Tuna Two Ways

That(besides whipping it) pretty much sums up my morning. I had no ambition to do much else but work my way through season 1. I got through 2 episodes, including the one with Mr. Merriweather and Ethel pretending to be a psychic. Anyone else remember that? Classy.

Mr. Montana was definitely feeling itchy this morning. I was thinking how productive it’d be to give him a bath but a) he wouldn’t let me pick him up to put him in the sink and b) that would have made a HUGE mess I’d have to clean up. Instead, I just scratched him as we watched Paula Dean use obscene amounts of butter in desserts. God bless her and may her arteries stay clear so she can keep pumping out those recipes!

For lunch, I had plenty of delicious leftovers to choose from. Not only that, I had a full kitchen to work with. And you know what I had?

Tuna And Whole Wheat Mac N' Cheese

Canned tuna and boxed mac n’ cheese I made in the microwave. Oh, the irony. I really didn’t want to make this because I know it’s the type of meal I’ll be eating all too much when I go back to campus. BUT it was what I was craving and I’m never one to deny that. At least the instant macaroni was whole wheat, right? Can anyone spy what television character those are shaped as? It’s hard to tell, and it’s a little silly. But I got the whole box for 77 cents so it was a major deal. So as to not fall off the green wagon completely, I pregamed(bet you didn’t expect to hear me say that) this meal with a green beverage.

I mixed 1/2 a cup of plain coconut milk kefir with Amazing Grass‘s green superfood. I’d been waiting for an occasion just like this to review this product. And I was wicked impressed with how UNgreen it tasted! Well, it still tasted green, but not displeasantly so. It was slightly sweet without a graininess to it at all. If you want to tell me I was getting the benefits of all the foods listed on the back, that’s fine with me and pass a glass. The kefir made it a nice, thick treat, too, and probiotic.

This afternoon was monumentously unproductive. I hoped to go for a walk since the sky was so blue… until I realized with the wind chill it was 19 degrees. I didn’t even really feel like cooking up one of the few recipes I have bookmarked to do because that meant cleaning up after myself. Boo. I realized that this is when normal people generally watch their movies, such as the one I bought over a month ago and still haven’t seen: Gettysburg. That was good enough reason for me to pop it in. I almost napped during the first hour, but eventually got into it. Halfway through I made a snack.

And now that picture is making me want it again, darn it all. The frozen yogurt had a bit too much freezer burn on it but that was fine by me. And it went so nicely with the warmed muffin–yum! I knew Gettysburg was a movie about history but I didn’t realize it’s the longest movie in history(not really). But after 2 and a half hours, when it wanted me to change discs instead of being over, I was over and decided to save the rest for a rainy day. Thankfully, by then my mom came home and we were planning dinner.

My aunt gave us a Stonewall Kitchen Oil for Thanksgiving and tonight seemed like the perfect chance to open it. We had ahi tuna and rather than roasting I suggested pan searing after seeing it on Ada’s blog. The oil splattered on me a bit, but we got through 4 minutes of searing, 2 minutes per side.

It wasn’t perfect like at Tomasso’s, but I was pretty damn impressed with us. The lemon flavor really was soaked in there well, and the inside was a pretty pink. I topped the tuna with smoked Scottish salt, the butternut with salt and black pepper, and broccoli with plain sea salt. I ended up finishing the pan of broccoli “to be helpful with cleaning up” 😉 It’s a lot better than cleaning dishes!

French Toast Morning

Today’s the last day to enter this giveaway!

For anyone wondering what the flourless peanut butter cookie recipe was, it was 1 cup peanut butter, 3/4 cup brown sugar, 1 egg, 1 1/2 teaspoons vanilla extract, and 1/2 teaspoon baking soda. I wasn’t particularly looking for making this vegan or with grains, but thanks for all the suggestions! I love finding and reading new reipes to try another day. Last night everything was set for It’s A Wonderful Life.

It was past his bedtime, anyway. I decided to whip up a batch of my double chocolate pillows, except with white chocolate this time instead of regular chocolate chips, and earth balance butter spread instead of canola oil.

I love the batter for this recipe! It’s so ridiculously thick, you think you’re doing something wrong but you’re not. You just need to work work work to get the flour mixed in. They came out pretty nice, though there were too many white chocolate chips and I think a tablespoon of them got stuck to the pan.

These are like crack. I did a little history. Not going to lie–throwing my notebook into the fireplace crossed my mind once or twice, but I resisted. Towards the end of the night I was exhausted and just wanted to curl into bed with some peanut butter and chocolate.

The Earth Balance peanut butter was something like Smart Balance, but a little bit of a let down. If you’re looking for a more neutral taste but with the same health benefits, it’s probably a great buy. I, on the other hand, was hoping for a really flaxy funky flavor that Smart Balance has. The chocolate bar was the real let down. I had high hopes for it but–I can’t. I don’t want to think about it.

When I woke up this morning I knew it was a french toast morning. First up I wanted to start on something I’ve been thinking about for a while.

Oh Nuts! Almonds

Oh Nuts! sent me some almonds a while back. These things were huge! And smelt so fresh. They were also raw, so I decided to throw them in a 350 oven for 12 minutes to roast them. Then I melted together 1/4 cup maple syrup, 1 tablespoon earth balance butter, vanilla powder and cinnamon and coated the almonds in that. Then I threw them back in the oven for 10 minutes or so to dry a bit.

Voila. I haven’t tasted them yet, but they smelled delightful(and the bit of extra syrup I licked off my fingers was mighty fine, too). This also called for a french toast breakfast.

This was all OK, but clearly if I wasn’t loving these sausages it meant my appetite was off. I haven’t ran in 2 days and I also haven’t gone to the bathroom in 2 days; directly associated? I think so. It’s made me not want anything. Ugh. All else I could tolerate was some very very dense calories.

