Yesterday was the epitome of a rainy day in New England. It did get off to a rockin’ start, however, when I got this in the mail right as I was posting yesterday’s blog entry:

Me And Goji Granola

I got the opportunity to custom build my own cereal from [me] & goji. Let me tell you, this was a ton of fun! I’ll go into the process more in my review of them on another day, but they have TONS of options for you to pick out and make your very own cereal. I ended up making a mix called “Chocolate And Berries” with vanilla granola, gojis, raspberries, blueberries, chocolate covered gojis, and chocolate covered peanuts–yum! Of course I was ready to dive in for breakfast.

 

 

Banana Oats With Chocolate Butter Toffee Peanut Butter, Chocolate Raspberry Yogurt With Chocolate And Berries Me And Goji Granola

Loved it! Thanks [me] & goji! There’s definitely not skimping on the mix-ins with them; this was like chocolate and berry overload(except that’s of course not possible). I think my favorite was the organic chocolate covered peanuts. The oats were so simple and yet hit the spot; a touch of sea salt on top really had the flavors placed. My morning was pretty lame, but that made it excellent. I was stuck home alone in the rain, and the highlight was showering and getting straight back in to pajamas 🙂 Montana was clearly in the spirit, too, since he got out of his crate, went to the bathroom, and fell asleep under a blanket. I made lunch in time for Days.

 

 

Stuffing, Spicy Chicken Sausage, Broccoli, Grand Marnier Sweet Potatoes

Have I mentioned that I love leftovers? I never have them when I cook for myself, but I think it’s fun to play with them when they come around. Everything here was leftover except the broccoli, which I made because I wanted some green. I think I’ve taken in more alcohol from those sweet potatoes than I have since being at college(OK, that’s not saying much with me). I will never tire of Whole Foods’ stuffing; thank God we have 24oz left. After some soap opera and homeworking, I decided to transition to the kitchen.

Seasonal Music Channel

Oh yes, there’s a channel that only plays Christmas music, all day 😉 Sometimes you have to wonder what barrel they scraped the bottom of to get the renditions of carols by the people they do, but other times they’re quite festive. Anyway, I decided to make up a new recipe and hope and pray it came out good(and chocolatey!).

Double Chocolate Pillows

Ingredients:

  • 1 cup whole wheat flour
  • 2/3 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 eggs
  • 1/2 cup canned pumpkin
  • 1/4 cup canola oil
  • 1/2 tablespoon vanilla extract
  • 3/4 cup turbinado sugar
  • 1/3 cup chocolate chips

Wet And Dry

Preheat your oven to 350 degrees and line 2 cookie trays with wax paper. In a large bowl, sift together the first five ingredients. Mix in the chocolate chips evenly distributing. In a separate bowl, beat the eggs with the oil and extract. Add in the pumpkin and sugar and mix until all is dissolved. Pour the wet into the dry and fold together until fully incorporated(batter will be very thick). Scoop into 24 mounds, flatten, and bake for 10-12 minutes, until puffed and firm to the touch.

The batter was incredibly thick; I was thinking of maybe adding some liquid, but I’m glad I didn’t. They ended up taking 14 minutes in my oven, but smelt so good when they were done.

Hello, chocolate. These were so soft and light but with a heavy, rich cocoa smell. Of course, in order to truly appreciate one, I had to try it first over oats.

Pumpkin Oats With A Double Chocolate Cookie And Butter Toffee Peanut Butter

Much better. The cookie was delicious, with a very dark taste of chocolate. It wasn’t quite bitter, but also not sweet. Bittersweet maybe? I’ll definitely make these again, but I might swap the 1/4 cup oil for 1/4 cup cream or full fat yogurt to give it more of a milky flavor. I’m sure you could go the otherway and veganize this recipe fairly easily, too, but I was not feeling that creative. When my parents finally got home from the funeral, I took the chance to get out of the house.

Target

Thankfully, Target had died down 12 hours after it opened. And surprisingly the store wasn’t entirely picked over. Then again, there wasn’t much left. I found a good deal on a camera, which a, let’s just say aloof, salesgirl led me to believe they had but when the manager came and I tried buying it pointed out it wasn’t the right one. Well they supposedly had some at another Target, so we picked up some things and moved on. After that we hit up a natural grocery store and Stop & Shop and, lastly, the other Target. When we got there, however, those 11 cameras they supposedly had were no longer. Wtf? They assured us they’d get some overnight if we really cared to come back. I’m not sure I’m that invested in the purchase, so I’ll have to give it with more thought. In the end my shopping was a lot more modest.

I either got really screwed on some stuff or really good deals on the other, because the peanut butter chips were the most expensive item by $2+ dollars. It was also well past dinner by the time we got home from Target hopping.

Roasted Brussel Sprouts In Balsamic Vinegar, Catfish, Roasted And Mashed Butternut Squash

Who buys two types of fish the day after Thanksgiving when there’s well over a few pounds of turkey in the fridge? My mother, apparently. And yet I’m the one who gets the name for being a wasteful shopper. That pretty much rubbed me the wrong way for the night, but rather than try to pick a fight I just took a plate of food and removed myself from the situation. I hardly feel comfortable having meat once a day, and I don’t feel comfortable at all wasting it, so all of this is meat overload for me and has just made me feel tense thinking about it. To take my mind away, I had a delectable snack.

Soy Yogurt With Peanut Milk Chocolate

This candy bar definitely had me with “caramelized peanuts with a touch of sea salt”–could somebody please adapt that and put it on my gravestone? All Stop & Shop had was flavored soy yogurt, but it was also on sale for a dollar, so good enough. I think there’s a bit of irony topping soy yogurt in milk chocolate that I never appreciated until now… I also watched this week’s Modern Family, which was more than fantastic. Can Fizzbo please come to my party? It’s OK if the comb sheaths aren’t there, though.

Green & Black Organic Peanut Milk Chocolate

I didn’t like this chocolate bar at all. That must be why it followed me upstairs and into my room 😉 After a while I had trouble sleeping. Hmmm, maybe sugar isn’t a better night time snack than oatmeal? Fascinating. I had a pretty genious thought, though.

Free-Range Turkey With Salt And Rosemary

Tryptophan! I’ve heard it’s also in legumes(and thus peanut butter) but I’m sure in greater amounts in turkey. I salted and seasoned 3oz of leftovers. While that was good, it didn’t do the job, so I did another 2oz. After that I good have fell into a food coma, and was asleep soon enough.

This morning I slept in until; I think vacation is making me lazy, haha. Isn’t that the point of Thanksgiving? It’s not looking like running weather and I could always use rest(I just never take it) so today will probably be a sans running day as well. Maybe I’ll work up a sweat at Target or a Whole Foods–we’ll have to see.

Decisions, Decisions

I’ll let you in on a little secret point out something completely obvious: I’m a creature of habit. I love tradition and sameness. It’s the other reason I have oatmeal and yogurt every morning, the first reason being it’s so good. I find making any sort of decision a burden and constantly second guess myself. Like yesterday, I asked myself “why do you want to run 10 miles in the pseudo-cold with no tv to watch?” What did it matter? The thing was that I did want to run it. Sometimes I wish I were on some sort of training plan or something to use as an excuse. Well that’s my confession of the day. So tell me, are you a creature of habit, too?

Well regardless I jumped in some running shorts and grabbed pre-run fuel.

I’ve decided that I love fake meat. This stuff is my new obsession. I could never give up real meat for it, because I think they’re two very separate things. But that doesn’t stop me from loving them both. Do Tofurky’s go half off after Thanksgiving? Because if so I am buying out the freezer.

For my run I made a playlist with a ton of energetic playlists of mine and my Christmas tunes. It was a bit spastic between Lady Gaga and Bing Crosby, but kept me going for the whole 10.1 miles at 8:00 pace. I suppose in a way everytime I passed my house(all 8 times before stopping) I was deciding to keep going, but I tried to block out the fact that home was right there and kept going like I was far from the finish line. After showering we sat down to Sunday lunch.

On the one hand, I decided not to have the chicken that was roasted for dinner. On the other hand, hearing about Food Inc. has taught me that paying for most supermarket chicken is like paying for corn and fat and I’ve chosen a lifestyle that’s removed that as a food option. Thankfully I brought home enough tofu to feed a vegetarian army and cracked open the caramel mustard dip I brought for Thanksgiving. ‘Twas delightful. The acorn squash with yogurt was sooooo nice and creamy. And brussels are just one of my favorite vegetables ever! So overall it was a saved meal.

