A Different Kind Of Raw Ice Cream

Posted on May 18, 2010. Filed under: Daily Update, Recipe | Tags: , , , , , , , , , , , , , , , , , |

I think I’ve been pushing the envelope in my latest insanity.

On Sunday, I made up this raw ice cream, which was absolutely delicious.

But last night, in the fury of studying, things got a little… wacky?

Churning Raw Milk Ice Cream

Churning Raw Milk Ice Cream

I had a really bad craving for vanilla ice cream. Not coconut milk. Not anything other than dairy. Of course, this was the 1 thing we didn’t have. To appease that craving, in the ice cream maker I threw

  • 3 cups raw whole milk
  • 1/4 cup vanilla infused sugar
  • 1/4 raw honey
  • 1/2 teaspoon guar gum

Considering I didn’t have half the ingredients for real ice cream and made this with no patience, it was actually pretty good. It tasted nice and sweet and hit the exact spot I needed it to. It might not have been thick and creamy, but actually it came out much like a Wendy’s frosty. Yum!

Raw Local Honey

Raw Local Honey

While I was waiting for that to churn, I snacked on some local, raw honey. Is it bad that half of the 1lb honey jar is gone?… I think I’m more concerned of the fact that the farm isn’t open until Thursday. Boo.

Cascadian Farm's Peanut Butter Chip Bar

And to end the night of studying, I had some warm carbs with Justin’s chocolate almond butter and coconut milk, and some cool carbs with an organic peanut butter chip granola bar. Can you tell I was nervous for the test much?

Cherry Greek Yogurt With Trail Mix, Oatmeal With Chocolate Cherry Peanut Butter

Oikos, Cherry Butter, And Whole Foods Trail Mix

Oikos, Cherry Butter, And Whole Foods Trail Mix

For breakfast(eaten in the car), I just cooked oatmeal and topped it with Naturally Nutty‘s chocolate cherry peanut butter and had a plain Oikos with cherry butter and Whole Foods’ trail mix. I love getting the plan yogurts because they’re so versatile! Except I had to sweeten the cherry butter because it’s a bit tart on its own. All together it was delicious.

Gingerade Kombucha

Gingerade Kombucha

During the test, which took 2+ hours, I sipped on a gingerade kombucha. Let’s just say I am very glad to be done with that one. It was just an awful scenario. Part of the test was answering essay questions, and the questions we had to write on were chosen by the roll of the dice. And it was not lucky snake eyes. Whatever. It’s done and I’m free!

Roasted Potato Options, Kale Avocado Salad, Raw Vegan Tuna Salad

Roasted Potato Options, Kale Avocado Salad, Raw Vegan Tuna Salad

To celebrate, we were supposed to go out and eat. But I chose the Whole Foods salad bar instead of a restaurant. Wouldn’t you?! I got kale and avocado salad with raw vegan tuna salad and roasted cashews, and 2 types of roasted potatoes. With all those potatoes, stick a fork in me, I’m done.

Chocolate Peanut Butter Coconut Bliss Ice Cream

After an afternoon of getting groceries, I was happy to be home for some Luna & Larrys chocolate peanut butter ice cream. There was a little left in the container so I told my dad to finish it. He declined, licked the spoon I used to scoop it, and then took back his declination. Yeah, I think he approves of it. What flavor should I try next?

Fruit & Nut Pop Culture Yogurt Bar

Fruit & Nut Pop Culture Yogurt Bar

Waiting for dinner, I snacked on a Yogurt Fruit & Nut Pop Culture bar. I forgot all about these while I was at school; they’re good for a little snack. But I didn’t realize they contain gluten! Whoops. Aw, well, I’m already bloated from all the stressing it’s hardly going to make a difference.

Grass-Fed Beef Burger Over Arugala, Baked Potato Fries

Grass-Fed Beef Burger Over Arugala, Baked Potato Fries

For dinner, I bought something else but ended up craving a burger and fries. This would have gone great with my raw milk frosty. Anywho, these were some of the best fries ever. And all they were were potato coated in EVOO and baked for about an hour! But seriously amazing. I timed this well, too, because as I was grilling the showers came in.

