It’s Moving Day

Posted on May 11, 2010. Filed under: Daily Update | Tags: , , , , , , , , , , |

I’m so so pleased with the response this morning’s post has been getting; I wasthinking that if it would resonate with just one reader it would be worth it and it sounds like a lot of you felt the same way. To Target we will go!

Home Fries

Home Fries

I don’t know whether the response to the post or these home fries have made me feel better. Really, I can’t get my mind off of these. And the fact that I’m the one who made them–wow! I can’t wait to be home where I won’t have to go down 3 flights of stairs with pans at 8am to make something like this more often.

Vegan Chocolate Fudge

Vegan Chocolate Fudge

What would any morning be without fudge? I wanted a little pre-workout fuel. I think I went a little overboard after I took another tiny piece straight from the pan. But since I scraped the peanut butter not-quite-fudge layer off, that made it healthier, right?

12 Miles In 1:48:08

12 Miles In 1:48:08

I ran for 12 miles. I didn’t think I had those in me at first, but the fudge must have kicked in, or something. The last two miles were brutal, but only because The Today Show ended. I figured that wasn’t a good enough reason to cut the workout short.

Sweet Scoops Madagascar Vanilla

Sweet Scoops Madagascar Vanilla

I wasn’t hungry for a full meal, and I had my last class of the semester to get to, so instead of lunch I just snacked on some Sweet Scoops vanilla frozen yogurt and went on my merry way. Gotta empty that freezer somehow!

Baked Potato With Spicy Vegan Chili

Baked Potato With Spicy Vegan Chili

After class, I was definitely ready for a lunch. I reheated 1 1/2 baked potatoes and then topped that with 365 vegan organic spicy chili. Yum! With some extra sodium(because I’m a sodium pig), this was so very satisfying. I ate 3 baked potatoes today, and much more this week 8-| Why the new obsession? No clue, but I think it’s here to stay.

Packing

Packing

This was the state of my bed around 3:30. Now I’m fully packed and there’s about twice that, plus my minifridge and microwave. How are we ever going to get this all in one car load? I can’t say that we will… I needed chocolate to appease the situation.

Green & Black's Ginger Chocolate

Green & Black's Ginger Chocolate

I’m just in love with Green & Black’s ginger flavor now. It’s perfectly warm and satisfying. A constant supply of chocolate would make the world a much, much better place.

Coconut And Chocolate So Delicious Coconut Milk Ice Creams

Coconut And Chocolate So Delicious Coconut Milk Ice Creams

And now I’m waiting for my car to show up so we can start loading it. Again–gotta eat out that freezer. In here is the last of the chocolate coconut milk ice cream with a little bit of the coconut coconut milk ice cream. I think I just might be ice creamed-out for the day. Maybe. Then again, talk to me after another hour of moving bags full of junk and I’ll be saying pass the spoon.

It has to be done.

These Legs Were Made For Walking

Posted on May 1, 2010. Filed under: Daily Update, Race Update | Tags: , , , , , , , , , , , , , , , , , |

That’s just what they do.
One of these days the legs
Are gonna walk all around you.

Downtown

Downtown

I feel like I went everywhere today, and all by foot! So much for rest day? But it was fun! I did not expect the RISD art sale to be in swing again. There was so many amazing paintings and potteries, any of which I’d have been lucky to own. When I hit downtown, Providence couldn’t have reminded me of Boston any more, and for the first time. I’ve never really seen the city like this; all my time so far has been rainy or cold but today was perfect. Of course, the reason for my walking extravaganza was this:

Registering

Registering

I can’t believe the half-marathon is just tomorrow! The nerves are starting to set in, as this will be my first “real” half-marathon. The Race For The Border was fun, but it felt more like 250 people getting together in New Hampshire to run around a bit. This feels real. The best part of the walk back was knowing that I started lunch at 9:30 and it’d be waiting for me.

Vegan Cheesy BBQ Fries And Beans

Vegan Cheesy BBQ Fries And Beans

I think I’ve hit vegan heaven.

Vegan Cheesy BBQ Fries And Beans

Vegan Cheesy BBQ Fries And Beans

I’ve been really intrigued by Caitlin’s combination of sweet potatoes and BBQ beans. I also loved the combination of sweet potato fries and Daiya from last night so much I knew I wanted it again! Why not combine the two in a poutine-like fashion? This was divine. The flavor came through as some salty, sweet, and fatty bit of deliciousness with crisped potato fries, soft beans, and gooey Daiya. I’m going to need several more plates of this over the Summer.

Groceries

Groceries

My options for the early afternoon were work or do chores. I’d rather do chores. I walked down to Eastside Market and my little Whole Foods to get some ice cream(majorly on sale), 3lb of organic sweet potatoes, beans(dinner), a bar(my “breakfast” tomorrow), and some chocolates(longly considered and purchased enthusiastically).

Organic Pink Lady Apple

Organic Pink Lady Apple

I snacked on an organic apple for rehydrating from all the walking until I was ready for something more “desserty”.

