When The Weather’s This Perfect

Posted on May 27, 2010. Filed under: Daily Update | Tags: , , , , , , , , , , , , , , , , |

I’m so happy for the enthusiasm for my blogiversary. It was definitely fun looking over old posts and old photos; nothing makes you feel better than seeing a picture and thinking “I look so young and fresh here” until you realize it’s 3 1/2 years old 😉

After yesterday hit 91 degrees, and the night was riddled with thunderstorms and showers, the weather today was just perfect. There’s so much can do on a day like today!

I love it when it’s not too hot that chocolate melts. This was mint-flavored carob, but I’d assume it’d melt if it were too hot, too. There is nothing worse than opening up a chocolate bar only to find melted poo.

When it’s this nice out, part of me feels like I could keep going and going. The other part of me(aka, my knees) remembers all too well the 14 miles from yesterday, so there wasn’t much enthusiasm to go any further. Still, this was a dreamy run.

When the weather’s this perfect, grilling is the obvious option, but there are some things that just taste better in a seasoned pan.

I was craving Spanish potatoes and ground beef. This was so simple, too; just potatoes and onion cooked in olive oil with sea salt, paprika, and black pepper, and then grass-fed ground beef cooked through. A little basil just brightens up everything; it’s my favorite herb to add in the Summer.

I couldn’t wait for Sundae Friday this week; I just had to have fun in the kitchen. I used up the last of the vegan blondies and mixed them with snickerdoodle soy ice cream. It was missing something, though…

Rice whip, anyone?! All vegan; all delicious.

When the weather’s this perfect, I think my diet soda addiction kicks back in. Like I said here, even though I went 96 hours without stevia, I still adore it in moderation.Since the weather was so nice, I took a walk around the neighborhood, and made a delicious snack plate upon my return.

A random plate of raw onion, raw broccoli, and 2 slices vegan Hawaiian pizza. I was curious if leftover gluten-free, vegan pizza had that same magical quality as regular leftover pizza. It does.

For dinner, my mom went out with her girlfriends for the night. That used to mean “breakfast for dinner” for the boys, where the breakfast was poptarts. Thankfully, we’ve all grown up a little since then and can make real food.

When the weather’s this perfect, a Summer Salad is the way to go. This was just dressed spinach with homemade chickpeas, raisins, and Daiya. I think I’ve reached my fake-cheese limit for the day.

Do you take your leftover pizza hot or cold? I like to heat it back up and get it to the gooey cheese state.

What do you feel like doing in perfect weather? I’m 90% sure ice cream will be made tonight. I’m just debating between a very classy chocolate chip or a vegan white chocolate flavor…

My Summer In Recipes

Posted on May 13, 2010. Filed under: Daily Update, Health, Recipe | Tags: , , , , , , , , , , , , , , |

All throughout the year, I’ve had a tiny list of a few recipes I’d like to try. Well, when I realized I was home and had the whole Summer before me, that list kind of… exploded. Thanks to all of your suggestions and more, here is what I hope to make and bake over the next few months.

Wow. I better get cooking, right? Thankfully, I have.

Vegan Peanut Butter Fudge

Vegan Peanut Butter Fudge

Microwave Vegan Peanut Butter Fudge

Ingredients:

  • 1/2 cup no-stir peanut butter*(smart balance recommended)
  • 3/4 cup natural vegan butter substitute(earth balance recommended)
  • 1/4 cup non-dairy milk
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla powder OR 1/2 teaspoon vanilla extract**

In a bowl, microwave the vegan butter until melted. Add in the peanut butter and stir until fully incorporated. The mixture should be a thick liquid at this point. Whisk in the sugar and vanilla while slowly adding the milk as needed. Once all the ingredients have been mixed together, pour into a shallow square pan. Keep in the fridge loosely covered for at least 12-24 hours before cutting into.

*If the peanut butter is not solid at room temperature, the recipe will not set properly

**The powder is recommended because the alcohol in the vanilla extract will hinder the setting process somewhat

Good thing I’ve been running too…

14 Miles

14 Miles

I hoped to run 14 miles today, but honestly I did not know that I would. I put myself out on the road, and after the first few miles things just felt good. At 6.5 miles, when I could have cut it short, I knew I had it in me to keep going and going and made it all in under 2 hours. Wahoo! I was excited, and ready to eat a good meal for lunch.

Chickpea Salad

Chickpea Salad

Chickpea Salad

Chickpea Salad

Ah, nothing feels more refreshing than a Summer salad. I dressed spinach in this dressing and then mixed together chickpeas, golden raisins, raw cheddar, and a little maple syrup. The maple and sea salt really draw out the flavor in the cheddar to the point where it is too good for words. Have you been following your salads for salad a day?

