Hey, ya’ll! I feel like all I’ve done since this last post is eat and sleep. There was some reading in there, too! But, yes, this is a painfully early Saturday morning post before the day has to kick off in an hour. Besides, it’s not like I was eating boring things 😉

Purely Decadent Vanilla Bean Coconut Milk Ice Cream

I mentioned I picked up dessert yesterday afternoon while I was out. What I grabbed was another pint of Purely Decadent‘s vanilla bean coconut milk ice cream. This stuff is awesome! I love how you can see the real vanilla beans. It has a bit too much of a coconut flavor, but it’s so thick and creamy that that aspect of it doesn’t even matter anymore.

I mixed the last of my old pint, the start of my new pint, and about 10 Trader Joe’s mini-peanut butter cups. How perfect are these peanut butter cups to have around, Trader Joe’s fans? I just love them! They really took this from “ice cream” to “a sundae”. In fact, this was my 3rd Friday night in a row enjoying a sundae. A new tradition forming? I hope so, because it’s one I can get on board with.

Of course, I could have eaten about 10-20 more of those mini peanut butter cups before realizing what I’d have done, so instead I just grabbed a normal sized, organic peanut butter cup. I love my homemade ones, but these are so much simpler to keep around. The only problem was this was practically melted at room temperature! Go figure–it must be hot in here.

Pumpkin Oatmeal With Chocolate Peanut Butter

Later on I made a bowl of pumpkin oatmeal with Justin’s chocolate peanut butter. Typical–I know–but oh so delicious. I can’t wait till they hit East coast stores this month! As I was eating eating, I watched 20/20; is it sad that I just realized John Stossol doesn’t host that anymore? or is it sad that I miss John Stossol as the host? or is it sad that I’ve watched 20/20 long enough to know and care about who the host is? These are the things I ask myself…

Despite the horrendous sleep I got at the beginning of this week, it’s actually been so good as of late and I got almost 9 hours worth! If you can’t appreciate that, what can you appreciate? I would have kept snoozing, too, if I didn’t set my alarm. I wish I could have kept sleeping because my dream was hilarious: My relatives were over and my mom was making cupcakes with Bob’s Red Mill‘s gluten free vanilla mix but refused to use coconut oil, only would make them with butter, and they kept coming out burnt. Why do I dream these things? Alas, there weren’t any cupcakes at breakfast.

Pomegranate Chobani With Cocoa Coconut Butter

For something fast and simple, I topped a pomegranate Chobani with a tablespoon of my raw cacao coconut butter I made yesterday. This hardened over night like I was hoping to a thick peanut butter consistancy. Yay! The only problem is it gets too cold on yogurt and hardens, so now I have a lump on a log 😦 It’s a mighty tasty lump, though. For the oatmeal, I used most of a small banana and 40g grains cooked with cinnamon and topped with Tierra Farm‘s organic maple cashew butter and sea salt–yum! I opened a new 1lb shaker of coarse sea salt last night. I feel like I’m going to be going a little overboard happy with it in the meanwhile.

Some of you commented on cashew butter when I had some mid-week. I didn’t realize it had been so long since I’d eaten any! But yes, I do keep cashew butter on hand(4 different brands); you’d be hard pressed to find a nut whose butter I don’t have or have tasted 😉 For those who haven’t tried it, cashew butter is slightly lower in protein than peanut butter but higher in iron and heart-healthy fats. It has a really rich, creamy consistency and flavor, and pairs amazingly with bananas because of that slightly higher fat content. The cheapest and most commercial brand would probably be Whole Food’s store brand, but there are certainly others out there available. And now I need to run(unfortunately, not literally)!

I have a field trip in one of my classes at a historic house museum. What grade am I in? What school do I go to? What happened to John Stossol? A field trip? Apparently. Good thing it’s indoors because it’s pouring 😦 And lastly, here’s a giveaway for energy bites! I need all the energy I can get…

The Big Fat Post

*Before I go into too much, I want to stress that everything hear is based on my own opinion. I’m not a certified nutrition anything, and these are personal thoughts reached through researched. I also recognize that I change my mind like crazy, so let the record show it is 1/27/20092010*

You’re all invited to my big fat Italian-Polish-French-Welsh-Canadian wedding after you read my big fat post. Really, I should call this my big post about fat, because that’s the topic on today’s agenda. I don’t think anyone would deny that fat’s an important part of your daily intake. And I really don’t think anyone would deny that it’s usually pretty delicious(Helloooo, peanut butter?). At the same time, there are several different types of fats stemming from countless sources. After taking advice and literature from 3 intelligent bloggers, I’ve decided to incorporate saturated fat from 2 new sources into my diet.

Tropical Traditions Gold Label Virgin Coconut Oil

Common literature would tell you that saturated fats are awful and should be limited. That same literature, however, once toted trans-fatty margarine over all-natural butter. Things an opinions change. These 2 pieces of literature(#1 and #2) combined with other effects and observation led me to this decision. The fats themselves, as you’ll read, are quite nutritious in themselves. Unlike commercial butter, grass-fed butter hosts a range of nutrients and a higher omega-3 content; this was also the butter that our great-great grandparents were living and thriving off of–not margarine. You can read all about Pasture Butter here. Coconut oil hosts a bound of benefits of saturated fats without a speck of cholesterol. It also hosts a wide and unique array of beneficial components, including lauric acid, the same food infants thrive off of from milk.

The other half of this shift will be limiting the amounts of canola, safflower, soy, and other refined liquid oils. The reasoning for this is two-fold: Firstly, they aren’t nearly as “natural” as some of their counterparts like Rachael Ray’s favorite, EVOO. Secondly, introducing new fats into my diet means I should probably take some of the old ones out, and these ones serve little purpose on their own. Of course I’ll still be getting a strong flow of fats from nuts and, on occasion, animal sources. But I did want to put this out there, so that there’s no surprise that I might be featuring food like this a lot:

Homemade Raw Vegan Chocolate Bar

And why wouldn’t I when it’s this yummy? That would be my 3rd ever homemade raw vegan chocolate, made with 13g gold label virgin coconut oil, 19g agave nectar, and 12g cocoa powder. I really liked this blend. And, yes, when it comes to these raw chocolate bars it’s grams–not even teaspoons–that change the flavor completely! I’m loving playing around with the flavor with my minute changes and I think this one came out best of all so far. I’m going to pass over the irony of eating coconut oil and a chocolate bar while watching The Biggest Loser 😀

WHILE WE’RE ON THE TOPIC, I am totally infuriated with the red team. I really hate it when anyone “plays the game” instead of just losing weight. As much as I love Alison Sweeney, I really miss the days when Caroline Rhea hosted and the contestants entered not knowing what they were doing but solely devoted to getting healthy. Meanwhile, teams like the grey team keep me thinking there are still those like that out there and have hope. I needed oatmeal to distract me from being angry.

