When I got home from my run, I showered and immediately had 4 projects going in the kitchen at once. 2 of them were rather simple. Before my run I ate a piece of microwave vegan chocolate fudge and that powered me through 9 laps of the neighborhood. I definitely did not feel fast today but after 3 days of outdoor running on hills I guess that’s to be expected.

Raw Chocolate Chip Ice Cream

Ingredients:

  • 1 3/4 cup cashews
  • 1 3/4 cup water
  • 1/2 cup amber agave
  • 1/4 cup vanilla bean infused sugar
  • 1/2 cup cacao nibs

In a blender, puree the first 4 ingredients until they are fully mixed. Store this liquid in a container in the refrigerator for a few hours to chill. Once ready, pour into ice cream maker and work to manufacturer’s directions. Add the cacao nibs 5 minutes before being done. Eat immediately or keep in a tight container in the freezer.

This was so fun to make! I can’t wait to make quarts and quarts of ice cream this Summer. I let this sit in the freezer for a bit but I think the texture was actually better right after being churned. It definitely had a cashew flavor, but not in a bad way. This would be better with an actual vanilla bean but my way costs considerably less. Did I mention it was delicious? Let’s just pretend the cashews have no calories.

…What? Was I supposed to have only one bowl? Yeah, not happening. While I could try to make some excuse that this is raw and that somehow makes it healthier, ice cream is ice cream. I will say that this is a really fun way besides oatmeal to get in some NUTrition.

My dinner was boring compared to that. I really wanted to keep eating raw: raw salmon, that is. But as much as I love rural America for its honey, I do not love it for its lack of Whole Foods and cheap sushi bars. I told myself if I wasn’t going to feel ethical eating that fish, I should just be happy eating beans. And I am. Seriously, buy 365 baked beans. They will change your opinion on canned goods.

Favorite raw vegetable? I don’t like many vegetables raw but baby carrots I don’t mind. Here’s a note: raw turnip does not taste all that good. Keep that in mind.

This run was so long, and so brutal; the winds were intense today and it felt like wherever I ran, I was going into them. It doesn’t help that my neighborhood is hilly or that I forgot to stretch after yesterday’s run(rookie mistake). But I’m always prouder of a tough run I stuck out than a longer run that felt easy.

This was certainly not candy. Whatever made a New England boy think he could cook Thai food? I just heated up tofu in a pan and simmered it with coconut milk and yellow curry paste. It was delicious, but I was a little too quick to throw in extra salt and garlic, so that my mouth was on fire. I couldn’t in good conscious feed this to anyone without having them sign a waiver.

The peanut butter tastes OK–certainly not better than candy–and is only high protein because of whey powder(not a fan) so I probably won’t buy another container once I’m done with this one. Let’s just say I walked there and back in less than 15 minutes. When I got there, I asked the woman who runs it if they sold raw honey and she looked at me as if to say “Are there fish in the sea?” God I love rural America. Anyway, I bought a jar, walked home, and dug in with a spoon.

Oh my stars. Words can not express how good this tasted. No honey I have ever had compares to raw, crystallized honey. This was the best $6 I have ever spent. Expect a lot of this over the Summer; she tells me the hives are almost ready for a second turn, whatever the hell that means.

I’ve Caught A Bug And I’m Burnt Out

If you haven’t yet got to read my post on food combining and the comments, it’s well worth it! There are good opinions weighed in by experts, and if anything I know I’ve mentioned I’m no expert. What’s there is what I’ve noticed and what works(or doesn’t) for me, but if you have a different experience, please share!

This week, I caught 2 bugs. There was the bug that made me so sick, I couldn’t so much as move out of my chair for 2 hours. That’s not gone, but it’s a lot better now, and I’m sure I’ll feel great again in a few days. When I went home, though, I caught a second bug: The Summer Bug. Since then, all I’ve been able to think about is time not at school. I can’t wait for the opportunity to make real recipes from scratch like when I made white bean and kale soup, or do Summertime activities like pick blackberries and raspberries(with better quality pictures, this year). It’s definitely burnt me out of school with just 1 month to go. I’m trying to stayed focus; I even did homework first thing when waking up this morning. But this bug could be too strong. Have you caught this bug yet? What’s the remedy? Or, let’s just embrace the bug. What are you looking forward to most about Summer?