Besides that, not much else special has happened. It was Sunday lunch with the family. Lunch? I really just wanted to find a treadmill and hopefully get things moving rather than put more food in. But I was also cranky, which meant I didn’t have enough food. I hate contradictions like that.

I honestly don’t know how I got this all in(sans the ketchup bottle). The chicken patty was much better baked than the last tie I had them microwaved. And the sweet potato was just calling me with it’s roasted aroma. But now it feels like sitting is discomfortable. I’ve asked to leave to get back on campus a little earlier than usual so I can hopefully hit the gym before doing some intense work on my Latin final paper; now that I have a direction, I’m excited to just work and finish it!

The Skin Is The Best Part

Well running didn’t happen this morning, certainly to no one’s surprise. I love snow, but I hate the cold, and sub-60 is “cold” for this New Englander so sub freezing was not happening. What was happening was work on my paper; thatnk you all for th support! If I get this much motivation for my 15 page paper, I can’t wait to share how overloaded I a for next week 🙂 Haha, but seriously, better not to think about that. I got a bit snackish before lunch so I spoiled my appetite entertained myself with a healthy appertif.

Deep Chocolate Vitatop

I would have gone for an apple or something, but I ate all of those(read: 1) yesterday and there isn’t much else in the way of quick snacks at home. Oh well, this has plenty of nutrients so it was all good. Eventually my grandmother showed up and we had a Sunday meal. We picked out chicken from Whole Foods yesterday because it was on sale, but I just wasn’t in a meat mood even though I knew it was vegetarian fed and all. I hate to pick out something and then not eat it but tastes change and I knew someone else would have my part for leftovers.

Curry Chickpeas, Broccoli, Sweet Potato With Maple Syrup

For a quickie-meal I heated up 1/2 a can of chickpeas and microwaved it with curry simmer sauce. It was surprisingly flavorful for so cheap and easy! And we all agreed that these Trader Joe sweet potatoes were like candy. Sweet potatoes are always good, but these were great; they practically caramelized in the oven. The skin was so crispy I skinned a particularly phallic looking one and just ate that.

The skin is definitely the best part. My family, unfortunately(or not?) doesn’t agree, so I also ate my mom and grandmother’s sweet potato skin. Why do I admit these things? I’m sure I’ve said much worse. After lunch I mostly sat on the couch with Montana working until it was time to go. Since last week the Christmas tree had been decorated.

It didn’t happen this weekend, but I’m still holding out for when I’ll be sitting in a blanket, drinking Boulevards hot chocolate in front of a fire, and watching It’s A Wonderful Life. *Sigh* It’ll happen. And so I said bye to this and got going with only 5 bags this time!

The ride felt very speedy. Maybe it was because I was reading Greek or maybe it was because we didn’t stop anywhere until Providence. When we got near campus we swung by Stop & Shop for some Vitatops and Libby’s pumpkin. I was getting hangry so I also grabbed this for protein:

After a really positive experience with the chocolate peppermint stick luna I was psyched to try out another flavor; unfortunately, it was not nearly as entertaining. It felt so one-note: sweet. It would have been an improvement to even just as some whole peanuts and salt. Ah well, I was hungry so this went down before we checked out(literally). After that was Whole Foods for some ice cream and fake-chicken patties, and some garbanzo beans and soy yogurt because I passed those. Moving things back was fairly simple. I had it in my mind to have the ice cream I bought but I was so cold I couldn’t think about ice cream. I lose circulation very easily and so winter is never my friend. Anyway, I got a decent idea to resolve everything.

I took a quarter serving of the Snickerdoodle Soy Ice Cream and mixed it in a soy yogurt with extra cinnamon and stevia. The flavor was a bit weaker but it was definitely all I could handle at the time and this was plenty cold enough. My dorm room is particularly cold tonight. I hope it’s only like this because nobody has been home much and not because it’s going to be like this for the whole next 2 weeks. Dinner was definitely uninspired.

2 Food For Life Chicken Patties, Broccoli, Dips

You can definitely feel OK about eating the skin of fake meat; I was curious how these would taste to be like chicken, and the answer was very bland unfortunately 😦 I had 2 not out of love but because I couldn’t think of what else to eat. For dips there was a very vinegary ketchup and mustard as well as a house-made honey mustard. Is it weird that I forgot how good honey is? I think I’ve been eating too many vegan things because it tasted uniquely sweet and I could have downed the whole bottle(or bear as it is).

The Amazing Race finale was tonight–has it been a whole season already? That’s pretty ridiculous. I glanced up and down while translating the bit of Greek I chose for my paper. When I say that, what I really mean is blog reading to the point where I really wanted a sugar cookie. Why is that the one kind of cookie I didn’t bake this weekend? Oh well, this bar and tea was just as good:

I actually got under the covers to eat this because it feels that cold. How much hot liquid can I possibly pump into my body? We’ll see. I predict a lot of waking up and running to the bathroom tonight. The right team totally won The Amazing Race. I’m just glad the bickering brothers didn’t. After that, Family Guy was hilarious and I got 3 solid paragraphs done before giving up and making oatmeal 🙂

Oatmeal With Smart Balance Peanut Butter, Chocolate Hazelnut Frosting, And An Advent Chocolate

Soooo good. I’ve said it before and I’ll say it again: milk chocolate and peanut butter all the way. The frosting here was 2 tablespoons greek yogurt with sweetener and a tablespoon organic chocolate hazelnut butter for some added NUTrition. I’ll be eating this to the tune of Brothers & Sisters; there should be some good twists tonight! Really I’m excited to hit the hay and get up tomorrow for the run. Since reading week is beginning, I have no class tomorrow and so can run to my heart’s contents time free. Maybe another 16 miler? With 2 days of complete rest, it might come more naturally than I could hope. Goodnight, all!

