Yesterday, at home, I was feeling ambitious: I’m going to make fudge. But what is fudge by its definition? As wikipedia told me, it’s fundamentally sugar, milk, and butter. No chocolate?! Well, not at it’s core. Those are the 3 ingredients that “make fudge”. Penuche is made with brown sugar. And chocolate fudge is made with the addition of cocoa powder. But what if you don’t want milk, or cream, or butter? And what if you’re a lazy bastard without a candy thermometer and only have the microwave at your disposal? Well, that’s when you need Microwave Vegan Chocolate Fudge

Microwave Vegan Chocolate Fudge

Ingredients:

  • 1 cup vegan chocolate chips(e.g. Trader Joe’s) OR 8.5oz sweetened dark chocolate
  • 4oz natural vegan butter substitute(e.g. Earth Balance)
  • 1/2 cup powdered sugar
  • 1/4 cup non-dairy milk

In the microwave or over a double-broiler, melt together the chocolate chips and butter substitute. Take care not to burn the chocolate. Once fully incorporated, sift in the powdered sugar and pour in the non-dairy milk. Stir until fully incorporated. Pour into a small, square pan about 6 inches by 6 inches. Drop on the counter a few time to remove any air pockets and refrigerate for at least 2 hours before serving.

I’m sorry; this was just too easy. I’m a little scared for every part of my body affected by sugar that this delicious dessert can be made so quickly and simply. I used unsweetened vanilla almond milk as the liquid, and the flavor could not have came out cleaner. Maybe vegan penuche will be next? The possibilities are endless! Now go make a pan and have another slice because it’s cholesterol free and no animals were affected in the process of your sinful, sinful treat.

I also indulged in 6 squares my favorite chocolate bar smothered in vanilla agave sweetened 365 peanut butter. Uhhh, does anyone remember when I mentioned opening this jar? Because it’s half gone. I don’t think I’ve gone through a jar of nut butter this fast before, and it’s a store brand! I think that speaks to the magic of 365.

And when I woke up, this wrapper of a Nature’s Path Peanut Choco’ Chewy Granola bar looked pretty guilty(i.e. I ate it during Brothers & Sisters). I expected to be sore and tired after yesterday. I certainly was tired and enjoyed the sleep. But when I woke up at 7:40, I really just felt like running–no timing, no pressure. Just running.

I went for an easy and slow 8 miles in the gym. Despite the heat and the humidity, the entire thing was made 10 times more pleasant with The Today Show and Betty White. Will you be watching her on SNL? I definitely will be! By which I mean I’ll be watching it on the internet the next day, but still, enthusiastically.

At least those are foods that’ll fuel you well. A vegan chocolate peanut butter fudge batch next? Oh, somebody turn my brain off.

That’s such a sweet and at the same time heartbreaking story; I still have secret hopes she’ll reconcile with Jesse James.

When Beans And Coconut Collide

“If running were easy, it’d be called your mom”

That’s the thought I told myself after running my first mile this morning. It goes to show just the kind of things I’ll think without the distraction of an iPod 😉 I have to admit, the first few miles today were really tough, and I couldn’t tell if it was from being sick or if it’s because running’s a sport and those are meant to be challenging.

This meal was as thrown together as any to make it to class in time. I wanted a chickpea salad with mulberries, but to avoid cheese and dairy. To keep it interesting, I tossed it in some simple coconut maple dressing. 2 ingredients, no refined sugar, creamy and satisfying–what’s not to love?! On the side, for my wellness, I had an Mo’ Beta Odwalla.

This was delicious. I loved that it was all fruit juice or all fruit puree. And it packed some serious vitamin content if we’re to believe the labeling. My biggest shock, however, was noticing stevia on the ingredient list! Don’t get me wrong–it’s way better than finding evaporated cane juice. But why did it need any sweetener with all this fruit? Regardless, I hope this’ll knock back any cold or flu.

Mmmm, fried food 😀 There was no coconut at dinner(what a shame), but there were beans in the form of tofu in my veggie burger. I reviewed this Southwest Wildwood burger last semester and picked it up this weekend for a flavorful meal in place of fake meat which so often has gluten. Like I say in my review, these are taaaasty. But that’s probably because they’re fried. It’s good oil though, so it’s healthy, right? Right? To add a touch more fat, I had The Heat Is On peanut butter and mustard with some steamed broccoli. Delicious and nutritious.