It’s definitely a habit of mine to want to finish all my homework for the next day as soon as possible. So I had no trouble sticking around long enough to finish translating Latin, and then plan on having The Aeneid read in the car. My throat was also feeling a bit sore, so I made a veryadult” decision:

This totally soothed my throat. And it was a very adult(and tasty) decision to throw the frozen yogurt in there, too, if you ask me. What would I do without probiotics? For one I’m guessing my morning routine would not be so… routine. On the way down we made a pit-stop at Whole Foods. The Silk Nog, which I specifically requested we have at home so I could steal it for my dorm, I forgot in the fridge. Good going, self. Also, I kind of got jealous of the chicken at lunch and wanted some of my own since it was 1/2 off this week. After that, we got back to campus right before it was dark and unloaded everything(which wasn’t that much since I’m only back for 2 days). Eventually, my taste buds made this amazing decision for me.

Banana Oatmeal With Cookie Dough Peanut Butter And Kashi Dark Chocolate Cookie

Seriously, I think I should patent and charge royalties on this bowl–it was that good. I was sent a sample of chocolate chip cookie dough peanut butter. Funnily enough, I already had a full jar which I’ve almost gone through so I am well acquainted with the flavor. Still I hadn’t made a review in the new format so I had this bowl to “remind me” of how it was and give a good and honest review. Here’s another confession: when I add a whole wheat cookie on top, I usually only do about 3/4 the regular amount of oats. How many whole grains does a fella need?

There are certainly some decisions I’m happy to make as an adult(or whatever I am). Like the decision that I have some awesome food/leftovers and could eat in my dorm in my PJ’s listening to yet more Christmas music and translating Greek.

Deli Roasted Chicken, Veggie Melange, Microwaved Sweet Potato

I was definitely practicing for Thanksgiving with this one. The deli man gave me a bit too much meat but not enough to separate into two meals so I just let myself go at it. I love my sweet potatoes; why do people mash these up? Then you miss all the crispy crisp skin 🙂

I watched a bit of the American Music Awards but wasn’t too enthralled. It felt a little all over the place and while my love of music genres is wide it’s not quite that big to be entertained by it all. I thought Kelly Clarkson’s performance was really good, though. She’s just an awesome person with a very healthy attitude and by far the best thing to come from American Idol. Eventually I made something I haven’t had in a while.

A gourmet yogurt mess. I forget how good these are. I’ll give you a clue, though: I don’t really make decisions on things like this or my oatmeal concoctions because most I’ve made before and are just resurrections of recipes. If you go back a few weeks, I’m positive you’ll find an identical mess. My current favorite oatmeal “recipe”(like you can’t already tell) is pumpkin oatmeal with butter toffee peanut butter and a vegan pumpkin molasses cookie crumble–genius. I then decided not that I don’t want oatmeal but that I wanted something simpler.

 

Chocolate Vitatop With Butter Toffee Peanut Butter, Carrot Ginger Muffin Top With Chocolate Sunflower Butter

 

Much easier 🙂 I love the butter toffee with the vitatop if you haven’t noticed. And the sunflower butter worked well on the muffin though it’s so thick! It was almost impossible to spread. I do have one HUGE decision coming up: what to place in my next Naturally Nutty order. Clearly I need to plan on buying more at once because I’m almost out of butter toffee and this will be my 4th order from them.

I watched the end of the American Music Awards. Way to go, Taylor Swift, yet again! She’s just a rockstar now; I hope she doesn’t get too big for us country lovers who remember “Tim McGraw”. Did anybody else see Adam Lamberts hyped up preformance? That was pretty much porn. And I blame it for why I got an awful nights sleep. When I got up, I was craving something cookie-esque.

That hit the spot, and also worked as my pre-run fuel. The run I’d rather not mention but I will. I really wanted to tie my distance PR of 15 miles and have that be the long run of the week. I felt like I had the energy and form, but annoying bathroom issues kept coming up. I never have these on the roads, just the treadmill, which makes it all the more frustrating. Instead of pushing myself to God knows what length, I decided 12 was enough to satisfy me and stopped then 1:36:44. After showering, I also decided that my “standard” breakfast of matchy-matchy oatmeal with a flavored yogurt was not what I needed today. What I needed was to shove my soul in a bowl.

 

Pumpkin Oatmeal With White Chocolate Raspberry Peanut Butter, Strawberry Frosting, And My Mojamix

My soul started with the standard 40gram oat blend, then mixed with 3/4 cup pumpkin(my soul really likes pumpkin), and topped with a double dose of strawberry frosting, a new nut butter I’m sampling for P.B.Loco(how did my soul know to want something it’s never had? intriguing), and my Mojamix(which would make sense since I designed it) which had an unusually high amount of chia seeds this time compared to when I last had it. Will my soul be poured into a bowl more often? Probably, but it will also probably change from time to time so who knows what it will look like.

It feels silly to have had to gone home this weekend for the retirement party, now back to campus for 4 classes between today and tomorrow, only to go back for Thanksgiving tomorrow afternoon. Such is life, I suppose. I’ll reiterate the question of the day: Are you a creature of habit?

A Collegiate Dinner

To everyone who asked how the peanut butter was, I tried to sum it up at breakfast: it’s very thin and runny. The vanilla gives it a nice sweetness. And the cranberries were a bit of a surprise, namely that they’re very finely chopped and not whole, but you still get a lot of cranberry flavor in each bite even if you can’t see them. Considering it’s a store brand flavored nut butter, it’s really good, so I’d buy one if you see it.

Speaking of pumpkin, yesterday’s pumpkin oats really held me over, so I wasn’t very hungry come lunch. I grabbed some random veggies from the dining hall, and went back to my dorm, first to catch up on internet stuff and then make lunch for later.

Cranberry Mustard Tofu, Sweet Potato, Zucchini

To be honest this wasn’t so spectacular. I thought I might hit upon the next tofu genius recipe by putting together mustard, TJ Cranberry apple butter, maple syrup, salt, and cinnamon, but it was mostly a flavorless mess. The sweet potato, on the other hand, was perfect; sweet potato never disappoints. Now I’m down to 1 under my bed so I should stock up soon. I ate this mostly in Greek History, in which my professor, who’s pretty much the most opinionated man, hateful of anything deemed “good” by pop culture, professed his love for Michael Scott. I knew he had a soul somewhere in him.

I had a slip in my mailbox which meant I needed to go to a window and get in line to get a package. 2 people in front of me was Emma Watson, but I realized I only had 2 minutes until my class upstairs started so I had to bail and get the package later. Lame. My teacher was late, too, so I totally could have stuck around. Anyway, I had not 1 but 2 packages waiting for me. Exciting!

P.B. Loco Peanut Butter Samplers

The first was some samplers from P.B. Loco to try and review! I’ve had the chocolate chip cookie dough, but I don’t think I’ve properly reviewed it in the new format yet, so expect that soon. Also, I’ve never had(but have oogled many times) the white chocolate raspberry so I can’t wait to give that a taste! Thanks, P.B. Loco!

Strawberries And Cocoa MojaMix

The 2nd package was equally exciting. Remember when I mentioned winning a Mojamix? They run weekly contests on Facebook to win a prize and 2 weeks ago I was the lucky winner! I got to make a trail mix of my own, and I went with ginger granola with cacao nibs, chocolate sprouted sunflower seeds, dried strawberries and persimmons, and chia seeds. Great, now that I’ve just told you all about these contests I’m sure I’ll have a lot more competition for the future.

I spent the first part of my afternoon walking up Thayer Street to Blue State Coffee. I had a hankering for a carrot cake cupcake, even though it’s not Cupcake Friday, but they were all out 😦 Next I found another of the dining halls(yes, it’s been 3 months and I’m still “finding” things), and made it back to my dorm, where I had something like carrot cake…

This is the raw and vegan version of carrot cake 😉 Jk to all my raw and vegan readers. I KNOW you guys know how to do dessert and do it well. Mucho blog reading resumed and eventually I made a real snack.

Banana Oats With Chocolate Hazelnut Spread And Maple Vanilla Frosting

Yum. This was perfect with vanilla powder, vanilla stevia, and Trader Joe cinnamon. The chocolate hazelnut spread I use is made by Rapunzel. It’s organic, and has about half the sugar of Nutella, but it’s still not really a nut butter. I ate this while watching Sarah Palin on Oprah. Anybody else watch this? I felt like it was all pretty tame, except when her grandbaby’s-daddy came up. He totally deserves the bashing, though; there’s no way 20 years from now he’s going to look back and think Playgirl was a smart call. Afterwards I had one of my favorite in-a-jar snacks.

