A “Basic” Brownie Recipe

I come from the line of thinking that you should never make things from a box: Either make it yourself, or buy it from someone who made it themselves. Things just taste better that way, don’t they?

Last night, I had a brownie attack. Don’t we all get those? I used to swear by a recipe like this one by Rachael Ray.I love the tag: “We can’t believe people are still using boxed mixes!” However, since then my “basic” has become anything but. Of course, there’s the gluten thing; I’ve also steered away from using eggs in baked goods for personal reasons. And, while I’m at it, I usually figure why not take out the dairy and make them vegan just in case? In case of what? I have no clue either. But that’s my line of thinking. And so I made brownies as “basic” as I could. And you know what? They turned out darn good. And because they were vegan, I got to lick the pan šŸ˜‰

Basic Allergen-Friendly Brownies

Ingredients:

  • 1 cup GF flour mix
  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 3/4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 cup non-hydrogenated margarine
  • 1 tablespoon olive oil
  • 1 tablespoon white vinegar
  • 1/4 cup non-dairy milk(water in a pinch)
  • 1 flax egg(1 tablespoon flaxmeal gelled in 3 tablespoons water)
  • 1 teaspoon vanilla extract
  • 3 oz chopped dark chocolate, or 6 tablespoons vegan chocolate chips

Preheat your oven to 350 degrees. In a big bowl, sift together the first five ingredients. Melt the non-hydrogenated margarine and add in the olive oil, non-dairy milk, vinegar, flax egg, and extract. Pour into the dry mixture and mix until incorporated. Fold in the dark chocolate and pour into an 8×8 baking pan. Bake for 30 minutes or until a toothpick comes out clean.

When you’re living with allergens, life isn’t simple. Good thing these brownies are. And tasty!

I’m ashamed to say this was store bought vanilla bean coconut milk ice cream. When you get used to the home-churned stuff, it just feels naughty coming from a carton. Regardless, this was soooo good. Isn’t this how every weekend should be? 3-days long and full of brownie sundaes? I think so.

You could use 3 ounces of fancy chocolate for the recipe. Or you could use vegan baking chips and save the good stuff for yourself to eat straight. I think you can guessed what I chose.

And a big ol’ bowl of oatmeal with peanut butter and sea salt tasted good after all that chocolate. Sometimes, you just need to detox.

After all that baking/microwaving, I did not feel like much for breakfast this morning. I really wanted a big cake donut and to call it a day but that wasn’t happening. Thankfully, I found this chocolate chip muffin fromĀ Gluten Free Life to eat with some earth balance. Just like my brownies, you’d never guess this was gluten-free! And so many chocolate chips. Yum šŸ™‚

Anything exciting on tap for Memorial Day? I had a pool party in store but apparently it’s been rain checked since the pool won’t heat up šŸ˜¦ Alas, we have a grill, we have neighbors, I’m sure we’ll find some way to spice up Memorial day.

Let’s Make That Workout Happen

Let’s face it: When you’re just out there running for fun, it’s a lot easier to get “bored” with running than if you’re motivated by a race, or weight loss, or have some crazy deal where you get paid per mile you run(If I had a deal like that, I’d be out there all day). The truth is it’s just hard to love a tough workout 100% of the time. Here is how I get workout-ready in my morning.

I always start the day with a big breakfast, workout or not. My perfect trifecta is oatmeal for fiberous carbs, peanut butter(cinnamon raisin swirl PB & Co. here) for healthy fat, and greek yogurt for protein. To be completely honest, I don’t love Greek yogurt here always; a lot of days I’d be happiest with 2 huge bowls of oatmeal and nut butter. But greek yogurt is a great source of probiotics and protein. And starting your day with protein has been shown to boost metabolism and curb you late-night hunger. I can certainly scoop some Fage for that.

When I know I’m about to run, I always steal some chocolate from my stash. Call it a bribe; it’s as natural as putting on my shoes. “Rituals” lie this can keep you on a regular exercising route.

