Uncooking On Memorial Day

I find it ironic that on the epitome of BBQing and Grilling is when I decide to have another one of my raw-kicks.

I started my morning with a run, which called for prefueling with chocolate. Lindt is obviously not a raw chocolate brand but still tasty, and even non-raw dark chocolate has a good amount of antioxidants. Chomp on 🙂

I only aimed for 9 miles but ended up doing 11 after I got way too in to my new playlist. I think I’ve listened to some songs by Adam Lambert and Sugarland 5+ times over the past few days. Whoops?

All I’ve been craving lately for lunch has been raw salads. We seriously don’t have enough raw veggies in this house to satisfy that! I used half an avocado squirted with lime juice as the “meat” here, and around it added raw corn, lemon garlic marinated olives, and onions caramelized in a little EVOO(obviously not raw but cooked onions taste 1000 times better than raw in my opinion). The result: delicious. This was like some backwards guacamole salad. Loved it!

Zevia Twist

It seems my sweet-tooth, which has been in and out recently is back. A Zevia twist tasted perfect mid-afternoon for a boost. Just like a diet Sierra Mist!

The piece d’ resistance of the afternoon was this Memorial Day sundae. I really want to make a maple walnut flavor ice cream! Along with soooo many others. But since there’s only so much room in our freezer, I took some of the ice cream I made with raw milk and covered it in NH maple taffy and freshly toasted walnuts. Yum! Except whole milk ice cream is just too icy as I’ve found out; you really need half and half to make something decently creamy(or coconut milk at a 2:1 ratio with water for a vegan half and half).

It turned out that I went from being the only one with plans for Memorial Day to being the only one home. How does that happen?! Not going to lie: I was a little upset. But instead I decided to make this a golden opportunity to try a new recipe I’ve been dying to make.

First I snacked on some Crazy Richards chunky pb straight for some energy and got the food processor out.

The recipe I wanted to (not) cook was raw taco meat, so I went straight over to Averie’s blog and found her super simple recipe. Here it is below; I followed it to a T except used her variation of swapping out the spices for predone(Trader Joe’s) taco seasoning.

Averie’s Raw Vegan Taco Nut “Meat”
1/2 C Raw Almonds
1/2 C Walnuts
1/3 C Sun Dried Tomatoes loosely packed (If using oil packed, may slightly reduce amount of olive oil added)
1/2 Tsp Chili Powder (or to taste)
1/4 Tsp Cayenne Powder (or to taste)
2 to 4 Tbsp Olive Oil (or hemp, flax, etc.)
Optional: 1 Tsp Salt (or to taste)

Wow! I’ve never had something so flavorful. And I will be making this again. It certainly wouldn’t suit if all you want is that beef-flavor or meat. But if you’re just looking for something fun and tasty, this totally works. I ate it along a gingerade kombucha and home fries made with white potato, sweet potato, red onion, olive oil, salt and pepper. Of course, really Averie would probably hate this dish because it has about a days worth of sodium in it(and I’m eating it with a salt shaker ready and standing by).

And now I’m watching Knocked Up on TV. I love the movie, but some things are just better done when you have the house to yourself 😉

Where do you go for new recipes? This is something I always get asked by people I cook for. Almost all my recipes come or were derived from blogs, FoodNetwork.com, or Allrecipes.com. Maybe this is a bias crowd to ask this question, but really I have to think this is what the internet is for!

Gross

Look away if you’re squeemish; everything in this post is rather gross. Yes, there is an ugly side to being a blogger(which we so often choose to show over the pretty or boring). The best piece of advice I got today was from miss Carrie Underwood while I was running; she told me that sometimes that mountain we’ve been climbing is just a grain of sand. In my ears, that was just what I needed to hear. Or what I really needed to hear is another day, another shower.

Cheesecake for breakfast: I can definitely dig it one day, but if I did it more often I’m sure I’d feel a bit gross. This definitely wasn’t the way to start the day on a healthy foot. Then again, it didn’t take much convincing to get me running after class with all that sugar running through me.

I felt very good running today; I could have/would have loved to run farther, but as things were I couldn’t. I felt like a half-marathon might have been fun, but the weather was turning gross and I had a class to attend. Boo 😦 I also stopped conveniently at the Whole Foods salad bar to grab lunch because I didn’t have enough time to make anything. You know what else I didn’t have time to do? Shower. Gross(did I just admit that?). At least I made it to class on time with food.

I just love Indian food, but can we all admit it tends to look like a gross pile of poo? It just does. At Whole Foods, I took grilled chicken and put it in a container with one of the Indian prepared foods’ sauces. I added that to some spinach I had and made a salad with extra chickpeas but ended up not touching those; I grossly underestimated how much chicken I had. Because nothing says “back on track to healthy” quite like kombucha, I sipped on a trilogy for dessert.

