Yesterday, at home, I was feeling ambitious: I’m going to make fudge. But what is fudge by its definition? As wikipedia told me, it’s fundamentally sugar, milk, and butter. No chocolate?! Well, not at it’s core. Those are the 3 ingredients that “make fudge”. Penuche is made with brown sugar. And chocolate fudge is made with the addition of cocoa powder. But what if you don’t want milk, or cream, or butter? And what if you’re a lazy bastard without a candy thermometer and only have the microwave at your disposal? Well, that’s when you need Microwave Vegan Chocolate Fudge

Microwave Vegan Chocolate Fudge

Ingredients:

  • 1 cup vegan chocolate chips(e.g. Trader Joe’s) OR 8.5oz sweetened dark chocolate
  • 4oz natural vegan butter substitute(e.g. Earth Balance)
  • 1/2 cup powdered sugar
  • 1/4 cup non-dairy milk

In the microwave or over a double-broiler, melt together the chocolate chips and butter substitute. Take care not to burn the chocolate. Once fully incorporated, sift in the powdered sugar and pour in the non-dairy milk. Stir until fully incorporated. Pour into a small, square pan about 6 inches by 6 inches. Drop on the counter a few time to remove any air pockets and refrigerate for at least 2 hours before serving.

I’m sorry; this was just too easy. I’m a little scared for every part of my body affected by sugar that this delicious dessert can be made so quickly and simply. I used unsweetened vanilla almond milk as the liquid, and the flavor could not have came out cleaner. Maybe vegan penuche will be next? The possibilities are endless! Now go make a pan and have another slice because it’s cholesterol free and no animals were affected in the process of your sinful, sinful treat.

I also indulged in 6 squares my favorite chocolate bar smothered in vanilla agave sweetened 365 peanut butter. Uhhh, does anyone remember when I mentioned opening this jar? Because it’s half gone. I don’t think I’ve gone through a jar of nut butter this fast before, and it’s a store brand! I think that speaks to the magic of 365.

And when I woke up, this wrapper of a Nature’s Path Peanut Choco’ Chewy Granola bar looked pretty guilty(i.e. I ate it during Brothers & Sisters). I expected to be sore and tired after yesterday. I certainly was tired and enjoyed the sleep. But when I woke up at 7:40, I really just felt like running–no timing, no pressure. Just running.

I went for an easy and slow 8 miles in the gym. Despite the heat and the humidity, the entire thing was made 10 times more pleasant with The Today Show and Betty White. Will you be watching her on SNL? I definitely will be! By which I mean I’ll be watching it on the internet the next day, but still, enthusiastically.

I have a problem: Once I get on a flavor or flavor pairing, I can not stop obsessing about it until the next craving. Hence the abundance of chocolate and peanuts in this post. At least those are foods that’ll fuel you well. A vegan chocolate peanut butter fudge batch next? Oh, somebody turn my brain off.

That’s such a sweet and at the same time heartbreaking story; I still have secret hopes she’ll reconcile with Jesse James.

I think the dark chocolate must have worked, because I pushed through 11.5 miles on the tready at a 7.0 pace, which is faster than I was doing before. While I know it’s the running outside that’s boosting my speed, I’d like to think it’s dark chocolate. I can hope, right?

Madhava recently sent me a box of their agave nectars which I was super excited to try and review. Agave, as you probably know, is an unrefined, vegan sweetener noticeably sweeter than sugar. There’s plenty of scandal around its actual properties I could get into but won’t now. The bottom line for me is that it is just a form of sugar in the end, but one of the ones I’d rather eat than refined white sugar. And when they’re doctored up with flavors like this vanilla, what’s not to love?