Mint Chip And Vanilla Frozen Yogurt

Mint Chip And Vanilla Frozen Yogurt

This hit the spot. I used the last of my mint Sweet Scoops frozen yogurt with a good amount of Elan’s vanilla. Cost per scoop, this is hands down the best vanilla ice cream out there. It was only $3 for a quart on sale! It’s local to New England and the flavor is absolutely fantastic; it tastes like a fresh, frothy vanilla milkshake all the time. And, of course with me, the ingredient list is rather clean.

Oatmeal With Vanilla Peanut Butter

Oatmeal With Vanilla Peanut Butter

As big as my chocolate tooth is, my vanilla tooth is right there with it; I had a small bowl of oatmeal with some 365 peanut butter mixed with Madhava’s vanilla agave. Vanilla makes for the best everything: peanut butter, chocolate, cookies. God bless vanilla.

Root Beer Zevia

Root Beer Zevia

And a cool Zevia beverage after returning from the dining hall with some greens for dinner. I just hope in hindsight that the concentrated erythritol or stevia here doesn’t cause any running discomfort tomorrow morning.

Hemp Oil Dressed Greens, Chickpea Salad With Raisins And Daiya

Hemp Oil Dressed Greens, Chickpea Salad With Raisins And Daiya

Chickpea Salad With Raisins And Daiya

Chickpea Salad With Raisins And Daiya

I’m really digging this Daiya. I don’t even like real mozzarella this much! I figured because it’s so flavorful it must be loaded with added sugars. Nope! There aren’t any! It puzzles me, but all I care is that it’s good. And there’s never enough room on the plate for my greens, so instead I just put them in a separate bowl after dressing with Foods Alive sweet and sassy; you can’t tell but that’s fully packed in.

OK, kiddos, since I won’t have time to post in the morning, here’s my game plan: I’m going to try to be asleep by 10:30 tonight to get hours and wake up at 6:30. After my morning routine, I’ll either be walking or getting a ride down to the starting line at 7, snack on my Amazing Grass chocolate peanut butter protein bar, and the race will start at 8. My goal is to do it in under 1:40, and my bib is 3761. Nervous? Yes. Excited? Yes. But I figure that’s all part of the recipe for success. As the best of them say, here goes nothing!

Picture It: Javaberry

Posted on April 17, 2010. Filed under: Picture It | Tags: , , , , , , , , , , , |

Food holds memories. Those make the dishes ten times better and ten times tastier. And yet it’s hard to know on a blog just what someone is thinking when they put flavors together unless they’re willing to share it all. That’s why I’m starting a new category of posts, ala Sophia Petrillo, called “Picture It”s.

Picture it: Prom night Junior year. After the prom, I end up at a friends house for an after party with 40 or so friends. There’s an open fire, cookies, chips, s’mores, everything legal(yeah, yeah. We weren’t a very troublesome crowd, but something tells me that’s a good thing). I didn’t even plan to stay the whole night, but by 1am I was convinced by my good friend and hostess. After too many games of midnight Hide N’ Seek(who does this?!), I crashed sometime around 5am in front of Bend It Like Beckham. The next day, still in a cookie coma, no one cared for a very nutritious breakfast, if it’s even breakfast at 11:30. Instead, we took a very short walk to Dairy Joy.

Of course, when there’s an ice cream shop virtually in someone’s front yard, you have to throw yourself at their mercy and get what they suggest. The “favorite flavor” couldn’t have sounded weirder: Javaberry. A blend of raspberry and coffee ice creams. Really? Could that possible be good? No. It was fantastic. What a random but delectable combination, one that I had never had again, until today.

Black Raspberry And Coffee Frozen Yogurts

Black Raspberry And Coffee Frozen Yogurts

That would be Elan’s decaf cappuccino frozen yogurt and Sweet Scoops‘ black raspberry frozen yogurt. Again, the combination was eerily magnificent. How could these two flavors work? They just do. And when I had the Sweet Scoops‘ black raspberry the first time, I thought it wasn’t sweet enough. I take that back. This was perfectly fruity and sweet. But I did more today than just eat ice cream.

Chocolove Raspberry Dark Chocolate

Chocolove Raspberry Dark Chocolate

I ate chocolate, too. Right before hitting the gym, I snacked on the last few pieces of a raspberry dark chocolate bar and ran out the door. It’s been rainy/cloudy all weekend, so I stuck with the gym. It turns out I picked a perfect time for television, and I was really able to get into my “groove”.

12 Miles In 1:46:08

12 Miles In 1:46:08

These 12 miles truly felt effortless I could have kept going, if I really had to, which leads me to feel confident for my half-marathon in 2 weeks from tomorrow. And when I was done, I went straight to work on lunch. I was craving chickpeas, so I tossed some with honey, water, and garlic and tossed them in an oven to roast at 425 while I showered. My lunch ended up having 3 forms of chickpeas. Obsession?

