A “Basic” Brownie Recipe

I come from the line of thinking that you should never make things from a box: Either make it yourself, or buy it from someone who made it themselves. Things just taste better that way, don’t they?

Last night, I had a brownie attack. Don’t we all get those? I used to swear by a recipe like this one by Rachael Ray.I love the tag: “We can’t believe people are still using boxed mixes!” However, since then my “basic” has become anything but. Of course, there’s the gluten thing; I’ve also steered away from using eggs in baked goods for personal reasons. And, while I’m at it, I usually figure why not take out the dairy and make them vegan just in case? In case of what? I have no clue either. But that’s my line of thinking. And so I made brownies as “basic” as I could. And you know what? They turned out darn good. And because they were vegan, I got to lick the pan 😉

Basic Allergen-Friendly Brownies

Ingredients:

  • 1 cup GF flour mix
  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 3/4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 cup non-hydrogenated margarine
  • 1 tablespoon olive oil
  • 1 tablespoon white vinegar
  • 1/4 cup non-dairy milk(water in a pinch)
  • 1 flax egg(1 tablespoon flaxmeal gelled in 3 tablespoons water)
  • 1 teaspoon vanilla extract
  • 3 oz chopped dark chocolate, or 6 tablespoons vegan chocolate chips

Preheat your oven to 350 degrees. In a big bowl, sift together the first five ingredients. Melt the non-hydrogenated margarine and add in the olive oil, non-dairy milk, vinegar, flax egg, and extract. Pour into the dry mixture and mix until incorporated. Fold in the dark chocolate and pour into an 8×8 baking pan. Bake for 30 minutes or until a toothpick comes out clean.

When you’re living with allergens, life isn’t simple. Good thing these brownies are. And tasty!

I’m ashamed to say this was store bought vanilla bean coconut milk ice cream. When you get used to the home-churned stuff, it just feels naughty coming from a carton. Regardless, this was soooo good. Isn’t this how every weekend should be? 3-days long and full of brownie sundaes? I think so.

You could use 3 ounces of fancy chocolate for the recipe. Or you could use vegan baking chips and save the good stuff for yourself to eat straight. I think you can guessed what I chose.

And a big ol’ bowl of oatmeal with peanut butter and sea salt tasted good after all that chocolate. Sometimes, you just need to detox.

After all that baking/microwaving, I did not feel like much for breakfast this morning. I really wanted a big cake donut and to call it a day but that wasn’t happening. Thankfully, I found this chocolate chip muffin from Gluten Free Life to eat with some earth balance. Just like my brownies, you’d never guess this was gluten-free! And so many chocolate chips. Yum 🙂

Anything exciting on tap for Memorial Day? I had a pool party in store but apparently it’s been rain checked since the pool won’t heat up 😩 Alas, we have a grill, we have neighbors, I’m sure we’ll find some way to spice up Memorial day.

Marriages Made In Heaven

News all over Twitter is that there was a marriage made in heaven today for one blogger. Allow me to steal that and totally abuse it for thematic purposes.

I think it’s well documented that me and chocolate have a deep, deep love affair. Would you bet it’s so great that I was willing to run 5 miles down the road for a gluten-free brownie at 11am? The only problem was that the store opened at noon. Whoops! At least I got a good run out of the deal?

It’s great that raw veggies and Summer salads marry so easily because then I get the best of both worlds. I haven’t liked corn for the longest time, until I tried it raw today thanks to Lauren(who just rocked a Boston half-marathon!). Anyway, raw corn = amazing. It was like adding sugar to the salad and went so well with olives and olive cashew nut cheese. Yum!

Purely Decadent Chocolate Peanut Butter Swirl Coconut Milk Ice Cream

Chocolate + Peanut butter. Yes. As much as I want to marry chocolate, I’ll allow it to have its mistress. This has to be one of my favorite ice creams. It’s so perfect, I don’t feel the need at all to try to make it myself. I will just bask in its c+pb perfection.

If I’m like a married person in anyway, it’s that I’m always over a hot stove. Today, I decided to make my own BBQ sauce! The recipe isn’t perfect or flavorful enough yet, so I’ll keep it in my pocket. But it’s so much fun to make your own condiments, I have to say, you should go out(or in) and try it!

