Uncooking On Memorial Day

I find it ironic that on the epitome of BBQing and Grilling is when I decide to have another one of my raw-kicks.

I started my morning with a run, which called for prefueling with chocolate. Lindt is obviously not a raw chocolate brand but still tasty, and even non-raw dark chocolate has a good amount of antioxidants. Chomp on 🙂

I only aimed for 9 miles but ended up doing 11 after I got way too in to my new playlist. I think I’ve listened to some songs by Adam Lambert and Sugarland 5+ times over the past few days. Whoops?

All I’ve been craving lately for lunch has been raw salads. We seriously don’t have enough raw veggies in this house to satisfy that! I used half an avocado squirted with lime juice as the “meat” here, and around it added raw corn, lemon garlic marinated olives, and onions caramelized in a little EVOO(obviously not raw but cooked onions taste 1000 times better than raw in my opinion). The result: delicious. This was like some backwards guacamole salad. Loved it!

It seems my sweet-tooth, which has been in and out recently is back. A Zevia twist tasted perfect mid-afternoon for a boost. Just like a diet Sierra Mist!

The piece d’ resistance of the afternoon was this Memorial Day sundae. I really want to make a maple walnut flavor ice cream! Along with soooo many others. But since there’s only so much room in our freezer, I took some of the ice cream I made with raw milk and covered it in NH maple taffy and freshly toasted walnuts. Yum! Except whole milk ice cream is just too icy as I’ve found out; you really need half and half to make something decently creamy(or coconut milk at a 2:1 ratio with water for a vegan half and half).

It turned out that I went from being the only one with plans for Memorial Day to being the only one home. How does that happen?! Not going to lie: I was a little upset. But instead I decided to make this a golden opportunity to try a new recipe I’ve been dying to make.

First I snacked on some Crazy Richards chunky pb straight for some energy and got the food processor out.

The recipe I wanted to (not) cook was raw taco meat, so I went straight over to Averie’s blog and found her super simple recipe. Here it is below; I followed it to a T except used her variation of swapping out the spices for predone(Trader Joe’s) taco seasoning.

Averie’s Raw Vegan Taco Nut “Meat”
1/2 C Raw Almonds
1/2 C Walnuts
1/3 C Sun Dried Tomatoes loosely packed (If using oil packed, may slightly reduce amount of olive oil added)
1/2 Tsp Chili Powder (or to taste)
1/4 Tsp Cayenne Powder (or to taste)
2 to 4 Tbsp Olive Oil (or hemp, flax, etc.)
Optional: 1 Tsp Salt (or to taste)

Wow! I’ve never had something so flavorful. And I will be making this again. It certainly wouldn’t suit if all you want is that beef-flavor or meat. But if you’re just looking for something fun and tasty, this totally works. I ate it along a gingerade kombucha and home fries made with white potato, sweet potato, red onion, olive oil, salt and pepper. Of course, really Averie would probably hate this dish because it has about a days worth of sodium in it(and I’m eating it with a salt shaker ready and standing by).

And now I’m watching Knocked Up on TV. I love the movie, but some things are just better done when you have the house to yourself 😉

A “Basic” Brownie Recipe

I come from the line of thinking that you should never make things from a box: Either make it yourself, or buy it from someone who made it themselves. Things just taste better that way, don’t they?

Last night, I had a brownie attack. Don’t we all get those? I used to swear by a recipe like this one by Rachael Ray.I love the tag: “We can’t believe people are still using boxed mixes!” However, since then my “basic” has become anything but. Of course, there’s the gluten thing; I’ve also steered away from using eggs in baked goods for personal reasons. And, while I’m at it, I usually figure why not take out the dairy and make them vegan just in case? In case of what? I have no clue either. But that’s my line of thinking. And so I made brownies as “basic” as I could. And you know what? They turned out darn good. And because they were vegan, I got to lick the pan 😉

Basic Allergen-Friendly Brownies

Ingredients:

  • 1 cup GF flour mix
  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 3/4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 cup non-hydrogenated margarine
  • 1 tablespoon olive oil
  • 1 tablespoon white vinegar
  • 1/4 cup non-dairy milk(water in a pinch)
  • 1 flax egg(1 tablespoon flaxmeal gelled in 3 tablespoons water)
  • 1 teaspoon vanilla extract
  • 3 oz chopped dark chocolate, or 6 tablespoons vegan chocolate chips

Preheat your oven to 350 degrees. In a big bowl, sift together the first five ingredients. Melt the non-hydrogenated margarine and add in the olive oil, non-dairy milk, vinegar, flax egg, and extract. Pour into the dry mixture and mix until incorporated. Fold in the dark chocolate and pour into an 8×8 baking pan. Bake for 30 minutes or until a toothpick comes out clean.

