Sure enough, just when I was thinking of cutting my run short at the halfway point after 5 miles, Nickelback’s If Today Was Your Last Day came up on my ipod shuffle and had me thinking, “If today were my last day(I’m pretty sure this is more grammatically correct but then again I study dead languages for a living), would I want to go out knowing I gave in on my last run?” At that, I kept on running and did another loop. But that same song had me thinking all day long.

If today was my last day, I’d knock off all the recipes I want to make over the Summer(listed here). I didn’t do all of them, but I did do 1: chickpeas from their dry state. This was so simple, and much cheaper. How had I not gotten on this before? Besides, fresh chickpeas make for the best lunches.

If today was my last day, I’d eat through pounds and pounds of chocolate. You could very well make an argument that I already do that. I had a few pieces of Green & Black’s ginger dark chocolate way before my run, and then a Maca Love Bar by Lulu’s chocolate as an afternoon delight. Hmm… I learned I’m not a maca lover. But this totally had me on the vanilla and the crunchy sea salt/coconut sugar combo. How could it not?

If today was my last day, I’d have my last meal be a big, juicy piece of grass-fed beef with a whole margarita, gluten-filled pizza with fresh mozzarella up the wazoo; I’m going out guns ablazin’ and belly abloated. In this instance, a vegan stuffed pepper would have to do.

Stuffed in a pepper and topped with ooey, gooey Daiya goodness next to some fries with pepper and paprika. I do believe it doesn’t have to be your last day to eat good.

Before hitting the hay I made a bowl of oatmeal with Naturally Nutty‘s butter toffee peanut butter and some local raw honey on the side for dippage. Yum! The honey is definitely a new addiction; I snuck down stairs afterwards for another scoop. Did it help me fall asleep? Probably not, but it was good.

Speaking of sleep, I woke up with my alarm, hopped in the bathroom, and then started getting all my clothes ready, and still felt really really tired. After I put in my contacts, I saw that I set my alarm for 6:20 instead of 7:20. Whoops. I couldn’t fall back asleep, so I just made an extra special breakfast.

This one was much better than the other ones I’ve made(all 2 of them); I think the earth balance added a much needed butter flavor but from a vegan source. The scrambled tofu was so much simpler than I would have thought: just tofu and nutritional yeast cooked in whatever fat the potatoes didn’t take up. And it was all super tasty and filling.

Maybe it’s just because I’ve been stuck home the past week, but Boston seemed so alive today. Several schools, including my dad’s college, were having graduations, so joyful families were everywhere. I started my day at Whole Foods to get some coffee(the same one where Gisele Bundchen shops), and then meandered to the graduation I was attending.

But rather than stick around I was really excited to go to my favorite Boston restaurant and keep the raw vegan theme rolling. Yes, it’s true, unfortunately. The owner explains the reasons on her blog here. In the larger picture, I’m very sad to see the very thing that introduced me to raw veganism disappear like that. I felt like it was a Boston institution. On a much more limited scale. What was I to do for lunch? I was starving by this point and in a part of Boston I almost never go. Would I find somewhere good? Would I ever eat raw again?

With some extra sodium(because I’m a sodium pig), this was so very satisfying. I ate 3 baked potatoes today, and much more this week 8-| Why the new obsession? No clue, but I think it’s here to stay.

This was the state of my bed around 3:30. Now I’m fully packed and there’s about twice that, plus my minifridge and microwave. How are we ever going to get this all in one car load? I can’t say that we will… I needed chocolate to appease the situation.

DIY: Fancy Nut Butters

If there’s one thing I love, it’s a good, flavorful nut butter. And I will happily fork up the cash for it(don’t assume I haven’t paid $10+ for a single jar). But that’s not always the most wallet friendly way to eat, even if the cost per serving is relatively low. And sometimes the flavors you want just aren’t out there. Or maybe they haven’t arrived at a store near you(Justin, I’m looking at you here). That’s when you need to know to make your own. With that, I’m happy to announce the newest additions to my recipe page: nut butters.

Chocolate Nut Butter

Ingredients:

  • 1 tablespoon nut butter
  • 1/2 teaspoon coconut oil
  • 1 teaspoon cocoa powder
  • 1 1/2 teaspoon sweetener
  • Vanilla flavoring

In a small dish, combine all ingredients and stir.

Cinnamon Raisin Almond Butter

Ingredients:

  • 1 tablespoon almond butter
  • 1 tablespoon raisins
  • 1/2 teaspoon cinnamon
  • 1 teaspoon liquid sweetener
  • 1/2 teaspoon brown sugar

In a small dish, combine all ingredients and stir.