Pumpkin Oatmeal With Maple Almond Butter And Maple Butter

If I’m working grass-fed butter into my diet, I should work more maple butter in too, right?(For those who don’t know, maple butter is simply granulated maple syrup and, in fact, not at all butter). I think I need to add less salt to my oats because even with all this mapleness nothing tasted sweet. I might have had to have an extra spoonful of maple butter from the jar. Oops.

This did not help my first night of sleep back in the dorm. I don’t know why, but I think it took a good 60 minutes of nothingness to fall asleep. My mind was just racing with thoughts about the new day and everything. The thing I was most anxious about was running again. To top it all off, I forgot to set my alarm! I managed to wake up naturally at 7:20, though, so only slept in 20 minutes. I guzzled down a cup of coffee from a fresh canister, and hit the gym.

It’s so hard to find coffee that’s flavored and decaf; and this really tastes like hazelnut! Love it. What I didn’t love so much was reuniting with the treadmill. The run was so tough. I knew it wouldn’t be as easy after 5 weeks but I couldn’t believe after 2 miles it was becoming a battle, even though I had The Today Show to entertain me. My goal was 7 miles and I pushed to that in 59:59; I don’t know how I’m going to build back up for my half in time. When I got back to my dorm, I was ready to refuel!

This hit the spot. I needed to go to the dining hall to get bananas and I grabbed 5 while I was in there 😀 I’ll be set for a bit I think. I love the cinnamon raisin peanut butter but I almost feel like it was too much raisins! Good thing I had soy yogurt with peanut flour to help satisfy my peanut tooth. The trick to good peanut flour yogurt: salt. It makes it that much more authentic.

Today’s the first day of classes! Already so much has happened I want to share and I’ve gotten a ton of good news, but I think after covering 1 big fat topic, that’ll be enough for this post. Instead, I’ll leave you with some giveaways.

Taking Control

I think everyone is entitled to control of their own life. And it then becomes our duty to make sure we actually take the control into our own hands. This morning I had my annual doctor’s physical, which I was not looking forward to. Frankly, I haven’t been happy with my physician for the past few visits, which doesn’t bode well for him since I’ve only had him for a few years now. I feel he judges his patients as dots, simply comparing them to all the other dots in America on his little chart; that doesn’t cut it for me. I’m unique. You’re unique. Everyone is unique. Like I predicted, he pulled up his laptop with his charts and explained what numbers were a little high and which ones were a little low, and I sat there and took it. What I really wanted to yell say was that everything he was pointing out runs in my family and is hereditary and that they are who he should be comparing me to. But when I walked out afterwards, I made a decision: I will be changing doctors after today. We have every right to be in control of our health care, we just need to take it. Consider control taken. Is there any part of your life that you need to take control? You don’t need to write about it in the comments; just do it!

What else gives me a great sense of control? My meal planning, which led me to this lunch of tactfully planned leftovers:

Vegan Meatloaf With Ketchup, Sweet Potato Rounds With Nutritional Yeast, Broccoli

I cannot tell you how excited I was for today’s lunch; as good as the vegan meatloaf is the first day, it’s about 10 times better after sitting in the fridge–sooo amazing! Especially with a little ketchup because I’m classy like that 😉 And, hey! There might have even been some sweet potato under that nutritional yeast… just maybe. And on the side I sipped a root beer Zevia for something special while watching the television and catching up on the google reader.

While we’re talking about control, I never feel more in control than in the kitchen. I love it, especially when it’s my own recipe I’m working on. I made up a recipe last night just for Cookie Friday that hit all my cravings for the time.

Milk Chocolate Peanut Butter Chunkies

Ingredients:

  • 1/4 cup Earth Balance(or butter), softened
  • 1/2 cup turbinado sugar
  • 1/2 cup all-natural peanut butter
  • 1 large egg plus 1 egg yolk
  • 1/4 cup 2% or whole milk
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 a teaspoon salt
  • 60g milk chocolate bar, shaved(or 1/4 cup chocolate chips)
  • Coarse sea salt

Peanut Butter Cookie Dough

Preheat your oven to 350 degrees. In a small bowl, cream together the earth balance and sugar. Whisk in the egg and egg yolk, peanut butter, milk, and vanilla extract. Sift together flour, baking powder, and salt. Add to the dry ingredients the egg mixture and mix well. Fold in the milk chocolate shavings. Scoop out cookies onto a lined baking pan. Sprinkle coarse sea salt over the top of the cookies and flatten the top with a fork perpendicularly. Bake for 12-14 minutes or until slightly firm to the touch.

These definitely would be the show-stoppers at any cookie swap; who can say no to milk chocolate and peanut butter? And they really aren’t that unhealthy for you at all because a lot of the sugar has been replaced with healthy fats and butter replaced with no-cholesterol Earth Balance. And of course you can take control and adjust the recipe to suit yourself.

Milk Chocolate Peanut Butter Cups

While I was in the kitchen I made up some peanut butter cups. There were also 4 others that are just out of the picture. What I love about this is you can take control and adjust the chocolate and peanut butter to your liking. The chocolate here is a darker milk chocolate made with 3 parts Trader Joe’s milk chocolate for every 1 part Baker’s Unsweetened. The peanut butter was a blend of 8 parts Smart Balance Agave Sweetened to 1 part vanilla bean infused sugar. I’m not sure how the peanut butter tasted but I slipped a bit of the chocolate and it was perfect. When everything was done, I took my cookie and coffee and sat down.

Soooo good. These are more salty than sweet, which is totally my preference. But that’s not saying they don’t have sweetness to them. They just taste like good ol’ peanut butter and some smooth chocolate. I ended up watching Tivoed Good Eats and was pleasantly surprised to find it was Alton’s new weight loss episode. Have you seen him recently? He lost 50 pounds of fat! Go Alton! I loved his “no-diet” diet of how he eats:

  • Daily: Fruits, whole grains, leafy greens, nuts, carrots, green tea.
  • At least 3x weekly: oily fish, yogurt, broccoli, sweet potato, avocado.
  • 1 time a week at most: red meat, pasta, dessert, alcohol.
  • None: fast foods, soda, processed meals, canned soups, “diet” anything
  • Breakfast every day–no excuses!

I love it! Probably because it sounds like me 😀 (Except for the dessert thing. Desserts a daily item with me) He really took control of his life. What was best was that he was serving this up as a lifestyle and not a diet, which is how it should be seen. If you can, seek out the whole episode. Before dinner I snacked on an apple:

I don’t know why but I feel the need to point out when things are organic. Thankfully, I’ve noticed this is a common thing among blogs so I don’t feel completely random here. And then I made dinner. I tried a honey citrus salmon, which probably would have been 10 times better were the fish thicker, fresh, and not done in a pan. As it were, it actually didn’t come out bad(though caused a lot of smoke).