I sweetened plain yogurt with the vanilla agave, and made my own peanut butter with 365 brand smooth and a squirt of vanilla agave. If you like a soft, mellow vanilla tone to flavors, this is perfect for you. It wasn’t as intense as a vanilla bean, but definitely added intrinsic flavor. The peanut butter I’ll tell you tasted just like what you get in a Reese’s cup; the Scharffen Berger milk chocolate and sea salt on top totally enhanced the experience. Let’s compare:

What was/is your favorite candy? Growing up, I was always a Reese’s and milk chocolate peanut butter supporter. My all-time favorite had to be the Reese’s Fast Break. A bag of the “minis” would not last long around me. My lifestyle transition to an all-natural diet has been made simpler by Newman’s Own Organics’ milk chocolate peanut butter cups and Sunspire’s milk chocolate coated peanuts. But I still have secret hopes that someday someone will make an all-natural Fast Break, and a few recipes I have yet to try to mimic this.

If this wasn’t about to fill me up, I was going to retire, pack my food bloggin’ bags, and move to Boca Riton. This morning I slept in embarrassingly late :-/ The part that bugged me was just not knowing when to run anymore. I decided to eat breakfast first, run later. In the meanwhile, I made raw cashew butter, since I loved Love Raw Foods‘ so much. It was actually one of the easier nut butters I’ve made! I just turned on the food processor for 10 minutes and voila. And what could be better for breakfast than freshly nonroasted nuts?

In some plain yogurt I added 365 brand agave and Navitas Naturals‘ Lucuma Powder which made such a nice, malty sweetness, and on top were a few white chocolate chips. In the oatmeal was Homemade Chocolate Chip Cookie Dough Cashew Butter. Yes, you read that right.

Chocolate Chip Cookie Dough Cashew Butter:

  • 1 scoop cashew butter
  • A few, scant drops vanilla extract
  • Chocolate Chips
  • 1/2 teaspoon agave

Oh. My. God. If you like cookie dough at all, you must try this. The vanilla entirely makes this dish, but you have to watch out not to overdo it. It’s even better microwaved a little so the chocolate melts in to the cashew butter. Do it! Speaking of doing it, I just need to get out there and run before the day gets away from me. We have big plans for dinner; let’s just say the cashew butter was just a prelude 😉

Easy Running And Planned Meals

Happy humpday, all! I have to admit: Normally, I don’t give a damn about what day of the wek it is or being half way there. But today, when I walked in my room, threw down my stuff, and knew I would be in for the night, I just wanted to do a happy dance. I’m 1 midterm I haven’t studied for, 1 class I won’t pay attention in, and 1 paper I haven’t started writing away from break. When I write it out like that, things don’t sound so good. LOL. I’ll just get on to my day then…

I grabbed an apple and was good-to-go to the gym. This was perhaps one of the easiest runs I’ve had in a while; I was well rested, well fueled, and feeling overall refreshed. The only thing that made it difficult was the 4th hour of the Today Show with Hoda and Kathy Lee and then local news, but I survived 😉 Through segments about women’s products like “the butt bra”, I don’t know how I made it…

For lunch I couldn’t decide wether to go protein-heavy or carb-heavy because of the workout. I decided on protein mainly because this salmon has been sitting around for 2 days and needed to get eaten :-/ It was tasty, though! It’s always better when you let someone else(thank you, Whole Foods) cook for you. On the side I had broccoli with my favorite dressing by Foods Alive and an organic garlic parsley cheddar cheese stick from Next Generation Dairy.

Would it be weird to say my “me” time came in History discussion? We had nothing to do this week, since the midterm was yesterday, so we watched 50 minutes of a PBS special. If 50 minutes listening to bad British documentaries while making fun of it with a friend and drifting off isn’t “me” time, I don’t know what is. After that I had another class(Object History), which just made the day feel so much longer. Midway through I broke out a snack.

Once I got this in mind, I had to hop to a campus store to grab a Vanilla Chobani; the combination was just too dreamy. The bar is milk chocolate with caramelized peanuts and sea salt. The sea salt wasn’t really present enough for me, but then again there isn’t enough sea salt in the sea to please me! But this tasted a lot better overall than I would have thought for a protein-packed snack.

