Sometimes two things balance each other out; sometimes they’re downright contradictions. C’est la vie.

This was basically one big bowl of balance. Where can you go wrong with oats and peanut butter? Or maple with pumpkin? Or the sweet taste of Mighty Maple with some coarse sea salt for contrast? Yes, yes, and yes.

Raw Mint Chip Macaroon With English Breakfast Tea

Later last night ended up being full of contradictions and out-of-balance experiences. I think the jury is pretty much out on the contradiction of drinking decaf English breakfast tea when you can’t sleep on a Saturday night 😦 The Emmy’s Organic Mint Chip Macaroon? A perfect balance of mint and chocolate, and all deliciously raw 🙂 Oh, and me and college living and anything besides a nursing home are 100% out of balance. Call me a grandpa if you will but I do not want to hear “Tonight’s gonna be a good night” at 12:30. I want it to have been a good night and have gone to bed by 11. The fact that I was having insomnia on the 1 night a year we lose an hour’s time: What was up with that?

11 Miles In 1:36:46

Waking up after a mish-moshy 6 hours of sleep, part of my body felt like running, and the other part wanted to laugh. Really? Guess which part one. I did reach a good balance between training and rest by taking a rest day yesterday, if you didn’t notice. Apparently, all it takes to keep me from running is 50mph winds, a museum tour, and more work than I know what to do with. That left my legs well rested for 11 miles in 1:36:46.

To balance out the boredom, I listened to a monster long playlist while watching a Tom & Jerry 90 minute movie on Cartoon Network(yes, they have one of those). This is a pair who really balances each other out, don’t you think? I couldn’t help but notice the contradiction in describing sounds in the closed captioning(presumably mostly for deaf viewers) with other sounds; if I were deaf, how would I have known that Tom & Jerry bouncing around sound like a pinball machine?

Breakfast is always my most mentally balancing meal of the day. What goes better together than honey and peanut butter in the Peanut Butter flavor of the Perfect Foods Bar? Or the flavors of cocoa butter and peanut butter in White Chocolate Wonderful, which truly is, as my European hopping hip blogger would say, wundebar! Or just the flavors of peanut butter and more peanut butter? I know PB&Co. would agree with me on that one.

What about you? Are you feeling balanced or a little contradictory this morning? Either can be good(and tasty) as I think I’ve shown. Or, any excited Sunday plans? It’s still raining 😦 But I have le familia scheduled to arrive soon now to taxi me to Bellingham to pick-up something I preordered I’m excited for, the ever-exclusive store Target for a new oats bowl(!!), and then the usual goodies and groceries with maybe a meal in between. Oopsies, Daisies, And Half Marathons

I was going to right a post about added sugars(which were not my crowning glory the past 14 hours), but then I accidentally ran a half marathon. Oops. I’m hoping that’s more interesting, as I look at the other “oopses” that led to that happy accident.

Peanut Butter Q.Bel Wafer Roll, Coconut Oil Chocolate

As you must know, I’m addicted to Survivor; I’ve watched every season! Last night, I was so enthused to see a reward for–what else–chocolate. Apparently, I must think I’m a contestant this season, because I went ahead and made a chocolate plate of my own to rival the prize. Oops. It was certainly tasty, though. The coconut oil chocolate got a little soft at room temp, but was fine with a spoon to finish it off.

I forgot how much I loved these peanut butter wafer rolls from Q.bel;; I should read my own reviews more often, haha. They taste so much more peanut buttery than you’d think, and it’s all natural! I only wish they’d be gluten-free, which I forgot they weren’t. Oops. As you can(and will) see, I’m awful about eating how I should.

Oatgurt With Vanilla Chobani And Nuttzo

I’ve never been one for oatgurt, but I thought I’d give it a shot since I was craving oatmeal and greek yogurt. Pouring salt over all of this was a BIG oops and made the yogurt taste nasty. After I scooped that off, it wasn’t half-bad, but still wasn’t half good. At least the Nuttzo didn’t have any added sugar thankfully? I’ll take a win in the nutrition department where I can get it. Perhaps this wasn’t such a big flop since it really nutrient-loaded me for the morning.