Roasted Garlic Chickpeas And Garlic Over Greens

Roasted Garlic Chickpeas And Garlic Over Greens

Steamed Broccoli With Garlic, Hummus Chips With Hummus

Steamed Broccoli With Garlic, Hummus Chips With Hummus

My breath was not pretty after this meal, but I loved it nonetheless. On the salad was just the roasted chickpeas given a little flavor with garlic and honey, as well as some roasted garlic from the cafeteria. I steamed some broccoli and added ground garlic, and had “hummus chips” with hummus. The chips are made completely with garbanzo bean flour and baked with garlic and olive oil. Like I said, I think I was having a flavor obsession.

In between lunch and dinner was when I had the Javaberry creation. I also did some work and made an impulse online purchase. Aren’t those fun? I’ll be sure to share on that in a little time…

Cheese Burger, Roasted And Grilled Sweet Potato With Tumeric, Cinnamon, And Sea Salt

Cheese Burger, Roasted And Grilled Sweet Potato With Tumeric, Cinnamon, And Sea Salt

I basically kept putting off finding a way to not have to cook so long that I needed to cook. I tossed a sweet potato in the oven for 90 minutes and made a cheeseburger with some questionably old meat :-/ And I love roasted potatoes; nothing says “home” and “comfort” like a roasted sweet potato. But they are wholly unfilling. I topped mine with turmeric and cinnamon for powerful antioxidants.

Hidden Ketchup

Hidden Ketchup

Whenever my grandmother made me a cheeseburger, she put the ketchup on top of the burger and then the cheese while it was still cooking so the ketchup got a chance to heat up while the cheese melted. I always thought that was smart, and tasty 😉 Speaking of grandparents and parents, I loved Heather’s post today on just enjoying a day with her mom, and I’d like to wish Matt and his wife a huge congratulations for the birth of their baby!

I think after all that cheese and frozen yogurt, dairy has been capped for the day. Thank God for dark chocolate 😀 In the meantime, here’s a giveaway for Tropical Tradition’s shredded coconut! Yum.

Nutrition Starts TODAY

Posted on April 15, 2010. Filed under: Daily Update | Tags: , , , , , , , , |

Rise and shine! It’s always easy to say that when you’re the one who got a good nights sleep, but a nightmare to hear on the other end. Right? I am so ready to start my day, get back to classes(which, according to this post, a lot of you can sympathize with), and maybe sneak a run in? Only if it doesn’t feel like an overexertion.

Sweet Scoops Black Raspberry Frozen Yogurt

Sweet Scoops Black Raspberry Frozen Yogurt

I grew up always eating ice cream at my grandparents house. Lots and lots of ice cream. Because of that, I developed a strong taste for the “old people flavors”, or at least the ones they always kept: black raspberry and coffee. Black raspberry easily trumped coffee in my book, along with most other flavors. And so I was super excited to find a brand that makes an all-natural one. And they’re local! Double bonus 🙂

The actual flavor was a little light on the sweetness and a touch icey. That said, I’ll gladly finish this pint, and I’m sure there’s another one down the road I’ll have, too. Last night, I got to enjoy this while reading 1 of the 4 food magazines I’ve had sitting around for way too long. I fall behind on those so easily with school work 😦 Once that was done, I pulled out dessert number 2.

Local, Gluten-Free Brownie

Local, Gluten-Free Brownie

In case you were wondering why I didn’t call this post Nutrition started yesterday, where the hell were you?”, this is why. I realized there were about 10 other, more vitamin-packed things I could eat in this dorm to fight my flu. But we picked this up at a little Natural store in my hometown and I wanted to eat it while it was fresh. C’est la vie. Oh yeah, and on including nutritional panels on home baked goods: I did not want to know.

Local, Gluten-Free Brownie

Local, Gluten-Free Brownie

This was good, but not really great. It had that “gluten-free flour” taste to it, which it masked with loads ad loads of dark chocolate chips. I’d rather have one of my gluten free brownies, which definitely have less fat and still taste phenomenal. Plus, I think the black bean flavorin them is less pronounced than the starchy flavor in this one.

Oatmeal With Chocolate Almond Butter, Pomegranate Yogurt With Pomegranate Walnut Granola, Multi-Vitamins

Oatmeal With Chocolate Almond Butter, Pomegranate Yogurt With Pomegranate Walnut Granola, Multi-Vitamins

After 10 hours of serious downtime in bed(part of which spent with the brownie), the oatmeal of the day was topped with Justin’s chocolate almond butter. This stuff is serious yum, but I can’t wait to restock on the chocolate peanut butter. And to get my probiotic dosage pomegranate Chobani topped with the remainder of an Honest Foods pomegranate walnut crisp plank. I love how much seeds and nuts are in these! But I wish that were all there where and not whole wheat flour :-/ I don’t think a little at the bottom end of the ingredient list is going to trigger any gluten-intolerance; I just wish it weren’t there.

