forgot my identification but thankfully the teller was super nice and my dad was able to cosign for me. Then we went to Macy’s to try and exchange the food processor.

Thankfully, this woman was not as talkative as the teller. She asked no questions and I didn’t have to lie at all! I just said “We bought this here two days ago and the chute piece is broken”. 2 college semesters of linguistics is a dangerous thing to wield because I really know lawyer speak 😉 After that we went to job-lot for some nuts to grind(1.50 for a pound of peanuts!) and then on to Whole Foods. 2 days ago they said they’d have my bacon chocolate bar today. Today they said they’ll have it Thursday. Ugh. We need to go to Whole Foods Wednesday to get food for a New Years Eve party so we’ll just go to one of the stores I know carries it then.

Banana Oatmeal With Banana Pudding And EB Almond Butter

When we got home after 3 hours of errand running, I was pooped(and hungry). I had a bananarama in this dish, with 3oz mushed banana in the batter and topped with 1/2 a container Zensoy banana pudding. The flavor to this was… interesting. It was a little watery but I think that’s characteristic of soy. The flavor wasn’t awful, but wasn’t perfect.

Earth Balance Almond Butter

I also found this at Job Lot for $4. I think that’s at least half the price of Whole Foods. I bought it from my Christmas fund for good measure. It was good but I think I wanted more of a funkier taste, like Smart Balance has. Maybe add more agave after putting it on the oats? Still, a great deal and great nutrition.

Tofu, Rice, Broccoli

I’m in charge of dinner(well, I thought I was until my mom came home 80 minutes before expected but I’m still going to hold the reigns). I decided I’d make maple tofu for everyone. They aren’t the biggest fans of tofu but I think the prospect of maple will convert them. I’m also throwing in rice, which my mom will probably eat mostly and I won’t touch, and broccoli fries. I hope this all comes out disaster free!

I also picked up these nuts at Whole Foods. Anyone want to take a guess a) what type they are and b) what I’ll be grinding up? 🙂

Fusions

Somethings were just meant to be: Peanut Butter and Jelly, Lucy and Ricky, Me and Emma Watson, Ross and Rachel–the list goes on and on. And the truth is that these pairs work better together more than on their own. So yesterday I was looking for things that worked better together than on their own.

Pecan Butter With Cashews

My first inspiration came from Artisana’s Pecan Butter. I really enjoyed the hint of cashews in this to make it more of an artisan nut butter so I thought I’d try to replicate that with the pecans I picked up from the natural food store and some Oh Nuts! cashews. I won’t reveal the “secret” ratio but I think this came out damn good and would get a 10/10 from my own scale. I will reveal that I roasted them all so the flavor would be more pungent, but I didn’t add any salt.

Butterscotch Peanut Butter

Butterscotch and peanut butter are definitely another flavor combo that was meant to be. I think Kath would agree with the number of times I’ve seen butterscotch chips on her oatmeal. For this I used 16oz raw peanuts I dry roasted, more butterscotch extract than I’d care to know, stevia, and 4 teaspoons brown sugar. The flavor is definitely unique; it’s not my favorite but it seems like one of those I might randomly crave at some point. After I played around on nutritiondata.com, it was time for dinner.

Thai Curry Chickpeas With Hot Sauce, Brussels Sprouts, Buffalo Bleu Chips

I think Frank’s Red Hot sauce + anything is amazing(as attested by multiple bloggers around here). My mouth was on fire after all of this. There was also lemon-thyme salmon on the table but a) I didn’t think the lemon-thyme and hot sauce would work and b) I didn’t feel like having meat this meal.

After dinner, as disgusting as it was, I was determined to find the receipt for the food processor so that I can work at getting a non-broken one. It just so happened to be in the same bag of trash which my mom threw out ALL of her receipts from balancing her checkbook. This was really like finding a needle in a haystack but we got it.

A little worse from ware but proof is proof. I think I continued to wash my hands for another 20 minutes to get off the coffee grounds and tofu, and then turned on I Love Lucy and picked up more fusion food.

Xocai Nugget And Power Square

Obviously, chocolates bestie is more chocolate, so I tried out Xocai’s nugget and power square. If you want to get technical, both of these are also fused with dried acai berries to increase their ORAC value, but really chocolate is chocolate. I liked these, but surprisingly they weren’t dark enough for me at the time. They tasted like a good 55% but I was expecting them to be more bitter-sweet. After a few good I Love Lucy episodes(a timeless show), I found more fusion in the kitchen.

These were soooo meant to be together. The jam was a Christmas present to my parents and is unreal; it has so much amaretto flavor! And it’s totally giving me ideas for more nut butters. The Barney Butter oddly separated in the squeeze pack so half was really hard and have was liquid. At least it still tasted OK. Lastly I had a 2nd daily probiotic source and hit the hay.

