Because I know you all were worried sick about every little detail of my life, here’s an update on all of them. No, really.

Update on apples: I really don’t like green ones. They taste sour and yucky 😦 It’s also all the dining hall has. BUT they now have fair trade and organic bananas! Sure, they won’t stop bragging about them, but I think it’s still a win.

Update on our kitchen: I was spoiled at home. I had a nice, big, working stainless steel kitchen. Now the stove I usually use doesn’t work anymore, and the other kitchen in this building has a major ant problem; ain’t that cheery? That’s what I had to be creeped out by while cooking.

Update on the computer: We(my dad and I) assume it shuts itself off from overheating. After meals and meals, there’s probably way too much salt, coffee grounds, and other food particles trapped in the vent 😦 I took it to the service desk, and they wanted to hold on to it from 1-7 days. I couldn’t make that kind of commitment so I kept it.

Update on Betty White: I love her. Her SNL appearance will be in May, and I might even stay up past my bedtime to see it live(Shh, don’t tell anyone). Betty White fans? I’m guessing yes.

Update on ketchup: It’s a vegetable. Period. If french fries can be called a vegetable in schools, so can ketchup. Oh, and this was really tasty. I might have overcooked the burger(odd, because all I wanted to do was get away from the ants), but the sweet potato with nutritional yeast made up for that. And ketchup. Lots and lots of ketchup.

Update on midterms: I got 2 midterms back today. I did really well on the one I expected to do poorly on and not so well on the one I thought was a breeze. Isn’t that the way life goes?

Update on my diet: *Note: I’m using the word “diet” here as in “food intake” and not “weight loss eating”; the latter is not a concern of mine* I did some thinking last night in bed(usually, this turns out as bad as doing thinking while visiting WebMD and looking up random symptoms I think I have). I used to aim for 2 sources of probiotics a day; this always made things feel more “regular”. At some point, I stopped caring simply because I was addicted to yogurt and frozen yogurt and never had a problem with getting those 2 or more. Recently, I fell out of that habit. But I want to get back into it! So hopefully I will be with help from Chobani, So Delicious, and kombucha. I also realized I had no dark chocolate yesterday; an ounce of dark chocolate has been shown to be incredibly delicious reduce your chance of stroke and ease stress levels. I want to also aim for at least 1 ounce of dark chocolate a day. I think I had enough Chocolove for today and yesterday here 🙂 Lastly(bear with me; I want a lot because I’m a needy person), I still want to incorporate more raw foods with living enzymes into my diet, for similar reasons as the yogurt. While I wait and train to become a better raw (un)cook, fruit and vegetables like the banana and 2 apples I’ve had so far seem like the easier way to incorporate this.

Update on my nut cheese: It smells like a funky funky monkey, but still tastes a hell of a lot like cashew butter from the sample I had. I’ll give it until tomorrow morning and then move it to the fridge.

Update on repetetive eating: It’s gotten worse. We all know bloggers love to eat the same things, but really? All I was craving for dinner was a sweet potato and burger. If it’s any consolation, I only bought 3/4 lb of meat, so I won’t be eating many more unless I get to a Whole Foods one of these days. OH! New sales tomorrow! That just made my evening 😀

Full Of Probiotics

That pretty much describes me right now! These days, I don’t really keep track of any part of my diet. I don’t do calorie counting, I don’t keep track of my fruit and veggie intake, if I’m not down with a protein at a meal I let it slide, etc. The one thing I have sort of kept up with as of lately is getting 2 sources of probiotics a day. They’re a superfood of mine because I think they’re great for digestion, an upset stomach, and longevity. But even this isn’t much of a “goal” because 2 sources is quite average for me. You know what’s not average? 5. And that’s all before dessert.

Backing up, what are probiotics? They’re strands of bacterial culture added to foods, most recognizably yogurt. Since these bacteria already exist in our digestive tracks, eating more of them helps to bolster any that might have died out over time. Probiotics have been suggested to have a host of other benefits from weight management(unless you’re only getting them through gallons of frozen yogurt) to flu prevention. This morning, I got S. Thermophilus, L. Bulgaricus, L. Acidophilus, Bifidus, and L. Casei from my pineapple Chobani.

For lunch, I had another superfood salad in mind! I had something like this Monday; I’m really not a big salad eater, but something about this particular combination of ingredients just “works” and made me crave it. In the mix was a good dose of Foods Alive‘s Hemp Oil Sweet & Sassy dressing and Navitas Naturals mulberries.