As proof I’ve caught the bug: A shamefully large portion of my night was spent trying to find ice cream shops around Boston and Massachusetts that don’t use artificial ingredients. I’ve got the name of a store with organic gelato in my pocket. Meanwhile, this gelato tasted heavenly. I’m not even a huge fan on cranberries generally but put them(or anything) with white chocolate and you’ve got me. Since I only had a serving of yogurt at breakfast, this clocked me in right around my 3 daily servings of dairy.

Another new obsession on the warm front this time is mixing 365 peanut butter with Madhava vanilla agave: ah-mazing. I’ve found adding a little peanut oil makes it a bit runnier, too, but not super thin, so this bowl was perfect. The joy of the night was falling asleep to the sound of rain; I hate being out in the rain but I love listening to it, and the same with thunderstorms.

Like I mentioned, this morning I woke up with a goal: to focus. Fittingly, I gave Tazo’s new Focus tea a try. The cocoa peal and orange essence made this smell like orange dark chocolate–yum! The flavor was a lot more subdued, much like any black tea. I think the real therapy came in the aroma, but the flavor was nice with a hint of zest. I probably won’t be drinking it much just because I avoid caffeine generally but this was fun for a change of pace.

Hopefully the Summer will include finding a place that sells Justin’s chocolate butters because I’m almost out of the almond, too 😦 Meanwhile, have you jumped on the coconut milk train with me? I could drink the stuff if anything would fit after that. To turn some plain greek yogurt into something fruity, I added Crofter’s Organic raspberry conserve and Madhava raspberry agave; this agave I wasn’t so much a fan of as the vanilla. Do you see my multi-vitamins at breakfast? They’re hiding.

After much delay, I’ve finally given oatmeal a recipe page! I should seeing as how I eat it year round 😉 Check out my way on how to make oatmeal and enjoy the weekend! It’s all rain and gloom here. Perhaps that’s good to quash the Summer bug.

The sun hadn’t quite came out by 11, but I’m really a morning runner, so I scarfed down this apple and went out to see what damage the rain had done to Providence. Surprisingly, the path wasn’t awful! How good since I needed to run up and down it 3 times to get the mileage I wanted.

I ran 11.5 miles just under 1:38. On the 3rd turn, I headed back down Hope street specifically so that I could stop at the happiest place on earth: Whole Foods; there’s something so amazing about ending a run here. The plan was to shop around, grab something for lunch, hurry home and prepare it there. I spent so much time browsing the prepared food that by the time I chose I just had to eat it then. All the meat dishes looked “meh” and overpicked while the soy options smelt heavenly(but that would have gone against Lent as “prepared soy”.

H.O.L.Y. Y.U.M. Massaged kale is the dish I heard about most when raw foodists say “Well, we don’t use that much preparation all the time. Most of the time we just rub avocado with kale and are set with something simple like that.” They are too modest. This combination is amazing. It’s so much creamier than I would have given it credit for. Does anybody have a recipe they’d be willing to share? I think I want to make this for Easter!

You can say I had avocado on the brain all afternoon–I couldn’tget enough! For a snack, I halved one and topped 1/2 with Foods Alive hemp oil dressing and sea salt and the other half with just sea salt. Why don’t people snack on avocadoes more? They’re so refreshing and filling!

To wash that down, I had my last Tazo 0 cal tea, this flavor Refresh. I’ll admit: My first reaction was not a favorable one. It reminded me a bit of mouthwash. But it also completely grew on me, and by the end I was feeling refreshed and wanting more! I am loving the inflow of stevia sweetened beverages into mainstream brands.

It was SO nice out today–we hit 60 and with sun! This is big for New England lately. I think frozen yogurt from Juniper was definitely in order. What is it about sweetened, tart whey that tastes so darn good? I feel like it’s not the cleanest thing to eat, but then again no one’s eating this everyday so it’s OK in moderation.