Salty Oatmeal With Raw Cheddar Cheese

We just called it “blackened” salmon 🙂 I also tried out a new recipe! Mashed cauliflower with coconut milk kefir as the creamer. Sooo good! I loved how it came out a bit tangy and sweet from the kefir. AND I can count it as a probiotic source(which is helpful because this would then be number 1 of the day). On the side, I was having a major craving for salt oatmeal. So while I made my parents white potatoes, I cooked up really salty oats and topped it with a salty, raw cheddar–heaven. I’m sure that doesn’t sound in the least appetizing, and I’m sure it wouldn’t have been if it weren’t a major craving. And now, as I’m typing, I’m “unwinding” to this:

What is it about beverages that make them what we unwind with? My Shirt Matches My Oats

Good morning. I love that it’s a new week! For some reason, it just feels like everything’s nice and fresh and ready to start anew. Maybe I’m just happy to have the house to myself again? That’s probably it. I have a new goal! I’m new to Twitter and now I want to get 100 Twitter followers before I go back to school. I think that’s very practical so let’s do it! Follow me here. Last night there was so much dessert to choose from. My mom was first to dive in and gave glowing reviews for the peanut butter cups, which was funny because I just made those on a whim when I had leftover chocolate. Well, I figured I’d start with those.

Soy Yogurt With Homemade Peanut Butter Cup And Vanilla Sugar

Over soy yogurt, just like I like it. The irony was lost here because there was no milk in the chocolate and this was totally vegan 😦 I like irony. It’s tasty! But so were these peanut butter cups. Making these for myself is definitely a practice I should get into because it’s so much more frugal and still delicious. My mom actually set one aside to take as an afternoon snack today, haha.

Last night, against my normal Food Network nature, I wtched the Simpsons’ 20th year special. I’m afraid to admit it, but the Simpsons are older than me! And they’re still good. I find that remarkable. I really hope they never end, which is not the case for some of my other favorite shows as of late *cough*Leno*cough*. Sometime through, I had a ball.

Jess was pretty smart with these because they’re delicious! The thin layer of chocolate over breading is just perfect. It reminds me of a chocolate covered donut from Dunkin’ Donuts, but not as sweet and 10 times better for you. This would be a fun thing to make for a brunch; I don’t think I used enough cream cheese, thought(which is odd because I’m known for having a heavy hand with the cream cheese ;-)). I started watching Brothers & Sisters and decided to make some oats with a new product.

Oatmeal With Maple Cashew Butter And Agave Ginger Cashews

It’s so hard to find crunchy nut butters that aren’t peanut butter, so instead I just used a cashew butter and these new Tierra Farm’s agave ginger cashews. I was very impressed by these. I almost never deal with glazed nuts because I never find them flavorful unless they’re salt roasted but then they just taste like salt. But these were entirely different; at times I felt like I was chewing on ginger! Wowza were they hot, but in a good way. These would be very gourmet to put in a dish at a party, for sure.

This morning I woke up feeling like a little strength training would be good. I threw on my new Target shorts that cost 3.50 and an old t-shirt from Greece and did a full core, which consisted of

  • 40 push-ups
  • 50 standing lunges, 5 walking lunges
  • 70 side crunches, both sides
  • 100 crunches
  • 70 crunch pose-hold
  • 240 arm rotaries
  • 5 sets of 7 chair swings
  • 40 squats
  • 70 standing marches
  • 70 rower arms(forgot to do this)
  • 40 second rower’s pose hold(and this, too)
  • 100 sit-ups
  • 70 tricep dips
  • 100 air bike kicks.

Did you know when you do crunches you should have your legs elevated? It works your lower abs better. I put mine up on a desk chair. After that I grabbed something for protein:

Delicious, but really I just wanted not to have a partially eaten bar lying around; that drives me crazy! And I did 200 flights of stairs for cardio. It’s hard to tell how long it took because I had to stop not once but 3 times to let somebody outside to go to the bathroom(I’m assuming by the “let outside” part you understand it wasn’t me). I wanted to just decide to stop after the 3rd time because it made my workout feel less-so but I realized that’s not the right reason to stop a workout and it’s always better to finish no matter what. After that I showered up and made another seasonal breakfast.

Am I going to crave pumpkin in the Spring? I think I just might. I loved the NuttZo which is kind of sweet but has no added sugar, especially with the savory cream cheese–yum! And I had some Noggy yogurt which makes Christmas feel not so long ago. Thanks to Xanthan Gum, this was so nice and thick; otherwise it’d been runny like a fat-free Stonyfield and I can just not stand that. Xanthan does have a bit of a dulling flavor so it needed a little more sweetener. Afterwards I wondered why I went for NuttZo for breakfast…

Clearly, I’m not the smartest cookie since I was wondering for so long 😛 I forgot: I added cinnamon to my pumpkin oatmeal this morning for the first time. It’s not that I wanted to taste it, or even did, but I’ve been seeing so many commercials for cinnamon as a heart-healthy spice I thought I’d add it. Does my heart feel happier? Well, I don’t know, but it didn’t affect the flavor and I’m sure it didn’t hurt.

Some Light Rawflections

Last night, I took the plunge:

Homemade Milk Chocolate Peanut Butter Cup

I went from the only person in blogworld not to make these to just the last! Boy that felt good 🙂 I heated up Newman’s Own Organics’ milk chocolate and filled that with 365 salted in a muffin liner. I did not realize how much chocolate these call for! So instead of two I only ended up making 1 :-/ Oh well. I know me and here’s how I am: I will have a recipe on my “to-make” list for months and keep putting it off because I think it will be difficult. Then I’ll do it once, fall in love, and keep doing it for 2 weeks. Now that I’ve done these, I’m sure I’ll be pumping them out like Reeses. Of course, I ate this like I eat all my peanut butter cups.

Over soy yogurt. Oh, how I swim in the irony of topping soy yogurt with milk chocolate 😀 I threw in a little extra peanut butter because this was feeling chocolate heavy, but the result was awesome. I love the touch of salt–gotta have my sodium. After that I watched Leno and am so confused on the controversy here. Is he getting cancelled? Is he moving time slots? I hope not because having a consistent, reliable program on at 10 night after night is the best thing that’s happened to TV in a long time, I think. Right before bed I made a snackeroo.

Oatmeal With Smart Balance Peanut Butter

I think I really wanted more milk chocolate, but could convince myself into this because my tongue associates smart balance peanut butter with milk chocolate from all those advent calender treats I had pre-Christmas! Do you think anyone makes an advent calender that counts down to Christmas starting from January 1st? I could definitely get on board with that 🙂

This morning I definitely felt like a cardio workout, but not-so-much strength. I wanted to want both, but it just wasn’t happening. But when I thought about not working out, I knew that wasn’t the answer either. Instead, I decided a plain and simple 200 flights would be a good settlement. Just a note: I do not run these. It’s more like power-walking than running. Running would be… Oh God, I don’t want to think how my legs would feel after that. After an hour of that, I showered up(because this really makes you sweat) and thought of what I wanted for breakfast. Funnily enough, I wanted eggs and avocado. Those are “normal” breakfast foods on their own, right? Well I wanted them a little differently.

