How Do You Feel NOW?

Posted on March 11, 2010. Filed under: Daily Update, Product Review | Tags: , , , , , , , , , , , , , |

Morning, all! How are you feeling today? How about right now? If the difference doesn’t make sense, hopefully it will soon. Right now I feel on top of the world because of some good news I’ll share at the end 😉

Love Raw Foods Cashew Butter

Last night I broke out this new cashew butter I was sent to sample and review from Blue Mountain Organics. It’s raw so the nuts have only been soaked, low-temp dried, and slow ground. I was interested to see if it would still taste as “nutty”.

Chocolate Avocado Pudding With Raw Caramel Sauce

I was really craving something caramel, but wanted to keep it vegan while I could. I read on a website that an equal mixture of agave, maple syrup, and cashew butter makes for a raw caramel sauce and gave it a try. The result wasn’t incredible but it was pretty tasty no less; with a little sea salt it definitely tasted more caramel-like. But I think for something really raw and caramel you’ll want to try lucuma powder(not like I ever have but it’s what I’ve heard). Anyway, it went well over chocolate avocado pudding made with stevia and almond milk.

Banana Oatmeal With Raw Cashew Butter And Maple Syrup

For a better taste of the butta’, I went with a bowl of banana oats with 1/2 a banana and the grains for a small bowl, along with a HUGE dollop of cashew butter and some maple syrup. I loved how sweet it tasted, even without the syrup. And the consistency was nice and airy. I definitely wouldn’t have known there was anything “different” about it because it was raw; it tasted like cashews should. And I equally loved watching Modern Family while eating this; how hilarious was the turtle plot line?

Oatmeal With White Chocolate Wonderful

One thing to know about me is I like to go to bed FULL; not hungry, or even satisfied, but feeling really well fueled. On days with long runs in the morning, I can go 14 miles and 3 hours without having time to eat, so I definitely need that night time energy. When I asked myself “How do you feel now?” after that first bowl, I knew I wasn’t there yet and made another with white chocolate wonderful. That hit the spot.

Making Raw Chocolate

As it turned out, when I woke up, I felt more or less like I’d been hit by a bus; clearly, it was not a runner’s high or anything. Still, I wanted to get to the gym. 3 times I started and stopped walking. My excuses to keep going were always something like “I might feel like going later and would have more time now” or “the weekend would be so much better for a rest day”. Both of those thoughts were true, but then it hit me: I don’t feel like running now and that’s when matters. Maybe I will feel like going to the gym later, and if so I’ll have to find the time to squeeze in. But instead, I spent my morning doing something more practical: Making raw coconut oil chocolate 😀 This was a triple batch I made into 3 bars for refrigeration.

Chocolate Avocado Pudding With Raw Chocolate, Soy Yogurt With Hemp Seeds

Breakfast ended up being another expression of feelings. I felt hungry earlier than usual, so I ate earlier. I felt like eating vegan and not oatmeal, so I avoided oats and dairy products. And I had a definite sweet tooth, so I might have gone a little chocolate/stevia happy. Isn’t listening to your feelings great? I had a So Delicious soy yogurt with Bob’s Red Mill hulled hemp seeds for protein, and along side that more chocolate avocado pudding(stevia sweetened) with 1/2 a batch of coconut oil chocolate on top. For the pudding, I cracked open a container of my secret ingredient…

So Delicious Coconut Milk Kefir

You can really use whatever milky liquid you like in the recipe–it’s only 3 tablespoons anyway. Usually I use almond milk since I always seem to have an open container, and occasionally I’ll use coconut milk but that’s a little much to use all the time. A good option is this coconut milk kefir, which is almost as thick as full fat coconut milk, much lighter, and has probiotics to boot! It’s a bit on the pricey side, but I let myself grab some whenever it’s on sale(which it is in the New England area at Whole Foods right now fyi).

Another reason I let myself get a little “desserty” with breakfast was because I got really good news right before making it. I’ve been a little secretive with all the extra things I have going on this week; some of that is for other’s privacy, some of that is because they’re boring things I wouldn’t trouble you with. One of those “boring things” was an optional Greek exam put on by the Classics department here for freshmen. As it turns out, I came in 1st along with a classmate of mine and we both got $875 in prize! Maybe now I can afford a new bowl that’s not plastic, made for a 5 year old, and bright “apple green”? 😉 Of course, that doesn’t excuse me from actually going to Greek class, which I need to do now 🙂

Show The People What They Want

Posted on January 28, 2010. Filed under: Daily Update | Tags: , , , , , , , , , , , , , , , , , |

For the past two days, my most viewed page(besides the Home page) hasn’t been my In Defence Of Saturated Fats, my rant on Nutella, or even My Superfoods. Nope. I’m not even sure you’re reading this; the way things have been, you might just be looking at my Chocolate Avocado Pudding recipe. Is anybody out there? Helloooo. Aww, hell. I’ll just give you what you want to see.

Probiotic Chocolate Avocado Pudding

There? Happy? Because I definitely was eating this. I think the fact that I can make this in my dorm room goes to show just how easy it is. For some reason, though, I could not get this to be sweet enough. I practically saturated it with stevia; I think my sweet tooth is officially retiring and moved to Boca Riton. He’s lived a rough life. He had to listen to some God awful auditioners on American Idol like there were last night. He didn’t have to eat half the things Bear Grylls did on Man Vs. Wild, which I watched while the president spoke. Did anybody know that Bear is a vegetarian? Well, when he’s not eating a fish eyeball for water, that is. But apparently so–go figure.

I wanted to be able to show guys oats in a jar…

Agave Sweetened Smart Balance Peanut Butter

But something tells me this one was just a bit too full. Just a bit. Maybe? You’re going to have to settler for in a bowl:

Pumpkin Oatmeal With SB PB And Nutritional Yeast

Yum! I don’t think I could ever get over this combination; the pumpkin, nutritional yeast, and sea salt make for a sort of sharp cheddar–it’s divine. Why did I never know about this stuff before learning more about veganism? Nutritional yeast is something that should be in every household, meat-eaters or not. It’s so versatile! Speaking of veganism, I realized after yesterday that I “accidentally” ate vegan all day except for a milk chocolate peanut butter cup with breakfast; how random is that?

This morning, I set my alarm for 6:15. Besides the fact that the volume was WAY too loud, I just kind of stood there wondering “why?”. Well, I knew why: I wanted to run before class, but this year it’s going to be a little more difficult. I considered going back to bed and trying to squeeze a run in sometime later(even though this isn’t really practical either), but in the end I just went with my first thought and hit the gym.

Treadmill Stats

Once again: This was hard! How was I running like I was before break? I didn’t realize walking stairs and running would be so different but apparently so. I probably need to figure out how to cut it back/do cross training to “fill time” I would otherwise be running, but I just don’t know; this half-marathon is feeling a lot harder now :-/ I didn’t have much time to shower/make breakfast/prepare for class, but I squeezed it all in.

Pumpkin Oatmeal With Pistachio Butter, Pomegranate Chobani With Dark Chocolate Chips

Pumpkin Oatmeal With Pistachio Butter

All nice and portable to-go. I bought a pomegranate Chobani yesterday knowing I’d need somethign I could grab. The pistachio butter made with Tierra Farm‘s pistachios goes so well with pumpkin: It’s orange, green, salty, smooth, delicious, and–best of all–alliterated! I tried thinking bout how the dark chocolate chips would fit in a p, but no luck. Oh well. They perfectly hit the spot.  I ate most of this in my 9am Greek class. It looks like a non-intimidating work-load. And the grad student teaching it is very nice. He has a severe stutter and talks a little(OK, a lot) like Steven Hawkins to eliminate it but he seems like the nicest and most supportive teacher anyone could hope for. When I got back to my dorm, I brewed something up to get typing.

Decaf Hazelnut Coffee

Now that I’m lowering the meal plan, it makes much more economical sense just to brew my own coffee. Cheaper, fresher, tastier–works for me 🙂 Two more classes for today! I don’t expect it to add up to much “excitement”. Anything fun on your end? Tune in to Oprah at 4 to see Jay speak on NBC!