It’s Just Puppy Love

Naturally, I’m talking about him. I don’t know why, but yesterday morning I was struck with a little homesickness for him. First, on my way back from the gym, I saw a squirrel on a trash can whose expression instantly reminded me of him(weird, but true). Then I got the most hilarious email from my mom saying he bit her toe last night. Okay, maybe that shouldn’t be funny, but I have an awful sense of humor. From what I gather, they were both sleeping in bed and she kicked him. The whole thing sounds like the episode of Everybody Loves Raymond where they get into an argument because Raymond doesn’t like to be cuddled. Why is that show not on anymore? 😦 Oh the things I miss…

Anyway, class yesterday was dullsville. I got a horrible craving for chocolate chips in class which then led to the challenge of fitting them into my lunch somehow. I also swung by the dining hall to find something a bit more substantial. It turned out to be tempeh day on the vegetarian line! I filled up a container, some for lunch and a lot leftover, and then made the rest in my room.

Peanut Butter Greek Yogurt With Chocolate Chips

This was definitely a protein overload(aka it sat like a brick in my stomach) but all tasted soooo good. I like the tempeh just plain; I think the flavor is so interesting on its own. It must be the whole fermenting thing. Of course, the yogurt was what really hit the spot 🙂 I’m pretty sure my friend Alex in Greek History class couldn’t tell what flavor Chobani I bought but was too afraid to ask.

I didn’t actually do the reading for Epic today(oops) because I figured 6 pages of writing was torture enough. It worked out fine because we didn’t cover everything we were supposed to and what we did I read in the original Latin all 2nd semester of last year. When I got back to my dorm, I found out when exactly my roommate sleeps: 3pm. I think we’re just a little off in our schedules. I started working more on my paper and Greek(the only homework I have for today), and snacked on this bar:

KIND Almond And Cashew Bar

This has easily been one of my favorite bars all through Summer. I’m so glad they sell it at campus stores where I can use my points! It has a honey and date base which is nice and sweet, and the nuts taste really rich. I don’t know why but whole nuts are always more desirable in bar form than on their own with me. Plus it has Omega-3 from flaxseed(which is why it’s called KIND Plus…). This was very tasty while I watched about the woman who was torn apart by a primate. Did anyone else see that? It’s so sad, I couldn’t imagine an animal doing that much harm or a person living through it. I made some oatmeal after Oprah.

I don’t eat it much, but every so often I get an urge for this Naturally Nutty peanut butter. I figured the earthiness of it would work well with some pumpkin oatmeal. I added in nutmeg to deepen the flavor, and it was really strong. For dinner, I met with Adam at The Ratty.

Lentil Chili, Carrots And Zucchini In Garlic, Cooked Spinach, Raw Tomatos

This was definitely a “take the picture fast and don’t look too odd” picture, lol. The chili was OK, but not great; it needed more chili powder I’m guessing. I always like that carrot and zucchini medley, and the rest was pretty simple. I’ve stopped looking at what’s in the non-vegetarian line pretty much because I’ve expected weird stuff. Tonight, I got to see what it was via my friend’s dish: “paella” with fried chicken and unopened mussels. First of all, since when does paella have on-bone chicken in it? I’ve been to Spain and that’s not how they roll. Also, unopened mussels? Not smart. That pretty much describes why I pick up quality meat at Whole Foods to make dinner for myself some times. Ginger Ale Zevia

This one I think had one of the weaker flavors, but maybe I just feel that way now that I’ve had ginger preserves which are spicier than all hell. Of course, by 8 I was watching the CMA’s. Go Lady Antebellum for single of the year and best group! I think any of those were good songs(like Chicken Fried!) but they deserved to win something. I think the entire show was just awesome.I’m not so secretly a country addict, with half of my itunes library being Sugarland and Taylor Swift alone. I had a little of this mid-broadcast.

These have to be my favorite cookie of all time. I’m definitely placing a big bag in my shopping cart from Goji Gourmet. By the way, congrats to them for being a Rachael Ray snack of the day! I hope that episode airs on a Tuesday or Thursday when I can watch it. I also now need to restock on cherry preserves; do you think I can get the register attendant to ring it up as cranberry butter like with the dried ones? 😉 Back to television, I was standing on my feet when Taylor won; that was so exciting for her! And of course I was rooting on Sugarland, too.  Afterwards I made some breads & spreads(why haven’t I used that phrase in a while?).

I really didn’t know what to do with this flavor vitatop but I think it worked well with chocolate sunflower butter for an odd but attractive duo. I either burn through english muffins or have to force myself to want them. Good spreads like this help with that, though. I think when Taylor won entertainer of the year that pretty much summed it up. Her reaction was priceless, and this definitely was her year.

This morning has just felt so “on” so far. I woke up at 6:20, and then decided another 20 minutes of sleep would be just fine 🙂 On the way out of my dorm I grabbed a new Larabar.