I’m looking for some brands to try because I simply don’t know/have a favorite since moving to an all-natural diet and then giving up prepared soy for Lent. I like the Wildwood burgers, but I’m not sure if they’d grill well, and the outside is entirely fried which, while tasty, might not be an everyday thing.

If this wasn’t about to fill me up, I was going to retire, pack my food bloggin’ bags, and move to Boca Riton. I made a batch of pumpkin oats topped with Justin’s Maple Almond Butter and a little bit of maple butter with sea salt. Oh God this was good, and filling! This morning I slept in embarrassingly late :-/ The part that bugged me was just not knowing when to run anymore. I decided to eat breakfast first, run later. In the meanwhile, I made raw cashew butter, since I loved Love Raw Foods‘ so much. It was actually one of the easier nut butters I’ve made! I just turned on the food processor for 10 minutes and voila. And what could be better for breakfast than freshly nonroasted nuts?

In some plain yogurt I added 365 brand agave and Navitas Naturals‘ Lucuma Powder which made such a nice, malty sweetness, and on top were a few white chocolate chips. In the oatmeal was Homemade Chocolate Chip Cookie Dough Cashew Butter. Yes, you read that right.

  • 1 scoop cashew butter
  • A few, scant drops vanilla extract
  • Chocolate Chips
  • 1/2 teaspoon agave

Oh. My. God. If you like cookie dough at all, you must try this. The vanilla entirely makes this dish, but you have to watch out not to overdo it. It’s even better microwaved a little so the chocolate melts in to the cashew butter. Do it! Speaking of doing it, I just need to get out there and run before the day gets away from me. We have big plans for dinner; let’s just say the cashew butter was just a prelude 😉

Nature’s Path sent me a few of their granola bars to try and this one had been freakin’ call my name: chocolate and coconut? Yes please! This bar was super sweet–like a candy bar. I’m surprised it actually had more whole grains than sugar, too; that’s a plus. But it wasn’t very “coconutty” even if the chocolate was pretty amazing. If you want to avoid the Quaker Oats bars and have your kid not know the difference, the Nature’s Path ones are brilliant. Otherwise, I think there are better and more nutritious bars.

2 things were amazing last night: Grey’s Anatomy and this bowl of oatmeal. And neither of them were very pretty, either. But I assure you the combination of mighty maple, whole roasted cashews, and gritty/sweet maple butter was a little bit of heaven. It was weird not having my pumpkin oats salty; I don’t know if I liked that part. But otherwise this was divine chocolate.

I started watching The Marriage Ref with Kirstie Alley, Jimmy Fallon, and Sheryl Crow last night; to my great surprise, they were actually pretty funny! But I was beat, so I turned in early and was asleep probably by 10:30. Glorious.

For breakfast, I wanted a big slice of German’s Chocolate Cake. Not happening? I can do better.

After making this, I remember hearing that you’re supposed to fast on Good Friday and have 1 “meal”. 1 meal?! I have like 5 or 6 a day. If I ate 1, I don’t know how I’d function; even if I took a rest day, my hunger would be haywire. Then it occurred to me that I’ve never actually fasted on good Friday or any other day. No one enforced it in my house, so why start now? Have you/do you fast? Or how do you fast?!

Besides that, the breakfast was amazing; could it even be called a breakfast without Green & Black’s chocolate? Clearly not. In a plain Chobani went cherry butter and a little sweetener. I think that’s why I like plain yogurts the best: You can doctor them up however you want. And I’m still working on that can of coconut milk I opened a while ago, which tastes just as fresh; coconut milk on oatmeal makes it incredibly rich and satisfying. For me, a “German’s Chocolate Cake”, even though it gets its name because of German’s Brand Chocolate, entails chocolate, coconut, and cherry. But apparently it isn’t those flavors for everyone! So what makes a “German Chocolate Cake” to you?

Exhausting Friday

Hello! How was your Friday? In a word, mine was exhausting. Funny when you have no class on that day. I guess I just forgot how rough 13.1 miles make the rest of your time! After this post this morning, I had a meeting to catch at Au Bon Pain. When that was done I was wiped out and wanted to fall back on my bed. I was also staahhhving, so “lunch” was a quick and voluminous bowl of oats.