And now with dinner plated, I feel a whole other happy dance coming on. Can I get into my PJ’s before this burger is even gobbled up? For the first time in a while, it was cooked to perfection: rare. On the side, I had some Snikiddy baked cheddar cheese fries to sneak my snack fix, and some plain broccoli for a “real” vegetable. What? Ketchup doesn’t count as a vegetable? 😉

Meal Planning

This is the happy union of being a foodie and doing things for your mental health: meal planning. I know it’s something a lot of other bloggers are passionate about. The 1 week we did it for my family back in January, I remember meals being the last thing on my mind all week, which was such a comfort. Now that I have such a small refrigerator to work with and so less options, I don’t keep up the practice. But I do keep meals in mind, and usually am able to plan at the very least 3-4 hours ahead. When things are really crunched, I know to turn to prepared foods like the salmon I had for lunch. Likewise, the dinner I planned this morning taking in mind the fact that I had class until 5:20 and like to eat at 6:30. Do you meal plan? What’s the last meal you planned and prepared?

Keeps Gettin’ Better

Thank you all for your comments this morning! Getting that news was such a great way to start my day and started a momentum of feeling like things keep getting better. It also never hurts to be recognized for hard work, especially when it’s you’re concentration(and one that’s not known for being a money0maker. Hey, I’m realistic ;-)) Now–here’s my pledge that Whole Foods will NOT get most of that. Considering I estimate my shoes have an 2000+ miles on them(I’m not even exaggerating here), I definitely have some good plans.

When I got back from Greek, I grabbed Nature’s Path Organic Pumpkin-N-Spice bar and switched in to workout clothes lickity-split. Even though it’s not the most opportune time to work out between classes, I felt 20 times better then than when I woke up, and this just felt “right” so I was determined to make it work.

Do you know how hard it is to make it work when you only have Kathie Lee and Hoda to watch on The Today show? They are no Meredith and Matt–I’m just saying. Besides that, I was fast! This isn’t the pace I can do outside, but 87:09 was quicker than my normal treadmill pace. Part of that was GI, part of that was just not having time to play around with, but all of that felt nice 🙂 I showered and thought up a lunch really quickly.

I’ll throw out a disclaimer and say you can set any dietary restrictions you want on yourself and get adequate nutrient levels. That being said, after going 26 hours of eating vegan when my idea of vegan “food” involves chocolate and pudding, I truly felt like I was lacking protein. I was having a HUGE white meat chicken craving, and even contemplated getting the non-local, probably hormone induced chicken from the dining hall for a split second. In the end, I scrapped up a few Al Fresco breakfast style sausages and tossed those with broccoli along side a tofu salad made with The Heat Is On by PB&Co.. It wasn’t the “best meal everrrr” like all bloggers want to share, but it was “good enough” and got me to class 2 minutes early.

Class was brutal. Maybe it was the fact that we kept having to turn off the lights for slides. Or maybe it was just an exhausting day(my friend Alex next to me actually fell asleep during some slides). Either way, between that and a “meh” lunch, dessert was definitely in order. Between classes I grabbed a Gingerade Kombucha from a local coffee shop and cut in half a Carob Chip Perfect Foods Bar I stuck in my pocket. Pardon the pun, but this really was a “perfect” dessert/snack for getting through my afternoon; the bar tastes a lot like a cookie, anyway, and who would want milk over Kombucha? 😉

It was another “long day” with extracurriculars even after all the regular class. When I finished those, though, I was on my weekend! Things just keep gettin’ better 🙂 Of course, I needed to celebrate all the hubbub somehow, right? This dessert–once again, pardon the pun–was also quite “perfect”. Since I can’t stand having 1/2 a bar around, I chopped up the other part of my Carob Chip Perfect Foods Bar and blended that with So Delicious coconut milk chocolate ice cream. Besides the subtle coconut flavor, this was awesome! It reminded me of all that peanut butter and chocolate ice cream I had as a kid. The fact that I was “catching up” with my protein intake was just ice creaming on the cake.

