I think I’ve been pushing the envelope in my latest insanity.

On Sunday, I made up this raw ice cream, which was absolutely delicious.

I had a really bad craving for vanilla ice cream. Not coconut milk. Not anything other than dairy. Of course, this was the 1 thing we didn’t have. To appease that craving, in the ice cream maker I threw

  • 3 cups raw whole milk
  • 1/4 cup vanilla infused sugar
  • 1/4 raw honey
  • 1/2 teaspoon guar gum

Considering I didn’t have half the ingredients for real ice cream and made this with no patience, it was actually pretty good. It tasted nice and sweet and hit the exact spot I needed it to. It might not have been thick and creamy, but actually it came out much like a Wendy’s frosty. Yum!

For breakfast(eaten in the car), I just cooked oatmeal and topped it with Naturally Nutty‘s chocolate cherry peanut butter and had a plain Oikos with cherry butter and Whole Foods’ trail mix. I love getting the plan yogurts because they’re so versatile! Except I had to sweeten the cherry butter because it’s a bit tart on its own. All together it was delicious.

During the test, which took 2+ hours, I sipped on a gingerade kombucha. Let’s just say I am very glad to be done with that one. It was just an awful scenario. Part of the test was answering essay questions, and the questions we had to write on were chosen by the roll of the dice. And it was not lucky snake eyes. Whatever. It’s done and I’m free!

For dinner, I bought something else but ended up craving a burger and fries. This would have gone great with my raw milk frosty. Anywho, these were some of the best fries ever. And all they were were potato coated in EVOO and baked for about an hour! But seriously amazing. I timed this well, too, because as I was grilling the showers came in.

Summer rain: love or hate? I would hate to have to run in them. But in general, summer showers, a little lightening, and a Little People, Big World marathon would make for the perfect night.

I’m The MacGyver Of Baking

Yesterday, my parents went to see our relatives while I stayed home studying. My aunt, ever-thoughtful, sent back some cupcakes for me. It was really thoughtful; but there was something that worried us. If you asked her what they were, she’d say “organic, gluten-free, vegan, dairy-free, nut-free…” the list goes on. She did the same when I made my cousin these cupcakes. And they didn’t seem gluten-free. In fact, after a little investigating, it seemed likely they weren’t and she just got confused. Well I was OK with that and letting my family have them. Except then I wanted cake. I really wanted cake.

I broke out the Sweet Utopia cookbook sent to me by Book Publishing Co. and flipped open to the first recipe in the book: a simple chocolate cake. Perfect. I made a few alterations to the recipe(switching to gluten-free flours, almond milk for soy milk, and olive oil for canola oil), and 28 minutes later I brought life into this world.

Isn’t she a cutie? But I wanted cake fast so I cut a slice and stuck it in the fridge to cool quickly. While that was cooling, I made a 2-minute buttercream frosting by mixing earth balance, powdered sugar, and vanilla powder in a small dish with a fork. It was almost too easy.

This bowl was still really good with crunchy maple butter. And now I’m eating a Chobani as if it were a parfait–not stirring the jam up first. It’s pretty good this way.

To make a chocolate nut butter, really you just need cocoa powder, sweetener, and some form of vanilla flavor. I made this with Madhava’s vanilla agave. It was good, but Justin could do better. Since no morning’s complete without fruit and chocolate, I broke a chocolate bar filled with dried blueberries and cranberries over my pomegranate Chobani; it has fruit, so it’s healthy, right?

Tonight I am attending an auction at my old high school. While I’m excited, I am a little wary going into it as my first event where I’ll be avoiding gluten. I’m hoping I’ll be able to just enjoy the night, but I’ll also have a pocket full of larabars or something just in case. And in my absence, I have a post prepared on how to shop and save at *drumroll*… Whole Foods! Yes, I do believe it’s possible, and I’ll tell you how.

Feel Good Fueling Well

I am so happy Monday is over; it’s amazing how much ended up getting done today and needing to be. And the prize? Kicking back with my feet up, scrapping to finish up work, trying not to think about the 6:15 alarm I have now. This week is packed! I have 6 engagements I wouldn’t otherwise have–some for fun, some having me looking for the exit–so I need to be fueling well all along(aka, there’s an interesting blurb from me at the end on fueling)

Gourmet Groceries

While I had tofu pressing and laundry spinning, I got an email to go pick up a package. Can’t it come to me? Well, I threw on clothes to go get it and it was the jungle peanuts I ordered. In fact, between shipments to home and here, I got a good number of fun foods in the past 48 hours. A little while ago I might have gone internet-shopping happy; all but the Tropical Traditions coconut creme were my own purchases, and the creme is to review. I can’t wait “playing” with all of these, though! Chia seeds sound so good and nutritious, and cacao butter will make some mighty chocolate if I can figure out how to use it.