Pumpkin Oatmeal With Butter Toffee Peanut Butter And Sunflower Seeds

I don’t even normally like oats for meals other than breakfast, but this was so necessary at the time. A filling bowl that’s healthy and not something I needed to cook? Yes, please. I got to open a new bowl of pumpkin, mixed 1/2 a cup with 40g cooked grains, and added a big spoonful of Butter Toffee Peanut Butter from Naturally Nutty and a sprinkling of sunflower seeds. The sweet and savory seeds definitely made this meal–yum! After lunch I got to “work”.

Making Raw Cacao Coconut Butter

I only wish I were talking about real work; instead I made up a recipe that’s been on my mind for a while. I tried making my own raw cacao coconut butter, using products from Tropical Traditions like their coconut creme concentrate and Coconut Oil, and raw cacao powder and butter I bought from Navitas Naturals all sweetened with agave nectar. If it works out, I’ll be happy to share the recipe when I talk more about the coconut creme concentrate(the main ingredient).

While I waited for that to sit and harden(hopefully), I snacked on an apple–never filling. Ideally, the butter would be the consistancy of peanut butter or cacao bliss. The grinding process warms the oil and shreds the cacao butter so that it’s a smooth sauce right after grinding. Since I obviously have no attention span, I started using it while it was still soft.

This was one of those “Oh no I didn’t” “Oh yes I did” kind of snacks. I made chocolate avocado pudding and topped it with the sauce, which immediately cooled and hardened when it touched the cold pudding; magic shell sauce anyone? It was all very tasty and gone far too fast. I only hope it hardens at room temp, and if not it will make some good refrigerated chocolate. 18 Rabbits Nibble A Sultana

Right after that, I broke in to my bar stash and grabbed an 18 Rabbits Nibble A Sultana granola bar. I love how this had only 9g of sugar! But the flavor was a bit flat–fruity but flat. The pumpkin seeds at least were nice and savory. I definitely need a good meal in the afternoon to get me through to dinner. After that I had to step out to meander Thayer Street. When I was finished, I realized it was almost dinner and I did not feel like cooking after all this exhaustion. I grabbed something for dinner(and something for dessert) and rushed home hoping to use up what’s left of the day.

From the dining hall, I grabbed precooked broccoli(as in, yes, I usually cook my own but why bother tonight?) and some vegetarian chili, and supplemented more protein with tofu tossed in soy sauce and microwaved for 5 minutes. Since the chili is vegetarian I don’t have to worry about ethical meat, and since there’s no soy I don’t have to think about my Lenten give-up. I couldn’t imagine them using any artificial ingredient. And, if there’s gluten–well–I haven’t been too good on that one as of late anyway, so I’m assuming it was fine–not the tastiest but I’m not energized enough to be picky.

Like I mentioned, I did pick up a little dessert while I was out, so that’s definitely pushing me through. I should probably deal with everything I threw on the bed though first, huh? I guess this prompts the question, how do you feel about the mainstream adoption of stevia sweetened foods? Honestly, I love it. When I gave up artificial sweeteners, I thought I’d go nuts without Diet Mountain Dew or Coke Zero; Zevoa has made the transition so much simpler. Obviously, I don’t think the stuff should be knocked back like bottles of water. But if we’re talking swapping stevia for sucralose or aspartame in the American diet, sign me up. Since I’m an open and honest blogger, I’ll mention my intake of stevia today has been in my coffee at 6:50am, chocolate avocado pudding at 3:30pm,  and a decaf English breakfast tea at 4:30pm.

Greek Yogurt With Cherry Butter And Dark Cherry Chocolate

Like Sugarland preaches, in life there ain’t no rhyme or reason, no complicated meaning, ain’t no need to overthink it, let go laughin’. Sometimes you just need to put unholy amounts of cherry butter and chocolate on top of your yogurt to make life a lil’ better 🙂 Ain’t no shame. I enjoyed this gourmet yogurt mess while watching Survivor; at this point, I’m just waiting while they knock out the suckers in the game and get to the real players.

Food Network Magazine

Did you know it’s apparently legal to have “free time”? I did not. But I finally got around to reading the new Food Network magazine I got ages ago. Most of the recipes seem so complex I want to tear my hair out, but the articles are nice, and there was this killer recipe for avocado hummus snuck in a St. Patrick’s day article. Not so holy? Me singing out loud both parts of Lady Antebellum’s All We’d Ever Need. It got noisy.