Probiotic Chocolate Avocado Pudding With Vanilla Snackaroons

Can you believe it? NO peanut butter OR greek yogurt? And I’m not even feeling sick, too. Go figure. For some hot protein I made a big bowl of oatbran and oatmeal and cracked an egg right in there. So delicious, simple, and satisfying(especially when you add the maple syrup and cinnamon but you can do that to anything and it’ll be satisfying). With the avocado, I made my almost raw chocolate avocado pudding with 1/2 a leftover avocado, cocoa powder, vanilla powder, stevia, and coconut milk kefir, and topped them with The Raw Bakery‘s Vanilla Snackeroons. This was so good! I loved how it all worked together. The coconut from the snackeroons with the creamy avocado made a great mingling of two foods I don’t eat enough. And the Vanilla Snackeroons were great! Nothing makes me happier than looking at a food and seeing real vanilla bean specks.

Rawflection: Today I got a great bunch of products from Blue Mountain Organics and their companies of raw products to sample and review, which I’m excited to bring you over time. One of my resolutions as of late has been to try new foods like raw dishes into my diet. I think I’ve been doing a pretty good job, too, so long as we’re counting banana whip and chocolate avocado pudding 😉 And I have to say that I have not felt better or more “regular” than I have in the past 2 weeks of eating. Being so in control of my eats with wholesome, clean foods has had great side effects for me. Some of that’s been raw, which I hope to continue, and some of that has just been simple and pure foods like pan-seared ahi tuna, which I also hope to continue. If you’re looking to purify your diet or change things up for wellness, then mark my words when I say you do not need to go on some steadfast, total cleanse for a week. Just slowly but surely and raw and simple foods into your diet. Nothing needs to be 100%; a little at a time can go a long way 🙂

Amarett-Oh My

So, it was obviously a bummer to have driven 30 minutes to go to a sold out show last night :-/ Once we were heading home, we thought about what we could do to make it not such a waste to have left the house at night. Since we were in the area, I suggested we stop at Whole Foods to look for an ice cream I thought I saw there last time but that technically didn’t exit, even online.

I was right. How awesome does this sound? But, like I said, it doesn’t exist. If you go to the So Delicious website, it’s not listed under the flavors. Weird, huh? But when it comes to groceries and ice cream, I knew what I saw, so I was pretty sure it’d be there. We also asked the prepared foods section if they still served my favorite stuffing after the holidays. Nope. Bummer 😦 But the man behind the counter detailed a very odd and complex way through emailing the right people that we could specialty order some, and I entirely plan on following through with that because it’s worth it. When we got home, to get in the mood for ice cream(because it’s freezing up here in case you didn’t know), I broke out one of my Christmas presents.

Almond Amaretto Herbal Coffee

This technically isn’t coffee. It’s made of carob, dates, and other natural flavors. The smell is absolutely amazing. It’s like whiffing pure liqueur and had us all salivating–not gonna lie. And a little goes a long way, apparently, because 1/2 a tablespoon made a strong cup. Overall, the actual flavor was a little “medicinal”, like cough syrup but more pleasant. I think I’d rather just smell it, though. After that, I was definitely “in the mood”.

Cherry Amaretto Ice Cream With Slivered Almonds

In the ice cream itself is only cherries(big, honking ones) and I needed some crunch so I threw on slivered almonds. This was unreal-good. The flavor was perfect for the description. The ingredient list is super short. The nutrition isn’t too shabby, either(130 cals, 6g fat, 5g fiber). And, bestly, it’s soy and dairy free. Of course, I eat soy and dairy, but I’m not convinced my stomach loves me too much when I do; coconut milk, on the other hand, I’m pretty sure I’ve never had trouble digesting. I almost went back for more during Brothers and Sisters, but I’m pretty sure I didn’t need all that sugar then, so instead I reached for something different.

I won this in Averie’s giveaway, and it looked appealing a) because the flavors were like the ice cream and b) it only had 7g of sugar with plenty of nutty fats. I also definitely needed some more almondy crunch. It was good, but I don’t know that I’d buy one(I’m not even sure where they sell them?). To be fair, coconut is not my favorite flavor(unless it’s in ice cream form…) and it’s the number 1 ingredient here.

I was so happy to see Brothers And Sisters back on television. After setting us up with a huge cliffhanger, it now looks like Kitty’s getting over her cancer completely after 1 episode. Gotta love TV. This morning I actually woke up on time for once, but didn’t have much ambition to do any workout. I did, however, get the house to myself after 30 minutes and was able to brew a nice big pot of coffee to go along with breakfast 🙂

Would you believe that I didn’t want oatmeal this morning? It must be a full moon or something. What I wanted was eggs–properly cooked and with cheeeeese. I melted a little vegan butter in a pan and then made what had to be one of my best omelets, technically. The little butter on the bottom makes it go so much better. Then again, a lot of things go so much better not in a dormroom microwave. Along side I had soy yogurt with a peanut butter cup. I remember this combo being so much better than it was. Soy and eggs–you’d think I’m trying to smell up this place at this rate.

I totally made a mess doing 10 different things this morning, but this is all now cleaned. Not put away, but I’m not trying to be Mother Teresa.

I made up the nutrition label for my newest nut butter. I was worried how it’d come out(besides drunk) but apparently only has about 3g of sugar per serving–not too shabby.

Killer Cornbread

And I whipped up some Killer Cornbread. It was such a hit with my parents and grandmother, I know this won’t go to waste. And it’s a simple side any time we don’t feel like cooking up a carby vegetable. I also went through our freezer to throw out nasty baked goods from the Summer, just in case we need to freeze this or anything else(though I’m 95% sure this won’t last that long). I was so ready for a simple lunch after doing all that.

I figured since the cornbread was fresh I might as well see how it came out 🙂 This actually came out better this time than last! I think last time I used room temperature vegan butter, whereas this time I was lazy and just cut it in cold. The result is a lot richer, chunkier flavor. I also used only 2 tablespoons sweetener because I thought that was what the recipe called for. For protein I had some baked beans and then roasted up some brussels sprouts. They could have used another 10 minutes but after 35 minutes of waiting I just wanted to eat them! That’s the problem with roasted vegetables: You have to start when you’re full.

My dad took 1/2 a day off from work so that we can meet the same people to see Avatar in 3D this afternoon 🙂 We bought our tickets online this time, so everything should go smoothly. I found an awesome recipe for dinner but it’s a good 2 hour+ preparation so I guess it will have to wait until tomorrow.

Protein And Pie

First off, I’m ecstatic to say I’ve affiliated with Amazing Grass. Something about that grass really is amazing because it has me hooked(especially those bars!) and I’m definitely happy to endorse them. Well yesterday, as I predicted, I tore myself off the couch for a nice little run. First I grabbed a snack.

I decided to do a short little route around town. It’s weird to think once that was my long run and yesterday it was practically my rest run. It reminded me of what’s fun about small rural places, case in point a man wearing green overalls and a red plaid shirt on a riding lawn mower. Santa, much? Well I thought it was 5.4 miles but when I got home it was 5.3. I was a tad disappointed and ran a bit further(as in 1.3 miles “bit”). Overall it was a nice but hilly 6.6 mile run. There was an offer of lentils for lunch but I really had one thing on my mind.