I mixed the dressing with spinach, and made a composite of chickpeas, garlic, sea salt, diced Next Generation Dairy raw & probiotic garlic parsley cheddar, and the mulberries. I love the mulberries here, which are like golden raisins but less sweet and more fiberous. On the side, I had a gingerade kombucha. Overall, not only was this meal fantastic, but it was amazingly healthy. The dressing, spinach, mulberries, cheese, and drink were all raw. Only the chickpeas were cooked, but those are healthy anyway so who cares? And the cheese was fortified with Ganeden BC30 probiotics, while the kombucha has 1 billion Lactobacillus Bacterium and S. Boulardii. That’s a lot of cultures!

Mint Chip Sweet Scoops Frozen Yogurt

Let’s just say I was more than happy to get out of my class at 4pm–it was the weekend! And I needed it, too, seeing as how much I had juggling in my mind to handle “once the school work was done with”. Well, really the first thing I did was get to my dorm, turn on the computer, and scoop out some frozen yogurt. We picked up this mint chip frozen yogurt from Sweet Scoops on Sunday; I’ve had it before so I knew I’d like it. Plus I love anything mint. But I think Sweet Scoops is also good because they keep the milk kind of fatty so it has a thick texture.  And it had my good friends, L. Bulgaricus & S. Thermophilus–score.

If you’ve ever wondered about the cultures in frozen yogurt(because I know you have ;-)), they are live but–unlike in yogurt–are not active. The freezing process puts the bacteria into a dormant state. Once they get into your system, however, where the temperature is much higher, they become active again. That is what makes frozen yogurt what it is(it has nothing to do with fat content). Running around like the nut that I am pressing tofu and shoving vegetables in the oven, I needed more fuel before dinner. Enter into my life more probiotics:

How many times do I eat this? A lot. And yet I never thought to notice that each time I do I’m taking in L. Bulgaricus, S. Thermophilus, L. Rhamnosus, L. Acidophilus, Bif. Bifidum, and Bif. Animalis. Good to know. It was also quite delicious, perfectly sweet and salty, and a little nutty. I’ve heard that Stop & Shop employees in R.I. are going on strike this weekend! I sure hope not; it’s $1 cheaper to get these So Delicious soy yogurts there than it is at Whole Foods. Now, if you can believe it, there weren’t any probiotics at dinner.

Roasted Broccoli And Sweet Potato Chunks With Maple Baked Tofu

What it was was my ultimate comfort food dish; would it make sense to have anything else on a snowy night that’s kicking off the weekend? I think not. I was thinking about putting this on a plate, but a bowl seemed so much more comforting. Bowl? Plate? Doesn’t matter? This all tasted awesome with some sea salt to balance it out. I’m impressed the tofu pressed well in only 90 minutes.

Not only was that bowl incredibly comforting, it’s going to be very well digested. I think I got about 10 different strands of bacteria in me, if not more, and billions of cultures. Incredible, huh? Don’t get me wrong–today was a bit of an abnormality, and really getting any probiotics is a good start. If you aren’t a yogurt or frozen yogurt fan(although how could you not be?), they also make supplements that are concentrated forms of probiotics; Avery would be the one to see on those. Now, I’m freezing my butt off tonight; the bacteria strand S. Thermophilus would not be happy(this means heat lover in Greek). I think they lowered the heat in the whole building because my coconut oil used to even be liquid at room temp and now I’m cold 😦 PJ’s, a sweatshirt, and Survivor will cure the cold.

“It Has That Green Smell”

Glad you all liked my Lennon this morning 🙂 Clearly, I was the missing Beatle. Anyway, right after potsage I hopped on out for a long Sunday morning gym extravaganza!

Mint Chocolate Attune

I didn’t have any probiotics(a superfood of mine) at breakfast because I was out of yogurt, so I grabbed this mint chocolate Attune bar on the way to out the door. It was pretty tasty! I like that it tasted like dark chocolate even though it’s milk. I was not a fan of the rice crisps, but I never am. According to the package, this was 5x better than a store brand yogurt would have been! Score! Plenty of probiotics to work my digestion while I ran.

I don’t know what it was about today, but time felt like it went at a snail’s pace. I set my treadmill to go 6 miles; when I could have sworn I was getting close, I looked down and saw a disappointing 4 :-/ At that point, I had to put on a movie to finish me through. Afterwards, I was inspired to keep watching the movie and do 20 minutes on the elliptical at resistance 7 and 20 minutes of treadmill walking. Getting back the last thing I wanted to do was shower and make a meal, but that’s what ended up happening somehow.

