The Fastest My Heart Has Ever Beat

Posted on May 21, 2010. Filed under: Daily Update | Tags: , , , , , , , , , , |

I’m pretty much the textbook runner in a medical sense: low weight, low resting heart rate, low blood pressure, etc. Even when I “run”(more like jog), I’m not pushing it too hard to strain myself. But last night–well, first there was oatmeal.

Oatmeal With Mighty Maple

Oatmeal With Mighty Maple

Because warm carbs and Mighty Maple are a good way to start any time. So what made my heart beat so fast? Well, if you follow me on Twitter, I’m sure I annoyed you with my constant updating of the Grey’s Anatomy season finale. It was a good one. I’ve got it on Tivo and might watch it again. This was pretty much me the entire time:

Nervous

Nervous

And I was SO relieved at the end when they didn’t kill off anyone worth it. In the 2nd half, I’d say I needed this dark chocolate to pull through some of the scary moments.

Alter Eco And Trader Joe's Chocolate

Alter Eco And Trader Joe's Chocolate

That would be 10 squares Dark Chocolate Mint by Alter Eco, which is amazing, and 8 squares of Trader Joe’s knock-off chocolate which is “meh”. Dear Trader Joe, please stop making borderline infringing products that aren’t even as good. Like your milk chocolate peanut butter eggs that had hardly any peanut butter? Yeah, don’t do that again.

Well I made it through Grey’s, and got to bed eventually(which wasn’t easy). For the record, as ridiculous as I’m sure I appeared to everyone else around here, my dad walked into the room at 9:30, saw one shooting, and said he couldn’t handle it. So at least I watched it.

BBQ Popchips

BBQ Popchips

Breakfast was, well, not. Oatmeal and yogurt weren’t on the top of my list so I decided to have “a real meal”. It might have all been an excuse to eat Barbeque popchips. Maybe. And now I feel like I’m missing that sweetness of breakfast. Boo 😦 Breakfast for lunch? That could be on the menu to make up for it.

What television shows do you get invested in? Do we have time to list all of mine? Grey’s Anatomy, Brothers & Sisters, and Big Brother, just to name a few.

An Eventful Day In Boston Part 2

Posted on May 18, 2010. Filed under: Daily Update | Tags: , , , , , , , , , , , |

So, I timed this to publish right when I start taking my last final. It might be a little late for this, but wish me luck!… please? Good God, I’m going to need that or a hard drink.

What is someone to do in the North End when they’re hungry and can’t eat gluten(the North End is primarily Italian-American with the best pizza and pasta in Boston)? Well, either starve to death or find somewhere with a slightly varied menu.

Antico Forno

Antico Forno

Just down the road, I found a lovely looking Italian restaurant with an open window and ended up dining here. The prices were reasonable, which isn’t something you can say about a lot of restaurants in Boston, and there were things on the menu for me.

Olives In Oil

Olives In Oil

There were bread and olives; I couldn’t touch the bread, but I was all over the olives. I loved how fast the service was; I had ordered not 5 minutes after I got there, and it couldn’t have been 10 minutes more before my plate arrived.

Involtini Di Melanzane

Involtini Di Melanzane

I ordered a dish that was rolled eggplant stuffed with mozzarella and basil baked in a plum tomato sauce. The cheese was supposed to be ricotta, but they were out; honestly, I love fresh mozzarella so that was no big deal at all. It as all very delicious with a deep, stone cooked flavor. My only gripe was the lack of a basil flavor; it really needed that to lighten it all up. But for $8, how could I go wrong?

Trader Joe's Fair Trade Dark Chocolate

Trader Joe's Fair Trade Dark Chocolate

I was still a little hungry after that and happy to break into a new chocolate bar from Trader Joe’s on my walk to Boston Common. I was hoping this was going to be a new, cheaper version of my favorite chocolate bar. It wasn’t. But it was still pretty good, definitely a bargain at $2, and all fair trade. I’ll be sure to stuff some stockings with this one.

Trader Joe's Fair Trade Dark Chocolate, Iced Tea

Trader Joe's Fair Trade Dark Chocolate, Iced Tea

When I got to the Common, I found a place to study and ordered an iced tea. Instantly, I got a HUGE headache and had some more chocolate thinking I might have gotten dehydrated walking around so much. In hindsight, it probably was the case that I had just drank more caffeine than I have in a week. Chocolate cures everything.

Picco Restaurant

Picco Restaurant

To get over the Grezzo disappointment, we stopped somewhere I really wanted to try on the road home. This restaurant is known for using local and organic ingredients. But, since it was just 4pm, we weren’t there for food…

Ice Cream Flavors

Ice Cream Flavors

They also have gourmet gelato. Did someone say gelato? sign me up.

Vanilla Bean Gelato

Vanilla Bean Gelato

I ordered the Vanilla gelato. You can really get to know a place through their vanilla. What I didn’t realize was that this would be vanilla bean and absolutely amazing. It was just so rich and creamy. And I seriously don’t think I’ve ever seen so many vanilla beans. I was in heaven. I can’t wait to go back (many, many) times over the Summer.