Preparing A Burger

I had planned to have maple baked tofu for lunch(I even had it in the oven), but swinging by the dining hall for veggies on the way back to my dorm really had me craving meat. I believe my words were, “Screw tofu, this is burger weather.” I removed a frozen 90/10 burger I had from 2 weeks ago and cooked that from frozen. Really, for decent flavor and cooking, 85/15 is the better option.

Yep. It was definitely burger weather. The roasted vegetables with EVOO drizzled on top was just what I wanted. My only complaint would be that between this, Days Of Our Lives, and folding/putting away laundry, there wasn’t much sitting down and enjoying the meal :-/ Otherwise, I try to make it a point to eat slowly and savor each bite.

Wild Jungle Peanut Butter

With laundry done, I broke out the food processor to–you guessed it–make peanut butter with my wild jungle peanuts. I only used half the batch, and ground until a thick paste. I’m just glad no one dropped by to ask what the noise was 😉 As I was talking about with Gina, really, the greatest thing you can do for nutritional benefits in making your own peanut butter is keeping the skins on; I’ll be interested how “wild” these jungle peanuts taste.

Like I mentioned, I didn’t sit down and savor much of that meal, so no surprise when I was hungry for a quick dessert. I added some NuNaturals alcohol free vanilla stevia(also included in the shopping spree) droplets to a plain Oikos and then broke up a ChocAlive! dark chocolate crunch truffle on top. Yum! I’m still not sure how I feel about stevia in yogurt instead of just sugar/when to use it, but whenever it is such I like the alcohol free vanilla flavor for a clean, pure sweetness. And the truffle was good because… well just when is chocolate not?

I was hoping the dessert would hold me over through extracurricular appointment #1 and beyond. It did the first part but soon after getting back I grabbed this chocolate peanut protein Amazing Grass bars. I can not afford to keep these around because… well, I eat them. I think this was bought on sale, though. It was also my last one 😦 I would have thought all this protein throughout the day would have been more satisfying. I would have been wrong.

I’ve had this chocolate chia pudding gelling for a bit too long; I’d been avoiding eating it because… well, it scares me? But I was hungry enough that it didn’t even matter. I could only get through 1/3 to 1/2 of it before throwing it away; chocolate chia pudding is not for me. So then that wasn’t very substantial, which called for another bar.

This time I went for a peanut-choco Nature’s Path bar. Sense a theme of flavors throughout today? Usually I reserve these for pre-run fueling, because they do have a good deal of sugar compared to other ingredients, but it was at hand and a tiny snack to hold me over while dinner was in the oven.

For tonight, I thought I’d try something Monica inspired. Would ya’ll believe I never have roasted chickpeas? I tossed these with EVOO and indian spice along with some broccoli. I know–this is the second time I ate roasted broccoli today. But while the oven’s on why not roast some broccoli? It’s that good. The chickpeas, on the other hand, will not be a new obsession; they just tasted… more stale? Oh well. They also felt more like finger food than any protein I know. I resisted eating them with my fingers, though, because I was at extracurricular #2. I try to have some manners.

Feel Good Fueling Well

Since I feel it’s my duty with a blog called Food Makes Fun Fuel to talk about fueling sometimes as opposed to just food, I will! Let me first assure you it’s easy for anyone in any walk of life to feel a little “blah” on days where they’re a bottomless pit. Today, I couldn’t help but get down on myself for how much random snacking I did.  I’d just rather I had sat down to a bigger, less-processed mid-day meal at some point(chocolate avocado pudding crossed my mind but non of my avocadoes are ripe :-(). But, regardless of snacking or meal-eating, you should always feel good fueling well.

Bottom line number 1: If you’re hungry for it, eat it. There’s no two ways about this one; if you’re hungry, even if it’s not within your “routine” schedule, it’s important to eat. Not doing so can actually throw you more off routine

How much is it really? Here, the key is thinking macro, not macro. Today I ran 12 miles this morning. OK, that accounts for some extra hunger. But also look at your workouts on a weekly schedule. I am running a lot more recently, and my body anticipates more running to come. It’s right! So it needs more fuel.

Want to avoid any guilt? Get away from knowledge–knowledge of calories that is. Depending your intent or method, this may not be for you. But personally I feel much better knowing as little about the exact nutrition content of my meals as I can, which also corresponds to eating whole foods. An apple doesn’t come with a calorie content! Today, I can pinpoint just how many calories/fat/protein/sugars were in my plain Chobani(100), oatmeal grains(105), Oikos(80), truffle(66), Amazing Grass bar(270), and Nature’s Path bar(140), and I can guestimate the 1/2 a cupcake(100). Beyond that, there’s plenty of foods I don’t know that much about, and I’m happier with those. Like I said, ideally this list would be even shorter, but today was an off day(ripen, avocadoes, ripen!).

