I think I’ve been pushing the envelope in my latest insanity.

On Sunday, I made up this raw ice cream, which was absolutely delicious.

But last night, in the fury of studying, things got a little… wacky?

I had a really bad craving for vanilla ice cream. Not coconut milk. Not anything other than dairy. Of course, this was the 1 thing we didn’t have. To appease that craving, in the ice cream maker I threw

  • 3 cups raw whole milk
  • 1/4 cup vanilla infused sugar
  • 1/4 raw honey
  • 1/2 teaspoon guar gum

Considering I didn’t have half the ingredients for real ice cream and made this with no patience, it was actually pretty good. It tasted nice and sweet and hit the exact spot I needed it to. It might not have been thick and creamy, but actually it came out much like a Wendy’s frosty. Yum!

For breakfast(eaten in the car), I just cooked oatmeal and topped it with Naturally Nutty‘s chocolate cherry peanut butter and had a plain Oikos with cherry butter and Whole Foods’ trail mix. I love getting the plan yogurts because they’re so versatile! Except I had to sweeten the cherry butter because it’s a bit tart on its own. All together it was delicious.

During the test, which took 2+ hours, I sipped on a gingerade kombucha. Let’s just say I am very glad to be done with that one. It was just an awful scenario. Part of the test was answering essay questions, and the questions we had to write on were chosen by the roll of the dice. And it was not lucky snake eyes. Whatever. It’s done and I’m free!

For dinner, I bought something else but ended up craving a burger and fries. This would have gone great with my raw milk frosty. Anywho, these were some of the best fries ever. And all they were were potato coated in EVOO and baked for about an hour! But seriously amazing. I timed this well, too, because as I was grilling the showers came in.

Summer rain: love or hate? I would hate to have to run in them. But in general, summer showers, a little lightening, and a Little People, Big World marathon would make for the perfect night.

What Would You Do?

My newest Friday night television obsession is the ABC show What Would You Do? The whole show is based on what used to be a 20/20 segment where they put real people in morally compromising situations with hidden cameras to tap their reaction. Since I’ve been watching 20/20 and this segment for 5-6 years, I was excited for this(You can go ahead and do the math; you’ll just find out I turned into a grandpa at a really young age). As much as I wanted to recommend this show, I didn’t have much to say about it. That was until I had a What Would You Do? moment in my own life.

At the gym, someone clearly left their Debit card and hadn’t noticed since they weren’t around the entire while I was there. I’ve seen lost personal property at the gym before and left it, but since this clearly had the person’s name on it I decided to take it and find them. When I tried to find a school email, they weren’t in the system; at this point, I thought I’d made a huge mistake and wanted to go throw it back on the gym floor and forget about it. Instead, I used one of my most prominent skills: Facebook stalking. I was able to track them down and message the person, who actually cancelled the card right away and said thank you but that I could tear it up. What would you have done in my situation? In their’s? I think we both did the best thing; I definitely would have been hesitant to take anything from the gym if I didn’t think finding the owner would be reasonably easy, so if it were a real gym I’d probably have turned it in to the front desk and went on my way(there’s no staff there; it’s just a single room of machines).

I ran 12 miles on the treadmill. In hindsight, I have to question how sane it is to run on an electric machine when there’s a huge thunderstorm outside. For lunch, I threw together a little Spanish fiesta with foods from the dining hall. I topped black beans with Daiya, which is still pure magic in case you’d thought I’d forgotten. I cooked! OK, it wasn’t anything more than maple baked tofu with roasted broccoli and sweet potatoes. But it felt soooo good to get back in the kitchen and turn on the oven after more meals than I can count from the dining hall or Whole Foods or made of oatmeal. Don’t get me wrong–I love a good meal made for me here and there. But there’s nothing more grounding than making something yourself.

Do you feel like you need to cook or bake from time to time? Clearly, I do. Do you think it’s “hard to get fat” on a vegan diet like Sid the Sloth says? That’s how I used to think–that vegans were sticks who ate grass–, but after learning more and reading so many wonderful vegan blogs I know they can cook with the best of them and it’s still everything in moderation that’s key. I’ll point out everything here today besides the butter toffee peanut butter and Cherry Fage was vegan. And what would you do?

Can I Petition A Petition?