The Early Bird Catches The Worm

Posted on December 11, 2009. Filed under: Daily Update | Tags: , , , , , , , , , , , |

It’s 4:05 and I am exhausted. That’s not a good sign, I’m guessing, for the rest of the day, but we’ll see how that goes. After I finished that peanut butter breakfast in the morning I threw on a jacket to go to the library. I thought I’d be smart going when it should be the warmest part of the day. Well, it was cold. I don’t know how you Midwesterners and Coloradans are doing it; I love snow and winter but that’s when I’m inside and it’s 70 degrees and I’m looking out a window. Nevertheless, I needed to print my Greek paper to hand in.

Greek Paper

Looks exciting, right? Didn’t think so. It’s not technically due till next Tuesday but it was by far the easiest of my 3 remaining papers so I just threw it together to get it done: The early bird catches the worm 🙂 Even though it was freezing(literally. I think this was the first time I’ve seen ice on the side of the road this year), it looked nice.

Providence Sky

I hustled and bustled around and to the lunch room where today they had a special coconut curry tofu with fixin’s. It sounded nice except the tofu was smothered in some sauce that just ruined it, and since I knew I had delicious eats in my fridge I wasn’t sweating it.

Broccoli, Carrots, Acorn Squash, Teriyaki And Ginger Sausage

Perfect. I really like this Al Fresco sausage with a little soy sauce. Unfortunately, all I had was a little soy sauce; next semester I really need to just keep a bottle instead of the store packets I “borrow”. Days and Rachael Ray were phenomenal, though I still don’t care for Ellen. Apparently, I need to watch out when I say that because she’s so many of ya’lls “favorite” 😉 Seriously, did you guys meet each other in the fan club? Well I didn’t have much chance to watch because this is what I was doing:

Packing

Move out day is 1 week away! In my dorm, we have to move out because it’s used to house athletes over the Winter break. It really sucks, but rather than cram it in to next weekend right after my last final, it seemed better to do it over 2 or 3 trips: the early bird catches the worm. But like I said, it really sucks. These books are heavy. And I have so much food. Gah! I just need to keep eating to get rid of it that way. When I decided enough was enough for this trip, I realized I was famished. Peanut butter did the trick.

Oatmeal With Peanut Butter

I’ve heard doctors tell people in stressful situations or having a baby to eat a peanut butter sandwich when they get the chance because they might not have time to eat later and it’s a good source of lasting energy. I don’t like doctors, but when they’re right, they’re right. While I was waiting for coffee to brew, I shnacked on this:

Apple

It had good texture and color, so it looked promising. And it was! I love finding good fruit at the dining hall; it’s like winning the lottery with still a crappy prize. And then rather than start working on my last 2 classes of the year I decided blogging would be much more productive. I’m pretty sure I was right on that one 🙂

Here’s a coffee and carbs giveaway–love the name.

And a TRUwhip giveaway–oh wait, that’s my own, hehe

Vegan Thursday

Posted on November 20, 2009. Filed under: Daily Update, Product Review | Tags: , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , |

I’ve done a vegan Friday, yesterday was vegan Thursday. 5 more days to go and I’ve knocked out a week of being vegan. Not too shabby, eh? This time around, however, I was much less prepared; I literally decided I would be vegan when I made my breakfast and chose not to put a greek yogurt frosting on the oatmeal.

Pumpkin Oatmeal With Pepita Sun Butter, Nog And Cinnamon Soy Yogurt

It was good, albeit not 100% what I wanted, though that’s my own fault for not properly stocking up rather than anything else. All I can say is thank god coffee is vegan, because I would not have made it through Greek class without it. In class, we translated about the courier at Marathon who ran 136 miles from Athens to Sparta in a day. Yeah, I think I have a bit of a ways to go, but how cool is it that running was someones job?! When I got back to my dorm, I scrambled to think of what I had that was vegan lying around. Thankfully I got that wonderful package from Wildwood on Wednesday so I had options.

Southwestern Wildwood Sprouted Tofu Burger With The Heat Is On PB Over Broccoli

Strawberry Wildwood Soyogurt

Like I said, BIG thanks to Wildwood for saving me on this one. Plus, I got to get a ton of reviews out of the way, such as this yogurt and this veggie burger. The yogurt was a bit thin; I think after greek yogurt everything’s a bit of a let down. The burger salad was quite delicious and spicy! I enjoyed this while watching Days. Would you believe me if I told you I’ve been watching it on and off since 7th grade? I saw an episode while eating lunch at Foxwoods around Christmas time in which someone got murdered and it’s been my crack ever since.

I tried to pay extra close attention to see how my vegan eats made me feel as opposed to my regular meals. This lunch left me stuffed much longer than most I have, and I don’t think it was much of a calorie increase at all. If anything, this meal was heavy on fats, which makes me think I should increase fat intake in place of some protein and sugars in my regular eating. I wasn’t at all hungry at 3 when I went out for a little escapade.

Blue State Decaf

I’m low on coffee in my dorm. Like, really low. Thankfully, I have a few bags waiting for me at home to pick up, but I decided to buy some then so I had some left for this morning.

Thanksgiving Cards

I also swung by the mailroom and found Thanksgiving cards from my mom and grandmother(by which I mean 2 from my mom). It’s so much fun to get mail, even though she wrote out in the cards how they’ll be seeing me for Thanksgiving(hell, my mom will be seeing me tonight…). I worked a bit and wasn’t hungry for a snack until into Oprah.

Peach Wildwood Soyogurt With Grain-Sweetened Chocolate Chips

Unfortunately, this was a bit of a compromise yet again. What I really wanted was some nice, thick greek yogurt. Or at least plain soy yogurt that I could play with. On the bright side this was one of the best peach yogurts I’ve had, ever. And with high protein, fiber, and omega-3’s and low sugar, it was a healthy option too. After 5, I grabbed this and went out:

Banana Nut Kardea Bar

I’ve had this bar to review for quite some time; I was so happy to see it’s vegan, too! I liked the spices and earthiness to it, though neither the banana nor the nut played a very large part. I had gone out for some more coffee and to pick up some veggies dinner. I also looked around Thayer street to find if anywhere sold plain soy yogurt. No luck 😦 But I did find an elusive pomegranate Chobani to not be enjoyed yesterday.

Wildwood Savory Baked Tofu, Broccoli With Ketchup, Carrot And Zucchini Slaw With Steak Sauce

Again, a bit of compromising and a big save from Wildwood. In my mind, the carrot and zucchini was going to be part of some great, creamy slaw, until I remembered no greek yogurt. Ugh. The steak sauce was good but a little strong for my tastebuds. The broccoli with ketchup, on the other hand, was genius and delicious. And I enjoyed, though didn’t love, this tofu. I’m not even sure what “savory” should be like, so I hesitated reviewing it in the first place. I think the flavor ended up reminding me of whole wheat bread, in a good way. I’m not going to lie–I’ve eaten plenty a slice of bread straight out of the bag to much enjoyment.

Survivor was sooo good. There has been so much gameplay and twisting this season, I just love it! And once that was done, I had the real reason I participated in Vegan Day.

The Vegan

You know it; it was so I had an excuse to get The Vegan from The Cupcakerie. It’s a vegan chocolate base with vegan vanilla bean buttercream frosting–yum! The bit of food dye on the top probably isn’t natural but that’s the extent of the .1% artificialness I let in and it won’t kill me. I like to eat my cupcake like this because I take tiny bites and otherwise the whole thing gets top heavy. Plus the frosting to cake ratio works out much better on those last bites 🙂

Grey’s Anatomy was great last night; I hope someone else out there watched it instead of The Office(you can watch both online afterwards anyway). It was holiday themed and NOTHING goes better together than holiday and drama. I mean, c’mon, what can be made more tragic than the holidays? After I finished all my homework for today(which I’ll admit didn’t look like it was going to happen), I made one last vegan meal.

Pumpkin Oatmeal With Mighty Maple And Tempeh Bacon

Have I mentioned how much I love Fakin’ Bacon? Again, I wasn’t prepared for today, I just always keep this stuff on hand. It’s so delicious and much easier to prepare in a dorm than the real stuff, not to mention healthier. It goes great with the sweet, maple flavor. And personally, maple is the best sweetener. Who needs honey? Let the bees have it. I’ll take my sugar from a tree, thank you.