I think that satisfies my “fueling” obligation for the week. Don’t forget to guess among my sea of lies! I’ll tell the truth tomorrow morning 🙂 But I’m loving the guesses, haha. And now, in honor of proper fueling, plenty of dishes are crossing my mind, not the least of which is this winner from breakfast 😉

The Downside To Christmas

For Catholics, the time has come to pay up. Remember getting goodies from under the tree almost 2 full months ago? Yes, that last part depresses me, too. I feel like the Christmas season of family time, holidays from work, and gift giving are far enough back to be “gone” but way too far off to be considered “coming up”. Any, now we’ve came to “the downside of Christmas” otherwise known as lent. On the one hand, you have the feeling of I can eat cookies and cake and candies so long as they’re all shaped like a tree or an ornament. And now we’ve come to Lent where, not only should we work off those cookies and cakes, but we should give something up, too. Well that’s just a kick in the shins. I thought about it long and hard, and the answer became clear soon enough…

Just kidding! But really…

Preflavored soy! It took a lot of thinking to come to this one, but I feel really good about it all around. Even though one of my money-saving tips is always buying the “raw” material, I have to admit I go against that from time to time. Especially with soy, it’s so easy to pick up a log of “meat”, a veggie burger, or marinated tempeh. My fave fave favorites have been fakin’ bacon tempeh, Lightlife’s buffalo wings and soy sausage, and a whole tofurkey loaf at Thanksgiving! And on days that I have no time, these have been quite useful. But now I’m saying no to them for Lent. I’m a little wary that I might get home at 7pm one night and just start eating raw tempeh, but if that’s the case I’ll deal; and it’s only about a month, right? Anyway, on to the eats.

I hate to tease with these amazing coconut cups before I’ve put up a recipe page but… I will. Oh my God are they good. And they have a name! Vegan sweet cherry coconut cups. I’ll clue you in that the inside is a blend of cherry butter, unsweetened coconut, coconut oil, and agave nectar–yum! It was perfect with some yogurt for protein while flipping back and forth between Idol and the Olympics. Last night, I wasn’t a huge fan of either, though, honestly. Idol’s kind of at that boring stage where no one’s bad but no one’s great, and men’s figure skating just isn’t my sport to watch. A little bored, I made a not-so-boring bowl of oats.

I was thinking for some reason this might look more “American” than it did: orange, white and blue. I guess I’m supporting Holland these Olympics? Haha, those uniforms are styling. Not styling were. Shredded coconut, even unsweetened, is definitely growing on me as a dry and fiberous fat. And Bob’s Red Mill‘s dried blueberries are sooo delicious! They reminded me of wild Maine blueberry pie. I stayed up long enough to see the Canadian skater and then hit the hay; I felt bad that he didn’t do “perfect”, but he still did well and especially for still being a teenager! And I thought I had pressure on me…

10 Miles In 88:14

This morning, I had 10 miles planned again–yikes! I woke up feeling good, but I just couldn’t tell how good. I got to the gym and started running. After a while I wanted to get off, more from boredom than anything else. For a long time, I debated stopping at 8 miles. And then I looked down and realized I had gone through 9 1/2. 1/2 a mile more? Yeah, I could do that. And it was faster than Monday’s pace! That’s the part that made me happy.

Back at the dorm and I felt like a mad man trying to refuel! First I took a superfast shower. It’s a good thing I was so quick because someone was waiting behind me. Then I started tearing at things trying to figure out what’s for breakfast. I’m very noisy making breakfast; it’s something that annoys even me. But I have oatmeal flying here and there and a microwave beeping at me and dealing with underbed storage–it’s kind of a mess. Needless to say, these raw balls from Superfood Snacks worked their way in there.

I think you’re supposed to fast on Ash Wednesday? Whoops. Well, I really needed to eatsomething a lot. And, yes, I’ve already eaten fake meat, but I’ll justify it in a bit. I was dying for chocolate avocado pudding since I didn’t have any yesterday. It tasted sooo good; absence really does make the heart grow fonder. The green chocolate dream balls were… “interesting”. I don’t mean that to sound like how your high school art teacher described your painting; after all, I did give them an 8/10 in my review. They just needed a touch of fat to taste richer. I am glad to have gotten so many green in at breakfast, though.

Pumpkin Oatmeal With White Chocolate Wonderful And Tempeh Bacon

This is not an Erkel “Did I do thaaat?” moment. I decided I was giving up prepared meat for lent last night at around 10:30pm, still havings 4 strips of tempeh bacon in the fridge. It is not the point of Lent, in my mind,  to be wasteful; I’m pretty sure even the opposite is true. So I used 2 strips at breakfast and will work in the other 2 at some point just to “use them up”. After that, any tempeh bacon I want I’ll have to cure myself–simple enough.