Yummi Bears Sour Multi-Vitamins

Yummi Bears Sour Multi-Vitamins

Aren’t these little buggers cute? They bring me to a theme I’ve been thinking about lately. I’d like to [re]emphasize in my diet over the next month the following things

  • Probiotics, probiotics, probiotics
  • 3 sour gummy bears daily
  • More fresh and raw fruits and vegetables, when available
  • Less sugar
  • 3 Servings of dairy a day, max
  • Be more gluten aware

Like I said, this isn’t so much a change as a re-emphasis on things. And nothing’s maniacally absurd. I’d like to reduce dairy because it’s mucus forming which is an easy gateway to getting sick.

Today Was A Fairytale

Posted on April 11, 2010. Filed under: Daily Update | Tags: , , , , , , , , , , , , , , , , , , , , , |

I’ve had that Taylor Swift song stuc in my head for the longest time now. At least today it was pretty applicable! I was in such a bad mood this morning, but once the day got going things turned for the better. I even got to visit 3 of my favorite places 😀 Any guesses where those might be?

Oatmeal With Vanilla Peanut Butter

Oatmeal With Vanilla Peanut Butter

This mornings breakfast was not enough to make me happy; I followed up a big bowl of oatmeal with peanut btuter with a slightly smaller bowl of oats with peanut butter. At least I know what I like? The nut butter was 365 creamy mixed with Madhava’s vanilla agave; I swear this made it taste like Reese’s PB! Sooooo good.

Root Beer Zevia

Root Beer Zevia

As if the morning weren’t off enough, I decided to drink a root beer Zevia at 11am before running. Who am I?! I didn’t feel like running; but I didn’t feel like not running. At that, I went to the gym where I could take it easy on the treadmill watching Mr. Deeds.

8 Treadmill Miles In 69:54

8 Treadmill Miles In 69:54

I did 8 miles, and they didn’t go slow or fast; they just sort of “went” and I was tuned out, listening to my iPod. At some point, I had a grand idea on how to change the day around. After I finished running 8 miles in 69:54, I ran another 3.27 miles outside in around 27 minutes and ended at one of my favorite places.

Garden Grille Cafe

Garden Grille Cafe

Love Garden Grille! Especially their brunch menu, which is only available on Sundays. Therefore, I’d have been a fool not to go. Also, my dad was driving down to Providence for the afternoon, and he was easy to persuade to eat here, too; we all just love their food!

Home Fries

Home Fries

Home Fries, Homemade Tofu Bacon, Peanut Butter

Home Fries, Homemade Tofu Bacon, Peanut Butter

I also love how flexible they let me be ordering. My favorite thing by far of theirs is the home fries, which comes as a side to every dish. And while–to their credit–all their dishes sound really good, I’m a man of simple tastes; I’m plenty happy with just their home fries, so I ordered a side of them and a side of their homemade tofu bacon and asked for a little dish of peanut butter.

Hash With Peanut Butter

Hash With Peanut Butter

Holy yum! This is an amazing flavor combination with the rich flavors of peanut butter and hash fat. It’s an odd combination, but I get it every time. How many more do you think before I get a menu item named after me? The Evan Hash.

J.P. Licks

J.P. Licks

After that amazing lunch, we decided to do something a little more fun for the day. I’ve had a hankering for a J.P. Licks ice cream all week! J.P. Licks is a local ice creamery that prides itself in wholesome, quality ingredients and fun flavors. The closest one to Brown is in Dedham(not close at all), so I was happy for the ride.

Mint Chip Frozen Yogurt With Freshly Whipped Cream

Mint Chip Frozen Yogurt With Freshly Whipped Cream

Mint Chip Frozen Yogurt With Freshly Whipped Cream

Mint Chip Frozen Yogurt With Freshly Whipped Cream

This was so well worth the wait. I ordered a medium mint chip frozen yogurt with fresh whipped cream. I can pass up the canned stuff no problem, but if you tell me your cream is homespun, I need to take a taste 😀 The ice cream was so delicious! I love how J.P. Licks keeps the crap ingredients out: no fake green dye here. And lucky for us, in that same strip mall is New England’s largest Whole Foods! That’s my third favorite place from today.

Meat Counter

Meat Counter

Can I tell you I was a little in heaven at this Whole Foods? They didn’t just have the 85/15 grass-fed beef I was looking for, they had 85/15 local beef(from Maine) and 85/15 bison! I’ve never had so many choices when getting ethical meat before. I stuck with the grass-fed, but the local meat was duly noted for the Summer grilling season.

KIND Nut Delight

KIND Nut Delight

When we stopped at Eastside Marketplace on the way back to get some cheaper groceries, I snacked on a KIND bar. The ice cream was delicious but that low-fat yogurt is like a drink so some nuts were a good change of pace.

Groceries

Groceries

For the week, I grabbed

  • Grass-Fed beef
  • Chickpeas
  • Tuna
  • Organic Oatmeal
  • 365 Peanut Butter
  • Kombuchas
  • Organic Coconut Milk
  • Wildwood Veggie Burgers
  • Tofu
  • Divine Chocolate Bars
  • Raspberry Goat Milk Yogurt
  • Strawberries
  • Tumeric
  • Organic Sweet Potatoes

I love a good grocery shop to prepare me for the week! And between sales and coupons, we saved $15 easy on all of that.