Vegan Peanut Butter Fudge And Vegan GF Chocolate Cupcake

Vegan Peanut Butter Fudge And Vegan GF Chocolate Cupcake

Dessert was the 2 things I’ve been holding in my head all day: A piece of vegan peanut butter fudge and a Sweet Utopia vegan GF chocolate cupcake. The fudge isn’t quite set to where I’d like it, but I couldn’t help digging in with a spoon; the flavor is dead on. This plus Tivoed Bobby Flay made for a perfect afternoon. Do you think I could get into a fudge throwdown with him?

Oatmeal With 365 Crunchy

Oatmeal With 365 Crunchy

I also had for the 2nd day in a row a bowl of oatmeal with 365 crunchy. What can I say? I’m obsessed. I like the crunch, but so often pre-flavored nut butters are smooth. So now that I’m on a 365 kick, I expect to be crunching away!

Organic Red Delicious Apple

Organic Red Delicious Apple

Plus an organic apple for a good serving of fruit before dinner.

Sweet Chili Tofu With Broccoli, Basmati Rice With Coconut And Lime

Sweet Chili Tofu With Broccoli, Basmati Rice With Coconut And Lime

For dinner I tried out this recipe.

Sweet Chili Tofu With Broccoli

Sweet Chili Tofu With Broccoli

I think I’ve got you matched here, Whole Foods. This was pretty fantastic. Sure, it wasn’t fried. But the flavor was nice and spicy. For the rice, we just cooked it normally and then drizzled with coconut milk and lime zest at the end. Magnifique! So simple and yet rich and flavorful.

What recipes do you hope to make this Summer? Or maybe you shouldn’t tell me because then my list will grow longer…

I’m A Contradiction

Posted on May 6, 2010. Filed under: Daily Update | Tags: , , , , , , , , , , , |

Ever since this song came up on my ipod this morning during my run, I haven’t been able to get it out of my head.

I thought this would make a better title than “Bitch”. But I’m much more than a contradiction. I’m a little bit of everything all rolled in to one.

I’m a clown, I’m a scholar.
I am proper, I’m a baller.
I’m a runner and I’m lazy–
My life is sort of hazy.
I’m a friend. I’m a foe.
You wouldn’t even know
What side of the bed I woke up on
On any given day

Apricot Goji Pranabar

Apricot Goji Pranabar

Citrus Kombucha

Citrus Kombucha

Somedays, I’ll eat like a carnivore; two days later, I might make it a point to eat raw foods. Tomorrow I will change and today won’t mean a thing. I snacked on an Apricot Goji Pranabar in my first class around 10am before my workout, and drank a Citrus Kombucha after lunch as a sort of “dessert”. Not that lunch was very raw.

Have I mentioned I’m a member of PETA? Or, at least,  I get their newsletter because I entered into a contest of theirs. I actually don’t care for PETA for reasons brought up on Caitlin’s blog here. But I do love animals. I do love cows. And I do love this; grass-fed beef has now been expanded to all Whole Food locations. Yeehaw! Just when you think you’ve got me figured out, the seasons already changing. Oh, and before lunch I ran.

12 Miles In 1:43:25

12 Miles In 1:43:25

I told myself after I ran my half-marathon I would cut back on the running, and so far I’ve ran 8, 10, 9.5, and now 12 miles. Whoops. I enjoyed it, though, and that’s what matters. And inspired by this fit blogger, I thought up what my fitness goals would be. I came up with 2 that almost directly compete. Clearly, I don’t even know where my life is headed, except definitely to the freezer.

It was a long afternoon of classes. I won’t go into it, but just know that afterwards I really needed ice cream. I do not feel ashamed. And seriously, So Delicious Chocolate Peanut Butter Swirl Coconut Milk Ice Cream should be patented(it probably is). This has got to be my favorite ice cream now. I don’t think there’s a bowl big enough–look at that. Yum.

Loaded Baked Potato With Organic Vegetarian Chili And Crumbled Tofu

Loaded Baked Potato With Organic Vegetarian Chili And Crumbled Tofu

It might be nice if I could follow my own advice to buy ingredients, not food but instead I cracked open a can of organic vegetarian chili and poured 1/2 over a baked potato from the dining hall with added tofu. I would like to play the “dorm room” and the “project cleanout” cards here.

So that’s me, in all my contradictory glory. You know you wouldn’t want it any other way. Now fess up; how are you a contradiction?

Blurt

Posted on May 5, 2010. Filed under: Daily Update | Tags: , , , , , , , , , , , , , , , |

I’m sorry if this post is spazzier than a disco ball but there’s so much I have to say, I can’t think of any way to connect it all so I’m just going to blurt it out.