Fudge Mint Back To Nature Cookies

I set my alarm purposefully 10 minutes earlier, knowing if I wanted to get a long run in(still unsure how long), this would be easier than extending it 10 minutes later. While sipping some coffee and changing, I snacked on 3 Fudge Mint Back To Nature cookies. What can I say? When a cookie is a 10/10, you’ve just gotta munch on it 🙂 Plus, I was sure those added sugars would help me just a little bit(Note: These are also not a gluten free food, proving moreso my awfulness in that respect. Oops).

13.1 Miles In 1:57:39

I think it helped me to run 13.1 miles that there was always somebody else on the treadmills around me; that kind of atmosphere is so much more encouraging. I had planned for 12, but when I got there and it wasn’t even 9 o’clock, I figured why not go for it?My record(also on the treadmill) is 1:46:28. For my race(in 16 days), I’d hope to run it in 1:40, though won’t be disappointed by anything. It’ll also be my furthest distance ran outside!

And then there was refueling. As silly as it may sound, I didn’t have oats this morning in part because I didn’t want to have to look at one of those green plastic bowls again 😦 I can’t wait to buy a real one. Who needs oats, anyway, when you have flavors like these? I topped a vanilla chobani with my last Bob’s Red Mill gluten free vanilla cupcake–I think that deserves a moment of silence right there–and some butter toffee peanut butter ala Naturally Nutty. I made my standard chocolate avocado pudding with Xagave in place of stevia. After 13.1 miles of rough labor, I’d rather give my body a caloric sweetener rather than risk confusing it. Now if only I had measured or used a little digression on adding that sugar :-/

So there you have it: Fueling for an accidental half marathon. I think this goes along with the emphasis in this post that if you’re a regular exercisor, you really need not worry about overdoing it. Of course, there are exceptions to be said about any statement. But extra energy sure will show out in your workout. The Memory, The Reality

The Memory: 90 degree, sunny days over the Summer with nothing to do but enjoy the outdoors

The Reality: Mid-40’s with low/no Winter breeze, but plenty of work to keep me inside

The memory totally owns here; I spent most of today reading Plutarch’s life of Alexander(should’ve just sucked it up and watched the movie with Colin Farrell) along with other work. BUT in a lot of other ways the reality beat(or at least came close) to some good memories.

Cooking A Grass-Fed Burger

The Memory: I’m 6 years old, my mom’s most probably out of town, and my dad’s idea of a “dinner” is leftover pancakes from McDonalds(to be fair, I probably asked for these) and maple syrup, which we stuck in the microwave with an aluminum tin–mini-fire, anyone?

The Reality: Cooking my own grass-fed beef burger in my own pan in the dorm kitchen.

This one’s pretty clear: reality wins. Getting a full pound of beef at the beginning of the week felt daunting, but I’m loving the meals I can get from it; I hope to pick up a big(cheap) piece of quality meat tomorrow for next week.

The Memory: Spending Summer days at my grandparents’ home for daycare. My grandmother knew how to cook 3 things: eggs, tacos(from a seasoning packet), and hamburgers. A typical meal would probably be a hamburger on white bread and Ore Ida french fries, washed down with a Mountain Dew

The Reality: A grass-fed beef burger with steamed broccoli, a 100-calorie portion of Sour Cream & Onion Popchips, and an all-natural diet root beer ala Zevia.

Again, need it be pointed out? It’d be one thing if the “unhealthy” meal were clearly more tasty, but I would choose today’s meal anytime. I was practically dreaming about a grass-fed burger all of yesterday but I didn’t let Lent get the best of me! Popchips are still my crack but I find this amount is perfect for satisfying my chip tooth.