After runs I’m a carby carb carb kind of guy. For this bowl, I used a 3oz banana mashed till all the fiber was gone, cinnamon and vanilla stevia, then my standard oat mix with 20g oatbran, 20g steel cuts, and 2/3 water. It was so thick! I could hardly believe I didn’t put flax in there. It definitely hit the spot. After lunch we went out and tagged our Christmas tree!

What a better way to say “we’re Christian” than sticking a tree in our house, right? We used to have my grandfather cut a giant one from New Hampshire and haul it down. Then he started just giving us money to buy big ones. Then we went through a phase of buying “Charlie Brown trees”, and now we go with moderately sized ones and pocket the rest of the money. This is also good because the tree farm is right near our house(near as in, if it’s a nice day when we cut it down, we could walk it home).

After that we went to Whole Foods. Like you all, I thought my haul last Sunday was a bit big. Well did anybody but me notice I didn’t go back once during the week? I ran a little low on Nog and pumpkin towards the end, but I convinced myself I could make it till Friday. Needless to say, though, there was tons to replenish and new sales to discover. There was plenty of good sopping, but a BIG disappointment when they were out of Snickerdoodle soy ice cream 😦 I suppose that’s for the best because it wasn’t on sale nor did I have a coupon like for most of the other items. After that, I was hangry for something protein(!). I don’t know how, but I know that’s what I wanted. I broke out a mighty protein bar.

I was kind of hoping this would at least make it from the store home. Apparently, that wasn’t meant to be. But it did the protein trick for the time. It was great walking around Price Chopper when we stopped there to see the NuVal stores Tina and Melissa mention. I think I’m pretty established on what I think is “good” food, but most of America seems to need a little guidance, and it’s good Nuval is there to help. When we got home I laid out my loot.

Again, it looks like a lot, and it was, but I went in with the mindset of buying for what I’ll need at home since I’ll be on vacation Tuesday through next Sunday. I got both tofu’s on sale for 2.25(that’s together, not apiece). All the sausages were on sale and something I’ve been craving. The yogurts and cookies were also a good deal, and I needed the milk and pumpkin for a recipe. this recipe, in fact.

Crustless Pumpkin Pie

Ingredients:

  • 1 cup turbinado sugar
  • 3 tablespoons whole wheat flour
  • 3 eggs
  • 2 cups canned pumpkin
  • 3/4 cup evaporated milk
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
Recipe: Crustless Pumpkin Pie

Ingredients

Preheat your oven to 350 degrees. Prepare a water bath in a large baking pan which will surround your pie tin half way up. In a bowl, combine sugar, flour, eggs, evaporated milk, and pumpkin. Mix well. Add the vanilla as well as the spices to taste. Once ready, pour into the pie tin, and bake for an hour, or until top looks firm but not burnt or cracking. Carefully remove and let sit until the water cools and is safe to handle.

This is the pumpkin pie for us. I made it last Thanksgiving and it got rave reviews. I wanted to test out the recipe again to make sure I still have got it. I do. I used 1/2 turbinado sugar and 1/2 NuNaturals baking blend for some good fiber. Nobody noticed a thing 🙂 I love being sneaky with healthy ingredients. While this was still cooking I heated up a snack.

I’m not sure if it’s that I was still on a protein kick, or I wanted to try out this new product, or both. They were itsy bitsy, but wuite good and surprisingly filling. I loved the flavor; you’d never know it weren’t meat if not for the TVP texture. This held me over well until more protein for dinner.

I think I’ve been salmoned-out over these last few months because I’ve lost all desire for it when I come home. But since there must be a meat on the plate according to other people here, I’ll oblige for some fish. I forget how fun beets are! They make everything red, but that’s kind of cool, no? After dinner I tried to work, but work can follow me to my dorm whereas Tivo is here and now. While my parents cut into the pie, I dug into this.

I’m such a yogurt freak. Maybe I should make my own that instead for Thanksgiving? For a while I thought this was vegan until I remembered I specifically buy the milk chocolate peanut butter cups because the others just aren’t like Reeses. I totally forgot to bring vanilla sugar home, which is weird because I always carry that around, but this was decent without out it. After officially posting the pumpkin pie recipe, some more snackage.

Crustless Pumpkin Pie With White Chocolate Chips

7g of protein per bar–not shabby. They’re a bit dry and chewy but that’s what I was wanting at the moment. I think the stress of realizing the weekend’s almost over called for something chew and something soothing. Eventually I dug into the pie, too–with white chocolate, because that makes everything better. Yum! I forgot how good this pie is. And it’s good that it doesn’t have weird, creepy gelatin ingredients to keep it firm, but it still perfectly is. The eggs and the flour really do all the necessary binding.

Pumpkin Oats With Cinnamon Frosting And Mighty Maple

Eventually I tried having more of a meal instead of snacking. A couple readers noted that I’ve been making “frosting” for a while now but no longer say what it is. Well, it’s actually just 1-2oz greek yogurt with a flavor like jam, cinnamon, or maple, and sweetener to taste. Super simple and super delicious. It adds a creaminess to the roof of the oats, and because I salt them before cooking so much a great contrast.

I normally don’t remember my dreams, but last night’s were too weird to forget. one was about Patrick Swayzee. I don’t remember the message much past that, but it had me hungry for some maple almond butter weirdly.

While I ate this, at 3:33, I discovered 3’s Company on TV Land. Do you think somebody came up with that timing or it’s coincidence that they show 3’s Company at 3am? Another dream involved someone taking everything out of my dorm including my Beanie Babies and submerging them in the pool because they didn’t like me. I don’t keep beanie babies in my room, but let’s hope my nut butters are safe. This morning, I woke up, turned on the coffee, and slept for another hour. Oops. After realizing I’m overwrought with things to do the longer I stay in the warmer it will be for a long run, I decided to have breakfast first.

Protein mess, anyone? For oats with an egg, I cook them for 2 minutes without the egg, then crack it in, swirl it about, and cook it for another 90 seconds. These sausage links were great! I couldn’t tell from texture they weren’t meat, though the flavor didn’t have much of a spicy kick. It went well with a drizzle of maple syrup, though. Now I plan to finish breakfast, let it digest(though probably not really) and do a 10+ run. There are so many more decisions when you don’t go to the gym! Should I do the neighborhood 9 ties, or head out on the road? And should I listen to heart pumping songs, seasonal Christmas tunes, or a movie? Decisions, decisions.

Popcorn Flavored Cod

I’m very stubborn. I insist to eat oatmeal when I know I won’t have time to finish it all. Boy am I a crazy person 😉 Jk, but I was still working on my bowl yesterday morning when my parents arrived around noon. They didn’t mind sitting around while I finished, and look what they brought me!