Raw Local Milk

Raw Local Milk

Another place I hope to frequent this Summer is Eastleigh Farm; they’re a local business that sells their own raw milk, and have faced many troubles from the State and raw milk controversy. They’ll get our support; and I can’t wait to try their cheese and ice cream!

Chickpea Salad With Raw Ingredients

Chickpea Salad With Raw Ingredients

And, yes, I got my raw meal for the day despite the closing of Grezzo’s. This was a simple salad starting with spinach and arugala in this raw dressing. Then I added mulberries, chickpeas, sea salt, and cheddar organic raw cheese from Next Generation Dairy.

All The Reasons I’m Screaming

Posted on May 12, 2010. Filed under: Daily Update | Tags: , , , , , , , , , , , |

It’s been a little loud around here today.

To-Do

To-Do

Frankly, there was no way all of this was getting put away today, and there might have been some swearing involved. 12 miles I could have done; this, not so much.

TJ's Temptation Trail Mix

TJ's Temptation Trail Mix

It took Trader Joe’s Temptation Trail Mix to calm me down. I don’t suppose it’s a temptation anymore after you give in.

I’m screaming in joy because today I officially finished up with my 3rd class but in agony because my fourth and last, while being 6 days away, I already feel unprepared for and as if it’s a waste of time to study(not like I’ve found the chance yet).

Meat And Potatoes Cooking

Meat And Potatoes Cooking

I could have screamed and yelled to tell everyone what an amazing cook I’ve become, but no one’s been home to listen. Of course, my dog will come running once he smells something cooking. Is it bad that he responds to “little shit”? My grandmother and I have got to get better about that…

Bison Medallion, Seared Sweet Potato And Onion Over Greens

Bison Medallion, Seared Sweet Potato And Onion Over Greens

Yum! I found an old bison medallion in the freeer to thaw and cook in a little EVOO with a roasted potato, onion, and fresh rosemary. How can anybody not look forward to fresh herbs?! They just add so much flavor.

I might have hollered a bit when I realized that some flavors of Celestial Seasonings contain gluten! Sleepytime Throat Tamer didn’t, however, and it said it would help my throat, which has been a little scratchy all day(probably from the screaming), so I thought I’d give it a taste.

Scratch Ticket

Scratch Ticket

I squealed a little when I won $5. It wasn’t much of a scream, but it made my day.

Mint Chip Coconut Milk Ice Cream

Mint Chip Coconut Milk Ice Cream

J’adore mint chip coconut milk So Delicious ice cream and I’ll shout it from the rooftop! It’s so minty and the touch of coconut oil chocolate adds a nice, cool crisp to it all. I also love that everyone else in this house won’t touch coconut milk ice cream. More for me.

Oatmeal With 365 Crunchy

Oatmeal With 365 Crunchy

It’s also cheaper to shout and bicker that it’s 48 degrees in May than turn up the heat. Why the unseasonable weather? Why? Warm oats, get inside my belly!

But what’s the real reason I’ve been screaming? Well…

Cuisinart Ice Cream Maker

Cuisinart Ice Cream Maker

I scream for ice cream makers! I got one a few weeks ago and it’s been waiting here ever since. Excited doesn’t even begin to describe how I feel about this; oh the possibilities! But that’s where you all come in. If you had an ice cream maker, what would your dream flavor be? Or, if you have any specific recipes from websites you like, please share! I’m a little wary of dealing with egg yolks to begin with, so now I’m just thinking of working with simple flavors/recipes. Hermit ice cream, maybe? 😉

Hungry Nights And Cookie Dough Mornings

Posted on April 3, 2010. Filed under: Daily Update, Product Review | Tags: , , , , , , , , , , , , , , , , , , |

Last night I played Hungry Hungry Hippo. Except there was no board game and I was the hippo.

Milk Chocolate Peanut Butter Covered Egg

Milk Chocolate Peanut Butter Covered Egg

I was really really excited to try the new Trader Joe’s milk chocolate peanut butter cup. I mean, how could it not be good?!

Soy Yogurt With Milk Chocolate Peanut Butter Egg

Soy Yogurt With Milk Chocolate Peanut Butter Egg

I diced it up and put it on some So Delicious plain soy yogurt sweetened with alcohol free vanilla NuNaturals. Trader Joe, I feel you took advantage of me. This was not like an all-natural peanut butter egg 😦 The ratio was all off, and I don’t even think that was really peanut butter; it was more like chocolate peanut butter. I think the best all-natural peanut butter egg will be just coating the inside of a plastic egg with chocolate and filling it with peanut butter–done.