The Reality: Making my own “Frosty” using Xagave, Bob’s Red Mill‘s guar gum, xanthan gum, sea salt, cocoa powder, and whole milk

The real Frosty still wins here :-/ But I’m getting closer to making the reality be better! This time, I very clearly added too much ice without noticing(it should not make almost two cups worth). I think the whole milk from cows helped the flavor, too. I had to get it from the dining hall because, well, I really don’t remember the last time I kept milk in the fridge. To be honest, I was a little scared I’d be getting some cheap-o, hormoned up junk. But after I did poking and prying, I found the milk I got was Rhodyfresh, which is from local farms all pledging against the use of hormones–yippee! That put this foodies mind to rest.

Surf Sweets Sour Gummy Worms

The Memory: Junior year of High School in Boston. Nearly every day, we would spend our dining points at the campus store where you could make a bag of mixed candies and pay by the pound. My favorite bag usually had in it Reeses Pieces, Swedish Fish, and Sour Gummy Worms.

Weeeeell the memory still wins, here. But only because of the lack of Reeses Pieces and Swedish Fish(someone needs to get on making these natural, pronto). The sour gummy worms were really quite good and flavorful, and really didn’t feel like a candy that had anything “funny” to it. You could totally pass this off to a 3(or 18)-year old to sneak in some natural sweetness and 100% their DV vitamin C. Kudos to Surf Sweets!

Roasting Sweet Potatoes, Maple Tofu, And Broccoli

The Memory: 1st semester, eating every night at the dining hall. Sometimes there was a lot to choose from, and some nights I was mixing chickpeas from the salad bar with honey and mustard

I’ve really loved the reality of this semester; I’m very inclined to believe food affects mood and by cooking my ‘good mood food” I haven’t had a dull dinner yet. I still take cues from the dining hall(that’s where these sweet potatoes were from because mine grew mold), but I’m certainly not looking back with regrets. Also, does anyone else think if I were a country in the Olympics that tray of veggies could be my flag?

Obviously, if I’m willing to call it my dish, I like it a lot 🙂 No offense to my mom, but I’ve never been a pasta person, and nowadays I’m more inclined to the dark meat if I eat poultry, soooo this was an easy one. Unfortunately, the sweet potato wouldn’t “fry” up here because they were pre-baked. Boo 😦

The Memory: Translating “fun” texts in Latin class in 11th grade like Lucretius’ De Rerum Natura(I must have a very warped sense of “fun”)

The Reality: Translating Horace, Catullus, and Petronius this year, all of whom are very very raunchy

What is it with the authors these professors post classes for? I swear they’re just entertaining themselves. Ah well, Petronius and the Olympics it is.

I can’t decide if that 2nd T should stand for “Thursday” or just “Today” becuase today has been so much better than any average Thursday! I know wordpress has been down a lot, so if you missed this morning’s post you can read it In A Jiffy 🙂 No worries–it’s really quick because I was really in a rush. My breakfast ended up looking more like this:

2% Yogurt With Pumpkin Flax Granola Bar, Soy Yogurt With Milk Chocolate Peanut Sunspires

I realized after posting that it might give the impression I was eating all those sunspire candies. Nope! Haha, I took a reasonable amount for my yogurt; that’s just my whole stash 😉 I realized in class what these granola bars taste like: Apple Jacks! I can’t say why, but they’re dead on.

University Whole Foods

I made the decision to go to Whole Foods in between classes to get some Asian style chicken for dinner; I was having a craving and knew I couldn’t eat meat tomorrow even though I’d had more time so I thought I’d go today. I called ahead to make sure they had it, and then walked the 1.2 miles. Obviously, I spent a good amount of time perusing the aisles while I was there.

It occurred to me around the hot foods area all the things that fall under my Lenten giveup, like these! At first I thought giving up prepared soy was kind of a cop out and wouldn’t affect me much. but since I’ve almost slipped twice in 2-days, I’m thinking this was a good one. I also looked on non-soy veggie burgers while I was there but nothing impressed me.

