“Hey, That Was Vegan!”

Last night, like I mentioned, I took control of dinner. I got hungry handling the food, so I snacked on some yogurt.

YoBaby And Greek Yogurt

I mixed 1/2 a container of YoBaby with 1/2 a greek yogurt. The YoBaby was made for… well, babies and was sweet potato and apple flavored. It was actually pretty good! A little thin, but I suppose babies need it to be like that? If you’re wondering why we even had a YoBaby, there was an instore coupon to get it for free and I could not pass on free probiotics. I was very excited to see how the parents would respond to my dinner.

Broccoli Fries, Maple Baked Tofu, Brown Rice Medley With Vegan Butter

I stuck with my favorite simple vegetarian dish: maple tofu. I also made broccoli fries(which needed another 10 minutes but I wasn’t going to make others wait any longer) and some rice which I don’t particularly care for but knew my mom loves. Everyone seemed to like it! Even my mom was picking at second servings of the tofu from the pan. She later asked if it had soy in it, which she’s convinced is poison for woman over 40. Should I bother showing her it’s probably in 50% of everything she eats? I’ll save that amusement for another day. Literally 3 hours after this, for no reason whatsoever, it popped into my mind that this meal was completely vegan! I never would have pictured us as a family enjoying a vegan meal so much, and entirely accidentally. Later on I was still stuffed but wanted a little bit of chocolate cake.

Perfect. I love the touch of walnuts on top, which is weird because I’ve never made brownies with walnuts in them. I was thinking of making my gluten free brownies with walnuts instead of mints. Good thing I didn’t because I later found out that my aunt happens to break out with acne from walnuts(and she loves digging in to my desserts at the holidays ;-)). Later on I still had a chocolate tooth but this time more room to stomach oatmeal.

Oatmeal With Butter Toffee Peanut Butter And Chocolate Chips

Delicious. I swear I’m going to need a 5lb tun of Naturally Nutty‘s butter toffee to last through the next semester. I’ve thought about trying to recreate it with my food processor but I just don’t think I could; the texture is just too perfect with this one among other things.

This morning I slept in again. Maybe I need a New Years Resolution to get up on time? Thankfully, I had nowhere to go, just some things to address.

Recipes

These are all the recipes I plan on making before the New Year. 3 are for out New Years Eve party and 3 are for my own amusement. 4 of them are just adapted from internet ones but 2 are “homemade”. The first one I wanted to try was homemade deep chocolate vitatops; I don’t want to think about how much money I’ve spent on these so I was happy to get muffintop baking sheets for Christmas. After studying the ingredient list carefully, I wrote up a recipe that would almost match it exactly.

They certainly look like the real deal, don’t they? And they’re almost identical in every way, from calories to texture to even whole grains per serving(although I threw in a few extra chocolate chips because vitatops tend to skimp ;-)). So even though I haven’t tasted them yet, I’m going to count this as a win because the point wasn’t to make the best tasting thing I could but the best replica. I’ll post the recipe a little later on. After showering, I wanted a maple(not chocolate) breakfast.

Greek Yogurt With Maple Butter

I need to eat my pumpkin cream cheese more because there was a little mold when I opened the container. Why, oh why. This happened last time and we had to throw out the whole thing, but this time I just skimmed the top and carried on(shh, don’t tell). I’d rather take the risk than lose the 6 dollars. The maple butter on yogurt was perfect; I’m going to be using the butter as the “special ingredient” in one of those 5 remaining recipes. But first up it’s time to take Montana to the vet for a check up! Of course the big lump of fur is still sound asleep.

New Plan, Stan

Last night, the plan for dinner was Whole Foods turkey(on sale). Well, the smallest turkey was 11 pounds… we’re 3 people. New plan: Dinner at Tomassos! I adore this restaurant, as it’s by far the best one near us, Italian or otherwise. I even dropped some not-so-secret hints last weekend I wanted to go, so I was glad those were picked up. I definitely did not want to go hungry, so I kept snacking on through the afternoon.

Organic Sprouted Cinnamon Raisin Bread With Macadamia Butter

This was my first time trying macadamia butter, and I have to say the bread really outshined it. It tasted almost precisely like cashew butter(which is the other ingredient in it). It wasn’t bad, and if I were a vegan I could see myself turning to this as a “butter replacement”, but it really didn’t wow me. It seemed like something that could highlight other flavors rather than stand on its own. A little white chocolate with this would have been amazing(Ok, that can be said about a lot of things). We got to the restaurant around 6:30.

Tomassos

I love the open atmosphere; you can see right into the kitchen and the dining room is perfectly arranged for relaxation. The funniest part of the night was when my mom asked our hostess “So is your sister home yet?” with no pretext; last time we were there, we decided that the hostess looked like a girl I went to elementary school with, though we never confirmed this and she clearly had no clue who we were. This time, my mom thought that we had confirmed this with her and she knew who we were, but in reality she gave us a very creeped out glance back. Once we explained things it turned out it was her and she was shocked to come across us. Isn’t it fun running in to old acquaintances?

Pizze Margarita

I had to steal a slice of my parents pizza as an appetizer. This is seriously the best margarita pizza I’ve had outside of Italy, and even then only 1 pizza has ever tops it. It’s perfectly thin and crispy, with an herby sauce and light but fresh cheese. For my dinner I had a really hard time deciding but settled for the maiale

Local Pork With Local Cranberry And Pear Monstrada

I can’t say I’d ever reorder this. The monstrada was delightfully spicy and sweet, but I’m just not someone who can sit down to a big plate of meat and feel good(and that’s all there was on this plate). It felt vulgarly big. I ate most of the leaner meat, but ended up giving 1/3 or so of it to my parents and not feeling particularly satisfied with what I’d eaten. In fact, I was just about downright hangry as we were leaving and other people were talking about how full they were. When I got home, I knew just what I needed.

Brussels Sprouts With Vanilla Sugar

Maybe I should change this blog to VeggieBoy in homage to this lovely blogger(who we should all wish good luck on finishing her finals!). I sprinkled a little vanilla sugar on top because I couldn’t decide if this was a “dessert”. At heart, I’m truly a vegetable lover, which led me to this new plan: Eat meat as a side or seasoning, never more than 1/3 of the meal. Don’t order it while out(I could, but I don’t expect many restaurants to meet the first sentiment, so why set myself up for disappointment?). Maybe those brussels sprouts were more than I expected, because they left me big and bloated. But there’s always room for chocolate!

With a little more chocolate and some soy yogurt to go along side. Yum! This chocolate really impressed me. The flavor was slightly more bitter than I prefer, which was odd because this was a 70% and that’s usually my perfect number. But overall the flavor was good. And I couldn’t get over the fact that this was entirely organic and raw! Seriously, that part astounded me as I couldn’t taste any difference. After posting my peanut butter cookie recipe, a snack plate was in order.