Nature's Path MMMaple Pecan Bar

Nature's Path MMMaple Pecan Bar

I was equally really excited to try the 2nd of two bars Nature’s Path sent to me; this one was MMMaple Pecan. This smelled ridiculously good. It had a very “New England” aroma–love it! The flavor was a bit of a let down after that. It wasn’t really sweet, or really salty. It just was. But it also was probably the healthiest of any of the Nature’s Path granola bars I’ve reviewed, so kudos for that. But did that fill me up? Not a chance

Pumpkin Oatmeal With Maple Almond Butter And Maple Butter

Pumpkin Oatmeal With Maple Almond Butter And Maple Butter

If this wasn’t about to fill me up, I was going to retire, pack my food bloggin’ bags, and move to Boca Riton. I made a batch of pumpkin oats topped with Justin’s Maple Almond Butter and a little bit of maple butter with sea salt. Oh God this was good, and filling! It was a little cruel to eat this while watching The Best Thing I Ever Ate: Bacon. I. Love. Bacon. And I love maple bacon, in particular maple tempeh bacon. Two more days of Lent and I’m not giving in!

Raw Cashew Butter

Raw Cashew Butter

This morning I slept in embarrassingly late :-/ The part that bugged me was just not knowing when to run anymore. I decided to eat breakfast first, run later. In the meanwhile, I made raw cashew butter, since I loved Love Raw Foods‘ so much. It was actually one of the easier nut butters I’ve made! I just turned on the food processor for 10 minutes and voila. And what could be better for breakfast than freshly nonroasted nuts?

Oatmeal With Cookie Dough Cashew Butter, Lucuma Yogurt With White Chocolate

Oatmeal With Cookie Dough Cashew Butter, Lucuma Yogurt With White Chocolate

In some plain yogurt I added 365 brand agave and Navitas Naturals‘ Lucuma Powder which made such a nice, malty sweetness, and on top were a few white chocolate chips. In the oatmeal was Homemade Chocolate Chip Cookie Dough Cashew Butter. Yes, you read that right.

Chocolate Chip Cookie Dough Cashew Butter

Chocolate Chip Cookie Dough Cashew Butter

Chocolate Chip Cookie Dough Cashew Butter:

  • 1 scoop cashew butter
  • A few, scant drops vanilla extract
  • Chocolate Chips
  • 1/2 teaspoon agave

Oh. My. God. If you like cookie dough at all, you must try this. The vanilla entirely makes this dish, but you have to watch out not to overdo it. It’s even better microwaved a little so the chocolate melts in to the cashew butter. Do it! Speaking of doing it, I just need to get out there and run before the day gets away from me. We have big plans for dinner; let’s just say the cashew butter was just a prelude 😉

Why Fish For Lunch And Tofu Is Local

Posted on April 2, 2010. Filed under: Daily Update | Tags: , , , , , , , , , , , , , |

It’s the last Friday in Lent and I didn’t slip! Not on eating meat, not on eating “prepared soy”, not on anything. Trust me: There have been some times when I almost threw it all by eating bacon peanut brittle on a Friday(only I could make this mistake…), but not today.  Of course, my biggest challenge came on the last day…

Avocado Kale Salad With Roasted Cashews, White Fish With Lemon

Avocado Kale Salad With Roasted Cashews, White Fish With Lemon

I ended up eating lunch at Whole Foods again, this time with my dad on the way to Boston and then home for Easter weekend. When I got to the salad bar, all I could find was meat and tofu. And it looked goood. The one fish I was able to find had a wheat cracker coating, so I brushed that off and added a lemon wedge. It was totally overcooked and tough; in a phrase, it was Lent.

Avocado Kale Salad With Roasted Cashews

Avocado Kale Salad With Roasted Cashews

Trilogy Kombucha

Trilogy Kombucha

Of course, I had to have more of that amazing kale and avocado salad; I can’t wait to try to make this myself! And kombucha is on sale this week so I had a trilogy flavor to wash that all down. Yum!

Green & Black Cherry Dark Chocolate

Green & Black Cherry Dark Chocolate

Actually, before lunch I went for a run. My “prerun fuel” was 4 more squares of Green & Black cherry dark chocolate. Would I fuel with anything else 😉 I did not feel like I had energy the first 3 miles; in fact, I thought of cutting it short early just because it felt like I was “chugging along” and not really running. I may not run pretty, but I have good endurance and I convinced myself I could “chug” the full 9.5.

9.5 Miles At 8:12 Pace

9.5 Miles At 8:12 Pace

When I got back, my jaw almost dropped looking at my watch. I “chugged” the 9.5 mile route 3 minutes faster than I had so far this year. Apparently, I don’t know my own speed! That kale and avocado salad from yesterday must have been my running magic, which is why I took it again today 😉

"The Vegan" Cupcake

"The Vegan" Cupcake

I don’t suppose it would surprise you if I told you we went to another Whole Foods after passing through Boston, would it? This cupcake was part of my birthday celebration; it’s “chocolate cupcake with chocolate chips, a chocolate ganache center and chocolate frosting” and all vegan. It’s made by Kickass Cupcakes, so it’s all-natural, but it’s not gluten-free. I’ll just be paying for that last part later.

