Ordering Garden Grille’s vegan, gluten-free macaroni and cheese, I forgot a few important things: I don’t like macaroni all that much, and a meal without a good amount of fat and protein just do nothing for me. Sure, this was kind of tasty with the vegan cheese. But really I just wanted to gnaw my arm of 5 minutes afterwards because it felt like eating air. Cheesy, vegan air.

When I got home, I broke into our fridge and went straight for two things: fat and protein. First up was the (frozen) fat from So Delicious vanilla bean coconut milk ice cream. I swear, even if it’s just ice cream, it filled me up 10 times more than macaroni ever would. It’s also sooo much tastier, wouldn’t you think?

To make a chocolate nut butter, really you just need cocoa powder, sweetener, and some form of vanilla flavor. I made this with Madhava’s vanilla agave. It was good, but Justin could do better. Since no morning’s complete without fruit and chocolate, I broke a chocolate bar filled with dried blueberries and cranberries over my pomegranate Chobani; it has fruit, so it’s healthy, right?

Tonight I am attending an auction at my old high school. While I’m excited, I am a little wary going into it as my first event where I’ll be avoiding gluten. I’m hoping I’ll be able to just enjoy the night, but I’ll also have a pocket full of larabars or something just in case. And in my absence, I have a post prepared on how to shop and save at *drumroll*… Whole Foods! Yes, I do believe it’s possible, and I’ll tell you how.

The Earth Will Forgive Me

*I don’t think google reader has yet picked up this morning’s post at the time I’m writing this. I’m hoping this was just an individual problem, but if it persists I’ll look into it*

So, if I was supposed to “celebrate” the earth in some way today, the earth is going to have to forgive me. To be honest, I find a lot of the notions put forth about Earth Day a little silly. The whole thing is counterproductive: we build up so much about recycling and being green this 1 time a year that it’s as if to say we aren’t expected to do this all the time. We are.

3 things have really rubbed me the wrong way today

  • Having to go down to the bank this morning to cancel my current card and request a new one to be sent to me in 5-7 business days. Looks like I won’t be purchasing any peanut butter online in that time(but maybe that’s a good thing). Oh, at least while I was down there I bought a gingerade kombucha. No need for the day to totally suck, right?

  • Cookies/Bars that use banana as a binder. Don’t ask me why but I hate these and I’ve been seeing them everywhere recently. If you made them and have been eating them and love them, that’s all that matters. Personally, I’ve never had a baking success with a banana besides banana goodness bread, and even that relies on eggs.
  • The idea that eating vegetarian today at all has to do with “celebrating Earth Day”. I don’t know how to feel about this one other than like it’s a personal attack saying you can’t eat meat and also be green. You can. You can  also be a vegan who litters. Shocker. I happily and greenily ate my naturally-raised, grass-fed burger for lunch today.

(Not so) funny story. When I got to class, my friend Alex knocked this all over the floor :-/ I really didn’t have anything else to eat, so I just ate it anyway, hoping things were clean enough(most actually went onto her purse). Was that green? I don’t know. But at least it still tasted good. I tossed the sweet potatoes in EVOO after they grilled in my pan for added fat and flavor. Delicious. Since I wasn’t even all that hungry to begin with, this held me over well into the afternoon.

I whole-heartedly believe that the best way to be green is with our shopping cart and the foods we buy. That’s why so often I look for good companies like Alter Eco who not only make tasty chocolates but use fair-trade, organic ingredients. This particular flavor is not my favorite(I hate crunchies in my chocolate), but I’m still working on project clean out.

I also snacked on an organic apple. As I’ve said in posts before, I don’t always by local or organic produce, simply because it’s not affordable 100% of the time. If there’s a sale, or it’s a small cost extra or something, I’ll gladly buy organic, even choosing a pink lady over my beloved red delicious. I’ll eat pink to be green.

Dinner was something special tonight. I’m going home for the weekend for an event tomorrow night and then one Friday, so my dad came down to pick me up and start moving things home. On the way, he grabbed take out from Garden Grille that I placed. I tried a new dish: their vegan and gluten-free baked macaroni and cheese.

