I think I’ve found my new hobby

Yesterday, I spent a good portion of my afternoon working on this masterpiece. It was supposed to be vegan white chocolate ice cream, but the white chocolate flavor never really came through :-/ Then again, I don’t think I’ve had any vegan white chocolate ever, so I’m not sure what I was working with to begin with. Anyway, what came out was a delicious Coconut Cocoa Butter flavor.

Today started out very relaxingly with yogurt and raw local honey and some lightly-sweetened peanut butter over oats. Even though the weather was gorgeous, after 9 days of running I was happy to take a rest day because that’s what my body wanted.

Rest day or not, I refuse to give up some morning chocolate 😉 Followed by a good walk. When I got back, I fired up the grill and cooked for everyone.

I think I’ve taken my onion love to new, stink-breath heights. All it took to make these was tossing them in some EVOO and putting them in an aluminum foil pack cooking 5 minutes on each side. Delicious! They went perfectly with a southern style Wildwood burger and some roasted broccoli.

And right afterward, I went back to my new favorite hobby. I made a mix of 3 cups organic half and half, 3/4 cup Bob’s gluten free cake mix, 5 tablespoons Madhava light agave, and some guar gum and poured that into the ice cream maker. Like I learned from this experience, you really need to make the ice cream a good 3-4+ hours before expecting to eat it.

Why not some matching cupcakes? Made with Tropical Tradition‘s coconut oil and a flax egg. Getting that flax chicken to lay an egg on command is tough work! But she clucks one up eventually.

And then, since none of that would be ready for a few hours, I’ve been snacking on a bowl of oatmeal with Justin’s chocolate almond butter and coconut milk for richness–delicious! I think dessert for tonight is pretty much set with my new hobby, wouldn’t you? 😉

Annnd now I’m snacking on one of the cupcakes. Flax, egg–I’ve still got it no matter what I’m cooking with.

Last night I was feeling like a chocolate snob and debating between which brand of orange dark chocolate to have; yes, I do that. In the end, I went with Newman’s Own Organic Orange Dark Chocolate not just because it’s organic but because it has a sweeter flavor from a higher sugar content. OK, enough chocolate talk. That prompted the tweet,

EvanFMFF: I want to go on an all-organic chocolate diet so that when I get fat from it I can say “yeah, but it’s organic fat”.

It was a joke (sort of :-D) but I loved the responses so much I had to share. Some bloggers wanted to join in; could I be more popular than the cookie diet? Other bloggers were their witty selves:

which reminded me of something I want to share from the Today Show: sewage waste is not only permitted, but used in non-organic produce fertilizing. Uhh, ew! I don’t always or even often eat organic produce but these are the kinds of things I’d rather not know because it makes me want to. And, lastly, some bloggers made a knowledgeable and poignant tweet:

That’s a good reminder that just because you shop at Whole Foods doesn’t mean you can’t go wrong, or at least be picking up things that are still “sometimes” treats rather than good-for-you diet staples.

This morning I slept in in hopes of a sunny outdoors run later on this morning; let’s see what the sun has to say about that. Instead of coffee, I thought I’d opt for mocha herbal teeccino instead so as to not dehydrate myself. It doesn’t really taste like coffee, but it’s nice beverage to have around if you need to feel April Fooled into drinking the real java. It’s better because it’s non-acidic. If it were the only type of coffee I kept around, I probably wouldn’t notice missing the “real” thing.

Ahh, pumpkin oats, my voluminous friend, where have you been these past few days? 🙂 There was some pumpkin oatmeal with honey maple protein peanut butter, but the real story was in the yogurt. I mixed a plain So Delicious coconut milk yogurt with 2 tablespoons Navitas Naturals‘ twister powder(cacao, maca, and hemp) and topped that with some Tropical Traditions coconut peanut butter. Coconutty? I think so. The peanut butter was a little stiff on the yogurt and might have been overkill, but at least it was tasty overkill.