This morning, I woke up a little zapped of energy. I grabbed the densest, perkiest bar I could find.

Amazing Grass Chocolate Peanut Butter Protein

Much better. I still didn’t feel 100% so I kept my pace very slow. I also had planned to go 13.1 miles but decided to stop after 12 in 1:43:16 because I just didn’t have time to do more. Oh well, I’ll hit that half another day. When I got back I was ready for some very non-vegan eats.

Pumpkin Oats With Butter Toffee Peanut Butter And A Vegan Pumpkin Molasses Cookie, Pumpkin Chobani, Chocolate Amazing Grass

Butter toffee peanut butter. Yum. I’m almost out, so I need to reorder from Naturally Nutty and soon. The cookie actually is vegan but it’s nothing without the peanut butter. I also enjoyed some yogurt(thank you, oh thank you) and my first taste of Amazing Grass drink! I went with the 8 gram chocolate supplement. I used plain water since I don’t have milk. Overall it came out a bit watery(duh–because I didn’t follow the directions) but had great flavor and outstanding nutrition. I could definitely get into this stuff 🙂

I’d like to say that looking back Vegan 4 A Day was a wonderful experience I absolutely loved but that’s just not the case. The first time around that’s how I felt, and I really understood my relationship with animal food products. This time around, however, it felt more like self-deprivation than self-learning. I don’t like learning things twice. I even get annoyed when I teacher recaps what they taught in the last class. Definitely try the experience once, I’d say, but that’s about it.

In spirit with the day, I thought I’d mention you can go to P.B. Loco’s website and now buy their Dairy-free pack for 4 vegan flavors they offer. Best yet, add the coupon code DAIRYFREE and get a free Munchy Crunchy! I think that’s something vegans and meat eaters can appreciate 🙂

I’m Kind Of A Big Deal

Posted on November 11, 2009. Filed under: Daily Update, Product Review | Tags: , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , |

I’m very important. I have many leather-bound books and my dorm smells of rich mahogany. Anchorman, anyone? I actually hate that movie but my 9th Grade Latin teacher was obsessed with it and Will Ferrell, so I have all the quotes down, and they pop into my head when relevant. Yesterday, I was kind of a big deal 😉

Not in the morning, though; then, I just left my dorm with empty plates and bowls so I could get coffee before Greek. I knew it would be an unimportant class since our real teacher is away; instead we had a guest lecturer talk about basically everything I learned in Greek History class. Oh well, it was worth it just to hear our substitute pronounce war as “vowr-er” with his mid-European accent.  I swung by The Ratty on the way back to my dorm, but ended up not eating until around 12:50 because I had a lot to tidy up and Google read before lunch.

November 10th 005

2 Eggs With Portobella Mushrooms And Red Peppers, Broccoli, Carrots, Jalapenos, Mustard, Ketchup

If Picasso made an omelet, I’d like to think it’d look like this. This won nothing in terms of presentation; I don’t think half of the egg was cooked because I ended up pouring a lot of liquid on the plate at the end, but it was still tasty. I get asked a lot what’s from the dinign hall and what’s mine; in this case, everything was dining hall except the 2 eggs, mustard, and ketchup. Speaking of ketchup, I used to despise it. What is most ketchup’s except processed tomato and sugar? I still feel that way on the whole, but I’ve found two that really got my attention: Trader Joe’s store brand and Napa Valley Red Bell Pepper. The former is really vinegary and not sweet, which goes great with eggs and veggie burgers. The latter is spicy and great for robust burgers. Clearly, I put way too much thought into my condiments 🙂

I ended up skipping out on the last 10 minutes of Days to get out early to Whole Foods; how has Sammy not learned a thing about her baby? I feel like this story’s gone on so long the kid should be in preschool. I took a brisk walk to University Plaza. It was double productive because every trip to this Whole Foods piles on 2.2 miles 🙂 As usual, I spent way too long oogling at too many thing I ended up not getting. I went in with the notion that this would be a “big” shopping trip but they didn’t have quite everything I wanted. Unsweetened coconut was on sale, but they didn’t even carry the sweetened kind; and salmon was on the salad bar but it was mixed with spinach and I wasn’t convinced it’d taste any good. After getting out with most of my wallet I stopped at McDonalds.

November 10th 006

Newman's Own Organic Coffee

Well what else do you think I’d go there for 🙂 I love this Newman’s coffee, and that all their sizes are only $1 from now until who knows when! I’ve taken advantage of that many times. I also nibbled on this new product.

November 10th 007

White Chocolate Macadamia Nut Clif Bar

This White Chocolate Macadamia Nut Clif Bar was one of the ones I was sent to review. I wanted to love it; if I could find a portable, healthy excuse for white chocolate, I’d be overjoyed. Unfortunately, this didn’t have me jumping up and down. It was OK, but not what I was hoping for. I only took about 5 bites and didn’t even finish it, which is rare for me with foods, because I knew I’d be back to my dorm soon enough where I had unpackaged food to eat. I put the rest back into the wrapper for when I need some energy for running in the morning.

Right before I got back to my dorm, the coolest thing happened to me, and I was kind of a big deal. There are only a few of us in the gym at 7am(shocker) and it’s usually the same crowd. 2 of the other people are these big middle-aged men. Well, I ran into one on the road outside my dorm. It turns out he’s the dean of residential life, and he told me that every time he sees me running strong on the treadmill in the morning I’m an inspiration to him to work out(I think he’s trying to lose weight). I really felt like I had a fan when he was telling me other people look like they’re going to keel over on the treadmill but I have a strong confident posture. He also said I have a good choice in cartoons, lol! 😉 That was a great experience, and after it I couldn’t wait to run into him more at the gym knowing who he is.

When I actually got into my dorm, I felt so overwhelmed. I just needed to take things one at a time. I turned on the TV and plugged in everything electronic that needed charging. Then I unpacked what I bought.

November 10th 009

Groceries

See? It was all very sensible. Oikos and oats I burn through in this room. I also needed some stevia for my coffee and 365 brand looked decent for 7.99. I also bought 365 nutmeg, which was the cheapest they carried. One other thing might have worked its way into my bag.

November 10th 012

Divine White Chocolate With Strawberries

I wanted to treat myself with something for doing so well and (hopefully) what’s more to come. I have trouble when it comes to buying groceries to treat myself, but I finally settled on this bar of white chocolate; I’ve been eyeing it for a while, and if anything says nutritionally devoid and decadent it’s white chocolate, speaking of which…

November 10th 016

Banana Oats With Mighty Maple And White Chocolate Chips

The next thing to do was make a snack, since I ended up not eating most of the Clif bar. I thought the maple, vanilla, and banana might be too much for one dish but not at all! Everything worked well together. I had 2 possible plans for the afternoon/dinner but I took the lame responsible road and cancelled them so that I could purely work on my essay; I find projects like this so much easier to take on all at once than try to draw it out. I got a good deal(about 1/3) done before it was time for dinner, which I already decided to make for myself.

November 10th 029

Dinner Ingredients

These are definitely two staples to have in any dorm room: healthy, delicious, and instant. I did something which I thought was a little genius and used the water from the tuna to cook the macaroni in for added flavor.

November 10th 023

Tuna Mac And Cheese With Acorn Squash

Perfecto! I know the old generation Italians would find fault with fish + cheese but we’re not in Italy here 😉 The acorn squash from home was so nice, even though it might have needed another 2 minutes in the microwave. Other than that, the buttery flavor went well with cheese from the macaroni, and the whole thing was just a salt mess–my favorite kind!

Flash foward to 8: Does anybody else just feel motivated to move when they hear The Biggest Loser theme song? I do and I love it. I got into my PJ’s, took up my essay books, and got ready for some quality television. I celebrated with trans fat.

November 10th 002

Yogurt With Strawberry Jam And White Chocolate With Strawberries

This was awesome. And, yes, there’s trans fat in the white chocolate bar, but it’s natural from butterfat and only .2 grams in the whole bar(which I had maybe an 1/8th of. I was actually surprised the label mentioned trans fat, since companies aren’t required to list it if it’s less than  .5 grams per serving. It’s definitely a curious thing to think how much trans fat is really in certain foods and how much it adds up to. Anyway, this was delicious and easily a new favorite chocolate bar. Sweetening it with jam makes the fruit feel fresher.