How did it taste? Honestly, I just uploaded the picture and need to start packing the car, so you’ll have to wait until tomorrow 😉

What’s something you do year round that’s green? Proceeds for my favorite chocolate bar by Endangered Species go towards rain forest preservation. I wonder how many trees the 6 I’ve bought in the past week have saved… But seriously, I do believe my greenest contribution takes place in the market, and I take pride in that. Today, in fact, I signed up for a program next Fall to get fresh produce from local farmers weekly through my college. If that ain’t green, neither is broccoli.

Perhaps more controversially, Do you see eating green and eating vegetarian as one in the same? I can picture an indirect connection being made between the two. But to directly relate one another is, I think, invalid.

Last night I was feeling like a chocolate snob and debating between which brand of orange dark chocolate to have; yes, I do that. In the end, I went with Newman’s Own Organic Orange Dark Chocolate not just because it’s organic but because it has a sweeter flavor from a higher sugar content. OK, enough chocolate talk. That prompted the tweet,

EvanFMFF: I want to go on an all-organic chocolate diet so that when I get fat from it I can say “yeah, but it’s organic fat”.

It was a joke (sort of :-D) but I loved the responses so much I had to share. Some bloggers wanted to join in; could I be more popular than the cookie diet? Other bloggers were their witty selves:

which reminded me of something I want to share from the Today Show: sewage waste is not only permitted, but used in non-organic produce fertilizing. Uhh, ew! I don’t always or even often eat organic produce but these are the kinds of things I’d rather not know because it makes me want to. And, lastly, some bloggers made a knowledgeable and poignant tweet:

That’s a good reminder that just because you shop at Whole Foods doesn’t mean you can’t go wrong, or at least be picking up things that are still “sometimes” treats rather than good-for-you diet staples.

This morning I slept in in hopes of a sunny outdoors run later on this morning; let’s see what the sun has to say about that. Instead of coffee, I thought I’d opt for mocha herbal teeccino instead so as to not dehydrate myself. It doesn’t really taste like coffee, but it’s nice beverage to have around if you need to feel April Fooled into drinking the real java. It’s better because it’s non-acidic. If it were the only type of coffee I kept around, I probably wouldn’t notice missing the “real” thing.

Ahh, pumpkin oats, my voluminous friend, where have you been these past few days? 🙂 There was some pumpkin oatmeal with honey maple protein peanut butter, but the real story was in the yogurt. I mixed a plain So Delicious coconut milk yogurt with 2 tablespoons Navitas Naturals‘ twister powder(cacao, maca, and hemp) and topped that with some Tropical Traditions coconut peanut butter. Coconutty? I think so. The peanut butter was a little stiff on the yogurt and might have been overkill, but at least it was tasty overkill.

Rick from Book Publishing Co. offered to send me a book for review and share my opinions on. Sweet Utopia by Sharon Valencik is a book devoted to vegan desserts; how perfect does that sound? Desserts are something I’ve always had trouble “veganizing” myself so I can’t wait to see what she has to teach me and how much I can take away. For the month of April and possibly May, I’ll be flipping through the book, picking up tips, and trying out recipes. In the end, I’ll give a comprehensive review and hopefully if I end up loving it I can suggest it to you all! Sound fun?

Dare I say, it doesn’t get better than the combination of Justin’s chocolate almond butter and fresh coconut milk. Simply words can not describe it. And I always worry about protein on Fridays during Lent; usually I can not give this a second thought and go with cravings, but on a day when I have to ignore any meat cravings it makes me focus a bit more. Since So Delicious coconut milk yogurt is creamy and dreamy, but not protein-rich, I added 2 tablespoons of Navitas Naturals‘ twister power powder, which is a 6g protein and antioxidant boost from hemp, maca, and cacao. If nothing else, this tasted good. It was just the right amount of chocolate sweetness with a clear hemp flavor and a bit of maltiness. A new favorite thing? We’ll have to see…

Mental Health Week Wrap-Up

I hope you’ve all enjoyed some stress relieving tips. If nothing else, they’ve helped me get through this midterm week, which I’m happy to report will be all done once I get my butt to the Classics department to turn in a hard copy of my paper 😀 Stress can be our biggest enemy or out biggest motivator; we just need to learn how to control it. Tonight, I’ll repost all the tips when it’s time for the giveaway!