Pumpkin Oatmeal With SP PB, Nutritional Yeast, And Sea Salt

I wrapped up the night with the same bowl of oatmeal I had at breakfast–no shame. If there was any confusion, what I put on this is Smart Balance Peanut Butter, their one sweetened with agave syrup. They have several products out that sound similar, but that’s the one I like. I also thought about how I ate completely vegan yesterday, save 4oz grass fed beef and 6oz greek yogurt. Not bad considering when you see a deer, you see Bambi. And I see antlers up on the wall. Brad and I have things in common.

Tribal Cinnamon Oatmeal Bora Bora Bar

This morning, I accidentally set my alarm for Tuesday/Thursday time. 6:15 on a day with no class? No thank you. I “slept in” until 7, then hit the gym with this bar in hand. I really didn’t have a set distance. 8? 10? 12?!

Yep. 12. I haven’t ran that far or felt that good since back in December. Was it the dried fruit in the bar? Was it the company of the other treadmillers? Was it The Today Show? Was it the copious amount of country music? No idea. But, like Miley says, Ain’t about how fast I get there. Ain’t about what’s waiting on the other side. It’s the climb.

Found Money

On the walk back to my dorm alone I found 27 cents! Sweet deal; that’s about as much of a paycheck as I’ve seen lately. Since I’m a poor Country singer, hopping bar to bar for a paycheck, I thought about how much beer food this pays for. I was pleasantly surprised to realize this matched the cost of 3 bowls of organic oatmeal. It’s like getting paid to eat…

Oatmeal With Vanilla Cinnamon Almond Butter And Coconut Milk

Keeping with the organicness of it all, I topped my oats with Naturally Nutty‘s not-yet released organic vanilla  cinnamon almond butter and organic coconut milk. The avocado I think was from an organic batch? To be honest, I mostly get organic when it benefits me in price, or is the same either way. 1 exception to that is always organic oats from the Whole Foods bulk bin and load up when they’re on sale for 99 cents a pound. I mix that in a 50/50 blend with Trader Joe’s oat bran and it’s a perfect bowl every time. I don’t think there’s a country music song about organic foods 😦 When do you “do organic”?

Coconut milk: How do you store it/for how long? I opened this can up on Saturday night and I’m thinking it’s getting a little back-of-the-barnyard funky even covered in the fridge. It reminds me a little too much of pina colada at this point like something(though I can’t wholly complain). Also, check out this asian dinner giveaway and an iherb shopping spree. Life Unexpected

I’m just loving the little curve-balls life’s been tossing my way. Dropping over $40 last night online on some foodie goodies? Not expected, but I’ll roll with it! You might see some in due time 😉

Red Delicious Apple

I equally did not expect to be hungry after that fantastic dinner of burgers and fries but c’est la vie. I grabbed this perfect apple from the dining hall; it was the last one I had 😦 And I don’t think anyone was expecting for how bad some of those American Idols singers were; unfortunately, for the guy who sang Apologize, it’s too late to do the same.

Oatmeal With Chocolate Almond Butter

I was still starving for some reason, and so early in the night. Oatmeal to the rescue! With a little Justin‘s chocolate almond butter. I ate like 2 spoonfuls of this peanut butter the first month I had it, and now I’m ripping through it; where’d that come from? I did a lot of focusing on studying for my exam(ugh) while noshing on that. A little later came chocolate almond in a different form:

Hot yum! For this, I mixed 1 cup original almond milk unsweetened with 1 heaping tablespoon cocoa powder and some liquid vanilla stevia. Sooo good. Why don’t I crave this more? And it was surprisingly filling; I thought last night would be a hungry hungry hippo time, but after this I was just exhausted and ready for bed, so I did! Sensical and unexpected 😉

Nature's Path Organic Pumpkin-N-Spice Chewy Granola Bar

It was not unexpected by me that I’d need a snack before my run; that was not a lot of food before bed but I was just jiving with my hunger. I grabbed a Pumpkin-N-Spice bar, which I’ve decided tastes straight up like Apple Jacks, but are jacked up on Omega-3’s. If it looks like this photo was taken in the men’s room, it was(I was also putting in my contacts at the time). If it looks like I was still half asleep, I also was.

Running Part 1

Everything actually went just as expected this morning. For one, I knew no one would be in the gym when I got there; 6:40 on a rainy morning is not a popular time. I had 8 miles in mind, which is exactly what I went for. I split it up into 2 parts partly because I dropped my ipod and it went flying behind me(oops) and also because nature picked up her phone and gave me a rang.