Cookie Dough Cashew Butter

Ingredients:

  • 1 and 1/3 tablespoons cashew butter
  • 1 teaspoon agave
  • 1/2 tablespoon chocolate chips
  • Vanilla flavoring

In a small dish, combine all ingredients and stir.

Vanilla Peanut Butter

Ingredients:

  • 1 and 1/3 tablespoon peanut butter
  • 2 teaspoons liquid sweetener
  • Vanilla flavoring

In a small dish, combine all ingredients and stir.

The benefit of all these recipes is that they use pantry-friendly ingredients and require no food processor. Of course, I also have recipes for nut butters that start from scratch. I’ll be sure to add those over the Summer(when my food processor isn’t stashed underneath my bed).

If you haven’t tried siggi’s, well I can only tell you what you’re missing then. It is so smooth and creamy in texture, and the speckles of vanilla bean = pure love. But none of their flavors are sweet enough for me on their own 😦 Which might be OK if they had a little added fat to make them richer but they don’t. Fruit jam to the rescue(and a little almond butter snuck in their as well).

I hope you whip up some nut butter for your Cookie Friday. I’m sure a shmear of cinnamon raisin almond butter on this cookie would be perfect. Now I really must start my day! Lot’s of paper writing to do I’m actually looking forward to. What, what?

Lunch was a perfectly prepared burger on a bed of spinach with pan-finished EVOO sweet potato chunks. If that doesn’t catch your eye, I don’t know what will. For these, I quartered 1/2 a sweet potato and let those roast for an hour or so. After that, I quickly tossed them in the pan with the rendered beef fat and then finished with a splash and fry of EVOO. As Miss Rachael Ray would say, yummo! Who needs salad dressing? The EVOO’s on the potatoes!

After an afternoon of classes, I just needed to unwind with some good white chocolate, so I went for Green & Black’s. Most dark chocolate, even when it’s sorta bad, is good; just look for the stuff with no vegetable oils and all-natural ingredients and it’s going to be tasty.

It’s a whole different meal when the sweet potatoes are shaped like fries and the burger has ketchup 😉 That would lead me into answering some questions…

Question 1: Do you worry about red meat intake/cholesterol intake/animal-based saturated fat intake?

In short, no. Any concerns I have with eating animals and animal byproducts is rooted in ethical reasons rather than health. That’s not to say I don’t take steps to also get the better products–grass-fed beef and butter, wild fish, etc. I typically buy 1 pound of beef for a week with my groceries. Whether I eat that all in one day or over the week, on the large scale it’s all the same so I’m not phased by it; some days I’ll eat entirely vegan without really trying. Things balance out.

Question 2: How do you prepare your sweet potatoes?

Besides the EVOO hash I described, I’ll typically make my “sweet potato fries” by cutting up 1/2 a large sweet potato, tossing them in EVOO, and baking at 350 for 60 minutes. From there, you can add things like tumeric, Parma, Daiya, or anything else. And, of course, sometimes I’ll just roast a sweet potato whole for 90 minutes. But like I’ve said before, I’m a bit of a snob and refuse to microwave them for a quick-fix.

Question 3: Do you plan your meals?

For singular me in my dorm, extended meal plan doesn’t really work. I have a couple of meals I know how to make and make well, and rely on those so long as I have the raw materials on hand. I’ll generally figure out what I want for lunch and dinner sometimes in the morning. I have planned out a week before for my whole family and that worked great; it just hasn’t been a scenario recently.

Question 4: What’s your favorite chocolate?

That’s a loaded question. In general, I’d probably opt for dark on the fly. But really, picking a single one would be like picking a favorite child: You like each one the most at different times depending on who did something bad last 😉 I would suggest seeing my chocolate review page.

Now, since there was no antioxidants in that white chocolate, I’m afraid I’m just going to have to make up for it in dark chocolate tonight and not set my alarm 😀

Thanks for all the great veggie burger suggestions; keep them coming! I’ve got a whole slew of brands to look for next time I go to Whole Foods and can’t wait to find some fun flavors. I’m also loving the recipe suggestions. I didn’t even think of making my own! For the remaining time at school, I don’t see that happening. But over the Summer it sounds like a fun project.

Last night, my entertainment was Survivor, old SNL skits, and reading some of Sweet Utopia which I mentioned I was sent from Books Publishing Co. to review. I like how it didn’t jump in to recipes but laid out what a vegan kitchen should have and everything that’s going to be called for in this book. What I wasn’t a fan of was the overemphasis on everything vegan; I think I’d rather be wowed by a recipe and look back in hindsight thinking “that was vegan?!” than be convinced going in these recipes will be “different”. I only got 2 recipes in after all of that, but one definitely struck my eye as the most decadent chocolate cake I could think of and I can’t wait to make it some time soon.

