Good morning. I love that it’s a new week! For some reason, it just feels like everything’s nice and fresh and ready to start anew. Maybe I’m just happy to have the house to myself again? That’s probably it. I have a new goal! I’m new to Twitter and now I want to get 100 Twitter followers before I go back to school. I think that’s very practical so let’s do it! Follow me here. Last night there was so much dessert to choose from. My mom was first to dive in and gave glowing reviews for the peanut butter cups, which was funny because I just made those on a whim when I had leftover chocolate. Well, I figured I’d start with those.

Soy Yogurt With Homemade Peanut Butter Cup And Vanilla Sugar

Over soy yogurt, just like I like it. The irony was lost here because there was no milk in the chocolate and this was totally vegan 😦 I like irony. It’s tasty! But so were these peanut butter cups. Making these for myself is definitely a practice I should get into because it’s so much more frugal and still delicious. My mom actually set one aside to take as an afternoon snack today, haha.

Last night, against my normal Food Network nature, I wtched the Simpsons’ 20th year special. I’m afraid to admit it, but the Simpsons are older than me! And they’re still good. I find that remarkable. I really hope they never end, which is not the case for some of my other favorite shows as of late *cough*Leno*cough*. Sometime through, I had a ball.

Banana Bread Ball

Jess was pretty smart with these because they’re delicious! The thin layer of chocolate over breading is just perfect. It reminds me of a chocolate covered donut from Dunkin’ Donuts, but not as sweet and 10 times better for you. This would be a fun thing to make for a brunch; I don’t think I used enough cream cheese, thought(which is odd because I’m known for having a heavy hand with the cream cheese ;-)). I started watching Brothers & Sisters and decided to make some oats with a new product.

Oatmeal With Maple Cashew Butter And Agave Ginger Cashews

It’s so hard to find crunchy nut butters that aren’t peanut butter, so instead I just used a cashew butter and these new Tierra Farm’s agave ginger cashews. I was very impressed by these. I almost never deal with glazed nuts because I never find them flavorful unless they’re salt roasted but then they just taste like salt. But these were entirely different; at times I felt like I was chewing on ginger! Wowza were they hot, but in a good way. These would be very gourmet to put in a dish at a party, for sure.

This morning I woke up feeling like a little strength training would be good. I threw on my new Target shorts that cost 3.50 and an old t-shirt from Greece and did a full core, which consisted of

  • 40 push-ups
  • 50 standing lunges, 5 walking lunges
  • 70 side crunches, both sides
  • 100 crunches
  • 70 crunch pose-hold
  • 240 arm rotaries
  • 5 sets of 7 chair swings
  • 40 squats
  • 70 standing marches
  • 70 rower arms(forgot to do this)
  • 40 second rower’s pose hold(and this, too)
  • 100 sit-ups
  • 70 tricep dips
  • 100 air bike kicks.

Did you know when you do crunches you should have your legs elevated? It works your lower abs better. I put mine up on a desk chair. After that I grabbed something for protein:

Delicious, but really I just wanted not to have a partially eaten bar lying around; that drives me crazy! And I did 200 flights of stairs for cardio. It’s hard to tell how long it took because I had to stop not once but 3 times to let somebody outside to go to the bathroom(I’m assuming by the “let outside” part you understand it wasn’t me). I wanted to just decide to stop after the 3rd time because it made my workout feel less-so but I realized that’s not the right reason to stop a workout and it’s always better to finish no matter what. After that I showered up and made another seasonal breakfast.

Nog Greek Yogurt

Am I going to crave pumpkin in the Spring? I think I just might. I loved the NuttZo which is kind of sweet but has no added sugar, especially with the savory cream cheese–yum! And I had some Noggy yogurt which makes Christmas feel not so long ago. Thanks to Xanthan Gum, this was so nice and thick; otherwise it’d been runny like a fat-free Stonyfield and I can just not stand that. Xanthan does have a bit of a dulling flavor so it needed a little more sweetener. Afterwards I wondered why I went for NuttZo for breakfast…

Clearly, I’m not the smartest cookie since I was wondering for so long 😛 I forgot: I added cinnamon to my pumpkin oatmeal this morning for the first time. It’s not that I wanted to taste it, or even did, but I’ve been seeing so many commercials for cinnamon as a heart-healthy spice I thought I’d add it. Does my heart feel happier? Well, I don’t know, but it didn’t affect the flavor and I’m sure it didn’t hurt.

A Domestic Day

I will warn you this post might turn out to be just like my day: very long, delicious, full of British humor, and ending with a winning recipe. Just a warning.

Last night, after blogging, I felt like I needed more nuts in my life.

In the box they sent me a while back, Tierra Farm included these maple glazed nuts. Maple and nuts? Two of my favorite things! I knew just how to try them out.

Pumpkin Oatmeal With Butter Toffee Peanut Butter And Maple Glazed Nuts

Delicious! These nuts were very good; they weren’t huge on the maple flavor but deliciously rich and satisfying. Note: They didn’t come in tiny pieces like that. I was actually impressed that they came all whole, and with a good selection. I just crushed them up to make them more oatmeal friendly, and threw in some sweet peanut butter. This did a great job at getting me sleepy and in the mood for bed.

Unfortunately, all this week I’ve been waking up around 4am, and I’m not sure why. Originally, it was always to go to the bathroom. Since reducing the amounts of liquids I have before bed, however, I’m still waking up, but not needing to go to the bathroom. Suggestions on how to “fix” this? I’d like to imagine(or use this as an excuse) that this is why I did not feel like working out this morning. Didn’t Kelly Clarkson once say something like “Some months I feel like working out, and some months I just feel like eating ding-dongs”? Well, if that’s the case, then I’m saying some months I feel like running, and some months I feel like watching I Love Lucy, because that’s what I did for the first hour of my day as I sipped down 2 cups of coffee. After showering from that “workout”, I had a seasonal breakfast.