Today, my workout motivation as music. I just downloaded Telephone(I know, I’m terribly behind) and Love On The Inside by Sugarland and made a big playlist out of them. I definitely couldn’t have gone so far without that energy pumping through me. For some, it’s music. Other times, it’s whatever’s on the TV at the gym. And, of course, there’s always the beautiful nature of the outdoors. Whatever it is, distractions can be some of the greatest ways to make a cardio workout enjoyable.

Afterwards, it’s important to hydrate. In fact, I plan this beforehand by sticking water and anything else I might want in the fridge and knowing just where it is to grab it to drink while doing stretches. Without stretches, the next workout might not be as enjoyable…

And, of course, you need to refuel. There was a lot of hype last Summer about chocolate milk being the “perfect drink”. Really, what you need is food. Drinking carbs is certainly one way to get energy back in to your system. That just doesn’t fit me, personally. For myself, I made a “dream salad”(as in, I dreamed this up all run long): Spinach, avocado with lemon juice, sauteed onions, and toasted cashews. If this doesn’t work for you, feel free to go back to the chocolate milk.

And it never hurts to have a little more running motivation. Sundae Friday, anyone?

No matter how difficult it is, there is nothing that tastes better than homemade ice cream. Can you see the vanilla bean specks and thick chunks of organic dark chocolate? Maybe I got hit by a car on my run and went to heaven and don’t know it yet.

Flash forward to 2 hours later when I hadn’t sat down at all and realized it was one of those 2-lunch days.Ā Ā Now I’m relaxing with oatmeal and cashew butter and a pineapple Chobani. Glorious, no? I’ve been trying to churn up a real good dessert. It’s been a battle so far; we’ll see how it comes out tonight. We’ll see…

How To Make Ice Cream–Learning From My Mistakes

No matter what it is, I always get things done. Whether I do it the easy way or the hard way, the right way or the wrong way, well… that’s another story.

Last night, I churned this most decadent chocolate chip ice cream. Definitely use premium ingredients when making your own ice cream.

Ingredients like Organic Dark Chocolate and vanilla bean paste. Really, how can you go wrong with these? Well, if you go wrong with every other aspect, you can probably go wrong.

Don’t bother with vegetable gums even when not using egg yolks unless you really know what you’re doing. I added xanthan and guar gums to this, but I don’t know what the hell I’m doing.

When there’s a puddle of half-frozen ice cream on your counter, don’t call someone at the store asking for more half and half and hang up with the words “Oh my God, I have to clean this up *click*”.

Don’t get in to a fight when you’re brought back half and half that’s not guaranteed from hormone-free cows when you aren’t even planning to use that night. Certain fights can wait for the morning.

Always mix in ingredients and any alcohol flavorings at the very end since that can inhibit freezing in the machine.

When the ice cream maker is done churning, it’s not ready. Period. I don’t care what an ice cream machine recipe says. You need to shove it in the freezer and you need to manually churn it every 5 minutes for about an hour or it’s never going to come out right.

Don’t take the most unflattering photo in the world of ice cream, unless you’re really hiding a puddle of cream behind you and need to clean that up FAST.

When all else fails, add more chocolate chunks.

And if you get caught eating straight from a bar of bulk baking chocolate, try not to look so guilty and smile for the camera.

And at the end of the night, when all else seems lost, remember this: a microwave is a hell of a lot easier to work than an ice cream maker.

I’ve been there twice and both times have been pure magic. Looking back at the pictures makes me want to go again. Of course, all of this was pre-foodie days so there’s no pictures Ā of the mountains of pizza I consumed.

Last night, I decided we’d take a staycation to Italy. Really, do you have to go 1000s of miles to eat good food, overindulge, and open your wallet? Not really. You can do that all at home!

Dinner took place at my favorite Italian restaurant nearby: Tomasso Trattoria. This place is the real deal; I was listening to twitter updates from them all day about how they got a fresh pig in and were roasting it. Heaven.

Roasted fingerling potatoes with sage. Yes, I am 110% a meat and potatoes person. The fennel was too vinegary for my own taste so I passed those off. I loved how rich and fatty and well cooked the meat was; a little salt and it melted in my mouth. And I think white potatoes are my true passion; these were divine. Another great meal in Italy, err… at Tomasso’s.