I don’t think they’re quite as good after being frozen from a week, but oh well. Not quite as good still equaled damn fine for a “healthy” cookie. I ended up getting to bed before 11:30, only to wake up around 3:45 and having difficulty falling back to sleep; I think I was either in anticipation of the snow or workout(both to come). I ended up making some 4am oatmeal to settle myself.

I don’t usually sweeten my oatmeal with stevia or anything; in fact, I like salty oats. But I thought I’d try out my new honey as I definitely was having a bear’s tooth for it. I only did 1/2 a tablespoon(I was trying tog et back to sleep after all), so I didn’t get a lot of flavor, but what I could taste was so nice and pure. I can’t believe I got this for only $4. I did eventually get to bed, and the snow outside was soooo amazing when I woke up.

Could you think of something better to wake up to? Well I spared no time in starting my quest to find some good at home workouts to do over the next 30 days if that’s going to be the case. This morning, I did an overall body core workout first which kicked my butt. I need to readjust it for my level before I go and post anything. That took 30 minutes, and afterwards I did stair iterations for 200 flights, which took another 60 minutes. I was literally dripping sweat by the end but it felt soo good. New plan: Get a workout in every day, even if it’s just some light walking around. You’ll feel so much better once you do! And being couped up at home doesn’t have to be an excuse to get out of exercise. I was so ready for breakfast after showering.

Boulevard's Organic Hot Chocolate With Vegan Fluff

This was perfect for a snowy day. I know she wasn’t the first person ever to do this, but Brandi deserves a huge shout out for reminding me of hot cocoa and fluff. The combination of Boulevard’s Organic and vegan marshmallow spread couldn’t have been simpler and tastier. And I just love my pumpkin oats with mighty maple and pumpkin cream cheese(as I’m sure you’ve figured out by now). But that brings me to a final new plan: Get 2 sources of probiotics a day. Actually, this is a rather old plan of mine, and something I generally do, but I think I need to remind myself of this one. Probiotics from fortified foods is so good for the digestive system and I shouldn’t be skimping. If that means I have to eat frozen yogurt at night, who’s to complain? 😉 Clearly there weren’t any at breakfast which just means I’m going to need to fit them in a bit later.

I can’t believe how much it’s still snowing; this is too perfect!

3 Down, 2 Nut Butter, And 1 To Go

Woohoo! I’ve officially completed 3 classes. I definitely didn’t rock out my final this morning, but I also didn’t tank it, so I’m fine with that. But best of all, it’s over! Now I have 2 1/2 days to write my Greek History paper, study dates and people, read for passage ID’s, and brainstorm 3 in class essays. That all sounds scary, but I’m just telling myself in my head that in 72 hours it’ll all be over for good or for bad and I’ll be heading home for the holidays 🙂

Last night, I started off my desserts with what else but chocolate.

After some of the other Q.bel products, this was a bit of a let down. It totally just didn’t pull together :-/ But it was so perfect in theory! Don’t you hate products like that? Oh well. What was awesome was finishing my Latin paper. It wasn’t due until Friday but I wanted to hand it in with my final so that I could be done with that class. My in-bed snack was very typical of this week and last.

A bowl of milk chocolate and peanut butter goodness and a vitatop, because it’s “nutritious” 🙂 I tried going to bed early but I don’t think that really worked out. At least it wasn’t an awful nights sleep so that I was well rested when I got up at 7:30. No run planned for the a.m. Instead I needed to get dressed, make breakfast, and prep for my final. I decided to give another new chocolate a try.

This chocolate was definitely the tastiest thing going here. It was just a crisp, clean dark chocolate. And it was so nice and thick that it made the chocolate shavings come out perfectly(can you tell that’s a big deal with me ;-)). Does anybody else actually enjoy runny peanut butter? I get a little disappointed when my PB doesn’t melt and just sits like a rock o my yogurt. Oh well.

Like I said, the test went just like I thought it would. I had planned to run afterwards but it took a little longer than I planned. I also decided that, if I end up not running at all today, I’d feel perfectly fine with that. Some days I feel “lazy” not running but today is not one of those days. Instead I decided to go out and pick myself up a “treat”, obeying that 11th commandment we all know and love. So I grabbed a snack and walked to Whole Foods.

Oh my how I love this bar. I picked it up a few days at the cafe where I can use my school card 😉 All it is is dates, honey, almond and cashews–fine by me! Anyway, I called ahead to Whole Foods to make sure they had the “treat” I was thinking of, and once I grabbed some coupons I was good to go. The walk there and back(2.5 miles) was so perfect and let it sink in that all of what I was stressing is 3/4 of the way done. I’m definitely a fan of stepping back and breathing. Lookie what I picked myself up:

Only a blogger would reward himself with nut butter… It’s so true, but this was perfect. I was thinking walnut butter sounded interesting for the past few months, and after I sampled and reviewed Artisana’s here, I knew I wanted to get myself a big jar. If I had a food processor, I’d be tempted to make my own. But what I love about this is the touch of cashew Artisana adds that I would not know how to replicate. I also got “standard” groceries.

And by “standard” I mean copious amounts of yogurt and a Q.bel near the checkout 🙂 Last day of So Delicious soy yogurt being 33% off in New England fyi! While I was out, I checked my email near the mail room, and it told me I had a package! I wasn’t expecting anything(or so I thought), until I saw what it was.

Another nut butter! 2 weeks ago, Kath had a deal where the first 1000 people on OpenSky got a free $25 towards their purchase with free shipping. Since NuttZo was less than $25, I jumped at the chance to get this for free. Wouldn’t you? Thanks soo much, Kath, for hosting that! I also stopped by the dining hall where they had steamed veggies. I think I got odd looks from the woman behind the counter for taking A LOT of steamed vegetables and avoiding the broccoli, but it was so worth it for this lunch.

For a Polish/Italian, I’m not so bad at making myself an Indian delicacy 🙂 I tossed the vegetables(which I weighed on my kitchen scale out of curiosity and they were literally a pound. Thank God this wasn’t from the Whole Foods salad bar!) with the rest of my Tikka Massala sauce and some salt and curry powder. I also took a serving of chickpeas from the dining hall and had that along side. I think all the cream in that sauce might have upset my stomach a bit but it was soooo worth it. Now I’m sipping Sugar Cookie Sleigh Ride to make things better, and it’s definitely working 🙂

Time flies because I walked in the door 2 hours ago and just now am finishing posting 2 hours later! I can’t complain because I just found a ghost story on the Discovery channel 🙂

The 11th Commandment

After having been on self-promoted dorm arrest for the past few days with the first of 4 papers let’s not talk about it, I decided to obey the 11th commandment: treat thyself. In this case that manifested with a trip down to Eastside Market and Whole Foods right after breakfast. It was chilly, but I was a man on a mission *insert serious face smiley*

Ok, it was really cold, so I was relieved to make it in Eastside Market and snoop the new sales. There really wasn’t anything that looked enticing, but I did find a Tofurkey Farm.