While I was waiting for dinner to cook, I read this article concerning chocolate reducing heart taxation. It’s a good read if you want to convince yourself that all that Easter candy is fine! It made me hungry for some of my favorite white chocolate by Divine. Of course, then I read the part about white chocolate not counting because of the absence of cacao powder; I guess I’ll just have to have dark chocolate later to compensate 😉

I still had 1/4 lb of beef  to use up or freeze before tomorrow; the latter sounded like the better option. I made in a pan the grass-fed burger while roasting somesweet potato fries in EVOO at 350 for 45 minutes. Delicious! But now I can’t wait to grill over the Summer. Do you grill? If so, what’s your favorite thing? Mine is by far burgers, and all kinds! Salmon, tuna, veggie, beef, turkey, even bison.

Last night I was feeling like a chocolate snob and debating between which brand of orange dark chocolate to have; yes, I do that. In the end, I went with Newman’s Own Organic Orange Dark Chocolate not just because it’s organic but because it has a sweeter flavor from a higher sugar content. OK, enough chocolate talk. That prompted the tweet,

EvanFMFF: I want to go on an all-organic chocolate diet so that when I get fat from it I can say “yeah, but it’s organic fat”.

It was a joke (sort of :-D) but I loved the responses so much I had to share. Some bloggers wanted to join in; could I be more popular than the cookie diet? Other bloggers were their witty selves:

which reminded me of something I want to share from the Today Show: sewage waste is not only permitted, but used in non-organic produce fertilizing. Uhh, ew! I don’t always or even often eat organic produce but these are the kinds of things I’d rather not know because it makes me want to. And, lastly, some bloggers made a knowledgeable and poignant tweet:

That’s a good reminder that just because you shop at Whole Foods doesn’t mean you can’t go wrong, or at least be picking up things that are still “sometimes” treats rather than good-for-you diet staples.

This morning I slept in in hopes of a sunny outdoors run later on this morning; let’s see what the sun has to say about that. Instead of coffee, I thought I’d opt for mocha herbal teeccino instead so as to not dehydrate myself. It doesn’t really taste like coffee, but it’s nice beverage to have around if you need to feel April Fooled into drinking the real java. It’s better because it’s non-acidic. If it were the only type of coffee I kept around, I probably wouldn’t notice missing the “real” thing.

Ahh, pumpkin oats, my voluminous friend, where have you been these past few days? 🙂 There was some pumpkin oatmeal with honey maple protein peanut butter, but the real story was in the yogurt. I mixed a plain So Delicious coconut milk yogurt with 2 tablespoons Navitas Naturals‘ twister powder(cacao, maca, and hemp) and topped that with some Tropical Traditions coconut peanut butter. Coconutty? I think so. The peanut butter was a little stiff on the yogurt and might have been overkill, but at least it was tasty overkill.

Rick from Book Publishing Co. offered to send me a book for review and share my opinions on. Sweet Utopia by Sharon Valencik is a book devoted to vegan desserts; how perfect does that sound? Desserts are something I’ve always had trouble “veganizing” myself so I can’t wait to see what she has to teach me and how much I can take away. For the month of April and possibly May, I’ll be flipping through the book, picking up tips, and trying out recipes. In the end, I’ll give a comprehensive review and hopefully if I end up loving it I can suggest it to you all! Sound fun?

I was not terribly hungry for dessert last night while watching Jamie Oliver’s Food Revolution. Did the chicken scene just make anyone else want to give up on meat? I couldn’t go that far, probably, but it makes me feel good that the meat I choose is wild, natural, or organic and minimally processed.

I must have been affected by a British accent because I snacked on “tea and cookies”, with Tazo Rest and One Lucky Duck‘s chocolate chip raw cookies. This was the last sample from One Lucky Duck I had and it did not disappoint. I liked how–very easily–there was a flavor distinction between the cookie and the chocolate, which isn’t easy to do at all with raw foods. It also didn’t have that raw, fall-apart-in-your-hand texture but wasn’t stale. They’re a bit pricey but a good treat for a raw foodist.

On top was the very last of P.B.Loco’s cookie dough peanut butter and Love Raw Food’s cashew butter. There was definitely more nut butter than oats so this was delicious and rich. And I love just being able to toss the jar out when you’re done 🙂 Is it just me, or is it still impossible to get the jar satisfactory empty no matter how much you work at it?