Archer Farm's Vanilla Cranberry Peanut Butter

A new peanut butter? A new Target product? A food present I didn’t have to physically pick off the shelf? This was like everything I like all in one ❤ Big thanks to Naomi at One Fit Foodie for giving me the heads up on this one. After putting that and some other groceries they brought, my parents, grandmother and I headed of to Foxwoods! We’ve been going there every few months or so since I was 2 or 3. Don’t judge my family because we bond over institutions of gambling; there are sooooo many other reasons to judge us. Anyway, I can’t gamble until I’m 21, and the arcade room has lost its luster to me, so when we go my dad and I usually eat at one of their great restaurants. This time it was Junior’s.

Junior’s started in Brooklyn, and is much more well-known for their cheesecake. Bobby Flay even threw down(and beat) them! They also built a restaurant at the MGM part of Foxwoods. When you arrive, they give you pickles, beets, and relish.

I thought that was really cute. And it was all so vinegary! It was perfect. For entrees, Juniors has a lot of heavy items; would you really expect anything less from a place whose main appeal is cheesecake? I was in a white-fish mood, so I went with the broiled cod.

The dish came with florentince rice, but I asked to substitute that with the vegetable of the day, which was apparently broccoli. I also didn’t realize that at 2pm I’d be getting the dinner portion. It was very delicious, but I wasn’t expecting the pool of butter it came in. In fact, when I first tasted it I though “Why does my cod taste like popcorn?” That’s how divorced I am from butter; I only know the flavor through popcorn. I’m not even sure what the sauce on the side was but it tasted like mayo and was pretty bland so I didn’t bother with it. One thing that was great about Junior’s was their mustard.

They make their own, and my dad(who got a steak burger) and I both agreed it was incredible. Luckily, they also sold it, and mustard was on my shopping list, so I got one for 4 dollars. I love buying sauces and jams from places I visit because I think the flavor of their product says a lot about the institution and bring back good memories. We didn’t get any cheesecake, but I snapped a picture on the way out for you to drool at 😉

Can I move one now? 🙂 We walked around a bit more while my mom and grandmother had fun gambling. I had a huge coffee to flush out the butter from my system. Foxwoods has some fun stores that sell Stonewall Kitchen and other jams. Some of them had me drooling, but I wasn’t in the business of buying new and expensive jams. Once people had had their full(and lost their money), we made the long trip back to Providence. I say long because we stopped at 3 places. For energy I snacked on a new bar.

It had an interesting flavor. It was definitely sweet, though I’m not sure it was “carrot cake”. Then again, what is carrot cake, anyway? It’s one of my favorites ever, so I’ve had a ton, and I know no two have ever tasted the same because people change up the ingredients so often. Anyway, the first stop was probably the one I was most excited for.

Trader Joe’s is always exciting; add in the facts that 1) I haven’t been to one in over a month 2) this was a new one to me and 3) this is their only location in Rhode Island and you’ve got a happy foodie. It felt like reuniting with an old friend. At the same time, so much has changed! They have great looking new profucts like chocolate covered peppermint Joe-Joe’s. And have they always had those vanilla fudge cranberry dunkers? If so, why did I never buy them?

Well, it was dark when we got out of their. After that we went to Stop And Shop for Libby’s pumpkin and Vitatops, but as luck would have it Cascadian Farm’s granola bars were $3 a box and I had coupons! Score. Lastly was Whole Foods, where I restocked on a lot of jam that my yogurt-loving ways have taken, and picked up a dinner. I even slipped my dad $10 my grandmother had slipped me earlier because I felt the groceries had gotten a little out of hand. Here’s the proof:

Like I said, quite a bit. On the bright side, only 3 of the groceries were neither on sale, a coupon item, or store brand. And there was at least $6 saved with sales and coupons, so that counts for something. I rushed to put these away because time had completely gotten by me and was more than ready for dinner.

Whole Foods Chicken Dumplings And Tuna And Salmon Brown Rice Sushi

Did I mention my parents also bought me a dinner? 😀 This was sooooo good. I haven’t had sushi or Chinese dumplings in what feels like ages; I know of some great sushi places but honestly I’m content with Whole Foods. I like brown rice and most real Japanese places don’t offer that. I’d definitely get it more if it weren’t expensive(though, to be fair, it’s a way better deal than loading up on veggies from the salad bar).

This dinner made me very happy for the ridiculous amount of email responding/blog reading/internet bemusement I had to do. The rest of the night felt like hectic catching up but I’d much rather have a fun day and a stressful night than anything else. For a bit I ran around putting things away, cleaning plates, jumping into PJ’s, and making a snack.

I was still hungry immediately after dinner, which I think was either from my low snackage of that the sushi had enough protein. Regardless, pumpkin pie greek yogurt was by far the best answer. I added 1/4 cup pumpkin, cinnamon, nutmeg, and vanilla stevia, and used 1 Harvest Spice bar as granola. This tasted just like pumpkin pie. It definitely hit the spot. I don’t know that I’d like that bar on its own, but as an on-the-go granola I could see it being handy. Amazing Race and Family Guy were decent, but nothing to gush about. This snack was though:

Peanut Butter Chip Granola Bar, Chocolate Vitatop With Butter Toffee Peanut Butter

 

Why people pay an arm and a leg for supplements when they could buy tasty, fortified food I will never understand; I swear I always feel better the day after I have a vitatop for dessert. Even if it’s all in my mind, it’s damn tasty 🙂 The granola bar was good, too. Nothing fortified or particularly nutritious, but definitely delicious. I think this one would make good on-the-go granola, too.

Nerd rant: The Aeneid is just awful to read in translation. At least when you read it in Latin you feel like you’re testing out your knowledge and can enjoy the poetry side of it. As a book, though, it pretty much sucks. In fact, the author, Virgil, wanted it burned after he died because he never finished it and didn’t like it himself. Some people are very glad those orders were not carried out. I, on the other hand, am not.

Speaking of fortified, this was fortified with goodness. I actually used to worry about not getting enough calcium, but with 3 cups of yogurt or milk a day and green vegetables that’s not really a concern. And I think a sprinkling of vanilla sugar is totally justified when you buy plain and unsweetened yogurt 🙂

I’m finding the better I stay hydrated, the more often I need to get up and go in the middle of the night. A bit unfortunate, but if that’s the price for proper health I’ll pay. I grabbed a fruity bar and hit the gym.

Clif Fruit And Nut Mojo Dipped

This one’s not my favorite, but it had me at “and nut”. I think Monday’s are the best for long runs because usually I lower mileage over the weekend, and I’m excited to see The Today Show gang and 7am cartoons. Today pretty much fit that bill. I decided on 12 miles and finished in 99 minutes flat. None of my gym friends were there this morning 😦 But I know where they work so I can give them hell for being lazy and make sure they kick their own butts tomorrow 😉 Breakfast was decided long before it got made.