When you’re living with allergens, life isn’t simple. Good thing these brownies are. And tasty!

I’m ashamed to say this was store bought vanilla bean coconut milk ice cream. When you get used to the home-churned stuff, it just feels naughty coming from a carton. Regardless, this was soooo good. Isn’t this how every weekend should be? 3-days long and full of brownie sundaes? I think so.

You could use 3 ounces of fancy chocolate for the recipe. Or you could use vegan baking chips and save the good stuff for yourself to eat straight. I think you can guessed what I chose.

And a big ol’ bowl of oatmeal with peanut butter and sea salt tasted good after all that chocolate. Sometimes, you just need to detox.

After all that baking/microwaving, I did not feel like much for breakfast this morning. I really wanted a big cake donut and to call it a day but that wasn’t happening. Thankfully, I found this chocolate chip muffin from Gluten Free Life to eat with some earth balance. Just like my brownies, you’d never guess this was gluten-free! And so many chocolate chips. Yum 🙂

Anything exciting on tap for Memorial Day? I had a pool party in store but apparently it’s been rain checked since the pool won’t heat up 😦 Alas, we have a grill, we have neighbors, I’m sure we’ll find some way to spice up Memorial day.

Disgusting

Warning: I’m not going for the pretty post today.

You could ask, when do I ever go for the pretty post? Well played, well played. But everything today was just pretty gross and disgusting, no matter how good it got.

The thought of eating 2 sticks of earth balance, or any fat really, grosses me out. So why do they taste so damn good in this recipe? Note to self: Don’t ever cook that rich again if you’re going to have leftovers for the next 3 days.

Running 14 miles is disgusting, especially when New England decides to warm up. Was I proud? Damn straight. But it was hot. There was cow manure involved. Every part of me got sunburned. And you get really dirty running without a shirt on. In the end, I looked like this:

Disgusting, no? I’m practicing to compete with some of Holly’s self-portraits. I’ve got a long way to go on growing out the hair and getting that kind of frizz.

The entire soda industry is–let’s face it–disgusting. There’s high fructose corn syrup, artificial colors and flavors and preservatives. And all those plastic rings kill sea-life. Not cool, Coke, not cool. Instead, I made a much cleaner version of “Sprite” for recovery: 1/2 cup lemon seltzer, 1/2 cup organic limeade, fresh lime, and some light agave nectar. Sweetness.

The raw olive “cheese” from Grezzo’s looks like a pile of poo; I’m aware. But it tastes deliciously rich in olives. And was perfect on a salad with some organic balsamic vinegar. Oh, and this is the best 2.50 you will ever spend:

Don’t look at the nutritional information; it’s not pretty. “Golden” means fried, but it’s fried by Whole Foods, so it’s magical and delicious. I love keeping one of these around for times I really just don’t feel like cooking, even if I’m taking in my daily limit of way too many things.

Sweet potatoes? Love them! But after they’ve been roasted, grilled, and sitting in the refrigerator for 3 days… There’s a reason that’s not in any recipe book.

…I don’t have any more words to defend myself. Even as a food blogger, sometimes you gotta eat a little disgustingly.

That is 6 squares of my favorite dark chocolate by Endangered Species and a pomegranate Chobani with Justin’s chocolate almond butter. The only disgusting thing here is how much chocolate I can eat in a day. If anybody ever hears of an organic chocolate eating contest, send it my way. We can split the prize money.

What’s the last thing that’s made you think “Gross!”? For me, it was the fish at the beginning of the post. It’s an Asian carp, and it’s making a move to be the next, big, sustainable seafood. Not on my plate, it isn’t.