They were full price so I didn’t feel pressure to snag anything. But I’m comforted to know these are still existing at least until Christmas. I just picked up some squash and decided to see if there was more at Whole Foods. How had I not noticed organic gum drops before? I was very tempted to grab these but the price had me putting them back. I also noticed bulk bin oats were on sale, which had me laughing; usually don’t things go on sale and people pick them up “to give the a try” or because “they’re too expensive regularly but now they’re on sale.”? I’m pretty sure neither has ever applied to oatmeal. There was a lot more meandering and picking up things to only put them back; I wanted to just pick up a few things that I knew I’d eat and finish.

Ok, so maybe I did buy some bulk bin oatmeal 😀 But I was going to buy it anyway. I also obeyed commandment 11 by treating myself twice(is that too holy?). I grabbed herbed turkey for dinner and a carrot cake slice that was calling my name. I quickly made a “healthy”ish lunch.

If you’re going to have carrots, you really ought to have carrot cake, too. Or is that the other way around? To be honest, my favorite part of this meal was the snobby joe, followed by the cream cheese frosting. How is that possible? Maybe I’m just not a sweets person as I thought because, while it was good, some oats with melting peanut butter would have been fine, too. Oh well. Sometimes we do what we think we want and it’s not right; how could I have known I’d be happier with 3/4 pound gumdrops for the same price? C’est la vie.

I worked a bit more created a twitter account just to play and win Chobani’s spoons. Score for free Greek yogurt! You can follow me @FunFuel, but if you expect me to ever update it you are sadly mistaken 😦 I was totally bought with yogurt. After my super nutritious lunch, this was definitely in order:

Tazo Calm Tea

Ok, this tea is growing on me slightly. I also swung by the dining room, because it was so cold I knew I wouldn’t want to leave my dorm 2 hours later when it’d be even colder. Brussels were on the menu. What was actually there was stir-fried(read: dripping in grease) veggies. Not cool, dining hall, not cool. I grabbed some apples and a banana to replenish my fruit stash and went back to make a snack.

I think after two weeks my pillow was ready to be a crumble. It kind of looks like a mudslide pudding, don’t you think? Well it didn’t look like that for long because I was ravished and attacked this. Apparently carrot cake digests fast and isn’t very filling 😦 Who would have guessed? It’s a vegetable, right? But the peanut butter(which is high protein) totally took care of that. Then again, I don’t think I needed another reason to like peanut butter more than cake. Dinner was touched with a little magic. And when I say magic…

I mean this Indian spice I picked up. Except it was salt free–is that a contradiction? Good thing I have plenty of sea salt to go around.

Herb Roasted Turkey, Broccoli, Acorn Squash With Curry Spice And Maple Syrup

This was one meal in which the 11th commandment was kind to me 🙂 The turkey was perfect. As you know, I don’t have meat much because I opt for only organic, natural, or wild, so it pains me when I do find meat like that but it’s flavorless. This was soooo juicy and bursting with herb flavor. Truly that beat out carrot cake and gum drops. And the combo of maple syrup and curry is just killer; it sounds a little iffy but you try it out and you just “get it”, if that makes sense. For dessert, I acknowledged that sometimes you just need chocolate.

And I forgot how bitter real cocoa powder could be! Seriously this had plenty of vanilla stevia and vanilla sugar as well as the Midnight Moo sauce but some scoops still tasted really dry. I think I need to buckle down and by some sugary sweet pudding. Trader Joe must make that, right? I finished my 2nd paper while eating this 🙂 It was by far the easiest assignment, but 2 down and 2 to go still feels like a huge relief. Mid-30 Rock I had a HUGE craving for a warm and gooey, buttery blondie.

I don’t know what’s sadder; that this is marketed as “healthy” or that it 120% hit my craving. I was just happy I had it. And it’s good to keep bars like this around to honor the 11th commandment. Since I’m an intense creature of habit, I needed to finish the night off as always.

I ate this while watching Matt Damon on Leno; the man gained 30 pounds for one of his recent movies and couldn’t have had a better attitude about it. He talked about how the “man’s version of anorexia” where no matter how ugly or out of shape you are you think you look like Brad Pitt(btw, this is so true). Do you think you could gain weight for a role?(or, if you’re already an accomplished actress, have you?) I think if they gave me enough guidance and an intense trainer to whip my butt in the gym to pack on muscle, I’d do it.

This morning I definitely honored the 11th commandment by sleeping in 30 minutes. It wasn’t even “sleep” because I was awake the whole time, but sometimes it feels really good just to lie awake without a care. When I did get to the gym it was rather empty(score) and I felt very energized from the night before(double score). Not looking at the treadmill infor for the first 5 miles really helped the time pass, and in the end I wound up going 12–10 purposefully and 2 more to see Mark Bittman on the Today Show(He was making cheddar shortbread cookies. Need I say more?). But when I got back I was way in a peanut butter mood.

2% Peanut Butter Yogurt With Strawberry Jam

Yum! I don’t think a double dose of peanut butter counts as treating yourself; it’s too healthy. But it sure does taste good! And I’ve found the trick to peanut butter yogurt made with peanut flour: salt. It makes so much sense. I love salted peanut butters, so why not carry that over?

At the moment, I have a very full inbox and google reader. So naturally I’m surfing the web for anything to help get my mind off of those.

Here’s the original article. As you might guess, with my all-natural diet, I advocate always looking at the ingredient list first; you can usually get a good sense of the product just by what’s in it and how much. But I also really like this new food label for Americans who don’t pay the same attention to ingredients. And I really like the idea of “added sugar” and not just “sugar”. Did you know lactose in milk and fructose in fruit are included as sugar in products? That’s why a plain Chobani has 7g of sugar even though the only ingredient is milk.

Breakfasts Make The Best Meal

Thank you for all the kudos on the recipe contest 3rd place win. It feels so good to be acknowledged for a recipe. If any of you try my pumpkin bread let me know how you like it and if you bake it on your blog so I can give it linkage. Now the question is what I’m going to be making with eggs for the next 3 months 🙂 That’s one of those good problems to have, I figure. Like I promised after blogging yesterday, there was a trip to the mail room in order. I found a new tea.

Tazo Calm Tea

Calm? Hmm. Something tells me this is going to get bought a lot during the stress of finals week. I was alerted of a package I had. I had no clue what it was at first.

Gettysburg and Gods And Generals

Then I remembered I bought this on Black Friday from Walmart. I’m not much of a war buff but I really wanted to see Gettysburg, and the double feature with Gods And Generals was only about a dollar more. Instead of watching it then and there, I decided to save it for when I have time to pay attention to it and got to writing. My room is soo comfortable with the heat on now. You know it must be warm because I was ready for ice cream in the afternoon.

I’m so glad we bought some of this Sunday; I’m always tempted to break out the one at home but never have the time or am in an ice cream mood. If you’ve never had it–gah! It will change your life. The snickerdoodle cookie dough chunks… *drool* Anyway, yes, more work ensued. Something about working made me want breakfast.