Peanut Butter And Jelly Larabar

I don’t quite have time to write a review at this moment, which would be here once I set it up, but this was awesome. I really did not expect to like it so much and I hate relying on new flavors of bars when I’m out of the house but this was so dead on. This really powered me through 11 miles in 90:36. It must have, because I was only planning for 8, but I think I was meant to do 11. In that time I listened to every Taylor Swift song I have(which took 88 minutes) and got to watch a segment on the Today show about childhood diabetes and the foods we can use to prevent it. They didn’t promote oatmeal and pumpkin but I’m going to bet those are good ones 🙂

I think I’ve rightfully stopped fooling myself I won’t be having oatmeal and yogurt, even on days when I’m short on time like this morning. Everybody left the house leaving me to wait around until lunch. It feels like this house lacks “real food” whenever I’m gone. That’s why I pack an entire shopping bag full. See? I listened to the back of my Lightlife tempeh box which says it’s best grilled and skewered some BBQ tempeh. I loved the smoky flavor that it gave it and nuttier texture, but I still don’t know that the BBQ flavor came out. The broccoli was for the green(or maybe just an excuse to eat hickory smoked goat cheese). And the Chobani was a bit of early dessert. Even though I had the thought “I could be having ice cream instead of this” I chose the yogurt; what has happened to me? Clearly, that granola has a bit of flax and a bit of crack. Immediately after lunch we got on with the afternoon festivities…

Apple picking! Would you believe every Saturday so far this season I’ve came home has been rainy? It was windy, but not a raincloud around, so we hit up Tougas Farms for their final weekend. The trees were pretty picked but we made do.

Naturally, one snuck in my mouth on the walk out. I forget which type this was but I had an Empire; it was very nice and crisp and reminded me of a less sweet and visually attractive Red Delicious. After that we went to Target in search of some elusive Archer Farm’s Vanilla Cranberry Peanut Butter. Alas! No luck 😦 Next up was Hannafords for some general baking and eating goodies before heading to Micky-D’s(for a coffee, of course) and home. Here was the loot of the odyssey.

Greek yogurt–obvs–, Organic PB cups for an Evan Halloween :-), pumpkin, oats, apple butter, soy milk, tofu, and organic Smart Balance butter. I didn’t want to spring for the organic but the regular stuff apparently has artificial flavor. What are they flavoring it? Just like I don’t like butter, I don’t like fake butters either. But I know they’re necessary for a certain recipe I was thinking of making so I sucked it up and tried not to touch it too much. I was also pretty hungry and in need of a little mood booster, so I busted out the last of my old Smart Balance peanut butter.

Vegan Pumpkin Brownies

Ingredients:

  • 2/3 cup whole wheat flour
  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 15oz can pumpkin
  • 1 teaspoon vanilla extract
  • 1/2 cup soy milk
  • 1/4 cup pumpkin butter

Pumpkin Brownies With Pumpkin Butter

Preheat your oven to 350. In a bowl, sift together the first 5 ingredients. Add in the pumpkin, soy milk, and vanilla and mix well. The batter will be thick. Spread into an 8×8 pan. Scoop pumpkin butter into a ziploc bag and snip off one end. In lines, squeeze the pumpkin butter. Then, with a knife, alternate cutting motions in both directions to make an effect. Bake for 25-30 minutes.

If you love fudgy brownies, these are definitely the ones for you. They didn’t even taste like a pastry but more like solid packed pumpkin and chocolate. I used too little sugar and baking powder, but I adjusted the recipe accordingly so hopefully yours will come out a bit more flavorful. Be sure to tell me if anyone tries these 😀 This was a nice appetizer for dinner.

A dinner, by the way, that was eaten spread over 30 minutes of being on the couch translating latin and running to answer kids at the door. I wasn’t feeling salmon. I feel like there’s an expectation for me always to want salmon or some meat when I come home, but that’s just not true. I tried introducing some alternative protein to the meal with grilled tofu. I liked the Nasoya firm better than what’s at my dining hall, so I might be adding it to the shopping list from now on, but I think it was too firm; when I reach for the ‘fu, I want something mushy and funky. There was also this humongous apple:

It’s hard to tell, but this was big(TWSS). I ate it quick and sloppily just so that I wouldn’t have to feel hungry running back and forth to the door! God that gets annoying, and is so unfruitful. Next year I’m hitting the streets again. At least that way you get candy for your work. Now I just need to find an organic street… I did have a partner in answering the door:

I told you I had a hot dog. He didn’t actually fit in his costume so we just held and threw it over when people came to the door. We didn’t get too many visitors, which my mom was very pleased with since that left her with a good amount of candy for herself.

Would it have been Halloween if I didn’t buts into a little candy? Clearly not. This was actually an educational experience. I learned a) when it comes to peanut butter and chocolate, milk is the way to go. I would have thought dark because in general I love that way more than milk but it just works with the peanut butter. Also, b) candy is better on top of yogurt. It feels like a sundae. I wonder if organic coated candies leak organic coloring like M&M’s do. That’d be sweet. c) Vanilla soy yogurt actually tastes like vanilla. Unfortunately, this boy likes his soy yogurt to be as funky as tofu, so it was a bit of a letdown 😦

Vanilla Cranberry was clearly the flavor obsession of the night. I was a little disappointed I couldn’t get the Vanilla Cranberry peanut butter 😦 Word from the foodie is that it’s in Woburn but that’s a good hour in the wrong direction for me. I’ll find it yet. I don’t even remember when I baked my last batch of those scones; I love finding pastries hidden in the freezer. I think I need a spare freezer just for english muffins because they never seem to be where I want them.

Did anybody else feel that extra hour? I woke up at 8 7 and felt both well rested and not lazy. That was nice. Instead of hitting the streets, I hit the kitchen. I’ll save what I whipped up and my breakfast for the next post 😉

Alright, folks. I have a midterm in 2 hours so let’s make this snappy(jk, I write most of this the night before anyway ;-))

Yesterday felt like one big caffeine hangover after Wednesday’s amazing night. The sad thing was I didn’t even have any caffeine besides what was in the food itself; I’m such a light-weight. Being at home yesterday turned out not to be such an inconvenience. My dog had a doctor’s appointment halfway towards Brown so I ended up just hitching a ride that way. I would have preferred if it wasn’t so damn early that I had to run, shower, eat, and blog within a couple of hours, but I made do.