How To Break A Bottomless Pit Day With 1 Move

The only thing I hate more than having a bottomless pit day is realizing that I’m having one and obsessing over it. I see the same in a lot of healthy living blogs I read. To be fair, I can’t sympathize on how much it sucks to take pictures of snack after snack and post them for people who like to show all they eat(I do about 98% but every now and again I’ll grab an undocumented handful of baby carrots or something). But I haven’t had one in a long time, and I don’t think I will again, because I’ve got the one trick that breaks the bottomless pit feeling: Eat a meal.

If you’re hungry enough for a meal, even if it’s right after one or it’s not really a normal meal time, put down the apple you think might help your hunger and make something solid. Right after this post, I threw together a kitchen sink salad.

After this, I felt much better, and like I had beaten my bottomless pit day. A simple mix of onion, sweet potato, and white potato in some olive oil and salt came out perfect. And between my vegan baking and the general lack of egg love, we have a ton(read: 2 dozen) of old eggs to use, so I did my part and ate a couple scrambled in all that oniony love. I guess it’s no surprise we have so many eggs when neither the ice cream nor the brownies I make call for them…

Oh my goodness, was this delicious. I’m pretty sure this was the fattiest cut of beef possible, but–hell–I took it and it did perfect. And considering a pound of the steak cost $7 while an entree at Tomasso’s of local beef is $24, I see big savings here.

What have you been craving of late? For me, it was the beef. Of course, now that I’ve discovered my love for onions cooked down in any and every fat, any excuse to eat more of those is also welcomed. Just beware of my breath.

Free Of Nothing; Full Of Nutrition

I had a sobering thought on my run today. I hate “veganism”. “What? But I love all my vegan meals and recipes.” That was my next thought. But I kept going back and realizing I really do hate the label, “vegan”.

So then I asked myself “Why?”

Frankly, I’ve known too many people going vegan or vegetarian to avoid certain things for “health”, things like cholesterol and animal fats. And then once a year–probably on their birthday–, they’d have a big juicy steak. “Once and a while won’t kill”. Well of course it’s not going to kill you; but no one can say the same for the cow.

I think there are a lot of ways you can be healthy without strapping on the vegetarian label and shunning things out of your life. That’s not why I eat vegan at the meals and times I do. Rather, it’s to bring certain nutrients in.

My lunch wasn’t healthy because of the absence of animal products; it was healthy because of the abundance of plant-based foods. That, to me, is what veganism is all about: The emphasis of a plant based diet. As much as I’d love to think that way 24/7, I’ll undoubtedly slip up sometime and look at something for being “dairy-free” or “free of animal by products”. What I really wish I could see 100% of the time is how something is free of nothing, but full of nutrition.

Desserts in general, though, I would say get a pass on ever being “healthy”. No matter how you cut it(a fudge joke), my microwave vegan chocolate fudge and microwave vegan peanut butter fudge are full of sugar. That doesn’t mean they aren’t full of flavor, either, or that you shouldn’t make them 😉

That fueled me to run around my neighborhood 8 times for a total of 9 miles. Perhaps my legume love isn’t such a terribly beneficial thing since I needed to make a pit stop into the bathroom after lap 6. At least I was close to home and didn’t go on a road run like I was thinking.

Afterwards I refueled with my lunch posted earlier, and when that wasn’t enough I added an apple. Later on, at the grocery store, I grabbed a bag of baby carrots to eat in the car(or the walk out of the store). If you went through a list of the allergens raw fruits and veggies are “free of”, we’d be here all day; it’s better to think of all the nutrition they’re “full of” in my mind. And tonight was “full of” recipes:

Sweet Potato Fries

Ingredients

  • 1 medium sized sweet potato
  • 2 teaspoons EVOO
  • salt to taste

Cut the ends off of a sweet potato. Slice all the way through horizontally. With the cut side down, make strips 1/2-3/4 inch thick. Cut those again lengthwise to make into “fry” shapes. Repeat with the other 1/2. Line a baking pan with aluminum foil. Add the fries and EVOO to the pan and massage with your hands until completely covered. Preheat an oven to 350 and bake for 60 minutes. Season to taste.