I needed a snack for the 1.2 miles back. I would have totally hit up the tri-colored raw peppers from the prepared foods bar if they wouldn’t have set me back so much money. I also almost bought a chocolate bar but decided I should not be paying for chocolate when I have so much in my closet. 😦 A rough decision but it’s good to self-edit in the checkout line. Ironically, the person behind me picked up the bar I put down and bought it! Maybe it was destiny…

Groceries

What did I get? In short: sensible things. 2 Chobani, 2 So Delicious Plain Soy Yogurts, a Kombucha(for review), a ripe avocado, cocoa powder(I normally prefer Lake Champlain but this was what they had and cheapest), and General Tso’s chicken. Well, this did not leave me much time before my next class, so I hopped to making lunch!

1/4 Pounder Grass-Fed Burger, Sweet Potato Hash, Orange Steaz

I planned to cook this burger yesterday on Ash Wednesday–yikes! Thankfully, it was just as good today, though a bit browned. I cooked it alone in a pan and it could not have came out more perfect! While it was resting, I cut up leftover sweet potatoes and cooked them in the fat drippings. Holy yum. My thought today: You couldn’t eat meat yesterday, you can’t eat it tomorrow, so get your fill now!

I ate this entirely in Greek History. I almost fell asleep in class. Maybe the walking tuckered me out? If not for one of my best friends, Alex, to make fun of the stupid things this professor was saying(like trying to reference gameboys for a joke), I definitely would have conked out. After that, another class and then I was free! When I got out at 4, I officially began a 5-day weekend! let the celebration begin!

Xagave Chocolate Frosty

I’ve had this Xagave recipe bookmarked for a long time. I didn’t have an open can of coconut cream(is this even the same as coconut milk? I’ve never heard of it before) so I just used 1/2 a cup coconut milk kefir instead. I also cut the recipe into 1/4th, and even scaled back the Xagave to 1 tablespoon.

This gave me cause to break out the guar gum I was sent by Bob’s Red Mill to sample and review; I won’t review it quite now because this feels like something I’ll need to use a few times to get used to. There was more excitement in store for today, too:

I won a bag of Emmy’s Organic Mint Chip Macaroons. And in a poetry contest, no less! You can read my poem here. After lots of work and blending, things looked like this:

Wow. Where to start? As for the milkshake: It was really good! But I didn’t blend it enough I don’t think 😦 I’m always afraid to overblend things until they get hot and liquidy(TWSS), but I guess I shouldn’t be so long as I have the guar gum? Also, this was very sweet and had a strong agave nectar flavor. And that was after I cut down the amount in the recipe.

As for the mint chip macaroon: Holy Moly! I give a lot of things into consideration when I review a product, including price, availability, nutrition, taste, sustainability, etc. I had to give this a 10/10, even if it’s not completely available nation wide in stores; they were just that good. When I’m out, I’m going to cry for about 10 minutes and then order myself a batch. They’re amazing! They completely out shined the dinner I had planned all day:

That being said, this was pretty damn good too 🙂 I had a major craving for Chinese chicken last night. And I knew I wouldn’t be eating it tomorrow. It’s glaringly not the healthiest option, but once in a while why the hell not? And because it was from Whole Foods, it was completely natural chicken. On the side, for good health, I had a citrus Kombucha drink. It’s not my favorite flavor, since I could hardly taste the sour through the vinegar of the kombucha. But it was still pretty good; and, as always, stellar nutrition! You can always eat the bad if it’s with some good 🙂

Like Frosting

Whenever the Olympics are on, I just feel such pride in being an American! I want to wear a flag wherever I go and pump my fist to the anthem; I think I’ve caught the Olympic fever! I’ve heard it lasts for two weeks and goes away and comes back every 2 years. Side effects include growing 5 lumps on your back, 3 on the top row and 2 on the bottom and all in bright, different colors. Have you caught this disease?