And so that is my kick-off to Lent. I still need to figure out how/when/if I’ll be able to get ashes today. And I have 3 1/2 straight hours of class now that history discussions are running. Whoopdie doo. Here’s a contest for some booty(of the pirate kind). Happy hump day!

Catch Up, Run, Devour!

Things I need to do more often: Relax! But that’s not happening now, so let’s get into it.

Tips To Save

I’ve been wanting to bring this one up for a while. I get asked a lot “How do you save money on groceries?”. My answer is that there are tons of ways! You just need to tap into them!

Proteins

1. Buy off-brand and do it yourself! These are two biggies anyone can do. If you trust a store brand, it’ll often be cheaper than the name ones. I buy a lot of Trader Joe products, which are almost a dollar off their competitors at normal price. I also try to buy the raw ingredients rather than premade/seasoned, which are always more expensive. And the best thing you can do is simply cook for yourself! You’ll save a lot more if you buy proteins and cook them than if you order them out.

If you’re asking yourself “what’s he going to do with a pound of beef in a dorm room?” I’m thinking the same question :-/

Yogurts

Yes, I do acknowledge my yogurt obsession, but this brings up 2 more tips.

2. Follow your favorite brands on Twitter. It sounds weird, but by doing this I won 12 Chobani in one of their contests, and you could too! It’s a great way to connect with your favorite brands. I tweet @So_Delicious all the time, and while it hasn’t won me anything so far, it’s really fun!

3. Store sales and coupons! I’m sure we all had mothers who sat at the table clipping coupons and reading circulars until the cows came home, right? Well, turns out she had a point! If you check, you’re favorite foods(like Oikos) just might be cheaper this week. And if you pair a $1 Oikos sale with a $1 off Oikos coupon from the circulars, that’s a freebie right there!

Groceries

4. Fan Your Favorite Companies. Similar to tweeting, email and Facebook are two great ways to stay up to date with your favorite company, and they often help you right back! In this picture, I managed a free bag of Popchips because I get their e-newsletters, and 2 free Nature’s Path products because I won a fan contest on Facebook by being their friend. It does pay to be friendly!

I also seriously felt like I needed protein, since I had so little all day. I added an Oikos in to put my mind at ease. Does anyone else make the oats in a bowl, and then add them to the jar? I just don’t really trust microwaving that plastic for 2 minutes. Also, for good measure, there was Trader Joe’s chocolate chips involved. There always are 🙂

Last night I could not sleep for the life of me. I think the attendant at McDonalds gave me real coffee instead of decaf at 6pm, which threw me off for the night! I tried to get sleepy; I shut down everything but the TV at 10. But then 11 rolled around, and I was up. And then 11:30. Finally, I had a snack.

I’m not saying something as carby as this bar is good at 11:30 when you can’t sleep. But it did hit a certain spot, and was free because of the Nature’s Path Facebook coupon, so left me with good conscious. The flavor reminded me of anything and everything toted as “frosted” from my childhood. And I was a little disappointed that even the seeds weren’t hard anymore but rather chewy. Anyway, I don’t think I actually fell asleep until after 12:30, which definitely P.ed me O, if only because there’s so much I could have done with that amount of time, and I knew I had a long run in the morning.

10 Miles in 89:51

I’ll start with what matters: I did it! Woohoo! The first time I hit 10 miles on the treadmill I remember needing a movie to keep me going. Well, this time I had The Today Show. I tried to get their early to dominate the TV’s but most of the ‘mills were taken by 7am! Let the competition begin. I felt a little lagging half way through, but then a gym friend showed up, and we talked about the opening ceremonies and not being able to be awake for the whole thing, haha. The time was a little slower than I’d like–a 9:00min/mile pace. But hopefully I’ll get speedier once I get more used to these distances.

It’s also been a rather slow(but busy!) morning; I took 60 minutes between getting of the treadmill to do everything I had to do before sitting down to a breakfast. Time gap much? I pulled out these new seeds for some optimum nutrition and worked them in to some favorite foods.

Clearly, when I get on a theme, I get on it. I had a somewhat obligatory bowl of oatmeal with pepita sun butter from Naturally Nutty. Since that has pumpkin, flax, and hemp, naturally my yogurt should follow suit, right? It was a glorious reunion with soy yogurt after a week of being out of it! It was nice and sweet, which gave good contrast for the pumpkin seeds and hulled hemp. I guess overall it was a pretty seedy breakfast 😉

Back On Track

I tried this last week and liked where it got me! But then some things took a downturn over the weekend, so here’s to me getting back on track.

