News all over Twitter is that there was a marriage made in heaven today for one blogger. Allow me to steal that and totally abuse it for thematic purposes.

I think it’s well documented that me and chocolate have a deep, deep love affair. Would you bet it’s so great that I was willing to run 5 miles down the road for a gluten-free brownie at 11am? The only problem was that the store opened at noon. Whoops! At least I got a good run out of the deal?

It’s great that raw veggies and Summer salads marry so easily because then I get the best of both worlds. I haven’t liked corn for the longest time, until I tried it raw today thanks to Lauren(who just rocked a Boston half-marathon!). Anyway, raw corn = amazing. It was like adding sugar to the salad and went so well with olives and olive cashew nut cheese. Yum!

Chocolate + Peanut butter. Yes. As much as I want to marry chocolate, I’ll allow it to have its mistress. This has to be one of my favorite ice creams. It’s so perfect, I don’t feel the need at all to try to make it myself. I will just bask in its c+pb perfection.

If I’m like a married person in anyway, it’s that I’m always over a hot stove. Today, I decided to make my own BBQ sauce! The recipe isn’t perfect or flavorful enough yet, so I’ll keep it in my pocket. But it’s so much fun to make your own condiments, I have to say, you should go out(or in) and try it!

Is polygamy legal? Because peanut butter totally has a thing going with local raw honey. As it should; Nothing beats the sweet + salty combo in my books. I ate that over a plain Chobani because really lacking on the protein as of late and that definitely helped to be a filler.

There was also an apple consumed before dinner. That is not invited to the wedding. At all. The last few apples I’ve had have just been way too sub-par. I think we need a “break” like Ross and Rachel.

Homemade BBQ Tofu, Sweet Potato Fries

Everything came together perfect for dinner. It was a symphony of tofu marinated in BBQ sauce and grilled along with some salty sweet potato fries. The onions that were in the sauce got strained out but rather than throw them away, I used them as a topping. Brilliant! They were oh-so flavorful. Have I mentioned how much I love onions as of late? I think that’s another (stinky-breath) marriage right there.

Sweet or salty? Even with my abundant love for chocolate and ice cream, I simply couldn’t live without salty food(hello, Indian cuisine!). That’s probably why I’d sooner opt for a bottle of soy sauce than BBQ sauce. I know they make reduced sodium; do they make enhanced sodium?

Free Of Nothing; Full Of Nutrition

I had a sobering thought on my run today. I hate “veganism”. “What? But I love all my vegan meals and recipes.” That was my next thought. But I kept going back and realizing I really do hate the label, “vegan”.

So then I asked myself “Why?”

Frankly, I’ve known too many people going vegan or vegetarian to avoid certain things for “health”, things like cholesterol and animal fats. And then once a year–probably on their birthday–, they’d have a big juicy steak. “Once and a while won’t kill”. Well of course it’s not going to kill you; but no one can say the same for the cow.

I think there are a lot of ways you can be healthy without strapping on the vegetarian label and shunning things out of your life. That’s not why I eat vegan at the meals and times I do. Rather, it’s to bring certain nutrients in.

My lunch wasn’t healthy because of the absence of animal products; it was healthy because of the abundance of plant-based foods. That, to me, is what veganism is all about: The emphasis of a plant based diet. As much as I’d love to think that way 24/7, I’ll undoubtedly slip up sometime and look at something for being “dairy-free” or “free of animal by products”. What I really wish I could see 100% of the time is how something is free of nothing, but full of nutrition.

Of course, allergens play a role in this, too. But I would count those as a separate case. A lactose-intolerant person would eat coconut milk ice cream for a very different reason than a vegan. I’m–well–I’m neither. But I love how this tastes and feels, and do try to avoid dairy to some extent for better digestion.

Desserts in general, though, I would say get a pass on ever being “healthy”. No matter how you cut it(a fudge joke), my microwave vegan chocolate fudge and microwave vegan peanut butter fudge are full of sugar. That doesn’t mean they aren’t full of flavor, either, or that you shouldn’t make them 😉

That fueled me to run around my neighborhood 8 times for a total of 9 miles. Perhaps my legume love isn’t such a terribly beneficial thing since I needed to make a pit stop into the bathroom after lap 6. At least I was close to home and didn’t go on a road run like I was thinking.