Grass-Fed Burger With Ketchup

Strawberry Coconut Avocado Salad

Strawberry Coconut Avocado Salad

This dinner was the perfect ending for today. The fresh meat made for an amazingly juicy, delicious burger. Instead of sweet potato fries, I wanted to get some greens in me for today. I made a salad with cut strawberries, avocado, and coconut milk. The flavor pairing was unreal here and it tasted just like I hoped it would. I just love the soft, rich avocado on salad.

Where’s one favorite place you wish you could be right now? I could definitely go for an after dinner dessert at J.P. Licks 😉 Or I’d love to watch Date Night at a little 3-screen movie theater in my hometown they tore down around 7 years ago.

Reuniting With Avocadoes

Posted on April 1, 2010. Filed under: Daily Update, Product Review | Tags: , , , , , , , , , , , , , , |

Do you love avocado? I. Love. Avocado. But I forgot I did; today was a relearning of that of sorts.

Red Delicious Apple

Red Delicious Apple

The sun hadn’t quite came out by 11, but I’m really a morning runner, so I scarfed down this apple and went out to see what damage the rain had done to Providence. Surprisingly, the path wasn’t awful! How good since I needed to run up and down it 3 times to get the mileage I wanted.

11.5 Miles In 1:37:57

11.5 Miles In 1:37:57

I ran 11.5 miles just under 1:38. On the 3rd turn, I headed back down Hope street specifically so that I could stop at the happiest place on earth: Whole Foods; there’s something so amazing about ending a run here. The plan was to shop around, grab something for lunch, hurry home and prepare it there. I spent so much time browsing the prepared food that by the time I chose I just had to eat it then. All the meat dishes looked “meh” and overpicked while the soy options smelt heavenly(but that would have gone against Lent as “prepared soy”.

Honey Spiced Turkey, Avocado Massaged Kale With Roasted Cashews, Indian Cauliflower And Peas

Honey Spiced Turkey, Avocado Massaged Kale With Roasted Cashews, Indian Cauliflower And Peas

Since I didn’t plan for lunch there, I only had my camera phone to capture this; but it really was an amazing meal. The turkey wasn’t dry, and had a nice spice blend on the skin with a surprise note of cinnamon; I never would have guessed I’d like that there(TWSS). BUT by far the most amazing thing here was the avocado massaged kale with roasted, salted cashews

.

Avocado Massaged Kale

Avocado Massaged Kale

H.O.L.Y. Y.U.M. Massaged kale is the dish I heard about most when raw foodists say “Well, we don’t use that much preparation all the time. Most of the time we just rub avocado with kale and are set with something simple like that.” They are too modest. This combination is amazing. It’s so much creamier than I would have given it credit for. Does anybody have a recipe they’d be willing to share? I think I want to make this for Easter!

Avocado With Sea Salt And Hemp Oil

Avocado With Sea Salt And Hemp Oil

You can say I had avocado on the brain all afternoon–I couldn’tget enough! For a snack, I halved one and topped 1/2 with Foods Alive hemp oil dressing and sea salt and the other half with just sea salt. Why don’t people snack on avocadoes more? They’re so refreshing and filling!

Tazo Refresh 0 Cal Tea

Tazo Refresh 0 Cal Tea

To wash that down, I had my last Tazo 0 cal tea, this flavor Refresh. I’ll admit: My first reaction was not a favorable one. It reminded me a bit of mouthwash. But it also completely grew on me, and by the end I was feeling refreshed and wanting more! I am loving the inflow of stevia sweetened beverages into mainstream brands.

Juniper Original FroYo

Juniper Original FroYo

It was SO nice out today–we hit 60 and with sun! This is big for New England lately. I think frozen yogurt from Juniper was definitely in order. What is it about sweetened, tart whey that tastes so darn good? I feel like it’s not the cleanest thing to eat, but then again no one’s eating this everyday so it’s OK in moderation.

Divine White Chocolate With Strawberries

Divine White Chocolate With Strawberries

While I was waiting for dinner to cook, I read this article concerning chocolate reducing heart taxation. It’s a good read if you want to convince yourself that all that Easter candy is fine! It made me hungry for some of my favorite white chocolate by Divine. Of course, then I read the part about white chocolate not counting because of the absence of cacao powder; I guess I’ll just have to have dark chocolate later to compensate 😉

Grass-Fed Burger, Sweet Potato Fries

Grass-Fed Burger, Sweet Potato Fries

I still had 1/4 lb of beef  to use up or freeze before tomorrow; the latter sounded like the better option. I made in a pan the grass-fed burger while roasting somesweet potato fries in EVOO at 350 for 45 minutes. Delicious! But now I can’t wait to grill over the Summer. Do you grill? If so, what’s your favorite thing? Mine is by far burgers, and all kinds! Salmon, tuna, veggie, beef, turkey, even bison.