Yum! I love getting new “toys” to play with. The vanilla cranberry butter was surprisingly thin, and the cranberries weren’t whole but rather finely ground. Still, it had GREAT flavor. I think it’d be good in some yogurt. And the white chocolate chips were perfect. I think you can tell they’re made with cocoa butter. I don’t know why, but I was craving a little sticky fluff, so I threw that on the yogurt. Perfect 🙂

The Egg, Then The Chicken

Don’t you love that question of which came first? Well yesterday for me it was the egg, then the chicken. But first of all was Greek! Normally, I’m rushing in last minute with a half eaten breakfast. Last Thursday I went in with my oats in a jar, and definitely earned some glances for that. Well I didn’t have much foodwise because I chugged down breakfast and thankfully it kept me full and focused the whole time(thank you, fiber). I didn’t like the idea of going back out to the dining hall after I had gotten on and logged on to my computer, but I read they had tempeh. Free tempeh? I’m so there. Then I had a better thought. What if I make an awesome healthy twist on steak and eggs?

Umm? Healthy Yum! *Toot*toot* What’s that? My own horn for thinking this up. I quick marinated 3 ounces tempeh with mushrooms in 2 tablespoons 365 steak sauce, and heated that up. The eggs were not restaurant quality in taste or appearance, but you’ll have to forgive my microwaving ways. They were still tasty, and that’s what matters most to me. What is it that’s so good about biting into a bit of yolk that’s so sinfully good? Anyway, I was proud of myself for this one.

Ricki Lake was on Rachael Ray talking about sex after 40. Wow. I used to like that show but now it just has crappy guests and subjects so I had no problem ditching for Whole Foods. There wasn’t anything I desperately needed, but the weather was actually nice and Tuesday’s I have the time. I studied for a test during the mile walk. Everytime I go to the grocery store, either Whole Foods or Eastside Market, that “piles on” 2 miles for the challenge! I find that exciting. I was thinking about buying a slightly expensive Milk Chocolate Bacon Bar(yes, milk chocolate with smoked bacon cooked in) and counting that as a personal expense and not a grocery expense on my fancy shmancy budget tracker(i.e. a word document). Instead, I chickened out; I decided there were other things and ways I could “treat” myself with and the fact that it’s not on sale yet means it wasn’t went to be. What I did get was good though.

I’m terribly transparent in my groceries, aren’t I? At Whole Foods, I got Oikos plain greek yogurt and a new brand of soy yogurt. I’ve been getting plain So Delicious but they were out. Besides, it gets expensive to buy individual containers so I hope this brand of bulk is decent. It has the most fiber and protein and least sugar of any of the other “plains” I could find. I also picked up chipotle lime chicken for dinner; I wanted to pick up something nice and this was the last day of the sale. I asked for a small piece and I got a 1/3lber. I know that probably isn’t much, but for someone who rarely eats meat it sounds like a lot. Anyway, it was cheap, and I’m pretty sure the prepared Whole Foods chicken is good quality. I grabbed some eggs at the campus store, too. They were mad expensive compared to Whole Food ones, but they were “free” because I can use dining points for them–That’s just 1 more reason I should probably come off my meal plan system. When I got back, I was ready for a snack.

What I really wanted was vanilla yogurt with peanut butter chips. Problem? I don’t have peanut butter chips. Solution? K is my constant reminder that things can taste good inside out. With that in mind, I swapped it and had peanut butter yogurt with vanilla chips. This trick worked like a charm. And I was surprised how much better the soy yogurt took on the peanut flour compared to Oikos. Maybe it’s because it’s thinner? I also snacked on this:

I’m pretty sure I said not 2 hours ago that I liked to eat real food and not bars when I have the option; what happened to that? Well I made an exception for this bar. It’s mostly nuts, which are the same bar form or not, right? A little Smart Balance to balance out the chocolate smartly and it was perfect. Salty/sweet/flaxy 🙂 On the 6 o’clock news was the story “Rhode Island is no longer the only state to allow indoor prostitution”. Is it bad that my first thought was “Where else allows that now?” Thankfully, no where, and Rhode Island finally followed suit. What an odd state this is. I’m not even going to try to make the transition and just say dinner was delicious.

The chicken was only 1.66 on sale and it tasted restaurant quality. Like we needed another reason to love Whole Foods? The herbed turnip from the cafeteria were also decent. I like how they cut them into fry shape and baked them. It reminded me of baked sweet potato fries, except not as chewy. Still, it’s a much healthier option for the students than fried potato fries. What wasn’t so “healthy” was seeing someone come out of a stall after doing their “business” and not washing their hands while I was washing my dishes. Seriously? College is the time when we have the option to do things like that but are responsible enough not to. Now I’m carrying Purell everywhere.

I loved how The Biggest Loser tried to use its influence in DC. If anywhere change is going to be made, it’s going to start on the TV and move to Congress; I think it’s definitely more important to get the people on your side first these days when it comes to movements like this, and that’s a good thing. It makes me feel like my footprint matters 🙂 To celebrate, I had “recycled” oats.

And by “recycled”, I mean I made them in the afternoon and decided I didn’t want them, but saved them because I knew I’d use them anyway. I definitely need to make another batch of these cookies soon. And then for Thanksgiving. And when’s Christmas, again? Thank you, Holly, for a recipe that keeps on giving. And the chocolate sunflower butter is just the best! Though I think it’s a bit more of a pate because it’s soooo thick. I managed to finish all of my Latin homework for the week; that’s such a great feeling knowing there’s 1 language I just won’t have to look at.

Did anyone else do a little dance when Tracy got kicked off The Biggest Loser? Thought so. She was on The Jay Leno Show right afterwards, and I have to say I started thinking of her in a better light after seeing her human side. I just have a problem with how she played The Biggest Loser like a game for money when it’s so much more.

I couldn’t get a great picture because my roommate had a friend over, but you get the idea–it was delicious. My roommate’s friend told me when he saw my big Oikos that he likes yogurt too. At first I couldn’t imagine someone saying something so blatantly obvious, and then I remembered that not all of the general population loves yogurt and yogurt messes. Do you ever forget how “normal” people eat?

This morning was unnormally normal. I woke up at 6:40, and wasn’t hungry or craving a thing in the least. I made my coffee, did my routine, and went to the gym, where I watched my “normal” shows. I ran 10 miles without any, erm, bathroom interuptions, and finished up in a time that left plenty left before class. Why is it that the most “normal” times seem the rarest? I don’t know, but it felt great. My breakfast was very cookie themed(if there’s a better theme I know not of it).

Plain Oikos With 2 Newman's Own Organic Chompion Chip Cookies

When I have a theme, I go all out. It’s why I’m good at throwing themed parties. I really wanted a soft baked chocolate chips cookie to crumble into my oats. Unfortunately, I don’t have any of those, but the english muffin with PB was actually a perfect substitute. Carb heaven? I think so. The Newman’s Own Organic cookies are good but they’re more the hard kind than chewy, so I used them as “granola”. Let’s face it–most store bought granola is sugar anyway, so it’s all the same 😉

Today’s the last Farmers’ Market of the year! How said, but I can’t wait to see what the vendors whip out to entice us. It’s also a really nice day so there’s no way it’ll be cancelled.