Vegan BBQ Bean Poutine

Ingredients

  • 1 serving sweet potato fries
  • 1/2 cup vegan BBQ beans
  • 1/4 cup mozzarella style Daiya
  • 2 strips tempeh bacon(optional)
  • 3 pieces fresh basil

Cook the sweet potato fries according to directions. Pile on a plate, and add on top the BBQ beans. Heat in the microwave through for about 2 minutes. Add on the Daiya and heat another 30 seconds to melt. If using, cook the tempeh bacon through until crispy according to manufacturer’s directions. Cut into small pieces and crumble on top. Garnish with basil.

Served with a side of organic pickles. Such a simple and delicious meal for one(I’m the only one home tonight). What are you full of today? I would have to say that I’m full of beans!! and also joy that I got so much on my to-do list done. The only thing I hope for this weekend to be “free of” is stress before my last final, because that’s been giving me plenty of that.

If I Didn’t Know Any Better, I’d Think I Were Pregnant

I attented 8th grade Sex Ed, so I’m pretty sure I’ve got the whole gender thing down and am safe on this one. But let’s check the symptoms:

  • Hit or miss hunger
  • Odd cravings
  • In and oat of the bathroom all day
  • Tighter pants
  • Constant irritability
  • Sore legs and ankles

Do I have a bun in the oven or what? Granted, some of these are explainable. You’d be sore to if you’d been walking up and down 3 flights of stairs to do laundry and cook all your meals. And the weekend eating probably could account for numbers 3 and 4. Oh, and who the hell wouldn’t be irritable if your only final left for your least favorite class isn’t for another 8 days and you’re just shooting the breeze? Blah. Let’s try that again.

Sweet potato and maple peanut butter. Odd? Yes. Delicious. OMG was that a great combo. I would definitely have it again sometime soon. The EVOO and the salt on fries gave it such a great added touch. After I ran a few errands around campus, I had two strong cravings: One was for an ice cream flavor I don’t have. Great. The other was for chickpeas. Well… alright.

Why the post before dinner? Well, right now I’m deciding whether I want to walk to Whole Foods to get the aforementioned ice cream. When I leave tomorrow, I’ll already probably be leaving behind a small fortune of ice cream. Aw, hell, you only live once.

What Would You Do?

My newest Friday night television obsession is the ABC show What Would You Do? The whole show is based on what used to be a 20/20 segment where they put real people in morally compromising situations with hidden cameras to tap their reaction. Since I’ve been watching 20/20 and this segment for 5-6 years, I was excited for this(You can go ahead and do the math; you’ll just find out I turned into a grandpa at a really young age). As much as I wanted to recommend this show, I didn’t have much to say about it. That was until I had a What Would You Do? moment in my own life.

At the gym, someone clearly left their Debit card and hadn’t noticed since they weren’t around the entire while I was there. I’ve seen lost personal property at the gym before and left it, but since this clearly had the person’s name on it I decided to take it and find them. When I tried to find a school email, they weren’t in the system; at this point, I thought I’d made a huge mistake and wanted to go throw it back on the gym floor and forget about it. Instead, I used one of my most prominent skills: Facebook stalking. I was able to track them down and message the person, who actually cancelled the card right away and said thank you but that I could tear it up. What would you have done in my situation? In their’s? I think we both did the best thing; I definitely would have been hesitant to take anything from the gym if I didn’t think finding the owner would be reasonably easy, so if it were a real gym I’d probably have turned it in to the front desk and went on my way(there’s no staff there; it’s just a single room of machines).

For breakfast I had a bowl of oatmeal with Naturally Nutty Butter Toffee Peanut Butter; how is it that I haven’t eaten this peanut butter in weeks?! It may not be vegan, but it’s perfection. And on a cherry fage I crumbled my last lemon ginger macaroon from Emmy’s Organic. You know you’re a blogger when you forget that “real” macaroons have egg whites in them and aren’t raw. They also aren’t this yummy.

Right before leaving for the gym I remembered my fudge in the refrigerator. My runs are a lot better when I do some serious prefueling. Ironically, I thought eating chocolate before a run would just be crazy and cheap. But fudge? Now that’s a class act.