Rick from Book Publishing Co. offered to send me a book for review and share my opinions on. Sweet Utopia by Sharon Valencik is a book devoted to vegan desserts; how perfect does that sound? Desserts are something I’ve always had trouble “veganizing” myself so I can’t wait to see what she has to teach me and how much I can take away. For the month of April and possibly May, I’ll be flipping through the book, picking up tips, and trying out recipes. In the end, I’ll give a comprehensive review and hopefully if I end up loving it I can suggest it to you all! Sound fun?

How Yellow Gatorade Makes Me A Foodie

I loved reading your thoughts on rest days on this mornings post. It sounds like there’s a a wide spectrum of loving/hating rest days and how often each person can go without one. Today helped me realize that a) 3 weeks is just too long for me and b) if this is how hungry I am when I “rest”, just put a whole grocery store in my pantry because I’m going to need it. As for the Munch Bar, from what I can tell they’re only available at Walgreens. But they’re really good for an “all-natural candy bar”! They’re probably better nutritionally than most of the bars in Whole Foods.

I don’t think my dorm room would have passed state health inspection this morning; something about this didn’t seem right. Don’t worry! I did practice good hand-washing and did my best to keep things sanitary. After doing this a few times, I’ve definitely got it down to an art and know the insides and outs. 85/15 grass-fed beef makes the best burgers with a good dimple in the middle for when it puffs up. I was, however, almost late to class because I put off cooking one too long. Whoops. That’d be a weird excuse to have to make.

I think I deserve to steal the title “Burger King”, don’t you? This meal was ridiculously good, with ketchup and some white onions for the burger. For a side, I roasted a whole sweet potato, peeled it, and diced it. When the burger was finished cooking, I let the potato cook in the fat drippings for a hash; it’s simple, flavorful, and cleans the pan! What could be better? This meal held me over ridiculously well, which is good since I have 3 hours of class Tuesday afternoons.

Getting back to my dorm I unwound with some coffee and vanilla powder catching up on emails and google reader. Did you know that some companies sell a vanilla powder that’s literally just the ground up whole vanilla bean? It’s crazy expensive, but something I need to try some day. After tallying up the homework I have to finish for Wednesday and Thursday I’ve realized it’s going to be a rough couple of days! I might need more rest time if only because reading on the treadmill is tough to do. Bare with me if at any point I get brief.

Chocolate Avocado Pudding With Raspberry Coconut Spread

I made this to slowly enjoy before supper but ended up scarfing it down–it was that good! Just the standard chocolate avocado pudding made with almond milk and vanilla stevia. But for a new-and-nifty “topper” I mixed half Tropical Tradition‘s coconut oil with some Crofter’s Organic raspberry conserve. Raspberry is by far my favorite jam, but this just revolutionized the whole thing. And I’d love to try a “raw” version of this with agave nectar when raspberries are in season!

While I was putting off homework, I gave some thought to a guy I saw walking in to my Greek history class. He was easily 7 feet tall and carrying a milk carton filled with yellow Gatorade, which, on him, looked like a pint sized water bottle. Beyond the thought of all the nasty stuff that must be in yellow Gatorade and what the hell kind of genes he had to make him a giant, it made me think: He’s an athlete. Well, duh, but what I meant was that he really eats and breathes whatever he does. In my hand, am I more likely to carry a treadmill or a camera? Definitely the latter(and not just for the obvious reasons). I’m a foodie. I run, and I like to run, but I looove to cook and eat. My gut reaction to this post from Kelly was “You mean people don’t cook every meal?!” like it was a shock to my system. At that self-realization, I stuck some veggies in the oven and waited for dinner.