I would like to say he was big and brave, but he’s totally a wimp. He was shaking the moment he knew where he was, and all they were doing was following up on an ear infection. He has a lot of infections/allergies. He’s also grumpy a lot and likes to sit on the couch near the TV. Hmm, maybe that thing they say about owners and dogs is true. I ended up getting back to campus exactly at the time I would have got out of class had I had it. I swung by The Ratty because I was starving, and put away all my loot from the night before as I ate:

Did you know eggs scrambled in a bowl and microwaved for a few minutes will cook and fluff? I didn’t know that, but I’m glad they do, because I really wanted something savory for the steak sauce to go on and I was out of vegan burgers(from vegan burgers to eggs. How ironic…). I am loving Trader Joe brand ketchup. It’s a lot less sweet and a lot more vinegary than other brands I’ve had. This is a highly recommended TJ product if you have one near you.

All that party-hardying made me very behind on google reader, but I had(somewhat) caught up by 3pm. Isn’t that a great feeling? Not when you haven’t studied, but otherwise yet. For once, I actually felt like going to Whole Foods was a chore. I tried to convince myself I had enough food, but surprisingly opening and closing the fridge 3 times doesn’t make bread appear. I grabbed a snack and hit the road.

Anyway, it was a great day for a walk in N.E. The weather was sooo good yesterday, it felt like Spring! I walked around Whole Foods a lot(as usual) but did major self editing at the check out and walked out with the “bare essentials”:

I resisted the urge to call anyone to rant/tantrum, and just admired my new shopping bag:

Isn’t it nifty? I like it a lot more than the Stonyfield one because it’s more my color, fabric, and yogurt. I also love the new designs for the Oikos containers, but sadly they only had those out for the 5.3oz ones. I tried getting back quickly so that I could make a quick snack because I was stahhving and–hopefully–study. The latter didn’t happen but boy was the former a success!

I decided to test out my new Banana Peanut Butter sent to me by Sunland. By test, I really mean I threw this one to the lions; fluffernutter oats have a huge place in my heart and this peanut butter needed to fill some big shoes. Right when I opened the jar I noticed 2 promising things: it smelled like fresh sliced banana bread with peanut butter slathered on it and it was thick and smooth like PB&Co. That was all promising and a good indication for the peanut butter itself. It didn’t melt quite like I was hoping/expecting, but the flavor was spot on. It reminded me of having a sandwich on Wonder Bread in kindergarten. If any nut butter can do that over whole grains, it’s a winner in my book.

These oats were good, but not filling. That was out of the ordinary, but thankfully dinner was right around the corner and I could wait for this:

I wish I could say this was as good as it should have been but it never all clicked. The snap peas were at least not overcooked and had some snap. The sweet potatoes were good(duh!) but I’m actually developing a taste for them microwaved. The tofu was… tofu. But a little TJ mustard(yes, I packed my own mustard) perked it up. i didn’t even finish the soup; it seemed promising with carrot, ginger, and honey, but it never all clicked.

When I got back to my dorm, simply doing internet stuff took almost 2 hours. My computer was running sooo slow. I had to grab this while I was waiting for an update:

I didn’t quite realize why I was craving it for a while, until I noticed 45mg caffeine on the ingredient list. That couldn’t be too much, right? Well it’s the amount in a light roast regular cup of coffee. Yikes. My remedy for this was to gulp it, of course, because then the caffeine would enter my system early. Wtf? Bad judgement call here. We live and we learn–ain’t that the truth. I also watched Modern Family and Survivor. How hilarious was this weeks Modern Family? Not many shows make me laugh like that one did. You know I could never stop reading that blog and am full of hot air; I’d miss out on killerness like this. It’s such a smooth and sweet texture play, it’s ridiculous! I’m almost out of my favorite oatbran(toasted Trader Joe’s) so this was straight up steel cut. Normally, I’m not a fan because of the coarseness, but the pumpkin softened that. Grey’s Anatomy was… interesting? last night. I liked that they switch up the format of the show to make it different; but I don’t know that that way really worked. I’ll be watching The Office and 30 Rock over the weekend at some point to make up. I also might have snuck one of these into bed with me:

Holy Hannah was that good; now I understand why I consider these an “essential”. For the frosting I did 1 tablespoon cream cheese, 1 tablespoon plain 2% Voskos, and a little NuNaturals vanilla stevia. I wasn’t sure if cream cheese and yogurt together would work, but that was a big fat yes. It was smooth and creamy and held it’s consistency but was still soft; could you ask for something more?

One of the things I think is best for tests is sleep so I went to bed a little earlier than normal and got a real good nights sleep. My right foot did not feel up to par this morning, but I wanted to run anyway. Why am I so stubborn? I think it’s a familial trait. I waddled through 10 miles in 85:14. All that time gave me time to think and realize the reason I was sore was because I completely forgot to stretch anything yesterday–lesson learnt. I had a muffin planned for breakfast, but banana on the brains caused me to come up with this:

I love how creamy properly mushed banana makes oatmeal; it’s a great substitution for when pumpkin isn’t the right flavor. And the banana peanut butter is definitely growing on me, in case you can’t tell. That was just one big banana nut mess! But do you notice anything missing from my breakfast this morning? Whole Grains? No. Probiotics? Nope. Nut Butter? Big nope. Animal products–yes! I’ve decided that, in honor of Lightlife and Tempehtations, I’m going to take it upon myself to eat vegan for today. I actually had this planned for Wednesday but that all changed when I got invited to the dinner(there was no vegan dishes there so it would have been a huge fail). I’m very excited to try this out; it’s not something I’ll pick up permanently but I feel like it will be a fun adventure–wish me luck!