I am grossly failing project clean out with my chocolate and ice cream. I don’t even care to mention how many half-eaten pints I already had before buying this one because I “just had to have chocolate and peanut butter”. Oh, and on those chocolate bars? I bought three more when I was at Whole Foods since they’re still on sale. I’m sure I’m saving $3 down the road; I just don’t feel like I am.

So, this was pretty damn delicious. Between the chunks of peanut butter and flaked coconut oil chocolate, I could hardly tell there was chocolate ice cream. But it wasn’t quite as good as the chocolate peanut butter swirl ice cream made with coconut milk. I’ve had this discussion with other foodies: once you’ve had coconut milk ice cream, any other vegan frozen dessert is just gross.

I just had to include a picture of my feet in this post; I think of them as the epitome of gross and they’re about the 1 thing I’m a little self-conscious of. The left one has a few blisters which won’t go away(because I won’t stop running), and the 2nd toenail on my right foot died and is now on top of a new one that grew in its place. Gross, right? Something tells me Ryan Hall isn’t about to win America’s Next Top Foot Model anytime soon, either.

You won’t find me saying that there was anything gross about this meal. Unlike the last 2 grass-fed burgers I’ve had, the meat was fresh and cooked through. And I cooked the sweet potatoes in a moderate amount of grass-fed cow butter. I’m sure I could just eat a plate of grass but all this is so much tastier 🙂

I don’t even want to ask about all your grossest habits; haven’t we been through enough? I do want to know how do you take your potatoes? I’m sure this is going to sound incredibly snobbish, but I thought about it today and I refuse to microwave a potato if I’m short on time for a meal. I’d rather just not eat it. I can’t explain it, but I suppose it’s like how I prefer steamed broccoli 100 more times than raw. Blech. Anyone else like this, either with potatoes or a similar food?

It’s the last Friday in Lent and I didn’t slip! Not on eating meat, not on eating “prepared soy”, not on anything. Trust me: There have been some times when I almost threw it all by eating bacon peanut brittle on a Friday(only I could make this mistake…), but not today.  Of course, my biggest challenge came on the last day…

I ended up eating lunch at Whole Foods again, this time with my dad on the way to Boston and then home for Easter weekend. When I got to the salad bar, all I could find was meat and tofu. And it looked goood. The one fish I was able to find had a wheat cracker coating, so I brushed that off and added a lemon wedge. It was totally overcooked and tough; in a phrase, it was Lent.

Actually, before lunch I went for a run. My “prerun fuel” was 4 more squares of Green & Black cherry dark chocolate. Would I fuel with anything else 😉 I did not feel like I had energy the first 3 miles; in fact, I thought of cutting it short early just because it felt like I was “chugging along” and not really running. I may not run pretty, but I have good endurance and I convinced myself I could “chug” the full 9.5.

When I got back, my jaw almost dropped looking at my watch. I “chugged” the 9.5 mile route 3 minutes faster than I had so far this year. Apparently, I don’t know my own speed! That kale and avocado salad from yesterday must have been my running magic, which is why I took it again today 😉

I don’t suppose it would surprise you if I told you we went to another Whole Foods after passing through Boston, would it? This cupcake was part of my birthday celebration; it’s “chocolate cupcake with chocolate chips, a chocolate ganache center and chocolate frosting” and all vegan. It’s made by Kickass Cupcakes, so it’s all-natural, but it’s not gluten-free. I’ll just be paying for that last part later.

I can’t believe this must have been the first time I went in to a Trader Joe’s in over a month! There were some new goodies to gawk at, but I wasn’t there to dilly-dally. My favorite fun find was milk chocolate peanut butter eggs(!!). I’m thinking/hoping these are going to be like the Reeses’ eggs.

Putting away the groceries, I snacked on an organic apple. The coconut milk I was trying to bring home totally went bad after 5 hours in the car 😦 Good thing we got a new can. I did what I always do when I feel like a simple meal; I threw maple coated tofu, steamed broccoli, and raw sweet potatoes in the oven at 350 for 45 minutes. At least I know I couldn’t go wrong here. And you really do learn something new everyday. At dinner, my mom told me the man who started Nasoya lived two doors down when we first moved in(I would have been 2 or 3). I’ve always known Nasoya’s a Massachusetts company, but I didn’t realize we were that close. I like to think that means I’m eating local whenever I have tofu 😉

And now, as you might have guessed, I’m at home. Man Vs. Food is on the Television. I completely embrace the crappy and addictive shows whenever I can get them. Happy Friday and do enjoy whatever is your “guilty television programming” 😀