November 10th 006

Silk Nog With Nutmeg

November 10th 004

Newman's Own Organic Espresso Chip Cookies With Coffee

I’ve never been one for “milk and cookies”; this is about as close as I ever get. The nog on its own is a little thin and needs some extra sweetening, but you’d never guess that it wasn’t made with real milk let alone has no eggs in it. I don’t really get “espresso” out of these cookies but they do taste nice and chocolatey, and the espresso part is always a great excuse to make coffee(like I needed an excuse). I was really sad to see the entire Orange team go off The Biggest Loser. They had so much reason to be there, but they were on Jay Leno afterwards and it looks like they’re doing great.

November 10th 007

Oatmeal With Semi-Sweet Bakign Chips And Smart Balance

I wanted to want anything else but this while watching Leno. Because, really, who wants to be washing oatmeal off a dish right before bed? instead of fighting the craving I went ahead and made the oats, knowing if you give your body what it really wants it’ll reward you.

That reward definitely came this morning. I woke up at 6:20 6:25 after snoozing a little bit. I felt the long-term energy from the oats still in effect, and head off for an undetermined long wrong. I took the rest of my white chocolate macadamia nut clif bar but ultimately decided that I didn’t want it this morning and didn’t want the burden of having something I felt like I “had to finish” and so tossed it at the gym. Anyway, back to the run, I ended up doing 12 miles and finishing in a quick 1:36:22! It felt good to pile on all those miles; if only my new gym friend had been there! When I got back I made a great breakfast, too.

November 10th 020

Pumpkin Oats With Maple Almond Butter And Sliced Butter Toffee Almonds, Creamy Greek Yogurt With Blueberry And Raspberry Jam

I spent the entire time on the treadmill thinking “what else can I make myself besides oatmeal and yogurt to switch it up for breakfast”. But truly this is what I love to eat for breakfast, for flavor and satisfaction. For the yogurt, I mixed 4oz plain Oikos with 2oz full fat Voskos–oh my God was that good! It had just the right amount of cream to be not too heavy but something special. The best thing about creamy yogurt is it doesn’t need sugar or stevia because it’s a flavor all its own. I added some fruit jams and mixed them in and topped it with some more jam to get the pure flavor.

If you can’t tell, that yogurt got me way more excited than any normal person should be by yogurt. I’m sure I’ll be thinking about it all through Latin class now.

I know you’re a nut for nuts, so check out this giveaway!

I Act Like A Blogger When…

Posted on November 6, 2009. Filed under: Daily Update | Tags: , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , |

I act like a blogger when I read other blogs rather than study for my test in 30 minutes. Fortunately, I peeled myself away from the screen to make it to class in time. The test was a bit longer than any of us thought it’d be but I feel like exactly the passages I studied were the ones on the test and that I did really well. I guess the Greek shirt just has good luck in it?

Broccoli, Carrots, Tofu Salad With The Heat Is On Peanut Butter

Broccoli, Carrots, Tofu Salad With The Heat Is On Peanut Butter

I act like a blogger when I get obsessed with a food. Now it is tofu salad with The Heat Is On peanut butter. Every time there’s carrot at the salad bar, I’ve convinced myself I’m doing the right thing by eating this. That, and it’s just too good to turn down. I used a little less tofu this time(because I ran out) and the peanut butter flavor was even better. Definitely needed some stevia and salt though to pumpkin it up.

Cinnamon-Raisin Greek Yogurt

I act like a blogger when I’m convinced Greek yogurt can be a “dessert”. All it needs is some vanilla, raisins, cinnamon, and voila. I was trying to recreate this amazing rum raisin gelato made by a Massachusetts company which is so light and smooth but I don’t have rum. I probably could find that in a dormitory pretty easy but I didn’t feel like “meeting the neighbors” with the line “Excuse me, do you have rum for my Chobani?”.

I act like a blogger when I spend 30 minutes making a granola for the Facebook  MojaMix contest I won. I went with a ginger base with dried strawberries, persimmons, chia seeds, chocolate sprouted sunflower seeds, and cacao nibs. How awesome does that sound? I can’t wait till it comes!

I act like a blogger when I ditch on the end of Days Of Our Lives and all of Rachael Ray to go get groceries.

I act like a blogger when I almost neglect an awkward “Hi” with a classmate because I’m fascinated by how the raisins soaked up the yogurt liquid and were now cinnamon infused. Seriously, that was awesome. I didn’t even plan it like that but viola. The raisins got so moist and well seasoned, it totally converted me to liking raisins again.

Vermont Sweet Vermont Bread Co.

I act like a blogger when I get really excited about bread. I found a new flavor of Vermont Bread that has maple syrup as the 3rd ingredient! Don’t tell me that doesn’t sound awesome. Unfortunately, it wasn’t on sale and I didn’t have a coupon, so back on the shelf it went 😦 I’m just ecstatic to know this exists.

Groceries

I act like a blogger when I come home with pumpkin, tofu, and greek yogurt. I’m guessing 90% of you have these items in your fridge at the moment. I got it all for 4.38 using store sales and coupons! I’m getting good at that 😉

November 5th 014

Oikos With Chocolate Chunk Hazelnut Biscotti Granola

I act like a blogger when I position my greek yogurt and granola in a precarious position to take a picture of it, then proceed to drop it all in my lap. Fortunately, most of it stayed in the dish so I ate it anyway. I love this granola because it already has chocolate in it! Sure, it could benefit from a little more, but what couldn’t?

Pumpkin Oatmeal With White Chocolate Wonderful And Vanilla Powder

Pumpkin Oatmeal With White Chocolate Wonderful And Vanilla Powder

I act like a blogger whenever I use my $10 vanilla powder. It finally occurred to me to put this on oatmeal after 2 months. Oh my heavens was the vanilla on top of the pumpkin delicious. I’m sure the white chocolate peanut butter didn’t hurt, but the powder pushed it over the edge.

November 5th 018

Tiny Apple

I act like a blogger when I get excited by tiny fruit because it makes me feel bigger.

Vegan BBQ navy Beans, Brussel Sprouts, Summer Squash

Vegan BBQ navy Beans, Brussel Sprouts, Summer Squash

I act like a blogger when I whip out my camera in the middle of the dining hall to take a picture of dinner. That’s a fun way to meet people. I thought of you all when the main vegetarian dish was pumpkin ravioli in cream sauce 🙂 I, however, was still a little pumpkined out, and the cream sauce made it a little less appealing. Instead I had the vegan BBQ navy beans. These taste just like good baked beans should taste like and were amazing. They had a very deep molasses and tomato flavor to them. All I could think about eating them was how smelly my run would be this morning but how I didn’t care.

Root Beer Zevia

Root Beer Zevia

I act like a blogger whenever I drink Zevia. Does anybody know a non-blogger who’s even heard of this? I don’t think I have, which is a shame because it’s so darn good.  There’s even a Zevia giveaway from Green Dog Wine! Don’t actually enter it though, because that would lessen my chances and I need to restock 😉

Newman's Own Organic Mocha Milk Chocolate

Newman's Own Organic Mocha Milk Chocolate

I act like a blogger when I choose organic chocolate because I know it’s better for the earth. Or maybe I ate this because it’s one of my favorite chocolates ever? Yeah, definitely the second one.

I act like a blogger when, instead of getting up to get my notebook out of my backpack to do work, I figure out how to see how many google reader subscribers I have.

November 5th 007

Banana Goodness Oatmeal

I act like a blogger when a good night is evaluated on the basis of the oatmeal. Last night I decided to try and recreate banana goodness bread in my microwave since I haven’t made a loaf in a few weeks. I used 2oz banana, vanilla powder, and vanilla stevia in the oatmeal, and topped with semi-sweet baking chips. It was a decent substitute but of course not the real thing. I also sprinkled salt over the top at the end and I think that really helped the flavor.

I act like a blogger when I stress over watching Grey’s Anatomy or The Office. Oh wait, I was doing that years ago. Nevermind.