Pumpkin Oatmeal With Walnut Butter And Pumpkin Cream Cheese, Drizzled With Maple Syrup

Very wintery and delicious. For the yogurt I used 1/4 cup Nog and a little bit of my Xanthan gum! I’ve had a problem with Nog yogurt being too thin for my preference but the gum really thickened it up. I wouldn’t say, however, that it’s flavorless. It’ll be interesting to see if now I can pick out its flavor in other products, too. The oatmeal with Artisana walnut butter and cream cheese was just beautiful; I swear I’m going to eat the rest of that cream cheese before it grows mold again… again.

Like the title says, this was a very domestic day. I had the house to myself and plenty on my to-do list to finish. Would you believe I haven’t downloaded music in months. These were the few songs I’ve heard on the radio recently that I had to have.

That gave me the chance to charge my iPod, Nintendo DS, and cell phone. While I was doing that, I was also looking online for a good vegan meatloaf recipe. In true Evan-fashion, I couldn’t find one that fit my wants perfectly or I had all the ingredients for, so I took a little of each and made my own. I’ll admit–making my own recipe for something that I’ve never even had before felt a little silly, but I had high hopes for this.

Lentils And Trader Joe's Brown Rice Mix

The “meat” of the loaf I decided was brown rice and lentils, which are two of my mom’s favorite vegan foods(and probably the only two). Instead of plain brown rice, I used a Trader Joe’s mix that has some seeds in it, as well. In another bowl, I worked with all the dry and wet ingredients, and 60 minutes later had it actually looking like a “loaf”

Not only have I never had vegan meatloaf before, I don’t think I’ve ever had regular meatloaf before. How weird is that? But after seeing this on Anna’s blog, I knew I really wanted it to work out. Did I mention I had to dice an onion for this? I felt like Julia Child from Julie & Julia. After the pot of rice for the loaf came off the stove, I decided that’d be good for lunch, too, so I threw another serving on. Besides that, I did not feel like cooking. Naturally, I let Al Fresco do the work.

Brown Rice Bowl With Broccoli, Garlic Chicken Sausages, And Soy Sauce

Let’s not point out the irony in shoving a vegan meatloaf in the refrigerator and pulling out chicken sausages to eat. Instead, let me just tell you how good these sausages were. In our Italian household, we’ve never been shy about adding garlic to dishes. It’s just one of those spices I cannot get enough of. Apparently, somebody at Al Fresco felt the same, because they just let these have the flavor like it was nobody’s business. It tasted so good with the soy sauce and rice(yes, there’s rice under there).

After lunch, I really wanted to get a good workout in. I came up with what I’m calling the “Count to 10” cardio and fitness workout. All you need to do is know how to count to 10, and you can do it!

  • Walk up and down a flight of stairs 10 times
  • Do 10 push-ups
  • Walk up and down a flight of stairs 10 times
  • Do 10 sit-ups
  • Repeat for 10 iterations

Isn’t that simple? But it’s also good in that it works you for a while, and works your legs, abs, and arms. Next time I do this, I’ll probably raise the sit-ups to 20 to fit my own fitness, but you can play around with it as you will. The whole thing took about 70 minutes, and halfway through I reached for some electrolytes.

Orange Bot Beverage

Just today, Bot Beverages sent m a pack of their lightly sweetened sport waters to sample and review. The timing for this really worked out perfectly, and orange sounded like a zesty flavor to start. The Orange Bot wasn’t incredibly flavorful, but it was definitely better than water for replenishing myself; and I’m ecstatic to see a company who believes you don’t need high sugar and artificial flavors and colors to have a good workout. I ended up drinking 1/2 the bottle and saving the rest for another time. After those electrolytes, for my post-workout eats I turned to some protein.

Chocolate Greek Yogurt With Orange Dark Chocolate Shavings

Really, I’ll look towards any excuse to eat chocolate. And because I was on an orange kick, I shaved on a square of the 1.4oz organic Endangered Speciesdark chocolate with natural orange flavor. The orange wasn’t super pronounced(just like the Bot water), but it was a nice hint of flavor. And, as I’ve pointed out, I’m really saving the environment by eating chocolate 😉 During this, my mom came home and was delighted to see dinner mostly made. We threw the meatloaf in the oven at 5:30 so it’d be ready for dinner when my dad got home.

Vegan Meatloaf

Ingredients:

  • 3/4 cup dry lentils
  • 1/2 cup dry brown rice
  • 1/2 cup walnuts
  • 1/4 cup whole wheat bread crumbs
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons your favorite seasoning
  • 1 carrot
  • 1 large onion
  • ½ cup tomato sauce
  • 3 tablespoons soy sauce
  • 2 tablespoons vinegar
  • ¼ cup ketchup
  • 2 tablespoons mustard

On the stove, cook completely your brown rice and lentils. While those are simmering, dice the onion and shave the carrot. In a food processor or mini chopper, finely crush the walnuts into crumbs. Combine all of those in a dish with the bread crumbs, salt, and seasoning. When the brown rice is ready, toss it in that bowl. In a separate bowl, mush the cooked lentils with a potato masher until a thick puree. Add to the rice mixture the ketchup, mustard, soy sauce, vinegar, and tomato sauce and mix. Lastly, add the lentil puree and fold until fully incorporated. Transfer this into a loaf pan. For best results, let the laof sit in the refrigerator for 2-5 hours before baking if time allows. When ready to cook, bake in an oven preheated to 325 degrees for 60 minutes, and let cool on counter covered for another 10 minutes before cutting into.

Since the loaf is so dense and nutritious, we didn’t cook too much alongside it. We simply roasted some brussels sprouts.

Oh my God was this good! Right off the bat, with the ketchup and mustard and onions it reminded us all of a McDonalds hamburger. Except it was vegan–go figure! My mom also enjoyed that it was soy free(save some soy sauce). The loaf didn’t hold together as well as I hoped it would but that’s probably because we took it out a little early. I ended up eating probably twice as much as pictured, and it was sooo worth it even if it’s made me bloated like a balloon. For once I can say I’m truly excited to have leftovers!