After a quick one I was downstairs cooking my burger in the dorm kitchen. I might have forgotten a shirt. Oops. The Naked Chef, anyone? I actually overcooked it for the first time! Well that makes up for yesterday when it was undercooked and I ate it anyway; I love my meat red 😀 On the side, I had some new snack’ums.

I thought about giving up chips for Lent; that would have gone horribly horribly wrong. I opened up a bag of New York Pizza Pirate’s Booty I was sent to review. The flavor was not what I was expecting. That being said, I liked that it had flavor. It was very heavy on the paprika with some sharp cheddar to it. It didn’t knock me off my feet but I liked it. Maybe I need to spend more time in NYC?

After that my parents and grandmother took a trip down to see me with mail and such. It was good because I needed supplies like paper towels; I’ve been pressing too much tofu! My mom even vacuumed and in response my grandmother had to say “It smells good in here. You know, it smells clean. It just has that ‘green’ smell, like somebody’s been eaten broccoli and brussels sprouts.” LOL She nailed it on the head. I guess I don’t notice the smell since I’ve lived with it so long?

While I had the ride, I took the chance to get a trip out for groceries; how could I deny that? I grabbed a Zevia and we were out the door. First up: Trader Joe’s! I’m actually becoming more apathetic about that store. I feel like the best things from it are the plain stuff that you can get in bulk for cheap. And I’ve already gotten those in bulk! Well, it certainly is a good place for everyone to find something, at least, so while others finished shopping I had a snack:

Carob Chip Perfect Foods Bar

In the mail I got from home was some Perfect Foods bars. These are made primarily with organic peanuts and raw honey along with all different forms of protein and are meant as a meal replacement, but I’m pretty sure for athletes they’d just qualify as a snackypoo. This flavor was carob chip. I’d actually never had carob before! And I still don’t really feel like I have; this bar was pretty heavy on the peanuts with the carob only coming up in chip form even though carob powder is the 5th ingredient. BUT it was also really tasty so I can’t complain too much. It tasted a lot like peanuts and honey–duh. And it kept me fueled for all the serious grocery shopping, so it was definitely hefty.

Oatbran And Oatmeal

I got 2lb of oatbran from Trader Joe’s and then 2lb of oatmeal from Whole Foods. I’d say I’m pretty well stocked! The oats were on sale 99 cents a pound from the bulk bins(organic), so I had to load up. I also completely lost my shopping list in Whole Foods which freaked me out, but I was able to remember what last scribbles were on it. Seriously though, who would even have picked that up and taken it if they came across it? Weird.

I liked using the pound of grass-fed beef I got last weekend so much I decided to do it again! Unfortunately, they didn’t have the fattier cut, which I would have gone for, so this one ended up costing a little more, but it’s still not bad since it will work over 4 meals. And I might have snuck one of my favorite ice creams and favorite chocolate bars into the shopping cart–not going to lie.

At Trader Joe’s, I was all over the proteins and fats. I also had my parents bring me whole eggs, too; the egg whites are more for oats. I feel like I should have gotten another block of tofu now that I think about it :-/ It’s such a perfect protein!

Apple

I grabbed an apple while I was in the dining hall scrapping up veggies for dinner. I really felt like I needed to eat something “clean” for one reason or another. “Clean eating” in my mind is something where each ingredient is a raw ingredient or has only a few components to it. I was planning on a Thai dish with Trader Joe’s coconut milk curry sauce but that long list would not have fit as “clean” :-/ Instead, I went ahead and just used coconut milk and honey.

Pretty clean, if I do say so myself. The tofu and tempeh were cooked in coconut milk, watter, and honey, then drained and splashed with coconut milk and honey(it’s a flawed process). On top I sprinkled some cayenne Parma, which, if that’s the most unclean thing I was eating, I was doing damn well. All the flavors fought a bit but it was still very much enjoyable. I just think it needed more cruciferous veggies! OK, I can cross my word of the day off 🙂

Blah, today was fun but I felt like the productivity took a dive. I got about 20 pages of reading done in the car and… yeah. I actually got into my PJ’s before dinner just to be able to cross that off my mental to-do list. Is that crazy? That’s not something I want to hear the answer to. Hopefully, tonight will be better.