Dreamy. Creamy. Deliciouso. Do you know the difference between gelato and ice cream? Ice cream legally has 10% or more butterfat, whereas gelato has less. It’s also churned at a slower rate, meaning less air is added into it and the product is denser. That was my Italian history lesson for the day.

Yes, I do believe I’ve found a love for staycation, along with my pre-existing loves for local raw honey and butter toffee peanut butter. How To Have A Staycation

1. Pick the cuisine. Italian? French? Hell, you could take a whole tour across Europe if you want!

2. Find the local spot. Look for the best “authentic” restaurant. Now is not the time to drive around and stop at the first place called “Georgio’s” only to find it’s a greasy pizza joint.

3. Plan the night out. From dinner to dessert, just have a plan and things will run smoother.

4. Make use of groceries. Now might be a good time and excuse to buy that French wine you’d been eyeing that was out of your budget. Like my gelato, the foodĀ frontierĀ doesn’t just have to be in a restaurant.

5. Forget about the costs. Since a staycation is meant to be taken in place of a mini-vacation, treat it like one and let your worries go for the time being.

6. When in doubt, take a rain check. Didn’t get reservations at the restaurant of your dreams? Unless the staycation needs to be taken that day, put it off until you can do it right.

An Eventful Day In Boston Part 2

So, I timed this to publish right when I start taking my last final. It might be a little late for this, but wish me luck!… please? Good God, I’m going to need that or a hard drink.

What is someone to do in the North End when they’re hungry and can’t eat gluten(the North End is primarily Italian-American with the best pizza and pasta in Boston)? Well, either starve to death or find somewhere with a slightly varied menu.

Just down the road, I found a lovely looking Italian restaurant with an open window and ended up diningĀ here. The prices were reasonable, which isn’t something you can say about a lot of restaurants in Boston, and there were things on the menu for me.

There were bread and olives; I couldn’t touch the bread, but I was all over the olives. I loved how fast the service was; I had ordered not 5 minutes after I got there, and it couldn’t have been 10 minutes more before my plate arrived.

I ordered a dish that was rolled eggplant stuffed with mozzarella and basil baked in a plum tomato sauce. The cheese was supposed to be ricotta, but they were out; honestly, I love freshĀ mozzarellaĀ so that was no big deal at all. It as all very delicious with a deep, stone cooked flavor. My only gripe was the lack of a basil flavor; it really needed that to lighten it all up. But for $8, how could I go wrong?

I was still a little hungry after that and happy to break into a new chocolate bar from Trader Joe’s on my walk to Boston Common. I was hoping this was going to be a new, cheaper version of my favorite chocolate bar. It wasn’t. But it was still pretty good, definitely a bargain at $2, and all fair trade. I’ll be sure to stuff some stockings with this one.

I ordered the Vanilla gelato. You can really get to know a place through their vanilla. What I didn’t realize was that this would be vanilla bean and absolutely amazing. It was just so rich and creamy. And I seriously don’t think I’ve ever seen so many vanilla beans. I was in heaven. I can’t wait to go back (many, many) times over the Summer.

Could I resist having a piece this morning after photographing it? Not a chance. That does not bode well for how long this will last in my freezer. At least it’s raw, and the coconut oil gave me good energy for a run.

I was so excited for this salad when I got back. I’ve been toying around with the thought of carrot cake chickpeas in my mind for a while now, and this was a spicy twist on that. In the mix was

  • 1 cup chickpeas
  • 2 tablespoon chickpea water
  • 1 tablespoon maple syrup
  • shredded carrots
  • organic hunza raisins
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon tumeric
  • sea salt

I took the extra 5 minutes to go down stairs and toast some walnuts in a pan, too. If you have the time, you really should toast your nuts. The flavors here were all incredible and I loved it! This’ll definitely be a new salad recipe to keep in mind for the future. On the side and in my next class I sipped on a Gingerade Kombucha.