French Toast Oats And Coffee

Maybe I wanted an egg after winning 3 months worth. Maybe it’s just that breakfast is the best meal of the day. I’m not sure, but this was tres magnifique. I think the secret to french toast oats is swirling the egg in but not too much. And cooking it thoroughly but not too much. So basically they’re a crap shoot 😉 I started to get hungry but had plans to meet up for dinner so there was some fruit snackage:

I tried to convince myself it was a clementine but it doesn’t work that way. Plus it had little annoying seeds in it. Don’t you hate those? I much prefer Trader Joe’s milk chocolate orange for my citrus intake, thank you. I decided to smuggle some links in the dining hall to bolster up whatever veggies they were serving.

Fresh Vegetable Medley, Curried Acorn Squashes With Maple Syrup And Breakfast Style Sausages

Wow… remarkable. These sausages… beyond words. They were so perfectly herby I could hardly believe it. With a touch of maple syrup–to die for. And who would have thought maple syrup and curried squash would work? It so totally did. It was almost Indian but with a Maine flair. I’ve been scared off of making my own Indian food thus far but I think I just need to find a good curry powder and I’d be good to go.

Before the Biggest Loser I went to a dining hall to stock up of Greek yogurt for the impending storm. I walked out carrying 4 with a bar and a coffee. I have some serious balancing skills 😉 How amazing were all the come back contestants on The Biggest Loser? I don’t think there was a loser amongst them.I always feel funny snacking during The Biggest Loser but I spend my time in the gym and earn my damn dessert 😉

Cherry Greek Yogurt With Cherry Dark Chocolate And Vanilla Sugar

Plus this had fruit, dairy, and antioxidants, so it was entirely healthy, right? I’m going with that 🙂 Did anybody else learn to spell dessert with an extra “s” because you always want more? That always stuck with me. There was definitely more dessert, unfortunately.

KIND Sesame And Peanut Bar

I try to eat with no regrets. But I regretted this. Firstly, I try not to eat bars in my dorm when I could have real food(or, you know, oatmeal), but this at first seemed alluring. Secondly, this wasn’t very good. It wasn’t bad, but it wasn’t good; it’s best feature was chocolate which I could easily have eaten in other forms. And yet I ate it in about 2 minutes flat, because I didn’t know how to put it down or just throw it out. I think all the thinking required for writing an essay made my rational thinking go away, and afterwards I learned better. For my last desssert, I tried being much more in tune with what I wanted.

Delicious and what I wanted. I’m not accustomed to eating peanut butter without carbs underneath but I didn’t want toast or oatmeal or to put it on the vitatop. The answer? A simple spoon–and it was perfect.

Snow! I love snow, I really do. I hate the cold, but I love snow(let’s not point out the contradiction here). Unfortunately it doesn’t put me in a work-out mood, but I decided a good run was just what I needed so I grabbed a bar and hit the gym.

At first I wasn’t feeling it for one reason or another; it didn’t help the non-basic cable tv channels weren’t operative. But then I thought maybe this would need to be one of those “move your body” and not “run” days and I resolved to go for 14 miles. It definitely felt like a stretch for the first 5 but eventually it just flew by and I was happily done in 1:58:02. After trekking back to my room and warming up I made yet another satisfyingly-breakfast meal.

Clearly being a repetitive eats blogger does not weigh on my mind because I was happy to dig in to this. I just love these sausages. Perhaps it’s a bit hypocritical to use vegan eggnog and serve it next to chicken and an egg but let’s ignore that like the snow and cold thing.

Today I would love love love to take a trip to the groceries stores. Unlike rain, however, that’s not in the forecast. What is is an essay being done, I’m sure. Happy humpday!

The Skin Is The Best Part

Well running didn’t happen this morning, certainly to no one’s surprise. I love snow, but I hate the cold, and sub-60 is “cold” for this New Englander so sub freezing was not happening. What was happening was work on my paper; thatnk you all for th support! If I get this much motivation for my 15 page paper, I can’t wait to share how overloaded I a for next week 🙂 Haha, but seriously, better not to think about that. I got a bit snackish before lunch so I spoiled my appetite entertained myself with a healthy appertif.

Deep Chocolate Vitatop

I would have gone for an apple or something, but I ate all of those(read: 1) yesterday and there isn’t much else in the way of quick snacks at home. Oh well, this has plenty of nutrients so it was all good. Eventually my grandmother showed up and we had a Sunday meal. We picked out chicken from Whole Foods yesterday because it was on sale, but I just wasn’t in a meat mood even though I knew it was vegetarian fed and all. I hate to pick out something and then not eat it but tastes change and I knew someone else would have my part for leftovers.

Curry Chickpeas, Broccoli, Sweet Potato With Maple Syrup

For a quickie-meal I heated up 1/2 a can of chickpeas and microwaved it with curry simmer sauce. It was surprisingly flavorful for so cheap and easy! And we all agreed that these Trader Joe sweet potatoes were like candy. Sweet potatoes are always good, but these were great; they practically caramelized in the oven. The skin was so crispy I skinned a particularly phallic looking one and just ate that.

The skin is definitely the best part. My family, unfortunately(or not?) doesn’t agree, so I also ate my mom and grandmother’s sweet potato skin. Why do I admit these things? I’m sure I’ve said much worse. After lunch I mostly sat on the couch with Montana working until it was time to go. Since last week the Christmas tree had been decorated.

It didn’t happen this weekend, but I’m still holding out for when I’ll be sitting in a blanket, drinking Boulevards hot chocolate in front of a fire, and watching It’s A Wonderful Life. *Sigh* It’ll happen. And so I said bye to this and got going with only 5 bags this time!

The ride felt very speedy. Maybe it was because I was reading Greek or maybe it was because we didn’t stop anywhere until Providence. When we got near campus we swung by Stop & Shop for some Vitatops and Libby’s pumpkin. I was getting hangry so I also grabbed this for protein:

Peanut Butter Cookie Luna

After a really positive experience with the chocolate peppermint stick luna I was psyched to try out another flavor; unfortunately, it was not nearly as entertaining. It felt so one-note: sweet. It would have been an improvement to even just as some whole peanuts and salt. Ah well, I was hungry so this went down before we checked out(literally). After that was Whole Foods for some ice cream and fake-chicken patties, and some garbanzo beans and soy yogurt because I passed those. Moving things back was fairly simple. I had it in my mind to have the ice cream I bought but I was so cold I couldn’t think about ice cream. I lose circulation very easily and so winter is never my friend. Anyway, I got a decent idea to resolve everything.

I took a quarter serving of the Snickerdoodle Soy Ice Cream and mixed it in a soy yogurt with extra cinnamon and stevia. The flavor was a bit weaker but it was definitely all I could handle at the time and this was plenty cold enough. My dorm room is particularly cold tonight. I hope it’s only like this because nobody has been home much and not because it’s going to be like this for the whole next 2 weeks. Dinner was definitely uninspired.