A Crisp Autumn Day

*Sidenote* A good friend noted that my vegan pumpkin pumpkin butter brownies were not actually vegan as TJ pumpkin butter has honey in it. Thankfully, I wasn’t baking for any vegans, but take note of that if you plan on trying them. Otherwise, enjoy.

Today really is crisp! I don’t think we’ll hit 60 degrees 😦 But I’m talking about yesterday for now. Yesterday, it didn’t really look like running weather when I woke up. It looked like baking weather. I “prefueled” with a couple cups of decaf and made an awesome breakfast: Vegan Apple Crisp. I found a recipe I used to make great and simple apple crisp 2 years ago; I just swapped out the butter *shudder* for organic smart balance vegan butter spread *slightly-less-of-a-but-still-a-shudder*. I’m still not down with the butter thang. And it’s definitely not a health thing because even the “healthy alternative” gives me the willys. I think I should see a psychiatrist on this butter thing(that was sarcasm. I have better ways to spend 100 dollars in an hour). It came out beautifully.

To my knowledge, I was the only one who had eaten this yet. Thank god I’m a runner, and don’t bake this every day 🙂 More specifically, I’m a runner who ran 10.05 miles in 1:20:53. It felt so nice and crisp out, but my stomach was a little full. Still that was a great pace for my neighborhood and I’m surprised I kept it up the whole way. I showered for lunch when we got back, and we had a very squashy meal.

My mom baked a whole pumpkin along with the rest of the meal. It was fun to scoop but I was not a fan of the hard seeds and we all agreed it was very tart. Oh, Libby, teach us your ways of pumpkin! Even though there were 4 potatoes roasted, I opted for one cooked in the microwave. I love the chewier texture, it makes it feel not like baby food(which I already eat for every other meal of the day). Before leaving home for one epicly long trip back to Campus, I served myself a couple scoops of one of my favorite frozen yogurts.

Holy cow’s milk frozen yogurt is this stuff good. When you let it sit just to the point where it’s starting to melt and lick it, it tastes just like a frothy milkshake. I also like that it’s a bit richer because of a touch of cream but still has decent nutrition, and all natural pronounceable ingredients.

First on our stops was Target to look for Vanilla Cranberry peanut butter: no luck 😦 I didn’t even go in because I didn’t want to get distracted so I just had my dad check for me. After that we did the Whole Foods thang for a couple yogurts and some steak sauce. Across the way was Market Basket for some more yogurt and waffles. I really wanted chocolate vitatops but all they had were bluebran and banana nut. I was tempted to buy the banana nut just out of compulsion but resisted because I knew it wasn’t what I really wanted. There was a quickie snack in the car to ward of crankiness.

This definitely helped get past the chocolate disappointment. But then I remembered that the Stop And Shop near campus had a very large selection of vitatops and actually sold them at a decent price. No place is better than Market Basket, but Stop And Shop certainly beats the other options near me. We swung by there and I found them 🙂 That Stop And Shop would be a great option for me to get food at cheaper more often; unfortunately it’d be about a 2 mile walk and through some rough parts of Providence 😦 I’d rather be safe and poor than save a few bucks only to get mugged. When we got back, I had plenty to put away, including all the new stuff we’d boughten.

Who am I kidding? There was always going to be peanut butter; now there was just more of it. This held me over for catching up on The Office(I know, I know, I’m really behind). Thankfully, it also held me over through “dinner”. I met with my friend at The Ratty, which was good because we’d lost touch since Wednesday or so. What wasn’t good was any of the options on the lines. Rather than try to make a meal that wouldn’t have satisfied me, we just sat and talked while he ate. ‘Twas fun, but I was a bit more than ready to make something I’d eat when I got back to my dorm.

This was soooooooo worth waiting for. I’ve never understood why people put eggs and mushrooms together until I tried it; this was deliciously meaty yet savory, and the cheese made it feel rich. I love Trader Joe’s ketchup with just about anything savory. It’s not quite as sweet as it is vinegary so the flavor works a bit better I think. And as if I didn’t eat my fair share of veggies yesterday, a veggie burger surely helped. Meals like this make me think I really don’t need the dining hall and could probably eat just fine off a meal plan and for less money. Because there wasn’t enough funky flavor in my life, I made this for The Amazing Race.

Sorry, I’ll stop doing this combo when it stops being so good. That’s not happening anytime soon? Shucks. The list of ingredients in “plain” soy milk is kind of funnily long but it still has that beloved soy flavor, which goes really well with the sweetness of the peanut butter. I was slightly disappointed with last night; my plan for the weekend was to have all my homework done Saturday so I could work on the 3(yes, 3) essays for Greek History, but Greek the language was a time whore that required far too much of my attention. Maybe we should all be thankful to speak and understand the one language we learn as a baby? Yeah, good plan.

I realized I hadn’t had oatmeal all day. What was wrong with me? Clearly, this bowl needed to be made in a jiffy. Butter I may not do, but Naturally Nutty’s Butter Toffee Peanut Butter is a clear exception. I have not seen this enough around the blogosphere and can’t help but wonder porque? If you’re nervous about making the step from a super market PB stalker to an online PB predator, it’s understandable, but take my word and just go for it! You won’t be disappointed. Don’t even make the mistake of ordering sampler jars on flavors that sound incredible like I did my first time because you’re only going to have to reorder that much sooner.

One of the things grocery shopping has taught me is to know what to budget on and what can be your special splurge. Do I need that box of granola bars because it’s a different flavor than the one I have? No. And they’ll taste the same now as the day I have a coupon and they’re on sale. Somethings, on the other hand, make sense to treat yourself with, like these. They’re obviously wholesome and healthy(and vegan, too!), and they work out to be decently priced(1.10 a roll), so I don’t mind “splurging” on these from time to time. Brothers & Sisters was, as always, great last nice. I liked Balthazar Getty’s appearance but it looks like he’s going as quick as he came back.

I had set my alarm for 7, then brought it back to 6:40 because of the extra hour. I actually woke up before that and didn’t need it. It was light out, too, so I wasn’t fumbling to make coffee in the dark–oh joy! I had a ghoulish snack.

I completely forgot about these for Halloween! They still tasted as good. Just a warning to anyone thinking of picking them up: They are all-natural but they aren’t vegetarian because they use animal gelatin. First I was thinking 8 for this morning, but then that turned to 10, and then 12. I can’t say I know quite how that happened because they were definitely not an easy 12, but I felt determined and wasn’t about. I think that run had me wanting sugar when I got back, because for breakfast I used a good amount of it in my favorite form.

Maple! I’m thinking I should ask my grandparents for some high-quality maple syrup for Christmas or Thanksgiving. They’re from middle-of-no-where, NH so they probably have a neighbor who makes his own or something. My grandpa was once on PBS for being a lumberjack for over 40 years 🙂 Right now the one I’m using is from the Dedham Whole Foods but it won’t be around for long! I love the new Nature’s Path Organic maple cereal, which I still need to review. I think it comes out this month so keep an eye out for it!