My official half-marathon time on this race was 1:37:51. Wow. What? I wasn’t even sure I could break 1:40 the day before even though that was my goal, and that’s far beyond what I trained at. I’m just so relieved, and glad to have no new goals(not until next year, at least…).

Pomegranate Chobani, Vegan Fudge

Pomegranate Chobani, Vegan Fudge

I might have a fudge problem, and I’m not complaining. What has led me to this conclusion? Oh, I don’t know, the mostly gone pans of microwave vegan fudge and raw vegan fudge in my fridge were a clue. And the recipe in my head for vegan peanut butter fudge isn’t helping until I can actually make it. Otherwise, this was a perfectly healthy Biggest Loser snack.

Oatmeal With Vanilla Peanut Butter

Oatmeal With Vanilla Peanut Butter

I’m starting to realize that’s not a tablespoon of nut butter on my oatmeal. I would have thought a jar of peanut butter I opened just last week wouldn’t be 2/3rds gone already. Whoops! But really, the combination of Madhava vanilla agave and 365 peanut butter is that good.

Oatmeal With Chocolate Almond Butter And Coconut Milk

Oatmeal With Chocolate Almond Butter And Coconut Milk

Pomegranate Chobani With Mint Dark Chocolate

Pomegranate Chobani With Mint Dark Chocolate

I slept in instead of running right away and ate breakfast first. I tried to keep the ingredients pretty well, but if I didn’t have at least 6 squares of this chocolate, nothing would have filled me up. I’m a big fan of eating what you crave because, if you don’t, it won’t matter what you eat–you just won’t be satisfied. Let there be chocolate!

I’m very proud of this post and I hope it gets picked up by healthbuzz. I didn’t think anything in my life was interesting(besides fudge) at that point, so I threw that post together. I loved your responses to “the perfect pantry”. It seems a lot of you agreed with me and would add

  • Almond Milk
  • Pitas
  • Whole Wheat Bread
  • Cold Cereals
  • Pasta
  • Coffee
  • Kombucha
  • Tempeh

I love that Kelly would call Kombucha a staple; that’s my kind of girl. Coffee, too–how could I forget that?

9.5 Miles In 83:12

9.5 Miles In 83:12

I didn’t really “know” that I felt like running today; I told myself “just go to the gym and do what you feel. If that means walking right back, do that”. Well, I actually ran 9.5 miles and enjoyed it. The best way to be healthy is just put yourself in a healthy situation. The real good news, though, came when I got back from running. I split 2nd prize in another translation test and got a great cash reward. For knowing 2 dead languages, these are really starting to pay off, and I’m totally planning all the technology upgrades in my life these can be used for.

Tuna Salad With Mustard, Raw Broccoli, Chickpea Salad With Walnuts And Craisins

Tuna Salad With Mustard, Raw Broccoli, Chickpea Salad With Walnuts And Craisins

Lunch was thrown together on the fly to make a moved class time, but it ended up being really good. Tuna salad with mustard, chickpeas with Tierra Farm‘s raw walnuts and craisins, and raw broccoli all over spinach. Besides the fact that I adore chickpeas anytime, anyway, with some dried fruit they’re just amazing.

Vanilla Bean Coconut Milk Ice Cream With Banana Pineapple Rum Jam

Vanilla Bean Coconut Milk Ice Cream With Banana Pineapple Rum Jam

Flashforward 3 hours after a class and studying for a final in office hours. I was starving by the time I got out  and loaded up this delicious ice cream dish. I was so hungry, anything would have done, but I am more than pleased to have made this combination of So Delicious Vanilla Bean coconut milk ice cream and Earth & Vine banana pineapple rum jam. It was like Pina Colada ice cream. Yum!

Organic Cameo Apple

Organic Cameo Apple

There was also an organic apple involved when the ice cream was demolished since I wasn’t quite full. But you know what this brings me to? I have to pee all the time and it’s annoying. Call it the “side-effect” of a healthy-living blogger. Whatever it is, it’s getting on my nerve. If only I could put down the salt shaker, back away from the water bottle, and throw my hands in the air. But I needed those hands to make dinner(while guzzling water).

Broccoli In A Jar

Broccoli In A Jar

Lunch was from canned food, and dinner was jarred. Aren’t containers fun?