2 Food For Life Chicken Patties, Broccoli, Dips

You can definitely feel OK about eating the skin of fake meat; I was curious how these would taste to be like chicken, and the answer was very bland unfortunately 😦 I had 2 not out of love but because I couldn’t think of what else to eat. For dips there was a very vinegary ketchup and mustard as well as a house-made honey mustard. Is it weird that I forgot how good honey is? I think I’ve been eating too many vegan things because it tasted uniquely sweet and I could have downed the whole bottle(or bear as it is).

The Amazing Race finale was tonight–has it been a whole season already? That’s pretty ridiculous. I glanced up and down while translating the bit of Greek I chose for my paper. When I say that, what I really mean is blog reading to the point where I really wanted a sugar cookie. Why is that the one kind of cookie I didn’t bake this weekend? Oh well, this bar and tea was just as good:

I actually got under the covers to eat this because it feels that cold. How much hot liquid can I possibly pump into my body? We’ll see. I predict a lot of waking up and running to the bathroom tonight. The right team totally won The Amazing Race. I’m just glad the bickering brothers didn’t. After that, Family Guy was hilarious and I got 3 solid paragraphs done before giving up and making oatmeal 🙂

Oatmeal With Smart Balance Peanut Butter, Chocolate Hazelnut Frosting, And An Advent Chocolate

Soooo good. I’ve said it before and I’ll say it again: milk chocolate and peanut butter all the way. The frosting here was 2 tablespoons greek yogurt with sweetener and a tablespoon organic chocolate hazelnut butter for some added NUTrition. I’ll be eating this to the tune of Brothers & Sisters; there should be some good twists tonight! Really I’m excited to hit the hay and get up tomorrow for the run. Since reading week is beginning, I have no class tomorrow and so can run to my heart’s contents time free. Maybe another 16 miler? With 2 days of complete rest, it might come more naturally than I could hope. Goodnight, all!

Kicking Off The Month Right

December is one of, if not my absolute, favorite months. Why? Snow, Christmas, family, vacation–you get the picture. Thankfully yesterday was perfect for kicking things off. My breakfast(pumpkin oatmeal with smart balance peanut butter and maple syrup and a chobani with blueberry jam and double chocolate pillow) filled me up amazingly well. I was not at all hungry after class got out, so I thought I’d seize the opportunity to go to Eastside Market and Whole Foods! Would you believe me if i told you it’s been over 2 weeks since I walked that way? It has! On the way, I came across the best car:

Would it be awful to paint this car blue as a very involved April Fool’s joke? Probably. First up was Eastside, which looked mostly the same. I noticed they had brown rice sushi now, which might or might not be new, and for less than $5! I grabbed some for lunch and moved through fairly quickly getting just “the essentials”. Then I hopped over to Whole Foods and was psyched to find this.

December Whole Deal

There’s a new Whole Deal! But it has some pretty awful coupons 😦 I would majorly suggest stocking up on the old ones before you can’t get them anymore. Again, I tried to be quick and dirty shopping here so as to get back to my dorm. Thankfully, it’s a small Whole Foods and not much changes. I couldn’t even find a single Tofurkey roast 😦 Maybe hunting season’s over? I got back at 1:30 so as to only miss half of Days, and unloaded the loot.

Groceries

The Chobani and banana were from the dining hall bought with meal points. Otherwise, it was all from my grocery fund. And while none of it I had a coupon for, I tried to just get sale items and things that were “essential”. Here’s a question: when did I become the type of person who considers fake bacon an essential? The only thing that was really an impulse buy was the Carrot Cashew Ginger soup which, for 75 cents a serving, I was willing to try. I also got this one last thing:

An advent calender! Frankly, I was a little saddened to find that the 99 cent advent calenders my mom always got us had artificial ingredients I couldn’t eat 😦 Thankfully, this one is made with all-natural ingredients and fair trade cocoa to boot! Here’s to a delicious 24 days.

Brown Rice Tuna And Salmon Sushi, Carrot Cashew Ginger Soup

My lunch was simple yet amazing. The sushi wasn’t bad at all for $4.89, although I only ever really eat sushi for the fish. I honestly couldn’t care less for the bit of whole grains and small amount of avocado they give you that hardly adds up to a veggie. The soup was delicious! Albeit a little thin. I think I just like stews and thick bowls of oatmeal, but the flavor was rich.

My afternoon felt like a whirlwind. I hadn’t answered emails or read blogs since 9pm Monday night right before my lock-out experience. Rachael Ray, Ellen, Oprah–I think I was there for them all but I wasn’t really “present”. Before I knew it it was 4:30 and I had a rather odd snack craving.

Acorn Squash With Maple Syrup, Cinnamon, And Sea Salt

For some people(here’s looking at you, Heather), acorn squash might not be so weird a snack. For oatmeal and peanut butter boy here, it was. Nonetheless, I complied, cut up my squash, and steamed it in the microwave, adding a little seasoning at the end. It was perfectly spot-hitting. A little later on the munchies came again and I wanted some protein.

18 grams to be exact. For this I just mixed a plain Chobani with Trader Joe’s pumpkin butter and clear liquid stevia and then added on Sunspire chips–yum! It was such a sweet treat. I love the pumpkin butter with peanut butter for a fall flavoring. As for protein, I don’t generally keep close track of all that stuff; I just aim to have at least 3 high-protein sources through out the day, which often end up being greek yogurt or tofu.

For dinner, the online menu for the dining hall was not promising. Really, there was nothing since even one of the main vegetables was beets which I’ve sworn off for 2 weeks. I still wanted to catch up with my friend, Adam, however, since it’d been nearly 2 weeks since we last had dinner with Thanksgiving being last week. Thankfully, he was fine with bringing takeout to my room, where I whipped up this dish:

So I like the soup, wanna fight about it 😉 This was a delicious way to serve up leftovers. I was thinking of adding some flax to the soup to thicken it up but I hate playing around with things and so let it be in the end. We caught up on each other’s Thanksgiving and groaned about how ridiculous these next few weeks of work will be and then said our goodbyes to “write papers”(which in my case meant blog). I’m not a terribly political person so I was happy to skip the Presidential address for some serious snackage.

Oh my God. What have I released? This was sooooo good. Seriously, has anyone else tried this frosting? If anyone made it vegan with Tofutti I would be mondo impressed/intrigued to hear how it worked out. The Biggest Loser was inspiring, as always. I couldn’t wait to see them do a marathon! That’s really going to make me feel lazy and like I need to get a move on that, haha. The Biggest Loser must make me hungry because at 10 I made a large(r) snack.