Cupcake And Coconut Ice Cream Sundae

Cupcake And Chocolate Coconut Milk Ice Cream Sundae

First thing we grabbed at Whole Foods was chocolate So Delicious Chocolate Coconut Milk Ice Cream, a spoon, and a cup. There’s something so amazing about buying a pint of ice cream and eating it on the spot. When that was devoured, we got almost all our groceries for Easter Sunday, and headed across the way to the 2nd most glorious place on earth:

Trader Joe's

Trader Joe's

I can’t believe this must have been the first time I went in to a Trader Joe’s in over a month! There were some new goodies to gawk at, but I wasn’t there to dilly-dally. My favorite fun find was milk chocolate peanut butter eggs(!!). I’m thinking/hoping these are going to be like the Reeses’ eggs.

Organic Fuji Apple

Organic Fuji Apple

Putting away the groceries, I snacked on an organic apple. The coconut milk I was trying to bring home totally went bad after 5 hours in the car 😦 Good thing we got a new can. We also wanted to eat out for a birthday dinner but the restaurant had nothing free tonight. Double 😦 Good thing we had groceries for dinner, too.

Maple Baked Tofu, Roasted Broccoli And Sweet Potato Chunks Drizzled With Maple Syrup

Maple Baked Tofu, Roasted Broccoli And Sweet Potato Chunks Drizzled With Maple Syrup

I did what I always do when I feel like a simple meal; I threw maple coated tofu, steamed broccoli, and raw sweet potatoes in the oven at 350 for 45 minutes. At least I know I couldn’t go wrong here. And you really do learn something new everyday. At dinner, my mom told me the man who started Nasoya lived two doors down when we first moved in(I would have been 2 or 3). I’ve always known Nasoya’s a Massachusetts company, but I didn’t realize we were that close. I like to think that means I’m eating local whenever I have tofu 😉

And now, as you might have guessed, I’m at home. Man Vs. Food is on the Television. I completely embrace the crappy and addictive shows whenever I can get them. Happy Friday and do enjoy whatever is your “guilty television programming” 😀

Friday Fish And Chips

Posted on February 26, 2010. Filed under: Daily Update | Tags: , , , , , , , , , , , , , , , , , , , , , , , , |

Happy Lenten Friday, everybody! OK, that has an awful and fake sound to it. The Church needs to come up with something catchy. But while they do, I’ll catch you up on what we decided. Last Friday I posed the question yay or nay on fish if I consider them a “meat” in terms of vegetarianism. A lot of you raised compelling arguments and the clear answer was that fish was cheap at the time of Aquinus which is why Catholics can still eat fish during Lent, but it’s “in the spirit” to have only the lesser-quality fish(aka no sashimi :-(). Of course, I also consulted my mom who’s the real my-word-goes-if-you-know-what’s-good-for-you and she agreed that fish was OK. Why am I saying this when fish wasn’t even on the menu for lunch?

Asian Tofu And Egg Stir-Fry With Honey Ginger Veggies And Hemp Flax Crackers

In my way overworked pan, I browned the last of a block of tofu(1.5 servings maybe) in soy sauce. Then I added these honey ginger vegetables I picked up at the dining hall until they were heated. Lastly, I cracked in an egg and cooked through–delicious! I’m not sure what was on the veggies; I don’t want to know. But this tasted perfectly greasy like real Chinese food. Over the top, I sprinkled some Omega-3’s ala seed crackers:

Foods Alive Hemp Flax Crackers

Foods Alive Hemp Flax Crackers to be exact. These were so deliciously herby! Rosemary is towards the bottom of the ingredient list but the flavor was LOUD and proud, and good, too! I actually opened this thinking it was “herb” instead of “hemp”; perhaps it should have been.

Apple With Coconut Oil Agave Dipping Spread

While watching America completely own Finland, I had an ingenous and delicious snack. I sliced up a red delicious apple and spread on it Tropical Tradition‘s coconut oil mixed with Xagave–sweet fats, this was good! I could have just eaten the coconut oil with a spoon; OK, I might have done that a little, too 😉 Anything to distract me from work! But then I got hungry again, which meant early dessert apparently:

Soy Yogurt With Milk Chocolate Peanut Sunspires

I was on such a good vegan streak until the egg, and then milk chocolate. Oh well, if my milk and meat teeth want to return, fine by me. While majorly enjoying this, I stuck a sweet potato in the oven, but it didn’t cook in time for dinner 😦 I had all the time in the world; I should have put it in early. I’ve since stuck it in the fridge for another meal. Here’s where the fish comes in:

Trader Joe's Wild Alaskan Salmon

Ain’t she a beauty? Straight from a can. It kind of made me think I was eating cat food(like, a lot). I guess that’s the spirit of Lent! 🙂 To flavor it, I added some maple syrup and maple butter. And because my sweet potato didn’t turn out, I had a very different form of potatoes…