Shitake Veggie Burger, Broccoli With PB, Spinach

Shitake Veggie Burger, Broccoli With PB, Spinach

I finished off the last of my jar of The Heat Is On by tossing steamed broccoli in it and making a veggie burger salad. This was my first time trying Wildwood Shitake veggie burgers, which actually tasted just like the original. And, yes, there were no black beans or salsa today; I felt no obligation to eat Mexican food today so I didn’t. I felt like everyone was eating Mexican today, and even Rachael Ray made some amazing fish tacos. But unless she was going to cook them for me and deliver them, I wasn’t getting them. So no festive eating done here 🙂

What do you have to blurt out? Killed a man in Reno 8 years ago and need to get it off your chest? I promise my posts to be more tidy after I’ve got it all out there.

Two Times, Two Ways

Warning: You can’t even read this post without increasing your cholesterol a little. Consult your doctor to see if Lipitor is right for you.

Forming Grass-Fed Beef Patties

Forming Grass-Fed Beef Patties

Who doesn’t start their work-week by turning ground beef into burgers? No worries: I practice clean cooking in addition to clean eating. I wore my No Meat Athlete shirt this morning to take my final but quickly changed when I realized what a carnivorous day this would be(and now I’m rocking the Hard Rock Cafe Barcelona look).

Burger, EVOO Sweet Potato Hash Over Spinach

Burger, EVOO Sweet Potato Hash Over Spinach

EVOO Roasted Sweet Potatoes

EVOO Roasted Sweet Potatoes

Lunch was a perfectly prepared burger on a bed of spinach with pan-finished EVOO sweet potato chunks. If that doesn’t catch your eye, I don’t know what will. For these, I quartered 1/2 a sweet potato and let those roast for an hour or so. After that, I quickly tossed them in the pan with the rendered beef fat and then finished with a splash and fry of EVOO. As Miss Rachael Ray would say, yummo! Who needs salad dressing? The EVOO’s on the potatoes!

Green & Black's White Chocolate

Green & Black's White Chocolate

After an afternoon of classes, I just needed to unwind with some good white chocolate, so I went for Green & Black’s. Most dark chocolate, even when it’s sorta bad, is good; just look for the stuff with no vegetable oils and all-natural ingredients and it’s going to be tasty.

Green & Black's White Chocolate

Green & Black's White Chocolate

Milk and white chocolate are more troubled beasts. But a good organic brand like Green & Black’s never fails. I love it when you can see the vanilla beans! Now, let’s no one point out white chocolate has 0 of the antioxidants and more of the sugar and we’ll all be happy, capiche?

Avocado With Lemon And Sea Salt

Avocado With Lemon And Sea Salt

I’m not going to say this is nature’s white chocolate, but 1/2 an avocado + lemon + sea salt = heaven. And why not eat an avocado like this? It is a fruit after all. Now, can you guess what dinner might have been?

Sweet Potato Fries With Parma, Burger, Baby Carrots

Sweet Potato Fries With Parma, Burger, Baby Carrots

It’s a whole different meal when the sweet potatoes are shaped like fries and the burger has ketchup 😉 That would lead me into answering some questions…

Question 1: Do you worry about red meat intake/cholesterol intake/animal-based saturated fat intake?

In short, no. Any concerns I have with eating animals and animal byproducts is rooted in ethical reasons rather than health. That’s not to say I don’t take steps to also get the better products–grass-fed beef and butter, wild fish, etc. I typically buy 1 pound of beef for a week with my groceries. Whether I eat that all in one day or over the week, on the large scale it’s all the same so I’m not phased by it; some days I’ll eat entirely vegan without really trying. Things balance out.

Question 2: How do you prepare your sweet potatoes?

Besides the EVOO hash I described, I’ll typically make my “sweet potato fries” by cutting up 1/2 a large sweet potato, tossing them in EVOO, and baking at 350 for 60 minutes. From there, you can add things like tumeric, Parma, Daiya, or anything else. And, of course, sometimes I’ll just roast a sweet potato whole for 90 minutes. But like I’ve said before, I’m a bit of a snob and refuse to microwave them for a quick-fix.

Question 3: Do you plan your meals?

For singular me in my dorm, extended meal plan doesn’t really work. I have a couple of meals I know how to make and make well, and rely on those so long as I have the raw materials on hand. I’ll generally figure out what I want for lunch and dinner sometimes in the morning. I have planned out a week before for my whole family and that worked great; it just hasn’t been a scenario recently.

Question 4: What’s your favorite chocolate?

That’s a loaded question. In general, I’d probably opt for dark on the fly. But really, picking a single one would be like picking a favorite child: You like each one the most at different times depending on who did something bad last 😉 I would suggest seeing my chocolate review page.