Have I gotten over my deep despise for plain tempeh? Nope. Have I worked my way through the whole block I bought? Not quite yet. But I can at least get myself to eat it cooked in a little coconut oil and topped with shredded coconut. Last time I made this [completely vegan] meal, I just steamed the broccoli; normally, for Asian flavors, I’d say that’s the way to go, but I think roasting it instead here helps with the nuttiness of the tempeh and coconut. That and roasted vegetables always taste better 🙂

Layers Of Flavor

Reunited and it feels so good… with Food Network! I forgot how much I enjoyed this channel. Right now, I’m getting my 5-ingredient fix with Claire Robinson on; I’m not even a fan of hers but 3 weeks without having it and I’ll watch anything on the Food Network. Her theme is layering flavors, so naturally I’m going to be a copy cat and show you some delicious layered flavors.

Soy Yogurt With Milk Chocolate Shavings, Peanut Butter, And Salt

From top to bottom:

  • Sea salt
  • 365 Creamy Peanut Butter
  • Trader Joe’s Bulk Milk Chocolate Shaved
  • Soy Yogurt With Vanilla Stevia

Hello, flavorful. I didn’t have any peanut butter cups around, and I didn’t feel like making the, so I just used the raw ingredients. Then I stirred it all together. BIG MISTAKE. The peanut butter always gets lost in the yogurt, so I finished it off with a garnish:

Much better 🙂 I find, if you want peanut flavor in your yogurt, it’s better to use peanut flour(which I’ve discovered troubles my stomach) or peanuts to get it loud and proud. On TV was bobsledding; I think bobsledding/luge/skeletons are so much more exciting than most of the sports they show on The Olympics but they get almost as little attention as cross-country skiing 😦 And yet the world has to stop to see ice dancers. Go figure. Before I went to bed I had some nutty oats.

One thing that is not muy bueno about being home is not having my super stash of nut butters to choose from. I ended up going with Maranatha’s almond butter, which is not nearly as good as Justin’s now that I’ve tried both 😦 I can’t wait to turn the people in this house on to Justin’s once it hits New England shelves!

Spoonful Coconut Creme Concentrate

The coconut creme concentrate is a new product I’m trying from Tropical Traditions. It’s kind of like very concentrated coconut milk. I haven’t explored it much and so won’t review it yet, but know that it was tasty enough that I took a spoonful straight from the jar before falling asleep 😉

This morning I slept in and read a little in bed before actually getting up. Is it just me, or are there a lot more commercials for cereals and breakfast foods before 9am? That would be good advertising if it’s true. It made me hungry for some cinnamon toast crunch–not like we actually have that or even any organic version around. That’s OK because I was perfectly capable of layering my own flavors.

The oatmeal likewise was a bit of a flavor conundrum(I’m pretty sure I’m not using this word right here).

Cinnamon toast crunch who? This was wayyy better. And it went good with some Mexican style coffee on the side, too. Now Food Network programming has shifted from Aida to Sunny Anderson. Fun fact: She actually commented on this blog once! It was towards the beginning of the Summer when I mentioned the new program The Best Thing I Ever Ate. It definitely made me feel famous for that one day(and might have gone to my head :-)). Now if you’ll excuse me, I believe Giada will be coming on, and she’s always entertaining to watch, and not because of her cooking 😉

Friday Fish And Chips

Happy Lenten Friday, everybody! OK, that has an awful and fake sound to it. The Church needs to come up with something catchy. But while they do, I’ll catch you up on what we decided. Last Friday I posed the question yay or nay on fish if I consider them a “meat” in terms of vegetarianism. A lot of you raised compelling arguments and the clear answer was that fish was cheap at the time of Aquinus which is why Catholics can still eat fish during Lent, but it’s “in the spirit” to have only the lesser-quality fish(aka no sashimi :-(). Of course, I also consulted my mom who’s the real my-word-goes-if-you-know-what’s-good-for-you and she agreed that fish was OK. Why am I saying this when fish wasn’t even on the menu for lunch?