Fig And Almond Blondie, English Muffin With Banana And Chocolate And Cinnamon Vanilla Sunflower Butter

Fig And Almond Blondie, English Muffin With Banana And Chocolate And Cinnamon Vanilla Sunflower Butter

I act like a blogger when carbo loading couldn’t be easier. I defrosted one of Veggie Girl’s Fig And Almond blondies. After a few month of being frozen, they aren’t quite as good, but a little cream cheese fixed that. I also had an english muffin with mushed banana and chocolate chips(and salt, of course) and cinnamon vanilla sunflower butter. Perfect. Rachael Ray was on The Jay Leno Show and gave some hilarious answers to 10 at 10 in case anyone missed that.

I act like a blogger when I set my alarm at 6:15 to get up and do my long run. I had planned for another 13.1 miler today. I wasn’t particularly hungry but I figured food would be good so I grabbed a mojo.

Clif Peanut Butter Pretzel Mojo

Clif Peanut Butter Pretzel Mojo

Apparently, this bar isn’t just one of my favorites but a favorite of a lot of you guys, too! I just loved the saltiness. And the combo of pb chips and peanuts gave me good immediate and long lasting energy. I actually constantly forgot to be eating this, so it lasted me 13 miles. Speaking of which, I set a new PR record of 1:46:28! That’s the fastest I’ve ran a half marathon by a good 3 minutes

I act like a blogger when I choose running over course registration. As in, course registration opened at 8, and by the time I got back to my dorm it was 8:40. I didn’t think things would go so fast but 1 of the courses I really wanted to get into filled up fast and I got pretty upset with myself for letting me miss it. I’m hoping I can still wiggle my way into that class yet, but I’ll talk about that more once I know more.

November 5th 015

Banana Oatmeal With Banana Peanut Butter And White Chocolate Chips, Vanilla Chobani

I act like a blogger when I feel compelled to perfect an oatmeal recipe the next chance I get. This time I used 3oz banana and a lot more salt. I think it came out a tad bit better.

I act like a blogger when I decide a theme like “I act like a blogger” would be cutesy for a post and then by the end I want to go back and delete every time I wrote those annoying damn words! Haha. Don’t forget it’s Cookie Friday! I need to get my thinking cap going. And I’m going to work very hard to fix that class situation I mentioned, because I am a bit disappointed and I’m sure I can get in if I pull some strings. Anyway, have a good day!

Cherries Or Cranberries?

Posted on October 28, 2009. Filed under: Daily Update, Product Review | Tags: , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , |

Before I forget, yesterday’s breakfast was a bunch of new products I wanted to tell you about including Sunland’s Valencia Creamy Peanut Butter, Voskos’ Organic Vanilla Bean Greek Yogurt, and Nature’s Path Organic Apple Cinnamon Oatmeal, all of which will be summarized on the main page at some point so don’t worry if you miss them now.

Good morning. Is it good? It’s raining the tears of Semonides here(sorry, all this Classical studying has my brain in the wrong millenium!). Yesterday morning I left a little early to grab a cup of joe before class.

Organic Coffee With NuNaturals Sweetener

Organic Coffee With NuNaturals Sweetener

And Thank God I did. My Greek professor is still sick so we got a substitute instead. Rather than a placid, middle aged woman we had a bit more lively, energetic Swede with a heavy accent. Fun, just not at 10:30. Class got particularly amusing when him and the soft-spoken British grad student were trying to communicate and it just… wasn’t working. I actually wasn’t ready for lunch when I got out, so I came back to my dorm and admired Steve, the stevia plant.

October 27th 002

Steve

I was told to trim him to be a foot tall a while back when I first got him, which I did. Now he’s gone crazy and has grown 3 feet tall. If you’re horrible with plants, get a stevia bush; they’re impossible to kill no matter how little you water them(and taste really good). After a while of that amusement, I picked up stuff from the dining hall and made a cozy lunch in my room.

Sweet Potato, Asparagus, Maple Mustard Tofu

Sweet Potato, Asparagus, Maple Mustard Tofu

Recently, I got to thinking, “You know, my pee smells too floral. I think I’m going to eat a ton of asparagus”. Or I just love it and they so rarely have it at the dining hall that I might have gone a bit nuts when I stumbled upon it. I coupled that with some maple mustard tofu(so good!) and a whole microwaved sweet potato from last week’s farmers’ market. I have a good 2+ pounds of sweet potato under my bed, so I feel pretty set for a while.

I did the typical Days Of Our Lives while blog reading thing. I swear, soaps never go anywhere in plot but they’re so entertaining. I was planning on hanging around for Rachael Ray but the show didn’t look too interesting and the weather was not getting better. I had some high hopes of going to Whole Foods rain or shine so I bundled up and headed out. On the way I stopped by the mailing center.

October 27th 010

Mail From Home

One was from my mom and the other my grandmother; though the fact that they both have Simpsons stamps and my mom’s handwriting on them makes me think(and not too hard). They were Halloween cards with some money. I love that being a college student Halloween is a reason to receive cards. What I don’t get is why these needed to be mailed when I saw both of them Sunday. Odd people. I also snacked on this while shopping:

Spooky S'mores Z-Bar

Spooky S'mores Z-Bar

I’ve been loving all the manly-men products Clif sent me, but sometimes I need a little something to feed the kid in me 😉 I’m going to miss these when they’re gone for the season. Grocery shopping was–of course–a blast. I found kombucha and acorn squash, but neither were on sale so I thought I’d hold off with microwave experimentation. I found out something very dangerous:

October 27th 014

Bulk Colored Frosting

Whole Foods now sells their naturally colored buttercream frosting by the tub for the holiday season. Ummm, hello. This is a) a dream b) very dangerous. On the one hand, I could use these to make some nice treats that look awesome and I would feel good serving. On the other hand, I don’t see that frosting it making it through the ride/walk home. In case anyone was wondering, it’s 5.99/lb. Somehow, one of those didn’t end up in my basket, but look what did!

October 27th 015

Groceries

I went a little shopping happy on this trip; money from relatives will do that. I got a new flavor of Lightlife‘s tempeh to review, along with my favorite product of theirs: tempeh bacon. Some Oikos and So Delicious Soy Yogurt were a must. I felt like talkin’ turkey for dinner so I got some fresh sliced from the deli. And of coarse I hit up the bulk bins for oats and, my treat of the trip, dried cherries. At first, I wasn’t going to get them because they’re a bit pricey. At the check out, the woman couldn’t read the bin # I wrote down(I swear my handwriting isn’t that bad). Instead of asking me to read it, she looked up the code in the big book and entered it herself. What she failed to realize was that they were cherries, not cranberries. She didn’t ask me or anything, just input the cranberry code and continued scanning items. Since cranberries are 1/2 the price of cherries, I basically got them half off. And since I didn’t lie or be at all misleading through any of that, I feel pretty damn good. When I got back to my room I made some oats to fight off the gloomy weather.

Pumpkin Oats With Mighty Maple And Maple Syrup

Pumpkin Oats With Mighty Maple And Maple Syrup

Can I tell you a little secret? If you pour maple syrup over the top and stick it back in the microwave, the water cooks off and the maple crystalizes, not to mention smells like candy. Oh was this good. It made a “serious” Oprah episode bearable to study through. It almost made my Epic Poetry homework bearable to read… almost. I thought I’d be reaching for a snack later, seeing as how most of this was lovely, unrefined sugar. Surprisingly it held me over until dinner.

October 27th 022

Open Faced Thanksgiving Sandwich, Ginger Carrots And Snap Peas, Broccoli With Beets

There are only 29 days to Thanksgiving, but who’s counting, really? I made the sandwich in my dorm and brought it to the dining hall. On a Matthew’s English Muffin, one side had TJ Cranberry Apple Butter and the other had Organic Valley Lowfat cream cheese. That combo is ridiculous; I don’t even want the turkey come Thanksgiving; I just want the leftovers. So I guess I have to wait 30 days then, huh? When I got back to my dorm, I broke into this:

Green Mountain Single Origin Mexican Decaf

Green Mountain Single Origin Mexican Decaf

I picked this up at the Green Mountain dinner last Wednesday. I already have one canister open, but I wanted to try this to see if it had a more robust, dark flavor. Unfortunately, it wasn’t quite as strong as the whole bean house decaf I made back at home, but it definitely had a deeper flavor than Whole Food’s Decaf Hazelnut.