Chobani With Peanut Butter And Local Raw Honey

Is polygamy legal? Because peanut butter totally has a thing going with local raw honey. As it should; Nothing beats the sweet + salty combo in my books. I ate that over a plain Chobani because really lacking on the protein as of late and that definitely helped to be a filler.

There was also an apple consumed before dinner. That is not invited to the wedding. At all. The last few apples I’ve had have just been way too sub-par. I think we need a “break” like Ross and Rachel.

Homemade BBQ Tofu, Sweet Potato Fries

Everything came together perfect for dinner. It was a symphony of tofu marinated in BBQ sauce and grilled along with some salty sweet potato fries. The onions that were in the sauce got strained out but rather than throw them away, I used them as a topping. Brilliant! They were oh-so flavorful. Have I mentioned how much I love onions as of late? I think that’s another (stinky-breath) marriage right there.

Sweet or salty? Even with my abundant love for chocolate and ice cream, I simply couldn’t live without salty food(hello, Indian cuisine!). That’s probably why I’d sooner opt for a bottle of soy sauce than BBQ sauce. I know they make reduced sodium; do they make enhanced sodium?

Let’s Make That Workout Happen

Let’s face it: When you’re just out there running for fun, it’s a lot easier to get “bored” with running than if you’re motivated by a race, or weight loss, or have some crazy deal where you get paid per mile you run(If I had a deal like that, I’d be out there all day). The truth is it’s just hard to love a tough workout 100% of the time. Here is how I get workout-ready in my morning.

I always start the day with a big breakfast, workout or not. My perfect trifecta is oatmeal for fiberous carbs, peanut butter(cinnamon raisin swirl PB & Co. here) for healthy fat, and greek yogurt for protein. To be completely honest, I don’t love Greek yogurt here always; a lot of days I’d be happiest with 2 huge bowls of oatmeal and nut butter. But greek yogurt is a great source of probiotics and protein. And starting your day with protein has been shown to boost metabolism and curb you late-night hunger. I can certainly scoop some Fage for that.

When I know I’m about to run, I always steal some chocolate from my stash. Call it a bribe; it’s as natural as putting on my shoes. “Rituals” lie this can keep you on a regular exercising route.

Today, my workout motivation as music. I just downloaded Telephone(I know, I’m terribly behind) and Love On The Inside by Sugarland and made a big playlist out of them. I definitely couldn’t have gone so far without that energy pumping through me. For some, it’s music. Other times, it’s whatever’s on the TV at the gym. And, of course, there’s always the beautiful nature of the outdoors. Whatever it is, distractions can be some of the greatest ways to make a cardio workout enjoyable.

Afterwards, it’s important to hydrate. In fact, I plan this beforehand by sticking water and anything else I might want in the fridge and knowing just where it is to grab it to drink while doing stretches. Without stretches, the next workout might not be as enjoyable…

And, of course, you need to refuel. There was a lot of hype last Summer about chocolate milk being the “perfect drink”. Really, what you need is food. Drinking carbs is certainly one way to get energy back in to your system. That just doesn’t fit me, personally. For myself, I made a “dream salad”(as in, I dreamed this up all run long): Spinach, avocado with lemon juice, sauteed onions, and toasted cashews. If this doesn’t work for you, feel free to go back to the chocolate milk.

And it never hurts to have a little more running motivation. Sundae Friday, anyone?

No matter how difficult it is, there is nothing that tastes better than homemade ice cream. Can you see the vanilla bean specks and thick chunks of organic dark chocolate? Maybe I got hit by a car on my run and went to heaven and don’t know it yet.

Flash forward to 2 hours later when I hadn’t sat down at all and realized it was one of those 2-lunch days.  Now I’m relaxing with oatmeal and cashew butter and a pineapple Chobani. Glorious, no? I’ve been trying to churn up a real good dessert. It’s been a battle so far; we’ll see how it comes out tonight. We’ll see…

Divine makes the best milk chocolate on the planet. Their secret ingredient? Dried cream. So fattening and rich it’ll knock your socks off. Luckily, this was late enough at night that I wasn’t wearing socks anymore.