1. Meal plans. In short, I need to make them. They may not be necessary, but they make life so much simpler, especially on work days, so why not? Any ideas for all that beef? I have a few, but I’d love to hear what you can come up with!

2. Planned Runs. Last week I hit my running goals spot on, and I hope the same for this week! Mon: 10. Tues: 5. Wed: 10. Thu: 7. Fri: 8. Those are the goals, at least.

3. Protein & Fat. I feel like I was doing so well at incorporating more protein and fat and then–what happened? Over the weekend was beans and chips and oatmeal–oh my! Hopefully, this one will come naturally if I stick to number 1 and number 4…

4. Eat Nutrition! I don’t mean to demonize carbs, I really don’t. But the fact is that heavy carb items–sugar, oatmeal, starchy vegetables–are also usually not as nutrient dense as light vegetables, seeds, nuts, and proteins. I was not a fan of Thrive by Brendan Brazier, but one point that stuck out to me was that he went from eating 8000 calories of starchy, white foods a day to 2000 of nutrient-rich ones and became 10 times better in what he does.

5. Work First, Internet Later. This is more of a one-day goal, specifically today! I have a HUGE to-do list before the week starts up, and anything beyond my inbox just does not need to be addressed soon I figure. So for now, it’s work work work!

A Little Clunky But Not Wholly Displeasurable

2) That’s a pretty good description of coming home for the weekend, too. I definitely forgot how much I loathe packing. But, I managed to keep it very simple with 1 bag and only 2 peanut butters(plus my backpack and some dirty laundry). Annoying? Yes. But not as wholly displeasurable as having to completely move out and then back in over break.

Like I mentioned, our first stop was Chocolate Fest! There was tons of samples throughout the stores of different chocolate creations. First, I scoped it all out. Then I decided that some of it was skippable(I mean, I can cover a banana in melted chocolate, too :-|). Finally, I dove in 😀

The braised beef–was absolutely fantastic! It might have been my favorite of the night. It might just be my inner carnivore saying that. But I really loved it because first you got the really fatty meat flavor that just fell apart in your mouth, and then you got a kick of cherry at the end. The raw truffle was really good, too. I could totally make this at home, though(and I snatched the recipe to do so). The chili was another winner; I told you I was a carnivore 😀 The salmon, on the other hand, was really bad. What were they thinking if they tasted it? I thought it had potential because white chocolate and chickpeas are a fantastic combo, but apparently that need not apply here. And, for dessert, some Sweet Scoops frozen yogurt. I’ve actually been thinking of buying that flavor for a while, and it was really good. I don’t know, though, if it’s worth the price compared to Elan’s Decaf Cappuccino frozen yogurt(which also is decaffeinated and so better for night time snacking).

That actually wasn’t that much, so when we actually got home after an hour I was hungry… for the supper not waiting for me 😦 I decided to just throw something a little cooky together that’d be veggie-tastic and filling.

This dinner was a bit clunky but not wholly displeasurable. Actually, it was pretty tasty 😀 I don’t think I’ve had brussels in 2 weeks! What a shame. They really soaked up the butter. On top of my pudding, I added some Navitas Naturals Goji Berries and coconut oil; I loved the goji berries here for a good dose of antioxidants! The coconut oil tasted a little out of place, oddly :-/ I think coconut butter would be better here(butter is always better 😉 But that’s another story). Speaking of Gojis, I had a sweet surprise waiting for me…

Goji Gourmet Cookies

How yummy does that all look? Among a few packages I got was this one which I won from totalfitgirl’s contest(ironic, I know, but there weren’t any gender rules for entering as far as I know :-)). I’m pretty sure it was only for the chocolate cherry cookies, and the rest of this was thrown in by my friends at Goji Gourmet. Thank you! Now I’m stocked well with one of my superfoods.

Was it just me, or was Grey’s not so good last night? Should I have gone with The Office and 30 Rock? That’s quite possible. A few more things made coming home a little clunky. A) I had noo toothbrush. Whoops. B) I had no alarm clock and freaked out until I dug out a really old one. I then decided that I wouldn’t even set it and let myself sleep in. C) I found out that one item I specifically came home for might very well actually be in my safe at school. Ugh. After most of that was resolved, I was happy for oats.

Cornbread, because I could. In the batch went 1 egg white(sorry, yolk, but I didn’t need you right then :-(), 1/4 teaspoon xanthan gum and 1/2 a teaspoon aluminum free baking powder. This came out perfectly corny.

Like I said, I didn’t set my alarm this morning and slept in a full hour. A full glorious hour. You need to take advantage of things like no drunk people in the hallway and nothing to do once you’re actually up 🙂 A few more things that made my trip not wholly displeasurable:

Food! More specifically Trader Joe goodies my mom grabbed on her way home just for me(like anyone else here would be picking out tofu or know which one to get) 🙂 You can bet that I already have some tofu pressing for lunch as we speak(and using the oatbran as a weight! Haha). Beyond that, I also used the oatbran in breakfast.