If you didn’t read my morning post, I announced the Celestial tea winner. If you didn’t win that, you can enter one of these giveaways for Nature’s Path, Oikos, Vitalicious, and lunch boxes!

Shaking Off The Funk

Posted on March 31, 2010. Filed under: Daily Update | Tags: , , , , , , , , , , , , , , , , , , , , |

Good morning from Providence! It feels good to be able to say that again. Maybe tomorrow I can blog from Houston? I’ve never been but anywhere it’s not raining sounds good to me!

Scrambled Eggs, Oatmeal With Peanut Butter And Sunflower Seeds

Scrambled Eggs, Oatmeal With Peanut Butter And Sunflower Seeds

Oatmeal With 365 Peanut Butter And Sunflower Seeds

Oatmeal With 365 Peanut Butter And Sunflower Seeds

Yesterday morning, I was still a little “sugar shocked” from my birthday eats, so I decided to avoid added sugar and sweetness for as long as I could. For breakfast, it really wasn’t that hard; I just swapped out yogurt for scrambled eggs and used plain old 365 peanut butter with sunflower seeds on my oats. That peanut butter is probably my favorite plain, and it’s only $1 with the new Whole Deal coupon! That’s insane!

Baby Carrots

Baby Carrots

Before lunch, I munched on some carrots where I might have coffee. The natural and voluminous sugars were enough to hold me over for a while and still feel fresh. But then it rained. And rained. And rained. So I had tea.

Tazo Rest

Tazo Rest

Since the goal of the day wasn’t to make me miserable, I went ahead and added a little stevia to this. It was just enough to bring out the essence of the Tazo Rest tea, which is amazing.

Steamed Broccoli With Soy Sauce, Tuna Salad With Sunflower Seeds

Steamed Broccoli With Soy Sauce, Tuna Salad With Sunflower Seeds

Lunch was kept real simple and real fresh I a can of 365 tuna with 2oz plain Chobani and salt; that’s the ingredients for the perfect tuna salad, in my mind. That went atop some simply steamed broccoli with soy sauce and then was sprinkled with roasted sunflower seeds; those are the best seeds to add for flavor, crunch, and protein in my book.

Elan's Chocolate Frozen Yogurt

Elan's Chocolate Frozen Yogurt

Around 3, I came to the realization that my life is not complete without chocolate; I just can’t fathom otherwise. And I’m OK with that since I always celebrate my chocolate tooth with good quality products. Did you know some Hershey’s products contain 60% vegetable oils and can’t even legally be called “chocolate”? Yuck! Elan’s chocolate frozen yogurt has simple, natural ingredients, probiotics, and a stellar nutrition panel. I say, scoop away!

Banana Goodness Bread

Banana Goodness Bread

Baking this banana goodness bread with hemp seeds instead of flax was such a good idea it makes it a little nuttier and sweeter. I was worried the sugar crust was gone the day after but with some time in the toaster, this was just as crust and nice. Is it just me, or is nothing better on rainy days than sweet breads and coffee? Except this was without the coffee. Boo.

This week was so sporadic; I’d planned to be home for the half-marathon, and my birthday, and then I had no clue what I was doing. I thought I might drop by campus to pick up books and stay home all week. But after 2 days of being trapped home and not having a great time, I realized I was in a funk, and being back in Providence might help me defunk(or at least I’d have work to keep me busy). At that, we packed up yesterday afternoon and drove down to RI.

Dill Salmon, Parmesan Cauliflower

Morrocan Chickpea Salad

Moroccan Chickpea Salad

Dinner was eaten at Whole Foods; do you know of a better chef? I kind of wish they had gluten-free pizza so I could have partaken in the pizza eating(everyone else had pizza), but I was also happy with what I got. The parmesan cauliflower was insanely good; I wanted so much more! Except it cost an arm and a leg from the salad bar. I think it’s a winner for Easter lunch, though. The Chickpea salad didn’t taste any exotic, but I could eat chickpeas morning, noon, and night on their own.

Pomegranate Chobani With Coconut Oil Chocolate, Coconut Creme Egg

Pomegranate Chobani With Coconut Oil Chocolate, Coconut Creme Egg

When I was settled in, I made a snack and turned on The Biggest Loser midway through. I didn’t forget my low-sugar challenge; in fact, I just tried to exercise a modest and healthy chocolate tooth, with a special treat I found at Whole Foods.

Coconut Creme Egg

Coconut Creme Egg

If it’s shaped like an egg and made by Lake Champlain, you’ve just got to get it, right? 😉 The “coconut creme” in here didn’t taste particularly exciting that’s coming from someone with about every form of coconut except the actual coconut in his dorm. The yogurt with coconut oil chocolate, however, was great.

Coconut Oil Chocolate

Coconut Oil Chocolate

So great, I needed to taste the other half of the bar. At least it has no refined sugars? That’s my excuse. That completely took care of my chocolate tooth, though, and so I went back to my “raw roots” for one last dessert.