Now, since there was no antioxidants in that white chocolate, I’m afraid I’m just going to have to make up for it in dark chocolate tonight and not set my alarm 😀

My 15 Miles Of Fame

Posted on April 21, 2010. Filed under: Daily Update, Product Review | Tags: , , , , , , , , , , , , , , , , |

One day it’s cheesecake for breakfast, and the next…

Divine Dark Mint Chocolate

Divine Dark Mint Chocolate

…it’s having 1/2 of a Divine Chocolate bar between breakfast and a snack before 10am. Uhhh, whoops? I think it’s easier for me to avoid chocolate than stop eating it. I’ll admit: I felt a little disgustingly full after this and had to wonder, “why?” but that made my workout all the better.

Walking Break

Walking Break

I ran 15 miles in 2 hours, 14 minutes, and 17 seconds. Twice I stopped, filled up a cup with water, and walked briskly. Normally this might bug me but when the temperature increases proper hydration is a must. It was long, sweaty, stinky, and–towards the end–boring, but all in all it felt easy. I actually only “planned” 10 miles, and then felt good enough for 13.1, and finally pushed it to 15. Don’t you love workouts like that? I still had more than enough energy to walk to get pick up kombucha and spinach for lunch.

Spinach Salad With Hemp Oil, Chickpeas And Mulberries, Beets, Citrus Kombucha

Spinach Salad With Hemp Oil, Chickpeas And Mulberries, Beets, Citrus Kombucha

Chickpeas And Mulberries, Beets

Chickpeas And Mulberries, Beets

As good as it feels to be able to run 15 miles, I’d have to say it feels better to love healthy foods. Seriously, I was all over this lunch. I dressed the spinach in Foods Alive‘s hemp oil Sweet & Sassy dressing, tossed about 2 servings of chickpeas with Navitas Naturalsmulberries and sea salt, and added beets(aka Nature’s red dye #40 candy) on the side. So sweet! Have I mentioned I could eat chickpeas ’til the [vegan] cows come home? I totally could.

Chocolate Peanut Butter Zing

Chocolate Peanut Butter Zing

During my 2nd class of the afternoon, I snacked on a chocolate peanut butter Zing Bar. As much as I love chocolate and peanut butter, I’m so so fussy about the actual combination of flavors. And this just didn’t do it for me :-/ The chocolate was nice and sweet, but the whey flavor was whey(hehe…) too strong in the peanut butter part and that was all I could taste. I did love that it had so much protein(13g) and healthy fats(10g); after finding out that I’m a fast oxidizer, I’ve definitely noted ways in my eating habits that would support that.

Red Delicious Apple

Red Delicious Apple

Waiting for dinner, I snacked on a red delicious apple from the dining hall. While I was running my 15 miles, they did a segment on The Today Show about what a “medium sized” apple is and how many calories are in that. Who has time to worry about the calories in an apple? Worry about how much is in a giant plate of pasta alfredo, not an apple…

Grass-Fed Burger With Sweet Potato Fries

Grass-Fed Burger With Sweet Potato Fries

I think I’ve had this same dinner every Wednesday night for weeks now(except last week because I was still sick), and it’ll never get old. I just love the sweet potato fries, although all these baked fries are giving me a craving for the real deal. A little EVOO is just not the same.

Food Inc is on PBS tonight at 9 across the country! Confession: I haven’t seen it yet! And I’m unsure whether I’m going to watch in preference to other shows(Modern Family). As I’ve made a point of, I support a real food movement, especially away from cruelty against animals. That being said, I’m not sure I want to see the cruelty. I also feel like I’ve gathered the main points from blog summaries. Have you seen Food Inc? What did you think, if so?

Ever wonder what or why those crystals form on ice cream? Read this article to find out more. Now, I believe my dearth of ice cream throughout the day calls for some serious catching up tonight between work, don’t you think?

Gross

Posted on April 20, 2010. Filed under: Daily Update | Tags: , , , , , , , , , , , |

Look away if you’re squeemish; everything in this post is rather gross. Yes, there is an ugly side to being a blogger(which we so often choose to show over the pretty or boring). The best piece of advice I got today was from miss Carrie Underwood while I was running; she told me that sometimes that mountain we’ve been climbing is just a grain of sand. In my ears, that was just what I needed to hear. Or what I really needed to hear is another day, another shower.

Vanilla Bean Cheesecake

Vanilla Bean Cheesecake

Cheesecake for breakfast: I can definitely dig it one day, but if I did it more often I’m sure I’d feel a bit gross. This definitely wasn’t the way to start the day on a healthy foot. Then again, it didn’t take much convincing to get me running after class with all that sugar running through me.