In my way overworked pan, I browned the last of a block of tofu(1.5 servings maybe) in soy sauce. Then I added these honey ginger vegetables I picked up at the dining hall until they were heated. Lastly, I cracked in an egg and cooked through–delicious! I’m not sure what was on the veggies; I don’t want to know. But this tasted perfectly greasy like real Chinese food. Over the top, I sprinkled some Omega-3’s ala seed crackers:

Foods Alive Hemp Flax Crackers to be exact. These were so deliciously herby! Rosemary is towards the bottom of the ingredient list but the flavor was LOUD and proud, and good, too! I actually opened this thinking it was “herb” instead of “hemp”; perhaps it should have been.

While watching America completely own Finland, I had an ingenous and delicious snack. I sliced up a red delicious apple and spread on it Tropical Tradition‘s coconut oil mixed with Xagave–sweet fats, this was good! I could have just eaten the coconut oil with a spoon; OK, I might have done that a little, too 😉 Anything to distract me from work! But then I got hungry again, which meant early dessert apparently:

I was on such a good vegan streak until the egg, and then milk chocolate. Oh well, if my milk and meat teeth want to return, fine by me. While majorly enjoying this, I stuck a sweet potato in the oven, but it didn’t cook in time for dinner 😦 I had all the time in the world; I should have put it in early. I’ve since stuck it in the fridge for another meal. Here’s where the fish comes in:

Ain’t she a beauty? Straight from a can. It kind of made me think I was eating cat food(like, a lot). I guess that’s the spirit of Lent! 🙂 To flavor it, I added some maple syrup and maple butter. And because my sweet potato didn’t turn out, I had a very different form of potatoes…

Maple Butter Alaskan Salmon, Broccoli, Sour Cream & Onion Pop Chips

Is it wrong that I probably liked the Sour Cream & Onion popchips more than I’d have liked the sweet potato? Yeah, no shame. The salmon was pretty decent for being from a can; they didn’t keep much fat in it, though, which is where all the Omega-3’s would be 😦 Good enough, I suppose? I’d actually been thinking about finding a good DHA supplement this year, but my final verdict is the same: I don’t really believe in supplements(fortified foods I’m a bit more tolerant of). I’m much more apt to want to get the nutrients from the foods themselves. And it’s especially hard for me to justify that I would need fish oil when there are so many healthy vegans and vegetarians. So no supplements for me! And I probably saved some good money with that decision, too 😉

Looking back over this week, I learned 1 block of tofu is not enough for this soy lover, and 4 soy yogurts barely got me through. Add those to the shopping list! And looking ahead, I’d really love to go home and bake a cake for no reason, but I don’t see that happening 😦 Visions of sugar cakes baking in my sleep? I’m guessing…

Chocolate Avocado Pudding With Chocolate Coconut Oil Topping

I’d say I’m predicatble in a good way when it comes to my eats 😉 I had 1/2 an avocado leftover from another one and could have practically jumped for joy when it was the exact amount needed for pudding(did I just admit that?). Anyway, in went the avocado, almond milk, cocoa powder, and stevia. Then, for a chocolaty topping, I mixed cocoa powder, agave nectar, and Tropical Traditions coconut oil in a 1:1:3 ratio with a little vanilla powder added in–yum! I imagine this is something like raw cacao paste would be if I had some. A bit after this I was still ravenous and dug on in to my next snack:

Hello, probiotics and carbs! I think I would rather have this than a bowl of ice cream most nights; is that wrong? Don’t tell me because then I wouldn’t want to be right. This was a bit off I’ll admit; every once and a while, I get one that’s too runny. I think they forget to add one of the gums or something to stabilize it, so for this one I mixed in a little Bob’s Red Mill guar gum and voila! It was just like the real thing again. Who would have thought such an obscure ingredient would be so handy?

Oatmeal/Oatbran With Honey

Still hungry. More carbs. But this seemed to be settling. I loooove the smell of warmed clover honey; I think that in itself was enough to make me want to go to bed. I saw Apolo win bronze in his race and then was out of here.