If I weren’t addicted to running and a health eater I’m sure I’d be driving my doctor nuts. The roll tasted just like a cinnabon; Afterwards I had a better idea for the chocolate. I love how the advent candy was in the shape of a heart. I hope they’re all fun like that. I pretty much gave up work after this(note how there’s a notebook under that food) and just focused on getting a good night’s sleep. I was also inspired to ask myself after watching the Biggest Loser contestants run a marathon why I hadn’t tried to run farther recently? Unfortunately my answer sucked: time. I’ve just always been focused on getting back to my dorm and making oatmeal too much to go the extra mile. And so this morning that’s exactly what I’m going to do(literally). I’m going to challenge myself to go 16 miles. If I have to walk or slow down I’ll let myself and I’ll give myself all the time I need. But that’s why I’m up posting at 6:30–to take a bit of time pressure off as I head out right now. Wish me luck!

Locked Out

So much for getting back into the swing of things! I couldn’t have been more off my game yesterday if I’d crashed my car into a tree and then drew attention to myself by releasing a sketchy statement about it. I completely forgot the first rule of morning time management: The days you want extra time are exactly the days you won’t get it. Regardless, I skipped doing the dishes and ran out the door at 10:45 to grab coffee before class. For the first time, I forgot my camera. What if yesterday was the day I ran into Emma Watson and explained to her about my blog and she offered to pose for a photo with me?… I like to dream big so that whatever happens in the day isn’t a disappointment. Well that wasn’t the case, but I did get my coffee, sit through an rough hour of “welcome back, now work” class, and hustle on back to my dorm to pick up where I left off. After cleaning, emailing, and blog reading, I made another meal of leftovers.

I think from now on I’ll just cook everything on the weekend and only eat “leftovers” all week long because they’re always the best. The broccoli was simply steamed and mixed with a slice of cheese from Trader Joe’s. The acorn squash was delicious with the caramel mustard, which I definitely had a heavy hand with(how could I not?). And the Tofurkey roast was still mighty fine, though I made sure not to overdo it again because apparently too much Tofurkey is rough on the stomach! Cost for calorie, these aren’t so bad to buy on sale after the holidays eat throughout the week. Here’s hoping to more in the future!(besides what I still have as leftovers :-P)

I don’t know where my head was because I almost left my room and went to class without any of the books I needed. In history we got back our 3 midterm essays, all of which I did really well on and lifted my spirits. Then we got our final paper topic–yikes! That’ll be 12-15 pages of get-me-out-of-here. After class I “had” to dash back to my dorm to pick up stevia packets for a coffee before epic poetry(going to class without a coffee would be dangerous). Unfortunately, as New Englanders know, the weather was awful in the afternoon and my plans to grab something at Whole Foods were no more. I headed back to my dorm, at which point I was struck with a Jimmy Neutron brain blast.

I loved this recipe so much, I had to post it immediately. That is seriously going to change the way I eat anything carby(probably not for the better but oh well). Oprah had some awesome guests on, including Sugarland, all singing Christmas songs! It was pretty awesome–I wish I’d known to tivo it. Afterwards I had to get out even if it was raining. Naturally I chose the bookstore.

I realized I forgot all my cold-weather clothes at home, as well as an umbrella and q-tips. Again, where was my head? After perusing I couldn’t find any good coats, and the umbrellas were a bit much(and I completely forgot about the q-tips :-() so I left empty handed. I was still feeling a bit snackish, though, so I dug up this bar back at the dorm.

Wowza! I think this bar had the most flavor out of any of their bars, and I really really liked it. The lemon and ginger were both loud and it made a fun study snack. While doing some work before dinner, I realized I hadn’t heard from my friend if we were doing dinner. That’s because I forgot to turn my phone on in the morning and it’d been off all day… wtf. After getting some texts and finding out I was too behind for the rest of the world, I ended up grabbing something and eating in.

Vegan Roasted Vegetables, Sweet Potato, Wildwood Teryaki Tofu

Do you see the sun? It needed to come out at some point. Before I dug into this, I realized, I took my only fork home before break and forgot to bring it back. What’s wrong with me? Chopsticks and my baby spoon it was. Unfortunately, the flavors were not nearly as sunny; this was one of those meals that just felt like a waste after eating it(except the sweet potato, which would take a lot to feel like a waste). I wish this tofu had half the flavors on the ingredient list but in the end it tasted much like their savory flavor and wasn’t teryaki at all. As for the veggies, I tried to ignore the massive amounts of olive oil, but I had to stop 3/4ths the way through and throw out the rest. I don’t mind healthy fats, but I’m not a big fan of olive oil :-/ Nuts, peanut butter, avocado–all good. But this was too much to an absurd amount.

The night just went downhill from there. Heroes was OK but nothing to draw my attention, and my stomach just felt off, which I’m going to go ahead and blame on the vegetables. I did some light reading but realized I was tired. Could I go to bed at 9 and be asleep at 10? Was that allowed? Why the hell not, so I shut down my computer early, and figured out what to have right before sleeping.

 

2% Greek Yogurt With Strawberry Jam And Strawberry White Chocolate

Well the night wasn’t a complete bust; I removed 1oz plain and replaced it with 1oz full fat yogurt to give the base a 2% taste. Then I swirled in strawberry jam(technically “conserve”) and topped with a shaved Divine bar and some more jam. Just what I need before going to be–sugar. Midway through this I realized I forgot to brush my teeth, and so went to the bathroom to do that. In the 3 minutes I was in there, my roommate must have came home and grabbed something, locking the door and leaving. I was locked out in my pajamas, glasses, barefoot with a toothbrush–glorious. I freaked out for a minute and tried running outside to find him but no luck. Thankfully, one of the RC’s on the other side of the dorm was home and called campus services on my behalf. She also lent me slippers to wear while I waited outside(in 40 degree weather) for the campus security to show up. By the time I got in my room, i completely missed Big Bang Theory and was quite livid. The only thing I could do from wanting to tell someone off was eat this.

I’m not sure how well that worked, but heating it a little extra and just holding it in my hands for warmth made me happy. I totally didn’t get to bed early like I had planned, and the entire night felt like a waste. I maybe got 20-30 minutes more of sleep than normal–maybe. When I woke up I just needed to run it out, so I grabbed this and just left:

I swear I always run farther than planned when I have an Amazing Grass bar. Stock up while they’re still on sale! I was first thinking 8, then pushed it to 10, then settled at 12. 3 days in a row? I think that’s a new favorite distance. My time was a little slower(1:41:11) but not bad. I was very pleased that my room wasn’t locked when I came back this time, and I was able to get in and make a quickie breakfast.

Is there anything better than opening up a new jar of PB? I bought this Sart Balance with agave to replace the one I had with molasses–it’s just better! And perfect on some salty oats with maple syrup. And the yogurt–yum! I love the combination of chocolate and blueberry but it’s so hard to find in foods unless I make it myself. The pillow cookie made a perfect, rich cocoa topping.

Tell me either your worst story of being locked out(fortunately this hasn’t happened too me more than 2 or 3 times in my life) or your most annoying roommate story(I realize my roommate could have been a lot worse so now I want to hear about those who were). Thanksgiving 2009

Hopefully with a title like that it’ll be easy to find in the archives 😉 How was your Thanksgivings?(if I haven’t already read about them on your blogs). Mine was pretty fantastic I’d have to say. But why take my word–the proof is in the pictures!