Tuesday night meant Biggest Loser, of course. Was Abby’s story on The Biggest Loser not the saddest thing? I was not expecting the show to take such a dramatic turn; I think even Jillian was cracked by that. The Biggest Loser also means ridiculous snackage that the contestants could never eat.

So Delicious Soy Yogurt With Vanilla Stevia, Vanilla Sugar, PB And Chocolate Chips

So Delicious Soy Yogurt With Vanilla Stevia, Vanilla Sugar, PB And Chocolate Chips

October 27th 011

Deep Chocolate Vitatop With Butter Toffee Peanut Butter, Carrot Ginger Muffin Top With Smart Balance Peanut Butter

I broke my own rule with this one; I stole the peanut butter chips from a trail mix I own because I don’t have any peanut butter chips. I hate it when people go through a trail mix and screw up proportions. Then again, my love for peanut butter chips is greater than my hatred for that. I don’t even remember when I had the bottom of that muffin(presumably in yogurt). I’ve just had the top sitting around for so long I figured I’d eat it. I’m wicked exciting that the next time I eat from that Smart balance jar, it will be from the jar.

Could one thing have gone routinely this morning? Didn’t think so. I woke up at 6:40… and then again at 6:50. I honestly didn’t feel like running, but when analyzing the situation, I realized it wasn’t for any good reason other than the sun wasn’t out and it was running. I told myself “The lights will be on in the gym and it has a roof. You’ll be fine.” That’s about as peppy as my pep talks get. While I grabbed one of these and hit the gym:

At first I thought that today I needed a running body more than ever. What I got was even better: no one else around. Score. I just put on my TV shows and ran. At first I thought 8, then 10. I was taking it at a very slow comfortable, and I knew being outside wasn’t happening much today, so I went on to 13.1. I was planning to do this Friday, but I figured I’d push it up 2 days. I finished in 1:53:04 which really put me behind for the morning. My roommate was not only awake but dressed and studying when I got back!(That’s not like him). Even though I was short on time, I decided to make myself a nice breakfast to feel like the king I like to think I am:

2 Eggs Lightly Microwaved With Cheddar Cheese, Toast With Pumpkin Peanut Butter, Oikos With Peanut Flour And Chocolate Chips

2 Eggs Lightly Microwaved With Cheddar Cheese, Toast With Pumpkin Peanut Butter, Oikos With Peanut Flour And Chocolate Chips

I don’t know egg terminology. Is it poached when you leave them unscrambled and try to cook the whites without cooking the yolks? Well that’s what I did, or tried to do at least. It’s a lot easier with a skillet than a microwave, but 1 of the yolks was nice and runny. I think I need to revisit that peanut butter over some oats later because it’s just too good. Now I’m very behind for a Wednesday but thankfully should have everything done in time for class.

My all-natural heart was very happy to hear that Necco candy is going natural! I haven’t had Necco wafers in ages; I don’t even think I liked them. But I’m very happy to hear they’re taking this step and I’ll certainly give the new stuff a try.

Speaking of candy, there’s an awesome chocolate giveaway at Run, Eat, Repeat.

Ridiculous And Amazing: Ridiculous

Posted on October 22, 2009. Filed under: Daily Update | Tags: , , , , , , , , , , , , , , , , , , , |

Because this post would be ridiculously long if I tried to cover my whole day(and because I’m going to be kicked out in T-40 minutes), I’ll talk about the ridiculous part of my day now and the amazing part in the afternoon.

In one word, my yesterday was ridiculous. As I briefly mentioned at the end of my post, I had ust found out I won a contest. The contest was to attend a dinner hosted by Green Mountain Fair Trade Coffee that featured local Boston chef’s making dishes with local products and coffee to be judged Top Chef style. Amazing, right? Well, after working out that my dad would pick me up from Providence, that became a reality and we had a plan.
What was also ridiculous was how much my feet killed after that run. The last 2 miles took a toll on my toes(say that 5 times fast) and walking to class was unbearable. Fortunately, I made it where I got to listen to my teacher talk to us for 50 minutes about a paper she’s writing on a 400 line poem we had to translate, but never actually translated in class–crap, I mean, ridiculous. On the way back to my dorm I picked up some of these:
Sweet potatoes, because they’re ridiculously good. I did a mad rush of email answering/microwaving/google reading right up until I had to run off to Greek History with this in my hand:
So so good. I love microwaved sweet potatoes better than oven roasted because the skin is firm and crispy and it reminds me of French fries. The sandwhich was perfect with the turkey/cranberry apple butter/cream cheese combo. The greens were meh but I had zilch all of yesterday so I felt I needed to add them back into my system. But the real ridiculous thing about this was that Thanksgiving is just a month away! Can you believe it? I am sooo psyched to get my pie-baking on(secret family crustless pumpkin pie recipe to be published? We’ll see…)
Class was ugh. My professor would just mention a historical fact and ramble on and on about his take on it and often completely wrong theory. The only ridiculous thing here was how much he’s like his wife, my Latin teacher. I’d be very disturbed but sadly not surprised if they were blood related.
When I got back to my dorm I knew I just had to work work work if I wanted to enjoy my evening. I had a really nutritious study snack:
We’re going to pretend this is healthy because it’s all natural and not just a diet soda. K? good. Picture me, furiously reading Ancient Greek, flipping back and forth between Heroditus and my dictionary, only to receive an email that my class tomorrow was cancelled again. Ridiculous. I was slightly annoyed, but this made my evening much easier. I knew my dad would be at my dorm in 30 minutes but my oat craving did not care:
Need I remind how soon Thanksgiving is? Pumpkin oats with almond butter never fail to disappoint, but the addition of this new cereal made it perfect. This is Nature’s Path Organic’s Crunch Maple Sunrise and, though I’m generally not a cereal person, I must say this stood out. I don’t want to review it yet since I’m sure being on pumpkin oats might have affected the flavor, but I could literally smell maple syrup as I opened the bag. Ridiculous, right? And it’s gluten free if that’s a care to anyone. At 4:45 I got a message that a package was waiting for me in the mailroom that closed at 5. Ridiculous. I hustled my way over there and was overjoyed to make it and find these waiting for me:
The kind people at Kardea contacted me about trying their energy bars. Kardea’s product are all natural with cholesterol lowering ingredients, a hefty supply of protein and fiber, and all low and naturally sweetened. Not to mention, the flavors sound ridiculous. Ex: Banana nut and chai spice. I could not wait to try them, but I also needed to hop in my car and go go go.

R & R

Posted on October 14, 2009. Filed under: Daily Update | Tags: , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , |

Note to self: If you want to run your first half marathon in the morning, don’t plan on anything else for the rest of the day. That was pretty much the lesson I learned after yesterday’s experience. Thanks for all the good-wishes; I don’t know that I’ll be “just getting up and deciding” to break any previous PR by 3 miles any time soon. Unfortunately, after my half marathon, I had a full Greek class(see what I did there? ;-)). It’s not so bad since I literally translated this last year and remember most of it–yay for me! When I got out I stumbled over to the mailbox room, through the lunch line, and back to my dorm. My 1/2 tablespoon of White Chocolate Wonderful with breakfast that I had to talk myself into at the time caused a real craving and had me making the weirdest lunch yet:

Oatmeal With White Chocolate Wonderful, Vegan Sloppy Joe Mix, Cucumbers, Broccoli

Oatmeal With White Chocolate Wonderful, Vegan Sloppy Joe Mix, Cucumbers, Broccoli

I told you it was weird; I wasn’t going to do it, but I figured it’s best to listen to your cravings when you’re more active than usual. The vegan sloppy joe mix was from the cafeteria, and I think a medley of tomatoes, peppers, tempeh, and tofu. It was pretty good though a bit bland. The oats were perfect and soul-soothing; could you ask for anything more from a hot bowl of grains? While I was eating, I was so happy to find this in the mail:

Attune Coupons

Attune Coupons

Daniel from Attune sent over some coupons for me to sample and review some of their products and I could not be more thankful! I’m sure you’ve all heard me harp on about probiotics and how I strive to get 2 sources a day. Well, the people at Attune share my same enthusiasm for bacteria and probiotically fortify chocolate bars. Chocolate and probiotics–could it get better? I love my yogurt and frozen yogurt, but variety is always welcomed. Thank you, Daniel and Attune, I can’t wait to try these out. After some uber-duper exciting email reading and google reading, I came to a bit of halting reality: That Whole Foods and F.Y.E. trip I would have loved to take was not happening, not on my legs at least. It seemed I underestimated the strain my body would take and nothing was budging. Instead my afternoon looked an awful lot like this:

Sitting And Sipping Coffee

Sitting And Sipping Coffee

Oh yeah, that was deserved. This semester running might have persuaded my class scheduling a tad. Would it be too much if next semester running AND TV were taken into consideration? Didn’t think so. Well I made a list of all the History readings I “shoud’ve” done by this point. Yikes. I haven’t read anything for that class. Thankfully, it seems like the teacher hasn’t either, haha. Hopefully my being awake in class and taking notes will be enough combined with a little cramming come midterm time. I also took out some books and some snacks:

Chocolate Brownie Z-Bar

Chocolate Brownie Z-Bar

Poetry is never as fun as one would think; sure, it has rythym and soul. But the poet takes way too much “artistic liscence” and I’m not one of the people patient enough to dig for the deeper meaning. But if there’s anything I learned in high school, it’s how to BS an essay with crazy interpretating which is exactly what I plan to do for this class. On another note, I love Ellen. She’s always giving away money to unfortunate people on her show and that feels so good just to watch. I also made a delicious “mousse” around this time:

Peanut Pumpkin Maple Mousse

Peanut Pumpkin Maple Mousse

Yum. For this, I mixed 2% plain greek yogurt, 1/2 cup pumpkin, 2 tablespoons peanut flour, cinnamon, and stevia, and topped with maple-agave syrup. The peanut flour really thickens it, adds a depth to the flavor, and gives it a moussey texture. I was thinking of granola-topping this but it just seemed so perfectly light and airy on its own. I also caught up on HIMYM. Even though it was a Barney heavy episode, it wasn’t one of my favorites of the new season. I don’t like that Robin and Barney are becoming a boring couple. Oh well, some hit and some miss. By 5:30, I felt way too caged in and needed to get out, even if my legs wanted to stay behind. I picked out a nutty bar:

Honey Almond Flax Kashi Bar

Honey Almond Flax Kashi Bar

On the one hand, I’m trying to eat whole, unpackaged food as much as possible. On the other hand, I have a lot of dorm-room stuff I need to eat before it goes bad, so I’ll be trying to fit them in exciting and creative ways into my meals. I decided that, if somewhere down the road someone asked me “how did you celebrate running your first half?”, “I didn’t” wouldn’t be a great response. So what would? “I went to a party that night, got smashed, and met Emma Watson”. Well that would make a good story but isn’t very likely and definitely isn’t me. “I got a gourmet cupcake.” Much better.

Cupcakerie Cupcakes

Cupcakerie Cupcakes

I went to Blue State Coffee where they carry these delectable goodies made by The Cupcakerie. These are the people who made that great Vegan Buttercream Cupcake I had for Cookie Friday. I also love them for this:

Blue State Coffee

Blue State Coffee

Kosher, Shade Grown, Fair Trade, and Organic. Best yet–they always brew me a decaf whenever I go unlike some companies *cough*Starbucks*cough* who actually denied to brew my mom decaf at 6pm. Cupcake in hand, I went back to my dorm just as it started to rain. Unfortunately, I had to go back out in that rain to meet my friend, Adam, for dinner.

Zuchinni And Tempeh Bake, Ginger Vegetables, Chickpea Stew

Zuchinni And Tempeh Bake, Ginger Vegetables, Chickpea Stew

Up to this point I was keeping a close eye making sure I was refueling well after my half. I couldn’t really keep track of the calories on this plate, but I used guestimation and all was right with the world. The tempeh was really good, as I always find tempeh. I love that touch of sourness from the fermentation. The vegetables were also surprisingly good. Not only were they cooked the right amount, but the ginger was present and popped through. Unfortunately, the chickpea stew, which had a lot of potential, was way too heavy and bland. I even added loads of cinnamon and salt and it couldn’t fix it. Oh well, overall pretty darn good.

After dinner was NBC Tuesday! I love The Biggest Loser, and haven’t missed a season yet. I just love the theme song; it has such an uplifting message, you know it’ll be an inspiring episode. I can’t believe how lucky Tracy’s gotten this season and how little weight she’s lost; that really bugs me and is not in the spirit of the show if you ask me. Sometime through I broke into the cupcake I purchased:

Wake Up and Smell the Cupcake

Wake Up and Smell the Cupcake

I went in for a carrot cake cupcake, but this one was the last of its flavor so I really felt like it was calling for me. It’s described as “An eye-opening mocha cake with espresso cream cheese frosting topped with a chocolate covered espresso bean”. Normally, I don’t do caffeine, but I made an exception 😉 I felt semi-bad eating this while watching people slave to lose poundage on The Biggest Loser. But not too bad because I’ve done my time in the gym and then some so this was well worth it. You just gotta learn what in life needs moderation. The cake was so incredibely moist–best not to think about how much oil must have been in it and just how good it tasted. And the frosting was cream cheese–just as I like it. I decided to opt out of the chocolate covered bean on top. I know it’s such a small amount of caffeine, but it was 9 at night and I’m a proud party pooper 🙂

While I was watching(and getting disappointed by the voting of The Biggest Loser), I did up a formal translation of the poem I’ll be writing an essay on, and, more importantly, made a snack:

English Muffin With Pumpkin Peanut Butter And Pumkin Cream Cheese

English Muffin With Pumpkin Peanut Butter And Pumkin Cream Cheese

I’m officially getting annoyed by pumpkin. It’s everywhere, even in my room. I want to shun it and never see it again, but then I crave it. Since when did pumpkin become crack? I’m an addict. And Libby is my dealer.

Getting to bed has been a bit of a trouble lately. I’m a firm believer in shutting your computer off at least 45 minutes before you plan to snooze and lights off 30 minutes before. Living with a roommate, the second one’s not so easy, so I tried making due with the lights on to no avail. Thankfully, he had to go work on a project in someone else’s room a little after 11, but I still didn’t get to bed till around midnight and snacked on some carbs to get me to shut eye.

Peanut Butter Z-Bar

This morning’s run brought an interesting concept to mind. All through out the Summer when I ran and up till now, I’ve run the same distance give or take a mile day after day. now that I’m getting up there and spontaneously doing halfsies, that can’t be happening(because I am not running 12-14 miles daily. No way, no how). Varying my distance, and pace for that matter, are two things I’m going to need to get use to. I decided to do a traditional Tuesday/Thursday run and see how far I’d get in an hour flat. At the end, I ran 7.15 miles, so not bad. There were about 50 different food combos I was craving when I got back to my room. Rather than try a new recipe on the fly and potentially get disappointed by breakfast, I decided it was better to do 2 things right than 20 things wrong:

French Toast Oatmeal, Deep Chocolate Vitatop With Butter Toffee Peanut Butter

French Toast Oatmeal, Deep Chocolate Vitatop With Butter Toffee Peanut Butter

I am soooo excited for my Naturally Nutty shipment to come in tomorrow; these new seed butters are amazing. But when it comes to the good ol’ peanut, butter toffee definitely tops the chart for a great flavor. I feel like this is something obvious but worth saying: They key to good french toast oatmeal is in the spicing. I was dying for a good, runny egg this morning and this is the best way I know how. Just be sure to use quality cinnamon, sea salt, and vanilla powder if you have it, and it will really shine through.

I hope to get to a grocery store today but it’s going to be freezing in NE! How is it that time of year again? Worse yet, they were talking Christmas gifts on The Today show. Really? Already?

One Fit Foodie is having a Nasoya giveaway! I’d love to do some tofu-loving in my dorm on days when the cafeteria is boring as… something not tofu? haha.

We Don’t Judge Here

Posted on October 9, 2009. Filed under: Daily Update | Tags: , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , , |

And that’s a good thing, because honestly yesterday was not the schmexiest or most exciting day, but it was what it was. But before I get going, I wanna pose a bloggee question to ya’ll to settle something: Sweet potatoes. We all love them and eat them, but do you eat the skin? I always eat the skin. I think it tastes the same, and I heard once there’s good nutrients in there. But I’ve seen a lot of people including members of my family who just toss the skin off. So which do you do and why? I’m oddly too excited to see the responses to this.