Last night involved finishing a reading on Socrates death(which coincidentally made me feel like I was dying a little inside), watching Apolo Ohno completely own the field in his first run, and making a big bowl of… frosting?!

Chocolate Avocado Frosting/Pudding

Pretty much. I tried merging the chocolate avocado pudding recipe with the frosting recipe from these brownies. I used 3oz avocado, 2 1/2 tablespoons cocoa powder, a dash of vanilla powder,and 1 tablespoon Xagave(reviewed here). It only tasted “OK”; it didn’t really taste like the frosting because it only had 1/3 of the sugar. Then again, all the sugar would have been a bit ridiculous. I ended up adding vanilla stevia to it to turn up the sweetness and make it not taste like avocado. The texture was incredible, though; in that respect, it was just like frosting in a bowl. I think the key for the thickness was no coconut milk and a really ripe avocado–yum! Did I mention I advertise as a “healthy living blog”? Yeah, I’m an imaginative person.

Pumpkin Oatmeal With Butter Toffee Peanut Butter

I was still starving after that pudding and went straight for some volume oats! A full bowl of oatmeal plus what was left of a can of pudding plus a big spoonful butter toffee peanut butter by Naturally Nutty. Now that’s like frosting–deeeeelish. The women’s downhill was so much more entertaining than I would have gave it credit for; I felt bad a Canadian didn’t win because 2 of them were really impressive. I had to laugh that for all of them they announced their height and weight; I don’t know that much about women but from the bit I do I would think that wouldn’t be well appreciated? When a woman becomes president of the IOC, I’m sure that’ll be the first to go.

I had the oddest craving at 3am for chicken! If I had a rotisserie chicken in my fridge, it would have been in the oven in 5 minutes–I’m just saying. I didn’t though, so it was back to bed and sleeping in until 8:30. When I thought about all I had to do this morning–change, run, shower, eat, blog, and go–to be honest, I wasn’t sure how/if I’d do it.

Clearly, I did it. My ultimate thought was “It doesn’t matter how it’s going to happen. If you go through the motions, and time passes, in 2 hours when you look back it will be done”. With that thought in mind, I laced up, put on a playlist, set the treadmill for 5 miles, and just ran. I tried not looking down as long as I could and instead just focus on Scooby Doo on TV. I tried guessing how long it must have been by the plot progression of Scooby Doo until I realized… “plot progression” and “Scooby Doo” just don’t go together.

Having a quick breakfast in mind surely eased things a bit. I took the remaining 1/2 of a Vanilla chobani, added 2oz full fat Voskos, cinnamon, and NuNaturals vanilla stevia–Sweeeeet. This also gave me occasion to try a new product from Honest Foods, which I just made a review for here! In summary: large, maple, sugary, nice. Get the picture? If not…

Now that’s like frosting. And now I’m throwing this post up about to head out the door to go home for the B-day bash! It’s going to be wall-to-wall work with picking up supplies on the way home, making a dessert as soon as I get in, and then playtime with the cousins throughout the afternoon, but it will be worth the hustle. I couldn’t decide if I wanted to take “real work” with me for the downtime in the car or something to blow my mind off like a magazine or DSi, but now I’m thinking I’ll need that time to nap!

What A Bust

One more day to enter the yogurt giveaway!

Save anything food related, today was totally a bust! That incredible Nor’easter has hardly hit us, and there’s barely an inch sticking to the ground while just 10’s of miles away they’re getting feet. Feet. What a bust.

Also, my professor sent an email saying we’d have class today even though he sent one last night(after this grandpa had logged off) saying we probably wouldn’t have class. Another bust. Did I mention I volunteered to bring snacks for this class?