Pop Culture Chocolate Chip Granola Bar

This morning I must have been lazy because I slept in 40 minutes. It is vacation, after all 🙂 But then I got “in the mood” for a good workout. I did my core with

  • 240 varying arm rotations
  • 5 sets of 7 chair swings
  • 40 squats(thinking back, I might have forgotten this one)
  • 70 rowers’ arms
  • 40 second pose hold
  • 70 standing marches
  • 100 sit ups
  • 100 air kicks
  • 70 tricep dips
  • 70 side crunches, both sides
  • 100 crunches
  • 50 second crunch hold
  • 40 push-ups(a little messy by this point)

After that I threw in 100 flights of stairs, which took about 30 minutes but flew by to some good ipod tunes. After that I knew exactly what was on the menu for breakfast.

Peanut Flour Yogurt

Pecan butter, earth balance, and brown sugar were most definitely all meant to co-exist(We are the woooorrld. We are the futurrre). I’ve come to think there is nothing better than to be able to think “I’m eating homemade pecan butter” and know it’s your home that made it! Now I just need to figure out how to homemake a cinnamon roll. Peanut flour and greek yogurt were equally meant to be for a 1-2 protein punch. Today’s agenda most definitely includes a trip to Macy’s to try and get a new food processor piece, and hopefully addressing 1 or 2 recipes on my to-do list.

This Is Why I Can’t Have Nice Things

I was sooo anxious this morning to break out my new food processor, I couldn’t even wait until after lunch! I decided that the first thing I would try to tackle is a chocolate peanut butter; I have not found one to my liking yet and was hoping to create my very own with peanuts and my favorite chocolate bar: Newman’s Own Organic Mocha Milk Chocolate.

The flavor came out pretty good–or at least better than what I’ve had. But while that was happening, so did this.

Broken Top Piece

I swear, I can’t have nice things for more than 5 minutes without something going wrong. I was making my peanut butter, and my dad was pretty much hovering over my right shoulder. When I unscrewed the top I lost focus trying to tell him to go away and dropped it on the floor, shattering some of the plastic. I was definitely livid, but it’s not my style to scream my face off at people, so instead I burried my face in my hands and continued until I was finished making my peanut butter. I hate that that sounds like such an excuse I’m making for myself, and I know after all is said and done I was the one who dropped it. Even 30 minutes later, emotions were not settled and not much talking amongst people happened before lunch, which my grandmother came over for.

Sweet Potato With Maple Butter, Cornish Hen, Broccoli

We heated up 2 of the leftover hens and I portioned out 4 ounces. I was surprised to see how little that was; I can’t imagine how much hen I had on Christmas! Oh well, it was a holiday 🙂 Still afterwards things were a bit icey, but I snagged the main computer to play with for my new peanut butter.

Did you know about nutritiondata.com? I just found out about it this afternoon. You can use it to find out the nutrition of anything you make! This peanut butter turned out pretty good, too. Had I known it would only have 2.5g of sugar per serving, I would have added more chocolate 😉 I could definitely see this site being more useful for things. At the same time, I’d rather not know how fattening some desserts are, haha. Afterwards, my grandmother was heading to the store, so I thought I’d tag along.

Grammy Mercy

Yes, the one with the purple steering wheel you all loved so much 🙂 You should have been at that yankee swap! Their was no love for the steering wheel that year. We went to a normal grocery store where she bought my groceries–joy! It was just tofu and some baking chocolate, but that was a nice surprise. I don’t think she knows what tofu even is, haha. We also stopped at an all-natural food store where I went to get nuts and found a fun surprise.

Butterscotch Extract

Had you ever heard of this? I always thought butterscotch only came in unnatural forms these days unless you whip some up yourself, and I was none to keen on that. I also was hungry so I made myself some brain power oatmeal.

Delicious! And now I can eat walnut butter knowing I can make my own once I finish the jar! Oh, and the goji cookies helped my brain, too 😉 And now I’m off to play with my nuts! Err… you know what I mean.

Playing Blogger Catchup

Sometimes the day after Christmas can be just as exciting as the real thing itself. I started like any teenage boy the day after a present haul: playing my new wii game for an hour. Thank God for no responsibilities 🙂 By 8 at least I wasn’t the only one up so I started getting things done. Eventually, I worked up a breakfast that would get things out of the house.