Maple Butter Alaskan Salmon, Broccoli, Sour Cream & Onion Pop Chips

Is it wrong that I probably liked the Sour Cream & Onion popchips more than I’d have liked the sweet potato? Yeah, no shame. The salmon was pretty decent for being from a can; they didn’t keep much fat in it, though, which is where all the Omega-3’s would be 😦 Good enough, I suppose? I’d actually been thinking about finding a good DHA supplement this year, but my final verdict is the same: I don’t really believe in supplements(fortified foods I’m a bit more tolerant of). I’m much more apt to want to get the nutrients from the foods themselves. And it’s especially hard for me to justify that I would need fish oil when there are so many healthy vegans and vegetarians. So no supplements for me! And I probably saved some good money with that decision, too 😉

Looking back over this week, I learned 1 block of tofu is not enough for this soy lover, and 4 soy yogurts barely got me through. Add those to the shopping list! And looking ahead, I’d really love to go home and bake a cake for no reason, but I don’t see that happening 😦 Visions of sugar cakes baking in my sleep? I’m guessing…

I hate to barrage you with contests but there are a lot out there right now and since I recently won I figure I’d keep the luck going and maybe get some scratch tickets later, too! Avery is having a peanut butter giveaway, here’s a chia seed giveaway, a popchip giveaway(which I obviously need to feed my addiction), a giveaway for shredded coconut from Trop Traditions, an ice cream machine giveaway, and lastly one for chia goodness oatmeal.

Working (And) Up An Appetite

Posted on February 22, 2010. Filed under: Daily Update, Product Review | Tags: , , , , , , , , , , , , , , , , , , , , , , |

If this post has a somewhat downer tone it’s probably because my dinner was a little bit of a Disaster with a capitol D, but more on that later :-/

Laundry

I still love Mondays, though! I managed to get laundry done, and read 160 pages for a class I need to read. It’s not as much homework as I’d like to have done but there’s still time after dinner, right? I’ll just keep hoping.

Sundried Tomato Al Fresco Chicken Sausage

I wanted lunch to be low-key so I grabbed a new flavor of Al Fresco‘s chicken sausage to try and review. I love these because I just have to defrost in the microwave for 90 seconds and then cook them in there, too, for another minute!

Black Beans With Salsa, Broccoli With Hemp Oil, Sundried Tomato Chicken Sausage

Even though this was an early lunch, I felt like I needed volume. I guess those 10 miles this morning got my appetite going, too. The broccoli was jazzed up with a little of the hemp oil dressing from Foods Alive and then the beans by salsa. Yum. This sausage wasn’t nearly as flavorful as I was looking for :-/ It tasted… like chicken. AND I was still hungry. Dessert time!

Lemon Fig Pecan Raw Bar

Which obviously called for coffee, as well. I dug into my stash of Uli Mana raw desserts and tried their lemon fig pecan bar. It was super delicious! I just loved how bursting with lemon this was, like a lemon bar with powdered sugar but sooo much better for me. It was a nice sweet tone to end Lunch with and get working while watching TV.

Chocolate Chip Banana Soft Serve

3pm rolled around and I was starving AGAIN. Did you know Stedman isn’t a fan of chocolate? The things we learn watching Oprah… Anyway, that gave me a major chocolate chip craving, which led to some rawesome ice cream with chocolate chips.

Chocolate Chip Banana Soft Serve

Yum! I think I need to make a recipe page with all the possible alterations on banana soft serve, because the possibilities are endless! This batch was chocolate chip, and at the end I made it something of a banana de sel by sprinkling sea salt on top to bring out the sweetness. Can you say heavenly?

Trader Joe's Chocolate Chip

These are my preferred chocolate chips of choice for applications like this. They are gluten free and vegan. They taste deliciously sweet(hello, 8g of sugar per serving). I’ve had lengthy discussions with Avery just about how much these rock. My only complaint is that Trader Joe doesn’t make mini chocolate chips; mini makes everything more fun! Oh, I’d also complain they aren’t terribly filling.

Pumpkin Oatmeal With Chocolate Peanut Butter

Looks like a breakfast, but eats like a snack. And, yes, I eat oatmeal usually with a salt shaker at arm’s length for some flavoring. Pumpkin oatmeal with Justin’s chocolate peanut butter was just what I needed to power me through an otherwise painfully long afternoon.

For dinner, I wanted to make an entry into Katie’s new contest. All you need to do is make pancake roll-ups, top with fun toppings, and enjoy. Simple, right? My idea was gluten-free coconut flour crepes with cream cheese, avocado, salsa, and tuna toppings. But instead of crepe, I got…

Coconut Pancake "Grits" With Grass-Fed Butter, Tuna With Coconut Milk And Cream Cheese

Crap. CLEARLY I am not that good at making pancakes. I tried! I honestly did! I was flipping away in the dorm kitchen but everything turned to mush. This was one gluten-free recipe that was not meant to be. Not to mention it wasn’t very smart to keep licking the batter when there’s egg white in it(oops). In the end, it was really a meal that would have better off uneaten 8-| But I also am pretty strict about not wasting food, so I called it a “grits” and went ahead and had something like the planned meal.