Grass-Fed 1/4 Pounder With Sweet Potato Hash

Then again, maybe protein’s not a problem with burgers on the menu for dinner. Since I had 1/2 a sweet potato already baked, I diced that and cooked it in the healthy grass-fed burger drippings in the pan–easy peasy clean up, too! Unfortunately, baked potatoes I find don’t make the best of hashes; you really need to get them when they’re raw and just steamed to start.

Preparing A Burger

It’s been asked “How do you make your burgers with just dorm room equipment?” Well, let me tell you, it’s probably one of the simplest things I or you could cook! You just need a quality steel pan and a slightly fatty cut of meat(I like 85/15 grass-fed beef, but anything up to 90/10 should do). Form your patty with a slight dip in the center because when it cooks it will puff up. After letting your pan heat up on medium-high heat, let your patty cook on the first side for 5 minutes. Then, flip the patty and let it cook another 4, or until the juice running out of it is thin and only slightly red. Then–and I can’t stress this enough–carefully move it to a plate, and let it sit untouched for 5 minutes. This helps the juices to settle and doing this will get you a nice, rare burger. If you like your meat more well done, extend the cooking on both ends by 1:30-2 minutes. Bonus: If you’re a New England reader, regular beef is on sale at Whole Foods this week for $2.99 a pound and even the grass-fed is reduced an amount! I for one will be getting at least a pound over the weekend if not more. And that’s your burger 101!

Who Plucked Out My Sweet Tooth?

If I took you all in a room, and told you I didn’t like things sweet, I’d expect a roar of laughter(or at least some backwards glances). But today it’s like I’ve crave nothing sweet(that, for me, just meaning not a lot–not literally nothing). And the only reason I can think is that–save 1/8 teaspoon in my coffee at 6:15–I haven’t had any stevia. Today was not a hot drink type of day and I used agave in my yogurt this morning. I’ve never thought it before, but maybe there’s some truth to not craving sugars without low-cal sweeteners, even natural ones like stevia.

I can never make it between breakfast and a reasonably timed lunch on Tuesday/Thursday, so I had a naturally sweet apple. It was also quite naturally mealy and just naturally not-good, but it held me over so that I could make my favorite salad to eat in class.

Hemp Oil Dressing And Mulberries

I’d never thought I’d say that: “Favorite salad”. But I’m really digging the new flavor combination I struck on 2 weeks ago. I guess these are sort of sweet ingredients, but not too much. I used a good squirt of Foods Alive Hemp Oil Sweet & Sassy dressing and a handful of Navitas Naturals mulberries, mixed in with chickpeas and diced cheese.

Everytime I eat this, I swear it gets better; it just makes me feel so fresh! The garlic parsley cheddar raw & probiotic cheese from Next Generation Dairy really makes the flavors come together. And so much of this is raw, you know it must be good for you. On the side, I accompanied the meal with a raw and probiotic drink, namely the Trilogy flavor by Synergy. I talked about this more in the end, but it was quite the tastey juice. It tasted more just like a regular gingerade kombucha to me, but I didn’t mind because that’s most of the ingredients and a flavor I love. I would’n say this was sweet, though; It’s much more vinegary. And it finally made me feel full. Where was that when my stomach was on a war path yesterday?

This afternoon, on top of my 3 hours of class I had another engagement that lasted about an hour. Therefore, a bar was a complete must. I grabbed this Nature’s Path Organic Chocolate Orange Energy Bar from my bag. Sweet? Definitely. I didn’t say my sweet tooth had wholly disappeared 😉

When I got back to my dorm, it was the oddest thing: All I wanted was dinner foods, even though dinner was a good time away and I still had preparation to do. I scrapped around for something not sweet, and this was the best I could do; it totally hit the spot, too! Go figure. I just hope this doesn’t continue for long because I do not keep that much savory stuff around.