Running Part 2

For those of you playing along at home, that would total 8 miles in 71:55, which is a good amount faster than yesterday–unexpected since I felt like I was slugging through it but well welcomed! Also well welcomed was breakfast.

I was a little nervous to have to eat breakfast in class while taking the test, but by this point I think the teacher expects that of me 😉 I swear there’s something addictive in flax oil because I crave smart balance agave sweetened like nothing else–it’s so savory! Love it. To add more omega-3’s, some Bob’s Red Mill hemp helped to mellow out the soy yogurt. I think they actually have a higher omega-6 content, but that’s not on the packaged label. Hmmm, knowledgeable opinions? The test went good enough. I know I could have prepared better but I still think I did really well, so I’ll take that as an unexpected win 🙂

Only 1 week without them and I forgot how crazy my Tuesday/Thursdays feel! I just keep telling myself “it’s almost the weekend”. It really is!

Organic Coconut Milk

Where has coconut milk been all my life? For that matter, where has coconut products been my whole life? I’ve only recently jumped on the coconut train; first I started with So Delicious Coconut Milk Kefir, Tropical Tradition‘s coconut oil, then Artisana’s cacao bliss(not a winer but at least I tried it), next Bob’s Red Mill’s coconut flour, and now coconut milk. Addicted to coconut? I think so.

So so good. Since I was out of my coconut milk kefir, I subbed in 1 tablespoon coconut milk and 2 tablespoons water, and then added a tablespoon on top–holy yum! This stuff is sooo rich and delightful. And it’s vegan so I can drink the whole can, right 😉 Next time I might omit a tablespoon of water or something, and up the cocoa a tad with my new cocoa powder. For that matter…

Where has chocolate avocado pudding been all my life? The way I eat it, you might assume I grew up with an avocado tree. Nope. In fact, I rarely eat avocado otherwise. But I discovered this over the Summer from the Runner’s World forums and haven’t looked back.

Where has nutritional yest been all my life? This is another food I only discovered recently from food blogs! And I have to admit I was very scared at first; nutritional yeast? How could that possibly be good? Well it’s fantastic. I get mine from Whole Foods bulk bins and sprinkle it on anything and everything. It’s mostly protein and fiber, and has a pleasantly cheesy flavor; in this combo, I swear it all tastes like cheddar–yum 🙂

Nature's Path Peanut Choco' Granola Bar

I ate a Nature’s Path Peanut Choco’ bar on my run today. The run was a bit boring, but had me realizing this:

Where has The Today show been all my life? More importantly, why isn’t it on on the weekend 😦 I am not a news-type person; I really hate politics and newspapers and the whole shebang. But The Today show I think has the perfect blend of news and entertainment. And it’s the only thing(along with Cartoon Network) that makes long runs on treadmills bearable.

8 Miles In 69:43

This morning wasn’t terribly long–8 miles in 69:43. It still left me wanting more from my workout, but my feet just wouldn’t take it. Instead, I moved on to a different machine.

Where has the elliptical machine been all my life? OK–it’s not that revolutionary. But in terms of cross-training, it’s easily my favorite. It really does a great job of working different parts of the legs in a low impact environment. I did 3995 strides in 30 minutes(I know–I couldn’t squeeze 5 more in? Apparently not).

Where have vegan food blogs been all my life? I have a ton of blogs on my reader, and love to go through them all(even if it leaves me not enough time to comment on some of my favorite and can be a little daunting). Recently, I’ve gotten fantastic ideas from vegan blogs to feed my new coconut obsession. Jessie mentioned pouring coconut milk on her oats so I was looking forward to this. It’s a holy yum! Where has Justin’s chocolate flavors been all my life? Between the chocolate peanut butter, chocolate almond butter, and chocolate hazelnut butter, I’m obsessed. If you live in the Colorado area where these are on store shelves, I am very jealous; I ordered these with Christmas money from their website back in January. But I hear they’ll be on the East coast in March! Bring it.

Where has on-TV movies been all my life? I feel weird to admit it, but since being on campus on the weekends having limited channel choices, I’ve actually come to enjoy the made-for-TV movies I can find and actually look them up ahead of time. Craziness. Right now, Robots is on, and soon The Patriot. This is what being cooped up with a lot of work will do for ya.