Summer rain: love or hate? I would hate to have to run in them. But in general, summer showers, a little lightening, and a Little People, Big World marathon would make for the perfect night.

Fusions

Posted on December 28, 2009. Filed under: Daily Update | Tags: , , , , , , , , , , , , , , , , , , , , , , |

Somethings were just meant to be: Peanut Butter and Jelly, Lucy and Ricky, Me and Emma Watson, Ross and Rachel–the list goes on and on. And the truth is that these pairs work better together more than on their own. So yesterday I was looking for things that worked better together than on their own.

Pecan Butter With Cashews

My first inspiration came from Artisana’s Pecan Butter. I really enjoyed the hint of cashews in this to make it more of an artisan nut butter so I thought I’d try to replicate that with the pecans I picked up from the natural food store and some Oh Nuts! cashews. I won’t reveal the “secret” ratio but I think this came out damn good and would get a 10/10 from my own scale. I will reveal that I roasted them all so the flavor would be more pungent, but I didn’t add any salt.

Butterscotch Peanut Butter

Butterscotch and peanut butter are definitely another flavor combo that was meant to be. I think Kath would agree with the number of times I’ve seen butterscotch chips on her oatmeal. For this I used 16oz raw peanuts I dry roasted, more butterscotch extract than I’d care to know, stevia, and 4 teaspoons brown sugar. The flavor is definitely unique; it’s not my favorite but it seems like one of those I might randomly crave at some point. After I played around on nutritiondata.com, it was time for dinner.

Thai Curry Chickpeas With Hot Sauce, Brussels Sprouts, Buffalo Bleu Chips

I think Frank’s Red Hot sauce + anything is amazing(as attested by multiple bloggers around here). My mouth was on fire after all of this. There was also lemon-thyme salmon on the table but a) I didn’t think the lemon-thyme and hot sauce would work and b) I didn’t feel like having meat this meal.

After dinner, as disgusting as it was, I was determined to find the receipt for the food processor so that I can work at getting a non-broken one. It just so happened to be in the same bag of trash which my mom threw out ALL of her receipts from balancing her checkbook. This was really like finding a needle in a haystack but we got it.

Macy's Receipt

A little worse from ware but proof is proof. I think I continued to wash my hands for another 20 minutes to get off the coffee grounds and tofu, and then turned on I Love Lucy and picked up more fusion food.

Xocai Nugget And Power Square

Obviously, chocolates bestie is more chocolate, so I tried out Xocai’s nugget and power square. If you want to get technical, both of these are also fused with dried acai berries to increase their ORAC value, but really chocolate is chocolate. I liked these, but surprisingly they weren’t dark enough for me at the time. They tasted like a good 55% but I was expecting them to be more bitter-sweet. After a few good I Love Lucy episodes(a timeless show), I found more fusion in the kitchen.

Barney butter And Peach Amaretto Jam

Oatmeal With Barney Butter And Peach Amaretto Jam

These were soooo meant to be together. The jam was a Christmas present to my parents and is unreal; it has so much amaretto flavor! And it’s totally giving me ideas for more nut butters. The Barney Butter oddly separated in the squeeze pack so half was really hard and have was liquid. At least it still tasted OK. Lastly I had a 2nd daily probiotic source and hit the hay.

Pop Culture Chocolate Chip Granola Bar

This morning I must have been lazy because I slept in 40 minutes. It is vacation, after all 🙂 But then I got “in the mood” for a good workout. I did my core with

  • 240 varying arm rotations
  • 5 sets of 7 chair swings
  • 40 squats(thinking back, I might have forgotten this one)
  • 70 rowers’ arms
  • 40 second pose hold
  • 70 standing marches
  • 100 sit ups
  • 100 air kicks
  • 70 tricep dips
  • 70 side crunches, both sides
  • 100 crunches
  • 50 second crunch hold
  • 40 push-ups(a little messy by this point)

After that I threw in 100 flights of stairs, which took about 30 minutes but flew by to some good ipod tunes. After that I knew exactly what was on the menu for breakfast.