Oikos In A Jam Jar With My Mojamix

I love the spoonfuls of just jam you get when you do this. And my Mojamix is off the wall good! I couldn’t really sense the chia, but the dried strawberries were heavenly and my new favorite dried fruit. The persimmons were a bit flavorless but maybe the sweetness of the Oikos was too much for them.

By the time 6:30 came around I was pretty hungry again. I met a friend from High School at the dining hall for dinner, as planned. I decided I didn’t need to look at the menu for tonight and just go in. Bad call. There were random vegetables I wouldn’t have minded, but nothing that was a meal. I still wanted to catch up so I sat with him and talked while he ate, and made like I wasn’t hungry(though I probably came off like a spaz because I was planning my dinner in my head). Once he was done, I grabbed some things and pretty much ran to my room to cook.

Canned Tuna, Flamegrilled Gardenburger, Trader Joe's American Cheese, Glaed Carrots, Green Beans With Mushrooms

Beautiful, no? I learned from Le Cordon Blue Collar. I think some of you were in my class 🙂 I’m not saying all my other meals have been Grade A, but this one felt unique, and like my first real “your in college” meal: random veggies from the dining hall, canned tuna, frozen veggie burger, and a slice of American cheese. God bless America. As random as it felt it hit the spot. Oh, and apparently TJ makes cheese that refuses to melt. Like at all. Oh, oh, and my dining hall does have canned tuna at the salad bar, but over the Summer my mother, who’s one of the least picky eaters ever ironically, convinced me if I don’t eat only a specific type of canned tuna at the rate I do then I’m going to die of mercury and so now I only eat light tuna from Whole Foods or Trader Joe’s. She implants that anxiety into me but then eats God-knows-what tuna salad sandwiches from Subway. Thanks.

My entire night was ups and downs but I’ll abbreviate. Downs: Spilling water all over and behind my bed. Cutting my knuckle at some point on something. Sneezing a hell of a lot and concluding I’ve got a head cold. Only getting done 1 poem in Latin. Ups: Winning a coupon giveaway. Excusing copious amounts of coffee because coffee has antioxidants. And this oatmeal.

 

Carrot Cake Oateal With Cream Cheese Frosting And Banana Pineapple Rum Jam

 

Believe it or not, I’ve never made carrot cake oatmeal before. And let me tell you, this was weird and complicated. I could never do this on a hungry stomach, but I had enough patience for dessert. I assembled the base oatmeal, shredded carrots, and raisins, and cooked that with a lot of water. On the side I made a cream cheese, yogurt, and vanilla stevia frosting, and topped it all with banana pineapple rum jam. I recognize that there are a ton of variations on carrot cake but my version(aka, the correct one ;-)) always must involve raisins and pineapple. It was good, but the carrot shreds were too long(they were from the salad bar). I’d like to try this again more homemade.

 

Carrot Ginger Muffin Bottom With White Chocolate Wonderful Harvest Spice Granola Bar With Cream Cheese Frostin, Silk Nog

That oatmeal with 2 cups of coffee did a number on me and completely filled me up. I didn’t even have an appetite for anything more, but I felt like I should have had an appetite. As much as I hate a feeling of needing to eat, I made this spread. And after I decided that I really wasn’t hungry for the muffin, I ate it and a few fingersful of peanut butter from the jar. Oops. The only part that really annoyed me was losing that sense of control.

After any time like that, I like to get a good run in and have a healthy breakfast. You could argue I do that most days but some days feel better than others. I felt like I struggled the first few miles but once I got control of the tv straightened up my form it became easier. My original gym friend, who I hadn’t seen much lately, introduced herself as Gail. Apparently, she works on the first floor of my building and has seen me walk past her window. And now I know her name I can stalk her on the faculty website. Score!(big jk on that last part). I ran 10 miles in 84:14, and when I got back I was ready for some super suprerfood.

Pumpkin Oatmeal With Pepita Sun Butter And Vegan Pumpkin Molasses Cookie Crumble

My superfoods of choice were goji, pumpkin, orange essence, mint, and pepita. I think that’s a good line-up no? The oatmeal totally hit the spot with some salt of course. Can salt be a superfood, too? I was thinking of having eggnog yogurt, but then I realized just how much I have that and how little Nog I have left and though better save it for a rainy day. Instead this yogurt was just perfect! I love these cookies; such an interesting blend of flavors that in the end just work. And now that I’ve had a breakfast that didn’t rely on white chocolate, I feel fresh and revitalized.

Today is one of those days where I’ll have a lot of free tie but I’ll probably be spending it feet up in front of the TV. I’m not a person who can nap; I used to be but I’m not anymore. I’d love to nap to get rid of this head cold but instead lounging around with warm nog will have to do.

Popcorn Flavored Cod

I’m very stubborn. I insist to eat oatmeal when I know I won’t have time to finish it all. Boy am I a crazy person 😉 Jk, but I was still working on my bowl yesterday morning when my parents arrived around noon. They didn’t mind sitting around while I finished, and look what they brought me!

Archer Farm's Vanilla Cranberry Peanut Butter

A new peanut butter? A new Target product? A food present I didn’t have to physically pick off the shelf? This was like everything I like all in one ❤ Big thanks to Naomi at One Fit Foodie for giving me the heads up on this one. After putting that and some other groceries they brought, my parents, grandmother and I headed of to Foxwoods! We’ve been going there every few months or so since I was 2 or 3. Don’t judge my family because we bond over institutions of gambling; there are sooooo many other reasons to judge us. Anyway, I can’t gamble until I’m 21, and the arcade room has lost its luster to me, so when we go my dad and I usually eat at one of their great restaurants. This time it was Junior’s.

Junior’s started in Brooklyn, and is much more well-known for their cheesecake. Bobby Flay even threw down(and beat) them! They also built a restaurant at the MGM part of Foxwoods. When you arrive, they give you pickles, beets, and relish.

I thought that was really cute. And it was all so vinegary! It was perfect. For entrees, Juniors has a lot of heavy items; would you really expect anything less from a place whose main appeal is cheesecake? I was in a white-fish mood, so I went with the broiled cod.

Broiled Cod With Broccoli

The dish came with florentince rice, but I asked to substitute that with the vegetable of the day, which was apparently broccoli. I also didn’t realize that at 2pm I’d be getting the dinner portion. It was very delicious, but I wasn’t expecting the pool of butter it came in. In fact, when I first tasted it I though “Why does my cod taste like popcorn?” That’s how divorced I am from butter; I only know the flavor through popcorn. I’m not even sure what the sauce on the side was but it tasted like mayo and was pretty bland so I didn’t bother with it. One thing that was great about Junior’s was their mustard.

They make their own, and my dad(who got a steak burger) and I both agreed it was incredible. Luckily, they also sold it, and mustard was on my shopping list, so I got one for 4 dollars. I love buying sauces and jams from places I visit because I think the flavor of their product says a lot about the institution and bring back good memories. We didn’t get any cheesecake, but I snapped a picture on the way out for you to drool at 😉

Can I move one now? 🙂 We walked around a bit more while my mom and grandmother had fun gambling. I had a huge coffee to flush out the butter from my system. Foxwoods has some fun stores that sell Stonewall Kitchen and other jams. Some of them had me drooling, but I wasn’t in the business of buying new and expensive jams. Once people had had their full(and lost their money), we made the long trip back to Providence. I say long because we stopped at 3 places. For energy I snacked on a new bar.

It had an interesting flavor. It was definitely sweet, though I’m not sure it was “carrot cake”. Then again, what is carrot cake, anyway? It’s one of my favorites ever, so I’ve had a ton, and I know no two have ever tasted the same because people change up the ingredients so often. Anyway, the first stop was probably the one I was most excited for.

Rhode Island Trader Joe's

Trader Joe’s is always exciting; add in the facts that 1) I haven’t been to one in over a month 2) this was a new one to me and 3) this is their only location in Rhode Island and you’ve got a happy foodie. It felt like reuniting with an old friend. At the same time, so much has changed! They have great looking new profucts like chocolate covered peppermint Joe-Joe’s. And have they always had those vanilla fudge cranberry dunkers? If so, why did I never buy them?

Well, it was dark when we got out of their. After that we went to Stop And Shop for Libby’s pumpkin and Vitatops, but as luck would have it Cascadian Farm’s granola bars were $3 a box and I had coupons! Score. Lastly was Whole Foods, where I restocked on a lot of jam that my yogurt-loving ways have taken, and picked up a dinner. I even slipped my dad $10 my grandmother had slipped me earlier because I felt the groceries had gotten a little out of hand. Here’s the proof:

Like I said, quite a bit. On the bright side, only 3 of the groceries were neither on sale, a coupon item, or store brand. And there was at least $6 saved with sales and coupons, so that counts for something. I rushed to put these away because time had completely gotten by me and was more than ready for dinner.