I woke up at 5, and took an awful long time getting back to bed(hence not waking up again until 9, yikes!) :-/ Sometime then, I got snackish and went for Uli Mana‘s chocolate chia moon drop. It was a good choice. I think I got through half of it before even realizing where the chia were; that was a good thing since they still sort of freak me out. It was nice and chocolaty, too. I wish it were richer(maybe add some cacao butter?), but it was still pretty great.

Another almost empty nut butter jar? I spoil myself 🙂 In the Mighty Maple jar went pumpkin oatmeal and a scoop of walnut butter; the pumpkin, peanut, walnut, and maple all work so well together! And I had a pineapple Chobani with about 1/3 of the Honest Foods granola plank. I like the ideas of the grab-n-go granola, but the pomegranate flavor in the pomegranate walnut crisp was just not there. It also wasn’t very crisp? It was much more chewy and soft. All the walnuts and peanuts made me happy, though, so clearly I wasn’t complaining much.

I’m sure you’ve noticed Cancun 2010 is no where in my Spring Break plans, haha. In case you were wondering, today I’m heading home to see my dog for the first time in 4 weeks. It’s felt like forever! Tomorrow, I have my 1/2 marathon to run along the New Hampshire coast–not looking forward to the weather. And then Monday is the day I become one really old teenager. We won’t celebrate until Easter with the relatives, though(OK, there’ll be a little celebrating ;-)).

No, this hasn’t turned in to a blog reviewing organic ales. Give it a few more years, the right sponsorship, and we’ll see where it goes 😉 But as for last night, it took forever to fall asleep(lets blame the people who probably are hungover), which drove my hunger up a wall and this morning I’m feeling a little hungry over. Why does the keyboard type so loud?

Because all good nights should start and end with chocolate, I broke out a bar to satisfy my sweet tooth. I’ve ran out of my favoritedark chocolate but luckily remembered I still had some Vivani 72% Organic Dark Chocolate and broke off 8 squares. I love that this has 3 ingredients(cocoa powder, cocoa butter, and sugar), all of which I have. How’s that for simple eating?

Once that was gone, I snacked on an apple. When you can’t remember when you got the apple, it’s not a good sign for the freshness :-/ I swear this was turning to cider on the inside already. Come to think of it, maybe that’s why I’d be hung[ry] over today…

After that oatmeal, I tried to go to bed. How’d it work out? Not so well. Oh well, at least I’d get to see Betty White on SNL, right? That wasn’t last night, either. Shucks. I hoped that some Tazo Rest tea would lull me to sleep, which was followed up with a vanilla chobani topped with cherry butter and 4 squares Green & Black’s cherry dark chocolate. Despite that this was mostly sugar, it must have worked because I don’t remember being up much longer; Sigourny Weaver on SNL was just not cutting the entertainment for me.

The plan for this morning was either run on the treadmill 10-11 miles while watching a Scooby Doo movie(hey, it was what’s on) or stay in for breakfast and run later. The sun and my stomach led me to the latter. I think the fact that I’m having “bedtime tea” at 9:30 says my mood.

Since I plan to run withing the hour, I opted for So Delicious soy yogurt sweetened with vanilla stevia instead of greek because it’s easier to digest. And I topped that with Bob’s Red Mill hulled hemp–gotta love the hemp. My oatmeal turned out more like a salty, watery pancake because I ran out of oatbran 😦 That, too, will get fixed today. And I hardly noticed after deluging it in Naturally Nutty’s Pepita Sun Butter with some of Navitas Naturals’ Mulberries to sprinkle on top. Come to think of it, the pepita sun butter has hemp in it, too; I guess it is a hempy morning, afterall 😀

I have 11 outdoor miles on the agenda for today. I’m a little worried how this will feel after yesterday’s 9.5 felt “long” but I have some great motivation waiting for me at the end to look forward to 😉 And I’ll be packing jolly beans for fuel; can’t run around Easter time without your jolly beans! Running With Ice Cream

First of all, I want to send out a huge congrats to my favorite no meat athlete, Matt, who finished a 50k today! Could you imagine running 50k? I would like to see all the yummy food that took to fuel 🙂

My run wasn’t quite that long, but boy was it entertaining! It was a beautifully sunny day in Providence so I hit the East Providence path. I wasn’t pushing myself too hard–mostly enjoying some good country music–but also not letting myself be passed except by 1 small Indian man(he was speedy for his size!). When I started heading back, I stopped by the small Whole Foods to pick up some tuna and then Eastside Marketplace for this quart of ice cream. Can you then imagine I would try to run the last mile back carrying a quart of ice cream? Because I did.