After dinner, my parents decided they needed to go to the grocery store to pick up some things, and I opted to stay home to watch Dr. Who and do work like write 4 product reviews, a recipe, and this post. I must really like blogging if I turned down a trip to the grocery store for it 🙂 Since then, they’ve came back with a McDonalds’ coffee for me, which has already “disappeared”, and I’m watching the new Biggest Loser! Now I just need to remember that, as delicious as this vegan meatloaf is, it’s not as easily digestable as chocolate or oatmeal at 9pm at night…

Christmas 2009

Christmas Eve recap here.

I was definitely the kid who woke up early on Christmas morning and woke up everyone else around me so we could get to opening presents faster. I think I’ve grown since then because I let people sleep in until 8 now 🙂

We just did simple family presents between the 3 of us on Christmas morning. There was the obligatory scratch tickets.

My parents know me so well. I’ve never tried Saratoga Peanut Butter before but my dad ordered some to try. The Catch Me If You Can flavor was invented by our very own Meagan! I’m glad I got it before it went off of the market.

The Goji Gourmet cookies weren’t much of a surprise since I picked them out in NYC 🙂 But the vitatop pan will be fun to play with! Maybe I will rekindle my obsession with muffin tops but not bottoms.

Cuisinart Mini Prep

And I got a food processor! Sort of. Any one have experience with this model? I know Cuisinart is a good brand because I have some of their other appliances. But I might return this one and take some of the money I got from Christmas to buy a more expensive model. I think opening presents is way more fun than working out 7:30-9:00 😉 But afterwards I was ready for breakfast.

Pumpkin Oatmeal With Butter Toffee PB, Gingerbread PB, And A Ginger Molasses Cookie

TRUwhip at breakfast is totally OK at breakfast on Christmas if it’s over a seasonal yogurt. The Catch Me If You Can peanut butter was really good! Go Meagan! I loved the way the ginger and the molasses played together–yum! At 11 we packed up to go to my dad’s family, who live in Concord, New Hampshire. It’s only a 90 minute ride and honestly it felt like we were there sooner than ever. When we walked in we were greeted, and with food.

The spread was so good; there was even Kettle Chips and Food Should Taste Good chips! Rather than not fill up on chips, though, I chose some of the “healthier” food items.

I can not resist fresh, precut fruit. We never have it at home because it’s such a waste of money to buy, but then we’re also to lazy to cut our own–double whammy! Naturally I had about 3 times as much is pictured.

There was also a plethora of celery dipped in this salsa. It has amazing flavor, except I much prefer the hot to the mild(and the hot one you know is hot because it burns your tongue when you hit a seed). My little cousins were quick to tell me what to do and where to go while I was eating.

The New Mario On The Wii

The big gift this year was a wii! I have to say, this was entirely a present for me, too. No more little cousins going crazy for mine when they come to my house! Haha. They wanted to show me it and their new Mario game. I have to say it was pretty fun, and they were in awe about how good I was. I don’t think they realize this game is 20+ years old and I’d been playing it since I was their age 😉 Once I peeled myself away from that, I was able to hang out with my grandparents and aunt and uncle. They told me stories about my great-grandfather who ate 3 raw eggs with milk and maple syrup every morning, walked 5 miles a day, and was tiny framed his whole life; well now I sound like a chip of the ol’ block! After much cooking, dinner was ready.

So much food! And unlike Christmas Eve dinner, I could eat 90% of it! It was pure heaven. Usually, at holidays, I try to treat meals like every other one: make a balanced plate of 3 or 4 things and eat until you’re comfortably full. However, I really just wanted to pig out on good and natural food and feel for once like the holiday season was actually here!

Brussels Sprouts, Cauliflower, Brie, Sweet Potatoes, Turnips, Cornish Hen

Such a good plate of food(though nothing in comparison to how much my grandfather put away 8-|). I also tried boiled onions for the first time and had seconds(and thirds) on the brussels and cauliflower. It was all really good. The cornish hens were naturally raised so I had no problem digging in to it. I ate the breast meat and my mom picked at probably the rest of it. Everyone pigged out on veggies so we even got to take home 3 hens!  Sweet deal. After all that amazingness, my cousins drove us to unwrap gifts.

New Super Mario Bros. Wii

And I got the Mario game for myself 🙂 I have to admit, it was really fun when I played with my cousins so I was definitely looking forward to getting this(especially after hearing Lynn talk about how much she loved renting it). There was also clothes–some of which I’ll keep and some return–and gift cards. My aunt got me not 1 but 3 Target gift cards; apparently she couldn’t decide which one looked cute enough. After everything digested I was sooo ready for dessert.

Along with the two things I brought, there was Carvel birthday cake for my mom’s birthday and a chocolate pudding pie and apple pie from my grandmother. I think the apple pie was all-natural, but really I was not that hungry at all after the feast. I just opted for coffee(decaf, of course) and some tiny tasty treats.

Peanut Butter And Chocolate Biscotti, Chocolate Mint Gluten Free Brownie With TRUwhip

This was such a sweet ending to the whole thing. The gluten free brownies came out amazing! No one could guess there was anything funny about them, let alone having black beans! I’m definitely going to be posting the recipe soon(and maybe even making another batch). And these biscotti got rave reviews again. I don’t think I could possibly get tired of them. The secret is in the peanut butter, peanuts, and peanut flour. After dessert we gathered our gifts, said goodbye, and drove home. It was snowing slightly and looked sooo beautiful all the way home; what a perfect way to end Christmas. When we got home it was past dinner but I wasn’t really hungry from the feast anyway. Instead I had (another) sweet ending.

NibMor Original With Raspberry Jam

Yum! The NibMor raw chocolate is definitely a bit lighter on texture but the flavor is just as decadent as rich, dark chocolate. And I love that combo of dark chocolate and raspberry 🙂 I was actually thinking of making raspberry chocolate cups but this was way faster and more effecient at 8pm at night.

Oatmeal With Honey Cream Cheese Frosting, Adirondack Jack Butter, And French Toast Almonds

A little later I definitely reverted into my nutty habits and was hungry for dessert 🙂 The “frosting”, which had yogurt in it, was more to get a 2nd(albeit, lame) source of probiotics in for the day. The adirondack jack butter was new and really interesting; it’s a mix of peanuts, almond, flax, cranberries, sunflower seeds and honey. Not my favorite, but it definitely has its own flavor. I loooved the added roasted nuts. I took them to New Hampshire, too, and everyone seemed to enjoy them, so I’m thinking next Christmas I’ll roast a batch for each person individually.