Plain Oikos With Vanilla Stevia

A bit cheesy, but not wholly displeasurable. No wait–wholly pleasurable because it’s a bit cheesy. That’s how I would describe the pumpkin/nutritional yeast/smart balance combo. There’s something so “homey” about it. AND now I’m about 1 bowl away from OAIJ!! It’s shaping up to be a splendid trip home.

Language Lesson: This is directed to no one in particular; this is just something I thought of as I was making my breakfast and want to address now. If you are buying your Greek yogurt and buy more than 1 container of Oikos, please do not say that you picked up some “oikoses”. That is just wrong. Oikos is a Greek word meaning house. It is the nominative, singular form. For plural, you’ll want to say you picked up some “Oikoi”. Sounds a little funny? Welcome to Greek. If you all want to be super overachievers, do 1 better by saying “Oikous”. That’s the correct form when it’s the object of a verb. But, I’d totally be happy if I ever just heard Oikoi, too 😀

Finding Groceries And Motivation.

I love it when title just right themselves. It saves me from trying to be witty and failing. This one totally applies to my past 16 hours. Right after blogging last night, we made a midnight(err, 7:30pm) Whole Foods trip. It was simpler to do this with our schedules these days and we needed meals for the next few nights. We went to the Framingham Whole Foods and now I have to wonder: How long has it been since I’ve been there? Because there was a lot of new finds. First we stopped at Stop And Shop to get more pumpkin, and 2 things caught my eye.

Stop And Shop now sells TRUwhip and for cheap! Unfortunately, the holidays are over but if you have any excuse to buy some, do! It’s so good and keeps in your freezer. And apparently I’m in for a “shocking death” sometime this week. If I write a really nasty and angry blog post around 2:05 tomorrow, assume I wasn’t happy with who died 😦 Then we went to Whole Foods where I basically ran around like a chicken without a head. They always ay go grocery shopping Wednesday nights and it’s so true! There was no one there(except me, of course). And I just wanted to get things and get out so I could go to bed. But look at all the new products I found!

The new Oikoi(Oikos in plural in Greek) are out! Like I said, I don’t know why these are so exciting to me since I could theoretically put chocolate and caramel over a plain Oikos, but for some reason they are(I didn’t end up buying one though). And the new Clif bars are here, too! Even though they weren’t on sale, I couldn’t resist picking one out “just to try”. I went with the cookie dough Luna because I love me some cookie dough. We saved so much on coupons and sales, it was ridiculous! The cashier actually commented and wanted to know how we were doing it 😉 All you need to do is cut from the Whole Deal flier and wait for the sales to match. There was one thing I payed for myself not on sale or with a coupon.

I’ve been having a major fudge craving. I was thinking about making my own vegan version, but after realizing all the powdered sugar I’d need, it seemed so much simpler to pay someone else to make it for me. This should be delicious. If I did make a vegan version, I would use this:

Soy Free Earth Balance

The kind people at Earth Balance sent me some coupons to try their version of an all-natural vegan butter spread, and with my first coupon I picked out this one which I’ve seen on Heather’s blog a lot. A solid fat has a lot of advantages in cooking and baking that liquid doesn’t so this should be fun to play with. And it has no cholesterol because it’s vegan–score.

Steaz Soda And Organic Whole Wheat Pasta

I think my dad was more giddy about the savings we got than I was. The pasta is normall $3 a pound, but they were on sale for $2 and Whole Foods had a $1 coupon off two, so we got BOTH for $3. And the Steaz is normally around $4.49 for a 4-pack, but are on sale for $2.66 this week, and there’s a buy 1 get 1 in the Whole Deal. So instead of $9 for both, we got both for $2.66. That is some savings! We also got regular stuff like chicken and beef for dinners(both on sale). After everything was put away, I had a new chocolate to sample and review.

Vivani Organic Dark Chocolate With Lemon

Vivani sent me some of their products to try and review and lemon was just what I was craving. They’re a European country that makes their chocolate with only 3 or 4 ingredients and no soy lecithin. If you’ve never looked, that’s a common emulsifier in American chocolate, so this is more friendly to people who are allergic to or intolerant of soy. This flavor was really good; the lemon wasn’t super loud like I was hoping, but then again no one would want to bite into chocolate and feel like they’re sucking on a lemon. I loved the flavor of the 70% dark chocolate which makes me excited to try that one soon.

Pumpkin Oatmeal With Mighty Maple

A little later I needed something nutty and melty so I made this with a new can of pumpkin. Yum! It hit the spot. After watching Hugh Jackman on Jay Leno I tried to get to bed, but no dice. Ever have it when you’re just so ready to start the next day you can shut off your mind to end this one? That’s how I felt like last night. And the fact that I almost napped during Gettysburg didn’t help. After 40 minutes of turning I decided hot food would help.