Afterwards I refueled with my lunch posted earlier, and when that wasn’t enough I added an apple. Later on, at the grocery store, I grabbed a bag of baby carrots to eat in the car(or the walk out of the store). If you went through a list of the allergens raw fruits and veggies are “free of”, we’d be here all day; it’s better to think of all the nutrition they’re “full of” in my mind. And tonight was “full of” recipes:

Sweet Potato Fries

Ingredients

  • 1 medium sized sweet potato
  • 2 teaspoons EVOO
  • salt to taste

Cut the ends off of a sweet potato. Slice all the way through horizontally. With the cut side down, make strips 1/2-3/4 inch thick. Cut those again lengthwise to make into “fry” shapes. Repeat with the other 1/2. Line a baking pan with aluminum foil. Add the fries and EVOO to the pan and massage with your hands until completely covered. Preheat an oven to 350 and bake for 60 minutes. Season to taste.

Vegan BBQ Bean Poutine

Ingredients

  • 1 serving sweet potato fries
  • 1/2 cup vegan BBQ beans
  • 1/4 cup mozzarella style Daiya
  • 2 strips tempeh bacon(optional)
  • 3 pieces fresh basil

Cook the sweet potato fries according to directions. Pile on a plate, and add on top the BBQ beans. Heat in the microwave through for about 2 minutes. Add on the Daiya and heat another 30 seconds to melt. If using, cook the tempeh bacon through until crispy according to manufacturer’s directions. Cut into small pieces and crumble on top. Garnish with basil.

Served with a side of organic pickles. Such a simple and delicious meal for one(I’m the only one home tonight). What are you full of today? I would have to say that I’m full of beans!! and also joy that I got so much on my to-do list done. The only thing I hope for this weekend to be “free of” is stress before my last final, because that’s been giving me plenty of that.

If I Didn’t Know Any Better, I’d Think I Were Pregnant

I attented 8th grade Sex Ed, so I’m pretty sure I’ve got the whole gender thing down and am safe on this one. But let’s check the symptoms:

  • Hit or miss hunger
  • Odd cravings
  • In and oat of the bathroom all day
  • Tighter pants
  • Constant irritability
  • Sore legs and ankles

Do I have a bun in the oven or what? Granted, some of these are explainable. You’d be sore to if you’d been walking up and down 3 flights of stairs to do laundry and cook all your meals. And the weekend eating probably could account for numbers 3 and 4. Oh, and who the hell wouldn’t be irritable if your only final left for your least favorite class isn’t for another 8 days and you’re just shooting the breeze? Blah. Let’s try that again.

Sweet potato and maple peanut butter. Odd? Yes. Delicious. OMG was that a great combo. I would definitely have it again sometime soon. The EVOO and the salt on fries gave it such a great added touch. The burger–let’s just say that meat was FAR too old :-/ I cooked it well through and hope it’d be fine. Even though I wasn’t terribly hungry going in to this meal, I wasn’t full afterwards either.

Alright, not like I was expecting this to do much for me but it looked delicious and if nothing was going to work I might as well have my sweets, right? The good news was that, after a day, the peanut butter fudge started to set up. I’m still not happy with it enough to give a recipe, though. In the mean time, I’ll just finish off the pan 😀

After I ran a few errands around campus, I had two strong cravings: One was for an ice cream flavor I don’t have. Great. The other was for chickpeas. Well… alright.

Why the post before dinner? Well, right now I’m deciding whether I want to walk to Whole Foods to get the aforementioned ice cream. When I leave tomorrow, I’ll already probably be leaving behind a small fortune of ice cream. Aw, hell, you only live once.

Lunch was a perfectly prepared burger on a bed of spinach with pan-finished EVOO sweet potato chunks. If that doesn’t catch your eye, I don’t know what will. For these, I quartered 1/2 a sweet potato and let those roast for an hour or so. After that, I quickly tossed them in the pan with the rendered beef fat and then finished with a splash and fry of EVOO. As Miss Rachael Ray would say, yummo! Who needs salad dressing? The EVOO’s on the potatoes!

After an afternoon of classes, I just needed to unwind with some good white chocolate, so I went for Green & Black’s. Most dark chocolate, even when it’s sorta bad, is good; just look for the stuff with no vegetable oils and all-natural ingredients and it’s going to be tasty.