It was that time of week again. I want to thank each and every one of you who comments on how well I eat for living in a dorm. I assure you, after a full day of classes, the last thing I want to do is form burgers, cut sweet potato fries, and cook it all, especially when I still have homework for the next day. To be honest, I just don’t feel like there’s much of a choice, though. To eat in the dining hall, I either need to compromise a lot of my food philosophy, or learn to be happy with the salad bar; I just don’t like raw vegetables that much. When you get right down to it, cooking is work(God, now I understand my mother all too much), but it’s work I’ll do.

This was worth the work, too. I do not know what was up with the beef; it was incredibly juicy but wouldn’t hold on to the juice. That’s OK because I ended up licking the plate clean(did I really just admit to that?) Happily, despite the lost prep time, I can be a fast eater and move on to my readings for tomorrow now. I’m sure today was just a fluke and that my sweet tooth will reappear soon for dessert(how could it not?).

There’s so much extra out there, I feel lie I have to mention a few before I give a product review summary. First up, there’s this article concerning fat as a new flavor. I’ve read this a couple places now, and I’m totally willing to jump aboard the flavor train if that’s the case. I think what I learned was, whichever you choose, you won’t be disappointed so long as you like Kombucha. Botanic No 9

8.5/10: A delicate blend of honeysuckle and flowers, this kombucha has an equally tame flavor. It wasn’t “blue” in a saddening way but rather very mellow. I almost missed the vinegar flavor of the kombucha which is pretty much rendered down to nothing here. This one wasn’t for me on account of its subtlety but would definitely be a mellow welcome to anyone looking for “down time” or simply new to kombucha.

Citrus

8/10: The vinegar flavor of kombucha is a lot to handle naturally. I’m afraid it just might be too much for citrus to handle, too. While I liked this as a drink, it didn’t scream citrus! or lemon! the way I was expecting; there was just some certain zest of life missing from the flavor. That being said, it was very good kombucha, and I’m glad nothing fought the natural vinegar punch but–if anything–enhanced it. And perhaps the citrus helped to boost my mood because I felt like an all star after drinking it.

Multi-Green

9/10: “Drinking your calories” often gets a bad wrap; but when you’re drinking greens, living enzymes, and a host of other nutritious things, how can anything be bad? I’ll admit that I was wary of the color for this. When I started sipping I was pleasantly surprised to find that the flavors here–vinegary kombucha and bitter greens–actually work and thrive together! And the algae and other add-ins give a welcome dose of protein. The only unpleasantry was the chalky remnants at the bottom of the bottle. Otherwise, this was a surprisingly joyful way to take in my greens!

Trilogy

8.5/10: Even when synergy dabbles with juices, they really can’t go wrong; so often, the typical juice drink is over-sugared and more of a dessert than a health drink. I like how synergy keeps the kombucha strong and the ingredients simple; in this was just kombucha, raspberry juice, citrus, and ginger. The “trilogy” of flavors work well, but perhaps a little too well; you can’t identify much more than a strong vinegar flavor with a sharp bitter tone that could come from any 1–or all–of the flavors. Still, this drink had me sipping more and feeling well,, and is one of the flavors I’d gladly grab again.

Life Unexpected

I’m just loving the little curve-balls life’s been tossing my way. Dropping over $40 last night online on some foodie goodies? Not expected, but I’ll roll with it! You might see some in due time 😉

Red Delicious Apple

I equally did not expect to be hungry after that fantastic dinner of burgers and fries but c’est la vie. I grabbed this perfect apple from the dining hall; it was the last one I had 😦 And I don’t think anyone was expecting for how bad some of those American Idols singers were; unfortunately, for the guy who sang Apologize, it’s too late to do the same.