Tempeh With Quick BBQ Sauce

Who craves tempeh at 11:40? Apparently, I do. It was so good with a little BBQ sauce(ketchup, liquid smoke, and mustard). I turned on Conan and fell asleep to that, and amazingly wasn’t to tired when I woke up at 7:30. Now for the motivation part: Yesterday, I was completely lazy all day and did nothing. There’s nothing wrong with that, and in fact I think it made me more excited to get things done today and how! I wrote a to-do list before I went to bed detailing as much as I could. First up was my workout; I decided to do my core followed by 200 flights. After the muscle-building power moves of the core, I reached for a snack to eat for the cardio of the stairs.

Ho-Ly-Crap. This bar was amazing! It was so good, I had to give it a 10/10. The flavor for once was a perfect rendition of cookie dough. And the nutrition was just what I like during a workout: some sugars, a good deal of whole proteins, minerals to be absorbed, and sodium for replenishing. Really, I couldn’t stop thinking about this for the hour I was climbing(that and pumping along to embarrassing songs like Cowboy Casanova and Hey, Soul Sister). What I also loved was it was the perfect size to let me cool down and shower before making breakfast without feeling in a rush. That way, when I had breakfast, it was just how I wanted it to be.

Sometimes there’s nothing better than simple yogurt topped with simple jam–fruity and delicious. I meant to make banana goodness bread oats which would have involved vanilla powder and vanilla stevia but I forgot(whoops) and instead it was simple banana and cinnamon. That was good, but not as flavorful. On top I mixed together Artisana raw walnut butter with maple butter from New Hampshire for some nutty sweetness.

See? There really is a list, for today anyway. I love how my day is broken up: Workout, Shower, Breakfast, Lunch, Baking, Dinner, Dessert. That pretty much sums me up 🙂 And I’m doing so good! Right now I’ve done everything I was supposed to, except having banana oatmeal instead of pumpkin. Well, we can’t all be perfect, right 😉

It’s A Wonderful Day

I need to make this snappy; It’s A Wonderful Life is on in less than an hour!(I get excited over this movie)

But first, a shout out to a new peanut butterrific blog, We’re Totally Nuts! You may remember I reviewed a few of their peanut butters here a while back. Can’t wait to see what recipes they come up with!

Well now I hate to start this post today this way but there was no peanut butter at breakfast today. Instead, I thought I’d try out walnut butter!  It took 3 spreads to make these oats.

This felt like a Sunday morning breakfast… even though it’s Saturday. I was none too crazy about this walnut butter at first but it definitely grew on me. Once I sample and review all of Artisana’s flavors, I might have to go out and buy myself this one. Although really I loved the maple butter the most(though who wouldn’t?). The yogurt was super good; for anyone new to or worried about stevia’s flavor, adding a little sugar really helps neutralize it(all the better when it’s wanilla bean infused sugar from Whole Foods’ bulk bins!).

Not going to lie, I also had this in the a.m. But it’s OK because I was out of my PJ’s… for most of it. I ended up doing something I’ve been meaning to for a while.

1 Cup Organic Shredded Coconut, 1/4 Cup Powdered Sugar, 1 Tablespoon Earth Balance Butter

Ever notice how they don’t sell organic sweetened coconut? Well, they don’t; it’s like you can have something unhealthy but organic. Umm, hello? They’ve been making organic chocolate for forever. Oh well. I sweetened some myself this way; it didn’t knock my socks off(mostly because I’m not an intense coconut lover) but it’s way better than regular. I’ll think of some way to use it up. I also made some cookies.

365 Peanut Butter

Flourless peanut butter cookies, to be exact. Would you believe I haven’t made these ever? No excuse; I just hadn’t. I used this peanut butter because all my other ones are in my dorm. No need for a recipe page, because I used the oldest recipe in the book: 1 cup peanut butter, 3/4 cup sugar, 1 egg, vanilla extract, baking soda. I substituted 1/2 cup of sugar for NuNaturals baking blend to up the fiber and down the sugar. After these came out I made myself a random but delicious lunch.

Flourless Peanut Butter Cookie

I said it’d be random. The veggies were drenched with soyaki–perfect. I was worried how the mustard would be on lightly sweetened plain yogurt but it went just fine because it’s a pretty sweet mustard to begin with. This cookie was also really really good. I didn’t expect them to puff up so nice but it was like a big, crumbly spoonful of peanut butter.

Afterwards I picked out a topic for my 3rd paper; gotta keep working! And then remembered that my parents were going to a neighborhood party for dinner and I needed something for myself. Long story short, we ended up at Job Lot, which has nothing in terms of proteins but some really awesome foodie finds!