Milk and white chocolate are more troubled beasts. But a good organic brand like Green & Black’s never fails. I love it when you can see the vanilla beans! Now, let’s no one point out white chocolate has 0 of the antioxidants and more of the sugar and we’ll all be happy, capiche?

It’s a whole different meal when the sweet potatoes are shaped like fries and the burger has ketchup 😉 That would lead me into answering some questions…

Question 1: Do you worry about red meat intake/cholesterol intake/animal-based saturated fat intake?

In short, no. Any concerns I have with eating animals and animal byproducts is rooted in ethical reasons rather than health. That’s not to say I don’t take steps to also get the better products–grass-fed beef and butter, wild fish, etc. I typically buy 1 pound of beef for a week with my groceries. Whether I eat that all in one day or over the week, on the large scale it’s all the same so I’m not phased by it; some days I’ll eat entirely vegan without really trying. Things balance out.

Question 2: How do you prepare your sweet potatoes?

Besides the EVOO hash I described, I’ll typically make my “sweet potato fries” by cutting up 1/2 a large sweet potato, tossing them in EVOO, and baking at 350 for 60 minutes. From there, you can add things like tumeric, Parma, Daiya, or anything else. And, of course, sometimes I’ll just roast a sweet potato whole for 90 minutes. But like I’ve said before, I’m a bit of a snob and refuse to microwave them for a quick-fix.

Question 3: Do you plan your meals?

For singular me in my dorm, extended meal plan doesn’t really work. I have a couple of meals I know how to make and make well, and rely on those so long as I have the raw materials on hand. I’ll generally figure out what I want for lunch and dinner sometimes in the morning. I have planned out a week before for my whole family and that worked great; it just hasn’t been a scenario recently.

Question 4: What’s your favorite chocolate?

That’s a loaded question. In general, I’d probably opt for dark on the fly. But really, picking a single one would be like picking a favorite child: You like each one the most at different times depending on who did something bad last 😉 I would suggest seeing my chocolate review page.

Now, since there was no antioxidants in that white chocolate, I’m afraid I’m just going to have to make up for it in dark chocolate tonight and not set my alarm 😀

And it’s all thanks to Caitlin for this flavor pairing of sweet potato and BBQ beans. 80% of the sweet potato fries were completely burnt; one of the perks of being home surely will be that, at home, the oven isn’t floors below me. And in case you were wondering, fork or fingers on the fries? It’s all dirty and all delicious, so yes and yes.

I feel like I went everywhere today, and all by foot! So much for rest day? But it was fun! I did not expect the RISD art sale to be in swing again. There was so many amazing paintings and potteries, any of which I’d have been lucky to own. When I hit downtown, Providence couldn’t have reminded me of Boston any more, and for the first time. I’ve never really seen the city like this; all my time so far has been rainy or cold but today was perfect. Of course, the reason for my walking extravaganza was this:

I can’t believe the half-marathon is just tomorrow! The nerves are starting to set in, as this will be my first “real” half-marathon. The Race For The Border was fun, but it felt more like 250 people getting together in New Hampshire to run around a bit. This feels real. The best part of the walk back was knowing that I started lunch at 9:30 and it’d be waiting for me.

I’ve been really intrigued by Caitlin’s combination of sweet potatoes and BBQ beans. I also loved the combination of sweet potato fries and Daiya from last night so much I knew I wanted it again! Why not combine the two in a poutine-like fashion? This was divine. The flavor came through as some salty, sweet, and fatty bit of deliciousness with crisped potato fries, soft beans, and gooey Daiya. I’m going to need several more plates of this over the Summer.

My options for the early afternoon were work or do chores. I’d rather do chores. I walked down to Eastside Market and my little Whole Foods to get some ice cream(majorly on sale), 3lb of organic sweet potatoes, beans(dinner), a bar(my “breakfast” tomorrow), and some chocolates(longly considered and purchased enthusiastically).

This hit the spot. I used the last of my mint Sweet Scoops frozen yogurt with a good amount of Elan’s vanilla. Cost per scoop, this is hands down the best vanilla ice cream out there. It was only $3 for a quart on sale! It’s local to New England and the flavor is absolutely fantastic; it tastes like a fresh, frothy vanilla milkshake all the time. And, of course with me, the ingredient list is rather clean.