Well, that was my Christmas. In writing this post, I think I’ve remembered one of my favorite things about this blog: I know have all these great memories in a place I can go to whenever I want. Being able to share it with you all and my family is just the cherry on top. Merry Christmas to all, and to all a good night 🙂

My Cupcake’s Been Drinking

Let me start off by saying this is the 5th post I’ve written today so if I sound a little blogged out and speedy with my words that’d be why. But I don’t mind because I love it 🙂

Prepared Dinner

After blogging earlier I wanted to get a start on dinner, which I figured either I’d be making or it’d turn into a mishmosh of instant soups. I dethawed frozen wild salmon filets and rubbed them with thyme and lemon, steamed some broccoli for roasting, and scrubbed and wrapped some sweet potatoes. I swear this cooking thing isn’t nearly as much of a chore as my mom makes out sometimes 🙂 After all that, I figured that people wouldn’t be home for quite some time(not like they actually call to say when they’re coming…) so I made a protein packed snack.

Chobani 2% With Peanut Flour, Salt, And Turbinado Sugar

Yum! Adding a touch of salt is definitely the trick when working with peanut flour. Just like I rarely eat unsalted nut butter after having tasted the salted variety, I doubt I’ll go back to not salting my yogurt. Weird? In theory. But delicious at heart. By 6 I finally got around to doing things I’d been meaning to all day. Like shave. Wouldn’t have going to NY with a stubbly face been fun? I could have blended in with the homeless men. First my mom came home and then only 40 minutes late my dad, so that we could have dinner.

Lemon And Thyme Salmon, Sweet Potato, Broccoli Fries

The salmon was a bit overdone and the broccoli a bit under but all in all it was good enough. I portioned out 3oz of meat for myself and was set with that(although I really wasn’t even in the mood tonight so I might as well have dove into the 1/2 eaten can of chickpeas in the fridge). The sweet potato was nicely roasted, but I showed some restraint because I knew there’d be dessert. After cleaning up we called my mom down to celebrate her birthday.

My dad got cupcakes from a Boston bakery called Kickass Cupcakes. We used to always get a cake from a Chinatown bakery but these are all all-natural so we could all enjoy them. He got the Yule Nog, Banana Cream, Mojito, and Caramel Macchiatto. I also gave out all my presents(which were sort of Christmas presents but I wanted to get them done with). My mom got a Beads For Life bracelet and my dad a jar of NuttZo(he is like me and was very easy to shop for lol). After making some coffee, I grabbed this as my own.

The Yule Nog

The Yule Nog is described as a “gingerbread cupcake with brandied egg nog frosting dusted with nutmeg”. The base was just OK, except when I got a bite of whole ginger which was WOW. The frosting… when is frosting ever bad? 🙂 Especially when it has brandy 😀 I have no expectation of this holding me over very long, so I expect to be making oats with peanut butter and pumpkin in a little bit.

Like I pointed out in this post, I’ve been a bit forgetful today. So forgetful in fact I forgot I should pack a plethora of snacks and entertainment for tomorrow. We’re leaving at 7:15 to drive to a Connecticut train station to ride into New York for 11. Then we’re meeting friends at this restaurant(which, as I look at the menu, am not so enthusiastic for) and seeing a play(tbd). Then we’ll probably mosey about, check out Times Square, eat a cheap dinner and be home by midnight(I’ll be so dead by this time I won’t know what’s going on). That doesn’t mean I won’t be “posting”; check back tomorrow morning and tomorrow afternoon for the down low on a little known condiment and a new technique for your repertoire.

That or really predictable. I actually think it’s the latter. At least this used up the last of the can so I don’t have to think about that growing older while I’m away. And the white chocolate wonderful was… wonderful 🙂 I also packed the food for tomorrow.

NYC Trip Food

Let’s not point out just all the craziness I pack. Honestly, I’d love to just go to NYC with nothing(except what I’ll need for breakfast and snacks for 8 hours of transportation) and really live it up in the city as a foodie. Unfortunately, the people we’re meeting are not likewise thinkers, so I expect foodie touring to be to a minimum and going to a lot of places where my menu options will be limited. That’s why I ended up packing so much and a variety to choose from for my taste buds. Can you tell that my “dream trip” to New York would involve visiting this restaurant? I would be over the moon.

I ended up being hungry before lunch–not planned because I never am? I thought this bar, which I’ve enjoyed before, would be nice. After eating it and thinking it was unusually stale and nasty, I realized it expired 2 months ago. Since when do things like this even expire? It was odd, to say the least.

While I was off-schedule anyway, I thought I’d get a head start on my baking. I planned on making this recipe with a bunch of little changes that I wrote up here. As it turned out, we had no flour. Really? I planned and planned for this and went to the store twice to get ingredients and never thought to check for flour? Ugh. After freaking out for about 5 minutes I decided to enlist help.

I called my 81 year old grandmother for a ride; if you see this card on the road ever, you might want to be a little careful. Actually, she’s not an awful driver, but I was holding on a little tight. She was happy to take me to Hannafords(she needed scratch tickets anyway, don’t ya know ;-)). While I was in her car I noticed two things.

She has pizazz apparently. 3 years ago at Christmas, this steering wheel cover caused a heated argument during yankee swap; no one wanted it except the old people so that’s who it went to.

I also found kid’s meal stuff in the back seat. My grandmother and her 80 year old sister are the only two people who go on this car. Apparently, they’re not above ordering off the kid’s menu on their way to the casino. Oh, to be old…

King Arthur's White Whole Wheat Flour

I grabbed what I needed, and that was all. After I got home, I realized I was borderline hangry because it was almost 2pm(so not on schedule) and all I’d had for “lunch” was that expired granola bar. After a kitchen failure with 2 eggs and a pan, I made this masterpiece.

