Better Than Candy

I promise you something in this post is actually better than candy! 8-| Did you ever expect to hear that from me?!

Trader Joe's Almond Butter

Trader Joe's Almond Butter

It was not this extra scoop of Trader Joe’s almond butter I had with breakfast. Almond butter is good–it’s really good. But it’s not candy…

Vegan Chocolate Fudge

Vegan Chocolate Fudge

And my microwave vegan chocolate fudge doesn’t count because it is candy. I just have to say I love a life where I can wake up and before doing anything else make fudge; that makes me a happy boy 🙂

9 Laps

9 Laps

This run was so long, and so brutal; the winds were intense today and it felt like wherever I ran, I was going into them. It doesn’t help that my neighborhood is hilly or that I forgot to stretch after yesterday’s run(rookie mistake). But I’m always prouder of a tough run I stuck out than a longer run that felt easy.

Yellow Curry Tofu Over Vegetables

Yellow Curry Tofu Over Vegetables

This was certainly not candy. Whatever made a New England boy think he could cook Thai food? I just heated up tofu in a pan and simmered it with coconut milk and yellow curry paste. It was delicious, but I was a little too quick to throw in extra salt and garlic, so that my mouth was on fire. I couldn’t in good conscious feed this to anyone without having them sign a waiver.

Lipton Lemon 0 Calorie Naturally Sweetened Pure Leaf Iced Tea

Lipton Lemon 0 Calorie Naturally Sweetened Pure Leaf Iced Tea

I cooled down with this new tea from Lipton I was sent to review. Oh. My. God. All through high school, I had an addiction to Arizona diet iced tea, which I guzzled faster than water. This was like that and so much more; the flavors of lemon and black tea really shined and it was all perfectly sweetened with stevia! This can’t get on store shelves fast enough in my mind.

Oatmeal With Honey Maple Peanut Butter

Organic Fuji Apple

Organic Fuji Apple

Over the course of the afternoon I snacked on an organic apple and oatmeal with high-protein honey maple peanut butter. The peanut butter tastes OK–certainly not better than candy–and is only high protein because of whey powder(not a fan) so I probably won’t buy another container once I’m done with this one. So what was better than candy?

Raw Local Honey

Raw Local Honey

Raw local honey. How local?

Local Farm

Local Farm

Let’s just say I walked there and back in less than 15 minutes. When I got there, I asked the woman who runs it if they sold raw honey and she looked at me as if to say “Are there fish in the sea?” God I love rural America. Anyway, I bought a jar, walked home, and dug in with a spoon.

Raw Local Honey

Raw Local Honey

Oh my stars. Words can not express how good this tasted. No honey I have ever had compares to raw, crystallized honey. This was the best $6 I have ever spent. Expect a lot of this over the Summer; she tells me the hives are almost ready for a second turn, whatever the hell that means.

Grilling

Grilling

After not having meat since Wednesday and writing this scathing post on my hatred towards “veganism” but love of a plant based diet, I finally wanted meat again, and so we happily fired up the grill.

Grass-Fed Burger Over Bitter Greens, Grilled Potato Fries, Pickle

Grass-Fed Burger Over Bitter Greens, Grilled Potato Fries, Pickle

What says American comfort food better than a burger and fries? Just making the healthy swaps of grass-fed beef and grilling the fries in a moderate amount of EVOO really pumped up the nutrition of this meal, too. Now I won’t lie: That honey jar sitting on the counter is looking really good right about now.

Winning this giveaway would also be sweet like candy, too…

Special

Posted on April 26, 2010. Filed under: Daily Update | Tags: , , , , , , , , , , , , , , , |

You might think someone who’s willing to post such a large portion of their life on the world wide web would live for attention. I don’t. In fact, in life I really hate being “special” in any way or getting extra attention at all. But some days that’s hard to avoid. Some days, you just stand out whether you’d like to or not.

Organic Red Delicious

Organic Red Delicious

Like this apple. It was probably the biggest piece of organic fruit I had ever seen. It held me over 2 and 1/2 hours. I love it when organic fruit is humongous; it gives me hope for organic farming.

Avery's 4th Birthday

Avery's 4th Birthday

We drove to New Hampshire for my cousins birthday party. It was at a local raquet club where the kids could swim in a pool. I conveniently forgot my bathing suit and went out to pick up the pizza with my father and grandfather. Of course, I didn’t want to be “special” but I couldn’t eat the pizza because of the crust. On the way back, we stopped at a natural food store where I found a salad bar.

Stir-Fried Greens, Pineapple, Organic Chicken

Stir-Fried Greens, Pineapple, Organic Chicken

I was having a good vegan streak this weekend and wanted tofu, but chicken was what they had :-/ It was very tasty chicken, I must add. I also had some greens and pineapple, and ate off to the side trying not to seem “special”(though it was pretty obvious). I must add: pizza still smells really good even when you can’t/won’t eat it, and the one with pineapple and marinara sauce was tempting me.