Whole Foods Chicken Dumplings And Tuna And Salmon Brown Rice Sushi

Did I mention my parents also bought me a dinner? 😀 This was sooooo good. I haven’t had sushi or Chinese dumplings in what feels like ages; I know of some great sushi places but honestly I’m content with Whole Foods. I like brown rice and most real Japanese places don’t offer that. I’d definitely get it more if it weren’t expensive(though, to be fair, it’s a way better deal than loading up on veggies from the salad bar).

This dinner made me very happy for the ridiculous amount of email responding/blog reading/internet bemusement I had to do. The rest of the night felt like hectic catching up but I’d much rather have a fun day and a stressful night than anything else. For a bit I ran around putting things away, cleaning plates, jumping into PJ’s, and making a snack.

I was still hungry immediately after dinner, which I think was either from my low snackage of that the sushi had enough protein. Regardless, pumpkin pie greek yogurt was by far the best answer. I added 1/4 cup pumpkin, cinnamon, nutmeg, and vanilla stevia, and used 1 Harvest Spice bar as granola. This tasted just like pumpkin pie. It definitely hit the spot. I don’t know that I’d like that bar on its own, but as an on-the-go granola I could see it being handy. Amazing Race and Family Guy were decent, but nothing to gush about. This snack was though:

Why people pay an arm and a leg for supplements when they could buy tasty, fortified food I will never understand; I swear I always feel better the day after I have a vitatop for dessert. Even if it’s all in my mind, it’s damn tasty 🙂 The granola bar was good, too. Nothing fortified or particularly nutritious, but definitely delicious. I think this one would make good on-the-go granola, too.

Nerd rant: The Aeneid is just awful to read in translation. At least when you read it in Latin you feel like you’re testing out your knowledge and can enjoy the poetry side of it. As a book, though, it pretty much sucks. In fact, the author, Virgil, wanted it burned after he died because he never finished it and didn’t like it himself. Some people are very glad those orders were not carried out. I, on the other hand, am not.

Soy Yogurt With Smart Balance, Newman's Own Organic Milk Chocolate Peanut Butter Cup, And Vanilla Sugar

Speaking of fortified, this was fortified with goodness. I actually used to worry about not getting enough calcium, but with 3 cups of yogurt or milk a day and green vegetables that’s not really a concern. And I think a sprinkling of vanilla sugar is totally justified when you buy plain and unsweetened yogurt 🙂

I’m finding the better I stay hydrated, the more often I need to get up and go in the middle of the night. A bit unfortunate, but if that’s the price for proper health I’ll pay. I grabbed a fruity bar and hit the gym.

This one’s not my favorite, but it had me at “and nut”. I think Monday’s are the best for long runs because usually I lower mileage over the weekend, and I’m excited to see The Today Show gang and 7am cartoons. Today pretty much fit that bill. I decided on 12 miles and finished in 99 minutes flat. None of my gym friends were there this morning 😦 But I know where they work so I can give them hell for being lazy and make sure they kick their own butts tomorrow 😉 Breakfast was decided long before it got made.

Yum! I love getting new “toys” to play with. The vanilla cranberry butter was surprisingly thin, and the cranberries weren’t whole but rather finely ground. Still, it had GREAT flavor. I think it’d be good in some yogurt. And the white chocolate chips were perfect. I think you can tell they’re made with cocoa butter. I don’t know why, but I was craving a little sticky fluff, so I threw that on the yogurt. Perfect 🙂

I act like a blogger when I read other blogs rather than study for my test in 30 minutes. Fortunately, I peeled myself away from the screen to make it to class in time. The test was a bit longer than any of us thought it’d be but I feel like exactly the passages I studied were the ones on the test and that I did really well. I guess the Greek shirt just has good luck in it?

I act like a blogger when I get obsessed with a food. Now it is tofu salad with The Heat Is On peanut butter. Every time there’s carrot at the salad bar, I’ve convinced myself I’m doing the right thing by eating this. That, and it’s just too good to turn down. I used a little less tofu this time(because I ran out) and the peanut butter flavor was even better. Definitely needed some stevia and salt though to pumpkin it up.

I act like a blogger when I’m convinced Greek yogurt can be a “dessert”. All it needs is some vanilla, raisins, cinnamon, and voila. I was trying to recreate this amazing rum raisin gelato made by a Massachusetts company which is so light and smooth but I don’t have rum. I probably could find that in a dormitory pretty easy but I didn’t feel like “meeting the neighbors” with the line “Excuse me, do you have rum for my Chobani?”.

I act like a blogger when I spend 30 minutes making a granola for the Facebook  MojaMix contest I won. I went with a ginger base with dried strawberries, persimmons, chia seeds, chocolate sprouted sunflower seeds, and cacao nibs. How awesome does that sound? I can’t wait till it comes!

I act like a blogger when I ditch on the end of Days Of Our Lives and all of Rachael Ray to go get groceries.

I act like a blogger when I almost neglect an awkward “Hi” with a classmate because I’m fascinated by how the raisins soaked up the yogurt liquid and were now cinnamon infused. Seriously, that was awesome. I didn’t even plan it like that but viola. The raisins got so moist and well seasoned, it totally converted me to liking raisins again.

I act like a blogger when I whip out my camera in the middle of the dining hall to take a picture of dinner. That’s a fun way to meet people. I thought of you all when the main vegetarian dish was pumpkin ravioli in cream sauce 🙂 I, however, was still a little pumpkined out, and the cream sauce made it a little less appealing. Instead I had the vegan BBQ navy beans. These taste just like good baked beans should taste like and were amazing. They had a very deep molasses and tomato flavor to them. All I could think about eating them was how smelly my run would be this morning but how I didn’t care.

Banana Goodness Oatmeal

 

I act like a blogger when a good night is evaluated on the basis of the oatmeal. Last night I decided to try and recreate banana goodness bread in my microwave since I haven’t made a loaf in a few weeks. I used 2oz banana, vanilla powder, and vanilla stevia in the oatmeal, and topped with semi-sweet baking chips. It was a decent substitute but of course not the real thing. I also sprinkled salt over the top at the end and I think that really helped the flavor.

I act like a blogger when I stress over watching Grey’s Anatomy or The Office. Oh wait, I was doing that years ago. Nevermind.

I act like a blogger when carbo loading couldn’t be easier. I defrosted one of Veggie Girl’s Fig And Almond blondies. After a few month of being frozen, they aren’t quite as good, but a little cream cheese fixed that. I also had an english muffin with mushed banana and chocolate chips(and salt, of course) and cinnamon vanilla sunflower butter. Perfect. Rachael Ray was on The Jay Leno Show and gave some hilarious answers to 10 at 10 in case anyone missed that.

I act like a blogger when I set my alarm at 6:15 to get up and do my long run. I had planned for another 13.1 miler today. I wasn’t particularly hungry but I figured food would be good so I grabbed a mojo.

Apparently, this bar isn’t just one of my favorites but a favorite of a lot of you guys, too! I just loved the saltiness. And the combo of pb chips and peanuts gave me good immediate and long lasting energy. I actually constantly forgot to be eating this, so it lasted me 13 miles. Speaking of which, I set a new PR record of 1:46:28! That’s the fastest I’ve ran a half marathon by a good 3 minutes

I act like a blogger when I choose running over course registration. As in, course registration opened at 8, and by the time I got back to my dorm it was 8:40. I didn’t think things would go so fast but 1 of the courses I really wanted to get into filled up fast and I got pretty upset with myself for letting me miss it. I’m hoping I can still wiggle my way into that class yet, but I’ll talk about that more once I know more.

I act like a blogger when I feel compelled to perfect an oatmeal recipe the next chance I get. This time I used 3oz banana and a lot more salt. I think it came out a tad bit better.

I act like a blogger when I decide a theme like “I act like a blogger” would be cutesy for a post and then by the end I want to go back and delete every time I wrote those annoying damn words! Haha. Don’t forget it’s Cookie Friday! I need to get my thinking cap going. And I’m going to work very hard to fix that class situation I mentioned, because I am a bit disappointed and I’m sure I can get in if I pull some strings. Anyway, have a good day!