Even though the weather is crappy and cold, I can still crave ice cream; I can always crave ice cream. In accordance with project cleanout, I knocked down both of these pints, neither of which had a real serving left. I think the combination of a coconut/vanilla flavor with white chocolate was bliss. Ordering Garden Grille’s vegan, gluten-free macaroni and cheese, I forgot a few important things: I don’t like macaroni all that much, and a meal without a good amount of fat and protein just do nothing for me. To make a chocolate nut butter, really you just need cocoa powder, sweetener, and some form of vanilla flavor. I made this with Madhava’s vanilla agave. It was good, but Justin could do better. Since no morning’s complete without fruit and chocolate, I broke a chocolate bar filled with dried blueberries and cranberries over my pomegranate Chobani; it has fruit, so it’s healthy, right?

Tonight I am attending an auction at my old high school. While I’m excited, I am a little wary going into it as my first event where I’ll be avoiding gluten. I’m hoping I’ll be able to just enjoy the night, but I’ll also have a pocket full of larabars or something just in case. And in my absence, I have a post prepared on how to shop and save at *drumroll*… Whole Foods! Yes, I do believe it’s possible, and I’ll tell you how.

I can’t offer you some recipe for oatmeal that will make you think, “Wow! This is so good, it’s almost like cheesecake for breakfast!” Instead I can say, if you want cheesecake for breakfast, have cheesecake at breakfast.

Let the jaws drop. I guess I still am feeling a little defeated from last night, because this morning, nothing was appealing. Oatmeal wouldn’t have done anything for me. And this cheesecake needed to be eaten sometime. All that was a big “Why not?” to me.

“Oh thank God. He’s got protein in there”. On the side was a pomegranate Chobani and a ball of cookie dough cashew butter. Gotta get those healthy fats in there, too, right šŸ˜‰ To be honest, I don’t feel guilty in the least. There are times when you crave cheesecake for breakfast and times when you crave oatmeal for dessert. And I know my nutrition overall is good and that this is not a habit. For instance, I craved and ate oatmeal last night before bed.

Swap the two around and you have an indulgent night and a back-on-track breakfast. It was definitely one of those times when a big and warm bowl of carbs felt like just the right thing. I love Justin’s chocolateĀ hazelnut butter, but not quite as much as the almond or peanut flavors; this one melts too much, I think because it has more palm oil maybe? šŸ˜¦ And I had to Ā got toĀ open a new can of coconut milk…

But I’m really not loving this brand. It was Thai Kitchen, organic, and on sale. I thought it would be better than store brand, especially when the water and milkĀ separatedĀ and I was able to drain that off, but it actually becomes more watery on top of oatmeal :-/ Back to 365 brand, it is!

When Beans And Coconut Collide

“If running were easy, it’d be called your mom”

That’s the thought I told myself after running my first mile this morning. It goes to show just the kind of things I’ll think without the distraction of an iPod šŸ˜‰ I have to admit, the first few miles today were really tough, and I couldn’t tell if it was from being sick or if it’s because running’s a sport and those are meant to be challenging.

I stuck with it. I’m a tough, old bat. It didn’t get easier, but at least it got more amusing. I got to explore most of the half marathon route I’ll be running. And, for the first time in far too long, I did it all without an iPod. That kind of time lets you think a lot to yourself. Do you ever run without any distractions, just your mind?

This meal was as thrown together as any to make it to class in time. I wanted a chickpea salad with mulberries, but to avoid cheese and dairy. To keep it interesting, I tossed it in some simple coconut maple dressing. 2 ingredients, no refined sugar, creamy and satisfying–what’s not to love?! On the side, for my wellness, I had an Mo’ Beta Odwalla.

This was delicious. I loved that it was all fruit juice or all fruit puree. And it packed some serious vitamin content if we’re to believe the labeling. My biggest shock, however, was noticing stevia on the ingredient list! Don’t get me wrong–it’s way better than finding evaporated cane juice. But why did it need any sweetener with all this fruit? Regardless, I hope this’ll knock back any cold or flu.