11.22 Miles In 1:31:09

11.22 Miles In 1:31:09

I felt very good running today; I could have/would have loved to run farther, but as things were I couldn’t. I felt like a half-marathon might have been fun, but the weather was turning gross and I had a class to attend. Boo 😦 I also stopped conveniently at the Whole Foods salad bar to grab lunch because I didn’t have enough time to make anything. You know what else I didn’t have time to do? Shower. Gross(did I just admit that?). At least I made it to class on time with food.

Grilled Chicken In An Indian Oil Sauce Over Spinach

Grilled Chicken In An Indian Oil Sauce Over Spinach

Trilogy Synergy Kombucha

Trilogy Synergy Kombucha

I just love Indian food, but can we all admit it tends to look like a gross pile of poo? It just does. At Whole Foods, I took grilled chicken and put it in a container with one of the Indian prepared foods’ sauces. I added that to some spinach I had and made a salad with extra chickpeas but ended up not touching those; I grossly underestimated how much chicken I had. Because nothing says “back on track to healthy” quite like kombucha, I sipped on a trilogy for dessert.

Kombucha Stained Pants

Kombucha Stained Pants

I suppose it’s also gross to have mystic mango Kombucha stains on your pants from the day before. Whoops! Great flavor, though. Those pants are in the dirty clothes now; 2 day’s my limit.

Peanut Butter Zig Zag Purely Decadent Ice Cream

Peanut Butter Zig Zag Purely Decadent Ice Cream

I am grossly failing project clean out with my chocolate and ice cream. I don’t even care to mention how many half-eaten pints I already had before buying this one because I “just had to have chocolate and peanut butter”. Oh, and on those chocolate bars? I bought three more when I was at Whole Foods since they’re still on sale. I’m sure I’m saving $3 down the road; I just don’t feel like I am.

Peanut Butter Zig Zag Purely Decadent Ice Cream

Peanut Butter Zig Zag Purely Decadent Ice Cream

So, this was pretty damn delicious. Between the chunks of peanut butter and flaked coconut oil chocolate, I could hardly tell there was chocolate ice cream. But it wasn’t quite as good as the chocolate peanut butter swirl ice cream made with coconut milk. I’ve had this discussion with other foodies: once you’ve had coconut milk ice cream, any other vegan frozen dessert is just gross.

Forming Grass-Fed Beef Patties

Forming Grass-Fed Beef Patties

I’m pretty sure there’s something gross about handling raw beef in a dorm room; I’m just so used to it it doesn’t phase me in the least. And, yes, I wash my hands and everything and keep it all very safe; I run this place like a restaurant 😉

Thai Kitchen Coconut Milk

Thai Kitchen Coconut Milk

I really hate wasting food(I would sooner eat questionable foods than throw them out), and there was nothing wrong medically with this coconut milk. It just sucked. And if you’re going to eat something with the nutritional stats like coconut milk, you should at least enjoy it, right? Right. This went down the drain, and I’m back to 365 organic.

Organic Pink Lady Apple

Organic Pink Lady Apple

This apple was not gross because I picked it out at Whole Foods last Wednesday. Is it gross not to wash organic produce before eating it? Maybe. But how else would I be getting my B12?…

Feet

Feet

I just had to include a picture of my feet in this post; I think of them as the epitome of gross and they’re about the 1 thing I’m a little self-conscious of. The left one has a few blisters which won’t go away(because I won’t stop running), and the 2nd toenail on my right foot died and is now on top of a new one that grew in its place. Gross, right? Something tells me Ryan Hall isn’t about to win America’s Next Top Foot Model anytime soon, either.

Grass-Fed Burger, Sweet Potato Hash

Grass-Fed Burger, Sweet Potato Hash

You won’t find me saying that there was anything gross about this meal. Unlike the last 2 grass-fed burgers I’ve had, the meat was fresh and cooked through. And I cooked the sweet potatoes in a moderate amount of grass-fed cow butter. I’m sure I could just eat a plate of grass but all this is so much tastier 🙂

I don’t even want to ask about all your grossest habits; haven’t we been through enough? I do want to know how do you take your potatoes? I’m sure this is going to sound incredibly snobbish, but I thought about it today and I refuse to microwave a potato if I’m short on time for a meal. I’d rather just not eat it. I can’t explain it, but I suppose it’s like how I prefer steamed broccoli 100 more times than raw. Blech. Anyone else like this, either with potatoes or a similar food?