Happy Saturday! I for one am more than happy to be closer to Summer and living at home with a full kitchen and refrigerator. Have you all seen this petition yet? Basically, it’s a petition for Obama and his family to become vegans for their influence. Uhhh, what?! I fully support those who are vegans, or vegetarians. But how on earth could anyone want to dictate how another person eats? Especially when some of those are just little girls?

If I posted this when I first heard about it, I’d have some not-so-choice words, but I think by now my minds mulled it over to speak better of it. If anything, we should be preaching tolerance–tolerance of those who have a different way of thinking or path in life. This petition shows no more tolerance than the intolerance you could find against vegetarianism in a Southern cattle farm community. More importantly, you can eat ethically and aware without being a vegan, which is part of what Michelle Obama has already done through her time in the White House. What do you think of this petition? Besides that it’s going nowhere, I think it’s a little rude. And–as always–I’m on a mission to show you can eat well and ethically without devoting yourself to any label.

Motivated by Kath, I’ve been getting in to canned salmon for extra omega-3’s without much fuss. I mixed mine with maple syrup and walnut oil for something packed with even more essential fats and tasty! Over the top was Tierra Farm‘s dried fruit and baby carrots, with salad dressed in Foods Alive hemp oil dressing.

On my way back from my grocery trip, I picked up a trilogy kombucha at a cafe because I felt a little down about the whole trip :-/ A lot of it was on the store’s sale, which was good. Isn’t it dreamy? My whole point in going was to get some whipped cream to make a sundae. They didn’t even have regular–just non-fat sugar-free or Rice Whip, which is dairy and soy-free. The latter seemed less processed, so I went with that and made a sundae with So Delicious chocolate coconut milk ice cream. The fudge sauce was simply cocoa powder and agave nectar mixed together. Voila! OK–the Rice Whip tasted REALLY fake; if you’ve ever had rice milk, just imagine that in an airier form. Besides that, this Friday sundae was delicious and a perfect before-dinner treat 🙂

If Obama wants to eat his beef and have his vegan cheese, too, I fully support that! I made a 1/3 a pounder hamburger but undercooked it far too much 😦 I really wanted to try the daiya so instead of eating it straight from the bag I made some sort of vegan cheese fries–YUM. This was better than mozarella cheese; it was crack. I’d be lying if I said I’m not planning on having it again today(maybe twice).

I love Fage, especially their cherry flavor. Unfortunately, it’s about expensive as they come around here. At least it’s on sale at Whole Foods this week. The cherry here tastes just like the cherry dips at Dairy Queen! Yum! Next time I’m trying full fat. The peanut butter–again, since I’ve figured out how to make cookie dough nut butter, I’m less enthused about paying someone to do it for me. Besides, this one seems really fake since half of it melts over oats and the other half is still solid :-/ Until it’s gone, though, I’ll live it up and enjoy it.

What are your thoughts on mint? I made my gluten free chocolate brownies with a lot of mint extract once and was told it was like mouthwash; hell, I thought they were great! The more mint, the better in my opinion. Even though it’s often paired with chocolate, I wouldn’t mind a dessert exclusively with mint as the flavor. I feel like I’m part of that Reddi Wip commercial asking “Oil or cream?” Uhh, you know what, keep both.

But what I would like to know is what’s in the oil that we constantly stir(or not) back into or nut butters? Last night, my Naturally Nutty vanilla almond butter was a bit more than thick; it was more like almond meal than butter. I had a thought: Why not take the oil off of plain almond butter and rehydrate this one? That’s what I did, and it worked beautifully. Afterwards, I decided to look a little more into almond oil.

Apparently, it’s not so obscure an ingredient. You can buy pure almond oil from plenty of sources, and among its uses other than cooking is body care. It’s high in monosaturated fats and is good to keep around because the low number of essential fatty acids in it(the omega-3’s that we otherwise want a lot of via fish, flax, hemp, or other fats) means it won’t go rancid quickly, even at room temperature. Did you learn something about almond oil? I sure did!

For sort of a “dormroom sundae”, I had the last piece of Bob’s Red Mill cake with the last scoop of So Delicious mint chocolate ice cream. I love finishing  things! It gives you an excuse to get more new stuff, right? 😉 This was so delicious(pun not intended), but it made me realize that, for all the coconut milk ice cream I’ve had, I don’t think I’ve had “coconut ice cream”. Weird, huh? I’ll have to look for that one next.

I love learning about my readers. For instance, from this post I learned you’re all hardcore when it comes to waking up and getting to the gym! I love it. And today I figured I could be “hardcore” to. I got up at 6:15(which clearly would be sleeping in for a lot of you), grabbed a banana and some water, and hit the streets.