As big as my chocolate tooth is, my vanilla tooth is right there with it; I had a small bowl of oatmeal with some 365 peanut butter mixed with Madhava’s vanilla agave. Vanilla makes for the best everything: peanut butter, chocolate, cookies. God bless vanilla.

I’m really digging this Daiya. I don’t even like real mozzarella this much! I figured because it’s so flavorful it must be loaded with added sugars. Nope! There aren’t any! It puzzles me, but all I care is that it’s good. And there’s never enough room on the plate for my greens, so instead I just put them in a separate bowl after dressing with Foods Alive sweet and sassy; you can’t tell but that’s fully packed in.

OK, kiddos, since I won’t have time to post in the morning, here’s my game plan: I’m going to try to be asleep by 10:30 tonight to get hours and wake up at 6:30. After my morning routine, I’ll either be walking or getting a ride down to the starting line at 7, snack on my Amazing Grass chocolate peanut butter protein bar, and the race will start at 8. My goal is to do it in under 1:40, and my bib is 3761. Nervous? Yes. Excited? Yes. But I figure that’s all part of the recipe for success. As the best of them say, here goes nothing!

Can I Petition A Petition?

Happy Saturday! I for one am more than happy to be closer to Summer and living at home with a full kitchen and refrigerator. Have you all seen this petition yet? Basically, it’s a petition for Obama and his family to become vegans for their influence. Uhhh, what?! I fully support those who are vegans, or vegetarians. But how on earth could anyone want to dictate how another person eats? Especially when some of those are just little girls?

If I posted this when I first heard about it, I’d have some not-so-choice words, but I think by now my minds mulled it over to speak better of it. If anything, we should be preaching tolerance–tolerance of those who have a different way of thinking or path in life. This petition shows no more tolerance than the intolerance you could find against vegetarianism in a Southern cattle farm community. More importantly, you can eat ethically and aware without being a vegan, which is part of what Michelle Obama has already done through her time in the White House. What do you think of this petition? Besides that it’s going nowhere, I think it’s a little rude. And–as always–I’m on a mission to show you can eat well and ethically without devoting yourself to any label.

Motivated by Kath, I’ve been getting in to canned salmon for extra omega-3’s without much fuss. I mixed mine with maple syrup and walnut oil for something packed with even more essential fats and tasty! Over the top was Tierra Farm‘s dried fruit and baby carrots, with salad dressed in Foods Alive hemp oil dressing.

On my way back from my grocery trip, I picked up a trilogy kombucha at a cafe because I felt a little down about the whole trip :-/ A lot of it was on the store’s sale, which was good. But I probably could have saved more in coupons if I was better organized. At least I didn’t blow the project cleanout challenge too much. And you can’t say I don’t eat what I buy:

Isn’t it dreamy? My whole point in going was to get some whipped cream to make a sundae. They didn’t even have regular–just non-fat sugar-free or Rice Whip, which is dairy and soy-free. The latter seemed less processed, so I went with that and made a sundae with So Delicious chocolate coconut milk ice cream. The fudge sauce was simply cocoa powder and agave nectar mixed together. Voila! OK–the Rice Whip tasted REALLY fake; if you’ve ever had rice milk, just imagine that in an airier form. Besides that, this Friday sundae was delicious and a perfect before-dinner treat 🙂

I made a 1/3 a pounder hamburger but undercooked it far too much 😦 I really wanted to try the daiya so instead of eating it straight from the bag I made some sort of vegan cheese fries–YUM. This was better than mozarella cheese; it was crack. I’d be lying if I said I’m not planning on having it again today(maybe twice).

I love Fage, especially their cherry flavor. Unfortunately, it’s about expensive as they come around here. At least it’s on sale at Whole Foods this week. The cherry here tastes just like the cherry dips at Dairy Queen! Yum! Next time I’m trying full fat. The peanut butter–again, since I’ve figured out how to make cookie dough nut butter, I’m less enthused about paying someone to do it for me. Besides, this one seems really fake since half of it melts over oats and the other half is still solid :-/ Until it’s gone, though, I’ll live it up and enjoy it.