When I woke up, I just needed food so I grabbed a vanilla goat’s milk yogurt and a blueberry vanilla honest foods‘ granola plank. I was a huge fan of the vanilla goat milk; now that “was like ‘woah'”. The granola plank wasn’t bad, either. It definitely satisfied the cereal craving I needed.

And then I realized I needed to run now or it would be too hot so I grabbed this plus a little more chocolate and got out the door. I know you aren’t supposed to swim 30 minutes after you eat, what about running? It turns out, I have an iron stomach.

And it was hot! I came back dripping in sweat; you could have fried an egg on me but a) it would have been salty as hell and b) my iron stomach did not want food at the time.

Instead, I tried the grape Bot water, which was perfectly lightly sweetened and packed for refueling electrolytes. And now I think the iron stomach wants more! So I’m off to the kitchen.

Do you wear socks when you sleep? No way, Jose. When I’m in bed I want to feel free to wiggle my toes. I can’t understand wearing socks in bed unless you have really cold feet.

Back home I made a quickie-early dinner with a stick of Next Generation Dairy Raw Probiotic Mozarella and part of a can of chickpeas, all over spinach dressed in Foods Alive‘s Sweet & Sassy. Yum! for a sweet dessert, there was an Artisana Almond Butter sample eaten with a spoon. I swear it tasted like marzipan, it was that good.

What do you buy in bulk? Working with a 3-foot fridge and a tiny room, it was hard to buy anything in bulk all year long. Since coming home, I’ve started buying 5 pound bags of organic potatoes. And now I’ve done the math and discovered that if you buy the gourmet baking chocolate by the pound from Whole Foods, it’s cheaper than buying chocolate bars, so I’m sure I’ll be taking advantage of that from now one.

I’ve been there twice and both times have been pure magic. Looking back at the pictures makes me want to go again. Of course, all of this was pre-foodie days so there’s no pictures  of the mountains of pizza I consumed.

Last night, I decided we’d take a staycation to Italy. Really, do you have to go 1000s of miles to eat good food, overindulge, and open your wallet? Not really. You can do that all at home!

Dinner took place at my favorite Italian restaurant nearby: Tomasso Trattoria. This place is the real deal; I was listening to twitter updates from them all day about how they got a fresh pig in and were roasting it. Heaven.

I loved how rich and fatty and well cooked the meat was; a little salt and it melted in my mouth. And I think white potatoes are my true passion; these were divine. Another great meal in Italy, err… at Tomasso’s.

Dreamy. Creamy. Deliciouso. Do you know the difference between gelato and ice cream? Ice cream legally has 10% or more butterfat, whereas gelato has less. It’s also churned at a slower rate, meaning less air is added into it and the product is denser. That was my Italian history lesson for the day.

The best part of a staycation? No jet lag. No unpacking. And only a slight sense of “OH, I really need to hit the gym now after that”. Yes, I do believe I’ve found a love for staycation, along with my pre-existing loves for local raw honey and butter toffee peanut butter. How To Have A Staycation

1. Pick the cuisine. Italian? French? Hell, you could take a whole tour across Europe if you want!

2. Find the local spot. Look for the best “authentic” restaurant. Now is not the time to drive around and stop at the first place called “Georgio’s” only to find it’s a greasy pizza joint.

3. Plan the night out. From dinner to dessert, just have a plan and things will run smoother.

4. Make use of groceries. Now might be a good time and excuse to buy that French wine you’d been eyeing that was out of your budget. Like my gelato, the food frontier doesn’t just have to be in a restaurant.

5. Forget about the costs. Since a staycation is meant to be taken in place of a mini-vacation, treat it like one and let your worries go for the time being.

6. When in doubt, take a rain check. Didn’t get reservations at the restaurant of your dreams? Unless the staycation needs to be taken that day, put it off until you can do it right.

What 2 Semesters Have Taught Me

To be honest, I wasn’t sure about doing a post like this. Would I be flaming any fires? Would I or anyone be amused? If ever pen was going to be put to paper(or fingers to keyboard), it was going to be when the memories are fresh. So I dove right in…

What I learned…as a blogger

  • I kicked off the year buying my own domain and haven’t looked back.
  • I’ve learned that you might get anonymous commenter telling you you eat too much broccoli, but that really you couldn’t possibly eat too much broccoli
  • You might also commenters telling you your nights are lackluster and plugging their own blogs. But if you enjoy your time, and someone is sitting at a computer screen reading things they don’t even like, who’s really losing out?
  • I had my first blogger meet-up.