I managed to get through my classes only by thinking about the wonderful ice cream awaiting me at my dorm to enjoy in this hot, sunny weather. I just love the specks of vanilla bean in here; seeing them definitely make me smile šŸ™‚ And because it’s non-dairy and sweetened with agave, it’s a great choice for me to cut back on refined sugars and dairy! I love finding excuses to eat ice cream like that.

OK, I’m not trying to cut all refined sugars out of my diet, so I didn’t feel bad breaking into this peanut choco chewy granola bar by Nature’s Path. I could have had an apple, or a pear, but when you’re in a granola mood, only a granola bar will do, ya know? Actually, this didn’t do much; I guess my first day back to running and my hunger was ready to come out, guns ablazing, too.

Mmmm, fried food šŸ˜€ There was no coconut at dinner(what a shame), but there were beans in the form of tofu in my veggie burger. I reviewed this Southwest Wildwood burger last semester and picked it up this weekend for a flavorful meal in place of fake meat which so often has gluten. Like I say in my review, these are taaaasty. But that’s probably because they’re fried. It’s good oil though, so it’s healthy, right? Right? To add a touch more fat, I had The Heat Is On peanut butter and mustard with some steamed broccoli. Delicious and nutritious.

What’s your favorite veggie burger? I have a motive in asking this question. I’m looking for some brands to try because I simply don’t know/have a favorite since moving to an all-natural diet and then giving up prepared soy for Lent. I like the Wildwood burgers, but I’m not sure if they’d grill well, and the outside is entirely fried which, while tasty, might not be an everyday thing.

Thank you for your reassurance on this post that my nerves are normal. I feel like I’ll be able to run so much better on race day with a clean and clear mind knowing that a lot of the other racers must feel the same way.

Definitely did not plan to go so far! What can I say? I got in the spirit of things. It was fun imagining how full Providence will be on that day, all the other racers running near me, and the adrenaline. I ran 9 miles on the course and then looped around a bit to extend the mileage and end up at Whole Foods(I even saw one of my teachers whose paper I’ve been putting off writing, haha, but that’s another story and he didn’t see me ;-)). Unfortunately, I didn’t account for the 1+ mile walk back from Whole Foods, so I was pretty pooped by the time I got to sit down and eat lunch.

Holy dietary fats, batman! I was craving some dark chicken which is why I went to Whole Foods in the first place and got General Gao’s. That balanced really well with a creamy, soft avocado half with lemon juice and sea salt. I also grabbed from the prepped food bar a block of yogurt cheese; it wasn’t anything special and just sort of tasted like a basicĀ mozzarellaĀ :-/ I still ate it all.

Since lunch was so filling and eaten pretty late, I wasn’t in the mood for much this afternoon. But if you’re gonna twist my arm…

Don’t tell chickpeas, but I think vanilla is my favorite bean šŸ˜‰ While at Whole Foods, I picked up a few groceries includingĀ Vanilla Bean So Delicious. I just love this stuff; I’ve even made a review page for it now! Check it out. Equally j’adore Green & Black’s organic white chocolate, which I also made a review for. It’s not the best white chocolate I’ve had, but it’s pretty darn good šŸ˜‰ And those vanilla bean specks get me every time.

Faux Buffalo Chicken Salad With Steamed Broccoli And Avocado

I wasn’t too hungry for dinner; I think that lunch was still holding me over, and I’d care not to know how much exactly was in that plate. I made a nice, light Summer salad starting with a bed of torn hamburg lettuce and adding a pack of choppedĀ Lightlife Buffalo Wings. Some people prefer neither real meat or fake meat; lucky for me, I eat both happily so long as they’re ethical and natural šŸ˜€ I added a few more slices of avocado(love) and some steamed broccoli for light fiber. Maybe my hunger will strike for dessert? I’m well stocked if that’s the case.

Have a great Saturday’s night and go ahead and enterĀ Katie’s giveaway! I just noticed Anchorman is on TV at 8(!!). It’s not my favorite movie, but I can’t complain about it, either.