Oatmeal With Raw Sprouted Almond Butter

Oatmeal With Raw Sprouted Almond Butter

I forgot I opened and reviewed Better Than Roasted’s sprouted almond butter. It’s good, but I think I prefer their cashew. If you want a really nutritious nut butter, you don’t need to go raw, just look for one with the skin ground in; that’s the best thing you can eat!

Perfect Foods Fruit & Nut Bar

Perfect Foods Fruit & Nut Bar

Dare I say, it felt good to get up at 6:45 on break and start running again?! The Today Show, the gym, the endorphins–I just missed it all. I scarfed down my last fruit & nut Perfect Foods Bar and got there surprisingly, I wasn’t the first or only one!

12 Miles In 1:46:11

12 Miles In 1:46:11

I broke my run into two segments of 6 miles, and finished in 1:46:11; thank goodness that’s not my half marathon pace or I’d be so off my goal.

Oatmeal With Cookie Dough Peanut Butter, Greek Yogurt With Milk Chocolate Peanuts

Oatmeal With Cookie Dough Peanut Butter, Greek Yogurt With Milk Chocolate Peanuts

Breakfast was pretty standard fare between oatmeal with chocolate chip cookie dough peanut butter(I got a new jar in my time at home) and chobani sweetened with agave and topped with milk chocolate peanuts. I was watching on The Doctors yesterday(first off, big mistake there) about how peanut particles are easy to get lodged in the lungs and trachea, which is why infants should never eat it. It also can account for a rough cough in adults, which I always have and now I can guess why. Anyone else out there with this? I’m going to be coughing after this meal, that’s for sure. It’s also made me scared to death to feed babies anything other than mushed veggies. I don’t think I was fed peanut butter, but I’ve heard admissions of coffee being slipped into the baby bottle. Any other baby feeding admissions people want to get out there? 😉

Blue Skies

Blue Skies

Today looked so beautiful out. But would you know it was below freezing with the windchill?! Seriously, March, what did we do to p*ss you off? Even though it was so cold, I wanted to run outside for practice for tomorrow. I know I could have taken a rest day. When I thought about it, however, I realized all the times I’ve set distance PR’s I’ve also ran the day before. I’m not racing this half-marathon for a time; what’s important is that this will be my longest outdoor run by 1.9 miles. And so running as usual seemed the best thing for me to do on the day before this race.

9.57 Miles In 1:20:47

9.57 Miles In 1:20:47

I think I was a little faster just because I wanted to get somewhere warm 😉 After the first 3 miles, I couldn’t feel my fingers Note to self: BRING GLOVES tomorrow. After that, I started to get into it; for the first time I realized you can be cold as hell and still enjoy your run. I got into the music, regained circulation, and ran the planned course. I was happy to have thrown lunch in the oven before I went out, too, so that was ready for me.

Maple Tofu, Roasted Broccoli, Hickory Honey BBQ Chips

Maple Tofu, Roasted Broccoli, Hickory Honey BBQ Chips

Instead of pressing the tofu, I threw it in as was at 300 degrees for 90 minutes with maple syrup on it; it ended up baking perfectly! Low and slow, baby, low and slow 😉 I also threw in some broccoli while I showered. And on the side I had a snack attack of hickory honey barbeque baked kettle chips for some carboloading and deliciousness. Aren’t the chips at the end of the bag just the best?

Decaf Cappuccino Frozen Yogurt

Decaf Cappuccino Frozen Yogurt

Instead of a cup of decaf coffee for dessert, I went straight for the good stuff and made a cup of Elan’s decaf cappuccino frozen yogurt. It was definitely too cold to enjoy outside so the window shot was all I got. Eating this, my dad arrived and we loaded up the car with stuff to bring home.

Organic Apple

Organic Apple

On the way, since I was told we had no groceries back home, we stopped at Whole Foods in Bellingham, where I quickly grabbed an organic apple that was up front. Cortland? Empire? I can’t remember, but it was damn good. I love going to a grocery store you haven’t been at in a while; I feel like there was so much new they now carried!

Groceries

Groceries

We got plenty of groceries including yogurt, produce, and random snackage. My favorite items were the frozen ones, of course.

Purely Decadent Cookie Dough Coconut Milk Ice Cream

Purely Decadent Cookie Dough Coconut Milk Ice Cream

I just had to grab a new coconut milk ice cream flavor of So Delicious: cookie dough. I was thinking about buying this yesterday for a Friday sundae but all I could find was the soy variety 😦 Once you go coconut milk, you can’t go back–it’s that good. And I like that the coconut milk ones have a lot less sugar and taste creamier.

Mmmm. I think the “vanilla” base could have been better. It was very “vanilla” when I was hoping for “vanilla bean”. Other than that, the chocolate speckles were nice and of course the gluten free cookie dough balls were a bit of heaven. When are they not? Here’s a new product suggestion: Just the balls.

Organic Apple

Organic Apple

I snacked on another apple while making dinner. It was so awful and mealy :-/ What was with that, Whole Foods? At least it was organic, but can’t doing the right thing also taste good? And I also reunited with my dog in this time 😀 Who couldn’t have been less interested in me. He smelled, anyway.