The weather in the early morning couldn’t be more perfect for running this time of year: slightly cool with a breeze. And it was so much more busy than I would have guessed it to be! Apparently, there are more morning runners in this city than I know. A convoluted path and a stop at Whole Foods later, I went 11.55 miles and whipped up a breakfast for class.

Again, I did the oil trick: A little pure peanut oil in the the butter toffee flavor and it was the right consistency once more. Peanut oil is much more commercially available than almond oil for cooking and frying, but it has a lot of the same properties. The major difference I found was that peanut oil is often more fragrant and nutty than almond, at least when it’s unrefined. The yogurt tasted especially good this morning, and I don’t know why; I guess candy on yogurt can’t be bad 🙂

How do you like your peanut butter? Runny? Thick? I definitely hate mine to be runny; I want something thick and wet, like an actual butter and with a sort of fibrous mouth-feel to it.

Last night I predictably wanted a greek yogurt chocolate mess for dessert. Unpredictable was the white chocolate; it’s so much easier to find good dark chocolate than white, but the Easter bunny picked out this Green & Black’s organic white chocolate to give a shot. He I enjoyed it a lot, though it’s not quite as good as Divine‘s; the key to amazing white or milk chocolate is not milk powder but butterfat as the source of dairy. Unfortunately, all the Whole Foods in the area seemed to not carry Divine‘s anymore 😦

Unfortunately, this was the last of my pack 😦 I’m seriously considering ordering a case of the peanut butter or carob chip–they’re that good; I just need to prioritize and fix things like, say, my computer.

If you had told me I would want to wake up at 6:15 and run 10 miles, I would have thought you were nuts. But I did! Last night, I decided I completely missed the morning rest, The Today Show–the entire package. These 10 miles seemed to fly by. I found it funny that, in my time on the treadmill, the forecast went from “chance of late afternoon showers” to no showers. Guess what the weather was doing when I got out of class at 10:30… I’m finding a new weatherwoman.

Dare I say, it doesn’t get better than the combination of Justin’s chocolate almond butter and fresh coconut milk. Simply words can not describe it. And I always worry about protein on Fridays during Lent; usually I can not give this a second thought and go with cravings, but on a day when I have to ignore any meat cravings it makes me focus a bit more. Since So Delicious coconut milk yogurt is creamy and dreamy, but not protein-rich, I added 2 tablespoons of Navitas Naturals‘ twister power powder, which is a 6g protein and antioxidant boost from hemp, maca, and cacao. If nothing else, this tasted good. It was just the right amount of chocolate sweetness with a clear hemp flavor and a bit of maltiness. A new favorite thing? We’ll have to see…

If nothing else, they’ve helped me get through this midterm week, which I’m happy to report will be all done once I get my butt to the Classics department to turn in a hard copy of my paper 😀 Stress can be our biggest enemy or out biggest motivator; we just need to learn how to control it. Who else watched the Biggest Loser last night? I loved that the contestants got to see their families and had so much support. And I totally thought Jillian was going to bust out of that big box and whip them in to shape. Anyone else? While I was watching that, I was writing an essay on my midterm about the gripping effect sugar had on England between 1600 and 1800 and how that pushed slavery. Yikes! Scary stuff. So I made a resolution to eat without added sugars for a bit.

And then, whoops! Fell off that train 🙂 I had a hankering for a lemon ginger macaroon by Emmy’s Organics. I think choosing raw desserts sweetened with agave nectar is a pretty good compromise for sugary goodness 😉 The hint of spice here from lemon and ginger is so nice! It was a perfect treat for sending in my take-home midterm.

And then–ipso facto–sugar never counts when it’s on top of oatmeal 😀 I had pumpkin oats with some butter toffee peanut butter from Naturally Nutty and my own homemade french toast almonds to seal the night off. This made me thing homemade nuts would be a great thing to make for Easter lunch. The only thing is I’m not sure if/which flavors would work. Suggestions?

I listened to not 1 but 2 of my mental health tips. First of all, after I sent that paper at 9:15 it was me-time all the way. I spent it with television and mindless games. It’d be more fun if me-time were, say, during the day, but I’m glad I snuck it in at the end. I also didn’t set my alarm this morning, got 8 and a half hours of sleep, and decided to postpone any run. Even if I end up running to the bickering of Kathy Lee and Hoda, the sleep was worth it.