Later last night ended up being full of contradictions and out-of-balance experiences. I think the jury is pretty much out on the contradiction of drinking decaf English breakfast tea when you can’t sleep on a Saturday night 😦 The Emmy’s Organic Mint Chip Macaroon? A perfect balance of mint and chocolate, and all deliciously raw 🙂 Oh, and me and college living and anything besides a nursing home are 100% out of balance. Call me a grandpa if you will but I do not want to hear “Tonight’s gonna be a good night” at 12:30. I want it to have been a good night and have gone to bed by 11. The fact that I was having insomnia on the 1 night a year we lose an hour’s time: What was up with that?

Waking up after a mish-moshy 6 hours of sleep, part of my body felt like running, and the other part wanted to laugh. Really? Guess which part one. I did reach a good balance between training and rest by taking a rest day yesterday, if you didn’t notice. Apparently, all it takes to keep me from running is 50mph winds, a museum tour, and more work than I know what to do with. That left my legs well rested for 11 miles in 1:36:46.

To balance out the boredom, I listened to a monster long playlist while watching a Tom & Jerry 90 minute movie on Cartoon Network(yes, they have one of those). This is a pair who really balances each other out, don’t you think? I couldn’t help but notice the contradiction in describing sounds in the closed captioning(presumably mostly for deaf viewers) with other sounds; if I were deaf, how would I have known that Tom & Jerry bouncing around sound like a pinball machine?

Breakfast is always my most mentally balancing meal of the day. What goes better together than honey and peanut butter in the Peanut Butter flavor of the Perfect Foods Bar? Or the flavors of cocoa butter and peanut butter in White Chocolate Wonderful, which truly is, as my European hopping hip blogger would say, wundebar! Or just the flavors of peanut butter and more peanut butter? I know PB&Co. would agree with me on that one.

What about you? Are you feeling balanced or a little contradictory this morning? Either can be good(and tasty) as I think I’ve shown. Or, any excited Sunday plans? It’s still raining 😦 But I have le familia scheduled to arrive soon now to taxi me to Bellingham to pick-up something I preordered I’m excited for, the ever-exclusive store Target for a new oats bowl(!!), and then the usual goodies and groceries with maybe a meal in between. Like Sugarland preaches, in life there ain’t no rhyme or reason, no complicated meaning, ain’t no need to overthink it, let go laughin’. Sometimes you just need to put unholy amounts of cherry butter and chocolate on top of your yogurt to make life a lil’ better 🙂 Ain’t no shame. I enjoyed this gourmet yogurt mess while watching Survivor; at this point, I’m just waiting while they knock out the suckers in the game and get to the real players.

Did you know it’s apparently legal to have “free time”? I did not. But I finally got around to reading the new Food Network magazine I got ages ago. Most of the recipes seem so complex I want to tear my hair out, but the articles are nice, and there was this killer recipe for avocado hummus snuck in a St. Patrick’s day article. Not so holy? Me singing out loud both parts of Lady Antebellum’s All We’d Ever Need. It got noisy.

I wrapped up the night with the same bowl of oatmeal I had at breakfast–no shame. If there was any confusion, what I put on this is Smart Balance Peanut Butter, their one sweetened with agave syrup. They have several products out that sound similar, but that’s the one I like. I also thought about how I ate completely vegan yesterday, save 4oz grass fed beef and 6oz greek yogurt. Not bad considering when you see a deer, you see Bambi. And I see antlers up on the wall. Brad and I have things in common.

This morning, I accidentally set my alarm for Tuesday/Thursday time. 6:15 on a day with no class? No thank you. I “slept in” until 7, then hit the gym with this bar in hand. I really didn’t have a set distance. 8? 10? 12?!

Yep. 12. I haven’t ran that far or felt that good since back in December. Was it the dried fruit in the bar? Was it the company of the other treadmillers? Was it The Today Show? Was it the copious amount of country music? No idea. But, like Miley says, Ain’t about how fast I get there. Ain’t about what’s waiting on the other side. It’s the climb.