Oatmeal With Chocolate Almond Butter

I was still starving for some reason, and so early in the night. Oatmeal to the rescue! With a little Justin‘s chocolate almond butter. I ate like 2 spoonfuls of this peanut butter the first month I had it, and now I’m ripping through it; where’d that come from? I did a lot of focusing on studying for my exam(ugh) while noshing on that. A little later came chocolate almond in a different form:

Hot yum! For this, I mixed 1 cup original almond milk unsweetened with 1 heaping tablespoon cocoa powder and some liquid vanilla stevia. Sooo good. Why don’t I crave this more? And it was surprisingly filling; I thought last night would be a hungry hungry hippo time, but after this I was just exhausted and ready for bed, so I did! Sensical and unexpected 😉

Nature's Path Organic Pumpkin-N-Spice Chewy Granola Bar

It was not unexpected by me that I’d need a snack before my run; that was not a lot of food before bed but I was just jiving with my hunger. I grabbed a Pumpkin-N-Spice bar, which I’ve decided tastes straight up like Apple Jacks, but are jacked up on Omega-3’s. If it looks like this photo was taken in the men’s room, it was(I was also putting in my contacts at the time). If it looks like I was still half asleep, I also was.

Running Part 1

Everything actually went just as expected this morning. For one, I knew no one would be in the gym when I got there; 6:40 on a rainy morning is not a popular time. I had 8 miles in mind, which is exactly what I went for. I split it up into 2 parts partly because I dropped my ipod and it went flying behind me(oops) and also because nature picked up her phone and gave me a rang.

Running Part 2

For those of you playing along at home, that would total 8 miles in 71:55, which is a good amount faster than yesterday–unexpected since I felt like I was slugging through it but well welcomed! Also well welcomed was breakfast.

I was a little nervous to have to eat breakfast in class while taking the test, but by this point I think the teacher expects that of me 😉 I swear there’s something addictive in flax oil because I crave smart balance agave sweetened like nothing else–it’s so savory! Love it. To add more omega-3’s, some Bob’s Red Mill hemp helped to mellow out the soy yogurt. I think they actually have a higher omega-6 content, but that’s not on the packaged label. Hmmm, knowledgeable opinions? The test went good enough. I know I could have prepared better but I still think I did really well, so I’ll take that as an unexpected win 🙂

Only 1 week without them and I forgot how crazy my Tuesday/Thursdays feel! I just keep telling myself “it’s almost the weekend”. It really is!

Catch Up, Run, Devour!

Things I need to do more often: Relax! But that’s not happening now, so let’s get into it.

Tips To Save

I’ve been wanting to bring this one up for a while. I get asked a lot “How do you save money on groceries?”. My answer is that there are tons of ways! You just need to tap into them!

Proteins

1. Buy off-brand and do it yourself! These are two biggies anyone can do. If you trust a store brand, it’ll often be cheaper than the name ones. I buy a lot of Trader Joe products, which are almost a dollar off their competitors at normal price. I also try to buy the raw ingredients rather than premade/seasoned, which are always more expensive. And the best thing you can do is simply cook for yourself! You’ll save a lot more if you buy proteins and cook them than if you order them out.

If you’re asking yourself “what’s he going to do with a pound of beef in a dorm room?” I’m thinking the same question :-/

Yogurts

Yes, I do acknowledge my yogurt obsession, but this brings up 2 more tips.

2. Follow your favorite brands on Twitter. It sounds weird, but by doing this I won 12 Chobani in one of their contests, and you could too! It’s a great way to connect with your favorite brands. I tweet @So_Delicious all the time, and while it hasn’t won me anything so far, it’s really fun!

3. Store sales and coupons! I’m sure we all had mothers who sat at the table clipping coupons and reading circulars until the cows came home, right? Well, turns out she had a point! If you check, you’re favorite foods(like Oikos) just might be cheaper this week. And if you pair a $1 Oikos sale with a $1 off Oikos coupon from the circulars, that’s a freebie right there!

Groceries

4. Fan Your Favorite Companies. Similar to tweeting, email and Facebook are two great ways to stay up to date with your favorite company, and they often help you right back! In this picture, I managed a free bag of Popchips because I get their e-newsletters, and 2 free Nature’s Path products because I won a fan contest on Facebook by being their friend. It does pay to be friendly!

I hope that has enlightened or at least amused you. Personally, I loooove seeing other’s groceries 🙂

Almost Empty Smart Balance Peanut Butter

While I was home yesterday, I grabbed this out of our pantry. Who takes almost empty things just to use them once and throw them away? Apparently, me!