Sweet Potato With Black Beans, Herbed Turkey Burger

Sweet Potato With Black Beans, Herbed Turkey Burger

We grabbed USDA approved ground turkey at Whole Foods. In it, I mixed rosemary, salt, and dill, and made it into 4 quarter pounders. On the side, I was craving a good ol’ roasted sweet potato with black beans. Mmmm, this combination is amazing; how come I forget about it so often? And plenty of carboloading in that 🙂

Hmmm, you know what else has carbs? Oats and more ice cream. Sounds like a night! I probably won’t have time to pop in in the morning so hopefully the next post will be a run recap. Until then, don’t forget to enter my giveaway and enjoy the weekend!

Celebrate!

Posted on March 25, 2010. Filed under: Daily Update | Tags: , , , , , , , , , , , , , , , , |

I looove all your confessions on this post this morning. Some of you would eat anything expired! I’m mostly the same way 🙂 I just could not down that moldy tasting yogurt for my own health. Ironically, the replacement one I ate that tasted fine was expired by 4 days, while the moldy one had 2+ weeks. Ridiculous? I think so.

Burger Bowl With Spinach, Sweet Potatoes, And Nutritional Yeast

Burger Bowl With Spinach, Sweet Potatoes, And Nutritional Yeast

I decided to have a burger for lunch(shocker, I know); tomorrow’s Lent and who knows when I’ll be around over the weekend so I wanted to eat up this meat while it was still fresh. I was inspired by this daring teacher to make a burger bowl, filled with a grass-fed burger, sweet potato hash, spinach, ketchup, sea salt, and nutritional yeast. It’s a good thing I used nutritional yeast because if that were parmesan I’d of killed a cow. It was so cheesey and delicious! And the whole bowl was amazing; overstuffed plates are just too good 🙂

Spring

Spring

I was really excited for my History class today because it was the last class before break for me! Woohoo! The actual topic sucked and my friend and I ridiculed it the entire period, but that just made the hour fly by. The professor even let us out a little early because it was so nice and no one who showed up wanted to be there. Can you see Spring where you live, too?

Dr. Zevia

Dr. Zevia

Well I got back to my dorm, tied up some matters, and popped open a Dr. Zevia. This was the 1 flavor I hadn’t tried–mostly because it had caffeine–but I totally needed that this afternoon. It was good, but not great; to be fair, I’ve never liked Dr. Pepper, so that I liked this at all was a miracle 😉 Now that I’ve had all the flavors, I feel like I should do a review of each. Would anybody like that? Then I stepped out of the room to grab myself a little treat…

Juniper

Juniper

Fro Yo! There’s practically zippo frozen yogurt places in New England compared to Florida and California, but happily there’s one hole-in-the-wall joint in Providence called Juniper. I’d never been, have been wanting to try it for a while, and figured this was the best way to celebrate this week and have my “me” time.

Original Fro Yo With Blueberries And Almonds

Original Fro Yo With Blueberries And Almonds

I got a medium original flavor with blueberries and almonds. I wanted to get some toppings even if they cost an arm and a leg, and these were the among the more “natural” choices(you mean those fruity pebbles weren’t organic?!). I have no gripe with being limited in options by an all-natural diet; this I’ve long come to terms with. What I do question is having almonds, peanuts, pistachios, and soynuts, but no peanuts; where’s the peanut love?! Regardless, this was delicious. Oh my God, where has tart fro yo been all my life? It’s so tangy, yet so sweet–perfection! I know Trader Joe’s carries some so I’m definitely going to check that out when I’m back in Massachusetts.

Oatmeal With Mighty Maple

Oatmeal With Mighty Maple

Well, I got my peanut love eventually 🙂 It turns out fro yo is not the most filling thing, so where that misses a small bowl of oatmeal with a big dollop of PB&Co.’s Mighty Maple hits the spot. And, in case you missed it, Oprah’s show was all about pornography today. Awkward much? I was mildly amused while also watching segments of The Today Show that I missed which sounded interesting.

Roasted Broccoli And Sweet Potato, Maple Baked Tofu

Roasted Broccoli And Sweet Potato, Maple Baked Tofu

Dinner was shaked and baked 🙂 I threw some maple tofu, sweet potatoes, and broccoli in the oven around 5:30 and they were good-to-go at dinner time. I don’t even care if it doesn’t fill me up, like I established a few days ago; I just love this dish! And it’s easy to make and forget about, too.

Keep Your Eye On The Reward

Sometimes, when you’re leading a tough time, it’s best to keep your head up and eyes focused on what’s at the end of the tunnel rather than your present situation. It may sound like it was on a whim, but really I had that trip to Juniper planned all week long. At the very least, it gave me something fun and different to look forward to as a “reward” for a potentially stressful week. It doesn’t have to be food. It doesn’t even have to cost money. But doing something for yourself special or out of the ordinary is a great way to keep your mind in a healthy place. Do you have an “reward” planned soon? Or just celebrate anything fun and exciting?