2 Egg Omelet With Broccoli

Seriously, this was so good; I think I tapped in to my inner “chef”. As I’ve said before, I’m a baker who loves precise times and measurements. Therefore, “meal” food doesn’t work well with me. I put that mindset aside, put “a lil’ earth balance” in the pan to melt, cooked the bottome of the egg “until it looked ready”, added the cheese and folded. It was so beautifully runny and rich and cheesy, just the way eggs should be. Maybe I do have a lil’ chef in me? In my attempt to get back on schedule, I quickly got working on the recipe.

That would be 10 tablespoons of earth balance(original recipe calls for real butter) melting until brown and nutty. Amazingly, this wasn’t a Paula Dean recipe, either, but one featured on Healthy Eats. I actually think this might have been my favorite part; something about a large pool of melted, fragrant butter… *drool*. Anyway, while I was doing this I spotted some old friends.

There’s a group of 20something wild turkeys that live in our neighborhood. Naturally, I was nervous since I haven’t seen them since Thanksgiving. Turns out, they’re doing just fine in this snow.

There was definitely some licking of the raw dough with this recipe. No, it was not vegan, but I’ll take my chances on the raw eggs. Ever since I’ve seen documentaries on body builders who eat 6 eggs or something crazy to start their day, I’ve been a bit balls-to-the-wall with raw dough. I’m a wild man, right?

Peanut Butter And Chocolate Biscotti

The biscotti came out amazingly(minus the 6 or so that crumbled in to pieces). This recipe was definitely a winner with a little reworking. While I was baking, I got some fun packages.

The people at NuttZo saw I was a nut for their product and sent me a shirt! I’m such a brandaholic; I was actually wearing my zevia t-shirt just today, haha. Nature's Path Granola And Bars

I also got these awesome granola and bars. 2 weeks ago I was their “fan of the week” on facebook and got to pick out 3 products to get 2 boxes of. Naturally, I went for everything peanut butter or cherry. I’ve never tried any of these so I can’t wait to see how they are. Once the biscotti were done, I didn’t want to dive in to them because I wasn’t sure there’s enough for Christmas Eve and Christmas yet. Instead, I made some similar oatmeal.

Oatmeal With Teddy Unsalted Natural Peanut Butter And Chocolate Chips

I picked up this new peanut butter yesterday at Price Chopper while working on a guest post. It’s rated really better than most other brands. And it’s 1-ingredient: peanut. I needed to see what the fuss is about. I admit, for something unsalted this was rather tasty and had a good consistency(not “oily” at all yet still smooth and melty). I don’t know that it deserves the rating it does but it was pretty cheap, too, so I’m not complaining.

Let’s just say “workouts” at this point are definitely a point of contention; I don’t plan on forcing myself to do too much strengthening if it’s not what I want(I’m a cardio lover at heart), but I also don’t want to completely fall off the ladder. I resolved this by playing 2 rounds of wii tennis, 1 wii fitness test, and 2 sets of 25 stair flights. This also gave me time to plan dinner, which I had going before my mom got home.

Let’s just say, I couldn’t have dreamed this up better. It was soooooo good, and everyone enjoyed it I think, which makes me doubly happy. In ordinance with my “new plan” towards meat, I portioned out 3oz of rare meat, and loaded up on the vegetables. The meat was so excellent, and I think limiting that amount was just perfect in also letting me appreciate what I did have. I had in mind to mash butternut squash with 1/4 cup Silk Nog and some stevia to taste and my parents loved it(my mom thought it needed 2 tablespoons of brandy, haha). It was really earthy and delicious.

After all that, I finally got a chance to sit down and finish Days(which I started 3 hours ago). Now that Caitlin has reminded me via twitter that I have instant chocolate pudding in the pantry, I think you can guess what I’ll be “making”.

The Swing Of Things

Good morning! In case you were travelling over the weekend, there was a new recipe dreamed up on Black Friday, a review of Clif bars, a day that had me blushing beet red, and a 2nd, meatless Thanksgiving.

After that awesome lunch, I needed time to digest on the couch with Montana, and then got to work on my next project.

Christmas Tree

The Christmas tree. After chopping it down yesterday and leaving it in the cold overnight, we finally brought it in. Traditionally, I do the lights and the cranberries while my mom does the ornaments afterwards; since I was moving back to my dorm I needed to do this snappily. I was happy at the end 🙂 I love the lights on a Christmas tree. I think the ornaments are always nice and personal but it’s just not a tree to me if it doesn’t light up.

Afterwards we got to packing up. I dreaded this. It always feels like I have more going back than coming home, and this time I knew I did because of all the leftovers and extra clothes. Ugh. Thankfully with enough helping hands in the house this wasn’t too bad and shaped up pretty quick.

I think it was a backpack, 3 bags of food, 2 of laundry, 2 of random machinery, and a stevia plant. Because, really, how could I live without all of that? We swung by my grandmother’s apartment to pick her up because she likes to come “just for the ride”. Wouldn’t it be nice to have time to go for a ride just because you have nothing else to do? 60 more years and I’ll be there.

Of course before hitting the highway we wento McDonald’s for some decaf and I broke out one of these cookies. I think it’s always the case that things grow on me after a few days, because 4 days later and I’m now becoming obsessed with them. Seriously, just smelling the cocoa–bliss. On the way down we stopped at Target looking for a movie. Alas, no luck 😦 But underwear was on sale and that’s close enough to grab, right?

Moving back in was actually quite quick and painless with enough helping hands(again). The rug looks awesome since my mom brought down her vacuum to clean it up(thanks!). I definitely lost track of time in all of this and realized I was hungry. A little cookie is not a substantial afternoon snack, but you know what is?

Ice cream. I’m surprised this has survived the common freezer for so long, but yesterday I decided it was time to polish it off(only about 1 serving left anyway). I love the tang of the balsamic vinegar in this. Something tells me adding balsamic vinegar, even an organic one, to strawberry chobani wouldn’t work the same. When all the groceries were away I enjoyed staring at a full fridge.