Vegan Cinnamon Raisin Roll With Pecan Butter And Brown Sugar Vegan Butter Spread

Peanut Flour Yogurt

Pecan butter, earth balance, and brown sugar were most definitely all meant to co-exist(We are the woooorrld. We are the futurrre). I’ve come to think there is nothing better than to be able to think “I’m eating homemade pecan butter” and know it’s your home that made it! Now I just need to figure out how to homemake a cinnamon roll. Peanut flour and greek yogurt were equally meant to be for a 1-2 protein punch. Today’s agenda most definitely includes a trip to Macy’s to try and get a new food processor piece, and hopefully addressing 1 or 2 recipes on my to-do list.

Pop Culture Product Review

Posted on December 27, 2009. Filed under: Product Review | Tags: , , |

You all know I love my probiotics, right? And you all know I love my bar stash, right? So you must know I was flippin’ when I found a bar with probiotics. Pop Culture fortifies their two flavors with a special, shelf-stable strand of bacteria with 10x the viable cells of supermarket yogurt. I got the chance to sample and review both of their current flavors and here are my thoughts.

Yogurt Fruit & Nut

8.5/10: With 4g of fiber and a host of live and active probiotic cells, Pop Culture packs a lot into a 90 calorie, 1oz bar perfect for your pocket. The yogurt coating might have been slight, but I loved what there was of it; it reminded me exactly of yogurt covered raisins or pretzels. The fruit in the bar really came out more of a generic sweetness than any flavor, and the nuts were disappointingly unrecognizable, though I don’t know how they could have been with such a slight nutrition label. But in the end the yogurt coating saved it all and made this a tasty treat.

Chocolate Chip Granola

8/10: As a lover of probiotics, I’m always excited to find them in a new form. Here, Pop Culture takes the traditional and adds a huge twist; their unique strand of bacteria and methodology allows for a shelf-stable granola bar with probiotics. I liked the abundance of chocolate chips and the small, snack size. I also liked that it had protein from soy isolates to boost the nutrition so that this wasn’t an over-glorified granola bar. With only 1 strand of bacteria, though, this isn’t the best to rely on fully. And the texture was a bit chewier than my liking. Overall, this was a fun way to switch up the daily yogurt trend(and add a few more chocolate chips to my life ;-) )

A Day In NYC

Posted on December 24, 2009. Filed under: Daily Update | Tags: , , , , , , , , , , , , , , , , , , , , , |

Technically, yesterday started at around 4am when I woke up hungry and had a bowl of oatmeal with NuttZo. I didn’t bother taking a picture because I was hoping that wouldn’t be the most exciting part of my day(though NuttZo is always tasty);-). After I got back to bed, my alarm went off promptly at 6:45 and we hit the road by 7:20. The plan was to drive to a Stamford, Connecticut to take the train in to NYC. The car ride was such a great time to relax and get away from anything; I read 3 out of 5 magazines I’ve had lying around since October! Bliss. Somewhere along the way I “made breakfast”.

2% Chobani With Kashi Vanilla Creamy Oatmeal, Barney Butter, And A Vitabrownie

I think being a sort of food McGuiver is so much fun! I had a bag packed of snacks and I was determined to make something healthy and well balanced out of it and I think I did. I mixed a packet of vanilla oatmeal with Chobani, salt, and stevia and let that sit and soften the oats. Then I added some Barney Butter I was sent to sample and review a while ago and this was the perfect opportunity. On the side, for good balance(or chocolate. Yeah, definitely chocolate) was a vitabrownie. This was delicious. I liked the Barney Butter more than I remember and might pick up a jar if I see it on the shelves. At 11:30 after a 60 minute train ride we arrived.