We got our tests from Tuesday back in class. I feel pretty well about how I did, and it sounded like it was certainly decent for the class average. most of the things I got wrong were those silly little grammar points you forget over Summer but I’m not kicking myself because I feel pretty damn good just being in that class considering I’m 1 of 3 or 4 freshmen.

As soon as I was out of class for the day I just wanted to go back to my room, get under the covers, and watch primetime TV. What? You can’t do that at 11:50? Darn. I grabbed lunch and went back to my room, where I put on my “rainy day sweats”.

Rainy Day Sweats

Rainy Day Sweats

I believe if you look up “rainy day sweatpants” you get a definition similar to “A pair of loose, cotton trousers one would preferably not wear out of the house due to fashion but find comfortable and functional for lounging”. It was actually perfectly sunny outside, but I didn’t hesitate to throw them on. After that I plated and served lunch for myself:

Veggie Cheeseburger, Hugh Jass Asian Salad

Veggie Cheeseburger, Hugh Jass Asian Salad

I think the only thing that made this salad was asian was the heaping helping of soy sauce and ginger powder I added, but that just meant I didn’t have to salt it. In the mix was spinach, tomatoes, broccoli, mushrooms, cucumbers, jalapenos, tofu, onions, and sunflower seeds. I nuked a flame grilled vegan gardenburger and added some light cheddar cheese and had that with a TJ ww bun toasted; for something made in a dorm room, that was one hell of a burger. Maybe I’m just missing Summer too much.

The sight was not pretty after I finished lunch. I really wanted to curl up in bed with coffee and work on my paper, but I thought that my roommate might judge me a bit for that. Then I realized, we live together and there’s going to be a lot of judging going around but we’re friends after all so what the hell:

Doing Work In Bed

Doing Work In Bed

Yep, that’s Rachael Ray in the background. Next year I just might have to schedule all my classes so I can watch her everyday. I worked on my paper a bit, which sort of felt like beating a dead puppy(read: tofu pup if you’re vegan) at that point. By 3 I was ready to throw in the towel, so I went to the library to print. And yes, sadly I was in my rainy day sweats and awkwardly almost matching brown sweatshirt at that point. Then again, who was I dressing to impress?

Well I had a pretty sad realization when I got to the library: the paper was supposed to be 10 pages, I thought I had 8 1/2, and I had 7 1/2. 8 1/2 I figured was “good enough” but not 7 1/2. I had to sit there writing for another 30 minutes until I felt comfortable with the length(TWSS), printed, and got the hell out of there. My lunch held me over for an impressive amount of time considering it didn’t seem like much. But I figured what’s watching Oprah without a snack, right?

Oatmeal With Cookie Dough Peanut Butter

Oatmeal With Cookie Dough Peanut Butter

That’s a tablespoon, if you’re wondering. I usually do that with my peanut butter after I take my pictures because it’s easier to get some good flavor in every spoonful. But I’m learning with thicker peanut butters that don’t melt it’s easier just to spoon it out from the get-go. And I used prepackaged oatmeal for this. Don’t judge me. Actually I never use any prepackaged oats except for Kashi Creamy Vanilla. I don’t know why but I love these and their awesome nutrition loves me back. I made a recipe with them that I’m really hoping gets picked up by the company. If you ever need oats on the go, I suggest these.

It was National Poetry Day yesterday as you must have heard. I celebrated by doing my homework, which was to translate a hell of a lot of Latin poetry. Fun, eh? What was fun was finding Top Chef online, which I haven’t watched in far too long and got caught up with. I needed a snack so I grabbed this from my fridge:

Peach

Peach

The perfect peach to tide me over 30 minutes to dinner.

Green Beans, Corn Muffin Vitatop, Tequila And Lime Chicken

Green Beans, Corn Muffin Vitatop, Tequila And Lime Chicken

I know what you couldn’t possibly be thinking, and no, my cafeteria doesn’t serve vitatops. I snuck a peek at the menu and knew to bring my own. Honestly, nothing really jumped out this time, but I didn’t want to not eat with people so I tried the chicken. There really wasn’t anything tequila & lime(not that I’d actually know) to this; it just tasted like a bland cream sauce. The green beans were alarmingly perfect and almost too bright if that’s possible. And my original review of the corn vitatop wasn’t spectacular, but I actually really liked it hear. I think the sweetness balanced better with the cream sauce than the bison burger I had my first taste with. Ironically, it was also probably more nutritious than the corn niblets or Mexican corn bread and bean dish that was being offered.

Banana Goodness Bread And Plain Lowfat Yogurt

Banana Goodness Bread And Plain Lowfat Yogurt

Well that left room for a quick dessert during Survivor. I heated up the last of my Banana Goodness Bread and threw in some plain yogurt. Chocolatey, hot carbs with cool, creamy yogurt? Yeah I was game. I’m going to need to make a new loaf soon; maybe a weekend project? We shall see. So at 9 I decided that nothing was on TV and I went out of the dorm… I didn’t think I could fool you. Of course I attended the wedding of the year century. I thought for the first 50 minutes it was a good episode of The Office, but not what I was hoping for for the wedding. But then the end with the dance and the eloping totally made it all for me; I went to Niagra Falls 4 years ago and I must say that getting married right there on the boat was a spectacular idea(for fictional characters…).

Pumpkin Oatmeal With Semi-Sweet Baking Chips

I made a little snack midway through. See that blue book underneath? I’m translating from it. Doesn’t it look like that? Who says it has to be open? These oats were perfect. Instinct told me to choose a nut butter but nothing really stood out to me; I just wanted bakers chocolate. ‘Twas a good choice because any PB might have muddled the flavor. Right before going to bed I made a little cookie platter.

Vegan Pumpkin Molasses Cookie With Pumpkin Peanut Butter, Blueberry Raspberry Oatbran Muffintop With Cream Cheese

I’m not even going to play and try to tell you you weren’t missing anything with this, because you entirely were. Everything on here was lovin’ to the tongue. And it totally helped that the muffin and cookie spent quality time in the microwave so they were nice, warm carbs. I’ve been asked what kind of muffins I buy; they’re from a bakery called Zen Bakery. They don’t seem too widely available but if you’re from MA or CA you might have some luck. I’ve never found them but word on their site is they have carrot cake muffins and whole wheat peanut butter carob chip cookies. This is definitely my kind of bakery.

Well let’s just say this was on rollercoaster of a morning. I did not want to get up this morning. Again, don’t judge, we all have those days. But I told myself to get my butt out of bed and at least do something on the treadmill(and I might have done some self-bribing with the thought of Cookie Friday). So I got there and ran. I really don’t think my Ipod Genius knows what the hell it’s suggesting because the playlist was a bit funky but I kept it up. My plan was for 8 miles, but after 6.5 I felt really strong. I ended up going for another 10 miler. That’s 2 in the past 3 days for a distance I’ve only ever run 6 times. Holy moly, I don’t know why or how but I’m thankful I did it. When I got back to my dorm I learned a life lesson: glass should not be microwaved. OK, you can judge a bit here, but I’m guessing you won’t because you’ve probably made the exact same mistake. After clean-up(ugh) I had a nice breakfast:

Pumpkin Oatmeal With Mighty Maple And Smart Balance, Plain Low Fat Yogurt

Pumpkin Oatmeal With Mighty Maple And Smart Balance, Plain Low Fat Yogurt

Can you guess what I was craving? I couldn’t decide between Mighty Maple and Smart Balance, so I didn’t. I don’t run 10 miles to think. I also was craving just some plain, organic, low fat yogurt. I just love that touch of cream, and now I feel bad about judging my grandmother for putting it in her coffee(though the amount she put I can still totally judge). Wouldn’t some 2% Oikos be absolutely amazing? I’m going to suggest that to the site after I post this, and not just because it’s that or get ready for a day full of classes…

I really hope to get to Whole Foods today before it starts raining for some good Cookie Friday action, but it’s looking a bit ominous out. At the very least, Friday should mean fish in the dining hall, and that’s better than a cookie in my book.

Like whole grains for breakfast?(I know, I know, stupid question but I had to ask). Check out this wholly grainy mother of a giveaway
