Uncooking On Memorial Day

I find it ironic that on the epitome of BBQing and Grilling is when I decide to have another one of my raw-kicks.

I started my morning with a run, which called for prefueling with chocolate. Lindt is obviously not a raw chocolate brand but still tasty, and even non-raw dark chocolate has a good amount of antioxidants. Chomp on 🙂

I only aimed for 9 miles but ended up doing 11 after I got way too in to my new playlist. I think I’ve listened to some songs by Adam Lambert and Sugarland 5+ times over the past few days. Whoops?

All I’ve been craving lately for lunch has been raw salads. We seriously don’t have enough raw veggies in this house to satisfy that! I used half an avocado squirted with lime juice as the “meat” here, and around it added raw corn, lemon garlic marinated olives, and onions caramelized in a little EVOO(obviously not raw but cooked onions taste 1000 times better than raw in my opinion). The result: delicious. This was like some backwards guacamole salad. Loved it!

It seems my sweet-tooth, which has been in and out recently is back. A Zevia twist tasted perfect mid-afternoon for a boost. Just like a diet Sierra Mist!

The piece d’ resistance of the afternoon was this Memorial Day sundae. I really want to make a maple walnut flavor ice cream! Along with soooo many others. But since there’s only so much room in our freezer, I took some of the ice cream I made with raw milk and covered it in NH maple taffy and freshly toasted walnuts. Yum! Except whole milk ice cream is just too icy as I’ve found out; you really need half and half to make something decently creamy(or coconut milk at a 2:1 ratio with water for a vegan half and half).

It turned out that I went from being the only one with plans for Memorial Day to being the only one home. How does that happen?! Not going to lie: I was a little upset. But instead I decided to make this a golden opportunity to try a new recipe I’ve been dying to make.

First I snacked on some Crazy Richards chunky pb straight for some energy and got the food processor out.

The recipe I wanted to (not) cook was raw taco meat, so I went straight over to Averie’s blog and found her super simple recipe. Here it is below; I followed it to a T except used her variation of swapping out the spices for predone(Trader Joe’s) taco seasoning.

Averie’s Raw Vegan Taco Nut “Meat”
1/2 C Raw Almonds
1/2 C Walnuts
1/3 C Sun Dried Tomatoes loosely packed (If using oil packed, may slightly reduce amount of olive oil added)
1/2 Tsp Chili Powder (or to taste)
1/4 Tsp Cayenne Powder (or to taste)
2 to 4 Tbsp Olive Oil (or hemp, flax, etc.)
Optional: 1 Tsp Salt (or to taste)

Wow! I’ve never had something so flavorful. And I will be making this again. It certainly wouldn’t suit if all you want is that beef-flavor or meat. But if you’re just looking for something fun and tasty, this totally works. I ate it along a gingerade kombucha and home fries made with white potato, sweet potato, red onion, olive oil, salt and pepper. Of course, really Averie would probably hate this dish because it has about a days worth of sodium in it(and I’m eating it with a salt shaker ready and standing by).

And now I’m watching Knocked Up on TV. I love the movie, but some things are just better done when you have the house to yourself 😉

I think I’ve been pushing the envelope in my latest insanity.

On Sunday, I made up this raw ice cream, which was absolutely delicious.

I had a really bad craving for vanilla ice cream. Not coconut milk. Not anything other than dairy. Of course, this was the 1 thing we didn’t have. To appease that craving, in the ice cream maker I threw

  • 3 cups raw whole milk
  • 1/4 cup vanilla infused sugar
  • 1/4 raw honey
  • 1/2 teaspoon guar gum

Considering I didn’t have half the ingredients for real ice cream and made this with no patience, it was actually pretty good. It tasted nice and sweet and hit the exact spot I needed it to. It might not have been thick and creamy, but actually it came out much like a Wendy’s frosty. Yum!

During the test, which took 2+ hours, I sipped on a gingerade kombucha. Let’s just say I am very glad to be done with that one. It was just an awful scenario. Summer rain: love or hate? I would hate to have to run in them. But in general, summer showers, a little lightening, and a Little People, Big World marathon would make for the perfect night.

Before hitting the hay I made a bowl of oatmeal with Naturally Nutty‘s butter toffee peanut butter and some local raw honey on the side for dippage. Yum! The honey is definitely a new addiction; I snuck down stairs afterwards for another scoop. Did it help me fall asleep? Probably not, but it was good.

Speaking of sleep, I woke up with my alarm, hopped in the bathroom, and then started getting all my clothes ready, and still felt really really tired. After I put in my contacts, I saw that I set my alarm for 6:20 instead of 7:20. Whoops. I couldn’t fall back asleep, so I just made an extra special breakfast.