I could let the nastiness of this get me down, but instead I’ll focus on the positive points. It was a meal full of fiber, healthy fats, and protein. Besides, with a hunger like mine, there are plenty of more meals to come and 1 bad one isn’t the end of the world. In fact, tomorrow night’s dinner will be a real hum-dinger I know I can pull off 😀 And so I can look forward to that. And maybe, just maybe, Katie will take pity on my and let my shameful attempt count as an entry? So let’s hear in the comments some of your worst dinner disaster stories.

Long, But Not Longer

Posted on February 22, 2010. Filed under: Daily Update | Tags: , , , , , , , , , , , , , , , , , , , , , , |

Good morning and happy Monday! Are you a Monday lover? Or maybe it’s that dreaded day that sparks the work week for you? I’m a big fan of Monday’s myself; to me, they’re the time when things “normalize”: The gym is open at 6:30 again, the TV shows get better, I do my laundry, etc. It’s just a great day to get back at it! I’ll rave more about Monday when we get to that point. But first, Sunday night I had a lot to look forward to, too.

Trader Joe's Bed Time Tea

I tried this new tea from Trader Joe’s. Of course, since it was TJ’s, it was a cheaper knock-off version of some chain’s flavor. But it was also ridiculously good! It had plenty of chamomile and vanilla going for it, which tasted like a sweet treat with stevia. Mmmm. Beyond that, I opened up a new pint.

Gluten-Free Snickerdoodle Soy Milk Ice Cream

Not that kind of pint; this kind! Although to get to this in the common room fridge, I did have to walk past a group of guys playing beer pong in PJ’s. LOL! Some might find that a little awkward but I’m comfortable in my own skin(or pajamas) and will jump through hoops for my ice cream! I love how this had a Gluten-Free seal on it, as if gluten is a creeper that would crawl up the sides and slip on in 🙂

Snickerdoodle Ice Cream

Yum! So good. I can’t even count how many pints of this flavor I’ve gone through. Incidentally, I’ve also lost a few scoops to stealers in the dorm in the past 😦 That won’t happen again, hopefully.

This also led me to question whether this conflicted with my Lenten give-up of pre-flavored soy products. My answer: No. I really wouldn’t say soy milk or soy ice cream counts very well as “food” to begin with(as opposed to tofu and tempeh). The point of giving up what I did was to take away a convenience food–2 key words there–and not to take myself off of trivial desserts. I don’t think it’s very “Lenten” to banish unhealthy food as if another excuse to diet. That’s my 2 cents; check out this post for what I think sounds like the best and toughest give-up by a blogger.

Pumpkin Oatmeal With Blueberry Jam And Mighty Maple

Later on I had some very New England oats while watching Brothers & Sisters. Warm jam? Heck, yes. I’m glad Brothers & Sisters is back. Last night’s episode was incredible and next weeks looks good, too. I just wish it was actually played on Valentines Day, which would have made it more effective. I was not a fan of that crazy ice dancing; seriously, the aborigines?

Chocolate Brownie Z-Bar

For 3 weeks now, Sunday has been the hardest night for me to get to bed. Maybe this time it had something to do with the people singing Bohemian Rhapsody a few floors down–don’t know. I had to stay up late, watching something about King Tut on the Discovery Channel, and chowing on this Chocolate Brownie Z-Bar I found in my stash. I forgot how good these are! Too bad I don’t think I have more 😦

Newman's Own Organic Decaf

Back to why I love Mondays;. For one, I got to open this new bag of coffee which we bought at Stop & Shop yesterday; it’s one of my favorites! I got up at 6:50 so that I could be at the gym at 7:15, which I find is the perfect time for me to start running. Recently, Mondays have also been my “long run” which has so far been 1 mile longer than the one the week before. That would have put today at 11 miles. Well, my heart was just not that into it today. So I decided I’d still do a “long” run of 10 miles–just not a “longer” run.

10 Miles In 89:49

That took 89:49, in which time I had the good company of The Today Show, Cartoon Network, my gym friend who works for the college, and the local news. Apparently, it’s going to rain Tuesday-Friday straight! If that were snow, I’d be happy as a clam, but rain has me frowning 😦 At least it’s sunny today? Before breakfast, I also squeezed in a trip to a campus store for yogurt, a shower, and stuck my laundry in the machine. Needless to say, I was ready for fuel when I sat down!

Pomegranate Yogurt With Dark Chocolate, Pumpkin Oatmeal With SB PB And Nutritional Yeast

Pomegranate Yogurt With Organic 70% Dark Chocolate Shavings

Mmmm, yum yum yum! I would call this a sweet and savory meal. For savory, we have the pumpkin and nutritional yeast combo with Smart Balance Peanut Butter; I swear it tastes like cheddar cheese crackers with peanut butter on them, and it’s a vegan dish! Perfecto! For the sweet, I bought a pomegranate yogurt this morning and topped it with 1 square of the 1.4oz organic dark chocolate bar by endangered species; this is pretty much my favorite dark chocolate–very deep in flavor, hard texture, and entirely organic.