(Half-)Marathon Monday

Yesterday when I got home, the gang was there to welcome me:

I can’t decide whether he looks annoyed or apathetic. My grandmother was also there to slip me a little money for the food(thanks, grams!). I was a little worried, because the only thing I smelled upon entering the house was chicken. I’ve decided that chicken and turkey that’s not wild or grass fed I am more than happy to give up for good. Thankfully, though, there was a slab of salmon hiding in oven as well. My mom apparently felt that for the 4 of us we needed broccoli, brussel sprouts, sweet potatoes, carrots, a chicken, and salmon. My plate simply looked like this:

Salmon, sweet potato, and brussel sprouts. Isn’t this my every meal? Of course it was all delicious. The only problem was that this occured about 20 minutes after shoveling in my muffin and cream cheese so afterwards I felt the bloat–majorly. I parked my butt in front of the TV and caught up with my beloved Food Network. Tivo records Unwrapped so I caught up on all the inside scoop with marshmallow foods, and then it was time for Paula’s Party. They cut open a coconut; I now have much more respect for anything I eat that has a decent amount of coconut milk because that is not easy stuff to harvest. It began snowing quarter-sized flakes at 2pm:

Attune bars! I only had 1 coupon left but both of these flavors sounded so promising I didn’t mind paying for the other. These really do come in plenty of fun flavors and I hope they taste as good as they sound. It was snowing ridiculously, but for some reason I feel so much calmer riding in the snow; I guess it’s fun to think of the whole “carriage ride in the snow” thing even if you’re just in the car. I managed to spill coffee all over my freshly washed jeans–way to go, Evan. When we got back, I didn’t have much to put away other than a ton of clothes. I was feeling like something wheaty but a big bowl of oats right before dinner wasn’t appealing. Instead I had toast!

Well he ditched me last night when his parents came and he got a real meal so I’m going to play the even stevens card. Instead, I put together this in my room:

The first thing I loved about this meal was that it was entirely vegan! I could never go vegan or really any restricting diet for a prolong period, but I love eating different ways at different meals. Look at the size of those broccoli spears; I love it when my cafeteria has those available. And sweet potato? How luck could I get. I was really craving the flamegrilled gardenburger(my last one :-() doused with ketchup. Trader Joe’s ketchup is much more vinegary than most and definitely a unique twist.

The Patriots completely owned Tennessee last night, but apparently this wouldn’t prevent them from showing the game and screwing up the primetime line-up. Instead I caught up on some Simpsons and their treehouse of horror; it’s such a weird thought that that’s gone on for 20 years and the show is older than me! I knew precisely what I wanted for probiotic source #2 for the day:

I forgot how amazing pumpkin oats with the real deal maple syrup could be. Don’t get me wrong; I still love my salty pumpkin messes. But this sweet variety is also quite nice. The single(and I do mean 1 and only) thing I don’t like about this and other Naturally Nutty peanut butters is that they don’t melt so purdy on oats. I’m actually more of a fan of runny, need-to-stir peanut butters and Naturally Nutty makes a point of their no stir formula. Oh well, at least the flavor is spectacular.

Finally The Amazing Race came on but it coincided with Brothers And Sisters; since I really hate falling behind on my dramas, it was a pretty clear choice which one I’d go with. I’m loving the progression of this season with all its twists and turns; it’s a wonder why this show doesn’t get the hype of others. I had one last bedtime snack:

For some reason, I’m just not a big fan of the muffins. It should be the same as the vitatops or brownies in theory, but it doesn’t feel that way. At least it was better digested than last time’s english muffin. By the way, I have a great roommate who vacates the room at 10:30 because he knows grandpa here wants to get to sleep.

This morning my alarm went off at 6:30… and then again at 6:40. I felt I needed a little pre-run fuel even though I didn’t have much of a plan:

Love that mighty maple. By the way, it’s pitch black here until 7. When did that happen? Bread’s not easy to spread in the dark. I got to the gym and started on the treadmill at a really easy pace of 7.1mph. After a while I knew how far I wanted to go if I continued to feel this good and that it could be my 2nd half marathon. Around mile 9, I had to do a quick bathroom break, and the last mile was definitely a push, but that’s no time to call uncle. I ran 13.1 miles in 1:50:56 and it felt great. Wouldn’t it be awesome to do that every day? I think I just heard my legs laugh. Anyway, that really put me behind for my morning and breakfast was a quickie to help me catch-up:

The cinnamon raisin rolls by Zen Bakery are amazing; even after time in the freezer and the microwave it’s still delightfully yeasty(giggle, giggle), light, and airy. The butter toffee peanut butter made a good frosting, too. I’ll write up a review for this Voskos yogurt, which was a sample from the company. I haven’t ate it yet but I see real vanilla beans(!!) so this is muy promising.

A Trip Well Worth It

So I entirely thought I posted this at 9am. Guess not. Here was my life up until that point, if ya’ll still interested(and yes, there was froyo ;-))

If there’s one thing I hate it’s being behind and/or rushed in the morning. So you can imagine how I was feeling about running 90 minutes later than normal, for a longer time than normal, and expecting to be picked up before lunch–Go, go, go! That’s another good thing about muffins for breakfast: they move with you better than oatmeal. Despite the pandemonium, I had breakfast in me and was out of the dorm by noon. On the way home we stopped at Whole Foods to get something for dinner as well as lunch. My dad didn’t think I’d be hungry after having just shoveled a muffin and yogurt down. Really? Me? Of course I was up for attacking the food bar. If anything I dislike how many choices there are because I could be there for ages reading every sign, but in the end I stuck with something simple:

Someone please remind me the last time I had sushi? I’m sure it’s on the blog, but it’d definitely be more than a month back. Let’s not let that happen again, k? I forgot how good slightly sweetened rice and soy sauce(aka liquid salt :-)) could be with a little fish. The fish was actually one of the weirder parts; the first 4 pieces were nice and soft but the last few were a bit tough and chewy. I mean, it is supermarket sushi after all, so I don’t know how great I was expecting. I also love eating the ginger straight. Anybody else do that? The tofu was decent but I wasn’t feeling anything fried at the time so I passed those off to my dad.