Grand Central Station

It wasn’t as busy as I thought it would be the day before Christmas Eve but still when is NYC not hustling and bustling? We had to rush to meet our Georgian friends for lunch at 12 at Carmines. They’ve wanted to eat here for years and finally got reservations. Honestly, the restaurant couldn’t have been a worse fit for me. The whole mindset behind it was gargantuan portions of meat and pasta served family style(I don’t have anything ethically against pasta, I just happen to be one of the few Italians who doesn’t like it). Still, I stuck with my guns and found a meal somewhere in there.

Apple Pear Vinagrette Salad, Grilled Marinated Portabella Mushrooms

The salad was OK; very oily. The mushrooms were good with salt and red pepper. At the same time, I don’t think mushrooms should ever constitute a meal. Everyone else at least had a good time and had their fill of fried calimari, meatballs, penne, and lemon cream sauce chicken.

Aunt Chris And Mom

Afterwards we had to finish up and rush off to a 2 o’clock matinée. It’s a tradition that we always see a play when we meet them in New York. It’s not my cup of tea but they’re a very artistic family and enjoy this stuff. It’s always a surprise what we’re seeing because they go to the box office that morning and find the discounted shows and choose from those. This year it was Mary Poppins.

Mary Poppins On Broadway

The show was great; technically it was probably the most amazing one we’ve seen. With trap doors and wires, they had Mary flying through the sky and even replicated her bag that holds far too much. I might have dozed off a bit during supercalifragilisticexpialidocious but it was only because the theater was so nice and warm. Midway through I had a snack.

Lemon Ginger Gnu Bar

That definitely curbed my hunger for the rest of the show. Afterwards, we had some time left with them so we worked out a new plan. My dad, knowing Goji Gourmet cookies were on my Christmas list, located some in the city so we decided to walk to a coffee shop that sold them. Of course, we took in the sights as we walked.

Times Square

Interestingly, the numbers still say 2009; when do you think they’ll change that? It was cold out–about 26. I managed to step in not 1 but 2 puddles. I’m a genius, right? Fortunately, we were able to find the little coffee shop and grab some cookies which now are under the tree. We also convinced the man behind the counter(who probably thought we were crazy tourists and was sooo right) to get a group photo.

The Sterns And Thomas Family

We 3 are on the right and the other 5 are them. Really, what was going through our mind was “Please take 20 more so we can stand in your warm shop without having bought much”. After that we walked back into the car they rented and drove around to take in some of the sights that were too cold to walk to.

Pop Culture Yogurt Fruit And Nut Bar

I grabbed this while we were in the car. This bar was also sent to me and it seemed perfect to save for a day like this when yogurt would not be as handy. overall, it was OK. The yogurt coating was soooo good, but the fruits and nuts were a little M.I.A. But with probiotics and 4g fiber, it was a good deal. We drove past the tree at Rockefeller center and then ended up back at Grand Central Station where we said our goodbyes until we see them again in July.

Grand Central Station

Dinner was a bit of a debacle; frankly, I was a little upset having only eaten mushrooms and bars I brought all day and wanted somewhere nice. At the same time, all we could find was chains and ones that served mostly meat. Just when we were about to give up and grab something quick and board the train, we found this restaurant hiding in Grand Central Station.

Charlie Palmer's Metrazur Menu

Yes, it was more meat. But this was good sounding, local meat that I could really get into without questioning. It was a bit pricey but how often do you get to eat in Grand Central Station? My mom wanted just a salad and my dad and I funnily enough chose the exact same entree.

The Natural Chicken

This sounded sooo good. It was a piece of white meat and dark meat chicken in a truffle broth. Underneath were broccoli rabe, oyster mushrooms, and soft and tender potato gnocchi; it was heavenly. I gave my dark meat to my mom(her favorite) and practically cleaned the bone of the other. The desserts sounded good, too, but I figured there’d be enough of those over the coming days and I was full. We ended up catching an 8:10 train and getting to our car at 9:30, driving home by 12:15. In the car I had a dessert of my own.