On Fried Foods And Chocolate

Posted on April 19, 2010. Filed under: Daily Update, Product Review, Rant | Tags: , , , , , , , , , , , , , , , , |

2 things

  1. I’m a little slow on catching up on comments, but I love how you all fully support my chocolate addiction. You won’t be disappointed today, either.
  2. I try to keep this blog food and running focused, leaving out most of the rest of my day and mood. But I’ll admit right now I’m feeling a little frustrated from the housing lottery for next year 😦 The whole thing is a stress breeder, but basically I had to throw my hands in the air, pass, and throw myself at the mercy of the housing Gods, and probably won’t know what’s the deal until the Summer. Right now, I just about want to curl into bed with a bowl of oatmeal and drift off, but I just kept repeating these thoughts in my mind: No matter what, I will be a passionate food blogger, I will run and love it, I will have my wonderful friends and family, and wherever my bed might be or rooming situation will not change that. *Sigh* It feels even better writing it out. On to the eats!
Salad With Broccoli, Snap Peas, Beats, And Golden Sesame Tofu

Salad With Broccoli, Snap Peas, Beats, And Golden Sesame Tofu

I love fried food. What did you think, I’m not human? At least fried tofu is a little healthy, right? Right? I could never fry it myself; that’s why I let Whole Foods do it and only pick it up once and a while. It made this salad glorious, along with steamed broccoli, cooked sugar snap peas, and raw beets. Yum! I haven’t eaten beets in sooo long(I hate their dubious side effect). I forgot how much they’re nature’s candy(along with nature’s red dye #40…)!

I sipped some of Tazo’s new Thrive tea during the meal to make it feel like I was at a Chinese restaurant. You can read my review to find out more about it, or just know that it tasted like a good green tea.

Endangered Species Organic Smooth Dark Chocolate

Endangered Species Organic Smooth Dark Chocolate

That salad held me over a really long time, but eventually I got munchy. Can I say just the sight of the blue butterfly makes my heart flutter a bit for this chocolate bar? I know I said I wouldn’t touch the 3 I bought until I ate up more of the ones I had opened…

I lied. To be fair, I said that because I didn’t want to have another half eaten chocolate bar lying around. There was no survivors here. I ate and loved the whole Endangered Species bar–no shame. The most “dubious” ingredient on the list is only soy lecithin, which–so long as it’s from non-GMO soy–I don’t really give a second thought. Can I now have another?

Spinach, Avocado, Southwest Wildwood Veggie Burger, Mango Kombucha

Spinach, Avocado, Southwest Wildwood Veggie Burger, Mango Kombucha

I packed dinner and ate it at the afformentioned lottery: spinach, 1/2 an avocado with sea salt, a Southwestern Wildwood veggie burger, and a mystic mango kombucha. Really? Could I have upped the fried food today a little more? This was seriously one of my favorite kombuchas thus far. It was also a very different drink. Because of the mango puree, this was more like a juice than a tea, and had a higher sugar content. But it still had that great, raw kombucha fizz to it and a tropical twist. I will definitely be getting this one next time they go on sale again.

I need carbs. Or anything not fried. My brain feels fried from tonight. I’m sure I’ll feel better in the morning. G’night, and go enter Lauren’s giveaway for Amazing Grass goodies.

Sundae Friday At Ben & Jerry’s

Posted on April 9, 2010. Filed under: Daily Update | Tags: , , , , , , , , , , , , , , |

Happy Friday! I can’t get the lyrics “Everybody’s working for the weekend” out of my head; if that was true for you, well good news: it’s here! I have plenty of homework, though, and not much else on my mind for the time besides that; I hope you’ve something more enjoyable on your plate. Speaking of plates(or bowls)…

Maple Tofu And Coconut-Maple Chickpeas Over Spinach

For lunch, I threw pre-cubed, firm tofu from the dining hall in the oven after a little maple syrup bath and had that on one side of the plate. On the other, I added a little coconut milk to the remainder of a can of chickpeas and drizzled maple syrup on top, sprinkled with some sea salt. I’m not sure what made me think to put maple syrup and coconut milk together but I’m so glad I did! Seriously, this combination was divine. I loved having this all over spinach, too, because that just soaked up the juices.

Ben & Jerry's

Ben & Jerry's

My afternoon was pretty tediously spent on assignments which I won’t bore you with. Around 3:30, I stepped out into the rain for a field trip to Ben & Jerry’s on Thayer St. Over the past 5-6 weeks, I’ve started a tradition of “Sundae Friday”. This Friday, I couldn’t have been more enthused for a sundae.

Brownie Sundae

Brownie Sundae

While there, I ordered a brownie sundae. First, they heated up a brownie from the display case. I chose Fair Trade Vanilla as my flavor and two small scoops were added on top. On top of that went a parade of hot fudge sauce, finished off with a coating of fresh whipped cream.

While I try to avoid gluten and dairy fat because of their difficult digestion, I can digest both. And today my longing for a sundae was beyond absurd, so Ben & Jerry’s it was!