Through the night, I had some wacky-wonky dreams. In short, I don’t think I’ve ever wanted cake batter more 8-| I used to eat up cake batter ice cream like crazy(Coldstone’s sinless ftw), but haven’t found a good all-natural one to date. Maybe I could just buy an all-natural cake mix and work from that? It’s worth a shot.

Sleeping in led to the classic decision: Should I go to the gym or put it off? Surprisingly, I never have issues with this during the week; I’m usually raring to run and watch some television. But on the weekends, the gym opens a bit later, the television shows lessen in quality, and my motivation suffers because of all of that. Guess what I decided:

It was definitely the right decision. Just as I dream of sweet yellow cake(oh, how delicious), I dreamt up this amazing combination of awesomeness. The coconut and the blueberries just sounded so perfect together. On top of that, I love any sort of berry with chocolate. And almond was a nice, subtle bitter tone to finish it all of. Hallelujah! AND I learned from the ever-knowledgeable Joanna in this post that coconut milk makes fat more readily available as a fuel source; look out, gym, here I come!

I Almost! But Then I Didn’t

I almost peed myself when Survivor came on last night, but then I used the toilet.

I almost cried when I realized I’ve been watching Survivor for more of my life than I haven’t, but then I held it in.

Coconut Oil Chocolate

I almost made a bowl of chocolate avocado pudding, but then I didn’t. Instead, I thought this coconut oil chocolate bar made with virgin coconut oil from Tropical Traditions that’s been in the fridge a bit too long would be good enough. It was pretty tasty, though could have been fresher if you know what I mean.

I almost forgot that I promised to put up the Vegan Sweet Cherry Coconut Cup recipe, but now I threw it on the to-do list.

I almost got a chance once to go to a fundraiser where Steve Carell was hosting and the cake was made by Duff, but then I didn’t(mostly because I didn’t know a lot of these important details). Instead, I got to watch it on an episode of Ace Of Cakes. What a slap in my cake.

I almost liked Grey’s Anatomy last night, but then I decided it was just “meh”.

I almost thought of starting homework for the 5 day weekend, but–oh wait. No I didn’t 😀

Pumpkin Oatmeal With Chocolate Peanut Butter

I almost went for savory oats(nutritional yeast and smart balance), but then I went with sweet. You just can’t beat Justin’s chocolate peanut butter for some CPB lovin’ late at night.

I almost wanted to stayed up to watch men’s skating, but when it was starting at 10 and the best people weren’t until the final group, I knew that was code to give up hope. Instead, I caught it all on The Today show this morning. Go USA!

I almost snoozed in a little bit, but then I didn’t. I love running first thing in the morning for a lot of reasons, and not so much for others. In the end, the good outweighs the bad.

I almost thought of running further today, but then I didn’t. I had 8 miles planned. They were a bit slow, but overall I felt really fresh.

I almost thought of having the typical oatmeal and greek yogurt for breakfast, but then I didn’t. Sometimes you just need to break out of the norm! And eat some fun and funky foods.

…but then I didn’t(on account of the butter toffee peanut butter from Naturally Nutty). I’ve done the vegan-for-a-day thing here and here, and I’ve learned that forcing it for a 24 hour period is not for me. Curiously, there has been random periods of 24 hours straight where I ate completely vegan without trying! I didn’t point these out on the blog, because they weren’t exactly breaking news, but I thought it was interesting that something that can at times feel forced happened so naturally.

I almost forgot to say how amazing the pudding with the Bob’s Red Mill hemp seed and yogurt with the peanut butter tasted, but now I did. And don’t think some peanut butter didn’t hop over from the yogurt to the pudding 🙂

I almost forgot to ask my Lent question, but now I will: Fish on Friday, yes or no? I grew up in a house where fish was OK on Fridays. At the same time, we always say we’re giving up “meat” on Fridays. Well, if I ever went vegetarian, fish would definitely fall under the category of “meat” to me. So what’s the final stance? Is fish good on Fridays or is it just another meat? I’m curious to hear responses(and any authoritative statements you could point me to would be even better!).