I ran 12 miles on the treadmill. In hindsight, I have to question how sane it is to run on an electric machine when there’s a huge thunderstorm outside. But the thought didn’t occur to me until mile 7 so I kept going. I also got to watch Ice Age and laugh out loud at the line “It’s hard to get fat on a vegan diet.” Someone hasn’t tried my fudge

For lunch, I threw together a little Spanish fiesta with foods from the dining hall. I topped black beans with Daiya, which is still pure magic in case you’d thought I’d forgotten. On the side were some Spanish Potatoes and salsa, and a Dr. Zevia to wash it all down(OK, actually to empty the can so I don’t have to carry it out of the dorm).

I cooked! OK, it wasn’t anything more than maple baked tofu with roasted broccoli and sweet potatoes. But it felt soooo good to get back in the kitchen and turn on the oven after more meals than I can count from the dining hall or Whole Foods or made of oatmeal. Don’t get me wrong–I love a good meal made for me here and there. But there’s nothing more grounding than making something yourself.

Do you feel like you need to cook or bake from time to time? Clearly, I do. Do you think it’s “hard to get fat” on a vegan diet like Sid the Sloth says? That’s how I used to think–that vegans were sticks who ate grass–, but after learning more and reading so many wonderful vegan blogs I know they can cook with the best of them and it’s still everything in moderation that’s key. I’ll point out everything here today besides the butter toffee peanut butter and Cherry Fage was vegan. And what would you do?

Yesterday, at home, I was feeling ambitious: I’m going to make fudge. But what is fudge by its definition? As wikipedia told me, it’s fundamentally sugar, milk, and butter. No chocolate?! Well, not at it’s core. Those are the 3 ingredients that “make fudge”. Penuche is made with brown sugar. And chocolate fudge is made with the addition of cocoa powder. But what if you don’t want milk, or cream, or butter? And what if you’re a lazy bastard without a candy thermometer and only have the microwave at your disposal? Well, that’s when you need Microwave Vegan Chocolate Fudge

Microwave Vegan Chocolate Fudge

Ingredients:

  • 1 cup vegan chocolate chips(e.g. Trader Joe’s) OR 8.5oz sweetened dark chocolate
  • 4oz natural vegan butter substitute(e.g. Earth Balance)
  • 1/2 cup powdered sugar
  • 1/4 cup non-dairy milk

In the microwave or over a double-broiler, melt together the chocolate chips and butter substitute. Take care not to burn the chocolate. Once fully incorporated, sift in the powdered sugar and pour in the non-dairy milk. Stir until fully incorporated. Pour into a small, square pan about 6 inches by 6 inches. Drop on the counter a few time to remove any air pockets and refrigerate for at least 2 hours before serving.

I’m sorry; this was just too easy. I’m a little scared for every part of my body affected by sugar that this delicious dessert can be made so quickly and simply. I used unsweetened vanilla almond milk as the liquid, and the flavor could not have came out cleaner. Maybe vegan penuche will be next? The possibilities are endless! Now go make a pan and have another slice because it’s cholesterol free and no animals were affected in the process of your sinful, sinful treat.

I also indulged in 6 squares my favorite chocolate bar smothered in vanilla agave sweetened 365 peanut butter. Uhhh, does anyone remember when I mentioned opening this jar? Because it’s half gone. I don’t think I’ve gone through a jar of nut butter this fast before, and it’s a store brand! I think that speaks to the magic of 365.

And when I woke up, this wrapper of a Nature’s Path Peanut Choco’ Chewy Granola bar looked pretty guilty(i.e. I ate it during Brothers & Sisters). I expected to be sore and tired after yesterday. I certainly was tired and enjoyed the sleep. But when I woke up at 7:40, I really just felt like running–no timing, no pressure. Just running.

I went for an easy and slow 8 miles in the gym. Despite the heat and the humidity, the entire thing was made 10 times more pleasant with The Today Show and Betty White. Will you be watching her on SNL? I definitely will be! By which I mean I’ll be watching it on the internet the next day, but still, enthusiastically.

I have a problem: Once I get on a flavor or flavor pairing, I can not stop obsessing about it until the next craving. Hence the abundance of chocolate and peanuts in this post. At least those are foods that’ll fuel you well. A vegan chocolate peanut butter fudge batch next? Oh, somebody turn my brain off.