And–again–while I don’t love the Ben & Jerry ice cream, I do love their company for their activism and awareness. By the end of 2010 they plan on using only cage-free eggs, and by 2012 have a completely fair trade ingredient list; the vanilla I had today was just the start of that movement. All their flavors already have all-natural ingredients. Even in their scoop shops, I was impressed with the quality of ingredients, certainly not the least of which being fresh whipped cream instead of something more convenient like Reddi Wip.

All Gone

All Gone

While it’s obviously important to eat well and exercise a moderate amount, it’s equally important to treat yourself. And there are other ways to “feel good” about what you eat besides it being healthy. For some, that’s having the 80-20 mindset, and for others that’s veganism; for me, it’s a natural and ethical ingredient list. Have you treated yourself lately? I hope so, or living would get tough! What mindset makes you “feel good”? Of course, at some point we all have to get back on the wagon…

Roasted Broccoli And Sweet Potato, Maple Baked Tofu, Soy Sauce

Roasted Broccoli And Sweet Potato, Maple Baked Tofu, Soy Sauce

Besides the fact that I’m horribly monotonous, this was incredibly tasty. I still had a little maple tofu from Easter to eat up, so I roasted broccoli, sweet potato, and a little extra tofu; I think I made too much tofu in the end, because that dominated the bowl. Oh well, it’s my favorite ingredient, especially when it’s slightly soft and mushy on the inside 😀

As if the monotony couldn’t get worse, I realized 1 week ago today I had the same dinner, and my afternoon snack was 1/2 a vegan cupcake with ice cream, haha. With any luck, that’d mean I’m eating at Grezzo’s tomorrow and Easter’s on Sunday again; wouldn’t that be nice.

The Foods I Crave

Posted on April 8, 2010. Filed under: Daily Update | Tags: , , , , , , , , , , , , , , , , , |

I’m a big fan of “eat what you crave”. I truly think cravings can be a way for your body to tell you something that you need. I also tend to crave really yummy things and might just use that as an excuse to eat them more often. Take your pick.

Grass-Fed Burger, Maple Tofu, Spinach With Sassy Hemp Oil Dressing

Today for lunch I craved a juicy piece of red meat. I do think I crave meat when my body wants proteins or specific vitamins at times but I would never assert that you need to eat meat or even dairy to get those. I think you can be completely adequately fueled and nourished whatever your diet may be so long as you pay a little more closer attention to what you might be missing. On the side I had some maple tofu, not really because I was craving it but it was Easter leftovers. I have craved tofu at times before; that’s always a fun and unexpected craving 😀

Cashew Almond Pranabar

I think my lunch needed more veggies because it wasn’t very filling :-/ Happily, I broke in to the cashew almond Pranabar I packed. Even if it wasn’t what I was craving, this was good!  I never would have guessed from the packaging it would be so chunky and nutty. I love that it’s mostly raw with living enzymes; and the nuts are chunky and delicious 🙂 I definitely can’t wait to try more Pranabar flavors; I might even start to crave them.

Strawberry Chobani

Strawberry Chobani

What I was craving was a strawberry Chobani. My friend, Alex, ate one in our 1pm class and for the next 3 hours I couldn’t get my mind of the smell of sweet strawberries and the Summer air *swoon*. This did not disappoint, but it was a little too tiny to really fill me up before dinner.

Dining-Hall Apple

Dining-Hall Apple

If I ever do crave an apple, it’s a nice, fresh, crisp red delicious, and not this slightly bruised one that I had at hand. That being said, I go with what’s free and convenient. Did you know vegans can get all their Vitamin B12–something normally found in animal proteins–through the decay and bacteria on fruits and vegetables? I guess this was insurance if this burger didn’t have enough :-/…

Chickpea And Cheddar Salad With Maple Syrup And Maple Glazed Nuts

And I absolutely crave chickpeas; I could eat them for every meal, and I know I’m not the only one. They’re like little nuggets of vegan joy. Besides those, I don’t normally crave cheese but I do enjoy it(and love the bloggers who do crave it) and Next Generation Dairy makes a fine raw cheddar cheese. I topped off the salad with some Tierra Farm‘s maple glazed nuts and sea salt. Fun fact: I’m convinced if I ever start craving canned tuna, it means my sodium level is low. I’m also sipping a root beer Zevia with dinner, for anyone who cares; it’s my first stevia sweetened beverage of the day and after no coffee or tea I was craving something other than water.

What are you craving right now? Personally, I could go for some coconut milk hearing  Heather talk about it so much lately. And I haven’t had my healthy ounce of dark chocolate yet today. Hmm… decisions, decisions. If you crave Greek yogurt, you’re in luck with this Oikos giveaway!