Time Zone Curse

Good morning! Or is it afternoon where you are? Did you stay up for all the opening ceremony? I tried. I really did. But by 10:50 my body was screaming at me for sleep! I figured that, since I’ve had trouble falling asleep this week, it’d be really stupid to ignore this clear sign to get some shut eye. Backing up:

It felt like a special night, so I popped open some soda–delicious. I started watching NBC right at 7:30, but I didn’t realize they weren’t starting anything good until way later. Oh well, lots of sports coverage gave me time to do work. This weekend might feel a little crammed, but I’m OK with that. It also gave me a chance to try something new.

New and delicious. Oatmeal With White Chocolate Cherry Almond Butter

I’ve actually never gotten my hands on cocoa butter, but I want to! It’s what’s used in white chocolate to give the rich flavor. I’m sure there’s not much in the Naturally Nutty white chocolate almond butter, but it’s delicious nonetheless. Next time you see that, you just might see the whole jar 😉 Which also means I’m almost out 😦 Such is life.

Talk about restful sleep–I got 9 and 1/2 hours! There’s no point in setting my alarm when the gym won’t open till 9, so I slept in happily until 8:30. Bliss. I decided it would be better to get to the gym first thing to avoid any 10am rush, so I grabbed an apple and was good to go.

This morning can be described as “Slow and steady wins the race”. It felt a little difficult, so I kept the speed modest, tried to get in to random television shows, and had my iPod to distract me as well. It still felt like a long time going, but gave me time to think about things, like how last weekend I took Saturday as a rest day and had a fantastic dinner documented here. That was only a week ago? This semester is going to go by so. slow. ly. The standard quick shower and then breakfast applied.

Oatmeal With Chocolate Peanut Butter And Peanuts

Vanilla 2% With Gluten Free Peanut Butter Chocolate Brownie

Isn’t it a great thing when breakfast tastes like a dessert? For the yogurt, I mixed 1/2 a vanilla chobani with 2oz of full fat yogurt; it came out the perfect creaminess with the perfect sweetness and needed no other touch. I dethawed a gluten free brownie made by this recipe from New Years to top it. Brownie sundae on Saturday? And then some peanuts added to the oatmeal for some crunch!

I would love to get to a grocery store today(I haven’t been in almost a week!), but since I’m going home tomorrow that doesn’t seem like such a good use of time. Does someone want to airdrop me a case of So Delicious Soy Yogurt? Instead, I’m catching up on the parts of the opening ceremony I missed online, soon to be followed by more shows. It’s a rough life 🙂

Welcome To The Weekend

Welcome to my weekend, at least! I can’t think of a more perfect way than with a new Survivor season starting in 20 minutes! I’ve been watching the show since season 1 when I was only around 8 or 9 years old. Has it really been that long? Anyway, It felt soooo good getting out of my class at 4pm this afternoon. If you’ll remember, last Thursday it was out of class and off to chocolate fest so there wasn’t much “downtime”. This afternoon, however, has been nothing but. Speaking of being lazy, I really didn’t want a “real lunch” this afternoon. All I cared about was dessert. I ended up doing something sloppy and simple.

Scrambled Eggs With Ketchup, Canned Pumpkin With Nutritional Yeast

What can I say? I’m a college student 😛 I scrambled 2 Eggland’s Best Cage Free eggs in a little pasture butter and topped with ketchup–OMG. I seriously forgot how satisfying just scrambled eggs are. My grandma would make them for me all the time; I’ll need to do them more often. On the other hand, I’ve decided pretty firmly that I just do not care for pumpkin anywhere but in my oats. It tastes bland and nasty, in my opinion. Blech. But I was also out of fresh, fiberous vegetables and was in a pickle(Mmm… pickles). More importantly, I just wanted my dessert.