Making Raw Frosting

Because this class is about 20% serious, 80% fun(like me! Or how I try to be), there’s a snack sign-up, and I volunteered first. I thought it’d be “cute” to make my raw vegan brownies because my essay–also due today in rough draft form–is on the food processor. And, yes, I’ve brought my food processor to Brown. As I plan on being here many weekends and days off, I’ve realized I just can’t be without it for so long and dragged it along(in 10 feet of bubble wrap) Sunday.

To be honest, I was a little disappointed with this batch; the flaxseed was not ground well enough and so I could tell these would be “crunchy”. I think the problem was in making a double batch; these deserve the care of small-scale making so that the focus is on quality and not quantity! I also made a triple batch of frosting for them; that part was just for fun 😉 For “real food” I made a real lunch.

Broccoli, Tuna Salad With Sunflower Seeds, Sunflower Cheddar Flatbread

Tuna salad was the perfect protein for today. I literally do not remember the last time I ate fish :-O And it makes a little more space in the bins under my bed; it’s just a little, but I need all that I can get. I mixed the can with 1oz full-fat greek yogurt for creaminess and sunflower seeds for crunch! Those went great with the sunflower cheddar flatbread; I forgot how good these were over break! I got to class way early so I could also look to buy a book for one of my classes; the line was too long for me to wait in so that walk was a bust. While I was down there, I stopped by Blue State for my new favorite drink. Unfortunately, I made the mistake of looking at my School Card balance online to realize these cost $4 a pop! Yikes! I justify that by saying it’s money that’s “already in the system” and needs to be used up eventually, but I need to tame my addiction to these or get to a Whole Foods and start using the coupons I was sent to sample new flavors.

Raw Vegan Brownie With Chocolate Frosting

As far as I can tell, the brownies went over really well! There are 10-11 of us in the class, I made 16, and there was 1 by the end. You can do the math. I think the one problem was that there were flax seeds in everyone’s teeth, but the excess frosting totally makes up for it. I found it so interesting looking at who were the people taking seconds; it wasn’t the burly men but rather the happy and healthy looking girls. I love women with appetites 😀

Even though class was a go, our “field trip” was a bust. We were supposed to go to the library and get a presentation on some one-of-a-kind Native American watercolors from the 16th century. The librarian who was supposed to do this never came in today because she was “sick”. I’m pretty sure that’s code for not wanting to go to work on what should be a snow day. Oh well, we got out 50 minutes early! That gave me time to get back into my dorm and eat this:

Chocolate Avocado Pudding With Hulled Hemp Seed

I swear, if it weren’t for the food today this would be a total bust. But this surely wasn’t! Nothing about me was craving the fat in chocolate avocado pudding; actually, I’ve been craving So Delicious soy yogurt all week and it’s driving me up a wall! BUT I did need to get my Bob’s Red Mill hemp seed fix in. I am just loving these! They’re so much more nutty and vanilla than any other seed, and quite unique. I wonder if hemp seed butter is as delicious.

Stir Fried Tofu, Tempeh, Mushrooms, And Snap Peas With Soy Sauce And Sesame Oil

For dinner, I had planned to have a red thai curry tofu and tempeh dish with a coconut milk based sauce(Trader Joe’s Brand). Once I got a whiff of sesame oil, I knew it was all I wanted. I made a quick stir fry of snap peas, mushrooms, tofu, and tempeh, and then added soy sauce and more sesame oil at the end–delicious! Whenever I do a stir fry, I think tofu and tempeh is a must; I love the soft and chewy contrast.

Does it count as a bust that Survivor isn’t on tonight? OK, it never was supposed to be, but I was sooo convinced it was Thursday for the past hour. But it starts back up tomorrow! I can’t wait 😀 Maybe I’ll just have to bust a move while finishing Latin and getting an early night in for a 6:15 wake-up call. How many miles can I bust out before I need to get ready for class? We’ll see…

Let’s just pretend that “funked-out” guy from this morning never happened 😀 The stress was good in that it motivated me to go 3 extra miles on the treadmill. But after thinking about it and realizing it’s one of those things that’s just out of my control at the moment, I realized it’s nothing worth fretting over. In the immortal words of Rhianna, “Go on and live your life”. OK–“immortals” an overstatement. But it’s a good song to run to 😀 I was certainly living my cravings at lunch!