I ended up going 9.54 miles(which is about 15k if my math isn’t too rusty). I actually thought my time would be a lot worse. Several times in that last mile I had to stop because the tuna fell out of my pocket or I dropped the ice cream; it wasn’t pretty. But I made it! First thing: Throw sweet potatoes in the oven.

When I get a meal in my head, I want it. And nothing else will do. I was a lit hesitant that the sweet potato wouldn’t cook long enough but I threw it in at 400 and by the time I stretched, showered, and 1/2 cooked my burger, they were ready to soak up the extra fat and fry in the pan.

I called this a “salad” because it was over bitter greens but I don’t know if it works like that. Whatever it was, it was phenomenal. This 90/10 grass-fed meat which we picked up at Whole Foods last weekend has to have been the best I’ve gotten ever in terms of juiciness. Did I lose any veggie readers there? I hope not. That flavored the sweet potatoes amazingly and just made the whole thing rock. Of course, I applied ketchup like it were an extra serving of veggies 😉

Elan Coffee Frozen Yogurt

Anticipation made me jump in to dessert a little early this afternoon. I just loooove this frozen yogurt! The nutrition is really good, too, and it has a relatively simple ingredient list on which the only flavorer is decaf coffee–joy. My only grip is that the company makes no claim about cow’s not being treated with rBST :-/ But I’m guessing(hoping?) that need not be a concern with a relatively local company that only gets supplied by Vermont farmer; Vermonteers have always been good people 🙂

On top of some pumpkin oatmeal went the last bit of Justin’schocolate peanut butter and some agave sweetened smart balance peanut butter. Umm, yum? I was sad to see it go, but I guess it’s time had come. I don’t think I’ll bother ordering a replacement online because I’ve heard that these hit East coast shelves by “end of March”. I can wait a week…. maybe.

Surf Sweets Fruity Gummy Bears

Not that I can really explain why, there just needed to be gummy bears at dinner. And trust me; there did. And in terms of “healthy eating”, I’d say why not? So long as you’re having gummy bears with dinner and not for dinner. Eat real food, and the fun stuff, too 🙂

Broccoli, Tuna Salad, Sunflower Cheddar Flatbread, Fruity Gummy Bears, Tazo Passion

Yesterday’s tuna salad in the sun had me wanting more! And this one was just as good. On the side, I had a Dr. Kracker sunflower cheddar flatbread and some broccoli for green vegage. I’m very happy to say that the Dr. Kracker products don’t trigger my suspected gluten intolerance, and I think it’s because they’re made with spelt flour! I’ll do a more in-depth portion into this in a future post.

Tazo Zero Calorie Passion Bottled And Surf Sweets Fruity Gummy Bears

On the side of that salty goodness, I had some sweet treats. I sipped on a new, all-natural, zero calorie passion Tazo tea. Meh. The flavor was good, and the sweetness was great! I just didn’t dig the rose and herb flavor in a cold beverage; it seemed like it’d be so much better hot. The gummy bears from Surf Sweets were also meh. I suppose any time you have vegan, all-natural gummy bears you have to stop and be thankful. But the fruit flavors made them taste more like soft jelly beans, of which I was not a fan. I would now like to try their jelly beans…

Yogurt, Yogurt, And With A Side Of Yogurt

Yogurt can be fantastically healthy for you with protein, probiotics(a superfood), and calcium. Of course, these numbers vary by the brand. There are some I just wouldn’t suggest touching, like any using artificial sweeteners or even the organic ones which have more sugar in them already than a serving of ice cream. But–on the whole–if you’ve got yogurt in your hands, you’re doing all right.

Well Being Tazo Rest

What’s a better way to unwind on a Friday night than with tea? OK, OK, I know there are more exciting drinks to be found. But I have to tell you this tea sent to me by Tazo was probably the best I’ve had yet! It was so calming with rose and citrus–I could have fallen asleep then and there. I think it’s new and not available yet but should be soon.