Banana Whipe With Peanut Flour Topping

Banana whip! Oh how I love thee. So smooth. So creamy. So delicious. I’ve been keeping bananas from the dining hall in the dorm fridge for this; it’s free for me and takes up common space 🙂 For the topping, I meant to make a peanut sauce but didn’t use enough flour so it was more like dough. That doesn’t matter; what was important was that I realized peanut flour is something that upsets my stomach. It’s weird to think something that’s only peanut would do that to me, but it does. And it sucks that it’s a perfectly vegan source of protein 😦 I don’t even know what I’m going to do. Thoughts? Any lactose intolerant ice cream eaters out there?

Choco Peanut Butter Honest Foods Bar

During my 2nd of 2 classes this afternoon, I broke open this bar from Honest Foods. Honestly? It was pretty fantastic. I’ve come to notice that anything that’s supposed to taste like peanut butter with grains in it usually doesn’t; thankfully that wasn’t the case. I think any walnuts/sunflower seeds in here would have been better off being more peanut halves, but beyond that yum!

Chocolate Avocado Pudding With Coconut Oil

I could have been dancing getting out of my last class this afternoon; it didn’t quite matter that I didn’t do all the homework for it because we never get that far in translation courses. To celebrate the afternoon, I had some raw chocolate avocado pudding with Tropical Tradition‘s coconut oil. Welcome to the weekend indeed! If this is any indication, this weekend will be fattening 😉 After that I mostly vegged out doing some potential online shopping(aka filling a shopping cart with foodie finds but not hitting “check out”) and planning a comforting dinner.

Spinach & Feta Chicken Sausage, Roasted Brussels Sprouts And Sweet Potato With Maple Syrup

I think that pretty much sums up my comfort foods: brussels sprouts(or broccoli–either will do), sweet potatoes, maple syrup, fatty meat, salt, and anything roasted! Actually, the vegetables were a bit of a disappointment in that respect; either the fact that they were cooked in the dining hall(with no apparent fat) or my lack of patience meant they weren’t well roasted. This flavor of Al Fresco all natural chicken sausage cooked in a pan with some pasture butter made up for it a bit.

Fat Talk

Since I have a bit of time, I thought why not address some fat talk. And not the kind that we all snickered about in High School! I want to talk about fat in your(or my) diet. I was turned on to different and new fats and ways of thinking about them by bloggers like Heather and Averie. If today can be seen as an average day, then I get a good deal of mono- and poly-saturated fats from almond butter, peanut butter, and avocado, and my saturated fats from coconut, grass-fed butter, and hormone-free meats.

The obvious question would be “How do you feel?”. My answer is “Pretty darn good”. The fat is definitely delicious and filling. I haven’t had any stomach issues save the peanut flour which is actually only 12% fat. And–for what it’s worth–my skin and complexion seem smoother and clearer. If I had to sum it all up and be catch, I’d say “Fat is here to stay”. And I still think that getting the mono/polysaturated fats as well as the “bad” saturated fats. These really aren’t so bad if you stick with sources like coconut and grass-fed meat and dairy options.

The Big Fat Post

*Before I go into too much, I want to stress that everything hear is based on my own opinion. I’m not a certified nutrition anything, and these are personal thoughts reached through researched. I also recognize that I change my mind like crazy, so let the record show it is 1/27/20092010*

You’re all invited to my big fat Italian-Polish-French-Welsh-Canadian wedding after you read my big fat post. Really, I should call this my big post about fat, because that’s the topic on today’s agenda. I don’t think anyone would deny that fat’s an important part of your daily intake. And I really don’t think anyone would deny that it’s usually pretty delicious(Helloooo, peanut butter?). At the same time, there are several different types of fats stemming from countless sources. After taking advice and literature from 3 intelligent bloggers, I’ve decided to incorporate saturated fat from 2 new sources into my diet.