What are your thoughts on mint? I made my gluten free chocolate brownies with a lot of mint extract once and was told it was like mouthwash; hell, I thought they were great! The more mint, the better in my opinion. Even though it’s often paired with chocolate, I wouldn’t mind a dessert exclusively with mint as the flavor. …it’s having 1/2 of a Divine Chocolate bar between breakfast and a snack before 10am. Uhhh, whoops? I think it’s easier for me to avoid chocolate than stop eating it. I’ll admit: I felt a little disgustingly full after this and had to wonder, “why?” but that made my workout all the better.

I ran 15 miles in 2 hours, 14 minutes, and 17 seconds. Twice I stopped, filled up a cup with water, and walked briskly. Normally this might bug me but when the temperature increases proper hydration is a must. It was long, sweaty, stinky, and–towards the end–boring, but all in all it felt easy. I actually only “planned” 10 miles, and then felt good enough for 13.1, and finally pushed it to 15. Don’t you love workouts like that? I still had more than enough energy to walk to get pick up kombucha and spinach for lunch.

As good as it feels to be able to run 15 miles, I’d have to say it feels better to love healthy foods. Seriously, I was all over this lunch. I dressed the spinach in Foods Alive‘s hemp oil Sweet & Sassy dressing, tossed about 2 servings of chickpeas with Navitas Naturalsmulberries and sea salt, and added beets(aka Nature’s red dye #40 candy) on the side. So sweet! Have I mentioned I could eat chickpeas ’til the [vegan] cows come home? I totally could.

During my 2nd class of the afternoon, I snacked on a chocolate peanut butter Zing Bar. As much as I love chocolate and peanut butter, I’m so so fussy about the actual combination of flavors. And this just didn’t do it for me :-/ The chocolate was nice and sweet, but the whey flavor was whey(hehe…) too strong in the peanut butter part and that was all I could taste. I did love that it had so much protein(13g) and healthy fats(10g); after finding out that I’m a fast oxidizer, I’ve definitely noted ways in my eating habits that would support that.

I think I’ve had this same dinner every Wednesday night for weeks now(except last week because I was still sick), and it’ll never get old. I just love the sweet potato fries, although all these baked fries are giving me a craving for the real deal. A little EVOO is just not the same.

Food Inc is on PBS tonight at 9 across the country! Confession: I haven’t seen it yet! And I’m unsure whether I’m going to watch in preference to other shows(Modern Family). As I’ve made a point of, I support a real food movement, especially away from cruelty against animals. That being said, I’m not sure I want to see the cruelty. Everything Domestic

I can’t tell whether I’m happy or sad Sunday night has come already. Today, I was lucky enough to have done most of my work and not have anything planned. The next day that’ll be like this is… farther off than I know. So instead of trying to do more, I just took care of everything domestic, starting at the gym.

I ran a rather speedy 10 miles while watching the first episode of the new Dr. Who season on my ipod(!!). So excited that’s back, and even more excited that I was able to multi-task like that because otherwise those miles would have felt looooong. Lunch was definitely not a quick post-workout meal, but it was well worth the time put around it.

I threw sweet potato fries as soon as I got back, and after 30 minutes they weren’t crispy but definitely edible. I tossed those with some cayenne parma for serious flavor. The burger was meh. It was a lot like the last, in that a) I undercooked it and b) the meat was of questionable quality/age. Getting sick threw off my “mojo” but now I’m happy those burgers from last week are all gone. And my gingerade kombucha was tangy, but not fizzy; what gives? I hope the probiotes were still alive… Not being able to keep sea monkeys I can deal with, but killing kombucha and I’d really feel shame.

I walked the 1+ mile to Whole Foods in the mediocre weather because I’m not sure when/if I’ll have time in the coming days. If you’re wondering “Why the money?”, it’s because I’m following suit with Holly on Project Cleanout. Not only do I have more than enough lying around to eat, but I’ll literally have to clean out the dorm in a month, so it’d be a lot easier if most of it wasn’t here. I gave myself a $30 limit to buy whole foods I’ll eat over the week.

If you count these in, I definitely went over budget. “What’s the deal, Evan?” Well, the deal is that these were a deal. I knew I’d be buying my favorite chocolate bar again some time some day, so I bought 3 while they’re on sale to save $3. I’m also putting them out of reach so that I won’t touch them until I eat more of the other chocolate bars I’ve started or won’t replace. And the vanilla bean cheesecake was 1/2 off, so I couldn’t say no. All of these little “splurges” that aren’t real groceries I buy with a gift card I was given by my neighbors, and I save the grocery money for fresh foods.