Pumpkin Oats In A Jar With Chocolate Chips, Vanilla Greek Yogurt

I also seriously felt like I needed protein, since I had so little all day. I added an Oikos in to put my mind at ease. Does anyone else make the oats in a bowl, and then add them to the jar? I just don’t really trust microwaving that plastic for 2 minutes. Also, for good measure, there was Trader Joe’s chocolate chips involved. There always are 🙂

Last night I could not sleep for the life of me. I think the attendant at McDonalds gave me real coffee instead of decaf at 6pm, which threw me off for the night! I tried to get sleepy; I shut down everything but the TV at 10. But then 11 rolled around, and I was up. And then 11:30. Finally, I had a snack.

Nature's Path Pumpkin N' Spice Chewy Granola Bar

I’m not saying something as carby as this bar is good at 11:30 when you can’t sleep. But it did hit a certain spot, and was free because of the Nature’s Path Facebook coupon, so left me with good conscious. The flavor reminded me of anything and everything toted as “frosted” from my childhood. And I was a little disappointed that even the seeds weren’t hard anymore but rather chewy. Anyway, I don’t think I actually fell asleep until after 12:30, which definitely P.ed me O, if only because there’s so much I could have done with that amount of time, and I knew I had a long run in the morning.

10 Miles in 89:51

I’ll start with what matters: I did it! Woohoo! The first time I hit 10 miles on the treadmill I remember needing a movie to keep me going. Well, this time I had The Today Show. I tried to get their early to dominate the TV’s but most of the ‘mills were taken by 7am! Let the competition begin. I felt a little lagging half way through, but then a gym friend showed up, and we talked about the opening ceremonies and not being able to be awake for the whole thing, haha. The time was a little slower than I’d like–a 9:00min/mile pace. But hopefully I’ll get speedier once I get more used to these distances.

Better Than Roasted Pumpkin Seeds

It’s also been a rather slow(but busy!) morning; I took 60 minutes between getting of the treadmill to do everything I had to do before sitting down to a breakfast. Time gap much? I pulled out these new seeds for some optimum nutrition and worked them in to some favorite foods.

Clearly, when I get on a theme, I get on it. I had a somewhat obligatory bowl of oatmeal with pepita sun butter from Naturally Nutty. Since that has pumpkin, flax, and hemp, naturally my yogurt should follow suit, right? It was a glorious reunion with soy yogurt after a week of being out of it! It was nice and sweet, which gave good contrast for the pumpkin seeds and hulled hemp. I guess overall it was a pretty seedy breakfast 😉

Back On Track

I tried this last week and liked where it got me! But then some things took a downturn over the weekend, so here’s to me getting back on track.

1. Meal plans. In short, I need to make them. They may not be necessary, but they make life so much simpler, especially on work days, so why not? Any ideas for all that beef? I have a few, but I’d love to hear what you can come up with!

2. Planned Runs. Last week I hit my running goals spot on, and I hope the same for this week! Mon: 10. Tues: 5. Wed: 10. Thu: 7. Fri: 8. Those are the goals, at least.

3. Protein & Fat. I feel like I was doing so well at incorporating more protein and fat and then–what happened? Over the weekend was beans and chips and oatmeal–oh my! Hopefully, this one will come naturally if I stick to number 1 and number 4…

4. Eat Nutrition! I don’t mean to demonize carbs, I really don’t. But the fact is that heavy carb items–sugar, oatmeal, starchy vegetables–are also usually not as nutrient dense as light vegetables, seeds, nuts, and proteins. I was not a fan of Thrive by Brendan Brazier, but one point that stuck out to me was that he went from eating 8000 calories of starchy, white foods a day to 2000 of nutrient-rich ones and became 10 times better in what he does.

5. Work First, Internet Later. This is more of a one-day goal, specifically today! I have a HUGE to-do list before the week starts up, and anything beyond my inbox just does not need to be addressed soon I figure. So for now, it’s work work work!