I did a silly thing last night: I purposely went out and bought this ice cream for Friday’s sundae, even though a very strong part of me knew it wasn’t truly what I wanted. Why do we–as humans–cloud our wants with thoughts only to do the wrong thing? Fortunately, I was sensible enough to put this in the freezer and eat what I really had in mind.

Pomegranate Yogurt With Coconut Oil Chocolate

It’s a small departure, but I was really craving a pomegranate Chobani with some chocolate on top; who am I to deny a yogurt craving? And for said chocolate, I used half a bar of coconut oil chocolate. If you’ll remember when my friend came to visit, I gave her a bar of this to eat when she got home. Since this is partly a all-natural product review blog, here’s her review :-D:

“It was absolutely incredible. I didn’t want to share it with my family, but since they were all curious and jealous, I did and they all loved it. (In short, since that syntax was awful, the fam is one huge collective fan of your chocolate bar.) Seriously. I should probably stop being lazy and make some for myself, but I think that I’m just going to have to visit you more often to get some.”

If that doesn’t make you want to make some(or come visit me to get it for free), I don’t know what will 😉

Pumpkin Oatmeal With Maple Cashew Butter And Chocolate Chips

I’ll let the secret slide that this is the only food not yogurt in this post. I can break for yogurt for cashew butter, especially from Tierra Farm. There’s something so much more rich and delicious about cashew butter; if you don’t have any, you must! I don’t know of any widely available chocolate cashew butters. That’s a shame because the combo was fantastic and something I need to recreate in my food processor pronto.

Saturday morning were made for sleeping in, cartoons, and wasting time. I haven’t done much of the last two(yet?), but I certainly enjoyed sleeping in. Once I got up and started moving, my hunger led me to double yogurts. I think that’s a good thing; how can you go wrong with yogurt?

First up was some So Delicious soy yogurt sweetened with vanilla stevia and topped with milk chocolate peanuts and salt. I might have gone a little overboard on the peanuts–whoops! Oh well, I was counting them as my “healthy fat”, even if buried under chocolate 😉

Pomegranate Chobani With Organic Orange Dark Chocolate

On the other spectrum, for some good protein I had another pomegranate Chobani, this time with the last two squares of Endangered Species dark chocolate with orange. I’ll admit that I need to stop putting crazy of chocolate on yogurt when you accept that pomegranate and citrus chocolate is the best combo ever. Seriously, how have I not tried this one before? it was almost like a fine marmalade–delicious.

It’s another beautiful and sunny day so I’m going to mull about until 11 to go for a pleasant outdoor run. I’m making a new playlist just for it! But it’s horribly uninventive: I’m just putting all my Lady Antebellum and Sugarland songs onto the On The Go and calling it done, haha.  Have you tried cashew butter? Love it or hate? Obviously, I’m a lover 🙂 And while I don’t want to spark any “brand debates”, I’ll simply ask what’s your favorite type of yogurt? For me, I like greek-style if it’s cow’s milk. I also like soy yogurt and–as I discovered yesterday–coconut milk yogurt!

Eating Picnic Foods

Well if you live in the Northeast, I hope you got outside for this amazing weather. If you don’t, I hope the sun was shining where you are, too! March is the best month: In like a lion, out with my birthday like a lamb.

Endangered Species 70% Organic Dark Chocolate

I’m lucky to love the treadmill and running out doors. They’re very different things, and both have their good points. When I get bored of one, the other can be there to pick me up. Today, that was the case where I didn’t feel like running on the treadmill first thing but was ready for an outdoor run around 11. I had 2 tiny squares of my favorite organic dark chocolate from Endangered Species and hit the road.

This was a long run. In fact, it turned out to be my longest outdoor run ever! by .7 of a mile. I went up and down the Providence Path 3 times. There was even some running team(maybe collegiate?) holding time trials so I had good company and motivation. At the 3rd turn, I went down Hope street and ended my run at Whole Foods to do some refueling and grocery shopping.

For some reason, I had it in my mind that this Whole Foods made fresh pressed carrot juice. I guess not :-/ But I was happy to refuel with this brand. Not only do I find carrot juice incredibly sweet and delicious, but it’s one of the best recovery drinks around.