I listened to the back of my Lightlife tempeh box which says it’s best grilled and skewered some BBQ tempeh. I loved the smoky flavor that it gave it and nuttier texture, but I still don’t know that the BBQ flavor came out. The broccoli was for the green(or maybe just an excuse to eat hickory smoked goat cheese). And the Chobani was a bit of early dessert. Even though I had the thought “I could be having ice cream instead of this” I chose the yogurt; what has happened to me? Clearly, that granola has a bit of flax and a bit of crack. Immediately after lunch we got on with the afternoon festivities…

Apple picking! Would you believe every Saturday so far this season I’ve came home has been rainy? It was windy, but not a raincloud around, so we hit up Tougas Farms for their final weekend. The trees were pretty picked but we made do.

Naturally, one snuck in my mouth on the walk out. I forget which type this was but I had an Empire; it was very nice and crisp and reminded me of a less sweet and visually attractive Red Delicious. After that we went to Target in search of some elusive Archer Farm’s Vanilla Cranberry Peanut Butter. Alas! No luck 😦 Next up was Hannafords for some general baking and eating goodies before heading to Micky-D’s(for a coffee, of course) and home. Here was the loot of the odyssey.

Greek yogurt–obvs–, Organic PB cups for an Evan Halloween :-), pumpkin, oats, apple butter, soy milk, tofu, and organic Smart Balance butter. I didn’t want to spring for the organic but the regular stuff apparently has artificial flavor. What are they flavoring it? Just like I don’t like butter, I don’t like fake butters either. But I know they’re necessary for a certain recipe I was thinking of making so I sucked it up and tried not to touch it too much. I was also pretty hungry and in need of a little mood booster, so I busted out the last of my old Smart Balance peanut butter.

Vegan Pumpkin Brownies

Ingredients:

  • 2/3 cup whole wheat flour
  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 15oz can pumpkin
  • 1 teaspoon vanilla extract
  • 1/2 cup soy milk
  • 1/4 cup pumpkin butter

Pumpkin Brownies With Pumpkin Butter

Preheat your oven to 350. In a bowl, sift together the first 5 ingredients. Add in the pumpkin, soy milk, and vanilla and mix well. The batter will be thick. Spread into an 8×8 pan. Scoop pumpkin butter into a ziploc bag and snip off one end. In lines, squeeze the pumpkin butter. Then, with a knife, alternate cutting motions in both directions to make an effect. Bake for 25-30 minutes.

If you love fudgy brownies, these are definitely the ones for you. They didn’t even taste like a pastry but more like solid packed pumpkin and chocolate. I used too little sugar and baking powder, but I adjusted the recipe accordingly so hopefully yours will come out a bit more flavorful. Be sure to tell me if anyone tries these 😀 This was a nice appetizer for dinner.

A dinner, by the way, that was eaten spread over 30 minutes of being on the couch translating latin and running to answer kids at the door. I wasn’t feeling salmon. I feel like there’s an expectation for me always to want salmon or some meat when I come home, but that’s just not true. I tried introducing some alternative protein to the meal with grilled tofu. I liked the Nasoya firm better than what’s at my dining hall, so I might be adding it to the shopping list from now on, but I think it was too firm; when I reach for the ‘fu, I want something mushy and funky. There was also this humongous apple:

I told you I had a hot dog. He didn’t actually fit in his costume so we just held and threw it over when people came to the door. We didn’t get too many visitors, which my mom was very pleased with since that left her with a good amount of candy for herself.

Would it have been Halloween if I didn’t buts into a little candy? Clearly not. This was actually an educational experience. I learned a) when it comes to peanut butter and chocolate, milk is the way to go. I would have thought dark because in general I love that way more than milk but it just works with the peanut butter. Also, b) candy is better on top of yogurt. It feels like a sundae. I wonder if organic coated candies leak organic coloring like M&M’s do. That’d be sweet. c) Vanilla soy yogurt actually tastes like vanilla. Unfortunately, this boy likes his soy yogurt to be as funky as tofu, so it was a bit of a letdown 😦

Vanilla Cranberry was clearly the flavor obsession of the night. I was a little disappointed I couldn’t get the Vanilla Cranberry peanut butter 😦 Word from the foodie is that it’s in Woburn but that’s a good hour in the wrong direction for me. I’ll find it yet. I don’t even remember when I baked my last batch of those scones; I love finding pastries hidden in the freezer. I think I need a spare freezer just for english muffins because they never seem to be where I want them.

Did anybody else feel that extra hour? I woke up at 8 7 and felt both well rested and not lazy. That was nice. Instead of hitting the streets, I hit the kitchen. I’ll save what I whipped up and my breakfast for the next post 😉

Good morning, good morning. Yesterday in Latin class after handing in my essay on Catullus 8 I was painfully reminded of a midterm in that class Friday. Uhmmm shit crap. Countdown 4 days to memorize the Latin vocab for many many dirty poetry words. Besides that the class was tolerable. My hunger was a bit raging after my half marathon run so I had to eat a loud, crunchy apple during class; I felt really awkward making so much noise but c’est la vie. Afterwards I decided for lunch I would not be wasteful and instead eat the other 1/2 can of tuna in my fridge. Problem? It kind of froze over the weekend. Yuck. Also my other apples had gone bad. Double yuck. Instead I salvaged some other left overs and made some more space:

Along with some steamed broccoli it was a nice veggie entree. I think I picked it up from Tina on Carrots N’ Cake; that’s one blogger who knows her food. Classes were a delightful snooze. My Greek History professor, who’s always quick to give his opinion, apparently considers The Simpsons as one of the best form of art in culture of any time. I can’t wait to see what that midterm’s like(jk, I totally can wait and would rather it weren’t next Friday). When I got out of Epic Poetry I had a great big box waiting for me:

The kind people at Clif sent me a box full of goodies. I contacted them after being in love with their Z-Bars for so long and realizing just what an extensive product line they have. Not only is their the original Clif Bars and Luna for woman(which, if you’re looking for reviews of, you’re looking at the wrong blog), but others including new MoJo bars and MoJo dipped. They sent me a medley of those and some of their new flavors, all of which I can’t wait to give a taste. If they’re anything like the Z-Bars, I’m going to be a very happy man.

The only other time I ran a half marathon was last Tuesday. If you remember from Wednesday’s post, I could hardly walk after that. Amazingly, I felt great yesterday all day long. So great in fact that I could walk the mile to Whole Foods to pick up two things I was absolutely craving:

I was seriously considering chugging a Zevia this morning with breakfast; unfortunately, I didn’t have this particular flavor which I wanted so bad. Thankfully I crave things that are on sale, so this 6-pack was only $4. The deli meat, as you will see, was for dinner. I love that at Whole Foods I don’t need to ask if the deli meat was treated with nitrates or what diet the turkeys were fed but can just eat it and feel good. For an Oprah worthy snack, I made oats:

When was the last time I had this combo? If I have to ask, I’m guessing the answer is far, far too long. This is another jar I’m almost out of; yippee for picking up $1 off coupons at home! Here’s to hoping it goes on sale somewhere so I can be really savvy. My work load has really picked up this week. I thought I had somehow dodged the Midterm bullet but apparently not. And since I consider blogging my “part-time job”, it’s not like I’ll be letting myself slack on that either. *Sigh* I think my perfect bubble of 7-8 hours of sleep a night, 1-2 hours running, and 1-2 hours walking/grocery shopping might take a hit this week. But I digress with this rant(isn’t that what blogging’s all about?). While I was catching up on reading, I came up with the perfect study snack:

The hamster in my mind was really running on his wheel for this one. I took a pack of gingerlicious cookies, mixed plain canned pumpkin with cinnamon and stevia, and mushed it between the two. This was just like a whoopie pie, except rung in at about 115 calories(aka, if I kept more gingerlicious cookies in my freezer than 1 pack, I would have ate a hell of a lot more of these). I didn’t need a big snack anyway because it was almost dinner. Despite the fact that I had pretty much the bulk of my meal I wanted to meet up with Adam at The Ratty to catch up:

The turkey was destined to be with the Trader Joe’s Cranberry Apple Butter. It’s almost identical in flavor to cranberry sauce and I’ll be sure to put a can on my Thanksgiving table. The broccoli I doused with tobasco sauce for something a little different. I honestly didn’t touch the carrots because they seemed over processed and oily. And the vegan chili was amazing. I almost regretted bringing my own main meal on a night when the vegetarian option was so good.