So, have I convinced you of Monday’s greatness or not? Answer quick because my laundry comes out of the dryer in 20. Or, if you want to rant about Monday in the comments, I don’t mind that, either 😀 For my part, I’ll rant that I have a paper due Wednesday for which the writing fellow was no help with and a Greek test on Thursday I feel under-prepared for. To all that, I just have this to say: Que Cera Cera

“It Has That Green Smell”

Posted on February 21, 2010. Filed under: Daily Update, Product Review | Tags: , , , , , , , , , , , , , , , , , , , , , , , , , , , |

Glad you all liked my Lennon this morning 🙂 Clearly, I was the missing Beatle. Anyway, right after potsage I hopped on out for a long Sunday morning gym extravaganza!

Mint Chocolate Attune

I didn’t have any probiotics(a superfood of mine) at breakfast because I was out of yogurt, so I grabbed this mint chocolate Attune bar on the way to out the door. It was pretty tasty! I like that it tasted like dark chocolate even though it’s milk. I was not a fan of the rice crisps, but I never am. According to the package, this was 5x better than a store brand yogurt would have been! Score! Plenty of probiotics to work my digestion while I ran.

6 Miles in 54:21

I don’t know what it was about today, but time felt like it went at a snail’s pace. I set my treadmill to go 6 miles; when I could have sworn I was getting close, I looked down and saw a disappointing 4 :-/ At that point, I had to put on a movie to finish me through. Afterwards, I was inspired to keep watching the movie and do 20 minutes on the elliptical at resistance 7 and 20 minutes of treadmill walking. Getting back the last thing I wanted to do was shower and make a meal, but that’s what ended up happening somehow.

Grass-Fed Burger, Broccoli, New York Pizza Pirates Booty

After a quick one I was downstairs cooking my burger in the dorm kitchen. I might have forgotten a shirt. Oops. The Naked Chef, anyone? I actually overcooked it for the first time! Well that makes up for yesterday when it was undercooked and I ate it anyway; I love my meat red 😀 On the side, I had some new snack’ums.

New York Pizza Pirate's Booty

I thought about giving up chips for Lent; that would have gone horribly horribly wrong. I opened up a bag of New York Pizza Pirate’s Booty I was sent to review. The flavor was not what I was expecting. That being said, I liked that it had flavor. It was very heavy on the paprika with some sharp cheddar to it. It didn’t knock me off my feet but I liked it. Maybe I need to spend more time in NYC?

After that my parents and grandmother took a trip down to see me with mail and such. It was good because I needed supplies like paper towels; I’ve been pressing too much tofu! My mom even vacuumed and in response my grandmother had to say “It smells good in here. You know, it smells clean. It just has that ‘green’ smell, like somebody’s been eaten broccoli and brussels sprouts.” LOL She nailed it on the head. I guess I don’t notice the smell since I’ve lived with it so long?

Zevia Twist

While I had the ride, I took the chance to get a trip out for groceries; how could I deny that? I grabbed a Zevia and we were out the door. First up: Trader Joe’s! I’m actually becoming more apathetic about that store. I feel like the best things from it are the plain stuff that you can get in bulk for cheap. And I’ve already gotten those in bulk! Well, it certainly is a good place for everyone to find something, at least, so while others finished shopping I had a snack:

Carob Chip Perfect Foods Bar

In the mail I got from home was some Perfect Foods bars. These are made primarily with organic peanuts and raw honey along with all different forms of protein and are meant as a meal replacement, but I’m pretty sure for athletes they’d just qualify as a snackypoo. This flavor was carob chip. I’d actually never had carob before! And I still don’t really feel like I have; this bar was pretty heavy on the peanuts with the carob only coming up in chip form even though carob powder is the 5th ingredient. BUT it was also really tasty so I can’t complain too much. It tasted a lot like peanuts and honey–duh. And it kept me fueled for all the serious grocery shopping, so it was definitely hefty.

Oatbran And Oatmeal

I got 2lb of oatbran from Trader Joe’s and then 2lb of oatmeal from Whole Foods. I’d say I’m pretty well stocked! The oats were on sale 99 cents a pound from the bulk bins(organic), so I had to load up. I also completely lost my shopping list in Whole Foods which freaked me out, but I was able to remember what last scribbles were on it. Seriously though, who would even have picked that up and taken it if they came across it? Weird.

Whole Foods Groceries

I liked using the pound of grass-fed beef I got last weekend so much I decided to do it again! Unfortunately, they didn’t have the fattier cut, which I would have gone for, so this one ended up costing a little more, but it’s still not bad since it will work over 4 meals. And I might have snuck one of my favorite ice creams and favorite chocolate bars into the shopping cart–not going to lie.

Trader Joe's Groceries

At Trader Joe’s, I was all over the proteins and fats. I also had my parents bring me whole eggs, too; the egg whites are more for oats. I feel like I should have gotten another block of tofu now that I think about it :-/ It’s such a perfect protein!