Mexican Bowl

I needed something from South of the border in my life. I filled a bowl with lettuce, chopped tomatoes, green peppers, raw onions, and sprouts from the dining hall(underneath). On top I added cooked broccoli(I cannot do raw here), 1/2 a can of black beans, a little avocado mashed up, and TJ’s salsa. Muy bueno! I don’t remember the last time I ate Mexican, authentic or otherwise. Did you know Chipotle is a very eco-friendly chain? I’ve never eaten from there, but after seeing them on Oprah I want to now. Along with this, I had some raw goodies.

Gingerade Kombucha And Caribbean Cheddar Raw & Probiotic Cheese Stick

Kath wrote a good post a few days ago on getting nutritional bang for you buck; I think both of these products fit that bill! I loved this flavor of Next Generation Dairy‘s cheese; even though I don’t normally like cilantro, it really worked here. And would you believe this was my first Synergy Kombucha ever? The company sent me coupons to try and review their raw & probiotic beverages. Well where I bought this(a local cafe) couldn’t take the coupon, but I decided to pay for it anyway since I psyched myself up for it hoping I’d like it. Like it? I loved it! This was so deliciously ginger; and the fermented flavor was oddly nice! I loved the little “warning”.

Perfect–I was drinking alcohol in class. That’s nothing that hasn’t happened at Brown 😉 I did almost fall asleep at one point during this Greek History class, though. Oops. It’s not that bad though, I swear! After that, the classes just kept coming, as did my hunger.

Taking pictures in class? Do I get the good blogger award for that? This bar from 18 Rabbits had such an enticing description–“banana foster” with “caramelized banana”. Yes, please! Unfortunately, the flavor was very heavily like banana chips. This wasn’t a bad thing, per say; on the contrary, I really liked the flavor! It just needs to not set up itself for such high expectations with a name like that.

Chocolate Avocado Pudding

When I finally got back to my room for the evening, I whipped up some chocolate avocado pudding to relax a bit. My afternoon might have looked something like this: The Office, 30 Rock, 5-page paper on food processors. Yes, you read that last one right. Why? I have no idea; we need to have a rough draft on an object in our lives we can look at from an objective perspective by tomorrow at 3pm and it was what popped into my mind. Thankfully, it’s not really due to be graded for 2 weeks, so I can surely change the subject if nothing pops(or processes as the case would be).

Along with my “meal planning initiative”, I had a brilliant idea for dinner: Breakfast! It’s true that I most always have oatmeal and yogurt for breakfast. On the one hand, they’re cheap and tasty. But part of that is also because post-run it’s easy to whip together. Instead, I decided to make something with a little more complexity…

Coconut Flour Oatmeal Pancakes With NH Maple Syrup And Grass-Fed Butter

Goat Milk Yogurt With Xagave Raw Chocolate Sauce And Mulberries

Gluten-free, coconut flour oatmeal pancakes! Yum! It’s been far too long since I’ve had pancakes, and when I got this coconut flour from Bob’s Red Mill I knew this was one way I wanted to experiment with it. In the bowl went 1/4 cup oats, 2 tablespoons coconut flour, 1 egg white, 1/4 cup almond milk, stevia, and salt. I cooked them in a bit of coconut oil and topped them with pasture butter and local maple syrup. Can you say heaven? My favorite fat blogger(that would be, one who blogs about fat ;-)) has a longstanding tradition of pancake eating; I think I need to follow suit here, too, because I’ve been missing out! On the yogurt, I made some raw sauce with Xagave and added Navitas NaturalsMulberries; they may be a superfood but I was not that into them :-/ I’d rather have something like dried raspberries. Maybe they’ll give me superpowers? Here’s hoping 🙂

Sweets And Cheese

If I had to summarize in two words what I ate today, it would be “Cheese” and “Sweet”. I’m pretty sure those are the only two tooths I have in my mouth(and I embrace that).