I read a bit of Hesiod’s Works And Days for my Epic Poetry Class. After learning a language, I feel like such a slacker reading anything in translation; that being said, the professor definitely didn’t assign this 800something line book in the original Greek and I was in no way, shape, or form prepared to read it like that. Apparently, Hesiod was the iron age where men toiled in labor for Zeus. I think that makes us the… Selenium age? What do they even use to make computers these days anyway? Midway through, while also “watching” Heroes, I answered to my name being called:

In all truthfulness, I did not want to eat this last night because eating it meant photoing it, thinking about it, and writing up this review. But it was definitely calling out to me for obvious reasons(I mean, just look at the flavor). So I totally gave in and it was definitely worth it. I suggest you read my full review which I’ll repost once I’ve had a chance to sample this all, but this bar has a lot going for it: salty/sweet, 70% organic, 1st ingredient being peanut, 9g protein, etc. Now I’m jazzed to try the rest. The rest of my night was lame, in a good way:

I made plenty of toast to eat up the bread in my fridge. I haven’t had the peanut butter cookie spread in too long. I can’t believe how many of you had never had cream cheese on a muffin; I’m not a bagel fan(that’s a whole other story) so I’ve made my peace with cream cheese on toast and muffins. Also, I love the combo of these vitatops and berry jams just as much as with peanut butters(yes, you read that right), especially when they aren’t too hot. Television for the night was decent comedy, but nothing spectacular. I’m now aware that I’ve moved on in my life from “Mom, do we have to watch the news?” to “Ooo, the 11 o’clock news is on, great now I can fall asleep to the headlines”. Life is a mysterious thing.

At 6:30 my roommate came home and went into his bed. I don’t know what’s worse: that he’s getting home at 6:30 or that I’m sometimes up by 6:30. Let’s call it a draw. It was definitely a drag-myself-out-of-bed morning, which I haven’t had in a while. Nonetheless I went to the gym and rocked out 8 miles in 65:52. It was most definitely an ipod assisted run. My gym friend, the 50+ year old woman who rocks it out on the treadmill with me, is back after being gone a few weeks–so exciting. I had the “I have early class but I want oatmeal” dilemma for breakfast. Oatmeal won out:

Isn’t it always the case that oatmeal wins out? This bowl was especially good with a heaping dose of vanilla powder and cinnamon. I also gave another Voskos yogurt a try, the Organic Plain Non Fat. I was sure to taste a little for review before adding peanut flour, vanilla stevia, and chocolate sunflower butter. This butter is so thick, it actually makes a really great addition to yogurt, almost like a granola. I love finding new ways to eat nut butter.

Despite it not being 10am, I can tell today will be an amazing day. First I walked next to a security card singing “it’s going to be a bright sunshiny day”. Then I found not 1 but 2 pennies heads up outside my dorm. And when I glanced at my emails I came across this:

Good morning. First off, I was very excited when Krystal from The Special K Treatment asked me to do a guest post a little while ago and now it’s up! Be sure to check out her fun and funky blog.

Yesterday morning my shorter run and hungry, hungry, hippo breakfast had me done awfully early. Usually I’m rushing out the door at 10:52 to get to class, but I had plenty of time. So much time I managed to squeeze a trip to the library(yuck) and grab a cup of coffee(yum) and still made it in before the teacher. After class I was excited because it’s that special time when the Farmers’ Market magically appears on my front lawn. I went straight to the creamery station and they had it!

How exciting. I was a bit disappointed when they forgot it last week. Unfortunately, they didn’t have fun and funky flavors like maple raspberry, but I took a leap of faith at guessing their plain was just as good. At $2 a bottle, it’s a bit of a splurge, but how often do you find homemade kefir? For some reason, I was not hungry during my usual lunch hour, so I just packed my lunch in all to-go containers:

This seemed like a smart idea. But by the time I got to history, I felt weird with 3 containers and a binder on my desk, so I wolfed down the veggies and soup and my bottle of water. After realizing I had sufficiently bloated myself with more water than I need in a day, I had to stop and recompose(I’m not really kidding here; I didn’t have another sip of water until 6:30 with dinner!). Thankfully, that meant I wasn’t hungry at all for my yogurt and I could sit back and enjoy it. The Pumpkin Flax Granola was sitting in there for 2 hours by the time I ate it and it still had crunch–now that’s one hell of a granola. At the end of my Epic Poetry class, I made a list and headed straight to Whole Foods since my dorm was the opposite direction.

Half of the list has question marks, meaning I wanted them but knew I shouldn’t buy them, and the bottom says “You have a lot of food. Only buy what’s necessary/you need to eat the other food. No granola or bars.” I leave myself the best messages; but if I didn’t “remind” myself of that, I’d totally go nuts in the store. On the way I had to make a pit stop at Staples to send out a fax, and headed to F.Y.E. here they didn’t have the particular video game I wanted. Shame because it’s suppose to rain for 3 days and I don’t see myself leaving the dorm much. When I was in Whole Foods, I did a pretty good job of sticking to the list. The sales this week weren’t as appealing as usual, anyway. Although they did have those amazing cinnamon rolls by Zen Bakery that I didn’t stand near for long. I got back to my dorm at 4:20 with these:

I picked up some Attune bars with the coupons I was sent to review them, and 2 tubs of cream cheese. As you must realize, I go through cream cheese a lot 🙂 But wait, they are regularly 2.69 each, on sale for 2/$4, and there’s a coupon in the new Whole Deal for $1 off 2 Organic Valley products. All in all, I got both for $3 total, which made them cheaper than the non-organic store brand! My mom raised me well in that respect 🙂

I didn’t want something sweet, so this bowl was pretty perfect as an afternoon snack. The dark chocolate chips have a much more mellow flavor and the salt really gives your taste buds a kick. The fire alarm went off, but I didn’t budge at all. Is it just me, or do school fire alarm tests in Elementary School completely desensitize you to fire alarms later in life? Plus, Taylor Swift was on Oprah and she’s kind of my celebrity crush. I got plenty of work done. Oh wait, that’s a lie. That’s what I meant to do. Curse you, internet(jk, I love you and don’t ever leave me). Well I may not have gotten work done but I did get dinner.

Yikes. Sorry for the photo quality. In The Ratty I try to have my camera out as little as possible so as not to embarrass the non-foodies I eat with; those crazy people need to learn to love their food more 🙂 I was so happy to see fish on tonights menu(yes, that’s what’s under the tomato stuff). I scraped off the toping and whatever was underneath to just get a taste of the salty, salty scrod. I had to go into the vegetarian line to find the sweet potatoes, because apparently people in the meat line aren’t the same who want potatoes. And there was a vegetable medley I just couldn’t, but probably should’ve, said no to. How is it that some of those veggies come out cooked the right amount and the ones right next to it are mushy as a rotten banana? What a mystery. After my friend went to some lecture to not write his essay *tsk* *tsk* I went back to my dorm to write mine like a good student… and instead watched TV shows online. The internet is a slippery slope. For dessert course 1 I tried my new probiotic friend:

With coffee, of course, because that’s how chocolate is best. This was my first tasting of the Attune line, a Chocolate Crisp bar. Umm, yum! This has probiotics, fiber, and calcium? You had me at chocolate. I really liked this for its smooth flavor and you can see my full review by clicking on that link. Like I said, getting all my Product Reviews into that format is going to take a little bit of time. But I hope to get it done within a month because of how clean and efficient it is for myself and you all. That chocolate definitely got me into a mocha mood:

After this I have 4 slices of toast left. Is this really my dorm? What happened to when I had about 3 loaves? Also, it’s very tricky to stop at 1 of those Newman’s Own Organic chocolates. My best advice is break off a piece, toss the rest out your window, and run to a bomb shelter to avoid scarfing it all down, because it’s that crazy good. While I was translating, there was either a) a pep rally or b) a drunken frat party occurring outside. Really, they sound the same when you get right down to it. My roommate came back around this time and started “doing work” which really annoyed me. After finishing some work and ignoring the noise I think I made the best dessert ever:

My fellow Peanut Butter lover, Jenny, is having dessert as her “Best Of…” theme this week. How awesome is that? I needed to get in on the action. I took a Zen Bakery cinnamon roll and topped it with low fat cream cheese mixed with vanilla stevia, and topped with vanilla bean sugar. This was like The Odyssey: Epic(that’s funny if you’re me and going cuckoo reading that book ;-)). On a sadder note, my bready carb stash is diminishing rapidly. I’m going to need to get some reserves flown in and fast to survive the rest of the week.