Peanut Butter Chocolate Chip Cookies

I found these cookies at the same bakery that served the Goji Gourmet ones. Peanut butter and chocolate; how could I resist? They were also fairly healthy with simple ingredients like whey protein, rolled oats, peanut butter, eggs, brown sugar, chocolate chips, butter, baking soda, and salt. They were really delicious; I thought the protein powder might affect the flavor but not at all. I also ate an apple in the car but that wasn’t nearly as exciting. When we got home, I pretty much passed out in my bed; it was 90 minutes after my bed time afterall 😉 And this morning I got to wake up to a full inbox and google reader. Joy to the world, and happy Christmas Eve!

Forgetful Me

Posted on December 22, 2009. Filed under: Daily Update, Product Review | Tags: , , , , , , , , , , , , , , , |

I’ve been a bit absent minded lately; I’ve completely forgotten to mention two big things. First off, today’s my mom’s birthday! Happy birthday to her!(even though I don’t think she knows about this yet so shhh ;-)) There will be dessert later to celebrate. The other thing I almost forgot is we’re driving to NYC and back tomorrow to see our friends from Georgia. I’m so excited since I see them only twice a year, but that left me in a mad rush to prewrite some posts! Thankfully, I thought of two good subjects I hope will entertain you while I’m away 🙂

This morning I did not forget to get my probiotics in despite skipping yogurt at breakfast.

Pop Culture Probiotic Chocolate Chip Granola Bar

Pop Culture sent me their two flavor of granola bars to sample and review. Clearly, I’m not the only one on a probiotic mission because the makers of this product believe in the power of them so much that they developed a special formula for maintaining a strand in a shelf stable granola bar. Since I was having a chocolate tooth, I reached for this flavor. I review it here. I definitely liked it and it had great nutrition(and was deliciously chocolatey :-)). My only problem was the texture, which is usually a problem with bars that add soy protein.

I felt like all morning I was playing house picking things up around here. It might be nice that my parents leave coffee still in the pot when they leave for work if they didn’t drink caffeinated and know I don’t touch the stuff. Oh well, it’s the least I could do. Just like the least my dog could do was pee on the rug and the least my camera could do was die. On mornings like that you just have to take a deep breath and take it as it comes. Fortunately, that all could wait while I was making lunch for myself.

Roasted Broccoli, Buttered Apple, Sweet Apple Chicken Sausage

I got really into this meal, and it showed in the flavor. I know I wanted to use my last Al Fresco Sweet Apple sausage(so sad to see this flavor go 😦 but at least now I get to open a new one!). Along side I decided to roast broccoli, which came out beautifully. These were so nutty and crispy almost like broccoli fries! I also melted some butter spread in a pan and cooked up apples, topping them with a little more 😉 I’m totally not afraid of gaining the average 5 or 7 or however many pounds I will this Holiday season; I’ll just find it ironic if it’s from food that I could have been eating all year and not holiday cookies.

Well after all the pee was cleaned and the batteries were changed(lovely imagery, right?), I finally got time to play silly online computer games write up some posts for tomorrow. Any guesses what they might be? I already touched upon one in this post… My chocolate chip cookie tooth from this morning came back in a big way, so I thought to have it in the form of healthy fats.

Oatmeal With Chocolate Chip Cookie Dough Peanut Butter And Advent Chocolate

How long has it been since I’ve cracked open my jar of chocolate chip cookie dough peanut butter? Too long. It’s almost gone meaning almost oats in a jar! That’ll be a good one. While eating this I was reminded of why our mailwoman rocks; she’s stopped putting anything in our box anymore when we get a package and instead drives all the way into our garage and leaves it there. Hehe, she must know I’m ever so lazy 🙂 Although today we got a package that was meant for another house so later we have to give it to its owner. Boo 😦

Like I’ve mentioned, it’s my mom’s birthday so there will be delicious goodies tonight for that. I’m wondering if I’m supposed to have picked a dinner and started up on that? I really haven’t been thinking about it. Oops. Best get to work on that!

A Nutridel cookie giveaway!