Really? Is there anything more blissful? I’m surprised I managed to cram it all in there; it looked like it might not make it and I’m glad I left some tofu at home for another weekend. I also found this which I snuck into my bag:

The Killer Angels

I don’t really “pleasure read”, and if I had time to, I’d probably choose a book I haven’t read, so I’m not sure why I brought this. But I do love and recommend this book for anyone wanting to read a psuedo-historic novel. I did a huge paper on it and the battle of Gettysburg in 11th grade. As you might know, I’m a Classics major, but besides that American history 1640-1865 is my other area of interest. There’s a movie, Gettysburg, based on this book I have yet to see but I can’t wait to find it some day.

Dinner started off a little disgusting; I went to get one of my sweet potatoes and found it covered in mold–yuck! That’s actually never happened with the food I keep under my bed but I guess there’s a first for everything. Instead, I had to improvise.

Broccoli, Turkey Breast, Cinnamon Raisin English Muffin With Lightlife Breakfast Sausages And Maple Syrup

You know how sometimes your eyes are bigger than your stomach? Yeah, story of my life day. First there was being stuffed from a stuffed tofurkey and acorn squash, and then there was this. The turkey wasn’t anything special, I just wanted to eat it up before it got moldy like a sweet potato. The english muffin with sausage was the real money maker here. Does anybody else remember McGriddles from McDonalds? That’s EXACTLY What this was like, except with infinitesimally less trans fat. Oh my God, so good. Rest assured it will be made again. Unfortunately, there was one casualty during dinner.

 

Broken Amazing Grass Bottle

 

My Amazing Grass bottle 😦 I dropped it on the floor while it was full and water went pretty much everywhere–fun. After cleaning it up I went to the bathroom and tried refilling it, wondering why it kept being empty. Smart one, Evan. I think they carry these at Whole Foods? That’s what I’m hoping at least. After getting ahead(ahead! not catching up!) on work I made a snack and settled in for A Dog Named Christmas.

 

Peanut Butter Soy Yogurt With Fig Jam And Peanut Butter Chips

 

I don’t expect much from cheesy, holiday, made-for-TV movies, but this one was even below expectations. I expect them to suck, but to also be cutesy, and the child acting in this was not cutesy. This snack also did not disappoint even though I was iffy on the flavor combo. I think I forgot to sweeten the base but thankfully I bought a Vanilla flavor. I completely forgot I even had fig preserves but they were still just as good. And the pb cheeps were nice and sweet, nothing at all like real peanut butter and yet just as magical 🙂

After I’d put up with bad child acting for an hour, it was time for a new Brothers & Sisters. Last weeks episode was not on because Adam Lambert needed to whore it up at the AMA’s, but this week there were supposed to be great plot twists and secret revealings–it did not disappoint. Midway, I snacked on this:

 

English Muffin With Pumpkin Cream Cheese And Honey Maple Peanut Butter Topped With Me And Goji Granola

2 english muffins in one day? I was on a roll. I liked the crunch from the granola. And the gojis I’m sure were some decent brain food. I also love “rediscovering” peanut butters I forget about. Brothers & Sisters I thought was awesome–can’t wait until the wedding(or will there even be one?) next week.

I was exhausted so I knew I wanted shut eye but for some reason, as tired as I was, I wasn’t getting to sleep. I don’t know how much I slept overall or how many times I woke up/had weird dreams. This was one harsh “welcome back” to the swing of things. When I woke up, though, I was ready to meet my old friend–the gym. I made a quickie snack.

Kashi Strawberry Flax Waffle With Banana Peanut Butter

Normally I like bars that I can take on the treadmill but for some reason this was what appealed to me best. When I got there, it was packed for 6:50am(read: 3 other people). But then it quited down and the regulars started showing up. I didn’t concern myself too much with pace or anything; I was plenty happy to be back and watching the Today Show(does anybody care about Tiger Woods’ car crash at this point? really?). In the end I did 12 miles in 1:38:59. That’s almost exactly like yesterday, which is good because I tend to be slower inside than out. When I got back, I relearned how to make a dormroom breakfast.

Pumpkin Oatmeal With Pepita Butter And Maple Frosting, Eggnog Yogurt

This microwave just ain’t the same as the one back home. For the oats I used Caitlin’s pancake frosting recipe with a little vanilla stevia. I think my cooking skills were on vacation and are just getting back, too, because everything was underseasoned/sweetened. Afterwards, I added more stevia and cinnamon to the yogurt and some vanilla sugar and salt atop the oats and that perked things up.

And so, clearly I’m relearning dorm life after a week of bliss. I suppose with finals and papers coming up I won’t even notice the time between now and Christmas vacation, right? Now if you’ll excuse me, it’s cyber Monday, and as dirty as that sounds I have some deals to catch.

Pans And Pies

I didn’t feel that much pressure to get out and run yesterday. At the same time, I wasn’t sure how many opportunities I’d get today and tomorrow, so I decided to take the time and go out. It was a slightly slow 6.7 but felt good to be active for an hour(because I firmly planned on being lazy the other 23). When I got home, I challenged myself to make a lunch not with the microwave. It’s simple enough but there’s so many flavors and textures it just can’t achieve. After planning out a menu, I got to work with my fancy pan I won from some Hood milk promotion last month.

Brussels And Sausage In A Pan

First I scrambled 2 eggs and cooked those in the pan to the perfect doneness–so much easier than in a microwave! Then I steamed raw brussels for 3 minutes in the microwave and then pan-browned them for another 2 minutes. I also heated up a pre-cooked chicken sausage in the microwave(btw, all these uses of it don’t count ;-)) and finished that in the pan.

This deserves a Holy Yum award. Brussels sprouts are seriously my favorite green vegetable and by far the best thing here, even though they were a bit dry, with a touch of salt. The browning gave a good crispness to the outside. The sausage was also quite good. Note: It was real meat and not faux meat. I think I can love them equally. The fennel in it was really impressive. For dessert I had something that took neither pan nor microwave.