Firstly, the relatives were running “a little behind”. This is absolutely expected every time. So it didn’t really change anything. I knew Thanksgiving lunch wouldn’t be for a few hours, and I had no plans to touch the appetizers, so I got a head start on dessert.

Can you tell I had a chocolate tooth? I just mixed cocoa powder and sweetener with the yogurt and voila–it was so thick I think had it been frozen for 30 minutes it would have been like ice cream. At around 1:15 the relatives showed up(which impressed us who thought they wouldn’t be here until 1:40). They came bearing gifts.

*Swoons* Something tells me my relatives are finally starting to “get” me; the maple syrup actually was on my Christmas list!! Now I need something to take its place, right? As predicted, my little cousins had one thing on their mind: video games. They aren’t allowed to have game systems besides a computer(they’re only 8 and 3) so my house is like gold. When they were doing that, the adults had appetizers:

I’m pretty much the opposite of a grazer, and was still satisfied from my vitatop, so I was fine skipping all this. My mom’s meatballs are kind of famous within the family; maybe some day I’ll steal borrow the recipe and make it with bison and organic sauce. I don’t think I’ve seen someone attack appetizers like my grandfather on those wontons. Apparently he’d been “saving” calories all last week for today. Probably not the healthiest thing but when you’re 75 who’s to say you can’t do what you want.

The turkey rested while people chatted and then we got to carving. Notice how on the left it’s pulled like pork and on the right it’s nicely carved in tact. Guess who did the right 😉 My mom was anally organized about the table and had labeled everything a place so set up was fast.

Like usual, my mom and I were the first to the table with the old people behind only because they’re… slower. And the uncle, aunt, and cousins were running around enthralled with video games, haha. My cousin wanted me to help him on a level but I told him I was hungry, and when my grandmother said I’d need to prioritize with my own children I assured her that’s a ways away. And then there was food.

Delicious. The turkey, from Whole Foods, was free-ranged so I felt perfectly fine digging right into it. Ironically, I probably took less than 2oz of meat! I think meat being absent so much while I’m at school makes a little seem like a lot and have me appreciate it more. My “strategy” going in was just to take 3 or 4 foods, even though there were plenty more on the table. I didn’t want to do a “sampler” of everything; I knew I’d have all this for leftovers so I’d rather eat what I did take and ignore what I didn’t. No regrets here or in the foods I did choose. I’ve loooooved cranberry sauce from a can since being a boy and am so happy that this didn’t have HFCS in it. Here are my 3 living grandparents also enjoying the meal:

We swiftly started heating up pies, defrosting desserts, and cleaning plates. I completely failed on taking a picture of the dessert line up but there was my pie, Trader Joe lemon bars, homemade berry pie from my grandmother, store bought cheesecake, chocolate and vanilla ice cream, and a Carvel birthday cake.

Tuesday was my grandfather’s 75th birthday. Happy birthday! Hopefully he doesn’t eat like that everyday or there’s no way he’s hitting 76, haha. There was also another unique item welcomed to the table.

TruWhip

This week I received a coupon from TruWhip to try and review their product. Could you think of a better time than Thanksgiving? Unlike its competitors, TruWhip is 100% natural, 70% organic, with no hydrogenate oils or HFCS. Not only was I happy to try this but it felt great to serve to my family. I took plate of the natural goodies that fit my hunger.

Pumpkin Pie, Trader Joe Lemon Square, TruWhip

What a sweet way to end the meal. The pumpkin pie came out as good this time as last time. The lemon square from Trader Joe was good but not superb; it was definitely better than any lemon bar I could’ve made from scratch. The real shocker here was the TruWhip, which everyone seemed to enjoy. It really tasted just like the competitor to me. I must admit there are some things I miss since eating all-natural so it’s always fun when groceries like this come along. It was light and airy, sweet with a hint of cream. I think the only one who wasn’t convinced it was an identical match was my mom, who went in with a slanted opinion to begin with. I think a carton is only 4 or 5 dollars, and since it can be refrozen for another holiday, this is completely worth buying and keeping around for a naturally special event.

Everyone had a good time and piled out by 5 o’clock. I think the most tired of the day was Montana, who was already sleeping on the couch. We tried passing off as much leftovers as we could but in the end our fridge was full. At least what we have is real food we can work into any meal over the next few days. By 5:45 I was feeling munchy.

Raw Vegetables

I started to work on the leftovers with the raw veggies. My mom couldn’t understand how anyone would still be hungry after Thanksgiving; I believe it’s called not eating 3 slices of Carvel cake? I was happy with eating until I was comfortably full and knowing how much was enough–I absolute despise that “overstuffed” feeling. Right like clockwork I had a dinner for one made and ready for 7.

Brussels And Tempeh Bacon With Maple Syrup, Grand Marnier Sweet Potatoes, Lightlife Breakfast Sausages

3 delicious meals in one day–how lucky am I! I wasn’t quite up to real meat for the time, so instead I let my protein be soy sausaged and tempeh bacon. I steamed and then pan seared some brussels to add some crust, and drizzled maple syrup at the end. The sweet potatoes were one of the dishes I passed over at lunch because I knew there’d be leftovers, and I rather liked this because it made it feel like I was eating a completely new meal! They were pretty good, but I think my mom had a heavy hand with the alcohol because these were pungent, haha 🙂

You know I was right there for the Charlie Brown Thanksgiving Special(it helped that Survivor was just a clip show, too). After a cup of coffee for good digesting, I got to work on more leftovers.

 

Plain Soy Yogurt With Cranberry Sauce

 

I will never understand how something like cranberry sauce has become accepted with dinner and not as dessert but I’ll just be thankful for that 🙂 We got 365 organic and it is perfect. Not only does it not have HFCS but it’s and also a little less sweet so that the tartness is evenly balanced. Between the textures of jellied cranberry soy yogurt and the flavors this was just to die for.

I was also thankful for NBC’s People Of The Year special. I really hope it wasn’t just me. I think I’m becoming old, because in my head I thought of this as “The Today Show + 60 Minutes + Miracle Grow” and practically wet my pants in anticipation. It lived up to what I hoped. I’m really tired of the Octomom and balloon boy, but I could never get tired of hearing praise for Taylor Swift. Right before I went to bead I had what my day was lacking–whole grains.