Found Money

On the walk back to my dorm alone I found 27 cents! Sweet deal; that’s about as much of a paycheck as I’ve seen lately. Since I’m a poor Country singer, hopping bar to bar for a paycheck, I thought about how much beer food this pays for. I was pleasantly surprised to realize this matched the cost of 3 bowls of organic oatmeal. It’s like getting paid to eat…

Keeping with the organicness of it all, I topped my oats with Naturally Nutty‘s not-yet released organic vanilla  cinnamon almond butter and organic coconut milk. The avocado I think was from an organic batch? To be honest, I mostly get organic when it benefits me in price, or is the same either way. 1 exception to that is always organic oats from the Whole Foods bulk bin and load up when they’re on sale for 99 cents a pound. I mix that in a 50/50 blend with Trader Joe’s oat bran and it’s a perfect bowl every time. I don’t think there’s a country music song about organic foods 😦 When do you “do organic”?

Coconut milk: How do you store it/for how long? I opened this can up on Saturday night and I’m thinking it’s getting a little back-of-the-barnyard funky even covered in the fridge. It reminds me a little too much of pina colada at this point like something(though I can’t wholly complain). Also, check out this asian dinner giveaway and an iherb shopping spree. My Quick-And-Dirty Dinner Exposed

In addendum to my last post, I want to add that I have no shame in admitting I went through today knowing it’s been far too long since I’ve made the time to shave, though I think that’s more socially acceptable with a man’s face than anything else. That aside, lunch featured 2 Trader Joe products I’d never bought before.

Even though I’ve had plenty of tempeh, I’ve never had Trader Joe’s. Unfortunately, I might not again after this one, either. Even though it’s so perfectly priced, it’s made with gluten forming grains 😦 My intolerance is so slight, I could eat a ton of bread and still feel fine; but then again, why not weed it out where it’s not necessary? I heated the sesame oil in a pan, and quickly cooked some tofu and tempeh. Towards the end, I added soy sauce and broccoli. It smelled just like teppanyaki!

For a final touch, I added a little cold sesame oil once it was out of the pan

Tip: Not sure how much oil to add at the end for a little flavor? Don’t pour haphazardly; use the cap of the bottle as a measuring device.

I packed this in a to-go container and met my friend, Adam, for lunch to reconnect after the long Winter break. The gist of it: Nothings really changed 🙂 We decided that, since I’m almost off the meal plan entirely, it’s easier to meet for lunches occasionally rather than at night. I think this semester is taking shape wonderfully.

After lunch I went back to my room, squeezed in some work, and then went to my 2 1/2 hour class. The entire first half of it was devoted to a librarian talking about how to use the internet for resources. That was about as exciting as it sounds like it was. I find it ironic whenever somebody in their fifties is telling my generation what to do with a computer. I was sooo happy for break, at which point I whipped out my snacks.

Like I Tweeted, I really didn’t want a “bar” exactly. Instead, I brought a yogurt and a Bora Bora bar which I won from Avery.

I suppose it was still a “bar”, but it felt a lot more like a trail mix with nuts and fruit being the first 3 ingredients and fat being half the calories.

I ate half like granola and half on its own. Either way, this was absolutely delicious! It really did taste nutty, spicy, and fruity, and not at all like a grainy “bar”, which I just could not have gotten through at this point. I wonder if they sell these at Whole Foods? To be honest, I’ve never looked.

Random Chandelier

I also never looked for a chandelier in a classroom, but this was right there in the classroom across the hall from mine. What exactly could they need that for? It’s in a tiny room with a front board and a lot of chairs. And is 110% out of place. Naturally Nutty Butter Toffee Peanut Butter

I think the 2 minutes after walking in the door after a long day, when everything you have yet to do(such as taking off your coat) start running through your mind, is the worst 2 minutes ever. After that, though, I brewed some coffee and got to work–Not nearly as much as I would like but c’est la vie. For dinner, I just did not feel like much, so I went for my “quick-and-dirty” meal.

Lightlife Soy Sausage With Cooked Onions And Organic American Cheese, Green Beans

Flavored soy products are my blessing! I could probably eat this meal 10 times and not have it get old. I mixed 3 servings Lightlife gimme lean sausage with 2 squares Trader Joe’s organic american cheddar and some green beans from the dining hall 2 nights ago–quick and simple. I absolutely love the Trader Joe’s cheese here; not only is it organic, but it’s so processed it needs to be called a “cheese product”. Sign me up! I eat up contradictions like that(clearly).