Oikos With Banana Pineapple Rum Jam

So perfect. Well, OK, it could have used more jam, but then again my ideal would be eating the jam from the jar with a spoon, which is a no-no when it costs as much as this one does. I had a lovely evening on the couch planned, but then my mom asked if I wanted to accompany her to Market Basket while she picked up some last minute food. My knee-jerk reaction was a big yes, and next thing I knew it I was in the car. Oops. At least I brought a little work with me. For those who don’t have a Market Basket, it’s a place full of interesting finds…

Christmas Decor

Oh, Canada. What are you doing up there? Jk, but Market Basket does have good finds. It’s right across the way from Whole Foods, and while it might only carry about 30% the same stuff, what it does have is very often cheaper. The only thing I could find on my list this trip was a 4-pack of deep chocolate vitatops for 3.69. they had faux meat, but unfortunately nothing all-natural and breakfasty 😦 It was pretty late when everyone was done, so I was happy to grab a snack in the car.

Banana Walnut Gnu Bar

Wow. Wow wow wow wow wow. All you have to do is read my review to know I loved this. I don’t like bananas that much, but I swear anything that tastes like bananas I’m game with. And this was just like banana bread. There wasn’t a large presence of walnuts, but that was fine by me since I don’t care for the. And all the fiber filled me up and kept me calm when I realized I still had to make the pie! Yikes. By the time we got home it was dark and I was getting anxious about that, until I remembered this is the simplest recipe and I didn’t even need to check my computer to remember how to make it.

Unbaked Crustless Pumpkin Pie

There was a mini-issue with the pesky water bath, but otherwise crisis averted and sanity restored. I felt a little something was in order along with a pat on the back.

Chocolate Elan Frozen Yogurt

This snack ended up being a little littler than I expected; who knew we were almost out and there was hardly a serving left in the container! Too bad nobody realized this over the past 4 weeks we’ve been having freezer-space issues. Normally I’m happy to finish an ice cream but I love elan and this flavor so much I feel like I need to get an exact replacement for it. I watched 1 of the 2 SNL’s I slept through and then the pie was done.

Crustless Pumpkin Pie

It had a couple bubbles but no cracks and definitely nice and firm so that it will stand on its own at the table. Amen 🙂 And then there was dinner.

Haddock With Soyaki, Beets, Parsnips With Peach Salsa

Not quite my pan-licious lunch, but this was pretty good, too 😉 There was a little more beets taken after the photo and we finished it all! We didn’t want any leftovers going in to Thanksgiving. I swear this house empties of all vegetables when I’m not here so I made sure we got good ones at Market Basket. Parsnips are so good for a soft and white vegetable; I don’t like white potatoes because they always taste dry and starchy but I think I’ve found a new friend in parsnips.

I almost forgot about The Biggest Loser last night! I was so thankful my tivo reminded me of it. I brewed some coffee and had a naked dessert.

Deep Chocolate Vitatop

I kept racking my brain to try and figure out what to do with this vitatop. It finally occurred to me: If it wasn’t coming naturally, it wasn’t meant to be. And this vitatop tasted just delicious on its own. It was great to see where former contestants are and to know they’ve really changed their lives. I think finding and staying with that balance must be the toughest thing. There was another snack.

Oikos With Turbinado Sugar And Chocolate Chips

Turbinado sugar is good for you because it has the minerals crystalized in, right? And it’s from Trader Joe’s so it cures cancer, right? We’re just going to go with all of that because this hit my sweet tooth. It was so depressing seeing the winner who gained back so much weight. Clearly, though, he felt bad about it, too, so it’s hard to be upset with him.

 

Pumpkin Oatmeal With Mighty Maple And Chocolate Sunflower Seed Butter

Let’s just say, this bowl took a lot of work to figure out what to do with it, but I’m happy where I settled. I forgot how good and chocolatey(not to mention thick) the chocolate sunflower butter is. And probably a better choice at 10:30 than chocolate chips with my sugar tolerance(or lack thereof).

I set my alarm for 7 this morning. On a holiday–why’d I do that? To run, of course. I wasn’t sure it was going to happen but it was actually reasonably warm and I felt refreshed with only 8 hours of sleep. I grabbed a bar for the run.

 

Amazing Grass Chocolate Whole Food Energy Bar

What a delicious way to start Thanksgiving 🙂 I ate 3/5ths of it on the run and then never needing the last bit. I ended up doing 10.55 miles–my longest run outside! The course was completely new to me; they demolished a bridge near my house which pretty much eliminated as options all my longer runs but I figured out a new course that worked perfectly. I came home to a house already smelling of food–love that. I got a touch creative with breakfast:

 

Pumpkin Yogurt With Smart Balance Peanut Butter And Nog Cream Cheese Frosting, Peanut Oikos

Ok, I’ll admit it, I used the microwave for the oats and I don’t regret it because this bowl was perfect. The frosting, which I dreamed up on the run, really made it; the recipe is 1oz greek yogurt, 1 tablespoon low fat cream cheese, and 1 tablespoon Silk Nog with 3 drops vanilla liquid stevia. I wouldn’t give such precise measurements if I weren’t convinced those are the measurements of the Greek Gods. It’s sweet but not so much that you lose the cream cheese, and it’s entirely seasonal.

Happy Thanksgiving, all! Now I’m kicking back, watching The Parade with Pikachu just having floated by. My relatives are coming in just 2 hours! I’m so excited, even though I realize the 2 little cousins will probably have me tearing my hair out of my head by the end of the day, haha.

A Bit Cheesy

On yesterday’s post was a good comment made by Jeff(or Jon or whatever name he used this time ;-)) about the processed foods I eat, saying that aren’t I being a hypocrite with how I present myself? I say: No. I do eat processed food. And I love it. And I can, because the processed food I choose doesn’t conflict at all with my all-natural ingredient diet. A mint Newman-O is just as processed as a mint Oreo, but I’ll gladly chow down on the former whereas I won’t touch the latter. Of course, I completely expect some people to think this is absurd and not see a distinction, but I very much do and that is what shapes what I eat. I definitely think Jeff’s comment was a good one as it gave me the opportunity to share this all about me. And I was touched by how many of you replied in defence of this distinction I make 🙂 It reminded me of how I have some of the best readers in the world. Oh, and while I’m publically responding to comments–Food Makes Fun Fuel is a blog written by a guy. Rare in blogworld, I know, but true.