When I got home I was literally dropped off and left to my lonesome; my dog had a haircut appointment so I had mi casa to myself. First I discovered this in the cupboard:

Someone in my family who reads the blog took the hint and was so nice enough as to pick this up when he saw it 🙂 How sweet. Last month I won a contest at Heather Bakes for one of every flavor of Chobani and it finally arrived this Friday. When I opened it, it wasn’t quite 1 of every flavor; there were about 9 or so with some missing and some duplicates. But that’s ok because there were 2 pineapple flavors which are my favorite. I can’t wait to bring these back to the dorm. 9 yogurts will last me… through Wednesday, haha. After finding all this I got down to business.

Again, how could I not? And I knew just the perfect recipe. Holly, Miss Everythingtarian, came up with the most amazing sounding Vegan Pumpkin Molasses Cookies, recipe here. Done drooling? K, good. I altered the recipe slightly by dropping the canola oil to 1/4 cup and sugar to 1/2 cup. Apparently, Holly doesn’t just make recipes that taste great, but she makes recipes that come out looking amazing too. Check out these beauties:

Amazing. I might have gone a little overboard on the rolling of dough in sugar so that it all evened out in the end. Oh, and with the spices, too. Has anybody actually measured those out, ever? I only used 30g oats and 1/3 cup pumpkin because I figured the rest would be in the cookie. This recipe absolutely knocked my socks off. It’s healthy yet absolutely sweet and delicious, and nice and soft and chewy like I like my cookies. Have I gushed about these enough? Didn’t think so. I’ll continue to do so through the week. My hats off to Holly, who in all this craziness I forgot to mention is running a marathon this weekend. She does it all, folks. I caught up with a lot of house flipping and cake acing with my Tivo, and even managed a little(just a little) homework in all of that. Soon enough it was dinner time:

Believe it or not, I did fundamentally want salmon tonight for some reason. I feel like having the same thing every time I come home is a bit boring. HOWEVER, it was still on sale, and no one in this family can deny a bargain, so salmon it was. And I certainly can’t say I was complaining, especially with a little Trader Joe Island Soyaki sauce on the plate. We were actually supposed to have Trader Joe basmatti rice to go along with this but after it cooked it was not appetizing to me. Strange because I’ve had their boxed basmatti rice before and really liked it. Thankfully, the corn in the microwave method was a quick sub-in.

Last night’s primetime TV was a little down if you ask me. Food Network had a marathon of The Next Iron Chef, which I’d never seen before but wasn’t terribly exciting since I could predict Michael Symon being the winner. Instead I had a little excitement with food.

I really enjoyed that yogurt from this morning and felt like I ate it way too fast so I wanted to enjoy it again. I didn’t even do anything with the muffin top this time; I just chopped off the butt, stuck it in the microwave, and crumbled it into my yogurt. Again, delicious. It tastes just like carrot cake yogurt. Got any muffin butts you don’t want? I’ll take them off your hands. I tried watching TV shows online but I think Google Chrome has made my internet run a little slower lately. Anyone else experiencing this? Ah well, I had an english muffin with some spread overload to top it off while the computer wasn’t working.

I was planning on making a nice cookie spread but nothing appealed to me except the cookie dough peanut butter so I just added a bit extra of that and called it a night. I know it wasn’t even a full 2 tablespoons, but it felt like a ton since the surface area of the english muffin was so small; I swear I had full mouthfuls of peanut butter–not complaining. The cream cheese was Archer Farm’s Brand so I think it must have been all natural? All I know is it had a ton of confusing ingredients and didn’t agree with my stomach 100% but was pretty damn delicious.

This morning I fully planned for it to be raining and for me to be forced for into a rest day; I was a little confused when my planning for rain didn’t happen. What I don’t have that power? I thought it over and decided to take the rest day anyway even though I could have got some good running on my home streets. Instead I did what Sunday morning’s best for: circulars and breakfast.

My first experience with oats in a jar a few months ago didn’t go so well, but this time it was perfect. The jar was just the right size to be overflowing with oats, and I think there was just the right amount of peanut butter left. I had left this behind when I went off to college in September for my dad to try and he actually liked it so much he ordered his own, bigger jar. That’s only proof that anyone who tastes this just falls in love with it. I also had one of the pineapple Chobani I won to round it off.

Now I’m sitting here, catching up on last nights SNL. Was it just me or did the Philips Family Feud sketch fall a little flat and was in bad taste? Ryan Reynolds is a pretty funny guy, but I don’t know that he’s a sketch comedy person.  I’m sure I should work on my first essay of the year *shudder* but the sun’s peaking out so a walk might be in order.

A Room Of My Own

Good morning. I feel so much more chipper today than yesterday. Maybe it was the not running in the rain, maybe it was the sleeping in my own bed. I’ll get to all of that later.

The ‘rents came down to Providence around 11:30. I loaded up a cooler with half the vitatops to bring home in case my school freezer wouldn’t cut it. On the way home we had a few stops, the first being here:

This is part of the same Farmer’s Market loop that comes to my quad on Wednesdays. There were a lot more vendors today but nothing peaked my interest(except specialty jams which ALWAYS do except they’re so expensive). Afterwards we went to the Whole Foods which has an exceptional collection of ice cream–but more on that later. It was lunch time and I needed a snack or a full blown meal to keep my crankiness down so we went with the salad bar:

Salmon is always a good choice, no? It was a bit dry, and cold, but you know how I am about salmon: just say yes. I also got some hot sweet potato/tempeh taco filling and some cold lentil/brown rice concoction. I put them in the same container because I didn’t realize one was hot and one was cold wanted to spare the environment. Again, these were pretty damn good. I was so happy to see this lil’ bugger when I got back:

He was happy too, and I’m taking sniffing my leg, itching himself, and falling asleep as happy signs. Remember when I mentioned that ice cream? Well let’s just say I didn’t ask my parents to come down to Providence and bring a cooler for nothing.