Breakfast in bed had to be a little bit more “desserty” than usual, right? In the bowl jar was my standard 40g oat blend, what was left of the white chocolate cherry almond butter from Naturally Nutty, and some all-natural fluff. I was worried because the fluff stuff was rock hard at room temp(it’s an old container), but it seemed to melt well over everything and add a smooth vanilla tone.

Last night’s Mental Health Week tip was all about decluttering your workspace; now I want to talk about how to work! While we could try to juggle everything in our mind, why? All that remembering and forgetting easily adds stress. The first step is to put it down in writing. I use Google Tasks because it goes wherever I go, and I can have different lists. Above was my homework list circa 11am yesterday morning, but I also have them for everything from blog stuff, to television shows I need to watch online, to my grocery list, etc. And my favorite mental booster is to cross off–not erase–tasks gone by; seeing things with a strike through them will remind you of what you’ve done and make you feel more accomplished. Do you keep a list? If so, where is it?

I love mint. There is copious amounts of it in this post, and it disappoints me that it’s so hard to find as a flavor. Should I invest in a mint herb? I’d probably eat all the leaves right off… I kicked off things by having some mint chip so delicious coconut milk ice cream. I love that you can’t taste the coconut in this flavor! Nothing should get in the way of me and my mint 😉

But the chocolate in that wasn’t satisfying enough; I need a lot of chocolate to be satisfied, in case you hadn’t noticed. So I had a little bit of Endangered Species deep forest mint right afterwards just to hit that sweet tooth. I’m not crazy about this bar; that’s probably why I’m still working on it after 7 or so months.

I wasn’t sure if I even could work mint in to my oatmeal, or–if I could–how would it taste? It turned out fantastically. I took 1/2 of my favorite raw macaroon from Emmy’s organics and sprinkled that over plain oatmeal with pepita sun butter. The flavors of vanilla and mint were amazing here. It definitely tasted like dessert oatmeal 🙂 And then I hit the hay early to try and get some good rest.

Nothing was pretty about this morning’s run; it was one of those times you can only be thankfully for what you could control and let the rest go from your mind. I’d rather just gloss over it while I (don’t) have the time and say I pushed through 9 miles and then quickly showered and made breakfast.

It was mostly the typical, portable goodies. I added pumpkin and an egg white to my oatmeal to make it a little french-toasty and topped it with Justin’s maple almond butter and Naturally Nutty’s organic cinnamon vanilla almond butter. Can you even process how amazing that flavor combination was? Like french toast, I tell ya. And then there was So Delicious plain soy yogurt(unsweetened) with milk chocolate coated peanuts. Is it bad I would consider those a “healthy fat”? I like to not question and just crush(and then eat!).

Stress Sleep

First up, I’m not saying sleep like you’re stressed. I’m telling you to put a stress on sleep. That’s the best thing you can do for your mental health at a time when you might otherwise be distracted. We’ve all been there: Too much to do and the first thing you’re willing to sacrifice is sleep. But that’s not the answer. In fact, in times when we just need clarity, sleep can be the most beneficial thing for us and boost brain power and concentration in our waking hours. It also helps to “normalize” hunger cues. Despite a 6:15 wake-up call, I prioritized and managed 7 and 1/2 hours of sleep last night to be a sharp thinker for my tests. Between 7 and 8 hours is the recommended amount, but this varies slightly between person to person. How’s your sleeping?

Hung[ry] over

No, this hasn’t turned in to a blog reviewing organic ales. Give it a few more years, the right sponsorship, and we’ll see where it goes 😉 But as for last night, it took forever to fall asleep(lets blame the people who probably are hungover), which drove my hunger up a wall and this morning I’m feeling a little hungry over. Why does the keyboard type so loud?

Vivani Organic 72% Dark Chocolate

Because all good nights should start and end with chocolate, I broke out a bar to satisfy my sweet tooth. I’ve ran out of my favoritedark chocolate but luckily remembered I still had some Vivani 72% Organic Dark Chocolate and broke off 8 squares. I love that this has 3 ingredients(cocoa powder, cocoa butter, and sugar), all of which I have. How’s that for simple eating?