Coconut Oil Chocolate Bar

… to be a little obsessed with a food. Did anybody doubt that’s the road I’m going down with this coconut oil chocolate? I think it’s pretty much out there.

… to be a chocolate maker. I might as well be; last night I increased production by 250%! By which I mean, instead of making 1 bar, I made 2 bars and 1 “plop” to go on oatmeal or yogurt later. Besides, “plops” are just fun.

… to sleep past your alarm. Yikes! Maybe I got into my sleep too much, because I slept 25 minutes in. In my rush, I managed to get ready and out in 15 minutes, so I was only 10 minutes behind schedule.

… to be a gazelle glared down by a lioness in the African bush. A fellow gym goer got a little close and a little intense staring down my machine waiting for me to finish. She ended up grabbing another person’s, and I don’t even think she ran 1 mile. Part of me felt like saying “Listen, hun, I’ve got business going on here.” but didn’t.

… to go 8 miles again. Woot! It felt great, to be honest. I could see this being a daily distance again soon enough.

… to want to collapse after a run, again(in a good way, of course).

… to want to eat a meal again after you eat it the first time. Holy yum! This breakfast was delicious. The salty yogurt went so well with sweet strawberry conserve. And I loooved the contrast of butter toffee peanut butter with sweet cacao nibs. Don’t let these fool you; they were not sweet. They actually reminded me a bit of black olives, but chocolatey. They were delicious anyhow!

… to be 100% justified in how I live my life by science. Look at what it said in a recent Dole newsletter: “A very recent study by the Swiss (who else?) found that highly anxious individuals given 40 grams of dark chocolate (about the amount in a quarter cup of chocolate chips) every day for two weeks experienced a dramatic drop in their blood stress markers — bringing them into the range of those who reported little to no stress.”

… to roll around in clean laundry. Have I mentioned I find folding and putting away clean laundry relaxing? That is not then an invitation for you to give me your laundry to fold if you hate it, sorry 🙂

… to need a mid-morning pick-me up. Was this needed? Absolutely. I live on the 3rd floor. the kitchen and laundry room is in the basement. Plenty of flights of stairs today!

… to make regular use of the dorm kitchen. I’m soooo happy I made this resolution! I’ll admit: It scared me at first. But it hasn’t even been a full week and I know I’m going to be eating so much better in 2010!

… to be technologically hooked up. Does anybody else have one of these? They’re amazing. My friend, Alex(the same one I stayed with in Georgia over the Summer and met in NYC over Christmas), suggested I get one and he was so right; you can charge your ipod without plugging it in to your computer! How brilliant is that?!

… to eat green, right down to my condiments. Benito’s Hot Sauce sent me there original naranja flavor to sample and review. It’s made with organic ingredients from local farms just a stone’s throw away in Vermont.

… to need a side of fire extinguisher with your meal. I like things hot, and this was hot! But oh so good. The sauce obviously packed a lot of flavor from habaneros and really gave the tofu a punch. The chips, too, had a nice kick. Surprisingly, my new Trader Joe’s salsa seemed a bit tame? Maybe it was just in comparison that it lacked.

… to watch a show (off and on) for 7 years now. How old am I? Days of Our Lives, don’t ever leave me.

Family Size Buffalo Bleu Krinkle Cut Kettle Chips

… to buy bulk-sized items for one person. If you’ve Buffalo Bleu Kettle Chips before, you’d know why family size was 110% necessary.

… to start doing homework and think “I really should have started this last Friday”.

… to be all out of ripe avocadoes. These are all so green! But not in the good way…

… to smuggle out two large containers of food and a banana from the dining hall. OK, technically this is allowed so I wasn’t really “smuggling”. Then again, I don’t think they expect you to be taking all vegetables, and enough to last for the next 2-3 days.

Next Generation Raw & Probiotic Colby Cheese

… to hold in my hands perhaps the most foodie-rific cheese ever. Raw and probiotically enriched? That is some serious enzymes. I have to give a big thanks to Next Generation Dairy for sending me their cheese and cheese strings to review. Not only do they benefit from being made with unpasteurized milk, but they’re fortified with good bacteria, as well.