I came across Laloo’s on my goat’s milk kick(which I’m totally still on). It’s an ice cream made of goat’s milk that comes in fun and interesting flavors. It’s carried at a few stores such as Whole Foods and a pint costs around 7 dollars. I was immediately drawn to Strawberry Darling–juicy strawberries in cream married to a graceful swirl of balsamico. Um, yum? This totally lived up to its description and more. The sweet strawberry flavor with the natural tang of goat’s milk was wonderous enough, but the balsamic swirl really set it over the edge. It added a savoriness that half made me want to stop eating it and half shove the whole thing in my mouth. Yes, it’s expensive and I probably wouldn’t buy it for more of the plain flavors; but I think for some of the more extremes it’s a must go-to.

Afterwards we went out for a bit more errands. My mom made it expressly clear that if I planned on staying we needed yogurt and bread. Yogurt, I understand, but why does no one buy bread once I leave? They clearly can’t function without me. First we stopped by a small store where I couldn’t help picking up these:

I love these little cookies. They’re soft and delicious and taste like they’re from the oven of a happy, healthy home–better yet, not mine. We also worked our way down to Trader Joe’s where I was jumping up and down the aisle at the sight of these:

They’re baaaaack. Trader Joe’s Pumpkin Butter has hit the shelves again. I got 2 jars and I’m already regretting not getting more; I’ve had other pumpkin butters that taste like baby food but this is the real spiced-up deal. I can’t wait to bring one back to my dorm. When I got home I knew just what I wanted for a snack.

Properly cooked lentils. What can I say? I’m a man of healthy tastes. Having lentils so much at the Ratty that were cooked only OK made me really want to bust out the pans and start simmering. I made a batch and added snobby joe sauce. Believe it or not, this was only OK. I had to use Market Basket steak sauce instead of 365 since I stole that for my dorm room; I never realized just how much of the flavor it brought.

For dinner we tried something a little different and sort of special?

We ordered take-out pizza from this place. I love Tomasso even though I’ve only been there once. It was such a great experience that took me back to Italy. I’m tantalized every time I get a facebook update about their specials for the night. That being said, getting their take out just did not make the night feel special at all. It tasted blander than when we ate it fresh out of the oven; I would have rather a good homemade dinner even if it was just something bland like chicken. To make things worth, no one said a word during dinner. Not a word. There were a few little nuisances earlier in the evening that caused a little awkward anger–not the way anyone wants to spend their time “home”. Oh well, I happily left the table and moved to the fridge to get a little more Laloo’s.

I picked out the Carrot Ginger Bran Muffins from Trader Joe’s. These totally have that healthy-muffin taste which is what I love about them. A muffin SHOULD be healthy. Otherwise it’s a cupcake–nuff’ said. My big box o’ PB was back at my dorm, but luckily I left a little White Chocolate Wonderful back home for just such an occasion. Yum. I was thinking about trying out Skippy Natural which was a new find in my pantry(can I just say how proud I am of my parents for actually learning something about nutrition from me). But I thought “If I’m going to have a peanut butter with sugar in it, I might as well have a flavored peanut butter”. Speaking of peanut butter, I gave this a try while catching up on television shows via Tivo and the internet:

How was it? You’ll have to wait and see until I try both varieties and write a full review. But I think it’s clear from the picture that, when Crazy Richard’s says chunky, they mean ChUnKy. This was more like smooth peanut butter + whole peanuts than coursely ground peanuts. Can I reiterate what a blessing tivo and internet television sites are? I’m still having trouble tracking down a lot of my Food Network shows(oh, Unwrapped, where art thou?), but otherwise I’m almost caught up.

This morning I hoped to do 8.5 miles on my own turf. I realized I just wasn’t feeling it towards the end and took a turn that landed me at 7.5 miles. But I did do this at sub 8:00 pace and finished a little under 59 minutes, which I loved; it’s so hard to go fast on those Providence hills but it really helped on the flats here. When I got back I showered, had a bit of an identity crisis, and made breakfast… we’ll get back to the middle part after breakfast.

Peanut Butter Muffin Tops With Honey Almond Butter And Strawberry Jam, Cherries With Chocolate Yogurt And Chocolate Chips

The yogurt and cherries is my excuse for getting potassium. There’s potassium in there, it’s just under the chocolatey goodness. The peanut butter muffin tops are from the batch I froze and taste just as delicious, although I prefer them as “pancakes”. They’re light and airy and the peanut flour really pumps the protein. Both the spreads were new; I really loved the strawberry spread. It tasted like the smuckers that you would slather on toast at Denny’s except it’s organic and the first ingredient is strawberries, just as it should be. The honey almond butter was a bit of a disappointment. It was like almond butter-light, meaning the flavor was really neutral and almost unrecognizable. I added some salt which always perks up almonds, but I probably won’t buy this again.

Like I said, I had a bit of a moment, and I’d love to hear any thoughts you guys have on this. The weekend home really wasn’t what I thought it’d be; it didn’t feel at all special really since we just grocery shopped and watched the rain outside, and at times it didn’t even feel like “home” since half of my stuff is back at my dorm. That being said, my dorm doesn’t feel like a “home” either. I mean, how could it when I have half a room to call my own and pretty much rely on the college for everything else including food, cable, and entertainment, as hit-or-miss as those all may be. A lot of you have probably gone though this experience and felt the same way at one point or another, so I’d really appreciate any advice/stories on how you dealt with the transition.