Birthday Cake

Birthday Cake

Thank God for birthday cake, because I could have sworn he was turning 4! 8-| Obviously, I passed on this, but not on this…

Gluten-Free Vegan Midnight Chocolate Cupcake

Gluten-Free Vegan Midnight Chocolate Cupcake

The cupcakes I made were a hit, even though I really didn’t care for the frosting. Even my older cousin who doesn’t care for chocolate loved them. My aunt, in trying to describe them, gave them every “special” title in the book: vegan, gluten-free, dairy-free, organic. I was surprised she didn’t add Jesus made them. They weren’t 100% organic, but they were all-natural.

Organic Baby Carrots And Orange Zevia

Organic Baby Carrots And Orange Zevia

Coming home, I was really torn whether to try and go back to campus tonight or not. I was tired, not prepared, and overall a grouch, so that made the answer pretty simple after chewing on the last of some baby carrots and an orange Zevia. And since no one felt like cooking, it was out to dinner.

Coconut Curry Tofu And Veggies

Coconut Curry Tofu And Veggies

I had such a coconut milk craving last night, you wouldn’t have believed it. We went to Big Fresh Cafe. After explaining why wheat noodles wouldn’t work for me in this dish, and that I’m just not a fan for rice, my plate was a big bowl of veggies, tofu, and coconut curry sauce. I’d rather get a big bowl of “special” ordered food I love than not eat 1/2 of it. And I loved this; I could have drank the sauce, but I didn’t. Come to think of it, that may not have been vegan if they used eggs or anchovy in the sauce. Regardless, I need to make curry more.

Endangered Species Deep Forest Mint

Endangered Species Deep Forest Mint

I bought this chocolate bar while at Whole Foods and started digging in with some mocha teeccino. It may be a project cleanout fail but it wouldn’t be much longer I could get a decent mint chocolate bar for $2.

And I finished up with the emotional roller coaster that is Brothers & Sisters and a bowl of oatmeal with almond butter, which photos my camera is withholding :-/ It’s probably just as well since I didn’t bother to photograph the 2 fingerfulls of almond butter and handful of almonds I had afterwards. I think I was on an almond kick, especially after baking these.

2 Cuisines, 2 Times The Beans!

Posted on February 13, 2010. Filed under: Daily Update, Recipe | Tags: , , , , , , , , , , , , , , , , , |

Today I’ve been traveling the globe with my eats. My first stop was a (late) lunch in Me-hi-co

Black Beans With Salsa And Avocado, Broccoli, Lime Nachos

I had 1/2 a can(or more) of black beans from Tuesday’s lunch to use up, so I heated those with some salsa, the last of the broccoli I had, and mashed avocado(you mean this is edible not in pudding form?!). I don’t know why I buy unsalted beans; I then just have to add loads of salt to make them appealing. But the real reason I had this meal was for the chips.

Lime Food Should Taste Good Nachos

I think I’ve mentioned this before, but it’s worth repeating: chips are my kryptonite! They’re my Achilles’ heal, to use a Classics term. I have no problem with sweets, chocolate, etc. But chips–they get me. And there’s really no nutritional way to back them up; they’re just emptiness, but so delicious. I keep a few(4 or 5) bags on hand because I’m not in to depriving myself in anyway, but I also look for different ways to satisfy those cravings with more wholesome foods. This time I took myself about 2/3rds of a serving of these to satisfy my chip tooth. And since I remembered that I reviewed these for the company a while back, I knew that they, too, need a sprinkling more salt to dance.

I took a trip to Vancouver, of course, through the television while visiting Ancient Rome and Greece through my books and internet texts. This afternoon was the speed skating; I love speed skating. If I had any ability on the ice whatsoever that’s what I’d like to do with it. I also love the Netherland’s uniforms. Spandex and bright orange–now that’s how to roll.

Snickerdoodle Soy Ice Cream, Coconut Oil Chocolate

My afternoon snack was inspired at breakfast. I liked the idea of a “sundae on Saturday”, so I scooped out 3/4 of a cup Snickerdoodle ice cream by So Delicious and then added 1/2 of a coconut oil chocolate bar. If you haven’t tried this ice cream yet, you must! It’s one of my absolute favorites. And it’s technically not even “ice cream” but rather “soy milk cream”, though I don’t think that rolls of the tongue. It’s full of gluten-free snickerdoodle cookie dough balls–yum! I was tweeting about them with So Delicious on Twitter 😀 They’re so fun to tweet with. They also must think all I eat are milk alternatives; dare they learn of my greek yogurt obsession?

Speaking of the coconut oil chocolate bar, it now has a recipe page! I was getting so many requests for that that even though it was far done on my to-do list in terms of site maintenance I figured it had to be addressed. I tried to keep the recipe general, but it’s really something that benefits from owning a kitchen scale. That’s how you can control the flavor and get what you want.

Thai Red Curry Sauce

For dinner, I took a plane with Trader Joe-San to Thailand. The first time I used this sauce was absolutely months ago; I figured I needed to revisit it now that I have a coconutty obsession and this is coconut milk based! It also has a lot of other questionable ingredients I wouldn’t have thought to be Thai. Like egg yolks? And xanthan gum(which I own but can still give me the willies sometimes). Anyway, I steamed a good amount of organic tofu and then added steamed vegetables with the sauce and let that simmer for 5 minutes or so.