This one was much better than the other ones I’ve made(all 2 of them); I think the earth balance added a much needed butter flavor but from a vegan source. The scrambled tofu was so much simpler than I would have thought: just tofu and nutritional yeast cooked in whatever fat the potatoes didn’t take up. And it was all super tasty and filling.

Maybe it’s just because I’ve been stuck home the past week, but Boston seemed so alive today. Several schools, including my dad’s college, were having graduations, so joyful families were everywhere. I started my day at Whole Foods to get some coffee(the same one where Gisele Bundchen shops), and then meandered to the graduation I was attending.

But rather than stick around I was really excited to go to my favorite Boston restaurant and keep the raw vegan theme rolling. I felt like it was a Boston institution. On a much more limited scale. What was I to do for lunch? I was starving by this point and in a part of Boston I almost never go. Would I find somewhere good? Would I ever eat raw again?

Before my run I ate a piece of microwave vegan chocolate fudge and that powered me through 9 laps of the neighborhood. I definitely did not feel fast today but after 3 days of outdoor running on hills I guess that’s to be expected.

I snacked on an apple a little later on in the afternoon after I cleaned up all my messes(a food processor is not the same as a blender when it comes to liquids). Eventually, my cashew mixture had chilled…

Raw Chocolate Chip Ice Cream

Ingredients:

  • 1 3/4 cup cashews
  • 1 3/4 cup water
  • 1/2 cup amber agave
  • 1/4 cup vanilla bean infused sugar
  • 1/2 cup cacao nibs

In a blender, puree the first 4 ingredients until they are fully mixed. Store this liquid in a container in the refrigerator for a few hours to chill. Once ready, pour into ice cream maker and work to manufacturer’s directions. Add the cacao nibs 5 minutes before being done. Eat immediately or keep in a tight container in the freezer.

This was so fun to make! I can’t wait to make quarts and quarts of ice cream this Summer. I let this sit in the freezer for a bit but I think the texture was actually better right after being churned. It definitely had a cashew flavor, but not in a bad way. This would be better with an actual vanilla bean but my way costs considerably less. Did I mention it was delicious? Let’s just pretend the cashews have no calories.

My dinner was boring compared to that. I really wanted to keep eating raw: raw salmon, that is. But as much as I love rural America for its honey, I do not love it for its lack of Whole Foods and cheap sushi bars. I told myself if I wasn’t going to feel ethical eating that fish, I should just be happy eating beans. And I am. Seriously, buy 365 baked beans. They will change your opinion on canned goods.

Favorite raw vegetable? I don’t like many vegetables raw but baby carrots I don’t mind. Here’s a note: raw turnip does not taste all that good. Keep that in mind.

No clue, but I think it’s here to stay.

DIY: Fancy Nut Butters

If there’s one thing I love, it’s a good, flavorful nut butter. And I will happily fork up the cash for it(don’t assume I haven’t paid $10+ for a single jar). But that’s not always the most wallet friendly way to eat, even if the cost per serving is relatively low. And sometimes the flavors you want just aren’t out there. Or maybe they haven’t arrived at a store near you(Justin, I’m looking at you here). That’s when you need to know to make your own. With that, I’m happy to announce the newest additions to my recipe page: nut butters.

Chocolate Nut Butter

Ingredients:

  • 1 tablespoon nut butter
  • 1/2 teaspoon coconut oil
  • 1 teaspoon cocoa powder
  • 1 1/2 teaspoon sweetener
  • Vanilla flavoring

In a small dish, combine all ingredients and stir.

Cinnamon Raisin Almond Butter

Ingredients:

  • 1 tablespoon almond butter
  • 1 tablespoon raisins
  • 1/2 teaspoon cinnamon
  • 1 teaspoon liquid sweetener
  • 1/2 teaspoon brown sugar

In a small dish, combine all ingredients and stir.

Cookie Dough Cashew Butter

Ingredients:

  • 1 and 1/3 tablespoons cashew butter
  • 1 teaspoon agave
  • 1/2 tablespoon chocolate chips
  • Vanilla flavoring

In a small dish, combine all ingredients and stir.

Vanilla Peanut Butter

Ingredients:

  • 1 and 1/3 tablespoon peanut butter
  • 2 teaspoons liquid sweetener
  • Vanilla flavoring

In a small dish, combine all ingredients and stir.

The benefit of all these recipes is that they use pantry-friendly ingredients and require no food processor. Of course, I also have recipes for nut butters that start from scratch. I’ll be sure to add those over the Summer(when my food processor isn’t stashed underneath my bed).

But none of their flavors are sweet enough for me on their own 😦 Which might be OK if they had a little added fat to make them richer but they don’t. Fruit jam to the rescue(and a little almond butter snuck in their as well).