What I learned…as a student

  • I learned some really really dirty words in Latin between Catullus and Petronius.
  • I’m a much better essayist than I give myself credit for.
  • Acing a class you take without a grade might be a kicker, but the more important part is taking a class stress-free and for fun.
  • Sometimes, you need to devote a whole week to mental health.

What I learned…as a runner

  • The treadmill is not the dreadmill to me; to me, it’s a friend
  • You meet good people at the gym, some of whom you might inspire.
  • You can always achieve your goal with enough effort(and fuel).

What I learned…as a foodie

  • Grezzo’s first inspired me to eat more raw, and then it closed.
  • I can now cook a mean hash.
  • With an oven, eating healthy doesn’t have to be hard; it just takes time.
  • Garden Grille and Nick’s On Broadway will both be getting my business next year.
  • The Whole Foods salad bar makes the best… everything.

What I learned…as a person

  • It’s OK to walk through a room of people playing beer pong in your PJ’s to get ice cream.
  • Emma Watson can be pretty elusive.
  • The Today Show has become my number #1 and only source of news.
  • If you want to go to bed at 9:30, who the hell is stopping you?
  • I fell in love. Not with anyone, but with Rhode Island. The smallest state has taken a big place in my heart, much like it has for Heather and Sabrina. I don’t know what to say; I didn’t expect for this to happen. I’ve lived in the same house 17 years and this was the first time I could see myself living anywhere else and being happy.

Regrets?

Well, here are my regrets from the last 12 hours.

I regretted not planning out the slivered almonds beforehand, so that when I went to grab them everything fell out of the cupboard and a bag of guar gum even fell into my oats. After a little clean-up, I was good to go with Earth Balance almond butter.

I regret not getting plain greek yogurt more often, because how good does it taste when you get to add your own jam, really? It’s even tastier when you get to add your yogurt to the jam jar instead of the other way around 😀

But, in general, no regrets. How could anyone live a certain way for the better part of a year and regret it? That’d be a nightmare. I don’t regret that my greatest intake of alcohol over the year has been from vanilla extract. I don’t regret not joining some god awful chorus group that meets past when I want to be in bed. I don’t regret the amount of time and effort I put into things. I just don’t live with regrets, and that keeps me happy. My first day of freedom is cold, and rainy, but I’m pretty sure that makes it perfect for movies, popcorn, and staring at the piles of things to put away thinking “Well that’s just not happening today.” What’s the weather like where you are?

A Different Kind Of Raw Ice Cream

I think I’ve been pushing the envelope in my latest insanity.

On Sunday, I made up this raw ice cream, which was absolutely delicious.

But last night, in the fury of studying, things got a little… wacky?

I had a really bad craving for vanilla ice cream. Not coconut milk. Not anything other than dairy. Of course, this was the 1 thing we didn’t have. To appease that craving, in the ice cream maker I threw

  • 3 cups raw whole milk
  • 1/4 cup vanilla infused sugar
  • 1/4 raw honey
  • 1/2 teaspoon guar gum

Considering I didn’t have half the ingredients for real ice cream and made this with no patience, it was actually pretty good. It tasted nice and sweet and hit the exact spot I needed it to. It might not have been thick and creamy, but actually it came out much like a Wendy’s frosty. Yum!

For breakfast(eaten in the car), I just cooked oatmeal and topped it with Naturally Nutty‘s chocolate cherry peanut butter and had a plain Oikos with cherry butter and Whole Foods’ trail mix. I love getting the plan yogurts because they’re so versatile! Except I had to sweeten the cherry butter because it’s a bit tart on its own. All together it was delicious.

During the test, which took 2+ hours, I sipped on a gingerade kombucha. Let’s just say I am very glad to be done with that one. It was just an awful scenario. Part of the test was answering essay questions, and the questions we had to write on were chosen by the roll of the dice. And it was not lucky snake eyes. Whatever. It’s done and I’m free!