I’d like to say I snacked on a healthy egg, but instead I snacked on a peanut butter egg from my Easter basket. This was a Lake Champlain creation with milk chocolate, white chocolate(somewhere), malt, peanut butter, and peanuts.

If I realized before it had wheat, I probably would have passed it up. Honestly, it was just alright and not really worth risking setting off my gluten intolerance. I loved how much of it was peanut butter; it was like eating straight out of the jar. But it also had a pretty “cheap” taste to it even if it was all-natural. Clearly, I’m not a fan. But I would have felt amiss not to have a giant egg this time of year.

I also snacked on the largest red anjou pear I’ve seen from the dining hall while dinner cooked, and did chores around the place. My new “saving grace” is baking soft tofu for 90 minutes instead of pressing it first and still getting the same texture. Pressing’s great, but it uses up too much paper towels, and I much prefer this no-fuss method.

For dinner, I made a simple salad with spinach(!!), maple baked tofu, Next Generation organic raw cheddar, carrot shreds, red onion, Tierra Farm’s maple glazed nuts, and watered down maple syrup for dressing. Perhaps it’s being a blogger, but I’ve gone for not caring for any greens to seriously preferring spinach over any other, so I’m always happy when the dining hall has that. Besides that, I loved how easy and no-fuss this meal was 🙂 What’s your favorite no-fuss meal? I could always use suggestions for that.

On the agenda for tonight:

  • Write up a short paper
  • Call my cousin to say happy [belated] birthday
  • Eat cheesecake!

The weather today was lovely. It took every ounce of my strength not to break rest and move around outside. Instead, we gassed up the grill to enjoy the sun. I prepared sweet potato fries with EVOO and indian spice last night before I got sick, so we reheated those up along with a grass-fed 85/15 burger. And then there were Sea Salt & Vinegar Pop Chips with extra sea salt. Yum! I think I’m addicted to chips in the good weather.

Disclaimer: I didn’t actually buy either of these; I have enough bars to last me through a snow storm and more. But I did find it interesting that 6 cookie dough Luna protein were only $5.99! Boomi Bars are a good deal more natural than the Luna’s, anyway. I loooved the nutty flavor of this one; something about whole hazelnuts really put a smile on my face 🙂 And it was a good deal fruity, too. I made one last purchase at Whole Foods that was a tough decision to make: Yummi Bears Sour multi-vitamins. In the past, I’ve always been somewhat against multi’s, saying that it’s better to just pay and get your nutrition from the foods you eat! And I still believe that. But lately I’ve been frustrated with the lack of fresh fruit and vegetables in my diet. And, short of going to Whole Foods every few days and dropping way too much $$ on produce, I haven’t been able to find a fix for this. The sudden illness just put that all over the top, so I thought for my last month on campus I’d keep the nutrition up by taking a multi-vitamin to ensure nutrition. Yes, I realize these are children’s and yes I realize they’re sour bears. Why else would you think I’d buy them 😉

Dinner was a simple 5 ingredient meal:

  • Soy Sauce
  • Tempeh
  • Tofu
  • Broccoli
  • Coconut Shreds

I cubed the tofu and tempeh and threw those in a pan over medium-high heat. As they were cooking, I added the soy sauce to sauté them in. Meanwhile, I steamed broccoli in the microwave for 3 minutes and then threw that in the pan for the last few minutes while everything cooked down. Over the top, I added shredded coconut for the nuttiness of it(it probably would be more flavorful toasted but I already had washed the pan and moved upstairs. I don’t normally love tempeh, but from time to time it’s a nice change of protein.

Going home reminded me of all the reasons it’s a great place to be. In fact, I’ve found it easier not to want to go home simply by forgetting all the reasons it’s a great place to be. But, alas, I can’t fight those feelings anymore, and so I made a list of the 10 things I’m looking forward to about living at home over the Summer.

  1. Montana(and the other people, potentially)
  2. A bigger refrigerator
  3. A quiet room and bed
  4. Fresh produce and food
  5. Grilling
  6. Baking
  7. All my wonderful neighbors
  8. Farmer’s markets visits
  9. A paying job(?)
  10. Less expectations and more time to be lazy 😛