What makes a good recovery drink? Well, we could really debate this for hours. Chocolate milk gets a lot of attention for its 4:1 carb:protein content. Coconut water seems to be the new fad, but I have yet to try this and can’t speak for it. What I love about carrot juice is the potassium content: Look at it! That’s more than a banana, and for 1/2 the bottle. And potassium is something necessary for recovery. Another reason to love carrot juice is it’s 1 natural ingredient: carrots.

Groceries

I’m sure you’d believe me if I told you the first thing I grabbed at the store–even before the juice–was the milk chocolate sunspire peanuts. Could I live on without them? Beyond that, I just grabbed a sweet potato(albeit, a huge one), some canned fish for dinner and yogurt on sale. I was pushing my timing and had to get back to shower and make a full recovery lunch fast.

In my rush, I remembered I wanted to try these seasoned cashews sent to me by Yumnuts. I’m not much of a spicy or savory snacker but for my meals they sounded wonderful and picnic-y. I threw everything in one big container and met my friend, Adam, on the campus green to enjoy the sun!

Tuna Salad, Chickpeas, And Chili Lime Cashews Over Dressed Greens

I started by tossing bitter greens with my favorite dressing from Foods Alive. I tossed on top the remaining 1/2 a can of chickpeas, a can of tuna mixed with 2oz Voskos plain non fat for a healthy tuna salad, and a small handful chili lime Yumnuts. Could you imagine something better for picnicing? Because I couldn’t. This was all perfect! I forgot how much I loved tuna salads with a little salt. I guess the “trick” is to reserve just a little liquid from the can so that it’s not dry when you mix it with the thick-and-creamy binder. And the Yumnuts were–well–yum! They really were quite spicy, which I appreciated. Maybe a bit of sweetness for contrast wouldn’t have hurt? Still, they were quite good, and even flavored the tuna a bit.

Tazo 0 Cal Zen Green Tea With Lemongrass And Spearmint

To wash this all down, I sipped on this new tea from Tazo. It’s sweetened naturally with erythritol and stevia which is a great renovation to the sweet tea line if you ask me. It was definitely enjoyable, and probably sweet enough for most tastes. I did think the lemon part of it was lacking a bit, but still I’d happily grab this over any sugared-up competition. Overall, I hope it’s bright and sunny again soon because I want to eat this whole meal again!

Chocolate So Delicious Coconut Milk Ice Cream

After getting a little work done and cleaning up after the hurricane that hit my dorm, I was craving something chocolate. Can you imagine that? I finished off the pint of chocolate So Delicious coconut milk ice cream I’d been working on. Is there anything sadder than finishing a pint of ice cream with no ability to immediately replace it? I think not.

And, since that wasn’t enough So Delicious, coconut milk, and chocolate, I gave their yogurt a try with the final two squares of the same chocolate bar I ate earlier. A pint and a chocolate bar? Man, I was knocking them out today. Concerning the coconut milk yogurt: holy yum! This was amazing. Like I really needed another food to be obsessed over? At least I’m hooked while it’s on sale; you know there’ll be more of these over the weekend.

Another perfect picnic food, of course, are crackers. What’s not to love? I decided I’d try these Dr. Krackers because I loved the idea of sunflower seeds baked right in for a little crunch. I also read from Whole Foods that spelt flour–while wheat and so gluten-forming–has a higher tolerance level among gluten intolerant people than regular wheat. I’m not above conducting mini-science experiments on myself.

Spaghetti Squash, Broccoli, Wild Alaskan Salmon, Seeded Spelt Crackers

I didn’t plan to have so much but when I read that spaghetti squash was at the cafeteria, well you know I had to make adjustments 😉 Overall, the whole meal was good, but not really “put together”. The crackers were nice, but they missed the crispness I was expecting; I really enjoyed the sunflower seeds with this sunny weather, though! The salmon in a can was–in a word–disgusting; I wasn’t expecting it to be not even deskinned or deboned. I only took 2 servings and threw the other 1.5 out. It tasted fine, but I think I would rather go without omega-3’s during my time at college than eat that more often. At least it was in the spirit of cheap fish during Lent? I’ll be happy when that’s over.

Annnd as much as I talked about the sun, it’s now dark out. Good thing because I should work work work on these midterms. I also want to keep up the “sundae on Fridays” tradition, but need to find some good ice cream to suit my palate. Enjoy the night!