We define “serving sizes” all the time. Don’t tell me to eat 10 pieces of ginger Vivani chocolate when they’re made 4 blocks to a row. I know math and that just doesn’t work out unless I’m willing to put a little effort into it. Likewise, there’s no such thing as a tablespoon of Justin’s chocolate hazelnut butter or Madhava’s hazelnut agave. There’s a scoop and a squirt and how much that is is how much that is. And ice cream? A serving’s what I left in the pint after the last time I at some. I don’t need a measuring cup, and I don’t even need a cup–just hand me the spoon.

But what if I told you to get to that snickerdoodle So Delicious soy ice cream I had to walk through a room of people drinking and playing beer pong in front of the fridge? And that I was in my pajamas? And that I really didn’t want to be doing that? Fact. Fact. And you bet your booty. It was one hell of an awkward minute I felt like a fish out of water. But what would have been the argument against getting the ice cream? There wasn’t really one, so in the end I knew what was “right”. Besides, the joke should be on them: It was Cinco de Mayo and I saw no margaritas. Really, guys, really?

So where does that leave me, on this most Holy of days, Seis de Mayo. Well, I know a few things. I know I was hungry way before class today and ate my breakfast of Mighty Maple oatmeal and a pineapple Chobani with cashews early. I know I’ll watch Bear Grylls in just about anything and everything he wants to do in his career(see Worst Case Scenario). And I know that I should throw away fears and do what I really want to do more often, because at the end of the tunnel there just might be a pint of ice cream. Now, if I may quote different strokes

I think I’m on a ginger dark chocolate kick. After trying Green & Black’s last night, I had to see what Vivani had to offer. I liked their bar, but not quite as much. The ginger was perfect; I just wish there was a tad more of it. But the combination of ginger and dark chocolate is a new favorite in my book! It also seems that, in the time since Vivani sent me several of their bars to review, they’ve completely renewed their line; I’d be interested to see if they become more widely available now.

This morning, I had the pleasure not to have a 9am class. I slept in(just a bit) and decided still to run first thing. 105 minutes later, I had gone 12 miles. The run wasn’t much more exciting than what was on TV, which was the Today Show. Have you heard of Sandra Bullock’s baby adoption and how they’re willing to work together through divorce to both be parents of Louis? That’s such a sweet and at the same time heartbreaking story; I still have secret hopes she’ll reconcile with Jesse James.

I’m glad you all seem to love fudge almost as much as I do

Could I resist having a piece this morning after photographing it? Not a chance. That does not bode well for how long this will last in my freezer. At least it’s raw, and the coconut oil gave me good energy for a run.

Maybe that’s a lie, too. This run was a little slower than I’ve been able to do recently. My left foot hurt and I suspect it’s because there’s so little arch support. These shoes seriously have 2000-3000 miles on them, and I really need a new pair 😦 Perhaps after the half-marathon this Sunday. Besides that, I was entertained by the new Dr. Who and pushed past that.

Instead of regular class, I had an earlier museum tour today. I didn’t have enough time between running and that for a proper lunch, but it’s always important to fuel, so I threw some Better Than Roasted Sprouted Almond Butter and sea salt on a blueberry Chobani; I love the blueberry/almond flavor combo.

The museum tour was pretty interesting; the RISD art museum is famous and somewhere I’d really like to spend more time if I get the chance. As is, we just had 40 minutes to go through a few rooms and get lectured on ancient artifacts.

Tumeric Spiced Carrot Cake Chickpea Salad With Toasted Walnuts

I was so excited for this salad when I got back. I’ve been toying around with the thought of carrot cake chickpeas in my mind for a while now, and this was a spicy twist on that. In the mix was

  • 1 cup chickpeas
  • 2 tablespoon chickpea water
  • 1 tablespoon maple syrup
  • shredded carrots
  • organic hunza raisins
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon tumeric
  • sea salt

I took the extra 5 minutes to go down stairs and toast some walnuts in a pan, too. If you have the time, you really should toast your nuts. The flavors here were all incredible and I loved it! This’ll definitely be a new salad recipe to keep in mind for the future. On the side and in my next class I sipped on a Gingerade Kombucha.

Even though the weather is crappy and cold, I can still crave ice cream; I can always crave ice cream. In accordance with project cleanout, I knocked down both of these pints, neither of which had a real serving left. I think the combination of a coconut/vanilla flavor with white chocolate was bliss. Could someone make a vegan white chocolate ice cream next, maybe? I’d buy. That was all in prep for dinner.

It wouldn’t be a Wednesday night in this house dorm without sweet potatoes and a burger. How long has it been since I’ve had sweet potatoes? 4 days? That’s too long. This meat also tasted nice and fresh since we just got it Monday and I hadn’t unsealed the pack yet–yum!