The first culprit was this bag of Pirate’s Booty. I was sent a ton of flavors to review; none were particularly “sweet” so I went for the cheesiest mother of them all. At the same time, I had the oven going and baked some maple tofu.

Maple Baked Tofu

Maple baked tofu–simple, sweet, and so(y) delicious. The tofu came out particularly good because I had it pressing all morning and changed the towel thrice; when you get a ton of water out, you really notice the difference. These corn puffs were good, but didn’t really blow me away; I liked the flavor but the texture was just OK and overall they were “meh”. Maybe one of the other flavors will impress me more.

While I was watching this I got around to watching my DVRed Oprah with Michael Pollon. I know–I’m so behind! But I really liked this episode and was able to connect with it a lot. The part with Alicia Silverstone and Oprah talking about their business had me rolling on the floor! I do get what they’re saying, though. I also found it funny that Alicia “slips up” on cheese sometimes. It gets the best of us 😀

Count-To-10 Workout Sheet

In the afternoon I did my Count-To-10 workout. This’ll be perfect for any readers lamenting being stuck in doors for the storm! In case you forgot, it’s super simple:

  • 10 flights of stairs
  • 10 push-ups(15 for me)
  • 10 flights of stairs
  • 10 sit-ups(20 for me)
  • Repeat 10 times.

Obviously, I use a checklist just to keep track. While I was doing this, the mail came, and I got a “sweet” surprise.

Uli Mana sent me a sampler of some of their sweet and raw treats. The seal on them was broken, but since these came straight from a closed USPS box, I assumed they were untampered and safe.

Umm, sweetest post-workout recovery meal ever? I think so. Where to start? This brownie was simply amazing. I’ll count it as my “Cookie Friday” treat(like I don’t have one of these every day). This was the 3rd bought raw brownie I tried, along with the 2 that I’ve made, and it was by far my favorite; it tasted sooo fudgy! I think the secret must have been in the cacao butter. I need to find me some. Any good brand suggestions? Or even just brands? The pudding was delicious and antioxidant rich with Navitas Naturals goji berries, but I added a little something to sweeten it up even more…

Xagave Raw Agave Nectar

Xagave sent me some of their agave nectar to bake and experiment with. Again, where to start? Simply put, from the 1 time I’ve used this so far, I’d highly recommend it. I mentioned on Monday(and even got some agreeance from readers!) that the agave nectar I used just didn’t taste sweet at all. Well, that was “Trader Joe’s raw agave nectar” for anyone curious. This, on the other hand, tasted sweet. It tasted really sweet, like I’ve been told agave nectar should. I can’t wait to bake more with it! Since I don’t prefer sweets for dinner, it was back to eating cheesy.

Next Generation Organic Dairy Raw Probiotic Garlic Parsley Cheddar Cheese Sticks

Yet another flavor of Next Generation Organic Dairy cheese to review. I knew this’d make a great addition to dinner not only because it’s no-carb, and high-protein and fat, but because of the added probiotics.

Lemon Cauliflower, Garlic Parsley Cheddar Cheese Stick, Grass Fed Beef Medallion

Dinner was also particularly good since we found out that Whole Foods(at least the one in Providence) sells grass-fed beef; sooo much cheaper than from a restaurant! And perfectly cooked so long as you know what you’re doing 😀 It tastes fantastic and I had my whole medallion. I was a bit underwhelmed though with this cheese stick; it tasted cheesy for sure, but the complexity somewhat stopped there. I suppose if it were too garlicy, that also would have been a problem, so I’m not sure where the perfect balance would have been. I do just love that they even make these in stick form; perfect for probiotics on the go!