The peanut butter was only 2.50 and the agave nectar 3 dollars–incredible. They also had blueberry and maple flavored. We also got some protein(salmon) from Hannafords. When I got home, I couldn’t resist.

Seriously heaven–all 3 of us agree(but I didn’t tell anyone else it has stevia in it because they might become afraid). I decided to put in my Gettysburg movie and start that even though I knew I wouldn’t get half way through. And I made a movie snack.

Oh my God, this stuff is like pure raspberry candy. Seriously awesome. I’m going to stalk Job Lot while I’m home for break. The movie was really good but I only got through 40 minutes until I had to think about dinner.

And by “think about dinner” I mean eat an apple and tell other people what I’d like them to cook me for dinner; isn’t that what being home is all about? To be fair, I did make the popcorn.

And burn the first bag. Way to go, Evan. Not so much fun when they cost almost a dollar each(I opt for Newman’s because I’m crazy like that). All in all, though, dinner was good.

I think if you’re willing to eat rice with a little butter and salt with salmon, you should be willing to have popcorn. Plus, it’s a whole grain, so it’s like brown rice–awesomeness. Roasted vegetables are definitely one of the joys of being home(along with baking). By the time I finish this post, I’ll also probably have finished this.

Eat Food. A Lot. Mostly Fiber.

Today all the running I’ve done has been up and down grocery aisles and boy has it worked up an appetite! I’m pretty sure I’ll be half way through a field a broccoli by the time I finish this post. Anyway, this morning I was a bit surprised when I woke up and realized I slept 10 hours. Yikes, talk about oversleeping. I guess I must have needed up but when I oversleep that much I just feel blah the rest of the day. From now on, my aim will be 8 always–never more than 9 or less than 7. I think that’s a good goal ti keep in mind.

For breakfast I thought I’d try out a new product.

Al Fresco Wild Blueberry Chicken Sausages

Katie from Al Fresco sent me an amazing array of their sausages to review. They use all natural ingredients with vegetarian fed chickens and believe it’s not the quantity but quality of their meat. How perfect is that for me?! Best of all, their products are fully cooked so you just have to heat and serve(aka, I can make these in my dorm pretty darn easily). These breakfast ones really stood out, so I seared them in a pan for 6 minutes or so to brown.

Well, maybe not everything should be put in oatmeal. But that aside I looooved the flavor of these. The hint of maple syrup baked inside really made them. That being said, not everything goes in oatmeal–lesson learned. I really wanted to get out and run at 11 but the weather was cold, forecast grim, and time wasn’t on my side. Instead there was a change of plans and it was time to dive right in to chores. There was the other type of fuel…

…And then we were off to Trader Joe’s and Whole Foods. Taking the backroads let me see all the barns and stables around here in the winter time and they looked amazing. I think I have a new goal in life to buy and live in one of those. I’d hate to have to take care of them, and I’m sure they’d be some crazy money to heat, but dreams are meant to be unrealistic, right? At Whole Foods there might have been additional coffee while checking out all the sales and coupons. At Trader Joe’s I had a ton of fun picking up treats for my blogger secret santa 🙂 I know they’ll love them. I also might have snuck a few goodies for myself.

Well, whole wheat mac n’ cheese isn’t “fun” but I got it for 66 cents on sale with a coupon. Isn’t that a bargain? Those cranberry oatmeal white chocolate dunkers were calling my name, as was the milk chocolate orange. I love those other ones but they unfortunately have some artificial flavorings–Trader Joe to the rescue! I also picked up a new toy:

And when I say “toy” what I really mean is sauce. I was pretty hungry by the time we got back so I just got to work. I cooked in a pan some tofu and red peppers with the sauce while microwaving some broccoli for efficiancy. All in all, it was a TJed meal.

Delicious! The thai sauce was a good level of spice, and the soyaki added a nice touch of salt and sweetness. Tofu is so much better when you have tools other than a microwave to cook it with. I should try baking some while I’m home. I was still a little hungry so I had a fiberous dessert.

And then I was good to go. Right after lunch we headed out to for a last minute hair cut, and then to Hannafords for yet more secret santa goodies and some more to eat. Again, getting home I was starving even though I just ate not 2 hours earlier, so I went for yet more fiber and more protein.

And that’s what I’m currently being held over by, though for who knows how long. This was the first time I got the ground sausage and not some preformed meat. While I don’t think it would be useful in a dorm room, with all the equipment I have to cook it at home it’s a much better bargain and tasted just as good. The chili seasoning with maple syrup sounded out but tasted perfect. And now I’m off to bake some cookies for the fundraiser Ashley held! I’ll have to resist eating them myself and make sure they make it to the highest bidder 🙂