I talked yesterday about the importance of shutting down your computer and lights a while before going to bed. Last night could not have been a better example; I had my computer off 45 minutes before I planned on sleeping, and my lights 35, and falling asleep couldn’t have been easier. Unfortunately, I had some weird dreams about secret agents and a killing maid and… well let’s just not go there. All in all it was much better than usual and I was ready to run when I woke up. It clearly was, like usual, a treadmill morning; it’s about mid 40’s here for the next half of the week! Ugh, let’s not think about that. I decided 8 miles at a challenging pace was a good workout and ended up doing it in 63:57. When I got back to my room I was a little dissapointed to find that I didn’t have the ingredients or time for the breakfast I thought about in my mind running, so I had to work on the fly:

Before you think I’ve gone completely berserk, there wasn’t actually any cream cheese in that container; I merely needed something portable to put the yogurt in. I love the Trader Joe’s 2% because it’s a little bit richer and holds up well. The caramel with chocolate granola was heavenly–definitely a dessert tip to keep in mind. And you know I’m running low on bread when I use a granola bar to put peanut butter on. I might have to break down and purchase some english muffins later so that doesn’t happen again. In fact, today I’m expecting my shipment of Naturally Nutty seed butters, so I definitely need something for some good spreading! Is it wrong to be so excited about getting butter in the mail? If so, I don’t want to be right.

13.1 And Done

Believe it or not, coffee was not my well-rounded breakfast for yesterday. Rather, this was:

Oh, oh oh oh. Much better than a cup of coffee. I opened up a new pound of peanut flour to fix the yogurt, added pumpkin pie spice and stevia, and topped it with my new favorite granola. So so good. I love the little flax seeds in this which really add a super chewy crunch to them. I honestly had no motivation for peanut butter with my oats so I went with smart balance; I was kind of hoping for the omega-3’s in there to get some things moving that the coffee didn’t, if you catch my drift. By the way, I hope you all salt your oats. It adds a great last touch of flavor. I put plenty in at the beginning, and then add a little on the top at the end. It really goes great with sweet things like chocolate and maple nut butters.

On Sunday  I had a light bulb moment while running. Don’t you love those? Well not so much when the light bulb is that you completely forgot the whole reason you went to Trader Joe’s the day before. Yeah. Fun. To fix the situation, we took a trip yesterday morning back to Trader Joe’s and Whole Foods.

Because clearly you can’t go to one without checking out the other, right? We picked up a few things for lunch but mostly just browsed, as usual. I did end up getting some fun finds:

The Maple-Agave syrup, which I use for everything from oats to tofu, was the staple we forgot. I also found TJ Cranberry Apple Butter which I think is another seasonal item I can’t wait to give a go. Spooky Smores and a new batch of coffee were equally welcomed. As were these two Lifeway Lassi probiotic drinks which I got for 50 cents each with sales and coupons! I love a good bargain. For lunch I made a special request for snobby joes:

The hot dog bun was just a formality; this was so sloppy from the steak sauce/mustard/ketchup that I ate it primarily with a fork. The best thing about a meal seasoned to taste is that it’s always delicious. Apparently, when a bean or vegetable is the main part of the dish, my mom doesn’t think you need anything else. So we steamed up broccoli in the microwave and added chopped celery. Basically, this was a fiber-me-up lunch like no other. After lunch I didn’t want to spend too much time lounging around because anything I had to do was back at my dorm. I had a strawberry tooth and was dying to try the new Lassi drink I got in the car:

Unfortunately, this did not hit said strawberry tooth. I actually only took about 2 sips and put it down for good. It wasn’t thick at all, and the flavor was more of a generic sweetness than anything like strawberry. I usually at least finish products I’m not so fond of but seeing as how this was pretty much milk + sugar + probiotics, I let it go. I was particularly looking for something with a bit more of a tang like the kefir I got from my farmers’ market. Any recommendations out there for a good one?

After that bad experience I tried to just enjoy the car ride. I even managed to finish my readings and squeeze in a solid 30 minutes of not work. Oh I spoil myself. When we got to RI I asked to make a stop to grab something that would hit my strawberry tooth, and then we got to campus. I’ve realized I’m never in a great mood when I get back to my dorm, and it’s mostly because of this:

I could live without living out of a suitcase, or in my case, Whole Food, Stonyfield, and Abercrombie bags and a backpack. Thankfully the current plan for next weekend is for them to come to me if anything and I couldn’t be more grateful. After 30 minutes of folding, hanging, and organizing, I was done and could eat that special thing I mentioned:

This ice cream is the creamiest of the crop. It’s made with goat’s milk and is strawberry flavored with a balsamic vinegar swirl. It may sound gross but it works so so perfectly. And best yet, I’ve updated the product review page for it here so you can read all about it. I can’t wait until I have that going for every product, but right now it’s going at the rate of the Big Dig. Fortunately, all the great new product reviews I have coming up in the next few weeks will automatically be put into that format so look out for those.

At this time I very well could have gone to the gym and done some running or even cross-training. However, 2 things were on my mind. First and foremost, by 4:30 I certainly hadn’t been eating like a runner so I knew any flopping about on the treadmill I could do wouldn’t have been smart. I was asked if I kept track of my intake, and the answer is yes and no. I try to make sure I’m taking in 2500-3000 a day, but I don’t really keep track other than in my mind. And as for protein/carbs/fat ratio, I let the dice roll. I think most studies have shown that after a point of intake it’s all the same, and I definitely like to pass that point. The only thing I do do is keep sugars and refined grain low, which I really don’t have trouble with these days. My decission to lounge around was also persuaded by the fact that I hadn’t seen the newest Grey’s Anatomy. So, to fix the situation, I made a snack and did “work” to abc.com playing in the background:

Ignore what looks like dust; it was just english muffin residue. My body was weirdly craving cashew butter and I’m never one to deny a taste so I fixed up an english muffin. That episode of Grey’s, which I’m sure had low ratings against Pam and Jim, was perfect. It had funny and emotional going for it, even though all of the characters’ actions were pretty predictable(especially the patient dying of cancer in front of Izzy). Still I loved it. Unfortunately again, I don’t think anything could have made my computer run slower and I hardly got anything done. I really needed to step back and remember the days when logging onto the internet alone took 8 minutes of staring at a progress bar and breathe a sigh of relief when 5 open windows run perfectly.

I really didn’t have an appetite for dinner, but macaroni and cheese was at the dining hall. I took the inspiration and made a batch of my favorite brand(aka Trader Joe’s) along with some veggies from the dining hall. At the end I added a little maple syrup to everything, which I couldn’t taste but wish I added more of; I think maple, sweet potato, and cheese should all go beautifully together. Maybe maple powder would be more appropriate for the job. I think a big plate of veggies was what I needed in the end to get out of my eating funk.

I’m not even gonna lie and just admit I was in my PJ’s with a warm cup of coffee at 8pm ready to conk to Heroes. It was another don’t judge me moment but thankfully my roommate had gone off to study for the evening. The season is just starting to lose me with the crazy plot twistage with Claire. Sylar I could not care less about after all the drama he’s caused over the past few seasons. And the new hero with the power to see sounds is just a bit too out there. My night might have been better off with HIMYM.

3 things to say at this point. 1) The boy in that old has gotten so old they’re going to have to face the fact and call it 3 Men. 2) I brought 3 english muffins to my dorm because I didn’t think I’d eat them before they go bad. I ate 2 in 6 hours. Wtf? 3) Oh my God was that cranberry apple butter good. I’d never had it, so I was really excited to try it. It tasted just like that high-fructose corn syrup laden cranberry sauce from a can and I couldn’t have loved it more. It inspired me to make a whole new page for product reviews of my favorite jams. Definitely stocking up on these during the season. Inspired by Run, Eat, Repeat, I made the best thing my little dorm room hear could have asked for:

This was so good I had to go and make a recipe page for it. But basically all it was was a diced apple, 365 brand crunchy PB(nice and runny), and 25g Pumpkin Flax granola. Sometimes life’s not fair in a good way, and this is an example. It’s not fair that something that’s fruit, whole grains, and healthy fats can be so delicious, but I’m fine with it that it is. I’d be lying if I said a forkful of crunchy pb didn’t make its way straight into my mouth; I completely forgot how a little crunch and a little salt could marry so well.