Once that was gone, I snacked on an apple. When you can’t remember when you got the apple, it’s not a good sign for the freshness :-/ I swear this was turning to cider on the inside already. Come to think of it, maybe that’s why I’d be hung[ry] over today…

After that oatmeal, I tried to go to bed. How’d it work out? Not so well. Oh well, at least I’d get to see Betty White on SNL, right? That wasn’t last night, either. Shucks. I hoped that some Tazo Rest tea would lull me to sleep, which was followed up with a vanilla chobani topped with cherry butter and 4 squares Green & Black’s cherry dark chocolate. Despite that this was mostly sugar, it must have worked because I don’t remember being up much longer; Sigourny Weaver on SNL was just not cutting the entertainment for me.

The plan for this morning was either run on the treadmill 10-11 miles while watching a Scooby Doo movie(hey, it was what’s on) or stay in for breakfast and run later. The sun and my stomach led me to the latter. I think the fact that I’m having “bedtime tea” at 9:30 says my mood.

Since I plan to run withing the hour, I opted for So Delicious soy yogurt sweetened with vanilla stevia instead of greek because it’s easier to digest. And I topped that with Bob’s Red Mill hulled hemp–gotta love the hemp. My oatmeal turned out more like a salty, watery pancake because I ran out of oatbran 😦 That, too, will get fixed today. And I hardly noticed after deluging it in Naturally Nutty’s Pepita Sun Butter with some of Navitas Naturals’ Mulberries to sprinkle on top. Come to think of it, the pepita sun butter has hemp in it, too; I guess it is a hempy morning, afterall 😀

I have 11 outdoor miles on the agenda for today. I’m a little worried how this will feel after yesterday’s 9.5 felt “long” but I have some great motivation waiting for me at the end to look forward to 😉 And I’ll be packing jolly beans for fuel; can’t run around Easter time without your jolly beans! All Kinds Of Blocks

Write now I think I’m suffering from writer’s, runner’s, reader’s, and any other “er’s” block you could be, because I have no motivation or clue where to begin! Of course, you could also call this “Spring Break mode”. Well, somebody’s going to have to remind my body that that’s a good week away. 3 tests, 2 papers, 4 homework assignments, and 2 scheduled lunches away, but who’s counting?

Ice cream on a Thursday night–that felt classy 😉 I suppose it’s better to eat up what I have here while I can before Spring break. 1/2 of this was So Delicious chocolate coconut milk and 1/2 Laloo’s fig. The combination of chocolate and fig is always so surprisingly delicious; I never would have thought the two to work together but they so do! With all these cow’s milk alternatives, you’d think I’m lactose-intolerant or have something against bovines. Nope! Haha. I just think all the best flavors are in “alternative” brands, or you get a richer, velvetier texture with better nutrition. When the cow’s milk flavors start being stepped up, I’ll revert.

The way I eat pumpkin oatmeal, you’d think I own a pumpkin patch. Again, nope! I was just never affected by this “pumpkin shortage” I’ve heard about and always been able to find it somewhere. I like replacing 10g of grains with 1/2 cup pumpkin because it sneaks in a serving of fruit(which I would not be getting otherwise :-/). I topped this with the last scoop of Justin’s chocolate peanut butter and Naturally Nutty‘s Butter Toffee while watching The Marriage Ref. The fact that I fell asleep during that show shows about how funny I think it is. BUT the Indian couple were from my hometown! I tried recognizing the house because I’m sure I’ve ran near it at one point or another but I couldn’t do it.

Like I mentioned, I had “runner’s block” this morning. I was incredibely indecisive about whether or not to sleep in; when I fell asleep that pretty much made up my mind for me, but then I had an unpleasant dream about pizza being made from dogs 😦 I think that at least made the crust gluten-free? Bad joke, bad joke. I slept in 40 minutes, played games and browsed blogs, and decided that almond butter isn’t in my life enough.

Again, where’s my pumpkin patch? Cooking an egg in the oatmeal makes it taste so much more like a pumpkin pie to me–light and airy. And Justin’s maple almond butter was a must here along with some real maple butter; did you know it’s maple season coming up now? I’m sure they’ll be more maple products to come. And then there was the oh-so-delicious-but-again-not-cow’s-milk-yogurt with some milk chocolate peanuts. I have 6 of those left(the peanuts, not the yogurts) 😦 I definitely need to see a grocery store soon.

It’s true what they say: You only regret the steps you didn’t take. I’m thinking that taking the morning off was a blessing in disguise, and that running in this gorgeous weather might re-excite me for something or at least unblock my mind. I probably won’t get to a Whole Foods as planned today 😦 I can go a day without sweet potatoes, right? Maybe…