That’s not to say I never eat raw foods, though, like this apple I grabbed before class:

Then again, this was pretty nasty and old and by the time I finished I wished I had something more processed. Thankfully, coffee washed it down and I picked up a new bar to try later that I’d been eyeing. In class we got yet another end-of-semester paper. If I didn’t use Google Tasks and Google Calender to keep track of things like this, I’d be very frightened right now. But I’m not. That apple, as bad as it was, held me over well through class and blog reading, to the point where I was making a lunch to eat in Greek History. It came in two parts.

2% Chobani With Raspberry Chocolate Jam

For the “main course” I scrambeled 2 eggs with the last 2 of my new, favorite processed not-meat and microwaved that until most of the liquid was set–so good! I loved the spicy sausage in the egg with a little salt. For “dessert”, I sweetened the 2% Chobani a little and topped it with jam; the 2% are really hard to find but they’re soo good. Full fats a bit too much, but plain’s a bit… plain :-/ This is a great compromise. This meal had over 40g of protein. I don’t really track that for the most part, but sometimes I like to check for kicks and giggles, and that impressed me.

Class 1 was dull. Class 2 was duller. I had to take the escalator with my teacher. She’s nice but that’s always a bit awkward. She also smokes everyday before class so that was a bit nauseating to be in close-quarters with. After class I wasn’t quite ready to go back to my dorm and finish up some work, so I didn’t 🙂

Blue State Coffee At The Book Store

I know I’m not alone in loving book stores and coffee on really rainy days. Last year, one of my classes was a good mile down Comm Ave in Boston from where I had been picked up normally, so on nasty weather days I just went to Barnes And Nobles and waited for a ride to come to me. I also got a message while I was moseying saying my dinner plans were not. Not ideal, but much better than learning this at 6. Eventually, I hobbled back to my dorm. I got a bit peckish and broke out that new bar I mentioned.

Chocolate Chip Trail Mix Odwalla

I like the idea of trail mix, but I don’t like how clumsy it is. I like bars. So I had good hopes for this. In the end, it was good, but didn’t blow me away; it reminded me of a Clif mountain mix Mojo, except with an oat base instead of soy protein, and a little less nuts. Since I get plenty of oats on a regular basis, I think I prefer the Mojo because of the protein. Otherwise, this was decent. Speaking of getting enough oats…

Pumpkin Oats With Vanilla Almond Butter And Vanilla Powder

I wasn’t feeling like anything extravagant, per say, so instead I kept it pretty vanilla. Vanilla, in my book, is quite tasty 🙂 I think I listened to all my Bing Crosby Christmas songs at least once while catching up on television. I watched 2 episodes and I still have a good 10 left. I guess I slipped on that last week. I have to say I was a bit happy when dinner was called off; it was pouring last night and I was happy to be in PJ’s a bit early. It also let me have a go at this cornucopia:

Acorn Squash With Macarroni And Cheese With Tuna

Yum! It tasted as delicious as it looks. It’s amazing what you can make with canned tuna and a single serve mac n’ cheese packet. I had a lovely tofu dinner planned but this salty mess stole my mind and the show. The acorn squash was perfect steamed in the microwave in a bowl of shallow water for 5 minutes and let rest.

I loved Heroes last night for some reason. It totally dragged me back in to the season where it lost me. I think I’m a bigger fan of Claire’s story line at the time than anyone else’s. Afterwards I had a snack.

Peanut Butter Yogurt With Strawberry Jam And Chocolate Chips

I wasn’t sure if the strawberry, peanut butter, and chocolate chip would work in sync. What was I worried about? This was delicious. I just love the crunch of whole chocolate chips, and the strawberry was a nice sweetness to the sweet-but-not-too-sweet yogurt. Because I foresee questions on this, peanut butter yogurt is 6oz plain greek yogurt with 2 tablespoons Byrd Mill peanut flour(PB2 also works for this) and vanilla liquid stevia. It has a slightly nutty flavor and packs a protein punch. I think The Big Bang Theory was also great last night–what a good ball comedy. To the Jay Leno show, I finished the night with this.

I like to think I have some restraint around Silk Nog. Mighty Maple and chocolate chips, on the other hand… I need to remember to pack that today because it’s clearly one of my favorite nut butters and yet we don’t have one at home! Shame. While watching Leno, I came to the conclusion that, while Lady Gaga is fun to run to, she’s a scary scary person to watch perform. Not Adam Lambert scary, but still. Now I could definitely picture him opening for her.

This morning I hit the snooze twice and felt totally rejuvenated after my morning routine. Seriously, why didn’t I feel this good yesterday morning? I wasn’t particularly hungry, but I grabbed this bar knowing it would make my workout that much more amazing.

It must have worked because my running felt so strong. Seriously, where was this energy yesterday? I planned for 10 miles, and ended up doing 13.1 in 1:51:02. I easily could have done the 15 I wanted except for time restraints; I can’t wait until next semester when, no matter which schedule I end up with, that won’t be an issue Monday, Wednesday, or Friday! Even more shockingly, I wasn’t feeling very “sweet” for breakfast. All I wanted was something spicy!

Pumpkin Pie Yogurt

I decided to do oats that Green Dog Wine would be proud of 😉 These set my mouth on fire with The Heat Is On. And the processed breakfast patty was the perfect protein touch to compliment it all 🙂 Lol. I jest, because if you can’t make fun of yourself, who can you make fun of? The yogurt was more of a thing of convenience, as in, it’s convenient that I don’t have to take home 2 tubs of yogurt because I dumped what was left of them in there with some pumpkin, cinnamon, nutmeg, and liquid vanilla stevia.

I’m currently employing the throw-everything-on-the-bed method again for when I go home today!! Ok, that might be a tad more exciting if I didn’t have to go home this past weekend for the party, but still it’s pretty fun when it’s for 5 days. Later on I have a nut butter review to share with all of you  🙂