Chocolate Mint Brownie Yogurt

Pumpkin Oatmeal In A Mighty Maple Jar With Monkey Boy Peanut Butter

I think that’s going to be a theme this week: eating to make room. We have so many leftovers! I secretly love it 🙂 The brownies and yogurt was so so good; I love chocolate mint and that creamy texture so much. And since the yogurt was sweetened with stevia and the brownie erithrytol it was all naturally low sugar, too(ergo I could make out this was a “healthy” breakfast. The oats in a jar were long awaited and a perfect touch. I had hoped on getting out, cashing some checks, and doing shopping before lunch but I’m definitely the faster movie in this house and that did not end up happening. Instead, I made a breakfast of comfort foods.

Asparagus, Thinly Sliced Spoon Roast, Whole Wheat Mac N' Cheese

I may have steamed the asparagus too long, but they were still nice. The spoon roast really had to be eaten a few days ago and for some reason I had steak and mac n’ cheese in my mind. The best thing about a kitchen scale is definitely being able to portion out individual servings of the instant stuff from a family size box before cooking it(because, if I made the thing, I could definitely put it all away, too :-)).

Eventually, we did get rolling. First up was Target to use up some gift certificates. Did anybody else get a singing one from Target? They’re cute, but they’re about 1/2 an inch thick. And I got 3 of them. Can you imagine the wallet disaster that is? I was able to use up 2 and transfer what remained on the last one to a normal gift card. After that we went to the mall to return some stuff where I only was able to score more gift certificates 😦 And then to Macy’s to exchange my mini food processor for this.

I think I hit upon a mac daddy of food processors! It ended up costing me $43 more but I think it will be entirely worth it. Banana soft serve, chocolate avocado pudding, raw cashew cookies, my own nut butters! Really–this is opening doors. After that I grabbed a quick drink.

And then we were off to Whole Foods. I asked for chocolate for Christmas but not a single square wound up in my stocking 😦 I planned on getting a milk chocolate bacon bar which I’ve been wanting to splurge on since the Summer but they were all out 😦 😦 I’m sure I’ll find it next time because the man said he’d order some for me(though I’ll probably just go to a different Whole Foods that I know always carries them).

I grabbed my favorite “candy bar”. Seriously–these are too good to be healthy. When I got home it was time to put away my new “toys”(though I bet I’ll be breaking the food processor out pretty soon to play with).

Marvel T-Shirt, Dark Chocolate Raspberry Chocolate Bar, Season 1 I Love Lucy

From Target I got some things on my Christmas list: a new shirt to wear/run in, chocolate, and I Love Lucy on DVD. I don’t know why, but lately I’ve been so aware that this show is never on TV anymore! Shame because it’s the best, don’t you agree?

My mom decided she needed to get out of the house for dinner. I decided I needed to stay in and eat “my food” for the first time in days. It all worked out and I got the run of the house for myself to play with. Naturally, I decided to turn to the oven and eat a meal probably no one would care about that they missed but me.

There was definitely more maple syrup present here than at most breakfast tables because it was in the pie, on top, and all over the tofu. Scrumptious 🙂 I loved the real baked tofu; it’s 10 times more flavorful than the microwave. Unfortunately the back of the fridge froze the other half of my container and that got thrown away. And for “dessert” I had quick leftovers.

Cantaloupe With Sea Salt

Which were perfect with a little dessert fork. Tiny utensils are just the best. Christmas definitely threw me off because I had no idea it was Saturday night. But nothing ended up being on TV anyway 😦 Instead of pop in a movie I waited for parents to get home and watched Days, followed by more dessert.

Chocolate Soy Yogurt With A Peanut Butter And Chocolate Biscotti

I don’t even know how much cocoa powder and hand mixing it took to get soy yogurt that color and smooth but it was A LOT. I’ll definitely stick with plain chocolate yogurt from now on because of that and reserve soy yogurt for simpler things. These cookies still taste as good as ever. After this I was stuffed but had a HUGE craving for pecans, which I never get.

Oatmeal With Pecan Butter

This definitely put me over the top of fullness. But ’tis the season, right 😉 I can’t wait to make my own pecan butter with my food processor! I was actually planning on doing that at night, except I didn’t have any pecans… Definitely an ingredient fail.

This morning I had no motivation for anything. I stayed in bed for 40 minutes after looking outside to see the rain washed away most of the snow. Yuck. But when I felt guilty about not wanting to be active, I just kept in mind that they’ll be plenty of time for that in the future, and a day or a week or a month of pure laziness and joy should be well warranted.

Also well warranted would be repeating the same yogurt from yesterday because it’s “healthy” and delicious and uses up leftovers. Can’t beat that logic, can you 😉 I think I need to get to making eggs the proper way again while I’m home but for the morning I like my oatmeal so this was a compromise. And now, of course, I’m looking for recipes to make with my new food processor and muffin top tins. If you have any at all, send them my way.