This morning I did plenty of things different. I knew after yesterday I wanted to get a good, long run in; problem is Tuesday’s I’m usually pressed for time. I decided to set my alarm for 6:30, and got to the gym by 7. My aim was to run 90 minutes, but once I got going I just didn’t want to stop. I knew today was the day to break that next milestone, which I decided was to run a half marathon. I finished 13.1 miles in 1:49:51 after watching 2 shows on Cartoon Network and most of a Charmed episode. Surprisingly, I wasn’t famished for breakfast. In fact, nothing really drew me in, but I settled for a good ol’ muffin and cream:

Thankfully(or not), somebody was also a bit late leaving my house that morning, so I had more time than I thought to pack. For a 3-day trip home, I feel the need to pack as though all I’m eating is what I pack. 4 jars of nut butter and my coffee machine were necessities, of course. Because I was still eating breakfast in the car, we skipped the Whole Foods on the way home and got there by 1. I was very excited to see not 1 but 2 packages waiting for me:

So many exciting goodies here. In one of the packages was 2lb’s of peanut flour I ordered. I really liked my gift from The National Peanut Board, so much so I ordered these 2 pounds for myself. I can’t wait to see how the dark roasted contrasts in flavor to the light roast. The second package was an amazing surprise from my friends over at Nature’s Path:

Wow. I am so spoiled 😀 My good friend, Joy, from Nature’s Path Organic sent these over for me to sample and review.  Thank you, Joy, for all these great sounding products. She asked me if there were any in particular I wanted to try and I mentioned how among all their products their Pumpkin Flax Granola really stood out to me so she was sure to include that. Now, normally I reserve oatmeal and yogurt–as much as I love it–as just a morning and dessert thing. Well, special exceptions were made in this case because I just couldn’t wait, so I made a unique lunch:

Did I mention I also got my dad hooked on Naturally Nutty, so much so that he ordered some for himself and this was his Chocolate Butter Toffee I was stealing trying? Well now you know. Overall what can I say about this meal but that it was pumpkinrific. I actually wasn’t blown away by the chocolate butter toffee because of how remarkably similar it was to the regular butter toffee. But since I love their butter toffee I wasn’t too disappointed. The Pumpkin Flax granola was exactly what I was hoping for. I liked this a lot. It was crispy without being dense. A lot of granolas are either light and get soggy or crispy but very hard and dense; this was light but it remained fresh even after spending quality time with my yogurt. I could definitely make this a daily whole grain. We needed to do some Trader Joe lovin’ while I was around so I grabbed this and jumped into the car:

It’s definitely not one of my favorite because the peanut butter is a bit scarce and lacking in flavor, but as with any chocolate vitatop: even when it’s not good, it’s still pretty good. I also translated my Greek homework, which was a great break because I actually translated the exact story last year in another book. Lucky, huh? I can’t wait to be tested on it for the 3rd or 4th time. We hit up Whole Foods and Trader Joe’s in a reasonable amount of time. I picked up ice cream at the first store so that really got my booty moving in Trader Joe’s to get in and out as quick as I could. Overall I would call it a great success:

I grabbed fruit, because apparently that doesn’t exist to my parents besides bananas. I also got 2% greek yogurt from Trader Joe’s; this is part of why I love the pineapple Chobani so much and I completely forgot TJ’s made their own! There was also english muffins and whole wheat cinnamon raisin rolls via my new favorite bakery. They’re 200 calories each with little sugar and a great, yeasty base–heaven. I grabbed my favorite ice cream on sale, snickerdoodle! And to round it off I picked up some more vitatops and Stonyfield plain lowfat yogurt. Oh, and I got some Trader Joe pumpkin whoopie pies which I bought especially for when we see my relatives today; trust me, it’s taken a lot of restraint to keep away from those. Well I definitely needed a snack, and boy this was a good one:

I channeled my inner Jenny to make this, and oh my God was it good. I heated up a cinnamon roll and mixed 1 tablespoon greek yogurt with vanilla stevia to make an icing. Then I sprinkled on my special vanilla sugar from Whole Foods. This was perhaps one of the best cinnamon rolls I’ve ever had. When I say that I mean this actually topped the ones from the mall with 1000 more calories. I’ve never been lucky enough to have a Holey Donuts cinnamon roll, but I bet this beats that, too. Oh my God. You have no idea. Ok, ok, I’ll stop gushing. My afternoon “project” was to make something for seeing the relatives. Of course I went with my new favorite recipe:

Vegan Pumpkin Molasses Cookies! Holly definitely showed her inner genius here. I modified her version a bit but it’s impossible to improve on perfection. My cousins’ grandmother made a great molasses cookie. These aren’t quite as good, probably because they’re way lower on the butter and sugar, but I’m hoping they’ll enjoy them along the same strand. And, you know, if they don’t love them I certainly do 😉

Well we(read: I) decided we should go out for dinner tonight. The first and only place to pop into mind was Tomasso. It’s definitely the classiest, most amazing restaurant within 30 minutes of here, and makes Italian food we just love. Best yet, the restaurant is very conscious about serving “food” that’s local and organic when possible. You’d be hard pressed to find anything processed in their kitchen. The entire menu looked amazing and deliciously seasonal. I decided to order of the menu and go with the special of the night.

This fish was absolutley delicious. When they say local and fresh, they mean it; my guess is this was caught this morning or yesterday. And it was so rare that I couldn’t have (not) cooked it better myself! Yum. I felt a little naughty adding some sea salt to it, because it was so nicely seasoned; the truth is I just salt everything including the soups at my dining hall, so I salted it in secret. My parents decided to get a pizze:

I’ve had this as my main before, and let me tell you this: It’s the best pizza I’ve had within the United States. I had to cut myself off a piece just because it was there. They also ordered a ton of appetizers to split amongst themselves. The only one I tried was the polenta fries:

It was OK, but not something I’d order. It tasted a lot like something I could make myself with some polenta, milk, and a mild cheese. When I go out to dinner, I really like to focus my meal on a great protein like fish or beef rather than something carby; I can always make myself pasta but I’m not going to go out and butcher a cow for my dinner(I let someone else do that because it’s less messy). Overall it was a great night and I’m glad everyone enjoyed their meal.

While my dinner was fantastic, it wasn’t as filling as my usual veggie-fest nights, so I quickly grabbed this from the freezer:

I love my snickerdoodle and I can not lie. I had to enjoy this with a cup of coffee; I’ve never understood desserts that involve coffee on top of ice cream, but to each their own. The perfect show for me was on TV at 8: Good Eats Salt. I never learned so much about salt. Thanks, Alton Brown! I never liked Good Eats when I first started liking Thee Food Network. I always thought it was too much talk and not enough cooking, plus the recipes always confused me. Once I got a food scale and realized that recipes really were all about the science behind them, I started liking the show a lot more. For instance, I know that yeast makes things rise which makes them light and airy and makes me want to eat them again:

I used a little less vanilla stevia in the yogurt which gave it just the right sweetness to not overwhelm the roll. I seriously think this could convert the fickiest of healthy eaters. I intended to catch up on TV shows on the internet and homework for the night. What actually ended up happening was the 10th anniversary of Good Eats! What a great special that was; I love how he sat down, came up for the concept of some crazy cooking show that’s never existed, and got it done. For some reason, the night did not seem complete until I had my oats:

I love that I’ve corrupted people in this house enough that I don’t need to bring certain flavors because I’m positive if I crave them there’ll be there. Case in point: White Chocolate Wonderful. This was good eats for Good Eats. And I forgot how good of a melting peanut butter this is. Peanut Butter & Co., 365 Brand, and Crazy Richard’s are all my staple for oatmeal because they get so liquidy that it’s joyous.

This morning was a bit of a mess again, but a mess I’m glad to have done. You see, I greatly underestimated how cold it was when I decided to run. Now Mr. Weatherman is telling me it was 30’s and 40’s, and I’m definitely an 80’s and 90’s boy. Well even though I couldn’t feel my fingers a mile out, I figured I’d keep going while I was already running. Towards the end of the run I had major digestion… let’ just not go there and instead say I was dashing for the bathroom when I got back before thinking about stretching. On the bright side, it was a goregeous run through the back roads of Marlborough and Southborough and I got to listen to my country songs which really helped me feel grounded. And those issues probably sped me up to finish 8.5 miles in 1:09:25. If Sunday’s good for anything it’s breakfast and circulars:

I’d be lying if I said this wasn’t on my mind the whole run. The pineapple Chobani is simply one of my favorites; my mom who almost never eats yogurt had one and liked it, too! I think it must have been the cream because she uses 2% in her coffee and it’s obvious she misses the real stuff. Normally I don’t do packeted oatmeal; it’s much better in my mind to do 20g oatbran, 20g irish oats, and liberal salt and make my own. That being said, Nature’s Path Organic sent me some of their instant oats to try and this one really appealed to me. Rather than have me gush about it here, however, I’m going to gush about it here. This is how I hope for my whole Product Review section to look in the future. Let me know if you like it; I think it makes things much neater and simpler for me and you, not to mention I don’t have to worry about deleting pictures or old posts for space.

Today like I mentioned we’re going to see the relatives. There will be something bright red on my dish that was living about 20 minutes before I cracked it open. Ok, not the most appetizing description, but any guesses what that might be? 🙂