… to hear a cat being strangled. That’s not fair; there was someone practicing their tuba in the kitchen while I was making dinner, and he was probably a lot better than that and just warming up. Still–if he plays like that in concert, God’s speed.

… to be a cheese nibbler. I’ve never quite understood why people always go straight for the cheese at parties or sometimes big chunks will “mysteriously disappear” from the fridge? I think I’m starting to get it. This colby was pretty fantastic. And it was good for me? Don’t tell me that. The 8oz block won’t last the week.

… to be one of those “poor starving college students living off eggs for cheap protein”. Except soooo not. I don’t think those college students use cage-free Eggland’s Best eggs. Or cook them quite as good as me 😉

Get Those Oats On A Scale!

Morning! I feel like everybody was working for the weekend this week, so if you were, it’s finally here! I hope you kicked it off well. The start to mine was a little bland admittedly; I read this book for my object history course: Stuff. It’s all about the big efforts that go in to making something as simple as a french fry or soda can. I try to live as green as possible and it had me feeling like a total tax on the environment. Yikes! At least the closing thoughts were “Focus on what you can and do do and not on the things that are so much bigger than you”. That, I can do. Meanwhile, I tried to make a greenish snack.

This was a fun snack, especially since I’ve started thinking of these dried raspberries as “nature’s Swedish fish”. And some of the brownie was organic, so I wasn’t killing too much earth. But it wasn’t doing it for me, so I got a little creative.

These were 10 times more creative and tastier. You could probably make the brownies by substituting other dried fruits for half of the dates. Some Latin homework also got done(much lighter than Stuff surprisingly) as I realized Friday night television has gone to hell; didn’t there used to be great shows on then like 1 vs. 100? What happened to those? Later on, I got hungry, which leads to a confession…

Rapunzel's Organic Hazelnut Butter

I’ve made my opinion on Nutella very clear. And Justin’s chocolate hazelnut butter is an excellent hazelnut butter. But–let’s face it–when you’re craving Nutella you actually want milk chocolate and not hazelnut. So I do have a milk chocolate spread on hand, which looks about as bad as Nutella.

It still is more of a “Palm Oil Butter” than a “hazelnut Butter”–don’t know how I feel about that. But, on the bright side, it has 1/2 the sugar of Nutella so I can eat twice as much and is organic.

Oh. And did I mention it’s downright delicious? That, too. Right after having my dose of palm oil from the butter, I got a nasty craving for some coconut oil(very different, the two). Thankfully, I now keep a bar of coconut oil chocolate already made waiting in the fridge for just an occasion.

Since it was right before bed I kept it to half. This one I made with raspberry flavored agave syrup, but to be honest the flavor wasn’t that much different, which was a little surprising. Raspberries and chocolate go so well together; I don’t understand how chocolate covered strawberries are the more popular dessert. Maybe it’s because they’re larger and you get more chocolate?

Pondering that thought, I slept 9 1/2 hours and oh boy do I feel rested. I actually woke up at 6:45 naturally but the gym doesn’t even open until 9 so I forced myself back to sleep for a few hours. I wanted to get to the gym when it opened, but after waking up it made more sense to eat breakfast, workout, then have lunch rather than have breakfast at some ungodly time(and I just can’t skip breakfast. It’s my favorite meal of the day).

This was all pretty much dessert for breakfast–it tasted that good. But I’m hoping the simple sugars will be better pre-workout than anything else. And it was all organic! Except for the oatbran in my oatmeal, but it’s all about focusing on what you do do.

In making this, my kitchen scale’s batteries started to die. It wouldn’t even turn on for a while! I would be so lost without this thing; I don’t even own measuring cups for my oats or water because I have the scale to be more perfect. When I got it working again, I just threw them on as fast as I could! Everything worked out, but I definitely need to buy more batteries at CVS. And, to top it all off, those oats I was throwing on I’m running out of. And yet, walking 1+ mile to Whole Foods in sub-freezing temperatures does not sound fun. Screw saving the environment–I need a ride!