Tofu In Thai Curry Sauce, Mushrooms, Watercress, Snap Peas

Mmm, all this needed(besides natural light, but I don’t control the sun) was some salt and fresh basil(not like I had any) to pop. I love how much flavor store bought sauces can bring to dishes with minimal ingredients otherwise. And so often I forget that tofu is beans! The fact that it’s smooth and white makes me think it’s probably over processed, but I do love that funky tofu texture 😀 I usually buy the one labeled “soft” for the really great texture.

I should probably return to Greece via Plato’s Phaedo before I get sucked in to Vancouver. What country would decaf hazelnut coffee be in? Because I’m making a major pit stop there.

And wow would I love to win this blender for some raw goodness!

Eat Food. A Lot. Mostly Fiber.

Posted on December 5, 2009. Filed under: Daily Update | Tags: , , , , , , , , , , , , , , , , , , |

Today all the running I’ve done has been up and down grocery aisles and boy has it worked up an appetite! I’m pretty sure I’ll be half way through a field a broccoli by the time I finish this post. Anyway, this morning I was a bit surprised when I woke up and realized I slept 10 hours. Yikes, talk about oversleeping. I guess I must have needed up but when I oversleep that much I just feel blah the rest of the day. From now on, my aim will be 8 always–never more than 9 or less than 7. I think that’s a good goal ti keep in mind.

For breakfast I thought I’d try out a new product.

Al Fresco Wild Blueberry Chicken Sausages

Katie from Al Fresco sent me an amazing array of their sausages to review. They use all natural ingredients with vegetarian fed chickens and believe it’s not the quantity but quality of their meat. How perfect is that for me?! Best of all, their products are fully cooked so you just have to heat and serve(aka, I can make these in my dorm pretty darn easily). These breakfast ones really stood out, so I seared them in a pan for 6 minutes or so to brown.

Pan Searing Sausages

Then, in true Food Makes Fun Fuel style, I chopped them up and added them to some oats for breakfast–gotta have them whole grains 😉

Oikos With Maple Syrup, Oatmeal With Wild Blueberry Sausages And Mighty Maple

Well, maybe not everything should be put in oatmeal. But that aside I looooved the flavor of these. The hint of maple syrup baked inside really made them. That being said, not everything goes in oatmeal–lesson learned. I really wanted to get out and run at 11 but the weather was cold, forecast grim, and time wasn’t on my side. Instead there was a change of plans and it was time to dive right in to chores. There was the other type of fuel…

McDonald's Decaf Coffee

…And then we were off to Trader Joe’s and Whole Foods. Taking the backroads let me see all the barns and stables around here in the winter time and they looked amazing. I think I have a new goal in life to buy and live in one of those. I’d hate to have to take care of them, and I’m sure they’d be some crazy money to heat, but dreams are meant to be unrealistic, right? At Whole Foods there might have been additional coffee while checking out all the sales and coupons. At Trader Joe’s I had a ton of fun picking up treats for my blogger secret santa 🙂 I know they’ll love them. I also might have snuck a few goodies for myself.

Fun Groceries

Well, whole wheat mac n’ cheese isn’t “fun” but I got it for 66 cents on sale with a coupon. Isn’t that a bargain? Those cranberry oatmeal white chocolate dunkers were calling my name, as was the milk chocolate orange. I love those other ones but they unfortunately have some artificial flavorings–Trader Joe to the rescue! I also picked up a new toy:

Thai Red Curry Sauce

And when I say “toy” what I really mean is sauce. I was pretty hungry by the time we got back so I just got to work. I cooked in a pan some tofu and red peppers with the sauce while microwaving some broccoli for efficiancy. All in all, it was a TJed meal.

Red Curry Thai Tofu And Red Peppers, Broccoli With Soyaki

Delicious! The thai sauce was a good level of spice, and the soyaki added a nice touch of salt and sweetness. Tofu is so much better when you have tools other than a microwave to cook it with. I should try baking some while I’m home. I was still a little hungry so I had a fiberous dessert.

Apple

And then I was good to go. Right after lunch we headed out to for a last minute hair cut, and then to Hannafords for yet more secret santa goodies and some more to eat. Again, getting home I was starving even though I just ate not 2 hours earlier, so I went for yet more fiber and more protein.

Brussels Sprouts And Lightlife Ground Sausage With Southwest Seasoning And Maple Syrup

And that’s what I’m currently being held over by, though for who knows how long. This was the first time I got the ground sausage and not some preformed meat. While I don’t think it would be useful in a dorm room, with all the equipment I have to cook it at home it’s a much better bargain and tasted just as good. The chili seasoning with maple syrup sounded out but tasted perfect. And now I’m off to bake some cookies for the fundraiser Ashley held! I’ll have to resist eating them myself and make sure they make it to the highest bidder 🙂

Here’s a flaxy giveaway