For dinner, I bought something else but ended up craving a burger and fries. This would have gone great with my raw milk frosty. Anywho, these were some of the best fries ever. And all they were were potato coated in EVOO and baked for about an hour! But seriously amazing. I timed this well, too, because as I was grilling the showers came in.

Summer rain: love or hate? I would hate to have to run in them. But in general, summer showers, a little lightening, and a Little People, Big World marathon would make for the perfect night.

We packed up the car last night and made it to the Whole Foods in Providence in record time. Of course, we hit up the salad bar while grabbing groceries. My plate had some avocado-rubbed kale, sweet chili tofu, and pepper strips. The tofu was to die for. I can’t begin to explain how crispy on the outside and juicy on the inside it was. Businesses and houses were destroyed, and Whole Foods was holding an ice cream social to help raise money for those families. I can definitely get into ice cream for dinner for charity.

I was hoping they’d break out the fun and funky pints for this, but they just had 365 vanilla and chocolate :-/ I got vanilla ice cream with organic chocolate sauce, 365 whipped cream, and a natural maraschino cherry. Sundaes always taste better when someone else makes them for you with a heavy hand. The 365 vanilla is OK, but I’ve definitely branched out from dairy-based ice cream and have had better. Other fun finds(but not purchases) at Whole Foods were the new So Delicious flavors in stock and Daiya vegan cheese!

While working on some homework not-so-hard, I had the snack of champions: an apple, mint dark chocolate, and decaf coffee. Could I have had a little more sugar last night? It was all for a good cause–let’s keep that in mind. Last Summer I managed to switch from caffeine to decaf coffee; this year it’s been about weening off the stuff completely from the acidity, but I do have about a cup a day, which is probably an ideal balance of antioxidants and acidity. I don’t think I could/would give it up completely.

Finally, for breakfast I was craving craisins. I just wish there was a bar called that so I could have known what to eat so much easier. I mixed Crofter’s Organic Europe jam in a plain chobani and topped with Tierra Farm‘s organic dried cranberries–holy yum were these soft and squishy! On the side I had oatmeal with another egg and some Teddie’s pb sweetened up a tad. In class I got bored and calculated that I ate around 50g of protein and all before lunch! Sure, you could just take 2 scoops of a powder and call it at that. But I love getting so much nourishment from real food.

Do you have any cooking goals? 2 of the things this weekend inspired me to do are 1) use my food processor to make more complex and delicious raw foods and 2) learn to fry tofu. An ironic pairing, no? Well, if things go my way today, I’ll be incorporating one of those into dinner… Is there anything you want to learn to do in the kitchen?

If you looked in my closet, you’d find a small fortune of chocolate. I could (poorly) feed a third world country with it. Divine’s milk chocolate wasn’t the best I’ve ever had, but it was pretty damn good–nice and creamy with a sweet finish. It’s also got a spick and span fair trade ingredient list, which I loved.

If you looked in my room at 10pm, you would have found me out cold. I was exhausted last night and determined to get my 8 hours of sleep in.

If you looked in my Apricot Goji Pranabar I devoured this morning before hitting the gym, you’d find no actual goji berries, just goji powder. That much I did not like, but the rest of the bar was really good. I loved the sweet and nuttiness of it, and that it was 75% raw for optimal nutrition. It would be much better named Apricot Cashew, though.

If you looked in my Honey Vanilla Bean Voskos yogurt this morning, you’d find raw cashew butter mixed in. Why? I am just becoming less and less a fan of fat free greek yogurt. I love it, but it’s not satisfying without a little fat in every bite for me. So I thought I’d add a little in!  Unfortunately, it also tasted like too much like cashes :-/ This is my plea for Greek yogurt companies to make more 2%/full-fat flavors!

If you looked in my trash, you’d find a tub of cream cheese taken from the back of the fridge that smelled like old gym socks. That was why I added cashew butter and not dairy fat to the yogurt.

If you looked at my checkings account right now, you’d find one mysterious withdrawal that I need to make a call about because I did not make it >:-(

Where would I have to look to find your dirty secrets? By the way, I did not watch Food Inc. last night because it wasn’t on like they said it would be! Bummer! Apparently, we Tivoed it at home, so I’ll be able to watch it at my own leisure over the weekend.