Tropical Traditions Gold Label Virgin Coconut Oil

Common literature would tell you that saturated fats are awful and should be limited. That same literature, however, once toted trans-fatty margarine over all-natural butter. Things an opinions change. These 2 pieces of literature(#1 and #2) combined with other effects and observation led me to this decision. The fats themselves, as you’ll read, are quite nutritious in themselves. Unlike commercial butter, grass-fed butter hosts a range of nutrients and a higher omega-3 content; this was also the butter that our great-great grandparents were living and thriving off of–not margarine. You can read all about Pasture Butter here. Coconut oil hosts a bound of benefits of saturated fats without a speck of cholesterol. It also hosts a wide and unique array of beneficial components, including lauric acid, the same food infants thrive off of from milk.

The other half of this shift will be limiting the amounts of canola, safflower, soy, and other refined liquid oils. The reasoning for this is two-fold: Firstly, they aren’t nearly as “natural” as some of their counterparts like Rachael Ray’s favorite, EVOO. Secondly, introducing new fats into my diet means I should probably take some of the old ones out, and these ones serve little purpose on their own. Of course I’ll still be getting a strong flow of fats from nuts and, on occasion, animal sources. But I did want to put this out there, so that there’s no surprise that I might be featuring food like this a lot:

Homemade Raw Vegan Chocolate Bar

And why wouldn’t I when it’s this yummy? That would be my 3rd ever homemade raw vegan chocolate, made with 13g gold label virgin coconut oil, 19g agave nectar, and 12g cocoa powder. I really liked this blend. And, yes, when it comes to these raw chocolate bars it’s grams–not even teaspoons–that change the flavor completely! I’m loving playing around with the flavor with my minute changes and I think this one came out best of all so far. I’m going to pass over the irony of eating coconut oil and a chocolate bar while watching The Biggest Loser 😀

WHILE WE’RE ON THE TOPIC, I am totally infuriated with the red team. I really hate it when anyone “plays the game” instead of just losing weight. As much as I love Alison Sweeney, I really miss the days when Caroline Rhea hosted and the contestants entered not knowing what they were doing but solely devoted to getting healthy. Meanwhile, teams like the grey team keep me thinking there are still those like that out there and have hope. I needed oatmeal to distract me from being angry.

Pumpkin Oatmeal With Maple Almond Butter And Maple Butter

If I’m working grass-fed butter into my diet, I should work more maple butter in too, right?(For those who don’t know, maple butter is simply granulated maple syrup and, in fact, not at all butter). I think I need to add less salt to my oats because even with all this mapleness nothing tasted sweet. I might have had to have an extra spoonful of maple butter from the jar. Oops.

This did not help my first night of sleep back in the dorm. I don’t know why, but I think it took a good 60 minutes of nothingness to fall asleep. My mind was just racing with thoughts about the new day and everything. The thing I was most anxious about was running again. To top it all off, I forgot to set my alarm! I managed to wake up naturally at 7:20, though, so only slept in 20 minutes. I guzzled down a cup of coffee from a fresh canister, and hit the gym.

365 Decaf Hazelnut

It’s so hard to find coffee that’s flavored and decaf; and this really tastes like hazelnut! Love it. What I didn’t love so much was reuniting with the treadmill. The run was so tough. I knew it wouldn’t be as easy after 5 weeks but I couldn’t believe after 2 miles it was becoming a battle, even though I had The Today Show to entertain me. My goal was 7 miles and I pushed to that in 59:59; I don’t know how I’m going to build back up for my half in time. When I got back to my dorm, I was ready to refuel!

This hit the spot. I needed to go to the dining hall to get bananas and I grabbed 5 while I was in there 😀 I’ll be set for a bit I think. I love the cinnamon raisin peanut butter but I almost feel like it was too much raisins! Good thing I had soy yogurt with peanut flour to help satisfy my peanut tooth. The trick to good peanut flour yogurt: salt. It makes it that much more authentic.

Today’s the first day of classes! Already so much has happened I want to share and I’ve gotten a ton of good news, but I think after covering 1 big fat topic, that’ll be enough for this post. Instead, I’ll leave you with some giveaways.