Apple

I grabbed an apple while I was in the dining hall scrapping up veggies for dinner. I really felt like I needed to eat something “clean” for one reason or another. “Clean eating” in my mind is something where each ingredient is a raw ingredient or has only a few components to it. I was planning on a Thai dish with Trader Joe’s coconut milk curry sauce but that long list would not have fit as “clean” :-/ Instead, I went ahead and just used coconut milk and honey.

Tofu And Tempeh In Honey Coconut Milk, California Vegetables, Cayenne Parma

Pretty clean, if I do say so myself. The tofu and tempeh were cooked in coconut milk, watter, and honey, then drained and splashed with coconut milk and honey(it’s a flawed process). On top I sprinkled some cayenne Parma, which, if that’s the most unclean thing I was eating, I was doing damn well. All the flavors fought a bit but it was still very much enjoyable. I just think it needed more cruciferous veggies! OK, I can cross my word of the day off 🙂

Blah, today was fun but I felt like the productivity took a dive. I got about 20 pages of reading done in the car and… yeah. I actually got into my PJ’s before dinner just to be able to cross that off my mental to-do list. Is that crazy? That’s not something I want to hear the answer to. Hopefully, tonight will be better.

2 Cuisines, 2 Times The Beans!

Posted on February 13, 2010. Filed under: Daily Update, Recipe | Tags: , , , , , , , , , , , , , , , , , |

Today I’ve been traveling the globe with my eats. My first stop was a (late) lunch in Me-hi-co

Black Beans With Salsa And Avocado, Broccoli, Lime Nachos

I had 1/2 a can(or more) of black beans from Tuesday’s lunch to use up, so I heated those with some salsa, the last of the broccoli I had, and mashed avocado(you mean this is edible not in pudding form?!). I don’t know why I buy unsalted beans; I then just have to add loads of salt to make them appealing. But the real reason I had this meal was for the chips.

Lime Food Should Taste Good Nachos

I think I’ve mentioned this before, but it’s worth repeating: chips are my kryptonite! They’re my Achilles’ heal, to use a Classics term. I have no problem with sweets, chocolate, etc. But chips–they get me. And there’s really no nutritional way to back them up; they’re just emptiness, but so delicious. I keep a few(4 or 5) bags on hand because I’m not in to depriving myself in anyway, but I also look for different ways to satisfy those cravings with more wholesome foods. This time I took myself about 2/3rds of a serving of these to satisfy my chip tooth. And since I remembered that I reviewed these for the company a while back, I knew that they, too, need a sprinkling more salt to dance.

I took a trip to Vancouver, of course, through the television while visiting Ancient Rome and Greece through my books and internet texts. This afternoon was the speed skating; I love speed skating. If I had any ability on the ice whatsoever that’s what I’d like to do with it. I also love the Netherland’s uniforms. Spandex and bright orange–now that’s how to roll.

Snickerdoodle Soy Ice Cream, Coconut Oil Chocolate

My afternoon snack was inspired at breakfast. I liked the idea of a “sundae on Saturday”, so I scooped out 3/4 of a cup Snickerdoodle ice cream by So Delicious and then added 1/2 of a coconut oil chocolate bar. If you haven’t tried this ice cream yet, you must! It’s one of my absolute favorites. And it’s technically not even “ice cream” but rather “soy milk cream”, though I don’t think that rolls of the tongue. It’s full of gluten-free snickerdoodle cookie dough balls–yum! I was tweeting about them with So Delicious on Twitter 😀 They’re so fun to tweet with. They also must think all I eat are milk alternatives; dare they learn of my greek yogurt obsession?

Speaking of the coconut oil chocolate bar, it now has a recipe page! I was getting so many requests for that that even though it was far done on my to-do list in terms of site maintenance I figured it had to be addressed. I tried to keep the recipe general, but it’s really something that benefits from owning a kitchen scale. That’s how you can control the flavor and get what you want.

Thai Red Curry Sauce

For dinner, I took a plane with Trader Joe-San to Thailand. The first time I used this sauce was absolutely months ago; I figured I needed to revisit it now that I have a coconutty obsession and this is coconut milk based! It also has a lot of other questionable ingredients I wouldn’t have thought to be Thai. Like egg yolks? And xanthan gum(which I own but can still give me the willies sometimes). Anyway, I steamed a good amount of organic tofu and then added steamed vegetables with the sauce and let that simmer for 5 minutes or so.

Tofu In Thai Curry Sauce, Mushrooms, Watercress, Snap Peas

Mmm, all this needed(besides natural light, but I don’t control the sun) was some salt and fresh basil(not like I had any) to pop. I love how much flavor store bought sauces can bring to dishes with minimal ingredients otherwise. And so often I forget that tofu is beans! The fact that it’s smooth and white makes me think it’s probably over processed, but I do love that funky tofu texture 😀 I usually buy the one labeled “soft” for the really great texture.

I should probably return to Greece via Plato’s Phaedo before I get sucked in to Vancouver. What country would decaf hazelnut coffee be in? Because I’m making a major pit stop there.

And wow would I love to win this blender for some raw goodness!