The Seeds Make It Crunchy

Well I completely caved on that whole “rest day” thing after breakfast. I think all I needed was a little fuel in the tummy for some energy because I was raring to go right afterwards. I did my core(which you can just search and find for in some older posts if you’re interested) and 200 flights. I must say, highlights include(and are pretty much limited to) the “dance” action I was doing to Tik-Tok and contorting my neck to try to see what the mailperson was bringing through a window. Good news: It was a package from Crofter’s Organic! Bad news:

Broken Asia Superfood Spread

Not everything survived 😦 When I reached in and felt something gooey, I knew that couldn’t be good. Thankfully, I had some senses and realized to feel around too much and cut myself. The other 3 superfruit flavors arrived in good condition and I look forward to reviewing them. And lucky me won some of these jams from another giveaway so hopefully those will all arrive in one piece and I can review Asia, too 🙂

Hickory Honey Barbeque Baked Kettle Chips

These weren’t from the company or anything; these are just chips I like a lot and have featured quite a bit, so I thought I’d write up my love for them here. Of course, they made an appearance at lunch…

Lemon Brussels Sprouts, Lightlife Beef In Tomato Sauce, Hickory Honey Barbeque Chips

With some more “healthy” stuff. Boo 😛 I squirted some lemon on the brussels sprouts just to give them a little kick of flavor, and added dehydrated onion to the beef and sauce just to make my breath smell awful. This didn’t really taste like “beef” but it was decent enough for a protein; I think it would have been a lot better if I were using a real sauce I was into but alas that was just tomato sauce from a can. But really–what can’t you do with a can of tomato sauce? I needed it this afternoon to make up a vegan meatloaf.

I’ll admit I had little-to-no interest in cooking anything for dinner, and that my mind was on some juicy, red grass-fed beef from Tomasso’s. This was a far cry from red meat but I had mouths to feed and I figure what goes around comes around(so here’s crossing my fingers for that beef sometime soon :-)).

While I was cooking I was sipping on this flavor Steaz. It really needed a bit of a kick so I added some stevia to each tiny glass I poured. Things are just more fun when you pour them into other glasses; now why the hell didn’t I use a wine glass? Man, that would have been better in hindsight.

Since it was Friday, I decided to let my sweet-tooth run ramped. Instead of cookies, however, I was thinking of brownies. And instead of baking, I was thinking of keeping them raw 😀

Ingredients

After trying this brownie from The Raw Bakery, I wanted to try to make my own. To put a fun spin on things, I used raspberry agave syrup. I loooove raspberry jam in brownies and this was essentially the same thing. And it was all organic! Except the dates, which we’ve already established were cheap and yummy 🙂

Raw Vegan Brownies

Ingredients:

  • 1 cup (160 grams) dates
  • 5 tablespoons (105 grams) agave nectar
  • 1/2 cup cocoa powder
  • 1/4 cup flax seeds, ground

Make sure the flax seeds are ground. If they are not, add them to the food processor first and pulse a few times. Add the rest of the ingredients and mix until well blended, or about a minute. Scrape into a square container and refrigerate for 10 minutes or so until cutting into.

I made one mistake here, which I tried to make clear in my directions not to do just in case anybody tries these: I mixed the flax seeds in with the other ingredients whole. As a consequence, the batter got really thick before they had a chance to break up. Oh well. If you like “crunchy” brownies then these would have been perfect for you 🙂 I didn’t mind a little extra chew. For my afternoon snack, I made a tray of brownie and goat milk yogurt.

They don’t really hold together very well, either, but there flavor is superb! Maybe the just need a chance to sit out so some of the water from the syrup comes off. No lie, though, this was some of the tastiest chocolate I’ve had; I think the raspberry worked perfect with the dates for a fruitiness to it all. And it complimented the creamy, slightly fatty goat milk yogurt well. There’s something about raw food where I can eat less and feel more energized and more satisfied, even if all that is is pudding and brownies. Dinner, however, was not raw; dinner was actually cooked by 4 and then just reheated for supper time.

I really need to get to Dedham Whole Foods again to buy a pound of nutritional yeast; sprinkle that on a led pipe and it’d be delicious, I tell ya. This was not juicy red meat. But it was pretty good. There’s about 4 servings left and as we all know this is MUCH better after a few days of sitting so I’m pretty excited for some leftover action 😀 And now… I could use coffee(and chocolate). Maybe that Steaz has caffeine in it? Because I feel like I’m dragging. That’s the beauty of a single-cup coffee maker, my friends. Happy cookie Friday night!