Yum! I think this could be called German’s Chocolate Cake oatmeal; it was that good. The sea salt was definitely the touch that made the chocolate flavor more pronounced, as with the coconut milk. I can’t believe how long this batch is lasting! I tell ya: if you move it to a plastic, seal-tight container in the fridge, it stays fresh a lot longer.

I knew I’d be running inside since rain was in the forecast, so I wanted to get up early and run at the gym. Still, I knew I needed to rest, and resisted setting the alarm. After enough sleep(sleep bores me), I hit the gym for 10 miles a bit later than usual. Apparently, the later crowd does not have the same TV preferences as the earlier people. Breakfast was filled with flavors of Spring and Summer: vanilla, strawberry, coconut, almond. This is an almond butter I made over Winter break. It has raw, organic almonds and pieces of my favorite white chocolate bar, which is fair trade and has bits of strawberries in it. I think the vitamin bears wanted a taste 😉

Do you ever feel like for every Twitter follower you gain, you lose 2 more? Well, the good news is some of those are just people who follow you hoping to be followed back who then go back and unfollow. I wouldn’t worry about them. But you might also be doing things to genuinely annoy people. I know I have, and am in no way touting perfection righting this list. If anything, it’s a bit of self realization on places to improve. If nothing else, it was educational and comical. Enjoy!

  1. Don’t tweet every little thought that comes to your mind. “I wish my portable laptop had a portable toilet” may sound  cute, but someone on the other end is probably saying to themselves “What were they thinking?!”
  2. If you’re conversing with someone in particular, put @theirtwitID first. This way, only people who follow both of you will see the relevant conversation. If it’s really personal, direct message.
  3. Care about who follows you. Don’t just follow to be followed.
  4. Retweet! People follow you because they have the same interests as you. If you find something to your liking, share it.
  5. NOT EVERYTHING NEEDS TO BE SHOUTED!!!!!
  6. Cap your tweets. No one wants their Home to be filled with one face.
  7. There are other ways to communicate with people close to you. If you know someone well, use the phone to tell them what to add to the grocery list. Not Twitter.
  8. A Twitpic says a thousand words, which is useful when Twitter only lets you type 140
  9. Use #hashes and trending topics to get your voice in a stream of people with the same thing on their mind.
  10. Shortened words and syncopated grammar for space reasons is understandable. Misspelling and wrong grammar just looks poor.

13.37 Miles In 1:50:54

Definitely did not plan to go so far! What can I say? I got in the spirit of things. It was fun imagining how full Providence will be on that day, all the other racers running near me, and the adrenaline. I ran 9 miles on the course and then looped around a bit to extend the mileage and end up at Whole Foods(I even saw one of my teachers whose paper I’ve been putting off writing, haha, but that’s another story and he didn’t see me ;-)). Unfortunately, I didn’t account for the 1+ mile walk back from Whole Foods, so I was pretty pooped by the time I got to sit down and eat lunch.

Holy dietary fats, batman! I was craving some dark chicken which is why I went to Whole Foods in the first place and got General Gao’s. That balanced really well with a creamy, soft avocado half with lemon juice and sea salt. I also grabbed from the prepped food bar a block of yogurt cheese; it wasn’t anything special and just sort of tasted like a basic mozzarella :-/ I still ate it all.

Since lunch was so filling and eaten pretty late, I wasn’t in the mood for much this afternoon. But if you’re gonna twist my arm…

Don’t tell chickpeas, but I think vanilla is my favorite bean 😉 While at Whole Foods, I picked up a few groceries including Vanilla Bean So Delicious. I just love this stuff; I’ve even made a review page for it now! Check it out. Equally j’adore Green & Black’s organic white chocolate, which I also made a review for. It’s not the best white chocolate I’ve had, but it’s pretty darn good 😉 And those vanilla bean specks get me every time.

Faux Buffalo Chicken Salad With Steamed Broccoli And Avocado

I wasn’t too hungry for dinner; I think that lunch was still holding me over, and I’d care not to know how much exactly was in that plate. I made a nice, light Summer salad starting with a bed of torn hamburg lettuce and adding a pack of chopped Lightlife Buffalo Wings. Some people prefer neither real meat or fake meat; lucky for me, I eat both happily so long as they’re ethical and natural 😀 I added a few more slices of avocado(love) and some steamed broccoli for light fiber. Maybe my hunger will strike for dessert? I’m well stocked if that’s the case.