Since I’ve already asked and know if ya’ll like fudge, what are you having for lunch today? I’m super excited for mine, because it’s fried and already prepared 😀 It’s the little things in life…

Who Doesn’t Love Fudge?

Do you love fudge? I thought I liked fudge, until I had that goat’s milk fudge a few days ago, and now I’m realizing I love fudge. I can’t get it out of my head! It’s my newest obsession. And just when I think I’ve figured out how to make a killer vegan fudge, I go off to school where I have none of the supplies or ingredients. Boo 😦 Well, I can’t do a killer vegan fudge for you today. But how about a killer raw vegan fudge?

Raw Vegan Chocolate Fudge

Ingredients:

  • 1 1/4 cup nuts or half the amount nut butter*
  • 1/2 cup(80g) dates
  • 1/4 cup cocoa powder
  • 1/4 cup coconut oil
  • 2 tablespoons agave nectar

In a food processor, process the dates until a smooth paste. Remove and process the nuts until a coarse and crumbly texture. Finally, add all the ingredients back into the food processor and blend until incorporated. Once the mixture is emulsified, pour into a container and remix by hand if the coconut oil separates(it should be liquid by this point). Freeze and cut. Makes about 6-10 servings.

*You can mix it up and use your own blend to alter the flavor. Cashews have a nice, neutral flavor whereas others add their own touch. I like 3/4 cup cashews with 1/4 cup hemp seeds and walnuts

I bought a ginger Green & Black bar way back when they were on sale, and held on to it for so long thinking I wouldn’t like it. I think the fact that I had 12 squares and went back for 6 more proves me wrong. I loved the sweetness and “warmth” as they called it the ginger added to dark chocolate!

At the end of the night I broke in to my pan of raw vegan fudge along side some chocolate Yumnuts. I love the name. And yum! These were super. I didn’t like them at first, until they started to remind me of chocolate-coated M&M’s–not even the peanut find, just the chocolate M&M’s themselves. Anything this healthy and natural that could do that is a rockstar in my book.

Still no Justin’s chocolate almond butter to be found here, so I’ve gotten to making my own. And I’m pretty good at it! I think there’s a secret ingredient; I’ll save that for another day. And what would be hot oatmeal without coconut milk? I’m just loving my coconut milk as of late.

You might think someone who’s willing to post such a large portion of their life on the world wide web would live for attention. I don’t. In fact, in life I really hate being “special” in any way or getting extra attention at all. But some days that’s hard to avoid. Some days, you just stand out whether you’d like to or not.

Like this apple. It was probably the biggest piece of organic fruit I had ever seen. It held me over 2 and 1/2 hours. I love it when organic fruit is humongous; it gives me hope for organic farming.

We drove to New Hampshire for my cousins birthday party. It was at a local raquet club where the kids could swim in a pool. I conveniently forgot my bathing suit and went out to pick up the pizza with my father and grandfather. Of course, I didn’t want to be “special” but I couldn’t eat the pizza because of the crust. The cupcakes I made were a hit, even though I really didn’t care for the frosting. Even my older cousin who doesn’t care for chocolate loved them. I had such a coconut milk craving last night, you wouldn’t have believed it. We went to Big Fresh Cafe. After explaining why wheat noodles wouldn’t work for me in this dish, and that I’m just not a fan for rice, my plate was a big bowl of veggies, tofu, and coconut curry sauce. I’d rather get a big bowl of “special” ordered food I love than not eat 1/2 of it. And I loved this; I could have drank the sauce, but I didn’t. Come to think of it, that may not have been vegan if they used eggs or anchovy in the sauce. Regardless, I need to make curry more.

I bought this chocolate bar while at Whole Foods and started digging in with some mocha teeccino. It may be a project cleanout fail but it wouldn’t be much longer I could get a decent mint chocolate bar for $2.

And I finished up with the emotional roller coaster that is Brothers & Sisters and a bowl of oatmeal with almond butter, which photos my camera is withholding :-/ It’s probably just as well since I didn’t bother to photograph the 2 fingerfulls of almond butter and handful of almonds I had afterwards. I think I was on an almond kick, especially after baking these.