Pumpkin Oatmeal With Almond Butter And Smart Balance Peanut Butter

That brought me back to my roots. I’m liking the double nut-butter topping now as opposed to the nut butter and a topping(like chocolate). Not sure why, maybe I truly am just nuts for nuts 🙂

This morning there were plans to maybe attack Target for Black Friday sales with my dad, but my parents had to leave for a funeral at 8:30(irony) and the sales just weren’t as appealing as last year so we called it off. Today it’s planned raining all day so it will, by all likelihood, become a rest day, and I will be between the kitchen baking and my computer studying. Again, hope you had a great Thanksgiving! Pans And Pies

I didn’t feel that much pressure to get out and run yesterday. At the same time, I wasn’t sure how many opportunities I’d get today and tomorrow, so I decided to take the time and go out. It was a slightly slow 6.7 but felt good to be active for an hour(because I firmly planned on being lazy the other 23). When I got home, I challenged myself to make a lunch not with the microwave. It’s simple enough but there’s so many flavors and textures it just can’t achieve. After planning out a menu, I got to work with my fancy pan I won from some Hood milk promotion last month.

Brussels And Sausage In A Pan

First I scrambled 2 eggs and cooked those in the pan to the perfect doneness–so much easier than in a microwave! Then I steamed raw brussels for 3 minutes in the microwave and then pan-browned them for another 2 minutes. I also heated up a pre-cooked chicken sausage in the microwave(btw, all these uses of it don’t count ;-)) and finished that in the pan.

Scrambled Eggs, Spicy Chicken Sausage, Brussels Sprouts

This deserves a Holy Yum award. Brussels sprouts are seriously my favorite green vegetable and by far the best thing here, even though they were a bit dry, with a touch of salt. The browning gave a good crispness to the outside. The sausage was also quite good. Note: It was real meat and not faux meat. I think I can love them equally. The fennel in it was really impressive. For dessert I had something that took neither pan nor microwave.

Oikos With Banana Pineapple Rum Jam

So perfect. Well, OK, it could have used more jam, but then again my ideal would be eating the jam from the jar with a spoon, which is a no-no when it costs as much as this one does. I had a lovely evening on the couch planned, but then my mom asked if I wanted to accompany her to Market Basket while she picked up some last minute food. My knee-jerk reaction was a big yes, and next thing I knew it I was in the car. Oops. At least I brought a little work with me. For those who don’t have a Market Basket, it’s a place full of interesting finds…

Christmas Decor

Oh, Canada. What are you doing up there? Jk, but Market Basket does have good finds. It’s right across the way from Whole Foods, and while it might only carry about 30% the same stuff, what it does have is very often cheaper. The only thing I could find on my list this trip was a 4-pack of deep chocolate vitatops for 3.69. they had faux meat, but unfortunately nothing all-natural and breakfasty 😦 It was pretty late when everyone was done, so I was happy to grab a snack in the car.

Banana Walnut Gnu Bar

Wow. Wow wow wow wow wow. All you have to do is read my review to know I loved this. I don’t like bananas that much, but I swear anything that tastes like bananas I’m game with. And this was just like banana bread. There wasn’t a large presence of walnuts, but that was fine by me since I don’t care for the. And all the fiber filled me up and kept me calm when I realized I still had to make the pie! Yikes. By the time we got home it was dark and I was getting anxious about that, until I remembered this is the simplest recipe and I didn’t even need to check my computer to remember how to make it.

Unbaked Crustless Pumpkin Pie

There was a mini-issue with the pesky water bath, but otherwise crisis averted and sanity restored. I felt a little something was in order along with a pat on the back.

Chocolate Elan Frozen Yogurt

This snack ended up being a little littler than I expected; who knew we were almost out and there was hardly a serving left in the container! Too bad nobody realized this over the past 4 weeks we’ve been having freezer-space issues. Normally I’m happy to finish an ice cream but I love elan and this flavor so much I feel like I need to get an exact replacement for it. I watched 1 of the 2 SNL’s I slept through and then the pie was done.

Crustless Pumpkin Pie

It had a couple bubbles but no cracks and definitely nice and firm so that it will stand on its own at the table. Amen 🙂 And then there was dinner.

Haddock With Soyaki, Beets, Parsnips With Peach Salsa

Not quite my pan-licious lunch, but this was pretty good, too 😉 There was a little more beets taken after the photo and we finished it all! We didn’t want any leftovers going in to Thanksgiving. I swear this house empties of all vegetables when I’m not here so I made sure we got good ones at Market Basket. Parsnips are so good for a soft and white vegetable; I don’t like white potatoes because they always taste dry and starchy but I think I’ve found a new friend in parsnips.

I almost forgot about The Biggest Loser last night! I was so thankful my tivo reminded me of it. I brewed some coffee and had a naked dessert.

Deep Chocolate Vitatop

I kept racking my brain to try and figure out what to do with this vitatop. It finally occurred to me: If it wasn’t coming naturally, it wasn’t meant to be. And this vitatop tasted just delicious on its own. It was great to see where former contestants are and to know they’ve really changed their lives. I think finding and staying with that balance must be the toughest thing. There was another snack.

Oikos With Turbinado Sugar And Chocolate Chips

Turbinado sugar is good for you because it has the minerals crystalized in, right? And it’s from Trader Joe’s so it cures cancer, right? We’re just going to go with all of that because this hit my sweet tooth. It was so depressing seeing the winner who gained back so much weight. Clearly, though, he felt bad about it, too, so it’s hard to be upset with him.

 

Pumpkin Oatmeal With Mighty Maple And Chocolate Sunflower Seed Butter

Let’s just say, this bowl took a lot of work to figure out what to do with it, but I’m happy where I settled. I forgot how good and chocolatey(not to mention thick) the chocolate sunflower butter is. And probably a better choice at 10:30 than chocolate chips with my sugar tolerance(or lack thereof).

I set my alarm for 7 this morning. On a holiday–why’d I do that? To run, of course. I wasn’t sure it was going to happen but it was actually reasonably warm and I felt refreshed with only 8 hours of sleep. I grabbed a bar for the run.

 

Amazing Grass Chocolate Whole Food Energy Bar

What a delicious way to start Thanksgiving 🙂 I ate 3/5ths of it on the run and then never needing the last bit. I ended up doing 10.55 miles–my longest run outside! The course was completely new to me; they demolished a bridge near my house which pretty much eliminated as options all my longer runs but I figured out a new course that worked perfectly. I came home to a house already smelling of food–love that. I got a touch creative with breakfast:

 

Pumpkin Yogurt With Smart Balance Peanut Butter And Nog Cream Cheese Frosting, Peanut Oikos

Ok, I’ll admit it, I used the microwave for the oats and I don’t regret it because this bowl was perfect. The frosting, which I dreamed up on the run, really made it; the recipe is 1oz greek yogurt, 1 tablespoon low fat cream cheese, and 1 tablespoon Silk Nog with 3 drops vanilla liquid stevia. I wouldn’t give such precise measurements if I weren’t convinced those are the measurements of the Greek Gods. It’s sweet but not so much that you lose the cream cheese, and it’s entirely seasonal.

Happy Thanksgiving, all! Now I’m kicking back, watching The Parade with Pikachu just having floated by. My relatives are coming in just 2 hours! I’m so excited, even though I realize the 2 little cousins will probably have me tearing my hair out of my head by the end of the day, haha.
